THIS WOMAN’S WORK Director Rachel Walshe tackles gender inequity in Ironbound In Martyna Majok’s Ironbound, which runs through April 10 at The Gamm Theatre, we meet Darja, a Polish immigrant struggling to get by on her cleaning job. Over the course of 20 years, Darja encounters three different men who offer her either love or financial security – never both. It’s a stark portrait of what it means to be a woman fighting for survival in America. First produced in 2016, the play feels even more urgent now, after COVID lockdowns pushed 3.5 million women out of the workforce. Women in front-line occupations – grocery store workers, health care aids, service industry staff – often lived precariously to begin with. Without health insurance, living paycheck to paycheck, the pandemic heightened the inequities around work that were building over the decades. “The pandemic laid bare the extreme weakness in our social fabric,” says director Rachel Walshe. “In Ironbound, Darja’s labor is undervalued. She’s doing work others refuse to do.”

Walshe points out that it’s easy to romanticize the working-class hero. But with Ironbound, Darja’s character doesn’t fall into sentimentality. She is portrayed as a complex, full human. “She makes terrible decisions,” says Walshe, noting that Darja can be unlikable. “She can be really awful to other people.” The title “Ironbound” comes from the neighborhood in Newark, New Jersey, where the play is set. But Walshe says there’s symbolic power in that word. “An iron heart is at the core of Darja’s story. What does it cost something like Darja to not be able to be a full person, to not take emotional risks, not have the emotional resources?” These are the plays – ones that interrogate the unpaid emotional labor borne by women – that Walshe feels drawn to. “When you look at most of the caregivers in this country, who are doing CNA work, nursing home work, child care work, they are working class women of color. They are immigrant women. They are responsible for some of the most intense, emotional, physical, psychologically demanding work that others won’t do.” It’s work that often goes unrecognized. “I came from a family of working class folks,” says Walshe, who grew up in Warwick. “Nobody in my family was doing art for a living, that’s for sure.” But when Walshe arrived at URI, a philosophy professor encouraged her to pursue theater. She headed to Chicago, where she got an MFA in directing from DePaul University. She spent two years in Oxford as a Rhodes Scholar studying Renaissance drama before returning to work professionally at some of their storied theaters, like Steppenwolf (the theater co-founded by actor Gary Sinise). With a growing family and a teaching offer from URI, she and her artist-husband, also from Rhode Island, decided to return to the state. For a few years, they divided their time between the Creative Capital and the Windy City, eventually deciding to go all in on Rhody. “The realities of raising a family and being a working artist, and the benefits of having family nearby, outweighed the desire to be in Chicago. And I really loved teaching.”

While Chicago is known as a theater town, Rhode Island’s rich theater scene is bringing more professional artists to our small state. Walshe rattles off our many local theaters, from regional staple Trinity Rep to Mixed Magic to her artistic home, The Gamm. “Rhode Island audiences have an appetite for culture,” she says. “But

they demand we justify why they should sit through this difficult, highly charged material. I like that. It keeps me honest. Rhode Islanders adore their rescue pets, but one organization has become the poster child for senior pups looking to retire in style. Vintage Pet Rescue is also an Instagram sensation, with pictures of mature pups boasting fashionable dog coats, Terriers peering up at the camera with milky eyes, Shih Tzus snoozing with pink tongues lolling, and Chihuahuas prancing on creaky limbs. It’s hard not to fall in love with graymuzzled companions. Kristen Peralta, who co-founded Vintage Pet Rescue with husband Marc in 2017, makes a point of keeping their social media positive and upbeat. “We want to make 10

senior pet adoption fun and desirable, not sad and depressing!” And it’s working – over 16K followers tune in for daily updates on the ever-changing crew. “We’ve already taken in 54 dogs in 2022, compared to 109 for the whole of 2021, so we’re always welcoming new dogs and finding forever homes for others.” Kristen and Marc met in Los Angeles through their work in animal welfare and decided to return to Rhode Island, where she’s from, to create a retirement and hospice home for dogs reflecting their love of all things vintage. The branding may be spot on, but the move has not been without its challenges. Being

mindful of pet limits enforced in most Rhode Island towns and cities, they chose to buy a home in North Kingstown, an area they love. Just one year later, the town council implemented a limit of five pets per household. “We spoke to Town Hall, the RI Department of Environmental Management, and Animal Control, but we were not able to get approval for a kennel license, so we moved to Foster – which does make people laugh as the name is so apt!” Kristen describes their home life as “absolutely insane! We’re always cleaning, feeding, cleaning, dealing with medical issues, or cleaning – there’s a lot of cleaning,” she says. “It’s hard work but rewarding, especially when the dogs form bonds, like

