The unit previously occupied a site located at the corner of Crawford and Howes streets, at the rear of the historic former shire council building.

This aging building re-

quired extensive upgrades to ensure the unit could adequately undertake training, store equipment, and run operations.

To help resolve the issues at the previous facility, Indigo Shire Council allocated land for a new site on Anderson Street.

National Tree Day marked with local planting project

By CORAL COOKSLEY NINETEEN passionate landcarers donned gloves, pushed spades and hammered stakes to dig in native plants in Beechworth on Sunday to mark National Tree Day. Held at various times on or close to the day by different organisations including schools around the Shire, National Tree Day is Australia’s largest community annual tree-planting and nature care event organised by Planet Ark in partnership with Toyota Australia.

Sunday’s planting, part of the local ‘Trees for Bees’ project where Beechworth Urban Landcare and Sustainability Group (BULS) partnered with Beechworth Honey two years ago, drew family, friends and local community members as 270 native trees were dug in along the Rail Trail in Mellish Street.

The project aimed to sustain bees and native pollinators, regenerate public and private land and capture carbon through the powerful role of trees in combating climate change.

One of two project coordinators, BULS’ Libby Hosking with Russell James as the other, said the continued planting this year took the area along the rail trail to around 800 native trees.

“We are also maintaining the area to keeping on the weeds and keeping the native grasses going as well,” Ms Hosking said.

“There’s been lots of willing workers that have been fantastic,” she said.

Three h occupants treated d following Wooragee crash THE occupants of a vehicle which left the road surface and crashed into two trees near Wooragee on Sunday night have avoided major injury.

Beechworth police crews are continuing to investigate the circumstances of the crash, after the white utility left Beechworth-Wodonga road while travelling north around 5.20pm, hitting a tree and then a second tree head-on.

The caravan it had been towing was completely destroyed.

Sergeant Mal Clarke said witnesses had assisted emergency service crews at the scene, with a 21-year-old female conveyed to hospital for observation and a 40-yearold male and 17-year-old boy treated at the scene.

Sgt Clarke said all three had been alcohol tested at the scene and returned negative results.

“We’re continuing the investigation into why it left the road - we’re calling for witnesses who may have dash camera footage leading up to the collision,” he said.

“It’s an 80kph zone - it can be a pretty busy stretch of road.

“It’s very unusual for somebody to leave the road unless there was some factor.”

Sgt Clarke said one of the occupants was continuing to receive medical treatment, with police set to speak to each individual over the coming days.

DISCUSSIONS are taking place between Indigo Shire Council and the National Trust of Victoria for a memorandum of understanding (MOU) between both organisations for the historic carriage collection presently housed at Billson’s Brewery under an expired lease.

The move followed a motion

by Indigo Shire mayor Bernard Gaffney at council’s general meeting held on July 26 that council thank Billson’s Brewery for their patience and support of the National Trust in storing and exhibiting the heritage carriage collection, requested the shire chief executive officer to prepare the MOU with the National Trust, and for the CEO to find a new home for them on a long or short term basis.

Cr Gaffney said further discussions will be held between both organisations’ chief executives before a memorandum of understanding for the carriages is signed.

“There will also be a conversation about the heritage value and the conditions the carriages are in, as some may be in need of restoration,” he said.

At the meeting it had been indicated that Billson’s Brewery required the space for their expanding business.

The brewery has offered financial support for rehousing the carriages while the Beechworth Heritage and Historical Society (BHHS), Beechworth Old Cranks Motor Club and Beechworth Men’s Shed have all offered support in

Beechworth RSL’s John Eldrid said Dr Webster will give the commemorative address at the cenotaph in the Town Hall Gardens on Thursday, August 18 following a gathering at the RSL sub-branch at 10am.

Members and guests will then march to the cenotaph 40 minutes later where the service will commence.

The service agenda will include a Welcome to Country, welcoming address, the ANZAC Hero sung, followed by The Ode and Lest We Forget, the Last Post, Rouse, singing of Australian and New Zealand national anthems and wreath lying

In 1987 to commemorate the Battle of Long Tan, former and the late Prime Minister Bob Hawke designated August 18 as Australia’s official Vietnam Veterans’ Day. Mr Eldrid said the date commemorated the Battle of Long Tan but honoured the service and sacrifice of all Australians who served in the Vietnam War. The Battle of Long Tan is one of the largest battles fought by Australians in the Vietnam War. On August 18 in 1966, Delta (D) Company, Royal Australian Regiment (6RAR), fought an ‘encounter’

BHHS president Elizabeth Mason said the society’s continuous active campaign to have the valuable carriage collection rehoused has been an ongoing frustration.

