elcome to The Coffee Lover’s Guidebook – a celebration of the Australian coffee industry and a sample of what’s to come at the 2022 Melbourne International Coffee Expo (MICE).

It’s been a long time between drinks – coffee – that is, and while three long years have slipped by due to a global pandemic, the return of MICE is set to be bigger, better, and more rewarding than ever.

If you’re a coffee professional, then this expo will be a giant reunion of industry friends, colleagues, and business relations. MICE is your onestop-shop to the latest and greatest technology circulating the global coffee industry, and a chance to do business with more than 170 exhibitors under the one roof.

MICE launched in 2012 with the purpose to connect buyers and sellers, and bring industry members together in the one space annually.

elcome to the 2022 Melbourne International Coffee Expo (MICE).

It feels so good to be back.

After more than three years, two postponements, and a global pandemic, I’m thrilled to finally see the industry back in Melbourne for what is a must-attend event for the coffee industry.

When MICE began back in 2012, we wanted to create an annual event for the Australian industry to connect with buyers and sellers, and unite in a dedicated space at the one time. It has become so much more.

From the beginning, MICE was Australia’s first and only coffeededicated trade show. With so much of the coffee community brought together yearly, the opportunities to generate businesses, to start partnerships, and for the coffee community to connect has only grown.

MICE is now an annual event, and provides an anchor point for international guests to connect with new and existing Australian customers.

It has become the largest coffeededicated trade show in the Southern

Hemisphere, featuring the very best of the Australian and international coffee scene, and this year, as host of the World Coffee Championships, Australia becomes the only country outside of the United States to host the World Barista Championship and World Brewers Cup more than once.

In addition to the two competition stages, this year’s expo boasts two Roasters Alleys and the brand new Roasters Marketplace, giving you more choice of blends and single origins than ever before.

You can also visit our expanded Origin Alley to learn more about where our favourite bean comes from, and who lovingly tends to it to create perfection.

MICE2022 will also showcase the very latest innovations from equipment and specialty beverage companies as part of the Product Innovation Awards.

ear friends and colleagues in the specialty coffee community, it is great to be back in Melbourne for MICE2022.

We at the Specialty Coffee Association are excited to be a part of this important gathering of specialty coffee professionals from around the globe, and to share the opportunity to reconnect with the Australian specialty coffee community. Australia continues to trailblaze as a market innovator and leads by example showcasing a long-established espresso culture, and an outstanding cultural appreciation for specialty coffee.

We are so excited to see the World Barista and World Brewers Cup Championships return to Melbourne for the first time since a historical event in 2013. A lot has changed since then, but there is no bigger opportunity to celebrate the resilience of the coffee community in Australia and around the globe than through experiencing the return of competitors and visitors to Australia and Melbourne in particular. I hope you share the enthusiasm with me by following the action on the @worldcoffeechampionships Instagram, and participate using the

hashtag #MelbourneWCC. I encourage you to network, enjoy and build relationships during the week of MICE, as we reconnect with the global specialty coffee community. Our friends and partners at Prime Creative Media have developed MICE as one of the AsiaPacific region’s most recognised coffee events. They continue to

tie the global coffee community together through hosting this event and continuing their commitment to hold World Competitions.

Personally, I am looking forward to experiencing the vibrant Melbourne coffee scene and reuniting with coffee friends. I look forward to seeing you on the show floor and in the competitions area.

There is no greater place to celebrate the shared love of coffee and to host the World Barista and Brewers Cup Championship for 2022 than in the coffee capital of Australia.

I can’t espresso how superb it is to have Melbourne hosting the largest dedicated coffee show in the Southern Hemisphere after two tough years of COVID-19 interruptions.

like home ravelling to origin is a bucket-list ambition for many coffee professionals.

It’s a chance to connect to the earth responsible for producing coffee cherry trees and the farmers who work tirelessly to prepare a product that is worthy of the high standard consumers demand. But the destination doesn’t have to be overseas. It can be celebrated right on Australia’s doorstep.

Thanks to an ample amount of accessible land, moderate climate and rich soil, Zeta’s Coffee Founder Zeta Grealy says there are many reasons why Australia is an ideal place to grow coffee.

“One reason we are able to produce such delicious coffee is because of the disease-free nature of Australian coffee. Australia is one of the few regions in the world that is free of the deadliest coffee diseases, Coffee Berry Borer Disease and Coffee Leaf Rust.

This means that Australian coffee is pesticide free and most farmers use sustainable growing methods,” Zeta says.

Zeta’s Wirui Estate coffee is grown in the volcanic soils of the Northern Rivers of New South Wales, just 30 minutes from Gold Coast Airport.

