WSWA Showcases Trends, Secrets and New Platforms For The Beverage Industry

housands gathered at Gaylord Rockies Resort Center for Wine & Spirits Wholesalers of America (WSWA) February 3-6. Those in attendance discovered this year’s trends, secrets and platform for the spirits, wine and alternative beverage industries in a multi-day packed expo of panel discussions trade show exhibitions, conference discussions and more.

As the only national membership organization of wine and spirits distributors, WSWA advocates on federal, state, regulatory and legal issues impacting distributors and the beverage alcohol industry. Some of the many important policy areas such as taxation of family-owned businesses, state-based alcohol regulations,

Francis Creighton was confirmed as the President and CEO of WSWA in September 2022. Prior to joining WSWA, Creighton was the President and CEO of the Consumer Data Industry Association (CDIA) where he spent over 5 years leading the trade association that represents the U.S. consumer reporting industry.

(MBA) on affordable housing and other issues important to the real estate finance industry. Recognized as a “Top Lobbyist” by The Hill newspaper, Creighton has appeared in national and international print, television and radio outlets as a contributor and subject matter expert.

Creighton has extensive experience in Washington D.C., working in both the legislative and executive branches of government for over 15 years on financial services, employee benefits and campaign finance reform. He also served as Chief of Staff to U.S. Senator Chris Murphy of Connecticut. In the private sector, Creighton led government relations for the Financial Services Roundtable, which represents top U.S. financial companies including banks, asset managers, insurers and payment firms.

Additionally, he worked for the Mortgage Bankers Association

Creighton holds a master’s degree in public policy from Georgetown University, where he serves as an adjunct faculty member. He received his bachelor’s degree in political science and history from the University at Albany, State University of New York, and also studied at Glasgow University. He resides in the Washington, D.C., area with his wife Julia.

“People talk about being a starving pioneer. Well, I’ve always been a pioneer, but I’ve never starved.”

A

va Berman is dressed, as she almost always is, in all black, including a black baseball cap. This one bears the slogan “Las Vegas, Est. 1905.” The wardrobe might be dark, but Ava Berman’s outlook is off-the-charts sunny, exuberant, and cheerful. The hat, expressing an appreciation of the history of the city whose entertainment landscape she has played such a major role in crafting, suits her perfectly.

In many ways, she and her husband, Big Daddy Carlos Adley, are Las Vegas: daring, optimistic, fearless, and bold.

“Darlin’,” Ava says, “we’ve lived a hundred lifetimes.”

THE POWER COUPLE BEHIND DOWNTOWN'S REVIVAL Luckily for anyone who appreciates the club and music scene, their current lifetime brought them here to Las Vegas, where she and Big Daddy own and operate the Backstage Bar & Billiards and Fremont Country Club on Downtown’s Fremont Street. They are rightfully and widely regarded as having played a huge role in the revitalization of Downtown. But Ava and Big Daddy have never been good at standing still or standing pat.

Plans are underway for a new downtown property. Details are coming soon, but it’s intended to be part of the ongoing rebirth and transformation of Downtown’s club and music scene.

FROM CHICAGO TO LA TO LAS VEGAS

“It’ll be the greatest boutique hotel in the world,” Berman says. “Big Daddy and I are innovators, above all. We don’t sit on things — we make things happen. We turn subculture into culture. We believed in Downtown Las Vegas before anyone did.”

Ava Berman speaks of Las Vegas with the affection and passion of someone born and raised in Sin City. But she’s a Chicago girl (the accent is occasionally noticeable) who made her mark in Los Angeles before heading across the desert. Big Daddy had monopolized the Hollywood after-hours and club scene.

FEARLESS VISIONARIES Their other forays into the club business in L.A. are legendary. Ava and her brother, Steve Edelson, launched Glam Slam with Prince, as well as Dragonfly, Union, and several others. The investments of time and money into those clubs were based less on research and data and more on an inherent instinct for what will work and where — and a fearlessness in going where no one else would.

“They were in some terrible areas; no one wanted to touch anything near those locales at the time,” Ava says.

“But we’ve always been able to see things that maybe others don’t.”

FROM VELVET MARGARITA TO FREMONT STREET Velvet Margarita redefined the restaurant-and-club scene for more than 15 years before closing because of the Covid pandemic. “Come for the cuisine, stay for the scene” was its informal catchphrase, and it drew the biggest stars in music and Hollywood industry lore.

“We hosted tables filled by Stones, Monkees, Beatles, and Zeppelins,” Ava says, referring to frequent club guests Mick Jagger, Mickey Dolenz, Paul McCartney, and John Paul Jones.

