Rhody businesses are riding the no-plastic wave to a greener ocean It’s easy to take the impact of plastic straws for granted, but imagine if every straw you have ever used suddenly appeared in your living room. According to National Geographic, eight million tons of plastic trash makes its way into the ocean every year. This sobering statistic, not to mention heartbreaking photos of the direct and often fatal impact of plastic waste on marine life, is a call to action that local restaurants, cafes, and businesses are responding to by trying to get away from wasteful plastic products. The most visible mascot of this green movement is the humble straw. Places like Wildflour in Pawtucket and The Power of Juice in Middletown have ditched the ubiquitous plastic tube for reusable glass straws that customers can purchase and – get this – use with every beverage they’ll ever need a straw for. Coffee truck Presto Strange O, Impact Everything on Providence’s Thayer Street and Federal Hill favorite Pastiche Fine Desserts sell metal varieties, while other businesses are switching to more eco-friendly paper options. Think of it as one small sip for you, one giant slurp for Rhode Island’s oceans. Active Eats “Bowls” have gained enormous popularity in recent years, combining grains, veggies, and proteins in a portable vessel. The bowl is just one specialty of Active Eats, a health-conscious delivery service based in downtown Providence. If bowls are your thing, you can’t do better than the Chicken Teriyaki, the Southwest, or the Vegetarian Harvest. But the crossfit trainers behind Active Eats offer more complex entrees as well, such as the Lemon Pepper Shrimp and Mushroom-Dusted Pork Tenderloin. That’s the idea behind Good4U, a rapidly expanding company based in Hope & Main in Warren. Who among us hasn’t seen a thin plastic grocery bag wrapped around a high tree branch, washed up on the shore, or blowing along the highway? As more and more city and town councils are voting to ban single-use plastic bags, it’s a good time to start collecting your own stash of the reusable variety. Why the bans? According to the Environmental Protection Agency (EPA), these seemingly innocuous carriers, typically made out of petroleum-based plastic, do not biodegrade, meaning they will pretty much last forever. Thin plastic bags are also easily blown and can end up in waterways, which is a concern to the environment, wildlife, and human health. “Source reduction” is a coined term that’s really just common-sense advice: the most effective way to prevent marine and aquatic debris is to prevent waste in the first place. Large and small retailers are increasingly stepping-up to the plate by creating and offering lines of reusable bags that are as pleasing to the eye as they are sturdy and useful. Bonnie Combs of Bird Brain Designs takes it one step further by sewing durable totes from birdseed, animal feed, and brewery grain bags – keeping those items from ending up in a landfill. Combs, who sells online and at regional shows, says, “I love setting up at an event and seeing people light up when they see my creations, and I also love that they take the time to learn why I do it... to save the planet, one bag at a time!”
Pass on Plastic The best way to achieve source reduction is to keep the things you use out of home within reach. In addition to keeping a supply of reusable bags in your vehicle’s trunk for shopping of any kind, also consider: coffee cups, cloth napkins, eating utensils, straws (see more on page 17), and water bottles.

FANTASTIC PLASTIC The nerd-core collections in Julian’s bathroom will make you do a triple-take
Not everyone gets to share a bathroom with Han Solo. Or Darth Vader. Or the sculpted plastic heads of 200 Pez dispensers. But if you visit Julian’s, the funky little gastropub in Federal Hill, you can. Julian’s is already famous for its dinner menu, craft beer selection, and a scrumptious brunch. All through the warmer months, friends cavort at bistro tables on the ample Broadway sidewalk. Then, after a couple of pints, patrons inevitably have to head to the Julian’s bathroom, where they find an extraordinary stockpile of pop paraphernalia. The walls are decked with three glass cases: in one, there’s an army of Star Wars figurines standing at attention, from Obi-Wan to a Gamorrean Guard. A second case contains a posse of superhero dolls (Batman, Captain America, The Hulk). And if you’re seated, you will come faceto-face with every Pez bust imaginable. During a protracted session, you may find yourself impressed by the collection’s completeness: all four Ninja Turtles, all four original KISS members, and the entire Simpsons family. Julian’s only has one unisex bathroom, so if you’ve gotta go, you will be stared at by scores of plastic eyes. Collectors will be slack-jawed with envy. Others may feel performance anxiety. Sandywoods Sandywoods is best known as a communal farm in scenic Tiverton. There are lots of reasons you may have visited Sandywoods – for a wedding, to rent a cottage for vacation, or to attend a concert. But the farm has yet another function: to serve as a kitchen incubator. The Guild Beer is a social beverage, and that sociability extends to production: brewers love to trade notes, apprentice with each other, and taste each other’s pints. The Guild is a brewmaster’s co-op in Pawtucket, and it’s a natural extension of this fraternal atmosphere. Offering farm-to-table foods isn’t easy but it’s worth it