The attributes of the coffee produced are full bodied and smooth, with chocolate and spice flavours.

Northern New South Wales has one of the best climates for growing coffee due to its subtropical environment.

Australia doesn’t have high altitudes like Ethiopia, where coffee typically grows better, however, the lower altitude still produces tasty brews as temperatures are not as high as equatorial countries.

While the conditions for coffee growing are ideal, Zeta says the Australian coffee growing community is still a small one due to the many barriers to entry.

“A small number of people are prepared to make the effort in an area where the cost of production is high and few resources are available, such as harvesting contractors and centralised processing resources,” she says.

Among the most commonly grown Arabica varietals in Australia are

Kenyan varieties that are more suited to the drier Australian climate, such as K7 and SL6.

“The cultivar in New South Wales is mainly the K7 varietal, which has proved to grow too tall with too many lateral growths. This requires intensive pruning on a regular basis, increasing the workload and cost of production,” says Zeta.

She says many Australian growers are hoping for a newer cultivar to emerge through a World Coffee Research (WCR) trial.

The Australian Subtropical Coffee Association (ATSCA) has partnered with the Southern Cross University (SCU) to assess 29 international cultivars established for the WCR International Multilocation Variety Trial (IMLVT) in Alstonville, New South Wales.

the ATSCA and Creative Director and Coffee Roaster at Zentveld’s Coffee in Newrybar, New South Wales, says the aim of the trials is to identify a suitable semi-dwarf replacement cultivar for K7 that meets the requirements of growers and builds confidence in the Australian coffee industry.

“We began the trials in 2019, and plan to assess bean quality over multiple seasons for at least five years.

Plants are monitored and assessed for overall agronomic performance by the SCU Plant Science team, with the trial plots currently being harvested by hand from August to September 2022,” says Rebecca.

Twenty-nine of some of the world’s best coffee cultivars are involved in the long-term trials.

“The project will source and evaluate new Arabica coffee varieties which are of high quality, high yielding, rust resistant and on maturity reach a physical size that is suitable for machine harvesting without the need for frequent pruning,” Rebecca says.

She adds that ASTCA looks forward to conducting the next round of tastings, which will progress to the selection criteria of the coffees.

“There will be more opportunities for professional tastings next year in Melbourne, Sydney and Brisbane.

Working in conjunction with the SCU, professional tasters and roasters will be welcomed to evaluate existing local varieties with the newer varieties that we have selected, so we have industry approval of which cultivars are the most favourable,” Rebecca says.

“While I won’t disclose just yet which cultivars we’re leaning towards in case opinions change, I can tell you four or five varietals are looking very promising. Once we go through these next couple of years of assessing the select varietals’ performance based on preferred criteria and quality indicators, we can determine exactly which

varietals would be most suitable for Australian coffee production.”

Once the trails are finished and three to five optimal cultivars have been selected, ASTCA and SCU would like to continue research with the WCR and select three to four Australian farms located in optimal growing regions in Australia to see how the crops produce in farm condition.

“We want to represent all coffee growing regions of Australia and are looking to expand the range of regions to New Zealand and Western Australia, so we can represent all growers with suitable varieties for the future,” says Rebecca.

One Australian coffee farm eager to be represented and help put the Australian coffee industry back in the spotlight is Skybury. Based outside of Mareeba, Skybury is Australia’s oldest commercial coffee plantation, and the largest exporter of Arabica coffee beans.

“Australia has only been producing coffee for 40 years, and it’s still a very small industry within Australia. You can count the number of farmers out there,” says Skybury General Manager Candy MacLaughlin.

“As with any emerging industry, there’s challenges around supply and demand, and importing equipment

from overseas. What makes it unique is flipping all of that on its head, specialising in the field and creating a taste profile that’s unique to your region within Australia.”

Located on the top of the Great Dividing Range, approximately 520 metres above sea level, Skybury has well drained soil, no frost, and an annual rainfall of around 800 millimetres per year. This provides the ideal climate for growing its Bourbon variety of Arabica coffee.

“We’ve been growing red Bourbon since the inception of our farm. We’ve dabbled in other varieties, but really want a plant that’s high yielding and can handle being grown in a highly commercial environment,” Candy says.

She says the global pandemic has created an opportunity for Australian growers to capitalise on the absence of overseas imports and put their own local produce in the forefront.

“Australia is often overlooked as a local supplier, so this was a chance for Australian growers to showcase what’s here as people turned to what was available within our country. Slowly, bit by bit, we’re raising awareness and over time, hopefully people will start asking for it more and more,” Candy says.

“That’s the ultimate aim, for people to ask for Australian coffee.”

