The Japanese have a term called shinrin-yoku – forest bathing. It’s the practice of mindfully immersing yourself in nature, in order to improve physical and mental wellbeing. Find shinrin-yoku during a stroll through Boranup Forest, or as you wind under the towering Tingle trees in WalpoleNornalup National Park. A barefoot wander along the shores of Yallingup Lagoon, with waves lapping at your feet, is perfect if you’re struggling to feel grounded, while an amble between peppermint trees along the bush track stretching from Castle Rock to Meelup Beach in Eagle Bay invites you to reconnect with the simplicity of nature.
Nothing quite resets the mind, body and soul like a refreshing ocean swim. Luckily, there’s no shortage of spots in the South West to take a dip. Eagle Bay offers up picture-perfect views of white and turquoise blue, while its calm, shallow and crystalclear waters are ideal for swimming, snorkelling and paddleboarding. Bunker Bay, a little further down the way, is just as idyllic and exudes a beautiful sense of seclusion (and the brekkie at Ilma Beach House afterwards, prime views included, is a bonus inclusion). You’ll love diving into the turquoise-green water at Denmark’s Greens Pool, a natural swimming pool shaped by a ring of large granite boulders, but if you’re looking for a beach that’ll transport you far, far away, head to Little Beach near Albany.

Visit a local farmers market (we love the Margaret River and Albany Farmers Markets), fill your baskets with fresh ingredients, and meander home. Allow yourself to cook with heart, not haste, and eat to savour. Not a fan of cooking? Lucky for you, the South West is home to some of the state’s best chefs and producers, who create experiences that not only celebrate local produce, but connect you to place, nature, and the people you’re with. Like a farm-to-table feast at Glenarty Road, a six seasonsinspired 6-course food and wine pairing at Yarri, and even eating fish and chips while watching the sunset at the Busselton Foreshore.
Holiday schedules can fill quickly, even unintentionally. Build in an intentional pause – slowly sip a cuppa, read a chapter of a book, run the bath you never run, or simply sit still long enough to notice the shift in the breeze. 150g (1 cup) Kalamata olives, pitted 25g anchovy fillets 3 garlic cloves 25ml olive oil

1 baguette, cut into 12 slices 1 garlic clove 1 tin sardines in olive oil (or you can pickle your own) 2-3 sprigs of dill 1 pickled onion, sliced into rings Cracked black pepper
Method

For the tapenade, process olives, anchovies and garlic in a small food processor until finely chopped, then gradually add olive oil until smooth. Season to taste and set aside. Toast the baguette under a grill, turning once (1-2 minutes each side). Rub with the garlic clove. Place 2 sardines onto the baguette, top with the tapenade, onion rings, a few sprigs of dill and some cracked black pepper. Eat.

1 tsp lemon myrtle powder Juice of 1 lemon 1 tsp local honey 1 tsp dried dill 1/2 tsp Aleppo pepper 20ml olive oil

1 blood orange, skin off, sliced 1 lime, skin off, sliced 1 lemon, skin off, sliced 1 shallot, diced finely 2 garlic cloves, diced finely 6 mint leaves, sliced thinly 10ml apple cider vinegar

Mix all of the prawn marinade ingredients together. Toss prawns to coat. Skewer prawns, ready for the barbecue. Heat up the barbecue. Char the citrus slices for 5 minutes. Allow to cool, then roughly chop. Combine the citrus slices and other salsa ingredients together. Season to taste. Set aside. 6. Cook prawn skewers on the barbecue. If possible, hang the edges of the skewers off the barbecue to avoid burning. 7. Cook for 3 minutes either side, or until cooked. 8. Plate up prawn skewers with a big squeeze of lemon. Top with the burnt citrus salsa. 9. Serve with a glass of Marq Wines’ fiano or a dry rose.

“I always make vegetarian nachos on holidays because they’re easy, delicious, and everyone loves them. Holidays for me are about relaxing and not spending hours in the kitchen, and nachos are perfect for that. I just throw together corn chips, beans, cheese, avocado, salsa and whatever else I have on hand. It’s colourful, fresh, and fun to eat. I love that everyone can grab a plate and share - it feels casual and festive at the same time. That’s why it’s my favourite holiday/family recipe.”

1 tbsp olive oil 100g brown onion, finely diced 3 large cloves garlic, finely chopped 400g tin diced tomatoes 400g tin kidney beans, drained and rinsed 1 tbsp tomato paste salt and pepper 170g corn chips 200g tasty cheese, grated 1 large avocado, diced 200g cherry tomatoes, halved 40g red onion, finely chopped 1 handful fresh coriander, roughly chopped 4 large dollops Greek natural yoghurt 150g salsa 1 lime, cut into wedges

In a frying pan, sauté onions and garlic in oil until browned. Add tinned tomatoes and kidney beans, cooking for a few minutes on high. Season with salt and pepper. Continue to cook on a high heat until liquid reduces, stirring occasionally. To further soften the onions, add half a cup of water to the pan and continue to simmer on high until liquid reduces. Preheat the oven on 180°C. Layer the corn chips in a baking dish. Top with tomato and bean mix and then top with grated cheese. Bake in the oven until the cheese melts. Remove from oven. Garnish with avocado, cherry tomatoes, red onion and coriander. Dollop with yoghurt and salsa and serve with lime wedges.

“This dish, which has been a Rustico menu staple for 15 years, is so easy to prepare at home. And when it’s cooked just right, it really balances on the pivot between sweet and savoury, dessert and mains – bringing the meaty texture of sauteed mushrooms, the crunch of toasted, day-old sourdough and the richness of the cream together to hit all the texture nodes.”

30ml canola oil 100g mushrooms, sliced 200ml pouring cream 30ml sweet cooking sherry 60ml Pedro Ximenez Sherry (PX) 50g butter Salt, for seasoning 4 slices sea-salted, toasted or char-grilled sourdough

In a hot pan, sauté the mushrooms in canola oil until sealed. Deglaze the pan with the PX and the sweet cooking sherry, reduce to a sticky glaze. 3. Add the cream, and reduce back to a smooth semi-thick consistency. Season with salt and mix well. 4. Stir through butter at the very end for a shiny, viscous finish. 5. Serve on a plate with the toasted sourdough and mushrooms in a bowl. Recipe Notes Ensure sauce is saucy enough for ease of sharing, bread slices are generous enough, and the final cream is reduced (it shouldn’t be watery).