“For council to rehouse the collection in the renovated old Railway Good Shed had been supported by some of the carriage owners who have their family carriage in the collection,” she said.

“None of us can understand why the refurbished Goods Shed that is a perfect location for the collection and vacant for the last five years can’t be used.

“Questions are being asked why rehousing of the carriages has been going on for so long.

“Indigo Shire Council should listen and support community wishes to have the carriages returned to a site which represents the best potential for carriage preservation and promotion as the collection is

an asset for tourism.

“Crisis time frames now exist, and Indigo Shire Council cannot just sit on their hands with a perfect empty shed available.”

The O&M Advertiser reported in April this year that executive manager for collections and cultural projects at the National Trust of Australia (Victoria), Dr Annette Shiell, said the Trust - custodian of the collection - is committed to working with the wider community to conserve and interpret the collection.

Ms Shiell said a multi-staged approach had been undertaken to manage the collection and secure its long term future with options being considered for relocation where the Trust would continue to engage with stakeholders including Indigo Shire Council and the (BHHS).

“Our current priority is rehousing the collection so it can be conserved and made available to the public,” she said.

The plantation was only a few kilometres from the 1st Australian Task Force base at Nui Dat where D Company suffered 42 casualties, including 18 dead - more than onethird of its strength - and some 245 enemy troops were killed.

Mr Eldrid said D Company’s 105 men and three New Zealanders from 161 Battery, Royal New Zealand Artillery, fought for almost four hours against soldiers of the North Vietnamese Army, who outnumbered them by 10 to one.

Local primary school students are keeping fit through winter

By CORAL COOKSLEY A HEALTHY exercise program to help keep students fit over winter months started at local primary school at the beginning of this term.

Montessori principal Ben Sockett said the program supported students’ health and wellbeing and had been made possible with a $1,000 grant from Beechworth Pharmacy.

“We decided to use the funds to engage local personal trainer Lindsay McLachlan where we undertake sessions over the term as an addition to our sports program,” he said.

“Lindsay is delivering the program to improve the fitness of the children over the cold winter months of this term and shows that exercise is for everyone - not just for children where teachers join in - and has been a great success.”

School playground accessibility boost for youngsters

By CORAL COOKSLEY A SIZEABLE Victorian State government grant for an upgrade to a local primary school playground has made the recreation area more accessible for its youngsters.

Montessori principal Ben Sockett said the school had received a$42,000 Building Blocks grant, with upgrades finished in stages and a large part of works completed over the Christmas school holidays.

“The three and four-year-olds can access all areas of the playground where slopes have been terraced including paths and steps with synthetic grass as well” he said.

“It’s made our playground much safer for all children.”

Cycle 1 teacher Tameeka Thommers said retaining walls had been

built for the terraced areas while the synthetic grass laid had stopped mud running down the slope that had made the area inaccessible in wet weather.

“With works happening over the Christmas break, when we returned to school at the beginning of the year, we could start to use the improved playground,” she said.

“Contractors then came on weekends and long weekends and finished it off slowly with things added along the way such as staining the timber over the last school holidays.”

“It’s a beautiful area now that it’s finished and can be safely walked on which is brilliant for our Cycle 1 children where we currently have more than 30 three and four-year-

Chil Chiltern history comes alive through $4000 grant THE Victorian Government is helping bankroll local efforts to capture Chiltern’s diverse history, making it available for more people to discover and enjoy.

Chiltern Athenaeum Museum Incorporated has been granted $4000 for interpretive signage depicting the history of the Chiltern Swimming Pool.

The project was among 40 statewide to share in $350,000 in the latest round of Local History Grants run by Public Record Office Victoria to support community and history organisations to preserve, record and share Victoria’s local history.

Other successful projects across the state will help Victoria’s history reach everyone in the community through interactive online exhibitions, podcasts, e-books, history apps and oral histories.

Member for Northern Victoria, Jaclyn Symes, said passionate volunteers in Chiltern help play a vital role in preserving local history.

“We’re proud to back groups like the Chiltern Athenaeum Museum Incorporated in continuing this important work,” she said.

Photography club takes off

By CORAL COOKSLEY AN ENTHUSIASTIC group of photography lovers kicked off a camera club at Quercus Beechworth last Saturday morning with a workshop held by a well-known local photographer.

