part from being the most popular food in the world, rice is a good source of complex carbohydrates. However, it is low in iron and zinc.

So, while many of the world’s poor rely on the staple for survival, they have to also consume other more nutrient rich foods if they are to avoid malnutrition.

The problem is, while they can afford rice, many in impoverished nations such as Bangladesh cannot always afford non-staple foods. Therefore, malnutrition is still a major problem.

As featured in this issue, researchers working at the Australian Synchrotron in Melbourne are looking at ways of addressing this. They are hoping to increase the amount of iron and zinc transported into the endosperm, the part of the rice grain that most people eat.

The Synchrotron uses accelerator technology to produce a powerful source of light (X-rays and infrared radiation) a million times brighter than the sun.

This light can be used to examine foods at molecular level. Researchers can investigate the proteins, fats, starches, etc. within foods with the aim of better understanding their complex structures.

And from there, their aim is to improve

production and processing methods. They hope to increase the nutritional value of rice and help alleviate malnutrition.

An impressive world class facility, the Australian Synchrotron is the size of a football field (AFL of course, given its suburban Melbourne location). Breakthroughs there involve a lot of money.

Several more low key examples of progress and ingenuity in the Australian food sector have received attention lately.

The 2016 Food & Beverage Industry Awards took place in Sydney in September.

A look at this year’s winners confirms that innovation, ingenuity, and risk taking usually play an important role in this industry’s success stories.

The winner of the Best of the Best Award this year is a perfect example. The Protein Bread Co., like most of the winners a small business, took a leap of faith, looked outside (inside?) the box and came up with a novel new way to package, present and display its Protein Bead Loaf.

This success suggests it won’t remain as only a small business for long.

Brisbane meat works finds ideal vision solution A leading Brisbane based meat works producing high volumes needed an inspection system that guaranteed speed, product integrity and accuracy. It turned to Omron, a global leader in automation solutions, for the answer.

W

hen your business supplies fresh meat products to major supermarkets and consumers across Australia, you can’t afford to get it wrong.

Products displaying illegible date codes, damaged packaging or wrongly labelled products can be disastrous for suppliers.

Through its integration partner, Pac Technologies, the meat works commissioned Omron to install a vision inspection system that would minimise the risk of sending out any non-compliant products.

“All final packaged product lines were installed with Omron’s FQ2 vision inspection cameras for traceability of all shelf ready meat products,” said Omron’s Queensland State Manager, Paul Gibb.

“The main aim was to increase productivity, while maintaining consistent, high quality standards.”

The Brisbane meat works is unique. It is a globally recognized fully integrated facility that completes a full circle in beef production including slaughter, boning, value add, retail-ready and distribution.

According to its Production Manager the site processes some 1200 head of cattle per day.

Apart from bulk meats, it also produces stir-fry and diced beef and veal, beef sausages, corned, marinated, glazed and coated beef and veal products, corned beef silverside and hamburger patties.

Stringent requirements “We currently have an annual production of over 15 million kilos for national distribution to prominent retail and supermarket shelves,” the Product Manager said.

“Due to very stringent requirements demanded by our retail distribution partners, our entire packaged shelf ready product needs to be exactly as per what is ordered and labeled as.”

The biggest challenge for any meat works is traceability. Most facilities traditionally rely on casual labour in the final packaging and inspection process.

“We turned to Omron to assist us in greatly reducing the risk of sending out non-compliant product final packaged product,” the Production Manager said.

A challenge for this application was to check both 1D and 2D barcodes at varying focal lengths on the final production line. Also there was a requirement to check and verify the date code on each shelf ready product.

Vision solution Kim Simonsen from Pac Technologies, in conjunction with Omron application engineers, created a vision solution using FQ2 machine vision cameras on each line. On some lines, two cameras were used at varying focal lengths to handle the varying heights of the target product.

The carton barcode is pre-checked to verify that the product is as expected before the individual packs are checked.

“We accessed some very powerful algorithms built in to the FQ2 camera to achieve what the customer needed to satisfy their date and barcode checks”, said Yang Qui, a senior application engineer from Omron Electronics, Brisbane. “OCR, or Objective Character Recognition was used to not only check for the presence of the date code, but actually read the text to ensure that the date code was correct and readable. The small sized 2D bar code was a challenge, and required us to employ the high resolution version of the FQ2 vision camera to obtain a reliable and accurate reading each and every time”.