Matt Varga planted a humble garden on the roof of the Peerless Building in Providence less than a year after becoming the executive chef at Gracie’s, a AAA four-diamond award-winning restaurant. He started small, concentrating on growing mostly herbs and

edible flowers. “Sage, lemon balm, tarragon, chives – we use these on a regular basis,” he says. Like many gardeners, he quickly grew anxious to plant more, and what started as a modest but thriving operation with a few raised beds expanded into a 1,000-square-
foot enviable urban garden a decade later. “It’s a lot of hard work,” says the chef, adding that while “farm to table” might be a popular food movement catch phrase, the garden is the quickest reminder of all the work that actually unfolds between the

farm and the table. Varga also says the garden has been a teaching mechanism for the entire kitchen team as they can see and appreciate the seedto-plate food they are turning into elegantly composed dishes. “It allows my team to be mindful of usage and spoilage – they respect [the food] more… it creates an appreciation,” he explains, noting that the experience inextricably links them to the restaurant’s entire menu planning process. For Varga personally, tending to the garden over the past ten years has been “intense” but deeply rewarding. “It allows me to be more in tune with the seasons… more mindful.” He says it’s also given the kitchen staff an incomparable knowledge of the product, from the spectrum of vegetables including radishes, eggplant, various types of squash, and 26 varieties of tomatoes, to the edible flowers including showstoppers like Johnny jump-ups, borage, alyssum, and bachelor buttons. Many of the herbs Varga grows find their way into teas including chamomile, mint, and lavender, and some pull double duty in infused spirits. Sadly, the Gracie’s garden had to take a hiatus in 2018 due to construction, but Varga assures us it will be back in full gear come 2019. He proudly says he’s found a home for all of his plants during the pause and is eager to get his hands dirty in the spring. For Matthew Gennuso, the mastermind behind Chez Pascal and its pint size partner restaurant, The Wurst Kitchen (with its well-known take-out window), a rooftop garden has been a longtime goal. It wasn’t until last year that he finally sunk his hands in the soil and started to dig. “We had a very big flat roof that wasn’t doing anything for us,” he says. “I thought about it for many years and finally pulled the trigger.” He started with about 40 milk crates, lining them with burlap bags that were originally used to haul corn, and an enviable mix of soil from a farmer friend. mostly planting tomatoes, herbs, and peppers. He observed just how much sun the roof received, explored irrigation ideas, and discovered just how demanding a garden can be. Over the winter, Gennuso collected wooden crates used to deliver the restaurant’s fresh halibut from Nova Scotia. “I convinced the fish guys to give them to me and was secretly stacking them on the roof… the crates are beautiful and idyllic for growing,” he says. In March of this year, Gennuso started seeds at his home and by the time he was ready to plant in May, he had the makings of a robust crop. “The problem is I started too many seeds, thinking they wouldn’t all come up, but they did,” he says with a laugh. With a “no plant left behind” mentality, Gennuso planted every one, admittedly overcrowding a few containers. “But this is experimental,” he explains. Today, multiple varieties of tomatoes plus beans, cucumbers, peppers, herbs, and more are flourishing. While the garden’s harvest is certainly being utilized with ingredients integrated into various dishes, seasonings and garnishes, Gennuso says they certainly aren’t yielding enough of any crop to sustain the kitchen. “All the years working with farmers, we totally respect what they do, and we could never be able to do what they do,” he says. The chef continues to stock the kitchen with produce and proteins from predominantly local farms. Over the past two growing seasons, the primary challenge for Gennuso has been that the roof is only accessible by ladder. To resolve the issue and to better integrate the garden into the dining experience, plans are underway for some changes at Chez Pascal. “We’ll have access [to the garden] from the dining room and customers will have some visibility, almost like a widow’s peak,” he says. “It’s going to be fun.” Even before she opened Rebelle Artisan Bagels last year, Milena Pagan Chez Pascal

