GAME ON Rhode Island’s answer to Trivial Pursuit is just the latest game devised by a Westerly history buff First you start with the clues: This person grew up in Warwick. He dropped out of MIT. He starred in the TV series Shark. Give up? James Woods. Rhode Test is a card-based trivia game, the latest creation of Roberta Mudge Humble, founding president of Westerly Armory Restoration, Inc., and the creator of Rhody Books and Games. A longtime teacher of technical writing, Roberta has an encyclopedic knowledge of Rhode Island history and geography. She’s written a small library of chapbooks about local heritage, such as The Right to Crow: A Look at Rhode Island’s Firsts, Bests, & Uniques. But Roberta’s real party trick is the knowledge game, which

comes in diverse forms: There’s Rhode Island for the Native & the Naive, a game-and-puzzle book, and Rhode Block, a themed card game based on Crazy Eights, among other variations. Her latest is actually a reissue: Rhode Test is a stack of cards packed into a transparent plastic box, first released in 2009. Distributed mostly in local stores – and available on the Armory’s Website – the original run of Rhode Test sold out. While we’re at it, let’s add another one: “What’s easy to play, costs about $15, and is more fun than high school social studies?” Rhode Test is available at numerous South County stores. Sustainable Fashion Robert Elias comes from a long line of drapers. His great-great-grandfather worked in textiles in Brooklyn. His great-grandfather founded the Fall River Knitting Mills in 1911. That factory is still a family business, weaving an endless variety of sweaters, just as it’s done for more than a century. So, it makes some sense that Robert opened Properly Worn, a consignment clothier, with his wife Gloria Kostadinova. Robert was very close with his late grandfather, and the family trade always interested him. But opening the shop wasn’t their original plan, and their mission is decidedly their own. “I was very fortunate to have a stereotypical, small-town, New England childhood,” quips Robert. An East Greenwich native, Robert studied English literature, worked in hospitality, and spent time at a Boston startup. Gloria was born in Bulgaria, yet she has lived most of her life in the US. Gloria also studied English literature, then environmental science and management at URI. The couple met in the restaurant industry – in East Greenwich, actually – and their relationship has been a patchwork of moves, degrees, and job transitions. The idea for a consignment shop was partly informed by Gloria’s passion for sustainability. Critical of wasteful “fast fashion,” Gloria and Robert imagined a shop geared toward men – the only such consignment shop in the area – where durable, second-hand vestments could find new life. The couple is close with the owner of Velvet Beret, a women’s consignment shop next door; when their current space became available, Robert and Gloria seized their chance. “We both like getting quality things at prices we could afford,” says Gloria. “We found that a lot of people are throwing away nice clothes. We wanted a place that was inviting for men to come into.” The shop has racks of blazers and button-down shirts, and it’s decorated with modish tchotchkes, like a tide clock and vinyl record player. Many outfits are donated, and unsold items are donated to local charities. “Fashion in the work environment has

changed considerably,” notes Robert. Traditional suits have evolved, in many offices, into “high-end business casual.” Meanwhile, as more white-collar workers now telecommute, many have started to dump their name-brand wardrobes. Fashion-forward men have a greater opportunity than ever to dress well, but also creatively, for a reasonable price point.

“There’s room to play with colors and patterns,” says Gloria. But here is the 21st-century twist: Just because Properly Worn sells “men’s clothing,” that doesn’t mean all customers have Y chromosomes. Jetsetters A first-class tour inside the Patriots’ private plane – that calls Rhode Island home

Plenty of oversized seating is just one of the advantages the New England Patriots enjoy as the only squad in the National Football League to have their own team jet. They also don’t have to worry about having their equipment sent to the wrong airport and risk forfeiting a game (which nearly happened to the Kansas City Chiefs last month). And they can quarantine sick members of the team on a separate flight to a road game (as the Patriots recently did when the flu swept through their locker room before the team played the Texans in Houston). Whether in the air over Providence or parked on the tarmac at T.F. Green International Airport, the Pats’ plane is an instantly recognizable symbol of local pride for Rhode Island football fans. Dressed in red, white, and blue livery, the highly customized 767300 jet is emblazoned with “Patriots” and “6X” (referring to the team’s six championships) in huge letters on the fuselage, with an equal number of Super Bowl trophies depicted on the tail. Inside, the 205-seat aircraft is a far cry from flying commercial. Two sections of the

cabin are fitted with oversized custom seats, designed to transport even the burliest of linemen in comfort (the bathrooms onboard are supersized, too). Support staff and other