Carlos and Ava are forces of nature as individuals, but their union as a team is unbreakable.

“Most couples doing what we do can’t stand each other — they drive each other crazy,” Big Daddy says. “Ava and I can’t live without each other.”

Big Daddy Carlos Adley is a small mountain of a man whose career as a collegiate noseguard for Cal State Fullerton’s football team earned him induction into the College Football Hall of Fame and a draft selection by the NFL’s Los Angeles Rams. He became known in the L.A. club scene as one of the world’s most renowned DJs. His house band, Chickenhawk, not only served as the house band at the Viper Room with Johnny Depp but is infamous for running up the highest bar tab in Sunset Strip history. It was in the tens of thousands.

Oh, and Big Daddy wears skirts — for the sheer comfort of them.

He grew up in a tough section of East Los Angeles, and his drive was fueled, in part, by a hardcore disciplinarian stepfather.

“He was tough as hell on me, but he saw the raw talent, and he channeled it into football and then the clubs,” Carlos says.

21 “You instill that discipline in a child, and nothing can stop them.”

The couple’s designs on the hotel and nightclub scene were born long before Ava and Big Daddy met.

“I was no more than five or six, talking with my grandpa, Popeye,” Ava says.

“And I looked around at the hotels and casinos and said, ‘I’m gonna own one of these someday.’”

NO ONE SKIPS VEGAS ANYMORE Berman’s foray into Las Vegas wasn’t simply a labor of love. She and Big Daddy saw a definite void in the Las Vegas music scene. They wondered why Downtown couldn’t replicate some of the iconic L.A. clubs.

“There were no midsize clubs,” she says. “You either played a casino or a dive bar. There was no Whiskey, Roxy, Troubadour, or Palladium. So great bands would fly right over Las Vegas from L.A. and go to Phoenix or some other place.”

How times have changed. “No one skips Vegas anymore,” Berman says.

“The renaissance happening in Las Vegas is like nothing I’ve ever seen.”

As for their role in the renaissance?

“We have a formula that works,” Ava says. “We come from very humble beginnings, but we’ve never been afraid to take a chance. Do you want to sit on the shelf, or do you want to make a splash? Big Daddy and I want to make a splash. People talk about being a starving pioneer. Well, I’ve always been a pioneer, but I’ve never starved. You just can’t be scared. You can’t be scared to try anything.”

Yet, despite their accomplishments and contributions, Ava and Big Daddy don’t seek out media attention. They’ve received plenty, but they don’t go looking for it.

“We know what we’ve accomplished, and we’re proud of it,” Ava says. “What I do know, I’m an expert on. What I don’t know, I don’t talk about. But I’ve always believed in studying hard and getting an A on the test — whatever the test might be.”

She and Carlos run an orphanage in Mexico, home to more than 120 kids who would otherwise be on the ruthless streets of their troubled neighborhoods.

Revitalizing the Downtown music scene, opening a new boutique hotel, and managing all the endeavors and moving parts of the life of Ava Berman and Big Daddy Carlos Adley must not leave much time for any other projects, right? If you think that, you haven’t experienced the energy and vision of Ava and Carlos or gotten to know what truly motivates them.

“Many of them aren’t adoptable for various reasons, so the orphanage has truly become their home,” she says.

“God takes from the takers and gives to the givers,” she says.

“We live in the Lord, we’re very spiritual,” Ava says. “Our biggest joy is giving back, to make a dent in the universe. To live in the land of mediocrity is no one’s destiny.”

And give they do.

Here in Las Vegas, the Adleys organize a Thanksgiving meal for the down-and-out.

And we’re not talking about a few turkey sandwiches for a few dozen people. Last year’s event provided world-class dinners for more than six thousand Las Vegans.

Carlos echoes that sentiment.

“The Lord wants us to be successful so we can help our fellow human beings,” he says.

“Money ain’t gonna make my food taste better or make me love my wife any more or less. We live to be at the top of our games.”

Then there are the relief efforts she and Carlos spearheaded during the devastating Maui wildfires in 2023 through their ocean preservation group, Love The Sea. It’s aptly named — Ava so loves the sea she became a marine biologist. The nonprofit created an annual fundraising concert called Ocean Aid, one of the biggest televised events in Hawaii. When the fires hit, the Adleys and

the concert’s organizers pivoted from fundraising concert to life-and-death rescue mission.

“We were using Jet Skis to get anything we could to the people whose homes had been lost,” she recalls. “Water, clothes, toiletries — anything we could get our hands on. Those people had lost everything. It was devastating.”

