WINE TALK WITH

ANITA

WHEN Salvatore “Sam” Politini and Giuseppina “Josie” La Spina made their separate journeys to Australia from different parts of Sicily in the mid-20th century, they could scarcely have imagined the life they have built for themselves over 60 years later. The pair met and married in 1959, raising four children and moving from growing tobacco to establishing the grapevines and winery that would become Politini Wines. And since then, their respective skills with food, wine, and the piano accordion have made a visit to their cellar door akin to “a family reunion”, as Salvatore puts it. Salvatore said the pair have well and truly become part of the King Valley since purchasing the land they still make a living from today in the 1950s. “Since then, it’s changed a lot,” he said, talking about the establishment of roads, wineries, tourist attractions and more. He added that the area was full of “good people”. “It’s come a long way. “Tourists all come to appreciate the valley.” He said that while the wine industry, like any other industry, has had its ups and downs, he cherishes the life that he and Josie have built. “I do what I like every day,” he said happily. One of the most familiar parts of each festival weekend at Politini Wines is Salvatore’s regular piano accordion playing, and he has been passionate about the instrument for as long as he can remember. “I’ve played all over this valley,” he said. “It is enjoyable and I am glad that I am still able to do it. “When people visit, they are all happy, all smiling.” continued page |

LET IT SNOW: Snowmaking taking place at Mt Hotham.

Season set for exciting opening LOCAL snow resorts are looking forward with excitement to the 2016 snow season, which officially opens this weekend. At Mt Buller, Queen’s Birthday weekend will be full of action, including an official season launch party on Sunday, June 12, and the chance to meet Olympic champion Lydia Lassila at the premiere of The Will To Fly. The events at Falls Creek this weekend include the Snow Capped Comedy Festival on Saturday, June 11. Mt Hotham is also looking forward to a spectacular season, having recently expanded their snowmaking infrastructure, concentrating on Heavenly Valley. Mt Buffalo is set to once again appeal as a family mountain this year. At Dingo Dell, aimed mainly at family groups with young children, there will be a dedicated toboggan slope with a safe runout area at the bottom and

ample space for snowplay (visitors are advised that only plastic moulded toboggans are allowed to be used). While the facilities at Cresta Valley may be a little more basic than Dingo Dell, the tobogganing is more diverse and there is also a managed area for family oriented fun. Cresta Valley also has three groomed ski trails plus a large untracked/unmarked area for the more adventurous and well prepared.

growing time. The Portobello mushroom is a larger, flatter, meatier mushroom and one of the tastiest mushrooms available. It is suitable to grill, roast or BBQ. The caps grow from 25mm – 75 mm, to the average size of 100mm – 175mm and produce several crops. The first crops are the largest, with the subsequent crops being smaller. A combination, half and half kit containing both the White button mushroom and the Portobello mushroom variety is also available. Mushroom growing board kits are another easy way to grow mushrooms. The boards are produced from chemical-free poplar wood that has been steam sterilised. They are an ideal growing medium for shiitake, pearl oyster, golden oyster and pink oyster mushrooms. Mushrooms fruit at temperatures between 18-25 degrees C. Find a spot in the laundry, garage or even a wardrobe and give it a go. Always read and follow the directions included with the kits. Happy gardening.

AFTER the spate of heavy rain and the sunny days, field mushrooms are popping up everywhere. Sometimes it is hard to identify if they are the edible variety or not, so stay safe and grow your own mushrooms. Grow your own mushrooms using the kits available from nurseries, garden centres and hardware stores. The kit consists of a growing box, spores and compost. The mushroom compost has been prepared and inoculated with the white mushroom mycelium, a type of fungus. It contains all the necessary components to grow several crops of mushrooms over an 8 to 12 week period of time. Mushrooms can be ready to harvest within 3-5 weeks depending on the variety. The original and most popular is the White button mushroom which is a versatile all-rounder, suitable for a large range of dishes. The caps of the mushrooms in the button stage are usually 25mm – 75 mm in diameter, but if left to mature and open the caps can reach a size of 100mm – 175mm in diameter. Crops grow back every 10-14 days until the mushroom kit uses up all its nutrients. Approximately 1.5kg of mushrooms can be harvested during the 3 months

How to discuss pet euthanasia with children EUTHANASIA of our pets is undoubtedly the most difficult decision we make as pet owners. This process can be even more complicated when there are young children involved. Research has shown that being upfront with children about the process and what is happening leads to fewer emotional problems in the future. DO Use the words death or dying. Be open and honest about what occurs: it can be difficult for a child to learn later on that you have manipulated the truth. Encourage children to express their emotions about how they feel and be open about your own emotions. Ensure the children understand the death of a pet is not their fault. Arrange a memorial or symbolic event when the child can express their grief. Wherever possible talk to your child ahead of time about the euthanasia.