has been a gardener, tending to fruits, vegetables and herbs at her home. Undeniably a green thumb, Pagan says she still wants, pardon the pun, to “grow” as a gardener. “I definitely still have some stuff to learn,” she says. While she’s fully aware of what part of her yard gets sun when and for how long and how to irrigate her plants well, she would like to expand her repertoire and grow things based on Rebelle’s menu. “I kind of just grow plants and whatever I think will do well in the yard,” she says. Last year, Pagan started making lavender lemonade from lavender she grew for a refreshing, floral treat. She’s carried over the drink this summer and has also introduced raspberry-lime rickeys, a refreshing, bubbly fruit concoction with New England roots made with raspberry syrup, seltzer, and lime. Any leftover herbs that can be dried and used for later, like the lavender, will likely be incorporated elsewhere in the menu, in addition to the highly-touted hand-rolled bagels, salads, and sandwiches. Herbs including basil and chives, have been a hit in her house-made cream cheeses. “I am trying to do a special pickle with the cucumbers I grow, and the zucchini is coming in to do a bread – which we did last year,” she says. Pagan is also growing more greens like kale in the garden which is tended to by her boyfriend Darcy Coleman. “I come into the garden every day after work and see what’s doing well,” she adds. “The garden gives us a cool story to tell our customers,” says Pagan. The lavender, for example, is so fragrant, and when she tells customers it was just harvested from her home, it gets them interested. “People want to know where their food comes from, it gives people a sense of confidence,” says Pagan.

The Icing on the Cake It wasn’t very long ago that ordering a birthday cake was fairly straightforward. You provided the recipient’s name for the message, but the expectation was a yellow layer cake with white frosting – a snowy coat laced with a sugary grit that made your gums tingle. In today’s foodie caffe latte society, there are so many choices of frostings and fillings. There’s even a bit of confusion over macarons and macaroons, so we’re here to clear things up to make your next trip to the display case as enjoyable as possible, and we’ve even asked some local experts to chime in. Buttercream Also known as Traditional and deemed Snow White if prepared with all shortening, it’s not exactly health food, but it’s the frosting of childhood – and weddings before fondant stole the show. The pure white lends itself well to taking on pigments, making it ideal for piped borders. Switch out shortening for butter and add vanilla for a softer, creamier version. This is the go-to frosting for Becky Morris of Celebrated, who has created a vegan version. “The secret to my classic buttercream is all in the ratio of vegan butter to powdered sugar, and how I whip it up in a mixer to a perfectly light and not too sweet consistency,” she confides. Chocolate Ganache Ganache is a decadent combo of equal weights chocolate and cream. Pronounced gahn-AHSH it can be whipped into a frosting or used as a filling for things like truffles. The addition of corn syrup makes it very pourable to drip over cakes. Cream Cheese Frosting Delicious on carrot and pumpkin baked goods and red velvet cupcakes, this frosting is very much like buttercream but gets its consistency from cream cheese instead of shortening or butter. The addition of maple syrup to the recipe can add a nice seasonal twist. HeyRhody.com

When Rob and Uschi Yaffe turned to Kyla Coburn Designs to conceptualize their farm-to-table, community-oriented restaurant, The Grange, in 2012, Coburn immediately thought of a tiny, abandoned, 19th century grange in upstate New York she drove by frequently as a child. “In rural communities all over America, a grange is one of the first buildings to go up in a community. It is where people meet to determine the price of grain, or hold weddings, or discuss politics. It instantly came to mind as the perfect inspiration for a new version of a farm-to-table space on Providence’s West Side,” says Coburn. But before the paint enlivens walls or fabrics are selected for window treatments or banquettes, Coburn and her team do a yeoman’s job of research. The designer says they have an incredibly detailed discovery process where the team considers the restaurant’s branding, menu, price points, and overall goals. “This creates a project architecture that guides us through the rest of the process,” says Coburn. It’s that up-front work, she explains, that allows her team to deliver an interior that is cohesive with textures, materials, and finishes that have longevity, that fit well with the community, and that create a memorable customer experience. “The psychology of an experience and how it impacts the people who visit the space, whether calm or exciting or edgy, remains the most important factor in the design.” When it comes to sourcing, Coburn says Providence is a treasure trove due to the city’s vibrant creative community. For The Grange, options were plentiful. “Almost every element in The Grange design was locally sourced – with its own story – so we could create layered textures and touchable materials that were familiar. Taken together, they create a magical atmosphere where the plant-based menu and visual design are symbiotic and deliver a naturally cohesive experience,” says Coburn. The restaurant’s chairs came from an actual historic grange, the table bases were made from porch posts salvaged from area houses, and wooden bowling alley gutters, originally from Pawtucket, were repurposed to create the coffered ceiling.