One fateful moment & the

land I now call home

By Pete Licata outside of the main hall, with the competition and grandstands in an adjoining building. It was like a coffee wonderland.

Backstage, the competitor room was bustling and packed with people.

The competition itself was intense, which didn’t leave me a ton of time to really experience the show at large.

What I did love more than anything about MICE that year, was the buzz.

The energy of the people in that big top tent in a land that was altogether new to me. The excitement from the crowds, the competitors, and even exhibitors. It was all so new and

exciting that the week seemingly lasted a month.

After that fateful moment of the winners’ announcement, when emcee Stephen Leighton called my name in his iconic red suit, and what felt like an eternity of smiling for photos, things started to sink in. I made it to my hotel to rest before heading to a fantastic carnival-themed after party. The night ended too early from my estimation, but the fatigue came in even earlier.

Hyper focusing on competition for months tends to take a lot out of a person and after the big event was actually over, I was ready to crash.

t is the 26th of May, 2013.

My heart is racing, the roar of the crowd feels deafening. I’m in a space where time stands still.

This was the moment that I find so difficult to describe.

Standing next to Matt Perger as the top two finishers of the World Barista Championship (WBC), I wait for that final announcement, one which would ultimately change my life.

That moment will be forever etched in my memory, but it was just the exclamation point on top of a bigger experience.

I had never been to Australia before the WBC trip in 2013, and coming from the United States, it felt like an incredibly exotic place to visit. That year we had “barista buddies” to help out, essentially a local coffee person who could help show you around and find any ingredients or gear you might need. My barista buddy was Jade Jennings, who introduced me to the company she works for, Veneziano Coffee Roasters. Veneziano were kind enough to let me do some practice for the competition in their space, and we quickly developed a friendly comradery.

Once we arrived at MICE, I knew it was going to be quite the event.

That year, the expo was held at the Melbourne Showgrounds, and there were additional tents set up

My real celebration came the next day (I would say morning, but let’s be honest here), with a tub of honeycomb ice cream and a TimTam slam using my competition coffee. Don’t judge me.

After arriving back home in Kansas (The Wizard of Oz joke seems appropriate here), the win really did sink in. I had finally won the World Barista Championship, and I had a trophy that proved it! While I didn’t get people calling nonstop, local press and opportunities started to come in.

The following year was a whirlwind.

I started consulting and coaching competitors, gave lectures on competitions and professional development, and travelled extensively. I came back to Australia often to coach Veneziano competitors and stayed connected to the company too. Seeing countries around the world had always been a goal of mine.

I love experiencing other cultures, foods, and traditions that are not what I grew up with. There is beauty in diversity that I sometimes find hard to describe, and it’s stuck with me ever since.

I often came back to MICE shows in subsequent years, and began to feel at home in Melbourne. Australia stopped being an exotic mystery and became a fun, friendly place. Over time, I started having discussions with Veneziano about potentially moving to Melbourne.

It was a monumental decision to make, especially considering that I now had a family to provide for. My wife was supportive though, and we decided to go for adventure. So in May 2019, we made the move to Melbourne and I took a full time position with Nomad Coffee Group (Veneziano’s parent company) as Research and Development Coffee Consultant.

Not too long after moving I learned that WBC would once again be at

MICE in 2020, and started planning how to make the best of it. Of course, the world had other plans, and it ended up being postponed. Luckily, we get a second chance, and I’m looking forward to welcoming people from around the world to the city I now call home. I hope to see you here, and hope you enjoy your time here as much as I did.

And to our soon-to-be announced winners of the WBC and World Brewers Cup, you will find yourself on a stage with your heart racing, time

standing still. You may feel like it is all a blur, or perhaps find it hard to describe, but it will change your life.

So, relish your moment, and make the most of it. You have earned it.

The real stars

of the show he World Barista Championship (WBC) gives coffee professionals from around the world a platform to showcase their expert knowledge and high-level skills.

But to do so successfully, competitors must first source a highquality coffee that will stand out on the world stage.

According to Colombian coffee estate La Palma & El Tucán Founder Felipe Sardi, there are many factors that need to be considered when sourcing coffee for worldwide competitions.

“The most important characteristics of a WBC worthy coffee is a coffee that is complex and outstanding, yet clean and simple enough to be easily described and admired,” says Felipe.

“Its main attributes should be sweetness, acidity, texture, and after-taste, and it must present itself to the barista and the judges in a very consistent and honest way, helping them share and enjoy a simple, yet unique flavour experience.”

To ensure its coffee is of the highest quality, the La Palma & El Tucán farm documents every step of the farming process and analyses the impact each variable may have on the final score.

“We then apply changes to improve our methods and achieve better results. We do this by using data from

the past seven years of harvests and processing exercises,” Felipe says.