Allow the child to be present at the euthanasia if they would like to be. DON’T Use phrases such as ‘put to sleep’- this can lead to sleep phobias or anxiety around sleep. Imply the animal has ‘gone on a trip’ or ‘gone to another place’: this can leave children feeling abandoned or feeling that they can go looking for the pet. Lie to your child about what’s occurred. An example of how you might explain the decision to euthanase your pet: “When animals get old or sick their bodies wear out and don’t work properly anymore. “This can make them unhappy or uncomfortable. “We love ‘Fluffy’ so we do not want him to be in pain. “When ‘Fluffy’ is euthanised he will die- this means that everything in his body will stop and won’t be working anymore. “This is different to when we’re

asleep and our body is resting but functioning normally. “Euthanasia will help ‘Fluffy’ to die peacefully and without pain. “This is a kind thing for us to do for him. “It will make of us all very sad because it doesn’t feel nice to have to say goodbye to someone that we love very much.” Dr Kirri Solly Slade, Warby St Veterinary Hospital

SHARING TRADITION: Salvatore and Josie Politini showing a class the ropes in traditional salami making.

Josie said that she has been passionate about food since her childhood in Sicily, and loves to prepare food using traditional Sicilian methods, including her specialties, arancini and cannoli. “Sicilian food is very simple, we use all fresh ingredients, herbs, home grown ingredients,” she said. She said that over the years, the food scene in the King Valley and the North East has developed rapidly, and “there is a lot of great food here now”. Josie said that after Salvatore has spent a day at work in the winery, hearing him unwind with his beloved piano accordion is one of the favourite parts of her day. “Ever since I’ve known him, he’s always played his accordion,” she said.

“He’s got his little spot where he plays. “I reckon the whole valley can hear him.” Politini Wines is one of many King Valley wineries open during the Weekend Fit For A King celebration, with activities including wine tasting, a supervised kids’ tent, music from Salvatore and his piano accordion, and plenty of food options for visitors to enjoy. The pair are also looking forward to sharing their expertise in coming months with cooking classes at the winery. FISHING FOCUS

CATCH OF THE WEEK

Another season draws to a close

GOT A PHOTO FOR CATCH OF THE WEEK?

BY ROB ALEXANDER, WANGARATTA

WELL folks this is it….the curtains have been drawn on my weekly fishing column for another season. And what a fantastic season it has been. This season we have seen trout sulking in streams, trout committing suicide at Lake Dartmouth, and happy trout swimming off after coming face to face with the best looking fishing journalist in the country……Will O’Connor from Beechworth. We have just experienced one of the most memorable Murray cod seasons that I can remember in North East Victoria. Most people chasing big cod caught them; most people just happy to get out and drown some bait managed to catch a Murray cod, and those of us searching for “inner peace through cod” achieved it. The trout season closes this weekend, and reopens on Saturday, September 3. Murray cod season remains open for now and closes at midnight on August 31, although the cod fishing will be tough for the average angler during winter. Here are a few tips for anybody that develops a twitch in their outboard motor over the next few months and needs to just get out and wet a line: Lake William Hovell and Lake Dartmouth are consistent trout fishing lakes and remain open all winter. Try trolling winged lures such as Tasmanian Devils, particularly at dusk and dawn, and when it is foggy and dull.

Send in your fishing photos along with your name, contact number, size and type of fish and where you caught it to... kwilson@ nemedia.com.au Phone: 03 5723 0135

YOUNG GUN: I had the absolute pleasure of meeting young Hugh Blythe from Beechworth last week. Hugh is a great kid, and obviously a very good fisherman. Check out this magnificent Lake Kerferd redfin he caught a little while back. Great work Hugh, well done mate. Khancoban pondage is unpredictable but can really turn on the big trout action during winter. Try fishing mudeyes underneath a float over the weed beds. Eildon Pondage is one of the best fisheries in the state and is stocked regularly with trout, including the big old breeders up to 10lb from the nearby Snobs Creek hatchery. The family friendly waterways will be stocked with yearling rainbow trout at the end of June in time for the July school holidays. These lakes are Fosters Lake (Glenrowan), Lake Sambell (Beechworth) Stanley Dam (Stanley) Upper Sandy Creek Dam (Sandy Creek), Wodonga Wetlands (Wodonga…. ironically), Alans Flat dredge hole (Yackandandah) and Lake Anderson (Chiltern).