Gibb said Omron is also assisting other Queensland based meat works that produce down to shelf ready product as well as bulk packs.

“There are common issues emerging when talking to each company about checking integrity and accuracy of the final packaged product and its labelling and identification,” Gibb said.

“Hundreds of different product and label variants, many types of barcodes and date codes, varying existing PLC architecture, high turnover of transient workforce, and a hostile operating environment all present a challenge to a solid and reliable vision solution.”

One of the main challenges was how to process the data once reliable and accurate judgements of the final product are obtained.

“In this instance we used our powerful and flexible NJ Machine controller with SQL connectivity and Ethernet IP to communicate directly to the customer’s database without the need for any software based middleware,” Gibb said. “Since Omron’s NJ controller has the option of Ethernet IP communications, it communicated directly with the customer’s existing PLCs, creating a seamless network from camera to database.”

Gibb said Omron’s FQ2 vision cameras are rugged enough to be installed directly on the production line in a meat works hose down environment and they have enough capacity to store more than the customer’s total product lineup and label varieties.

Omron FQ2 supports up to nine types of barcodes. Whether it’s for verification or barcode character reading, the FQ2 can easily meet customer’s requirements.

The Australian meat industry uses GS1-databar code widely and FQ2 has been successfully used for product verification and production information inspection.

2D Code FQ2 can read the main six types of 2D codes. There is no need to use more than one code reader – even for processing that combines different types of codes.

Fishing for growth overseas I BISWorld research has shown the increasing importance of lucrative overseas markets to the Australian Fishing and Seafood Processing industries. Exports are contributing more than half of total revenue for these industries at a time when Australian Aquaculture is battling with significant competition from Chinese imports.

According to IBISWorld, the Aquaculture, Fishing and Seafood Processing industries, which farm, catch and process fish, generate collective revenue of over $4 billion and support approximately 13,000 jobs across Australia. IBISWorld forecasts seafood consumption to have grown by 1.1 per cent during 2016-17, to reach 18.3 kilograms per capita. However, this is lower than in 2003-04, when peak consumption was recorded at 20.3 kilograms per capita. Tuna, salmon and trout are some of the most frequently consumed varieties of fish in Australia.

“Seafood consumption has increased over the past five years due to rising disposable incomes,

increasing concerns over health and obesity, and increases in the price of beef. As a result, many consumers have switched to alternative forms of protein. Imports from overseas nations, particularly ocean fish and processed seafood, have also continued to increase,” said IBISWorld Senior Industry Analyst, Nathan Cloutman.

“Exports from the Fishing industry are estimated to account for two-thirds of industry revenue.

Synchrotron playing key role in food research The Australian Synchrotron in Melbourne is playing a critical role in research breakthroughs that benefit the food sector including biofortification of foods, assessing the effectiveness of food processing, and determining the nutritional impact of foods. Hartley Henderson writes.

T

his world-class facility uses accelerator technology to produce a powerful source of light (X-rays and infrared radiation) a million times brighter than the sun. The intense light produced is filtered and adjusted to travel into experimental work stations where the light beams reveal the innermost submicroscopic secrets of materials under investigation.

Dr David Cookson at the Australian Synchrotron explains that basic ingredients in food are highly complex in nature - a ‘mishmash’ of different proteins, starches, and fats, mixed together in a highly complex way.

“The Australian Synchrotron’s unique capacities and capabilities allow Australian researchers from across academia and industry to unravel these complexities by investigating materials at a molecular level to facilitate processing and production improvements. Longerlasting products can be created, a better understanding of quality control can be generated, and certain nutritional characteristics can be boosted or reduced,” he told Food & Beverage Industry News.

“The reason the Australian Synchrotron is so important to any of these improvements is it provides highly accurate, objective data on any material modification, using the powerful X-ray beam to produce visualisations of unprecedented detail.

“For example, there is great opportunity in synchrotron food research related to dairy products.

A team from CSIRO Food and Nutrition has used the Australian Synchrotron to examine the structure of casein micelles, which play a significant role in the ideal consistency and stabilisation of milk-based products.