In fact, Coburn reveals that the pieces that awe diners in multiple restaurants across the city were collected from area antique shows, markets, and salvage houses. Coburn says, “When you find an item that seems to make no sense – that’s heavy, awkward to move – and all logic tells you to walk away – those are the items you have to buy and find a home for when the right project comes along.” In late summer, Coburn was featured on an episode of “The Professionals,” a documentary series on OZY.com. The segment included footage of her work at Providence’s Troop and Wara Wara. Designer Libby Slader, best known for creating the interiors at The Eddy, Providence Coal Fired Pizza, George’s of Galilee, Sura, and most recently, Kleos and its sister restaurant, Rosalina, says every client and every space has its own identity. “We strive to create a space that reflects the individual project,” she explains. Sometimes, says Slader, restaurateurs come to her with a clearly defined concept and she’ll work alongside them in a collaborative effort, taking their ideas and vision for the space and creating a narrative for it. Other times, the restaurant’s concept is developed from scratch. In either case, Slader will leave no stone unturned as she hungers to learn everything about the restaurant, from the menu and price points to the seat count and target market, to better understand the vibe chefs and owners are looking to emanate and the goals they want the aesthetic to accomplish. “Once the concept is understood and/or developed, the design decisions are much easier to make,” she says. “We always refer back to the concept and whether or not the design decisions support it. Creating a space that supports the operational needs of the space is just as important as the customer experience.” Where some see challenges, Slader sees solutions. When highly touted Persimmon moved to Providence from Bristol, owners Champe and Lisa Speidel knew they needed to make what was clearly two distinct spaces into one cohesive restaurant. “We needed to make everyone feel as though they were part of the action,” says Slader. Champe wanted to have an open kitchen

area and a chef’s counter so he could interact with the customers while Lisa sought a space that felt brighter and lighter than their former location. “A Scandinavian-inspired aesthetic was mentioned, and we ran with it,” says Slader. “The existing building had amazing millwork paneling and we knew that a fresh coat of paint would work wonders – and it did.” Conversely, Steve Durkee, owner of Durk’s Bar-B-Q, had done his research before meeting with Slader. He traveled to barbeque joints across the country and as a result, already knew what he was looking for from an operational and aesthetic standpoint. “There was also going to be a strong emphasis on whiskey, so hence, the ‘Wall of Whiskey’ was created,” notes Slader. Making the most of the square footage, the designer made the functional aspects

of the space focal points, so the smoker and the firewood not only add to the aesthetic but are constantly utilized. Slader also likes to think long term for her clients. “We tend not to do anything that’s too trendy, unless it’s in something that can easily be changed out in ten years, such as a light fixture or furniture.” As the Ocean State is ripe with creative talent, Slader works with myriad local artists and craftsman in Rhode Island. “We love to work with James Reynolds, the team at Providence Painted Signs, Mark Freedman, Kingston Krafts, Lorimer Studios, Corporate Art Group, and Jutrus Woodworking,” she says. “There truly is no shortage of amazing collaborators.” As to which project has been her favorite, says Slader, “It would be impossible to choose. My favorite is always the next one.”