Advocates ‘geared up,’ anticipating legislation on shoreline access A bill is expected to be introduced in the Rhode Island House this month that clarifies where people can be along the shore without creating other restrictions. By Alex Nunes The legislation is expected to come out of a special house commission that was formed last year to address disputes between beachgoers and coastal homeowners that regularly come up in the summer months. A majority of members agreed at a meeting [in March] that legislation should allow access 10 feet landward from the recognizable high

tide line, the point where seashells, seaweed and other debris wash up. The commission does not plan to push for language that could limit protections specifically to passage along the shore, a proposal seen as favoring property owners that was previously advocated by one commission member.

The Rhode Island Constitution guarantees so-called “shore privileges” to the public, including collecting seaweed, fishing, and leaving the shore to swim. However, it does not specifically outline where those rights apply. For decades, the state has used a standard set in a 1982 Rhode Island Supreme Court ruling that set the cut off at

Representative Terri Cortvriend said she and the commission’s other co-chair, Blake Fillipi, intend to introduce a bipartisan bill in [March] that aims to clarify the boundary where public use ends and private property rights begin, while steering clear of establishing rules on what people can and can’t do in that area. “Blake Philippi and I felt strongly that our charge was to determine the where and not necessarily the what, because the Constitution already does that,” Cortvriend said. “Blake and I are on the same page, and we’re the ones introducing the bill.” Dennis Nixon, a professor emeritus at the University of Rhode Island, said the changes that are likely to be proposed would effectively restore rights beachgoers lost under the 1982 court decision, known as the Ibbison case, and do not amount to claiming any new rights at the expense of shoreline homeowners. “We’re not taking anyone’s property away,” Nixon said. “We are simply going back in history, going back 40 years and reclaiming what that Ibbison decision lost for the people of Rhode Island – because it did not strictly follow our history, or our constitution, or even the provisions of our constitutional charter from King Charles II.” Advocates who want to strengthen shoreline access protections had feared a proposal that focused on passage along the shore could actually end up placing more limitations on the rights of beachgoers, leaving them worse off, even if the boundary line was moved up further away from the water. Now they’re applauding the direction the commission moved in [March 3]. “It just sure is nice when words are met by action, and I think they really came through,” said Scott Keeley, a Charlestown resident who was arrested for trespassing in 2019 while collecting seaweed on the beach in

South Kingstown. “Not that we’re done yet, because now is the major push to get this bill accepted and then get it passed into law.” Keeley said shoreline access advocates plan to continue a letter-writing campaign to state lawmakers after the bill has been introduced. That could include reaching out to every member of the Rhode Island House. The shoreline access commission evolved out of an earlier bill that sought to address disputes over beach access by exempting people from trespassing charges as long as they stay within a certain distance from the most recent high tide line. That proposal was opposed by property owners and did not get necessary support from lawmakers. Advocates expect resistance to the expected bill to emerge once it’s sent to the House Judiciary Committee. Commission members are also due to submit a report to state lawmakers outlining their findings from testimony in recent months from Rhode Island residents as well as experts in areas like coastal science, property rights, and marine law. Already some advocates say they want to seize the momentum they’ve gained in the last two years and see lawmakers form another commission to address other issues related to shoreline access in Rhode Island. “There needs to be a shoreline access commission that deals with perpendicular access [to get to the beach], parking near the shore, and everything that goes along with that,” said Conrad Ferla, who moderates a popular Facebook group called “Saving RI Coastal Access/Rights Of Way.” He added, “We’ve been geared up and we’re not gonna stop being geared up… When families can truly feel comfortable on the beach without harassment from those who seek to take the shoreline away from Rhode Islanders, that’s when I’ll relax.” Alex Nunes can be reached at anunes@thepublicsradio.org.

Music is the Mission From national headliners to intimate performances, the Knickerbocker remains a South County mainstay in the music scene

What South County venue has hosted musicians as diverse as Stevie Ray Vaughn, Jon Batiste, Amy Helm, and Leon Russell? Westerly’s own Knickerbocker Music Center, of course, where local and nationally touring musicians have played since 1933. “The Knick,” as it is fondly known, has gone through plenty of changes over the years, even becoming a nonprofit in 2015. Named for a train that once passed through Westerly station, the original cafe was built during the Great Depression, shortly after the end of Prohibition. Since then, the club has hosted numerous artists with a focus on blues, rock, and folk genres, and it’s where Grammy Award winners Roomful of Blues got their start. The Knick even has a house band of sorts, the