“Once the coffee is processed and has properly rested, our quality control team grades and cups it several times to assure that it complies with the client expectations on physical and sensory attributes. This is also a critical step in achieving great quality coffees.”

La Palma & El Tucán doesn’t limit its production to competition-only coffees, however Felipe says it’s highquality coffees, such as its Heroes and Legendary Series, are what competitors usually select for their top competition coffees.

in South Korea used a Sidra coffee varietal from Felipe’s estate to win the 2019 WBC title.

“Jooyeon was impressed by the uniqueness of taste and intensity, but specially the balance between sweetness and sourness in the cup profile. I remember [she] produced one of the most incredible espressos we’ve ever tasted,” Felipe says.

“It represents an indescribable feeling of joy to see a barista share that level of respect and love for our work by choosing one of our coffees for their performance. We were honoured and grateful to be part of such an immense accomplishment.”

Felipe says La Palma & El Tucán has had the opportunity to work with some of the best coffee professionals in the world during the last few years and hopes to continue doing so in the future.

“Our goal is to achieve the best quality possible by working with our community and protecting our ecosystems. We believe in the power of biodiversity and in working with nature to achieve great results, especially when processing specialty coffees.”

Another producer that strives to achieve championship level coffee is Inmaculada Coffee Farms.

According to Sales Director Jorge Castro, the Colombian estate ensures every part of the production process is done at the highest possible level.

“Originally, we would conduct the planting and picking, and the rest would be done at a third-party company, until we realised that we needed to make sure no detail is left behind. Since then, we decided to have all the processes under our control and management,” says Jorge.

This includes picking the cherries at their optimal state of ripeness, before hand-sorting the beans by cleaning, floating, destoning, and removing impurities.

“We then perform the fermentation, depending on its variety, in a temperature-controlled room in sealed tanks with valves.

Once this is completed, we dry the beans through greenhouse bed drying with controlled air flow,” Jorge says.

“We measure each stage and keep temperatures below the range of 40°C. Coffee is then stored at optimal conditions to preserve the quality in grainpro bags while the room is kept below 40 per cent humidity, between 20 to 25°C. Every storage keep unit is

cupped to assure profile and score is maintained. Finally, coffee is milled in house as natural then vacuum packed in 24-kilogram boxes to facilitate stacking and preserve quality.”

Diego Campos of Colombia, the 2021 World Barista Champion, used Inmaculada Coffee for his winning routine. Jorge says he was impressed by the complexity and intensity of its Geisha and Eugenioides flavours.

“While we support all competitors that want to use our coffees in the WBC, it was extra special with Diego since he’s Colombian and represents

us as a country,” says Jorge.

Since 2021, Inmaculada has worked with four to five national barista champions every year, and Jorge says it never gets less exciting.

“We help in any way we can to ensure they excel in their presentation and uphold the superior status of Colombian coffee,” Jorge says.

“At the end of the day, Inmaculada Coffee Farms realises that there is no right or wrong formula. We learn every day from the market, our competitors, and our friends.”

I

magine putting yourself out there, taking risks, spending something obscene on beans and gear, clocking hundreds of hours on experimentation and rehearsals, all for coffee. Winning was an exhilarating validation and affirmation of the challenge I took on.

Back then (in 2005) people had stereotypical notions on who could make good coffee. Being Asian and female, even though I was pretty skilled and cluey, I was constantly questioned and underestimated.

Worse, people would look into the café, see me, and move on to a place where a tall, olive-skinned guy in a black t-shirt toots the steam wand. I needed to build some cred if

I was going to ever succeed in this industry.

Entering barista competitions and doing well was clearly one way to do it.

The dream of winning added fire to the belly. But the creativity and sheer attention to detail extended my repertoire as a barista.

Being announced the 2005 National Champion was utter disbelief at first, as it was my first year of competing, and I was up against seasoned competitors. It became a crazy buzz after the realisation set in.

Though the euphoria didn’t last too long as the preparation for subsequent competitions quickly took over. But it forever cemented my relationship to coffee. Competing made me realise how much my destiny is with

coffee, but it also taught me the resilience and gumption to make a worthwhile living out of it.

2002 & 2003 Australian Barista Champion & 2003 World Barista Champion

M

y experience of competing in the Australian Barista Championship was really exciting and challenging, it pushed me to explore all the links in the quality chain and their relationship to the potential sensory experiences that espresso could be.

As a passionate young barista, I was ecstatic to win the 2002 and 2003 Australian Barista Championship. I definitely felt the greatest pressure competing the second time as I’d learnt so much from not achieving my goal the year prior and what it was now going to take to seriously have a chance of winning the World Barista Championship (WBC). It came down to executing it and

making it stick when it mattered.