Moore House Quonset hut chef dinners are anything but standard issue Rhode Islanders have this reputation for not wanting to leave the state, and with miles of scenic coastline, charming towns, and historic cities, who can blame us? So, if you’re looking for a get-away without going away, look no further than Tiverton, where a once dilapidated Quonset hut has been transformed into boutique accommodations complete with private chef dinners by candlelight. While the name Quonset hut might conjure visions of a thatched-roof dwelling in the woods, these half-cylindrical steel structures are anything but. They were designed to be light-weight pre-fab buildings for the US Navy that could be easily shipped and then constructed on-site with little skill required. Quonset Point, most were used to store supplies and ammunition, and later some provided post-war housing. Fast-forward to present-day when one such humble structure was spotted by a member of the Moore family, a close-knit team of fixer-uppers. Gone are the days of stressing over possessing complete sets of stock to accommodate a large crowd. Today’s gatherings tend to be much more focused on the vibe you set. The tips provided below will have you prepared to host in style. So, turn on some music and don’t worry about that gold-rimmed place setting for twelve.
Market Bunch Even the cheapest bouquet of flowers can make effective arrangements. Rather than using a lowcost bunch for one big display, use single stems in narrow vases, jars, or even vials and keep separate or wrap together.
Flatware Finesse Almost any clean vessel makes a great container for keeping flatware within reach. Think wide-mouth pickle jars, canning jars, ceramic planters. For graphic appeal, display utensils in large emptied and cleaned tomato cans with labels still affixed; cover any jagged edges with tape.
Mix and Match Whether you set a table or keep things buffet-style, assorted dishes, cutlery, and glassware get the job done. The more seemingly random, the better, so before you stack or set, alternate what you have so that it seems purposeful (ex: blue, patterned, yellow, blue, patterned). If you don’t have enough glasses, fill gaps with jelly jars.
In Knots Inexpensive and available at most hardware stores, twine is a great way to tie together a theme on the cheap. Use pieces to secure a group of bloom-holders by banding together for impact, to tie a single flower or herb to cutlery, and in place of napkin holders.

Moore House turns a historic Quonset hut into a dreamy dinner destination
Continued from p. 57… With its fresh design, it’s difficult to believe that this 1940s shelter once held ammunition and was in terrible shape. Says Erin Moore fondly, “With only a handful of Quonset huts left in the state and only a few thousand in the entire country, my family found it necessary to look after this little gem and restore it to its former glory.” By June of 2017 the Moores did just that and have even deemed this their favorite renovation to date, an inventory which includes properties all over the world. “We wanted to be thoughtful with color

and lighting,” says Moore, who didn’t want fixtures to detract from “that amazing undulated ceiling”, so hand-blown glass domes were hung sparingly throughout the space. The arched ceiling equips the room with what Moore describes as “outstanding acoustics,” especially effective for after-dinner dancing when someone sits at the piano, a prized acquisition formerly owned by a Boston Pops pianist. Two long benches provide seating for 12 at the narrow table constructed from old floor boards. Creating a customized home away from
home experience is integral to the Moore family, whose matriarch, Sharon, is known for making guests feel welcome and special. Says Moore, “Our private Chef Nights come from a love of gathering with family and friends and wanting to share those experiences we’ve had with our guests.” From ambience to food and drink, Chef Nights are a collaborative effort. Starters, cocktails, dinner, and dessert are all curated from a roster of local talent which includes Newport’s Stoneacre Brasserie, Little Bitte Artisanal Cocktails, and florals from

Take pasta, for example. But there are a handful of restaurants working hard to reclaim the waffle’s reputation from the frozen food aisle, and that reputation isn’t limited to breakfast.

The Liege waffle is a Brioche-based waffle perfect for satisfying any sweet or savory hankerings you might have. Burgundian Coffee and Waffles is currently operating as a pop-up, bringing delicious waffle creations like In Bacon We Must – topped with ricotta, a fig spread, bacon, and basil – to breweries and coffee shops all over RI, and have a mobile operation on the way thanks to a successfully funded Kickstarter campaign to convert a British double decker bus into a waffle shop on wheels. DONUT DAYS The state’s sweetest trend shows no signs of slowing down
By now it’s clear that the donut craze isn’t going anywhere. Unlike previous sweet trends that came and went as quickly as they were devoured, the donut has proven to have legs in Rhode Island. This shouldn’t be surprising – we love our donuts. Allie’s has been the first name in Ocean State donuts for decades, cooking up the quintessential complement to coffee, not to mention their famous donut cakes. Payne’s Donuts on Block Island has similarly been keeping its guests fueled for the beach for more than 50 years. But it’s the more recent, artisan donut trend that has dominated our Instagram feeds for the last few years that seems to be taking the state’s donut tradition to new