“Understanding the nanostructure of micelles through the Small and Wide Angle X-ray

Scattering (SAXS/WAXS) beamline provided new understanding of how the size and number of micelles within a component of cow’s milk can affect how efficiently the milk is processed into products such as powdered milk and hard cheese.”

Rice projects In a rice project currently underway, plant biologists have used gene technology to increase the amount of iron and zinc transported into the endosperm, the part of the rice grain that most people eat.

The Australian Synchrotron’s X-ray Fluorescence Microscopy (XFM) beamline was used to produce ‘metal maps’ that accurately track the diffusion of key nutrients such as iron and zinc at sub-micron resolution levels without damaging the rice grain’s internal structure.

Dr Alex Johnson from the University of Melbourne’s School of BioSciences, who is the Australian lead of the project, says that white rice is very low in iron and that some

two billion people suffer from iron and zinc deficiency.

“The aim of the project, which is in part funded by HarvestPlus, is to develop a biofortified rice that is high in iron and zinc, demonstrating that by manipulating rice plant genes, rice plants can translocate more iron and zinc to the endosperm,” he said.

“When rice is milled it loses the outer layers of the grain where much of iron and zinc is located, but the powerful synchrotron was able to show that the nutrients were translocated deeper in the part of the grain that is not affected by milling.

“The biofortified rice that we developed in the project has now been successfully tested in the Philippines and Columbia under highly controlled conditions.

HarvestPlus is now seeking funding to further develop and de-regulate this transgenic rice for sale to farmers, possibly in Bangladesh, and possibly in five years from now if these research activities go well.

iron content, so there are significant opportunities to further utilise the synchrotron to show the extent and location of nutrients in additional grain crops such as wheat.”

Director of HarvestPlus, Dr Howarth Bouis, recently won the World Food Prize for his team’s pioneering work in addressing the global problem of micronutrient deficiencies, known as hidden hunger, through biofortification.

He says people suffering malnutrition often can afford to eat the basic food staples but do not have enough income to buy non-staple foods which have higher levels of minerals and vitamins. As a result, many suffer from inadequate intakes which cause serious health problems.

“It is cost-effective to breed nutrients into staple crops to address mineral and vitamin deficiencies.

With respect to iron in rice, we were unsuccessful in using conventional breeding techniques, but we have been able to do this by using a transgenic approach to increase the

“We have already released over 150 conventionally-bred varieties across 12 biofortified crops in 30 countries, and are testing these varieties in an additional 25 countries around the world. We are hopeful that as many as one billion people will benefit from biofortified foods by 2030. High iron and zinc transgenic rice eventually could contribute significantly to this ambitious goal.”

In another rice project, researchers from the NSW Department of Primary Industries have used the Australian Synchrotron to compare parboiling techniques, showing that longer parboiling processes at higher temperatures cause more micronutrients to migrate from the outer bran layer into the starchy core of the grain.

Dr Laura Pallas, Rice Chemist at the NSW DPI, says changing global rice processing and eating habits is an enormous task. “There are deeply entrenched expectations across various cultures around desired texture consistency and flavour, including different approaches to parboiling and cooking,” she said.

“Advances in this area are important because rice is the closest thing we have to a global dish and it is gluten free and a good source of complex carbohydrates.”

Meat quality The quality of meat, such as tenderness and intramuscular fat in lamb, is currently graded by mechanical and chemical tests, but obtaining that information in a more timely way in the abattoir has eluded the meat processing sector.

Therefore, the Australian Synchrotron has been involved

in a research project to provide information on meat quality aspects such as tenderness and intramuscular fat content.

The project was led by the Victorian Department of Economic Development, Agriculture Victoria Division (Dr Eric Ponnampalam), in collaboration with the NSW Department of Primary Industries (Dr David Hopkins), the University of Melbourne (Prof. Frank Dunshea) and the Australian Synchrotron (Dr Nigel Kirby).

Drs Ponnampalam and Hopkins say the research is exploring new approaches to measuring meat quality that may have applicability within the processing sector, thereby providing rapid information on the suitability of meat to different sectors of the supply chain.

“The Synchrotron’s Small Angle X-ray Scattering (SAXS) beamline technology was used to investigate differences in muscle fibre and/or fat, which can influence the eating quality of meat,” they said.