Knickerbocker All-Stars, comprised of wellknown artists like Duke Robillard, Monster Mike Welch, and Willie J Laws – their album, Love Makes a Woman, featuring vocalist Thornetta Davis, was nominated for the 2019 Blues Music Award “Soul Blues Album of the Year.” These days, the main room of The Knick hosts larger concerts, while the taproom, with its intimate vibe, hosts a range of local musicians. That’s where you’ll always find a friendly audience. “The Knickerbocker is one of my favorite rooms to play because of its small size, and the seating is in the round, which encourages patrons to look at the stage,” says Bristol-based singer-songwriter Allysen Callery. “The last couple times I’ve played

there you could hear a pin drop, and I was fortunate enough to hear a couple people singing along softly to the songs I’d written. That’s one of the best experiences a songwriter could have!” Kris Hansen of the acoustic duo Man & Wife played the club recently and notes how invested both patrons and management are in the music. “The audience was fantastic, a listeners’ crowd,” says Hansen. “They were very respectful. I am not always used to a quiet bar room. Sometimes you are just background for everyone’s good time, but the audience was there to hear music.” “I was also very moved by their record player,” Hansen continues. “They actually play vinyl records for their patrons. Overall,

Fostering a new generation of musicians, too, the Rhode Island Philharmonic Orchestra & Music School has partnered with The Knick since 2014 to bring lessons to over 5,000 students in the Westerly and Chariho school districts. Says Hansen, “It’s a music place first – that’s very clear.”

A Musical Calling A sit-down with South County Chamber Singers’ musical director Enrico Garzilli and another cousin who was very good at piano,” Garzilli reflects. “My mother played the piano and my father played the guitar, so music was very important in my home.” His first job was as assistant organist to Alexander Peloquin at the Cathedral of St. Peter and St. Paul in Providence, fostering an interest in organ and choral conducting that would follow him through college.

Garzilli was later ordained as a priest and went to Rome to study music, theology, and philosophy – all of which he holds degrees. Not stopping there, he went on to receive a doctorate in comparative literature from Brown University, and Harvard published his dissertation. Passionate about his studies, he taught both here in Rhode Island and in Rome, and his love for these topics

An accomplished composer, musician, and scholar, Dr. Enrico Garzilli now embraces the next chapter in his career, taking the helm as musical director of the South County Chamber Singers (SCCS). Garzilli is known both locally and abroad, but his interest in music began early on, growing up in Cranston to a family of lifelong music lovers. “I had a cousin who was an opera singer

INTO YOUR OWN PARADISE inspired his compositions. With a body of work that spans choral pieces and dramatic-musical works, Garzilli explains, “I did start writing just choral music before musicals. Then, I came across the story of Peter Abelard and Heloise, and I said, boy, this needs music.” Referring to the true story of a 12th century love affair between a philosopher and his accomplished student, Abelard and Heloise became the two main characters of his operatic drama, Rage of the Heart. Garzilli continued his musical storytelling with Michelangelo, Shadow of the Wall, and The Smart Set - Save Me the Waltz. “I always like to write about the generosity of the human spirit. I love the indominitabilty of the human spirit,” Garzilli says, enthusiasm apparent in his voice. Garzilli was previously the musical director of SCCS – a highly skilled and rehearsed community chorus – and retired several years ago. Now, at 84 years old, he resumes his work as director following his predecessor Jean Maxon-Carpenter’s recent passing. On April 10, he’ll lead the group in performing the “Fauré Requiem” and selected pieces for Palm Sunday. “It’s different from a lot of requiems in that Fauré stresses the passion and the love of God. It’s really inspiring,” Garzilli reflects, adding, “It’s beautiful.” A small orchestra will accompany the chorus during the performance, emphasizing the meticulous care, quality, and talent that concert-goers will experience. “There was a lot of excitement after the pandemic about being able to perform again. We had quite an enthusiastic audience,” says SCCS president Kathleen Lindvall; both she and Garzilli are glad to continue performing beautiful music for the public. The SCCS Spring Concert will take place Sunday, April 10 at 2:30pm at St. Francis Church, Wakefield. Tickets can be purchased at the door. Learn more at SouthCountyChamberSingers.com