guests generally sit toward the front of the plane, with players given their own special section in the back (although coach Bill Belichick likes to sit with the players). Each leather-clad seat is inscribed with an individual player’s name and the team’s “flying Elvis” logo. Eight flight attendants are onboard for every trip, offering white-glove meal service with menus designed by team dietitians. Everything from vegan meals to ice cream is available — but there’s no alcohol served, not even on flights home after a team victory. Rather than an airborne version of the locker room, the atmosphere onboard is generally subdued, with coaches reviewing film, players locked into the entertainment systems, and trainers providing treatment to players banged up after games. Between the privacy, comfort, shortened flight times, and onboard care, the Patriots plane is not just a symbol of success — it’s one more way the most successful franchise in sports gives its players every available edge over opponents, on and off the field. -Bob Curley

2020 Vision | Investing

Investing is most often thought of as synonymous with the stock market, where you can buy, sell, and trade stocks (you’re probably envisioning the bustling beehive that is the New York Stock Exchange). Stocks and bonds are both certificates used to raise money for starting or expanding a business, and often bonds are used for municipal purposes and can be tax exempt, and you don’t need to be in NYC to give it a go. Thinking of rolling up your sleeves? Here’s some information to spark ideas along with unique ways to invest.

Outside the Box

Here are alternative places to invest your money and diversify your portfolio (though, experts say, these should not comprise more than 15 percent overall).

Precious Metals: When the dollar is weak, the coin reigns supreme. At least, the gold and silver kind. While this investment is not the most reliable, as is the rise and fall of the dollar, it’s worthwhile to have precious metal coins on hand in case of an economic or financial collapse, during which they can be used as barter.

Real Estate: There’s a reason flipping houses is a popular pastime beyond HGTV. Investing in a piece of property is smart for many reasons, the first being that it’s a “real asset,” a physical commodity with value. You can rehabilitate and sell for a quick profit, or rent out for monthly income. When the market is low, you can find bargains, and when it booms, you can earn a fortune.

Collectibles: Fine art and antiques are examples of unconventional investments that pay off – if you know your stuff. Ideally, you buy a collectible for less than its worth and sell it for more, which requires knowledge of the item and its resale value. Our state is filled with estate shops, antique stores, etc.

Wine:

Stockpiling fine wines? That might sound appealing enough on its own, but you can make a pretty penny off of buying sought-after vintages and selling to wine connoisseurs. Find the right wines, keep track of when and where you purchased it, store in a temperature-controlled room, and reap the benefits of an investment that literally gets better with age.

5 Easy Ways to Save $5K We’re all looking to save money – but how? Take these small, easy steps to start saving dollars that will quickly add up by the next new year.

Members Only: Cancel any unused or unnecessary services and subscriptions. Do you shell out monthly payments for a gym membership or music streaming service you hardly use? Do you still pay for a landline when all you really need is a cell phone? Or maybe you’re still responsible for subscriptions you didn’t even remember you had. Double check to make sure you’re not paying for anything you don’t actually use!

Track Habits: While not anyone’s idea of a good time, gather your bills and statements and see how you’re spending your money. Are there things you can do to save? This is where creating a budget comes in. Aim for the 50/30/20 rule: 50 percent of your budget should be spent on “needs” (i.e. groceries, utilities, housing, health insurance, or transportation); 30 percent should be spent on “wants” (i.e. shopping, dining out, or hobbies); and 20 percent should be saved. Knowing what’s coming in and going out is a great place to begin.

January is the perfect time to review the withholding on your paycheck. Withholding is the amount withheld by an employer that goes directly to the government as a partial payment of income tax. According to the Internal Revenue Service (IRS), most employees are over-withheld on their taxes, meaning that more taxes than they owe are withheld from their paychecks and that’s how you get a refund. Taxpayers who have children under age 17 may see their refunds increase as a result of the new tax law. On their website, IRS.gov, find a Tax Withholding Estimator tool that can provide the info you need to make any adjustments. From there, consult with your employer on next steps if changes are needed.

• Get your refund fast by combining direct deposit with electronic filing to get your money without worrying about it getting lost, stolen, or unable to be delivered.

If you’re someone with a side hustle or two, the idea of doing your taxes can be daunting. Fortunately, there’s help. Low- and modest-income Rhode Islanders may qualify for free help filing their taxes and applying for tax credits like the Earned Income Tax Credit from VITA, Volunteer Income Tax Assistance. There are multiple sites in Providence County; just visit EconomicProgressRI.org for locations. Appointments are highly recommended and be sure to bring picture IDs for both the applicant and spouse, and social security cards for everyone listed on the return.