THE MUSIC NEVER STOPS As important as those efforts are, though, Ava sees the importance in building, rebuilding, and remodeling the music scene. It’s more than entertainment to her and Carlos, more than a business.

“The biggest uniter in the world is music,” Ava says. “I love watching bands go from nothing to stardom, seeing them play our stages. I love the escapism of

it, because everyone has problems, right? That escapism is so important.

I love watching people have an outlet, forgetting everything and just enjoying themselves, enjoying life, enjoying the moment.”

Ava’s affection for animals is obvious, too, in the more than 1,600 photos and videos she has of a recent African safari — hippos, lions, and elephants meandering just feet from her tent.

It’s an adventure she recommends for anyone.

It all plays into a formula that Big Daddy summarizes with an acronym he attributes to Abraham Lincoln: ELAG. Examine, Learn, Adapt, and Grow.

“By applying this mantra in every aspect of your life, it is literally impossible for you not to evolve in every facet of your life goals and aspirations,” he says.

THE BEST IS YET TO COME Ava Berman says she’s lived a hundred lifetimes. So what’s next for her in this one? She started as a medical school student, became a marine biologist, developed and branded more than 17 nightclubs, and has launched the careers of countless bands and artists. She and Carlos have a hotel on the way, rescue orphans in Mexico, feed the hungry at Thanksgiving, defend the ocean, and assist fire victims in Hawaii.

What could possibly be next?

T

he Inspiro Tequila bottle catches your eye first. The liquid inside matches the elegant and sleek packaging. It’s expertly distilled, refined, and silky smooth. This thoughtfully crafted brand is a perfect reflection of its founder.

Mara Smith never saw owning a tequila brand in her future. Entrepreneurship was not in her sights when she was practicing law at a large Chicago law firm or working in corporate strategy at a Fortune 500 company.

Leaving the corporate world to stay home was also not in her purview, but life led to many unexpected pivots. A complicated pregnancy, emergency bedrest, and the arrival of premature twins brought Mara’s corporate career to a screeching halt. She made the decision (an option she says she was fortunate to have) to stay home. After more than sixteen years as CEO of her home, Mara finally pursued her dream of starting her own company.

“I always had the desire to build something, I didn’t want to go back to the corporate world and work for someone, I wanted to create,” Mara says. After discovering that the tequilas she had been enjoying contained undisclosed additives, in February 2020, Mara founded Inspiro Tequila. This additivefree tequila brand is distilled, owned, and led by women.

Mara knew the journey would be challenging, but she had the drive and determination to learn everything she could about the spirits industry and to create a new tequila brand that was additive-free yet really easy to drink. Mara sought a legendary female master distiller, and after reading about Ana Maria Romera Mena, she knew Ana Maria was the maestra tequilera to bring her vision to life.

Finding and connecting with such an esteemed distiller was just one step on the path to creating Inspiro Tequila. The process

of building a brand in the complicated spirits industry is full of ups and downs, but Mara is enjoying the ride and loves the steep learning curve.

Inspiro, the Spanish word meaning “inspire,” is named in honor of Mara’s inspirations, her grandmother and mother.

“I’m very fortunate that I had two women in my life who instilled in me the confidence that I could do anything if I were willing to put in the effort,” Mara says. “I never shy away from hard work, and I believe that if you prepare and do your due diligence, you can learn anything, even a totally new industry. To get up to speed quickly, I subscribed to industry circulars, watched webinars, read books, listened to podcasts, took a course offered by the CRT in Mexico on tequila production and history, and applied to everything. “ Mara’s first not-so-easy ride, and one that provides some insight into her drive, came when she was four years old. She coveted a purple bicycle that was way too big for her.

Her parents told her that the two-wheeler was much too large for her, and she was too young to ride it. She says with a laugh, “That just challenged me.”

So, she hopped on the bike and attempted to pedal while standing up since she couldn’t sit on the seat and reach the pedals.

She fell over again and again. After endless hours and scraped-up knees, she was riding.

“It was about more than riding a bike. It was about determination, or perhaps an early indication of my stubbornness,” Mara jokes.

companies and navigate the bumps in the road. Inspiro Tequila became a Certified B Corp to formalize its commitment to elevating other women in business and supporting other female founders. “If I were going to reenter the workforce after being out for so many years, I really wanted to make an impact,” Mara shares. Two percent of revenue or 20 percent of net profits go toward in-kind or monetary donations for 501(c)(3)s that support women.