Once nurseries begin displaying their flats of colorful blooms, who among us can resist wanting to try our thumbs at gardening? Even if you don’t know your aster from your perennial, Block Island’s The Farmer Florist, Mimi Arnold, has useful tips to share. Arnold grows and arranges seasonally and sustainably, and offers a seed-to-stem floral service to the community. “As a flower farmer and florist focusing on environmentally conscious and mindful farming practices, I arrange seasonally, and love to artfully connect my clients with color and elements of the natural world,” says Arnold. While the term may sound like a flower that will return each year, annuals are one-season wonders. Unlike perennials which will come back, annuals are plants that germinate, flower, set seed, and die all in one season. When growing annuals, Arnold advises organizing crops into two categories: cold-hardy and tender. “Cold-hardy annuals can tolerate low temperatures, usually planting in the fall to over winter or early spring,” says Arnold, who notes larkspur, poppies, and stock as popular examples. Tender annuals, however, “are annuals that will not survive low temperatures and should be planted after frost.” Once you’ve made your selection, Arnold advises doing a bit of research to learn what varieties benefit from "pinching." This is a form of deadheading, or removing the dead heads of flowers from their stem; if left on, the plant will stop producing flowers.

“Pinching flowers will generate branching, and as a result, more blooms! Snapdragons and zinnias benefit from pinching.” Another piece of advice: stay away from chemicals. “Not only do you want to stay safe in the garden, but think of those who also spend time among the flowers – children, dogs and cats, bees and butterflies.” To keep destructive insects and mildew away from her crops, Arnold leans towards things like diatomaceous earth (a rock powder), neem oil, and milky spore. “If weeds are an issue along your patio or driveway, use high-grade vinegar combined with dish soap and water.” A key to farming healthy flowers is good, nourished soil to promote root growth and maintain a balance of water retention and absorption; this is done with added nutrients called amendments. “Amendments can get pricey, so use what's available around you. I like to use what's abundant to me on Block Island, like seaweed, fallen leaves, and horse manure.” Ongoing work aside, Arnold wants growers to have fun with colorful harvests and holds regular flower crown workshops. “I enjoy encouraging playfulness and creative connection through flower crowns and florals where you can get creative with island-grown blooms and play with colors and textures, and leave feeling like royalty!” Follow @thefarmerflorist_bi on Facebook or Instagram for more information on the next Flower Crown Pop-Up. The keys to creating a balanced look are to vary the scale of the patterns and to keep a common color between the rugs. If you have a living room, dining room, and entry all open to each other, use a large-scale pattern in one room, a small-scale pattern in another room, and a highly textured rug in the third room. The rugs could have different overall color palettes, but if they each have one color that ties them to the other rugs, they will feel cohesive.

Area rugs made from polypropylene are also designed for high-traffic areas and easy to clean; they’re also less expensive than wool. When selecting a rug for a high-traffic area, especially one where food will be consumed, look for a low-pile or flatweave area rug.

)&*$("+,()-".$ An area rug acts as an anchor for a room, and when all of the pieces of furniture are on the area rug, it helps them feel connected. There are a few rules of thumb to follow for selecting the appropriate size of an area rug. In a living room or sitting room, the area rug should be large enough that at least all of the front legs of the chairs and sofas are on top of the rug. The rug could be larger so that the entire chairs and sofas are on the rug, but the area rug shouldn’t be so large that it goes wall to wall – you still want at least 12-18 inches of wood flooring showing between the edge of the rug and the wall. In a dining room, the shape of the rug should be based on the shape of the table – a rectangular rug under a rectangular table, a round rug under a round table. The rug should be large enough that the legs of the chairs are still on the rug when they are pulled out to sit down.

Small Space, Big Style A lakeside home in Coventry is redone to reflect its waterside location After years of renting, Silvia Miller was ready to buy a place of her own. The systems administrator found a charming ranchstyle home on a tree-lined street in Coventry, steps from Tiogue Lake. “Living near the water and seeing a beautiful sunset and all the colorful birds, how can you not want to have the same type of theme in your house?” she says with a smile. At 808 square feet, Miller wanted to be mindful of choices to maximize space, add much-needed storage, and create a breezy coastal vibe. Also in the mix: keeping her comfy blue couch. Miller turned to Michelle Parenteau, interior designer and owner of Johnston-based Michelle Lee Designs. The results? “I have the right storage space for all my kitchen needs. OVERVIEW My client was having problems with storage. She only had cabinets on one side of her kitchen with no countertop space, and her ceiling was extremely low. The kitchen layout was reworked with cabinets on both sides of the kitchen walls, and a peninsula was added for more work space/eating space. The ceiling was raised up and a wall was cut back so a pantry cabinet could be installed. Pendant lights and recessed cans were added over the peninsula. The old wood laminate floor was removed and vinyl plank was installed. A beautiful glass tile backsplash was added behind the stove.