“The project results demonstrate that these technologies could be powerful research tools in the future to determine not only the structural components of muscle, but also the composition of muscle relating to eating quality traits of meat.

“In addition, the synchrotron SAXS beamline technology presents a promising opportunity to determine carcase toughness or tenderness and relative fat content and could be a useful experimental tool, overcoming the need for destructive sampling techniques.” They said the method requires significant further development to be utilised in the processing sector.

Cool solution cuts the angel’s share in barrel halls A

barrel hall cooling system designed to efficiently maintain ideal temperatures and raise humidity is robbing the wine gods of the ‘angel’s share’.

South Australian air conditioning manufacturer Seeley International is enjoying global success with its Climate Wizard Supercool systems, which have been specifically designed for the wine industry.

So far the Adelaide-based company has installed about a dozen systems in wineries across Australia, the United States and South Africa.

General Manager of Commercial Sales, Michael Hamilton, said the key features of the systems were their indirect and direct evaporative sections that allowed desired storage temperatures of 16°C – 18°C to be achieved while increasing air moisture to 60 – 80 per cent relative humidity.

He said the Climate Wizard was also up to 80 per cent cheaper to run than equivalent refrigerated cooling systems.

The systems are aimed at New World wineries that store their barrels in sheds and warehouses rather than underground cellars.

“When we looked at where we wanted to take this winery campaign in our global market we’ve considered this product in the American and

South African markets but not so much in Europe because a lot of barrel halls are underground there and they maintain pretty consistent temperatures without a lot of assistance,” said Hamilton.

“We’re finding that when we go and talk to some of these wineries and survey their sites, the barrels at the top of the wine hall can reach up to 32°C during our summer period.

“We’re creating interest with this technology because we are able to create the conditions the winemakers are looking for at a very low operating cost.”

The ‘angel’s share’ is a winemaking term that refers to the amount of wine that evaporates out of a barrel, potentially affecting quality and forcing barrels to be “topped up” during maturation. The angel’s share is generally higher when barrel room temperatures exceed 18°C and when humidity is low.

Hamilton said Seeley was looking to ramp up production of the Supercool units at its South Australian factory on the back of a flood of inquiries received at last month’s Australian Wine Industry Technical Conference in Adelaide.

“Ultimately, if they reduce that angel’s share effect, which means they don’t have to top up as much, they would be aiming to deliver a higher quality of wine and more volume,” said Hamilton.

Efficient solutions for fresh produce cooling When Lindsay Fresh Logistics approached Bruce Townsend, a Director of Cool Dynamics (QLD), about updating their primary distribution warehouse at the Brisbane Markets, he got Bitzer involved.

L

indsay Fresh Logistics needed to update their refrigeration at the Brisbane Markets to handle increased product throughput, different operating conditions and deliver improved operating efficiency.

The Brisbane Markets site had performed reliably over the last twenty years using Bitzer open drive screw racks, Buffalo Trident LDV condensers and Thermfresh air handlers, however this system no longer suited the proposed operating requirements. It also utilised an operating charge in excess of 2,000kg of R22, contained in just three systems, and was going to become dramatically more expensive to keep operational in the future.

As the site needed to keep operating while the plant was upgraded, the idea of swapping the open drive screw racks with semi hermetic screw racks with the central plant operating on R134a was eventually dismissed.

Thinking outside of the box and following on-site discussions between Lindsay Fresh Logistics,

Cool Dynamics (QLD) and Bitzer, it was decided that each room would have its own dedicated small charge system which would allow for the other rooms to continue operating on the existing plant as each new system was installed and commissioned.

For efficiency the site went with four Bitzer Commech screw sets, two semi hermetic racks with Varispeed lead compressors, two Varispeed basic units, and a semi-hermetic basic unit.

New Buffalo BBM series evaporators, which are designed for optimal humidity and air flow, replaced the existing Thermfresh air handlers. All of the Bitzer compressor sets were supplied pre-wired with Carel control systems which were then connected via BACnet to a custom Innotech BMS system to allow for remote communication.

The project was completed over six months with the majority of the work, including the infilled

All were selected to operate on R134a and combined with Buffalo FMC condensers featuring EC fans.

These were mounted remotely on a condenser platform engineered and installed by SBP Australia on the warehouse roof and designed to ensure optimal condensing temperatures could be easily maintained regardless of ambient temperature.

