SINCE being surrounded by the aromas and hospitality of food filled family occasions as a child, practically nothing can keep Toni Chubb out of the kitchen.

Remembering her childhood surrounded by the warmth and support of her mother’s large family, she said “family get togethers were always about food”.

“There was lots of food, and lots of laughter,” she said.

To this day, no one can visit her home without immediately being offered food and hospitality.

She carries this passion into her work as catering manager at Rutherglen’s Indigo North Health aged care facility, Glenview.

“Food is the fuel of life,” Toni said.

It is an attitude that saw her chosen out of crowds of applicants from across Victoria recently to take part in an intensive program in aged care cooking with famed cook Maggie Beer.

The Maggie Beer Foundation ‘Creating an Appetite For Life’ education program saw 30 passionate chefs and cooks from Victorian aged care homes take part in a three-day aged care cooking workshop at Ms Beer’s Barossa Valley farm workshop.

The aim of the program was to educate and inspire cooks with new methods to reinvigorate food service within the aged care industry.

And Toni was thrilled to take part in the experience.

“We all bounced off each other and had these great ideas,” she said.

“And Maggie Beer is just the most beautiful, warm person.

“Her first priority is food that tastes good, she loves her food, and everything has got to be cooked fresh. continued page |

Why do I have food intolerance?

Preventative sprays

THERE are many reasons we can develop intolerances to the foods we eat.

When our digestion is weakened, such as for children under the age of two, food intolerance and allergies are common as they have not fully developed their immune or digestive systems.

This leaves it more susceptible to infection and intolerance from certain foods and additives.

In adults and older children this can occur after antibiotic use, stressful events, growth spurts, other infections and some medications that compromise digestive function and nutritional uptake through the gut.

Sometimes, there is also a family history that will increase chances of other family members becoming sensitive to certain food groups.

Here are some of the causes we look to address when treating those with suspected food intolerances: * Enzyme deficiencies: as we age, when we are stressed and sometimes due to genetic reasons, we do not have the required enzymes to breakdown certain enzymes in food. This is common in those who are missing the lactase enzyme, which breaks down lactose. For these people lactose causes stomach aches, gas and bloating. * Food poisoning: After acute food poisoning or ‘Bali belly’ it is common to develop intolerance.

WORRY: Stress and stressful events can trigger or exacerbate food intolerances in adults.

The bug that causes the poisoning often strips the gut of important linings that protect it against irritation and burning. It also sets up dysbiosis – an imbalance of the good: bad gut bacteria and microbes which can trigger food reactions until repaired. * Stress: when we are under stress, we will not digest well. The gut and immune system change in a reaction to increased cortisol, which can create an allergy type reaction. By settling the

nervous system and reducing stress, you will better digest foods and have less reactions. * Sluggish digestive systems: If your kidneys or liver or lymphatics are sluggish you will find that you have a lower tolerance level to certain foods and your body is less able to remove the irritating proteins, chemicals and toxins produced by some foods. Correcting this through a detox program can really reduce your sensitivities and mean you can tolerate more of these foods.

WINTER is when deciduous fruit trees and roses are pruned and it is also the perfect time to treat them with protective fungal sprays.

These are applied while the plant is leafless so as not to burn the foliage or blooms.

Common fungal diseases include leaf curl in peaches, nectarines, apricots and almonds which causes the leaves to twist and distort and develop a pink or purplish colouring.

Unfortunately, by the time the leaves show signs of damage in spring and early summer, it is too late to spray.

Black spot is a fungal disease that commonly attacks roses.

It first appears as a small black spot on the leaves which grows in size and spreads.

The affected leaves turn yellow and eventually fall off.

One of the best ways to control them is to spray with a copper based fungicide which will destroy fungal spores over winter on the plants.

These spores, although resting now, hide in bark and bark fissures waiting for the warmer weather to arrive where they can grow and infest plants.

Before spraying, it is important to clean up around the plant by removing any old fruit and fallen leaves as these may be harbouring fungal spores.

Place them in the compost, where the heat will destroy any spores, or in the green recycling bin. Remove any mulch and add fresh mulch to reduce the risk of fungal spores in infected soil being splashed by rain or irrigation.

Copper based fungicide, sometimes referred to as Bordeaux spray, prevents the fungus entering into the plant by creating a surface barrier.