SUDOKU HARD

It is interesting that Wodonga has four family friendly fisheries stocked with trout for the school holidays, and Wangaratta has…….none. It is something that has frustrated me for a long time, and I am currently in talks with fisheries Victoria, and VRfish to try and get some trout stocked into the Merriwa Park wetlands for the school holidays next year. Wangaratta has a lot of wonderful young people that love to catch fish during the school holidays too. I know this; I used to be one myself. It has been added to the agenda for the next fish stock meeting in September. Good luck to everybody heading out fishing during winter. I will be back on August 31 in time for the new trout season. Until then, tight lines.

LAST ISSUE’S SOLUTION

Say hello to a different culture in your own backyard Is there a world without borders? Can you bring the world home, without an air ticket? Thor Heyerdahl once said: “Borders I have never seen one. But I have heard they exist in the minds of some people.” The famous Norwegian adventurerethnographer famously embarked on his 8,000km Kon-Tiki expedition on a hand-built raft. It showed that ancient people could have crossed vast distances and created contact in faraway settlements between themselves. When it comes to bridging cultures, Southern Cross Cultural Exchange

k/31d52481-v15/2016

believes “the whole family, not just the individual, stands to gain” from the action of one youth living half a world away. The award-winning SCCE organisation has been at the vanguard of international student exchange, linking highly curious and adaptable high schools students to their counterparts living in a different culture. Come July, Norwegian and other Scandinavian exchange students from Thor Heyerdahl’s home country will be keen to experience high school life in Australia, and discovering for themselves more about Australian culture. They will attend school and live with local host families.

Besides Norwegians - Swedish, Danish, Finnish, Japanese, German, Italian, Spanish and French high schools students aged between 15 and 17 will be joining their volunteer host Australian families and exchange notes about their different educational systems and lifestyles. Southern Cross Cultural Exchange takes care of their school enrolment and other arrangements. It encourages local families of all shapes and sizes who are available to do so to take up an invitation to link up their families to another that is halfway around the world, through selecting a student to host according to their family’s availability.

Battle the winter blues THE winter blues normally hits you when it’s been cold and miserable for a while and you have the overwhelming feeling of being cold to the bone, tired, you have no motivation and you just can’t seem to get it together. At this point you realise your body isn’t working at its best; your bowels have slowed down, you are bloated and your exercise routine consists of walking to the car to go to work, or finding the remote for the television. You avoid social gatherings and you just can’t manage to stay on task. For most people the winter blues can hit after a cold, you get sick and then three weeks later you realise that you are still tired, headachy, moody and struggling to get out of bed. Most of us experience a mild drop in mood and feeling like we can’t be bothered at this time of year, but for some the depression type symptoms are debilitating.

Naturopath’s top 5 tips to reduce Winter Blues 1. Take a mini break: a weekend or even better a week away in sunshine gives you that boost of Vitamin D your body is looking for. Even a daily brisk walk at lunch time will boost your moods, improve energy and your productivity in the afternoon. 2. Hydrate: What do fluids do when they get cold? They slow down their movement and get thick. So keep your warm decaffeinated herbal teas, soups, broths and warm water with lemon or lime in it up. This will help reduce blocked glands and reduce aches, pains and headaches. Aim for a minimum of 1 litre of decaffeinated fluid a day. See our website for recipes or our herbal tea range. 3. Exercise: keep moving. Hire a treadmill for the winter, get some workout DVDs

or YouTube Pilates/ yoga classes. Movement increases circulation of fluids. Circulation of fluids= delivery of nutrients and improved moods. 4. Make the most of indoor time: clean out cupboards, stock the freezer with bone broths, smoothie packs, casseroles and make ahead meals. Ensure you are utilising your herbs and spices to boost your immunity and improve circulation. Or start a hobby, painting, crafts, reading etc. 5. Herbal medicine: help boost immunity, improve recovery and resistance to winter bugs as well as improving energy and mood. So if you have or are suffering from a drop in mood or motivation/ energy through winter, give us a call and we can help you have the energy you need to get the best out of our beautiful region this winter.