COLOR Taking a cue from the deep blue couch, Breezy and Repose Gray (Sherwin Williams) were selected for the wall colors. I wanted to stay neutral so I could go bold with the tile and countertops. The quartz countertops have multi-tonal blues that look like the inside of a mussel shell. PATTERN The stools are custom two-toned metal and the chevron fabric was chosen to coordinate with the glass chevron tile backsplash. TILE I love mixing it up! Adding the ocean blue subway tile against the glass chevron tile pulled the entire space together. I decided to carry it all the way to the ceiling for a huge impact when you walk through the door.

FLOORING My client wanted a floor that was soft on the feet and durable, so a vinyl plank with tones of driftwood was installed. The rug was chosen with various blues that resemble ocean waves.

PATTERN 101 For this project, a chevron pattern was used. Chevron is distinguishable by an upside-down V pattern where each side meets at the point without interruption, creating a zig-zag. It’s often confused with a herringbone pattern, which has a broken zig-zag due to one rectangle cut so that the end of one tile or plank meets to the side of the other. By the Book Celebrating bookstores on April 30 and beyond Throughout Rhode Island, it’s pretty safe to say we love our bookstores. In South County alone, we have six of them, each independently owned. Throughout the year, but especially on April 30, be sure to visit at least one for Independent Bookstore Day, a national celebration that takes place annually on the last Saturday in April at participating indies across the country. Bookstores are so much more than retailers. Each unique brick-and-mortar offers a space for people to come together – both in person and virtually – to exchange ideas and share in the human experience. Shopping at your local spot is a great way to support neighbor-owned businesses who in turn bring employment opportunities and other services right back into the community. Operating during a global pandemic has been challenging, but booksellers have adapted in order to survive; they’ve come up with

creative ways to engage their audiences and, fortunately, customers have responded. The folks at Savoy Bookshop and Cafe in Westerly offered free media mail shipping on books, curbside pickups, and local deliveries along with hosting virtual readings and events. Since March, Savoy has returned to in-store events and larger scale activities like lectures and film screenings are in the works in partnership with the renovated United Theatre across the street. Former Rhody Gem Books on the Pond, an idyllic spot housed in three barns on 2.2 acres, created an outdoor reading patio last spring, which continues. Owner Alexandra Lehmann has events planned for IBD, which will focus on stories from the sea. “Our fiction barn will include recent and best-selling books where the ocean plays a predominant role, and our nonfiction barn will have all things marine, from the best new fish cookbooks to science and nature writing, especially focusing on

fishing and ocean conservation,” she says. “We love that our customer base is so Ocean State oriented, and we are learning that these are the books and stories most relevant to our readers and visitors. Many of them will typically take their new books to the beach!” Most booksellers also use their Instagram accounts to broadcast enticing images of stacks of books for shoppers to essentially do some pre-visit browsing (bonus points to Island Books for curating themes). A simple way to show support is to follow them on their most active platform, comment something positive, even post photos of yourself at their shop or goods you have purchased and tag them. Sign up for their newsletter to learn about special events. “A physical book gives you an experience,” says Kelly Allen-Kujawski, owner of Rarities Books and Bindery, which opened in Wakefield last fall.

daily dose of dry heat. She enlisted her handy husband to build a dry sauna (one that uses burning wood for the heat) but had the inspired idea to make it mobile. A small business was born. The benefits of sauna are seemingly endless. It reduces stress, helps alleviate aches and pains, and lowers inflammatory markers. There are even studies that point to cardiovascular benefits of regular sauna bathing. (Don’t give up your gym membership just yet, and always consult your doctor first, particularly if you have high blood pressure.) For those reasons, I wanted to love saunas, but – full disclosure – I was not that

person. My husband was more excited to give this a test drive. He swears by sauna. For our honeymoon in the Poconos (don’t judge), we got the deluxe room that included a two-story champagne glass tub, a heart-shaped swimming pool, and a tiny sauna. I lasted about two minutes in the dry heat. It felt like I was on the Las Vegas strip in the middle of July at high noon. (Dear reader, that’s the last place you want to be.) “Oh, you need a cap,” Marketos said when I explained my trepidation. According to Marketos, sauna caps, which are made from wool or felt, come from the Russian sauna tradition. Counterintuitively,

