SINCE being surrounded by the aromas and hospitality of food filled family occasions as a child, practically nothing can keep Toni Chubb out of the kitchen. Remembering her childhood surrounded by the warmth and support of her mother’s large family, she said “family get togethers were always about food”. “There was lots of food, and lots of laughter,” she said. To this day, no one can visit her home without immediately being offered food and hospitality. She carries this passion into her work as catering manager at Rutherglen’s Indigo North Health aged care facility, Glenview. “Food is the fuel of life,” Toni said. It is an attitude that saw her chosen out of crowds of applicants from across Victoria recently to take part in an intensive program in aged care cooking with famed cook Maggie Beer. The Maggie Beer Foundation ‘Creating an Appetite For Life’ education program saw 30 passionate chefs and cooks from Victorian aged care homes take part in a three-day aged care cooking workshop at Ms Beer’s Barossa Valley farm workshop. The aim of the program was to educate and inspire cooks with new methods to reinvigorate food service within the aged care industry. And Toni was thrilled to take part in the experience. “We all bounced off each other and had these great ideas,” she said. “And Maggie Beer is just the most beautiful, warm person. “Her first priority is food that tastes good, she loves her food, and everything has got to be cooked fresh. continued page |