Beechworth retired professional photo shooter Gary Coombe delved into some photography technicalities which included testing camera equipment followed by the group practicing portrait shots at the inaugural Shutterbugs Photography Club’s twohour session.

right said she loved the idea of connecting photographers and recording local history.

“We’re promoting Beechworth and its surrounds while bringing people together,” she said.

Mr Coombe said new members had different skill levels that stretched from amateur to professional.

“The new club brings members of the community together with like-minded people who have the same interests and where knowledge is shared,” he said.

On the agenda as the camera club develops, Mr Coombe said among various activities will be access to

various events, and trips to places of interest.

Community engagement coordinator Jess Oldmeadow said the club runs on the first Saturday of the month from 11am to 1pm - the same day as the farmers market.

“Gary was the first photographer for the workshop where different photographers who are willing to join in will share their skills with the community,” she said.

“I’m really excited to have the photography club at Quercus as it’s what the community has asked for, and now we’ve made it happen.

“Everyone in the community including visitors to the

town are welcome to come along.

“I imagine some of the tripping around to take photographs will take in the town’s beautiful heritage buildings, Lake Sambell and The Gorge or wherever the club’s projects take them.”

Ms Oldmeadow said the club catered for all ages and skill levels.

“At this stage, we’re asking that parents come along with their children but eventually once we have the club a little more established, we hope that kids can come along as a social activity where they can join in with people who

Haines amendment ensures regions considered in climate policy INDI Independent MP Helen Haines has successfully amended the government’s Climate Change Bill, ensuring regional Australia is explicitly considered in future government climate policy.

The government’s Climate Change Bill passed the House of Representatives last week after being amended by Dr Haines and other members of the crossbench, with a vote of 89 to 56.

The Climate Change Bill, if it passes through the Senate, likely next month, will legislate a target to cut greenhouse emissions by 43 per cent by 2030.

“This is a victory for regional Australia and its impact will be felt for decades to come,” Dr Haines said.

“These changes mean the Climate Change Authority will be required to ensure that any measures to respond to climate change will boost economic, employment and social benefits in regional and rural Australia.

“The regions will be explicitly considered when setting new emissions reduction targets and the minister must address the economic, employment and social benefits to regional Australia in the

annual statement on emissions reductions.”

Expertise in regional development will also be an eligible qualification for appointments to the Climate Change Authority.

“These measures will put regional Australia in the drivers’ seat,” Dr Haines said.

“They will hold this government and future governments accountable to regional Australia and make sure we experience the benefits we know are possible from action on climate change.”

Despite being in isolation after testing positive to COVID-19,

Dr Haines worked successfully with the government and members of the crossbench to move the amendments, particularly with Member for Mayo Rebekha Sharkie who moved the amendments drafted by Dr Haines.

“I am grateful to the Member for Mayo for moving the amendments on my behalf and to the government for agreeing to them in the good faith with which they were put forward,” Dr Haines said.

“I am disappointed members of the Coalition who purport to represent regional Australia did not support my amendments.

“By voting against these amendments, the Coalition voted against jobs and investment in the regions, and put party politics above their own communities’ interests.

“Regional Australians are not stuck in the last century but the Nationals are.

“As an Independent, I didn’t follow a party line dictated by dinosaurs, I worked constructively with the government of the day to improve legislation.

“Once again regional Australians have only been represented in the parliament by having Independents there arguing for sensible policy.

Regional priority for mosquito virus vaccine LOCAL residents are being urged to contribute blood to a new study seeking to understand rates of Japanese encephalitis infection (JEV) throughout the region.

A study set to be undertaken by the Ovens Murray Public Health Unit (OM PHU) will aim to better understand the rare mosquito-borne illness, analysing blood samples taken from up to 600 participants of all ages from throughout the North East to assist in vaccination planning and other prevention activities.

Indigo and Wodonga local government areas were recently identified as priority areas for a free JEV vaccination courtesy of the State Government, with those between the age of 50 and 65 who work in a role that is largely outdoors for more than four a hours a day initially eligible.

The potentially serious disease often carries very few symptoms, with only one per cent of individuals experiencing a fever and headache as a result of infection.

“The amount of rainfall recently points to mosquito numbers being extremely high in our area and it’s important we are preparing for this from a public health perspective.”

A first phase of the test has already begun at participating Dorevitch Pathology clinics at Wangaratta, Wodonga and Rutherglen, with people already booked for a blood test asked to provide another vial to be tested for JEV. A second phase of the study later this year will ask 600 participants to provide blood samples specifically for the study.