“What’s in your driveway?” A wide-eyed emoji followed my neighbor’s curious text. Busted! It’s impossible to fly under the radar with a giant sauna on wheels hanging out in my driveway. Was I a terrible neighbor for not inviting anyone to test drive the sauna with me? This was serious research, not a block party. The practice of taking a sauna is well established in Europe, so it’s not surprising that Bring Me Sauna founder Monika Marketos is originally from Poland. Before the pandemic, she took her daily schvitz at Westerly’s YMCA. But when COVID closed down the gym, she was desperate for her


the cap keeps your head cool, making the sauna’s 220 degree heat easier to tolerate. Willing to try anything for a story, I grabbed my cap and, with the fire stoked, headed to my driveway. Pride goeth before the sauna. The hat made me look like an overgrown Keebler elf. Fashion aside, the cap was magic. The high heat wasn’t suffocating; in fact, it felt glorious. At Marketos’ suggestion, after 15 minutes, I left the sauna for the plunge pool. Embracing my inner Wim Hoff (extreme athlete and cold exposure devotee), I slid into water that was justabove-freezing degrees. I am pretty sure

my sauna-heated body sizzled when it hit the liquid. While the impact of the cold was jarring at first, it felt amazing after baking for so long. When my teeth started chattering, I headed back into the sauna to do it all over again. By the time I finished four rounds of heating and plunging, I was a noodle from serotonin overload. You perform on stage, TV, and radio – do you have a favorite way to entertain? I love to entertain anytime, anywhere, but, I have to say, live is probably my favorite. That being said, I did love doing the TV show, Rhode Bytes, which aired on WJAR NBC 10 after SNL from 2009-2012, and still miss doing it. When you do TV, you get to do it until you get it right and you can control the finished product. You also have a broader reach, more people watching. Rhode Bytes used to average 60,000 households an episode. But you can’t hear the laughter. On the other hand, you don’t hear the non-laughter either. When you perform live, you get to feel the energy, hear the laughter, bask in the applause. In 2015, you were inducted into the RI Comedy Hall of Fame and are still the only woman in that esteemed group. How does that feel? It was a huge honor. I was being recognized for doing what I’ve loved doing for over 50 years. Yes, I’m old. A fellow comic once referred to me as the Ruth Bader Ginsburg of RI comedy. But I was also honored to be the first female to make the cut. I was warned that, “if I wanted to hang with big boys, I’d better be able to take a hit” – and hit they did during the roast. A roast is always rough, but when your roasters are two of RI’s most quick-witted sharp-tongued comedians, a sitting Congressman, a news anchor, an uncensored drag queen, your bitchy gay bestie, and your big brother, it’s a whole other level of heat. One of the best nights of my career. Is Rhode Island’s comedy scene different from others you’ve experienced, and if so why? Laughter is laughter no matter where you are, but one of the things that made me fall in love with the state was the way Rhode Islanders enjoy laughing at themselves. I have gotten spoiled performing here. After all, this is the I-know-a-guy state, so once you’re “the guy,” people know, it’s easier to get booked. That’s everywhere, though. Look at Adam Sandler movies, or Martin Scorsese, or Spike Lee – they always use their buddies and it helps when your buddies have talent. I need to know better guys…

HAVE RAVIOLI PRESS, WILL TRAVEL Pasta-making workshops from a Newport chef are taking over South County taps To the uninitiated, the art of pasta making may seem inaccessible – a skill to be perfected behind closed doors in culinary institutes or in remote regions of Italy. But to Alex Reppe, stamping ravioli and crafting the perfect farfalle is about bringing the community together…over a pint of beer. An Afghanistan War veteran and long-time chef, Reppe opened Newport Pasta Co. just under a year ago to sell locally sourced wholesale pasta and demystify the pasta-making process with workshops at breweries all over the state, including repeat appearances at Grey Sail Brewing in Westerly. “I have an emphasis on making dough with wine and beer, which I showcase during the workshop as well,” says Reppe, with past creations including a friggitelli made with Grey Sail’s Leaning Chimney smoked porter and radiatore using Exeter farm brewery Tilted Barn’s Pumpkin Stout. In each hands-on session, Reppe starts with the type of flour to use in the dough and then takes participants through 10 styles of pasta, beginning with easier ones like pappardelle and fettuccine and working up to ridged cavatelli and intricate sorprese. “I bring many tools and machines, from simple ravioli stamps to an electric pasta extruder,” he says. “Everybody will have a small pile of pastas in front of them that they made by the end of the night.” Find a full schedule of April workshops online (by reservation), including Shaidzon Beer Co. on April 6, Narragansett Cafe April 13, and Grey Sail Brewing April 22, with more breweries added each month. Coastal Redefined Delectable bites, cocktails, live music, and breathtaking views of Greenwich Cove, all served sans pretention at Finn’s Harborside