It is important to spray the entire plant or tree thoroughly; this is known as ‘winter washing’ and gives the plant a silvery blue colour.

A second application is needed a few weeks later when the buds begin to swell.

There are a variety of leaf curl copper fungicide sprays, liquid copper fungicide sprays, Bordeaux sprays and black spot sprays available. Read and follow the directions carefully to control fungal diseases on your plants.

Travel sickness in dogs

Toni said the role of food in aged care is changing and evolving, particularly as the baby boomer generation gets older.

She said in addition to nutrition, food’s texture and colour, dietary requirements and allergies, must all be taken into account.

“The elderly are the pinnacle of society, and should be treated that way,” Toni said.

“She is so passionate about that.”

Having spent many years as a cook in the health and aged care industry, Toni said creating fresh, nutritious and tasty food is essential to a good quality of life, no matter what your age.

Preparing fresh food is central to her role, and she is in the process of establishing extensive vegetable and herb gardens at work to enhance her cooking.

“When we get to aged care facilities, we’re not going to want the meat and three veg,” she said, adding that everything from the choice of crockery to decorating the room creates a stimulating dining environment and promotes a sense of community.

“People are going to want a whole new dining experience.

“That’s what it’s all about.”

JUST like us, dogs can become victim to motion sickness associated with car travel, with puppies and younger dogs being more prone to developing it.

This is due to the lack of full development of the balance organs located in the middle ear.

Signs your dog may be motion sick include vomiting, excessive drooling, yawning, whining or lethargy.

It is important to recognise if your puppy is affected by travel sickness, so you can implement strategies to try and reduce the nausea and anxiety, as even after their balance organs have fully matured they can negatively associate travelling in the car with feeling ill.

Midwinter sees the fun continue THERE is definitely no shortage of events to enjoy at the snow this week.

The fur will fly at Falls Creek this weekend, with the 5th annual Falls Creek Sled Dog Classic taking place between July 31-August 1.

Friday will see the first heats taking place from 5pm at the Windy Corner Car Park, with the second and final heat from 6pm on Saturday at Slalom Plaza, and more information on the classic is available at www. fallssleddog.org.au.

Also happening at Falls this week is another instalment in the Falls Freestyle Series, The Board Lounge Throwdown, taking place on Friday, July 31.

URGE TO SAVE: Australians have become more committed to saving for their dreams.

FOUR out of every ten Australian households have no debt and more than half are using 10 per cent or less of their income for repayments, according to the St.GeorgeMelbourne Institute Household Financial Conditions Report.

The report shows that in the face of low interest rates, Aussies are improving their financial position by directing their savings towards property which was the only area of savings that saw an increase this quarter, lifting by 1.6 percentage points.

The report also reveals that credit card debt has fallen below 30 per cent for the third consecutive quarter, with 29.6 per cent of households saying they hold credit card debt for the June quarter.

Prior to December last year, credit card debt had not fallen below 30 per cent of households since September 2008.

The proportion of Australian households continuing to boost the piggy-bank and ‘save a lot’ rose a solid 1.9 percentage points to 8.2 per cent over the quarter – the highest level since December 2013.

Conversely, four in every ten (39 per cent) households said they were able to maintain some form of saving.

St. George’s head of retail banking for outer metro and regional NSW, Neelam Tandon said overall Australian’s household conditions rose a strong 2.4 per cent in the June quarter, up 7.3 per cent on a year earlier.

“More and more households appear to have strong debt reduction and savings plans in place. In previous quarters we’ve seen more Australians draw down on their savings, representing an increased willingness to spend.

“However, we’re now seeing households revert back to a cautious approach, with less people drawing on their savings and more people using the low interest rates to pay off their debt quickly,” she said.

So what are Australians currently saving for?

The saving motivation for many is a house deposit, while others are trying to create a financial buffer in case of emergencies, while saving for holidays is a big motivator, as is saving for retirement, to pay debt, or to renovate.

This Durif has a warm and indulgent feel about it.

It’s dark and velvety, with an abundant aroma of ripe berry fruit, including blackberry and sticky mulberry.

There’s a hint of black pepper and backdrop of chocolatey richness but it’s really all about the fruit; full and generous with ripe berries and blackcurrant.

The wine is great with gamey meat like venison and kangaroo and creamy scalloped potato, but I confess to enjoying it late and long after the meal is over.