Those ineligible to take part in the study include those previously vaccinated against the virus, those diagnosed with the virus or anyone born in Asian countries such as: Bangladesh, Brunei, Burma, Cambodia, China, Guam, India, Indonesia, Japan, Laos, Malaysia, Nepal, North Korea, Pakistan, Papua New Guinea, Philippines, Russia, Saipan, Singapore, South Korea, Sri Lanka, Taiwan, Thailand, Timor-Leste or Vietnam.

Ms Bellette said future community engagement programs around vaccination information were in the works.

“This will be particularly important for people who are outdoors for paid employment, those who work with or own pigs, and people who work with mosquitoes in laboratories or the natural environment,” she said.

She also urged residents to taken necessary precautions to avoid mosquito bites, including wearing loose clothing, wearing insect repellent, using mosquito netting and screens where possible and removing water-holding containers where mosquitoes may breed.

By RYAN MALCOLM PRESSURE on first responders throughout the region continues to mount, as demand for ambulance services across the state smashed records for the third consecutive quarter.

Soaring demand linked to the increased spread of COVID, staff furloughing and sicker patients who had deferred care was experienced throughout the Hume region in the fourth quarter of 2021/22.

Indigo Shire not only had the worst response times in the region, but also the state, with just 20.6 per cent of code one responses completed within the required 15 minutes.

Benalla Rural City, City of Wodonga and Strathboresponse times also ballooned, while responses throughout the Wangaratta local government area (LGA) fell by four seconds.

Alpine Shire experienced a drop in average response time, falling by 54 seconds from third quarter data and more than two minutes since six months ago, however, the average response time remained well above 22 minutes for high priority callouts.

berg - all our medical staff have been working incredibly hard, however, we need more doctors, surgeons, physicians and dentists.

“We are not a third world country but sometimes the government’s neglect makes it feel this way in regional Victoria.

“Calling triple zero should be every Victorian’s right, not a privilege.”

Wangaratta-based state MP Tania Maxwell saw 26 of the 27 local government areas within her electorate record worse average response times than the same time last year.

“The government’s ploughing hundreds of millions of dollars into recruitment, training and more emergency calltakers, but communities are yet to see any significant improvements in performance

response and our resolute, hard-working paramedics remain under sustained pressure,” she said.

“Paramedics are doing their absolute best to response to these critical emergency calls, so why are response times between March and June going backwards in 21 of 27 local government areas and getting better only in one - Mansfield - between one year and the next?”

Across the state, more than 13,000 ‘lights and sirens’ cases were reported compared to this time last year, prompting Ambulance Victoria interim chief executive Felicity Topp urging residents to save triple zero calls for purely emergency situations.

“Our paramedics are working extremely hard to manage the increasing demand while prioritising care to the sickest Victorians,” she said.

“While ambulances are always provided to patients when required, about one in five calls to Triple Zero do not need an emergency ambulance response.

“Some people hesitate to call 000 because they are not sure if their situation is an emergency - if in doubt, always call Triple zero and the trained call-taker will help and direct you.”

GPs and pharmacists can also provide non-urgent care, while Nurse-On-Call can be reached on 1300 606 024.

Rental housing shortage a concern MEGAN Peirce was born in Wodonga, has lived in Wooragee for the last three years but has had family living in Wooragee for a decade.

What’s your job?

Alongside my partner Ollie, I run a freelance graphic design/illustration agency called Asette Studio as well as The Beechworth Conservatory which is boutique indoor nursery/ coffee and house/heritage accommodation.

I also work for amazing local design legend Fiona Larkin at WWWART. Safe to say I’m busy.

What brought you to this role?

We started Asette Studio in 2017 in Melbourne while working some uninspiring hospitality jobs. We’ve been slowly building towards working for ourselves full time, but that opportunity didn’t present itself until we stumbled across an old empty shop front at 9a Bridge Rd, Beechworth.

What do you love about your job?

I love connecting to the community through our shop. Being a designer can be a solo journey at times, so it’s great meeting new people. I love interior design and random projects, and the shop has no shortage of opportunities to fulfil this love.

What do you do in the community?

The Beechworth Conservatory provides a safe space for people to connect to the community and experience a sense of social security without judgement.

What’s the most important current community issue for you?

Rental house shortage. While this is currently a nationwide issue, I think this is a pretty significant issue in our area too.

What would you do to solve, change or improve that situation?

I think this issue needs to maybe be solved on a higher level than just our local government, however there are steps that our local council and community could take. Ensuring safe, affordable housing for everybody should be an absolute priority.