heights. PVDonuts and Knead Doughnuts, both in Providence, have earned national recognition – Thrillist has raved about PVDonuts’ mad scientist creations like the Pizza and Thanksgiving donuts; Travel and Leisure named Knead the best donut in the state – and have a devoted fan base since setting up shop. Both have recently embarked on expansion plans, with Knead opening a second location and PVDonuts growing within its current space to accommodate a larger kitchen and cafe area for customers. Dave’s Coffee, known for their coffee milk syrups and locally roasted beans, naturally embraced donuts and brought a gluten-free perspective to the

small-batch baked donuts at their Providence and Charlestown locations. Eli’s Kitchen in Warren approaches donuts the same way they do their lunch and dinner menu, putting meticulous and innovative twists on comfort food. Their donuts show up Thursdays through Sundays with a bunch of inventive flavors. Another way to reinvent the wheel-shaped treat? Literally make it not a wheel. 4corners Coffee in Warwick brings the same attention to quality and wild varieties as the shops above but manages to stand out from the crowd thanks to one fundamental yet simple difference: their donuts, as their name suggests, are all squares. which opened earlier this year in Portsmouth, keeps things deliciously old school, complete with the classic trifecta of donut holes, bear claws, and a drive-thru. This is hardly a complete roster of the donut dynamos in Rhode Island, but you get the picture. There’s a donut for everyone in this state, as well there should be. Donuts, and food in general, are a great equalizer, a means to coming together to share in joyful moment of quiet, face stuffing contentment. TWO GREAT TASTES... Pizza strips and fried calamari are Rhode Island’s defining flavors
“What can be said about fried calamari and pizza strips?” muses David Dadekian, founder and president of Eat Drink RI. “One has traversed the world and represents our state’s greatest export – the humble squid – and the other has remained stubbornly local, only to be eaten by true Rhode Islanders (and their guests), and to be argued over like any local favorite. Is it pizza? What do you call it? Is the white version a pizza strip?” When you drill down deep enough, every place has its odd, local food traditions that baffle outsiders and neighbors alike. In Rhode Island, it’s safe to say that these two dishes – fried calamari and pizza strips – are the textbook examples of such culinary colloquialisms. Each has their virtues,
but when it comes to their faults, well, now we’re just splitting hairs. Any fault one finds in calamari from one restaurant versus another is strictly a matter of preference. So and so makes the best calamari? You get your pizza strips from where? You’re insane. In fact, we aren’t even going to offer any endorsements one way or the other. For one, we don’t want to respond to your angry emails by telling you you’re wrong. Also, we can’t agree in our own office. Friendships and loyalties have been put to the test here, such is the power of pizza strips and fried calamari. “Either way,” Dadekian diplomatically concedes, “these two iconic RI dishes are always delicious.” No argument there. -Tony Pacitti, photography by Stacey Doyle

The uninitiated are always surprised by the differences between oyster varieties. A mile north or south from one grower to another is enough to change the sweetness, texture, and brininess in any given crop of oysters. Connoisseurs know that there’s gold in them thar shells, complex and subtly different gold. That capacity for so much diversity within such a small geographic area means that there’s plenty of room at the table, so-to-speak, for the men and women harvesting local oysters. According to the Coastal Resource Management Council’s (CRMC) most recent annual report there were 73 aquaculture farms – including farms dedicated to mussels and clams – in the state and 8,434,541 locally harvested oysters were sold for consumption last year. Aquaculture is a booming industry here because, as we all know, oysters are delicious and our waters are full of them. Farms dedicated to harvesting the bounty of shellfish grown in our waters dot the coastline from Westerly all the way up into Narragansett Bay. Solid branding and a lot of exposure make them one of the stars of the local aquaculture scene; think bucka-shuck deals at bars and restaurants, or some of the bigger oyster-focused festivals that pop up annually in Providence and Newport. Their reputation as an aphrodisiac helps, too. As does that variety in flavor. For example, Walrus and Carpenter Dutchies, grown in Jamestown’s Dutch Harbor, are salty with a clean finish. Meanwhile, Salt Water Farms’ Quonset Point Oysters, harvested from Narragansett bay’s East Passage, can have a subtle or more intense salty start and end with a more refreshing, briny finish. Move to the Bay’s West Passage and Wickford Oyster Co.’s Fox Island Oysters sport a medium brine start and a buttery finish. A matter of miles becomes a world of flavors, most often – and best – enjoyed raw and slurped right from the shell.