• If you use an ITIN (Individual Taxpayer Identification Number) to file, make sure it hasn’t expired. • Keep all of your financial paperwork in one place so at tax prep time, you know where it is. From skiing to surfing, 20 ways to get fit in 2020 By Bob Curley

Sweaters can conceal a variety of sins, but wouldn’t it be better to emerge from hibernation this spring feeling fitter and stronger – or at least having offset some of that excessive holiday cheer? Here are 20 ways to break a sweat even on the coldest of winter days.


1. Go climb a rock: Rock climbing is a great overall workout that will challenge your balance, flexibility, and strength – and your courage, too. The Rock Spot rock gym in Peace Dale has a variety of climbing walls and bouldering courses with routes from beginner to expert, and provides full safety gear as well as instruction on fundamentals like belaying and lead climbing.

2. Feel swell in Narragansett: You’ll need a good wetsuit to keep off the chill, but winter storms generally bring the best surfing of the year to Narragansett Beach. Local surf shops Warm Winds and Narragansett Surf and Skate can rent or sell you the gear you need. 3. Get in the swim at URI: The natatorium (that’s a fancy word for swimming complex) at URI’s Tootell Aquatic Center has three specialized pools for swimming laps, diving, and recreational swim. Community swim hours are generally 6-8:30pm on weeknights, but check the schedule posted on the URI website to confirm. Community Rec membership required.

4. Skate like a boss: Whether you want to work on your loops and lutzes, play hockey, or just take some turns around the rink with your kids, URI’s Boss Ice Arena has you covered. The weekly schedule for the rink includes set hours for adult skating, figure skating, and public skating, when kids are welcome. Open hockey is from 1-2:50pm every weekday afternoon, and there’s a learn-to-skate session on Saturdays from 11am-12:50pm for newbies. Can’t get to the rink during the day? Come down on Saturday nights for Rock & Skate from 8-9:30pm.


5. Shred the slopes: How can a state without mountains have a ski area, you ask? Yawgoo Valley makes do with a modestly pitched hill and a whole lot of spunky attitude. Snowmaking starts as soon as the temperatures dip below freezing every winter, and the slopes fill with skiers and snowboarders happy to take multiple short runs rather than spending time driving to a bigger place. Both the ski area and snow tubing park have day and night sessions.

6. Play bigfoot in the snow: Make like Yukon Cornelius and strap on a pair of snowshoes for some winter cardio. Any relatively flat hiking trail sufficiently covered with snow can be traversed with snowshoes, but some particularly good routes can be found on the South County Bike Path, Arcadia Management Area, Great Swamp Management Area, and the Francis C. Carter Memorial Preserve in Charlestown.

7. Sleigh some hills: A good snowfall transforms the sand dunes on Division Street (near the intersection with Hopkins Hill Road) in West Greenwich into the best sledding spot in Rhode Island. Hills of varying heights let you choose your own daredevil level, and the hike dragging your sled up and down the hill makes this a good winter workout, too.

8. Outrun the cold: Just because it’s freezing outside, doesn’t mean you need to put away your running shoes. Hardcore runners keep up their routine whenever the streets are clear, of course, but even occasional road warriors can join one of the organized 5K races held throughout the season, including the Charlestown Chili 5K (January 25) and the Shamrock Shuffle 5K in North Kingstown (March 28). 9. Dance the calories away: Did you know that you can burn 400 calories per hour doing salsa, up to 550 doing swing, and between 150 and 320 ballroom dancing? Hit the dance floor at a local club or bar with live music or a DJ, or take a lesson from the Fred Astaire Dance Academy in Narragansett. 10. Jump around at Launch: Get in touch with your inner kid and hop on the trampolines at Launch in Warwick, where you can flip into a ball pit, scale a climbing wall, play dodgeball, and challenge friends to a game of laser tag. 11. Bag a gym membership: One good thing about winter is that it coincides with the end of the year, so keep an eye out for those New Year’s deals on memberships at local gyms.

12. Climb aboard the crosstrain: Why just get fit when you can get “crossfit”? South County is home to several CrossFit gyms that focus workouts on functional movement through a combination of weight training, gymnastics, interval training, and other fitness elements. 13. Heat up your yoga practice: Any yoga is good for the body as well as the mind, and “fitness yoga” is a serious workout. Add a little heat and humidity and you’ve got “hot yoga” – ideal for a midwinter workout to loosen up stiff limbs.