Ross Gordon, Stanley What’s the most important current world issue for you?

Gender equality. Globally, women have fewer opportunities for employment than men, earn less, have less access to basic and higher education, greater safety risks (usually due to men) and less political representation. Besides being a fundamental human right, gender equality is absolutely essential for the betterment of all people.

If the person you would most like to meet came to Indigo, or was already here, who would that be and what would you show them?

I would love to meet chef Rick Stein and show him Beechworth. He is so passionate about his home of Cornwall and all the local produce there, and I would be pretty proud to show him our range of amazing produce (I think our region could defiantly rival his)!

Also, if he were here, ideally he could cook us up a feast.

Why would you show him that?

How lucky are we to be surrounded by amazing wineries, olives, honey, cheeses, foraged fungi, coffee roasters and breweries? They are all my favourite things and I am forever grateful that not only do I get to indulge in them, but I can share them with our visitors.

What book are you reading?

I’m reading ‘The Library of Lost and Found’ by Phaedra Patrick. I do tend to judge a book by its cover so I am trying to be more open to books I wouldn’t normally read.

MUD BOWL: The Beechworth Bushrangers used the tough and muddy home ground conditions to their advantage on Saturday to claim a big win over Kiewa Sandy Creek.

Winners crowned on countback THERE were even numbers at golf last Sunday, so a four-ball Stableford event was played.

The winners on a countback with 43 points were Jacob Howard and Zane Howard, runners up were Andy Croome and Jamie Dolny also on 43 points.

Third on 40 were Stuart McIntosh and Dylan Pool.

Jacob Howard (12) had the best individual score with 39 points, Jamie Dolny (18) was the next best with 35.

Zane Howard claimed the only nearest the pin with his tee shot on the 10th.

There was no Wednesday golf last week due to the adverse weather conditions.

Wednesday golf is at 8:30am for a 9am hit off.

This Sunday will be a Stableford event 11:30am for a 12 noon hit off.

Sunday, August 21 will be the August Monthly Medal.

Bushrangers roll Kiewa Sandy Creek in the wet THE Beechworth Bushrangers have put the TDFL on alert.

The Bushrangers continued their winning ways on the weekend with an upset 47 point home win over flag fancies Kiewa Sandy Creek to further prove their premiership credentials.

The win made it their seventh in a row and handed the Hawks just their third loss of the year, which now ties the Bushrangers with the Hawks on wins with Beechworth only percentage out of second on the ladder.

Only one goal was kicked for the whole match by the visiting side in what was a standout Bushrangers team performance.

sure the boys weren’t getting carried away.

“We set ourselves for it, we came in and wanted to give it a red hot crack and we did that,” he said.

“We were very happy with the result and I’m pleased with how the boys went about it.”

Cartledge said the cold and wet weather on Saturday suited his team as they fully immersed themselves in the conditions and used their knowledge of their home ground Barmuutha Park as an advantage.

“We embraced it from the outset, all week the weather

said it was going to be wet and obviously we train on our ground , whilst on Thursday night when we trained it wasn’t in the condition it was then after four games beforehand,” he said.

“It’s the middle of winter, it’s wet, we were expecting it to be cold and muddy and dirty so I’m surprised if anyone thought it was going to be any different.”

The Bushrangers have now beaten all surrounding top five contenders on the ladder in their current win streak to gain a mental edge coming up to finals.

This weekend the Bushrangers take on Wahgunyah, who they defeated earlier in the season by a monster 431 points.

Cartledge said he will be looking to keep continuity in

his side and keep the team focused on maintaining the winning momentum gained by succeeding in small gameday challenges set during the week.

“The main thing for us it to make sure we’re playing our brand of footy, not getting carried away with ladder position or anything like that,” he said.

“We play a selfless brand of footy, making sure we’re doing the team things, manning up in the backline, forward line has to work for each other.

“All the sort of things that have got us to where we are, it doesn’t really phase us where Wahgunyah are or where they are on the ladder, it’s about playing our style of footy.”

Singing for joy, not perfection

THE birth of Sing Australia in Wangaratta came about when Sing Australia founder Colin Slater OAM attended a church service and Keith Martin heard him singing.

After the service, Keith approached Colin, who was ‘scoping the area out’ to decide if he wanted to move here, and Colin told him about Sing Australia and how to form a local group.

Keith took the knowledge along to the next Lions Club meeting and said ‘we need men, how about a few of you blokes come along?’

Ron Stafford and Graeme Whitehead all decided to take up Keith’s offer.