I knew that by succeeding at the WBC, it would have a positive effect on many aspects of the specialty coffee movement at that exciting time. Winning was without question a sliding doors moment. It opened up many exciting possibilities that I couldn’t have imagined in my wildest dreams. I’m grateful to have been able to work with like-minded individuals and companies that have shared a vision to do something better and continually strive to improve. This was my ethos and continues to this day with my business vision.

My advice to the next WBC champion is to recognise that you are in an extremely unique and privileged place, of exceptional

influence and opportunity, especially for the next 12 months. Put a plan in place and use the time wisely. Your voice has the power to reach more people than ever before.

2006 & 2008 Australian Barista Champion

W

inning the Australian Barista Championship in 2006 and 2008 was an all-consuming experience, something that took over all parts of my life. I lived and breathed the competition for a long time, training, travelling, tasting, and pushing myself to be the best.

Winning in 2006 was exciting and overwhelming. Winning in 2008 was different again. It was a sense of relief as it had been five years of training leading up to that point. It’s now been 14 years

since I last competed. I remember looking back at my WBC finals performance only a year later and wondering why I didn’t do things differently. That’s where the coffee championship fits into this industry, it pushes the boundaries, and we see things from WBC filter down into cafés over time.

Weighing group handles for instance is now common practice in cafes.

Winning the national title has given me a platform to launch Axil Coffee Roasters which has led to everything else I’ve been able to achieve over the past 10 years.

When MICE hosted the WBC in 2013, it

was an amazing event, but the thing that stands out to me, is the people that come from all over the world to visit.

ompeting opened the doors to knowledge, learning, friendships and was a stage to share my ideas. It helped me find connection with coffee and purpose within the industry.

Each of my three national-winning routines have memories for me that were powerful. In 2012, there was validation and confidence that came from winning, but it was also the start of my exploration of coffee at origin and processing influence on flavour. In terms of command and control, 2014 was my strongest, most complete

performance. I used one of the most incredible coffees I’ve ever tasted. The fact that the unique processing method was my own design is even more memorable.

2018 was my most complex, deep, and sophisticated concept. It was also the most dense routine I’d attempted with an enormous word count. I potentially had the biggest opportunity to change the way we think about taste and coffee.

Competing has provided an opportunity to focus a lot of energy and practice towards learning coffee in minute detail. It’s a focus and attention that is impossible to

find any other way in my experience. It also gave me access to present ideas in front of the coffee industry to a large audience.

2016, 2017, 2020 Australian Barista Champion

I

competed for nearly 10 years and each year I started with a new level of competency but also a clear goal in mind for that year. 2016 I was still quite inexperienced, however, I made a few smart coffee choices and was able to get to the WBC, which was pretty overwhelming for me. The cracks appeared when I had a horror semi-final run. 2017 was a redemption year to show I had control over my coffee and routine.

I felt great that national competition and executed really well. At worlds, I was number one in the first and second round, however pushed my coffee too far in age and dropped to fifth in the final, which

was really disappointing. 2022/3 was a breakthrough year for me. I had figured out my purpose in coffee. I made some big changes and gained control over my coffee. This year, competing became more about the work I was doing and not winning which was a great experience.

Comps are such a whirlwind. I came out of every one a better coffee professional, with more skills and perspective. Through my years competing, I have made so many wonderful friends from all over the world.

Competition connected me with origin more and I’ve been able to innovate in this space, especially in more recent years.

My advice to this year’s WBC

competitors is to keep it simple! The WBC is not asking for innovation in every course.

Make it easy for judges first and foremost, keep the rest for Ted talks and focus on taste experiences as a judge.

2013 Australian Brewers Cup Champion

W

inning the nationals back in 2013 was a massive surprise because it was my first year competing. I went in with no expectations, just trying to better myself and grow as a barista and coffee professional. I’m a pretty competitive person, so I naturally wanted to do the best I could, and that year, it was enough.

I got to represent Australia at MICE in the World Brewers Cup. It was such a buzz. Being a competitor at a home event provided a unique experience. I met internationals from around the world, got to show people around Melbourne

and the great coffee on offer. It was also an exciting time for our company, St Ali, as Matt Perger and I both represented Australia at the worlds that year (Matt competed in the WBC). A lot of work went into our preparation, and although the result wasn’t what I wanted, I was super proud how I performed on stage.

Brewers Cup is the most pure competition to compete it. It’s all about the coffee, the presentation, and nothing else.

I have toyed with the idea of competing again, but I also enjoy being a mentor and celebrating my team’s success. I have never brought myself to watch my WBrC performance, but this year I’ll happily

watch and support from the sideline.