14. Take a spin: Ice and snow don’t play well with bicycle tires, but spin classes can give you a similar workout in the cozy confines of a studio – motivational music and expert instruction included. SoCo Cycle has classes daily.

15. Get in the ring: Martial arts, broadly defined, includes everything from karate and jiu jitsu to boxing and kickboxing. The Hard Knocks Boxing Club in West Greenwich offers fitness classes and instruction on the “sweet science” of boxing, while Just Train in North Kingstown has classes in kickboxing and a variety of exotic martial arts, including Jeet Kun Do, Muay Thai, the Filipino self-defense method of Pekiti Tirsia Kali, and Brazilian Jiu Jitsu. North Kingstown trainer Don Culp is best known as a karate instructor but also teaches jiu jitsu, boxing, and other disciplines. Premiere Martial Arts has courses based on those used by the Israeli army.

16. Gun for fun at Extreme Airsoft: You might be surprised how much of a workout you can get from simulated combat – the combination of competition and adrenaline is potent – even if you’re only getting shot at with tiny plastic pellets. South Kingstown’s Extreme Airsoft has guns, protective gear, and an indoor playing field for organized games and rentals.

17. Pass, shoot, kick, and stick at Wide World of Indoor Sports: This expansive indoor multi-sports center at Quonset Point in North Kingstown has organized adult leagues for soccer, football, field hockey, and lacrosse.

18. Show some love for tennis: Ever try to hit a tennis ball in subzero temps? They don’t bounce. But that’s not an issue at the Pond View Racquet Club in Westerly, which has three indoor hard courts and recently added two outdoor courts for paddle tennis – a game that, unlike regular tennis can be played in cold weather.

19. Get on track at URI: Love to run but hate chapped cheeks and frozen fingers? The Mackal Field House at URI has a six-lane, 200-meter indoor track that’s open for use by those with a URI Community Rec membership.

20. Bundle up for a winter hike: The stark natural beauty of winter in New England is evident on a hike through the King Benson Preserve in North Kingstown, the Ninigret National Wildlife Refuge in Charlestown, the Long and Ell Ponds trail in Hopkinton, and the Ben Utter Trail in West Greenwich.

Lindsay says: I’ve always been someone who looks at what fits my body right and what is comfortable. As a woman in television, we face a lot of critics. I think people forget that we are real humans behind the TV screen. As someone who has prided herself on her more athletic build and curvier shape, I think it’s important to show people that beauty comes in more than a size 2. I have loved hoop earrings since high school and I rock them consistently. Also, my nails are quite the accessory –

Meaghan says: “Being ‘camera-ready’ nine hours a day influences my makeup, hair, food, exercise, sleep, and clothing choices. I like to keep it simple and classy, but I also love to take risks. For example: pairing unassuming patterns or dressing up casual looks with one fancy piece. I’m also a big consignor, so I consider the resale value on items. With the exception of those 30 minutes on the show where I wear pumps, it’s Vans or Nike kicks for me. Viewers don’t typically see them, but sometimes they make an appearance on my Instagram page. I’ve thrown around the idea of a lifestyle show since I joined the WJAR family, and in April 2019 I was offered the role to host. Karen Giarrusso grew up surrounded by nature. Her father was a national park ranger and the family always lived in close proximity to his work; her mother shared a love of birds and taught Karen how to identify different types. Today as a mosaic artist, these natural forms inspire many of the designs under her KG Mosaics brand. “I love the colors of nature and I also love patterns.” From her home studio in East Greenwich, Karen spends hours working on intricate pieces on most any surface – from mirror frames to candelabras to backsplashes. Mosaic is an artform that requires patience, a flat surface, and plenty of light. Having previously created in a cavernous basement, Karen’s current set-up is luminous by

design. “Having a ton of natural light was super important to me,” she begins. “A space where I could open the windows and get fresh air. What I do takes many hours and it’s nice just to feel the light and smell the outdoors.” Karen also planned plenty of storage for her many

supplies and tools. “I wanted everything behind doors so it would look clean. I like to have everything organized and put away as I like to start each project in an organized environment,” she says. Another important element for Karen was having a large level area on which to work. She recreated a table similar to the one her father had built for her and keeps it in the center of the room. “I can reach everything and have a ton of space to work on large projects,” says Karen, who also uses it to display mementos and completed smaller works.