It’s the little stories women share that Mara finds personally satisfying. She was recently on a panel and shared the difficulties of reentering the workforce and figuring out how to blend her work and family life (she admittedly said she’s terrible at balance). A woman reached out to her afterwards to tell her how much Mara’s story inspired her and made her feel more confident about a career pivot she was contemplating. This personal account meant so much.

Even though there are many tradeoffs with the craziness of startup life, Mara hopes her children will emulate her hard work and focus, and that they’ll appreciate what she is trying to build. The highest praise for Mara did not come in the form of an award or honor, but when she was in her local grocery store with her youngest son and after seeing Inspiro Tequila on the shelf, he said “Mom, you’ve accomplished so much in so little time, you should be so proud.”

Öömrang Expands Wine and Spirit Palate PR%F Award-winning Winery and Distillery adds new delights

erfectionism. These days, at least among some pseudo-psychologists, the concept has fallen out of favor. It’s said to be something to be treated, battled, handled, or avoided. The internet overflows with articles about seeing the signs of perfectionism, avoiding being a perfectionist, the dangers of pitfalls of perfectionism, and how to not fall into its gory clutches.

But perfectionism happily reigns on 125 stunning, gorgeous, and bucolic acres in northern Washington State. Öömrang, a boutique winery and distillery in Stanwood, Washington, is quickly and quietly accumulating accolades, recognition, and awards, including being named the 2023 Winery of the Year by the PR%F Awards.

"Every time one of our bottles is opened, I'm nervous it's not going to be perfect, but it always is,” says Christine Stoecklein, who owns and operates Öömrang with her husband, Edmund. “We strive for perfection. We always have.”

Where does her perfectionist nature come from?

“Oh, I don’t know,” she says with a laugh. “I’ve always been meticulous, from the age of about ten, I’ve tried to be perfect in everything I do.”

Everything included designing and selling wallpaper from when she was just a young girl to successful forays into pottery, graphic arts, design, and even real estate.

Edmund, clearly her biggest fan, steps in.

“She reads everything, talks to everyone, learns absolutely all there is to learn about anything she sets out to do,” he says. “I think it’s our German heritage as much as anything. There’s a reason Mercedes is better than most other cars, right?”

The payoff for the meticulousness is a wine quality that resulted in three 100-point Century Awards in 2023 and two 100-point Century Awards in 2024, and multiple Double-Gold Awards in the last two years.

would operate with military precision and an accompanying atmosphere if you feel that you haven't been to Öömrang. There is an unmistakable spirituality to the place, marked by, among other things, a chapel. This is no wine factory.

“I’ve seen visitors cry at the beauty and just the feeling of this place,” Christine says.

“Our grandkids love it,” chimes in Edmund. "We have birds, including owls, goats, and chickens, and we play Bavarian music over the speakers. It’s good for the wine.”

The bells you hear chiming? They’re authentic German bells cast by one of the oldest family owned business that dates back to the early 1500s.

“It’s very peaceful, like a real German village,” Edmund says. "But it's also like Disneyworld with different attractions. We've got the chapel, but we've also got a shooting range."

There's no place where Christine is happier.

“I absolutely love the vineyards; I constantly take pictures of vines, and the winery is my favorite place," she says. “It’s like the treehouse I never had when I was little, my happy space, I could be there 24/7. I never feel like I have enough time there.” Öömrang sits between the Olympic Mountains and the Northern Cascades, and its vineyards reflect a unique balance between nature and cultivation and are a testament to the unique harmony of nature and meticulous cultivation. They benefit from a micro-climate that is a rarity in the Pacific Northwest, featuring less rainfall, milder winters, and ideal summer temperatures suitable for German varietals.

The wine's exceptional quality results from a convergence between nature and process. The soil and climate are ideal, but the Stoecklein’s unwavering commitment to perfection in every last detail of the process distinguishes their product.

Öömrang has, for example, a fully automated and highly sophisticated bottling line, imported from France. This features a unique bottling process, from initial delivery of the empty bottles to packaging and shipping. Some of the things of particular note are a complete wash of the bottles before further processing, a nitrogen purge to remove all of the oxygen from the empty bottle, a filling process that pampers the wine, a vacuum system that ensures that every bottle is filled to 750ml and a second charge of nitrogen that is added to the top of each bottle before it is sealed with a glass cork, which is much better than some of the other closure types.

From there, the bottles go through the labeling line, which includes a gold capsule over the glass cork and a beautifully embossed label. They are then boxed up and ready to ship.

“We wouldn’t know how to do it any other way,” Edmund says. "From the glass corks to our wine cellars' exact 70% humidity to the cultivation and bottling, no detail gets overlooked. It’s meticulous, every step.”