But there’s more than just oysters below local waves. Mussels aren’t grown in the same quantities or varieties as oysters, but they’ve carved out a niche by taking center stage in certain popular dishes around the state, like Red Stripe’s extensive moules & frites menu at both their Providence and East Greenwich locations, or in a co-starring role in Paella at Spain of Narragansett. American Mussel Harvesters, based out of Quonset Point, ships three varieties of farmraised and wild mussels across the country, proving that a little mussel goes a long way. CRMC’s report points to an aquaculture industry that will continue to ride this successful wave into the future. Afternoon tea isn’t just for the English, whose nineteenth century upper class started the ritual to bridge the gap between lunch and dinner. CRAFTED COCKTAILS Little Bitte’s Willa Van Nostrand infuses cocktails with creativity and panache By Amanda M. Grosvenor
When cocktail caterer Little Bitte shows up at a party, you know it’s the place to be. Their attention to detail is unparalleled, with elegant bar setups, gorgeous floral displays, and vintage flair providing the perfect complements to the delicious cocktails they shake and stir.

Willa Van Nostrand turns event mixology into installation art
Little Bitte is the brainchild of local Jill-of-alltrades Willa Van Nostrand, who moonlights as a writer, singer, and gallery owner at World’s Fair in Providence. What’s her secret? Living life as an art form, she says, and bringing seemingly limitless energy and care to all her pursuits. For years, Van Nostrand bartended at local watering holes and developed a following with the locally sourced, farm-fresh garnishes, juices, and small-batch bitters she would bring for cocktail experimentation. Over time, this flair for artisanal alchemy led to private party bartending and then a full-blown cocktail catering business. Today she caters public and private affairs in New England and beyond, flanked by a team of well-seasoned mixologists. Now in its seventh year, the company HeyRhody.com
succeeds by “happening upon recipes that appeal to a crowd, and kind of bringing that to a science,” Van Nostrand says. Little Bitte knows how to please its audiences: often it’s a “light, spritzy, citrusy cocktail balancing out a menu and then a whiskey or aromatic deeper, darker more intense cocktail.” She also likes to throw curveballs and push her tasters’ palettes with “infusions, spice, mezcal, and smoke.” Event themes run the gamut as well; a recent BBQ festival inspired garnishes like smoked pork belly on a whiskey cocktail, grilled pineapples on margaritas, and grilled mussels on Bloody Marys. At a Movies on the Block screening of Pulp Fiction in Providence over the summer, one bartender dressed up as Uma Thurman’s character, Mia Wallace. Little Bitte also now occupies two
bars at WaterFire – one in the basin and one at Star Field. For September’s Ocean State Oyster Festival, happening at the Providence Riverwalk on September 22, they’ll be introducing recipes with a mermaid-inspired theme. “For me, my creative process is really important, and I do a lot of research and reading,” Van Nostrand says. “I’m always traveling to new bars and restaurants, and I find that so inspiring and exhilarating.” Following a trip to Italy last summer, she fell in love with aperitivos and spritzes, and hopes to help adopt them more into American culture. THE BOOTY FOODIE When Providence-based model and Instagram personality Laura Afonso started Buns and Bites, she wasn’t expecting the response or the following she got so quickly, but a year and a half and nearly 10,000 followers later, it’s safe to that the body positive celebration of Rhode Island’s food scene is a social media hit. “Too often women see other women on social media and compare themselves to pictures that have been photoshopped, over edited, and filtered twice,” says Afonso. “We want to show these ladies that your stretch marks are a part of you, that cellulite is beautiful, and your booty
– big or small – should be the focus of shameless self-worship.” The concept is bold, brazen, and works.