( Friday June 24 ) WANGARATTA PERFORMING ARTS CENTRE

Around $30 THERE are advantages to heading out and tasting wine in the cooler months of the year. It’s fun to rug up and go for a long walk, you don’t have to worry about finding shade, the wasps are gone and there’s often a wood fire to back up to and warm the legs. It’s also a time when your appetite surges and you’re more inclined to find hearty savoury dishes on the menu, like beef cheek, cassoulet, snags and shanks. Fortified wines may well be more versatile than only being served as an after-dinner winter warmer, but it’s still hands down the best way to put fire in the belly and a flush on the cheeks. And Baileys of Glenrowan classic Muscat certainly delivers on both those counts. It has a burnished amber colour but what really captures your attention is the vibrant, fruity aroma which is rich with juicy raisins and a hint of rose blossom.

WITH ANITA McPHERSON It’s sweet and delicious to taste but also quite complex, with lots of that intense, juicy fruitiness layered with a golden, caramel-like glaze. You could serve it chilled if you wish but I prefer to savour it as it comes; perhaps accompanying a chunk of crumbly, vintage cheddar or a bowl of bread and butter pudding. It’s the sort of drop that warms the heart and that’s good at any time of year. Try the range at the Trails, Tastings and Tales festival on the Queen’s Birthday weekend while enjoying a wood-fired pizza or a game pie, or visit: www. baileysofglenrowan. com.au.

Employees ready to leave jobs if health and wellbeing policies fall short

O

ne in two professionals would leave their jobs if their wellbeing needs were not met – indicating that effective workplace wellbeing programs are no longer just ‘nice to have’ for employers looking to retain their talent – according to a survey of 2400 professionals conducted by leading recruitment firm Robert Walters. Furthermore, for employees who are looking to move on, policies and perks such as flexible work hours, on-site gyms, healthy eating programs and childcare facilities are important considerations when searching for their next role (87 per cent of employees). On the flipside, in addition to higher turnover rates, employers who are not meeting their employees’ health and wellbeing needs face staggering costs, with absenteeism alone costing businesses an estimated $578 per employee per day (adding up to a $44 billion annual cost to the Australian economy).* One in two (48 per cent) of employees who responded to the survey said they would

take more time off if they were experiencing wellbeing issues and did not receive support from their employer; 43 per cent would put less effort in at work; and 26 per cent would start resenting their employer. Worryingly, the majority of hiring managers underestimate the value that employees place on health and wellbeing: 81 per cent do not believe that employees would leave if their health and wellbeing were not adequately supported. While many medium to large companies have wellbeing programs (64 per cent of those surveyed), only one in three (29 per cent) have a program that is effective, wellimplemented and highly utilised. Around half of hiring managers and employees agree that their organisation’s health and wellbeing practices could be improved (59 per cent of managers and 56 per cent of employees), so they can be better utilised – and a key element of executing a program successfully is how active senior management are in driving and supporting the im-

plementation of the program. Businesses seeking to improve their existing health and wellbeing programs should consider the following suggestions, which are based on Robert Walters’ research. Three tips for driving a successful wellness program 1. Senior leaders must be seen to be the champions of the program by talking openly about the wellness initiatives and their own experiences with the program. 2. Give employees the chance to help drive the workplace wellness program by getting them involved; eg, offering suggestions and implementing the initiatives, and hosting staff discussion groups. 3. 3. Actively promote the workplace wellness program internally to existing employees, and externally to potential candidates. Many employees are not aware of what their employers offer; and while the intranet and email are frequently used by organisations to promote their wellness program, management leadership briefings are underutilised.

BUSINESS AND FINANCE

And the exploitation of junior and part-time workers continues THERE must be something wrong in this country, given all the firms who have been underpaying their casual workers and junior staff may now have a case to answer. First we had the revelation at 7/11 which is estimated to cost in excess of $100 million, and then Macca’s and now Coles being informed by the Fair Work Commission that the deal they cut with the Shop, Distributive and Allied Employees Association has cost low paid workers some $70 million a year. Tens of thousands of workers have been paid penalty rates that are lower than the workplace award – the basic wages safety net. If my reading is correct Workplace agreements are meant to pass the “better off overall test”, which is intended to ensure workers are paid more under such agreements than the award. The Fair Work Commission’s