And that culture of meticulousness extends to the employees as well.

“There’s no ‘that’s not my job’ mentality here,” says Christine. “We’re all a part of a process where every detail contributes to the pursuit of that perfect bottle of wine. We take ownership, we take pride.”

“We’re rules followers, and it all gets back to that attitude of perfectionism,” says Edmund.

The Stoeckleins are more than eager to demonstrate the result of their passion. When a writer mentions that he has not had the opportunity to sample an Öömrang wine, the response is immediate: “Give me your address.”

The next day, a large box arrives at the writer's home, and six glowing bottles of wine emerge. The bottles are sleek, elegant, and almost athletic. As promised, the glass cork is unique, and the labeling is bold but refined. The wine itself? In a word, exquisite.

The Stoeckleins exclusively employ the cane pruning method, which is the best foundation to deliver nutrients and ensure the best berry quality.

Tilling the vineyard rows is a constant process over the spring and summer to minimize weeds and refresh nutrients. No harmful chemicals are used, and fertilizers consist of natural organic compounds, such as chicken manure from their own farm's chickens. Professional contracted landscapers help maintain the expansive grounds and assist during periods of high workload, such as pruning and harvest. The attention to detail extends to the vineyards' strict north/south orientation for maximum sun exposure and machine and hand deleafing to ensure optimal exposure of the berries to the sun. Öömrang uses strictly top-notch German equipment in the vineyards and wineries for soil tillage, harvesting, pressing, and processing. In the production line, grapes are hand-picked at the peak of ripeness, pressed, fermented, and filled into beautiful clear glass bottles with a clear glass cork utilizing a beautifully designed, custom-made French bottling line. While the glass cork and its embossed medallion add expense, the Stoeckleins feel the glass cork is elegant and provides the best seal to preserve their wines' freshness. The winery implements food-grade commercial standards, with stainless tanks, piping, and triple stainless sinks. Öömrang cultivates four white wine varietals, including Müller-Thurgau, Siegerrebe, Sylvaner and Kerner, on 14 acres with about 12,000 carefully tended vines. This results in a strictly limited production of approximately 7,000 cases per year.

The Sylvaner grape has a record that dates back to 1659 and is grown in Franconia and the Alsace.

It takes its heritage from Roman wild vines and closely resembles the Traminer grape.

Recent knee and back ailments have forced Christine to scale back some of her hands-on approach to the working vineyard. She no longer

weeds by hand or hops on the tractor to plow. But the Stoecklein’s love of wine, Öömrang, and the ongoing pursuit of perfection will never dim.

“It’s who we are,” Christine says. "It's just how we do what we do, and we wouldn't have it any other way."

This difference is not just academic lingo—it drives legal definitions and how cannabis products are used.

he Champs Trade Show, a Counterculture B2B Expo, has been holding expos since 1999 and returned to Las Vegas, taking over the Las Vegas Convention Center for three days. It was vibrant was held Feb.1215. The enthusiastic trade show exhibitors demonstrated over-the-top exhibits showcasing beverage products for the counterculture space.

The trade show highlights the growing cannabis industry and all elements of that commercial space, including sellers, buyers, off-premise, and legislation. This is the premier B2B trade expo for 420 industries.

It covers beverages, vapes, CBD, glass, and many other different products.

On display were smoke shops, vape shops, medical dispensaries, adult stores, C-stores,

CBD wellness, gas stations, licensed cultivation, hydro/trimmer stores, tattoo shops, and clothing stores. Most surprising this year was the abundance of pet products available in all forms to help calm anxiety in our furry family members.

The alternative infused beverage trend was alive at Champs this year, with hundreds of brands excited to participate in the upcoming PR%F Awards Infused competition.

ambero Rosso returned to the United States for the highly anticipated Tre Bicchieri, Top Italian Wines Roadshow, and Vini D’Italia Tours.

The Italian-based company is one of the ultimate authorities on the best Italian wines, publishing the prestigious Vini D’Italia Guide featuring very top Italian wines with the Tre Bicchieri designation.

The Tre Bicchieri shows brings these award-winning producers and wines to markets around the globe and stopped in Las Vegas at the Ahern Luxury Boutique Hotel on Feb. 24.

Gambero Rosso also hosted masterclasses; an incredible

opportunity to taste a series of wines from the top Italian wine producers, getting in-depth knowledge of each wine and its producers.

More than 70 expert tasters comprise the team that blindtastes over 45,000 wines annually, rating them on a scale of one to three glasses (bicchieri).
