unlimited “Pursuit of Excellence” also in its soul in Piedmont, Banfi has believed in the Alta Langa project since its inception. In 1990, the so-called “Spumante Metodo
Classico in Piemonte” project was started in Piedmont. Banfi was one of the seven wineries that took up the challenge to start the production of high quality Metodo
Classico
sparkling
wines
in
Piedmont, claiming the Piedmontese roots of the Italian sparkling wine production. Then intense years of research followed, sustained by the collaboration among the wineries, the territory and other important institutions. And this close collaboration is presently still strong. By planting experimental vineyards, selecting the most suitable areas for the production of sparkling wines and clonal research of the grapes, in 2008 the “Spumante Metodo Classico
in Piemonte” project finally obtained the highest recognition, officially achieving the appellation: “Alta Langa DOCG”. Therefore, “Cuvée Aurora Alta Langa
DOCG Banfi” is the most prestigious emblem, which narrates the interpretation of the Metodo Classico of excellence and
par excellence in Piedmont. For this reason, today the great results of the joint effort of all the member wineries of the Alta Langa Consortium receive ever-increasing media attention and significant recognition from the wine industry and the market.

by hand in the area to the East of the
Tanaro
river,

Cuneo,
Asti
in
the

According to the production regulations, there
are
three
main
features
that
distinguish the Alta Langa DOCG from other Metodo Classico sparkling wines:
1
) The word “Alta”, which means “high”, as the hills included in the Alta Langa
DOCG area must be located at not
less than 250 meters above sea level. This implicates considerable temperature variations between day and night, which give the wines a marked acidity and keep its freshness over time;
2
) Alta Langa DOCG can be produced only in a vintage version. In this
way,
it
will
express
different
and
interesting peculiarities, depending on the characteristics of each vintage;
3
) 3) Alta Langa can be released only after a minimum of 30 months of aging
on the lees, with the re-fermentation in the bottle, according to the Metodo Classico. In this way, it is possible to obtain a sparkling wine of the best quality and longevity.

The soft pressing of the grapes is followed by static clarification of the must, subjected to a temperature-controlled fermentation (17° C). The cuvée is made from at least 90% of wine obtained from this process, and the remainder from wine from the previous year, aged in French oak barriques. Secondary fermentation takes place in the bottle according to the Metodo Classico procedure. Aging on the lees is extended for at least 40 months. Traditional hand riddling on pupitres and dégorgement à la glace. The sugar dosage is Extra Brut, around 4 g/l. Finally, an ideal aging in the bottle follows. DESCRIPTION
Color: pale gold color with fine and very persistent perlage.
Bouquet: intense and fragrant, with notes of yeast and vanilla.
Taste: well-structured, full, slightly acidulous, harmonious, savory with a bitter base. The addition of a percentage of the cuvée from the previous vintage, aged in wood, endows this sparkling wine with its roundness, structure and longevity. FOOD PAIRINGS
Ideal as an aperitif; perfect with oysters and other raw or cooked seafood, it pleasantly accompanies also appetizers and first courses based on fish. Particularly suitable paired with shellfish.

One-hour skin contact cold maceration prepares the grapes for soft pressing. The must is then subjected to a static clarification and subsequent fermentation at controlled temperature (17 ° C). After several months on the fine lees, the wine is prepared for tirage. The second fermentation takes place in the bottle, according to the Metodo Classico, with a minimum period of 30 months on the lees. Traditional remuage on pupitres and dégorgement à la glace.