Baked Beans

THIS DAY IN HISTORY

Snow at Greta, 1905 ON July 29, 1905, a Saturday, Greta had a fall of snow which stayed on the ground until the Sunday.

The hills around the settlement were white.

It was, old residents said, the third fall of snow in 25 years.

WHO likes baked beans? And I don’t mean the tinned variety.

These are often thought of as a staple on the American tables usually made with red beans.

Have them for breakfast with a poached egg, lunch or dinner with a protein.

Method Drain soaked beans, add to a large pot cover with water and boil until just tender, about ½ hour.

Process capsicum, carrots and onions in a food processor until finely chopped.

In a pot that is ovenproof and with a tight fitting lid add the oil, fry capsicum mix until soft, add the garlic, herbs, cooked beans and tomatoes, give a good stir, cover with foil then the lid.

Bake in a 160deg oven for approximately 2 hours. Add the paprika and cook until the beans are

soft and the sauce is a dark colour.

If you are having them for lunch or dinner omit the Maple syrup.

THERE are no doubt many of us have a little giggle every weekend when we read the “My Day On A Plate” column in the weekend magazines.

It seems like there are a whole lot of people out there with way too much time and money on their hands, shopping for ingredients most of us have never heard of and then seemingly heading into the kitchen every couple of hours to make something to eat.

Presumably no one has cereal, toast or coffee for breakfast any more, or heads off to work with a sanga and piece of fruit in their lunch box to eat during their half hour break.

So the sun is still setting every day IT has been interesting to note the differences between our major parties regarding renewable energy over recent weeks.

It would appear the Coalition Federal Government doesn’t believe the world has a problem with climate change and is stepping away big time from renewables, while the Federal Opposition is looking at seeing 50 per cent of Australia’s energy being renewable from 2030.

I am not a local of Wangaratta until next month when I clock up my 40 years, but I have seen photos of snow in Murphy Street being swept away so people could cross the road back in the 1930s.

At that time, sure the population would have been smaller and everyone would have had a wood stove, but the world population would also have been much smaller.

I am a great believer, after having spent my early working life in coal fired power stations, that we must have change and need it now, as

The renewables energy industry is in upheaval and our investment according to reports is less than that provided in Honduras.

Prime Minister Tony Abbott has launched several verbal and policy attacks on wind farms following a visit to Rottnest Island where he rode his bike under the sole wind turbine and has commented they are noisy, visually awful and a potential health risk.

But his detractors, including Kobad Bhavnagri - the Australian

head of Bloomberg New Energy Finance - believes “it quite extraordinary to see a government deliberately and systematically attacking a particular industry”.

There is a broad national architecture to encourage more renewable energy in Australia.

There are numerous state based schemes, which have helped the industry grow at a steady rate from modest beginnings.

The former Gillard government established the $2.5 billion Australian Renewable Energy Agency as well as the $7 billion Clean Energy Finance Corporation.

The former Howard government set up the national renewable energy target in 2001, which was later expanded with bipartisan support by the Rudd government, to ensure at least 20 per cent of Australia’s power came from renewable sources by the year 2020.

Given the present government’s commitment to renewables, I do not

believe this will be anywhere near to achievable.

We have more than 1800 wind turbines installed and some 1.4 million rooftop solar systems on homes and businesses.

Some 12,500 full time employees are in the solar workforce.

But we are still not increasing our share of renewable energy, with the mix still remaining around 13.5 per cent of our total power supply, with almost half of that coming from our decades old hydro-electric schemes.

To read the directive of the Treasurer Joe Hockey and Finance Minister Mathias Cormann that the Clean Energy Finance Corporation was not to invest in wind farms or rooftop solar was staggering.

I thought the corporation was established to increase the flow of funds into clean energy and energy efficient projects.

It is effectively a green investment bank, there to help

finance clean technology projects when commercial lenders are a little bit hesitant.

Since its inception it has made $1.4 billion in commitments to 89 projects which has seen a further investment of $2.2 billion from private investors.

In my opinion the government is taking the wrong path in its attention to climate change.

My article last week on who should have a vote brings home the point that our politicians are just thinking of the present as they will not be around in 50 years when the world is in crisis because of climate change if we can believe the opinions of some of our most qualified scientists.

But I am aware this subject is contentious with many people having an opposing view of varying degrees.