My advice to Australia’s next WBrC representative: enjoy yourself and smile.

The experience doesn’t last long so make the most of the opportunity.

2014 and 2016 Australian Brewers Cup Champion

M

y favourite memory from winning the 2014 and 2016 Australian Brewers Cup competition at MICE was the opportunity to bring my kids to the Worlds in a country that we might not have otherwise ever visited.

It meant the world to firstly be among the elite of the elite, champions of their respective countries. And just so proud to be able to represent Australia in such an event.

Competing in the World Championship is such an out of body experience. I needed to pinch myself many times to make sure I was not dreaming.

Being a two-time National Brewers Cup Champion has proven to me that this can be a lifelong career, that it’s not just an in-between job thing, but that I could be in hospitality, which I love, and still raise a family.

Since I last won the nationals in 2014 and 2016, I’ve developed so much as a brewer and competitor. The life lessons and experiences that I have gained over eight years of competing have shaped me as a brewer and presenter. I know so much more now about brewing, water and presenting.

It is significant that MICE hosts the WBC and WBrC this year. Melbourne has

had it really tough through COVID and lockdowns but having these events again just cements that we are reopening to be the coffee capital of the world once again.

2017 Australian Brewers Cup Champion

I

was in complete disbelief when I won the national championship.

I was surprised I had made it to top three at first, and even more shocked to be announced the champion that year. I remember dropping to my knees and grabbing both of my cheeks like the shock emoji when I heard my name.

Competing on the world stage was a great experience. I had a clear message I wanted to project about the key influences on my coffee through brewing that yielded that specific taste profile while stressing the importance of tailored mineral composition in your brewing water which wasn’t really being discussed in depth in routines at that time.

For everyone involved in helping me, I was proud of what as a team we achieved that year to assist in a second-place finish

on the world stage.

Personally, I don’t like the prestige/ guru idealism placed on the champion because of winning as there are so many people in the coffee community with amazing ability to have a meaningful impact on our coffee industry that will never get any title yet possess an unmeasurable talent and knowledge.

I will forever be grateful for the opportunities to represent my county and the doors that have been opened to all the amazing global coffee networks. For me personally, it was about enjoying that moment of being champion in 2017, then moving on with new goals and projects.

Given the ripple effect of Milan’s results at the last WBrC in October 2021, I think at this year’s event we will see a lot more inspiration for diversity in coffee origins utilised, and a larger amount of

people opting to create blends of many coffees in their open service rounds as opposed to a single estate. There is still the lingering influence of coffee species.

I am just excited to see everyone’s ideas and hopefully I get some opportunities to taste some of the wonderful coffees I’m sure will be served.

2019 Australian Brewers Cup Champion

I

always loved coffee competitions.

I watched them for the first time at MICE 2012 – 10 years ago!

Brewers Cup came to me as a surprise. I thought I was only going to judge the barista category but after judging all the 2018 Australian regional brewers cup competitions, and nationals, I felt inspired to give it a go. But I didn’t know how to brew! I started from a very unusual direction: understanding the rules and scoresheet, but having no idea how to produce those flavours. It was an incredible learning experience.

Winning the national title in 2019 involved lots of work and hours put into training. It took a lot of self-work to believe

that winning nationals in my first year, and being the first woman in Australia to do so, was possible. And it was. Winning gave me the confidence to tell all people out there who don’t feel they stand a chance, that the impossible can happen.

My favourite, most treasured memory from the nationals is looking at the crowd, many of them who are coffee professionals and friends. I remembered my first MICE and all the years I volunteered and pushed other competitor’s trolleys or cleaned tables on stage. In that moment, on that same stage, I accomplished my dream of being an Aussie champion.

The Worlds were incredible. I felt so much love and support of the entire

Australian coffee industry, and from coffee professionals around the world. Being able to receive the global community at MICE2022 is so important. MICE will be a great opportunity to show the global community our industry scene, not only at the tradeshow, but also in our coffee venues across Melbourne.

2020 Australian Brewers Cup Champion

W

inning the 2020 Australian Championship was a dream come true – the result of many years of hard work, passion, tenacity, and energy.

My favourite memory from the experience was the announcement day, which was on the birthday of Simon Gautherin, my coach and best friend. After all the hard work we’ve put into that campaign I was really dreaming of being able to give him a trophy as a birthday present, and we did it!

To compete on the world stage was a real dream come true. I just couldn’t believe I was on the same stage with all the guys I’d been following and watching on YouTube for years. It was a beautiful experience to

have the honour to represent the Australian specialty coffee industry. I believe Australia is the leader on most aspects of specialty coffee, and I felt the responsibility to show it to the world.