My first thought after visiting Finn’s Harborside: their Google listing needs a rewrite. “You’ll come for the food and stay for the view” simply doesn’t cut it. For me, it’s more like: “You’ll come for the food and stay for the view, the atmosphere, the martinis, the nightly promos and events, the live music, and the delightful waitstaff.” My sister and I popped into Finn’s for an early after-work dinner. Waterside dining can sometimes be a little too fancy for our taste, so we were relieved to find a relaxed and cozy interior with wood paneling, an industrial-style ceiling, and a heated indoor patio that gave the illusion of being on a houseboat. Seated in the window directly overlooking the dock, we watched the sun set over the Greenwich Cove on one side, and the extensive bar fill up for “Appy Hour” on the other.

Our waitress, Carla, kindly shared guest-favorite appetizers with us, including bang-for-your-buck flatbreads, 50-cent wings, and buffalo chicken dip served with hand-cut chips. While tempting, we ended up choosing two starters, Stuffed Quahogs and Stuffed Mushrooms. The menu doesn’t lie when it says the stuffies are “loaded” with clams and chorizo – you could taste the spicy pork in every bite. They were hot, crispy, and full of flavor. The mushrooms followed suit, but with a tender base and crispy cheese on top (a great alternative for vegetarians). We paired this first course with a martini from their extended list, opting for the Sunset Martini, which was the perfect not-toosweet hit of grapefruit and liquor we needed to rejuvenate after a long Monday. Martinis

may not have been the way we expected to start our week, but a pleasant surprise. For entrees, Carla explained a few of their recent menu additions: ravioli, housesmoked baby back ribs with hand-cut fries (we couldn’t say no to fries on the side – thin, crispy, and completely addicting), meat loaf, and pesto bucatini – a great range of hearty choices to accompany their classic seafood selections. While my sister went for a classic, Sea Scallops, I had to try the Pesto Bucatini with Shrimp. While a steady stream of seemingly regular guests flowed in by 6pm, we tucked into our main course. The scallops were baked with a thick white wine and butter sauce and topped with breadcrumbs, served with brussel sprouts rich in flavor and a heap of warm mashed potatoes. We both

commented on the generous portions. My plate was loaded with noodles in a delightfully creamy pesto sauce with cherry tomatoes and large parmesan shavings. Swaying to the slow acoustic sounds of local singer-songwriter Kevin Herchen – who plays every Monday – as a candlelight ambience descended upon the restaurant, my sister and I were full but reluctant to leave. Our only option was dessert. As an older couple got up to dance to a cover of

The Eagle’s “Take it Easy,” our Hummingbird Cake arrived. We knew enough not to be surprised by the ample portion of this house-made delicacy, nor its delicious, fruity flavors. Hours passed before we left Finn’s with full stomachs and warm spirits, grateful for the relaxed and welcoming atmosphere, the out-of-their-way friendly staff, and a diverse menu tailored to each season. around the same time they turn golden brown. In this dish, the sweet tomatoes complement the nutty mushrooms, and the raw carrot and pumpkin seeds offer a subtle crunch in every bite. Soft, tart goat cheese crumbles lend a creamy dimension to this otherwise bright and crisp mushroom and kale salad.

4. When the barley is done, toss it with the kale. The heat from the barley will warm the kale without sacrificing its integrity. Add the mushrooms and tomatoes to the mix.

3. About 15 minutes before the barley is done cooking, heat your oil of choice in a skillet over medium-high heat. Toss in your mushrooms and saute until golden brown, about 8-10 minutes. A Wine for the Ages In 2017, the academic journal Proceedings of the National Academy of Sciences published a study that named Georgia, a tiny country on the coast of the Black Sea, the oldest winemaking region in the world. Wine residue was found on pottery shards that dated back to 6,000 B.C. It was an extraordinary find that took the wine world by surprise, but not the Georgians. “Georgia was the Napa Valley of the Soviet Union,” says Gayle Corrigan, who launched Saperavi USA (named for the unique Georgian grape used in their wines that has red skin and red flesh) in 2020 specifically to bring Georgian wine to the US. Corrigan, a Rhode Island native, was raised during the height of the Cold War when many Soviet Jews emigrated to the US. Her father, a teacher at Hope High School, invited the newly settled students and their families over for Thanksgiving, which sparked friendships that remain to this day. In 1989, Corrigan left to attend the University of Rochester, majoring in Russian political science, studying the former USSR. “It was still the Soviet Union back then, and things with Gorbachev were really heating up,” she says. While traveling around the country during her stay, she met a group of Georgian students who invited her and a friend to join them at a feast. “We show up and the table is just full of so much food, which was amazing at that time, because this was the Soviet Union, and there were chronic food shortages. They had this homemade wine. I don’t think I’ve ever had something so delicious.” Corrigan lived in Russia for seven years, eventually returning to Rhode Island with her Georgian husband and kids. But she missed the international connection she had living in Europe and she wanted to bring some of that stateside. A visit to the Georgian Wine Symposium in Texas led her on a connoisseur’s tour of the tiny country, culminating in a four-day interview with Giorgi Khatiashvili, one of Georgia’s top winemakers. “He wanted to make sure we were worthy of bringing this wine to the US,” she says. “Wine is revered; it’s part of their life,” she continues, noting that Georgians have the