Karen enjoys working with costume jewelry stones, beads, and findings and says, “Since Rhode Island was once the jewelry capital of the United States, there are still many places to buy these items. I love finding vintage treasures of beads and stones. My last piece was done with vintage stones from the 1950s that my daughter and I picked out in my favorite bead warehouse.” “Classic and clean with a touch of sparkle” is how Karen describes her studio. “Even the light fixtures have crystals in them,” she notes. A friend made the room’s window treatments, which Karen trimmed in Swarovski beads. “They shimmer in the sunlight. I love walking into my space, bright lights and all-white cabinets. I look at my tools and get an excited calm feeling.”

WE’LL HAVE MANHATTAN This winter, Bridge in Westerly serves a dreamy drama There is no color quite like the Tea ‘Em Up Manhattan – a reddish brown, like mahogany in a glass. The cocktail evokes drawing rooms, old pubs, fireside chats. This Manhattan is that rare combination of tough and classy, the kind of libation Daniel Craig would sip on the cover of Esquire. Not surprisingly, Tea ‘Em Up looks perfectly at home on a window-side table at Bridge Restaurant in Westerly. The secret ingredient is in the title: bergamot, the essence of Earl Grey tea. Bridge bartenders infuse Bulleit Bourbon with this earthy oil, then mix with an amaro liqueur by Fratelli Ramazzotti. Add two dashes

of peach bitters, a bit of vermouth, and a bar spoon of Luxardo Maraschino syrup, and you have yourself a mid-winter masterpiece. You could attempt the mix yourself, but Bridge excels at ambiance, and it will easily reward a cold-weather visit. Whether you’re meeting friends after work or arranging a romantic night out, Bridge has all the riverside views and moody lighting that a guest could ask for, plus crackling fires and a famous raw bar. Elevated Bar Food A Warwick gastropub brings fried offerings to the next level light-filled pub – copper bar top, wood floors, chambered ceilings – and lulled by soft reggae, savoring scrumptious shared plates. Care and attention to detail is evident in preparation, presentation, and decor. It’s a comfortable vibe. I enjoyed looking at the food as much as eating it. And Ashlen has trained staff to anticipate need so you’re not waving madly to replace a dropped napkin. A good restaurant should transport you. We were impressed. Chef Ryan Escudé’s gluten-free bacon balsamic deviled eggs were creative and flavorful. A chilled hard-boiled egg, refilled with yolk blended with mayo, onion, and parsley, striped with balsamic glaze, sprinkled with paprika, and topped with a crisp square of bacon made me kind of giddy. I haven’t been this excited about food in a while. Or maybe it was the Gin

Tin Tin, a signature cocktail of Damrak Gin, Italicus and pear liqueur, cinnamon, lemon juice, hopped grapefruit bitters, grapefruit soda, and finished with an edible orchid. Flavor and texture contrasts made for a satisfying lunch: Velvety Buffalo Chicken Dip had a vinegary tang and mouthful of heat tempered by sharp cheddar, cream cheese, and tender pulled chicken; seasonal Crab Cake Sliders with spicy tartar were warm and crunchy outside, lumpy, soft, and flavorful inside; Braised Beef Disco Fries – au Poivre, melt-in-your-mouth beef cheeks, scallion, and hand-cut potatoes – made me want to slip on a polyester jumpsuit and platform shoes and do a happy dance. On the lighter side, try the rare slices of Seared Sesame Ahi Tuna – sesame seeds, cucumber wasabi, arugula, and ponzu, a Japanese citrus sauce. “It may sound like you’re going to the doctor,” first-time restaurateur Ashlen Gianforcaro quips about her year-old gastropub, Cork and Rye. Hardly a newbie to food and hospitality, the Johnson & Wales MBA alumna spent nearly two decades in the biz, including a stint at Michelin-starred Madera in Menlo Park, California. At Cork and Rye, she brings passion, creativity, and discernment to her winning combination of “elevated bar food,” drink, and ambience – and once you have a taste, you might find it’s just what the doctor ordered. Field to fork dining at Shelter Harbor Inn The Shelter Harbor Inn’s new restaurant menu is a trim list of appetizers, salads, and entrees made from local ingredients. There’s New England favorites like clam chowder and mussels and linguine, alongside inventive plates like blackened shrimp and grits and scallops served with cauliflower puree. The cocktail list features fun concoctions like the South County Sidecar and When Figs Rye. Then, of course, there’s a curated wine selection, which will eventually be part of special weekly wine tastings, says hotel manager Kimberly Baruti. However, the refreshed dining options at this Westerly favorite are just part of the inn’s greater makeover. Last March, Shelter Harbor Inn was purchased by new owners, and over the course of 2019, each of the three buildings have been re-done in an eclectic, farmhouse fashion, featuring plenty of reclaimed barnwood and rustic details juxtaposed with modern touches. Wakefield welcomes a superfood cafe “I want this to be a healing hub,” says Alix Tillett of her newly opened superfood cafe, BOL. “I want it to be deeper than a cafe. I want it to be a place for people to learn and feel better.” BOL serves nutrient-rich foods like acai bowls, smoothies, chia seed pudding, homemade oat and coconut cashew milk, matcha lattes, and granola – all gluten- and dairy-free, plant-based, and organic. The cafe also hosts workshops, like lessons on Ayurveda, an ancient system of medicine. It’s the third location and only one open year-round; the flagship is on Cape Cod and the other in California. The