“I’m still there now - I’m a sucker for it - no, I do really enjoy it,” Keith (Fleet) said.

The nucleus of the group was formed with seven original members in Keith Fleet, Ron Stafford, Marlene O’Keefe, Marion Nash, Carmel Ellis, Ann Jones, Janet Martin and Debbie Rosicka still attending.

The first get-together of Sing Australia Wangaratta took place in February 2009 at the Wangaratta High School with 20 people.

“Singing has many advantages - it helps the body through breathing, helps the soul

and creates friendships,” Keith said.

“We enjoy social gatherings and taking our music into the community when we sing on Australia Day, at nursing homes or for the Carols.

“We busk in Reid Street and have the opportunity to get together with other Sing Australia groups from around the country.

“I always say that if you can talk, you can sing, and other members can cover you up,” Keith laughed.

“There are very few people who can’t sing,” former member, Doug Kneen, added.

“It’s not about perfect pitch and perfect

quality, it’s about those other things too - the friendships and social aspects.

“Over the years, a number of people have joined who have been recently bereaved or who have gone through a separation or divorce and they have used the group as a social re-awakening.

“They may not stay, but they come along for a while, sing and start to feel better so it’s a good therapy for people as well.

“It’s fun if you like singing, but there are so many other aspects and benefits to it as well.”

Making vet visits ‘fear-free’ IT’S an all-too-common story - the trembling dog in the waiting room or the hiding, hissing cat in the carry cage, the dog that fears thunder and fireworks, or the dog who thinks men in hats are out to get him.

Although natural, fear can cause a lot of distress to our companion animals and should be taken seriously fear of objects, people or places can lead to potential fear aggression.

There are many ways we can help prevent fear during our veterinary visits, the most important being exposure at an early age.

Animals are most impressionable during their first three weeks to three months of age.

During this time, they are eager to learn about their surroundings and make associations between interactions and outcomes.

This means, for us to make the biggest influence on their behaviour and fear level as an adult we must expose them in a positive way as a pup.

We can do this by making these early visits to the vets as fun as possible with plenty of treats and toys to try and relax them and build that positive association.

This exposure should never be forced and should only be positive.

For the fearful adult pet who has already built negative associations with a particular situation, there are things we can do to help.

This involves no forced handling of animals and instead uses their favourite treats and toys to retrain them into enjoying a procedure they previously hated.

This counter-conditioning (retraining) will take time but the results are very rewarding and can change the way your pet thinks about their veterinary visits making life happier for the owner and pet and safer for those handling a fearful animal.

What to do with excess citrus ANY good food gardener will know how to utilise excess produce and this is the season of citrus.

It has arrived in abundance over the last few months, and everyone seems to be getting rid of lemons, oranges and limes.

There are little bags and baskets and buckets of lemons and limes sitting on the front fences of many homes on our walk to school.

Our clinic has also become a lovely drop off point for client’s excess fruits.

As such we have been using the fruits and peel in lots of interesting ways this winter.

Traditionally, any excess produce was preserved to minimise waste and optimise food sources.

At our clinic, we have been experimenting and cooking up some traditional citrus recipes to create cleaning products and edible items from the vitamin C rich fruit, bioflavonoid rich pith, zest and peel.

Save the zest: Thinly peel or grate the peel avoiding the bitter white pith; Use zest fresh or dry for later use; Zest can be air dried on a baking tray in the sun or a brown paper bag hung up near a heater; Store dried zest in an airtight jar; Use in any recipe asking for zest or in a DIY bathroom cleaner.

Dry the peels: After peeling an orange or lemon keep the peel and dry them via ‘zest methods’ or in a low oven or dehydrator; Store in a jar - these can be used to make a citrus peel chai, to add to cakes, making bath and body products, steeped for two weeks in vinegar to create citrus peel cleaner, or used as firelighters.

Freeze the juice: Can be kept in the fridge for up to two weeks or in the freezer in ice cube trays or icy pole holders, ready for summer.

Preserve the fruit: So you can eat it all year round by making marmalade, preserved lemons for curries or making a DIY orange extract.

Dehydrate slices: Dry the thinly sliced citrus in a low oven or dehydrator and once completely dry store in a jar.

You can rehydrate sliced fruit to use in recipes or use dried in chai, baking, homemade potpourri, a garland decoration above a window or grind to make your own vitamin C powder, which can be mixed in hot water and drunk when feeling run down.

YOUR HEALTH Cofield Wines 2021 Shiraz Pinot Noir

WHEN you take an interest in cooking - whether tackling it yourself, dining out or watching it on the telly - you become familiar with the concept of a “mirepoix”.