By KEN CLARKE, WANGARATTA CERTIFIED PRACTICING ACCOUNTANT

kenclarke11@bigpond.com decision found the Coles agreement failed the test. The Commission is being quite ruthless in giving Coles 10 days to provide undertakings to either compensate employees left worse off by working shifts with low penalties or to overhaul rosters. Failure to do so will see the agreement being torn up. It would appear to me that if the Coles deal could not pass the “better off overall test” then what about Woolworths, Bunnings and Mc Donald’s who also have agreements set up by the SDA. The appeal by trolley worker

Daniel Hart which triggered the full bench hearing, said the tribunal ruling was “as clear a victory as we could have hoped for”. A Coles spokesman defended above inflation pay increases in its workplace agreements. In the case of Mc Donald’s they are keeping out of the public spotlight by relying on the Shop and Distributive and Allied Employees Association and employer lobby group Australian Industry Group to represent them. But they have written to their network of franchisees responding to revelations made by Fairfax Media about it underpaying employees by tens of thousands of dollars under the agreement with the Shop, Distributive and Allied Employees Union. In a surprise to me the 2013 agreement was signed off by the Fair Work Commission. However, it appears what was signed off excluded weekend

penalties. Australian chief executive Andrew Gregory reveals that Mc Donald’s is in on-going “direct” discussions with government ministers, and with “both sides of politics” about its stance on industrial matters. Pardon the pun, but what gives Mc Donald’s the right above all other employers in this country to discussions with government on industrial matters. Pressed for a view from the ACTU, secretary Dave Oliver said he understood the SDA/ McDonald’s agreement had been struck according to an enterprise bargaining system that allows employers and unions to negotiate on pay and conditions above the minimum, and subject to the Better Off Overall Test. But the agreement was signed in mid-2013 and was measured largely against archaic state awards. It is my

belief that two individuals cannot make an agreement to break the laws of the land and this is what has been happening. Small business who are not party to these enterprise agreements abide by the award wage system and therefore are not competing on a level playing field. Fairfax Media estimates that nationwide, workers at Mc Donald’s - Australia’s second largest employer – appear to be out of pocket by $50 million a year. In this day and age, it is quite easy to check pay rates and allowances on the internet, so if you are thinking of taking a part time job in the hospitality field, when you receive your first pay slip, look up the internet and see that you are being paid the right rate of pay. If not, then ask before you get entrenched in the workforce and the exploitation continues.

Designated drivers will be rewarded with free entry to the event and free tea and coffee all weekend. Drink driving is still one of the biggest killers on Victorian roads, accounting for about one-in-four driver deaths. TAC research shows regional drivers are more likely to drink and drive than their metropolitan Melbourne counterparts, due to limited access to public transport options. “We all have a role to play as we work towards a future free of road deaths and injuries and that means taking responsibility for our actions and looking out for each other,” Ms Buckis said. information to patrons. The breath-testing teams will be at Pfiffer Wines, Cofield Wines, All Saints Estate, John Gehrig Wines, Jones Winery and Vineyard and Rutherglen Estates. Additionally, free breath-testing machines will be stationed at a number of other wineries participating in the event. “We always encourage people to separate their drinking from their driving but, for those people who do want to have a drink or two, we strongly urge you to make sure you check you’re under the limit before turning the key,” Ms Buckis said. “It can be hard to track your alcohol consumption over time so it’s always best to avoid mixing drinking with driving altogether.” The TAC shuttle bus service will make a return this year, providing a smart and safe option for those planning on drinking. “The shuttle buses are a hop on, hop off service moving between the 17 wineries, letting passengers take advantage of all the festival offerings without using their cars,” Ms Buckis said.

WINE-LOVERS sampling the region’s finest drops at the Rutherglen’s annual Winery Walkabout this weekend have been urged to separate their drinking from driving. The festival is expected to draw more than 20,000 visitors to the region over the Queen’s Birthday long weekend. The Transport Accident Commission’s Samantha Buckis said while food and wine will be high on the agenda, planning a safe way home should be festival attendees’ number-one priority. “Everyone heading to the Winery Walkabout will be looking forward to a great atmosphere over the long weekend and we hope to see everyone making sure they arrive home safely,” Ms Buckis said. “If you’re planning on drinking then you need to make sure you have thought about a safe way home and that can never involve driving.” The TAC is calling on festival goers to organise designated drivers or take advantage of the transport options on offer. In a Walkabout first, breath-testing teams will be on hand at six wineries providing free tests and standard drink