prevailing essence of each is a dedication to holistic healing, something near and dear to Alix ever since she was diagnosed with chronic Lyme disease. Ditching the antibiotics that she said did more harm than good, Alix embraced the possibilities of how food could shift the body’s ability to move, think, and feel. “It’s incredible to share this with others,” Alix reflects. Tavern on Main in Wakefield, the casual neighborhood pub known for happy hour-style apps and beer on tap, rings in the new year with a new addition: Upstairs@TheTavern. What was once a venue space for the former Saltwater Tavern has been renovated with a full bar and lounge, kitchen, and dining area with moveable booths and tables for easy reconfiguration. Owner Christian D’Agostino reveals that Upstairs@TheTavern will be an entirely different concept with an Italian focus, harkening back to their days as the Italian Village Restaurant, bringing strictly Italian fare to Main Street. The menu will feature a large selection of specialty pizzas – pesto and shrimp, butternut squash and sausage – pasta, and small sharing plates, plus 14 additional beers and an expanded wine list. George’s of Galilee is 72 years old, and it’s still owned by the Durfee family. Since 1948, fans have journeyed to this remote little village for platters of seafood. Through the windows, guests watch fishing vessels motor into the harbor. George’s stands about a block away from the Block Island Ferry, so summers are crowded – but even in winter, locals keep the restaurant busy. “This is a destination restaurant,” says Kevin Durfee, owner of George’s and grandson of its founders, Norman and Edna. “We have such a reputation for seafood that people will drive from western Mass. just to come here.

People have to get up in the morning and say to themselves, ‘Hey, honey, let’s take a ride down to Galilee. I really want to get a baked stuffed lobster.’” To celebrate those 72 years, George’s is offering a half-dozen clam cakes and 72cent Rhode Island clam chowder with every entree. At the same time, the menu changes regularly, informed by local ecology. Kevin and his staff pay close attention to invasive and overabundant species – fish that most of us wouldn’t recognize but can be cooked into sumptuous entrees.

“We definitely have traditional aspects of our menu that we stick to,” says Henry O’Neill, one of George’s main chefs. “But I think in recent years we’ve also started to branch out and experiment, and our clientele trusts us to come up with these new ideas and introduce them to fish and seafood that they wouldn’t normally have.” Take whiting, for example. This fish is little-known and full of tiny bones; most folks would never think to order it. But the southern coast is rich in whiting, and when the fish is fried whole, the bones are pleasantly edible. The same goes for skates; these cartilaginous fish look like stingrays and are typically used as bait. But when they’re properly cooked, the wings of a skate are sweet and delicious, a convincing alternative to scallops. “We’ll take that fish that’s abundant – and so unknown to customers – and the kitchen will turn it into something amazing,” says Kevin. Some items are rare, such as the unusual, cup-shaped shellfish grown by Bluff Hill Cove Oyster Farm, located about a mile away. Kevin praises their consistent shape and oceanic flavor. “I like an oyster that makes you feel like you got hit by a wave.” “What’s still on the menu after 72 years?” asks Yulia Kuzmina, George’s executive chef. Originally from Russia, Yulia grew up gardening and fishing. “I think there are four or five dishes left, with all the menu trends and changes. We do have to utilize what we have in a port – and our location couldn’t be any better.” The team is glad that so many fans will travel out of their way to try these creations, but their greatest satisfaction comes from the fishermen themselves: Many regular customers are the same anglers who stock George’s kitchen. “It’s a real seal of approval,” says Henry, “to get the fisherman who came to sell you the fish to come in and then eat it as well.” GeorgesOfGalilee.com