It’s the fancy French term for an aromatic mix of finely chopped onion, carrot and celery, usually fried in butter, which is the base for so many stews, casseroles and soups.

Just about every culture has such a base, like a Spanish “sofrito” of tomatoes, capsicum and garlic or a Cajun “holy trinity” of onion, celery and green capsicum, from which every good dish is built.

Tried and tested for hundreds of years the chefs of old know what works - there’s no need for magic ticks - just a solid base of good quality ingredients that combine to create great flavour.

It comes to mind when tasting Cofield’s Shiraz Pinot Noir.

It’s a combination of Rutherglen Shiraz and King Valley Pinot Noir, the fruit having ripened slowly in a year when conditions were relatively cool.

This Day in History, 1867 A GRAIN stripper was created by Mr Firth of Oxley, and other district farmers gathered to see it demonstrated on August 10, 1867.

In the days when grain crops had to be either reaped by hand and raked up into bundles, or cut with a mechanical reaper and binder, then threshed at some later date, every farmer with an inventive streak was trying to design a machine which would perform the cutting of the crop, and the threshing of grain all in the one operation.

Mr Firth‘s machine was made to his own design by the Straughair and Duncan Foundry in Beechworth and the farmers were most impressed when they saw it in action.

Eating with our senses

WE have five senses and our sense of taste is what we use for eating, right? Well, not quite.

The Indians and many other races eat with their hands so touch and feeling the food is important.

There is very good science to promote that it is actually very beneficial for the food (and the gut microbiome) to start interacting with the fingers.

Without our sense of smell, our taste of food will be compromised if existent at all.

How many of you are like me get so ravenously hungry and excited when a favourite dish is being cooked and the spices waft through the room?

Hearing? Umm not sure how much this is involved except for when a sizzling hot plate comes out.

Recently, I experienced how much I use sight to enjoy and eat my food.

I use it a lot because I am lucky enough to have sight and really enjoy the look of food.

However, what if sight is not there?

What if you’re blind?

What if you’ve never seen a prawn, or a mango - would that diminish your enjoyment of it? Oh no - the other senses definitely kick in!

Maybe we don’t use our sense of hearing very much in our eating but it is such an important part of social eating - great

conversation always makes a meal taste better.

Recently I went out for dinner with some friends at Dining in the Dark where all the waiters are legally blind.

The entire restaurant is pitch black - you can’t even see your finger in front of your nose.

You aren’t told what you will be eating so it is a total surprise and a great way to use the other senses to guess what the food is.

Each time our waiter came to give us some food he would tap us on the shoulder and reach over to place it down.

We had four courses and each course had a board with small plates embedded in it - there was so much to try and guess what it was.

I tried to eat with my knife and fork but in the end I didn’t want to miss any so I used my hands too - no one could see me.

It was a truly incredible experience and really made me appreciate my sight but also how much I really love the look of food and I definitely pick food by how it looks, how fresh it is, how it is served.

At Dining in the Dark I learnt that I could have an incredible meal without seeing it at all.

In fact, I might try to eat blind folded more often to enhance the other senses.

Singing for joy, not perfection ■

Being part of a larger organisation offers the opportunity to meet other groups at the annual national gathering or to travel overseas.

“Members of our group have toured England, Ireland and Scotland and in 2010 and 2011, some of our members were in the choir who sung at the dawn service at Gallipoli and at Lone Pine.

“With only a few days’ notice, we had to learn the Turkish National Anthem for the service and we had to practise and practise before we finally got the nod from our guide who was checking we were pronouncing everything right.”

“When we were at Lone Pine in 2010, we met (then) GovernorGeneral Quentin Bryce,” Doug added.

“When I was there in 2011, Warren Snowdon, (then) Minister of Veterans’ Affairs, heard that a choir from Australia was there and he came up to my wife Dawn and me and asked us where we were from.

“When we told him Wangaratta, he said he was too - he’s related to Doc Snowdon and he asked after an old friend that we knew as well.”

“The trips overseas were sponsored by the Australian Government and they arranged everything,” Doug said.

“We spent three weeks in Turkey and sang in some absolutely fantastic places.

“The only place we weren’t allowed to sing was in these 100 foot high limestone caves where people live.

“There was one section that had been carved out as a church

and the echoes were great so we said, we just have to sing in here.

“We got about three words out before a guard came and chucked us out - they didn’t want the echoes to destroy the stone,” Doug laughed.