Winning the nationals was a reminder of why I work in this industry. It’s not only that coffee is my biggest passion but it’s my love and connection with coffee people. I still see lots of things that could be better, bigger, or more impactful in competitions and in the industry in general, that’s why I’ll still be taking part and contributing to make those events stronger for the next generation of competitors and coffee lovers.

Melbourne hosting the MICE and the WBrC this year is massive! Bringing the

Engaging all

home baristas ollowing the last Melbourne International Coffee Expo (MICE), De’Longhi is eager to reconnect with at-home baristas, showcasing its latest machines for the domestic coffee market. In answer to a growing interest around brewing at home, the company is also delving into the possibilities of iced coffee, with breakthrough milk texturing and cold extraction technologies on display at its exhibition booth.

“As a platform and space created for coffee lovers, this expo gives us an opportunity to engage and share with people who are just as passionate as we are,” says Cheryl Giles, Product Trainer at De’Longhi Australia.

“We’ll be doing things like tastings, demonstrations and classes, with some never-before-seen recipes on our new machines as well.”

The De’Longhi stall will be highly interactive with the team preparing an array of enticing beverages, including virgin (non-alcoholic) espresso martinis and different flavours of iced coffees to demonstrate the versatility of its new technology.

“Our main goal is to encourage a sense of fun and creativity, helping users of our products to get the most out of their beans,” Cheryl says. “After the time away, there is going to be a lot of buzz and anticipation from

everybody concerning what is new in the space, and how trends and consumer palates have evolved during the interim.”

Cheryl will personally be hosting some in-depth masterclass sessions, highlighting the full capabilities of De’Longhi’s machines and providing a hands-on experience for attendees.

Multiple award-winning Australian Barista Champion and De’Longhi Ambassador, Craig Simon, will also be making some guest appearances.

“There is going to be a wealth of expert knowledge available at the stall, so if anyone has had a burning question they’ve been wanting to ask, or are just curious about the new products that we have available, we encourage them to stop by,” says Cheryl. “We are also excited to be launching and showcasing our latest home barista machine – the Eletta Explore.”

The Eletta Explore is the first automatic coffee machine that includes two dedicated milk texturing components for both hot and cold milk foam. According to Cheryl, visitors to the expo will have a chance to experience this ground-breaking model in action, and the possibilities that come with both hot and iced coffees at the press of a button.

“Our research has shown that iced coffees are rising in popularity, but not necessarily at the cost of hot ones,” she explains. “Consumers are adding a cold version of their favourite brew into their daily routine, and

experimenting with different flavours.

This machine is for iced coffee lovers who don’t want to lose out on their ability to make a classic hot espresso drink – it gives them the capacity to do both at home, just the way they like it.”

The milk frothing technology builds on De’Longhi’s signature LatteCrema System along with other internal smarts which enable accurate temperature calculation. This system has the unique capability to texture milk at 20°C, and when this is added with coffee and ice, produces a seamless iced coffee.

“It’s the combination of the coffee being brewed at a lower temperature, then poured over the ice, and then mixed with the milk which has been textured with the perfect amount of steam at 20°C,” says Cheryl. “This

Fressko works with manufacturers that use the highest-grade materials. Hayley says this material consumes the least amount of energy during production and produces the lowest carbon dioxide emissions when compared to other materials.

Fressko products are now stocked in some of Australia’s best-known and respected cafés, which says a lot about the product, Hayley adds.

“Our cups and sleeves are allowing the coffee industry to support a more sustainable future without compromising on style. Cafés can now offer a product – often branded with their logo – that they know their regulars will love, as well as sending their brand out into the world on a daily basis with a cup that turns heads,” she says.

Help your hood or the past 12 years, national campaign CafeSmart has helped hospitality venues and its coffee-loving patrons raise money to fight homelessness.

An initiative run by charity StreetSmart Australia, Partnerships Manager Cynthia Mac Caddon says CafeSmart helps funnel Australia’s love for coffee into a good cause.

“Although we’re a small organisation based in Melbourne, we have a national impact,” says Cynthia.

“We’re all about empowering local communities to raise funds and awareness for people experiencing homelessness.”

Founded in 2003, StreetSmart spreads its funds across a range of partners that work directly with locals to provide help on the ground. In Victoria, StreetSmart has contributed funds to more than 300 organisations, including the Asylum Seeker Resource Centre and Melbourne City Mission.

“StreetSmart has achieved remarkable growth over the past three years, meaning our impact has trebled.

This is especially thanks to the coffee industry’s support through fundraising campaigns that has enabled us to grow our audience,” Cynthia says.