highest life expectancy of all of Eastern Europe. Could it be the wine? “Georgians live a very agricultural, simple life,” Corrigan says with a laugh. But, by law, Georgian winemakers can’t put any additives in their wine (which translates to low sulfides). While most of their wines are not certified organic, Georgians don’t use pesticides on their crops. Khatiashvili and his vineyard Shumi developed a specific brand for Corrigan to bring to the US market, formulating the wine for an American palate. “Johnson & Wales has a wonderful wine program,” says Corrigan. “We worked with them to decide what wines to import over.” Like other vineyards, Shumi uses cutting edge technologies in their winemaking. But they also work in the traditional Georgian process of wild-fermenting the grapes in

clay pots buried underground. This makes up Saperavi’s Qveveri line, named for the ancient vessel. The Kisi Qveveri uses the Kisi grape, a white wine grape, that is fermented along with the skins and stems. This process gives the wine a unique orange hue. The growing appetite for natural wine makes the Qveveri method poised for a breakout; and orange wine is beginning to pick up buzz in the wine world. Rhode Island is one of the few places in America to find this ancient vino. Working in a political hotspot like Eastern Europe comes with its challenges. When Russia, who once purchased 100 percent of Georgian wine, imposed sanctions on the country and refused to import it, it could have spelled the end of this ancient wine. Instead, the Georgians strengthened their laws to ensure

Hot Cross Buns With their sweet-spicy taste, brioche texture, and notes of citrus, hot cross buns are an Easter table staple. Each rounded bun is marked with a symbolic cross made of icing or, more traditionally, flour and water. However its made, this delicious sweet treat is a rite of spring.

A SoCo spin on Easter buns In less than a year at their storefront location on Main Street in Wakefield, Food and Wine magazine anointed South County Bread Co. best bakery in the state. What began as owner Jeff Collins’ side hustle has exploded into a bakery with an enthusiastic clientele and lines that snake out the door. The JWU culinary grad made a pivot to baking after leaving a marketing job in New Jersey. There, he learned the trade under a World War II veteran who was head baker on a Navy ship. Like the other items at SoCo Bread Co., the hot cross buns on offer for the holiday have their own spin. “We like taking the traditional and putting a modern twist on it,” says Collins. He plans on using their croissant dough – to which he adds some sourdough starter “to add depth of flavor” – and will include spices like cardamom as well as dehydrated raisins and cranberries. Celebration bread “Bread, to me, is life,” says Jen Acuna, owner of Loafing Around. An avid boogie boarder, she brought her one-person bakery from Connecticut to South Kingstown last year to take advantage of the surf. flour, water, and salt,” she explains. “When you enrich it with eggs, butter, and sugar – like for hot cross buns – that’s a celebration bread.” A bit of a flavor scientist, her hot cross buns lean into warm spices like cardamom, cloves, and cinnamon. For the crosses, she’s traditional all the way, preferring to use flour and water followed by a glaze. “[Hot cross buns] are very symbolic of the change of seasons and of new beginnings.” LoafingAroundLLC.com

Carolena’s Bakery, which operates out of Gansett Poke in Narragansett’s north end, began last year as a pandemic project for owners Rick and Jenn Armstrong. “There wasn’t an Italian scratch bakery in the area,” says Rick, who uses his grandmother’s recipes for most of the bakery’s delectable goodies. This is their first year making hot cross buns. Jenn explains the dough is similar to their popular cinnamon rolls, but she’s on the fence about adding dates. “I’m not a fan of fruit in baked goods,” she admits, but notes that if her customers want it that way, she’ll make it. “Our clientele is very specific. Sometimes they’ll bring in their grandmother’s recipe for me to replicate!” But it’s this sort of attentiveness that’s fueled their meteoric growth – they are moving into their own dedicated bakery and retail space just across the street (the former Eddie’s BBQ) in May.