Songs are prepared from songbooks provided by Sing Australia and practices take place under conductor Sarah-Ann HolmesBrown and pianist Doug McGregor.

Sarah has always had an interest in music and choirs and completed a Bachelor of Arts with a major in music.

“When I moved back to Wangaratta, my mum dragged me along to Sing Australia and when they lost their conductor, Keith gave me a ring and asked if I would come and conduct - I have been in the role for seven years now and I love it,” Sarah said.

Doug McGregor has played in many community bands including jazz, dance, brass and concert bands alongside a 30 year music teaching career.

“I have been playing piano for Sing Australia for around 10 years because I am able to share the wonderful thing called ‘music’ with them,” he said.

“They sing enthusiastically from the first song of the evening to the last, which I find inspiring.”

Rain melted snow causing icy conditions FOLLOWING the storms and rain late last week, snow coverage has fallen from previous weeks.

At Dinner Plain, Cobungra Platter Poma was closed to allow the slope to drain and recover - rain soaked snow has the potential to become a hazardous ice sheet when the temperature lowers.

The depth of the Cobungra slope is variable in areas of between 8cm and 15cm with more snow in the middle.

Cross Country trails are soft and thin and patchy in places and the bottom end of the Guide Alice trail has not been groomed due to cover.

FALLS Creek has an average snow depth of 98cm with icy patches on the road from Mount Beauty so take care.

They have nine lifts open with skiing, snowboarding and snowplay only available at the moment.

Cross Country skiing is available with conditions ranging from patchy to excellent across their 32 trails.

Mt Hotham is reporting an average of 95cm across the mountain and have 11 lifts running.

There are 69 trails open, with all 16 cross country trails open with very good cover.

All Terrain Parks are currently closed.

Mt Buffalo is reporting patchy snow overall with Dingo Dell and Cresta Valley toboggan slopes closed, however Cresta Valley is open for snow play.

Dingo Dell Café is open for food and beverage and the ski shop is also open.

Sentinel and Cresta have good conditions for snowshoeing.

For cross country skiers, Beginners Loop, Bogong Plain and Horn Road trails are open, however they have a poor coverage of snow and large areas without any coverage at all.

Chains are required to be carried for all resorts and fitted where instructed.

Spinning a tornado yarn FOLLOWING on from previous articles on severe weather, today we will focus on tornadoes.

When we talk about tornadoes, we think about America and the devastation they cause.

However, tornadoes actually occur in Australia more frequently than people think and are ferocious enough to destroy homes and property.

So what causes a tornado?

A tornado is a rapidly rotating column of air extending from a thunderstorm to the surface of the earth.

This mobile, funnel-shaped cloud typically advances beneath a large storm system.

Tornadoes are visible because nearly all the time they are a condensation funnel made up of water droplets, dust, dirt and debris.

While a tornado may go by many names like “whirlwind,” “windstorm,” “cyclone,” “twister” or “typhoon,” they are important to understand because they are the most violent atmospheric storm.

A perfect example of the devastation a tornado can cause in our area specifically, is the one that completely destroyed the caravan park in Mulwala and caused havoc in surrounding areas in March 2013.

Mulwala and Yarrawonga residents described the sight ‘like a bomb going off ’ and could not believe what they were seeing.

Many did not realise that tornadoes even existed in Australia, as they are usually labelled as a strong downdraft or microburst.

Unfortunately, there is nothing ‘micro’ about a tornado

when they touch down, regardless of whether they are short lived or remain on the ground for up to an hour or more.

The risk of a tornado increases when a warm, moist and unstable airflow is pulled in from the Pacific Ocean and the Coral Sea, gets dragged into the region and collides with an approaching cold front.

This weather pattern is very common during storm season and the risk of a tornado is more likely at the rear of a thunderstorm where warm and cool air collides.

This can potentially create a column of air, giving birth to a tornado.

I have been a professional stormchaser for 25 years and witnessed firsthand a tornado that developed during storm season just out of Springhurst earlier this year.

It formed very quickly and sounded like a freight train that was not prepared to stop in a hurry.

I was fairly close to the tornado but it was moving away from my location and travelling at a speed greater than 50kph.

It slammed into a shed and threw debris all over the paddock and high into the air.

That was my first encounter with a tornado and the experience was very surreal.

It could have been more dangerous for me personally, and proves that tornados move faster than anyone can run and they are unpredictable.

Remember if you are outdoors and encounter a tornado, find shelter by using your car or a structure.

This will give the best protection possible to ensure your safety from strong winds and potential debris.