Since its inception, StreetSmart has raised over $9.6 million for 950 homeless and community organisations across Australia.

“The reality of homelessness is very complex and takes a collective effort from both local communities and small businesses as well as the greater

network and the government. For us, it’s not about the number, it’s about the impact, and the connections we’re forming are making a real difference, and contributing to reducing marginalised communities every day,” Cynthia says.

This year, La Marzocco Australia was a Principal Sponsor of the event, joining the likes of Vitasoy and media partners Broadsheet, BeanScene and the Melbourne International Coffee Expo to help up-scale the impact across the country.

More than 600 cafés participated in CafeSmart 2022, covering the country in the charity’s trademark yellow during Homelessness Week from 1 to 7 August. Cafés put up posters and signs, encouraging customers to donate via a QR code. Cafés were also encouraged to wear yellow and decorate their café on the last Friday of the week.

“The café industry has helped CafeSmart raise close to $2 million just by donating $1 for every coffee sold on Friday 5 August,” Cynthia says.

StreetSmart Australia will map donations, ensuring funds stay in the same area where they were raised.

Participants and generous donors will help fund vital services tackling homelessness, such as women’s refuges, medical outreach teams and youth services, and will also aid in providing emergency relief, meals, clothes, bedding, showers and much more to those in need.

After the height of the pandemic and devastating floods in Queensland and Northern New South Wales, donated funds are aimed around emergency relief efforts, material aid and support for people

most at risk of homelessness.

“When we see organisations taking part and letting us know how they used the funds and how important it was for them, that’s the most rewarding part of my job,” Cynthia says.

For cafés and roasteries that are yet to sign up for CafeSmart 2023, Cynthia recommends getting involved now.

“We’re already taking expressions of interest on our website for CafeSmart 2023, so we welcome all roasters and cafés to join the event next year and help us continue to raise funds for marginalised communities,” Cynthia says.

“We really encourage cafés to sign up to show their customers they care for the local community and the disadvantaged people within it. Support from cafés is crucial to providing funds for local, grassroot homeless charities.”

R

epresenting Switzerland in the World Brewers Cup (WBrC) in 2021 was an absolute blast. I’ve really enjoyed the responsibility and opportunities that go with representing a nation and an industry, and I love meeting people and travelling to places to do things I normally wouldn’t do.

The training time is always intense but rewarding. In particular, the last week leading up to Milan – the host city of the 2021 WBrC – was very intense, but we learnt a lot and did it as a team, and that was great. I do miss it, but I have some other competitors I’m involved with on the journey that keep me engaged.

Winning the WBrC has given me a new perspective on the industry and the people around me. A lot of

opportunities have come my way, and I’m given a better chance to do something meaningful now.

I would describe the past year since winning the WBrC as a lot of fun, and full of growth. I’ve travelled to many expos, producing countries, and started a lot of projects, particularly Rose Coffee Roasters, my new roastery.

My advice to the next winner of the WBrC is to enjoy the moment and get ready for some things to change in your life!

Going forward, I want to keep on doing good things in the world, and keep working on the roastery. I still plan to compete more in the future, and go back to the world stage.

I’ll be coming to Melbourne for MICE2022. I honestly can’t wait

to be back on home soil. It’s been almost four years since I’ve seen my family – I was born and raised in Cairns – so that’s definitely a highlight. I also look forward to visiting all my favourite cafés and seeing the amazing coffee people that come to MICE.

eing the World Barista Champion and from a coffee producing country makes me feel very special and supported because I have the opportunity to support and motivate more coffee people to be part of the specialty coffee industry.

For me, the profession of a barista involves discipline and requires a lot of dedication and commitment. Training for the World Barista Championship (WBC) helped me to be a better professional and person, but of course I miss my training and my team.

Being the World Barista Champion has given me many joys as a person, to my family, and to the company I represent. It has been a great life experience, which has allowed me to be more committed

to coffee and my profession as a barista.

I have travelled and met the most wonderful people who are in love with the coffee industry as much as I am.

What I feel has changed the most since winning in 2021, is the way the coffee industry in Colombia has become convinced of the change that we can generate by supporting the specialty coffee industry. My plan is to continue working with specialty coffee and on a family project at our farm called Diamante coffee farm. It’s a project that was born from the idea of bringing the beginning and end of the coffee chain together.

Coming back to Melbourne will be something very special for me. I lived in the city for two years where I got to meet many people, learn a lot about the coffee industry worldwide, and I also got to learn

and improve my English language skills.

My advice to the next WBC champion is to enjoy this great experience and try to leave a great legacy that will allow many more young people in the world to want to join and be part of the specialty coffee industry in any of its aspects.