Lindsay Fresh Logistics were pleased to share their first power bill for December with Cool Dynamics (QLD). It revealed a 29 per cent power saving compared to the previous December period.

As the last of the new equipment was commissioned and the old plant decommissioned the power

savings continued to improve. March showed a 37 per cent decrease from the previous corresponding period even with building additions of three fumigation rooms, one DAF (Department of Agriculture & Fisheries) conditioned facility and three fast cooler rooms.

In February there was a slight anomaly (with temperatures an average of three degrees warmer than in February 2015), so power saving dropped from 37 per cent to 22 per cent, however the new equipment cruised through the heat providing optimal COP efficiency.

“The equipment changeover took place with minimal disruption to our operation due to the great communication from Cool Dynamics (QLD) during all stages of this project,” said Bob McMillan, General Manager of Rocklea Markets site.

“This allowed us to plan for the shutdown of rooms based on product flow so that Cool Dynamics (QLD) could ensure that they had the rooms we needed operating when we required them.

“We have since noticed a considerable drop off in power consumption even though we have added rooms, plus our water consumption would have also decreased with the removal of the Thermfresh units.”

Lindsay Transport Adelaide refrigeration upgrade was also very successful and 2016 is looking to be a great year for Lindsay Fresh Logistics, in the Brisbane Markets, with the additional cold storage to handle their export market growth, plus an estimated average 32 per cent power saving and continued to be fully supported by Cool Dynamics (QLD) and Bitzer Australia.

Packaging innovation wins it for The Protein Bread Company

T

he Protein Bread Company, maker of the Protein Bread Loaf, was named Best of the Best at the recent Food & Beverage Industry Awards in Sydney.

The company which was founded by siblings Anna and Luke Hopkins had a big night, also taking out the Label and Packaging Design Award.

“It was definitely a surprise. One award was fantastic and that was unexpected. But to take out two was unreal,” commented Luke Hopkins.

Asked what was behind the success,

Anna Hopkins put it down to a willingness to innovate.

“I think we just always ask why.

Why does something have to be like that? Why is this like this? We’re constantly questioning,” she said.

“We never do what everyone else does. We’re just looking for how we can do things a bit differently,” added Luke.

The Protein Bread Loaves are packed in a unique, stand up carton that sits on shelves much like a milk carton.

Manufactured by Hoshizaki, the technology is ISO14001 & Watermark compliant. In addition, it is approved by AQIS, HICWA, FDA, EPA, NSW Food Authority and is acknowledged as suitable for use in organic processing for the sanitation of food contact surfaces and equipment.

By applying an electrical charge to a mixture of tap water and table salt, the equipment effectively “splits water” into two highly effective electrolysed water solutions - an alkaline cleaning solution and an acidic sanitising solution. The alkaline solution has a pH of about pH 11.3 and oxidation reduction potential (OPR) of between - 500 to - 800mV. It is a form of Sodium Hydroxide with a pH level similar to household ammonia. The solution is a powerful

non-toxic cleaner and degreaser that breaks down oils, proteins, and biofilms.

The acidic solution is approximately pH 2.7 with a Chlorine level of 20-50 Parts Per Million and OPR of around +1150 mV. This is up to 10 times less sodium hypochlorite solution containing 200 ppm available chlorine and is up to 80 times as effective in reducing surface microbial counts. Often called Hypochlorous Acid (HOCI) the eWS Acidic or sanitising solution is a highly effective antimicrobial sanitiser that destroys bacteria, viruses, and other harmful micro-organisms.

The high oxidation of the water first damages bacterial cell walls, allowing infiltration by water.

The microbe reaches capacity, causing an osmotic, or hydration, overload and the acidic fluid and water floods the cell more rapidly than the cell can expel it, literally causing the cell to burst. There are hundreds of research papers proving

the effectiveness of electrolysed water in the cleaning and sanitising of food, surfaces and equipment across a broad range of industries.

It is a smart ‘disruptive’ technology because it is a plant installed on site either as a standalone system or reticulated or plumbed into the walls of a hospital or aged care facility enabling handwashing, cleaning room access and over sink access to both solutions ‘on tap’.

This eliminates the need to buy, transport and manage waste from packaged chemicals.

For all environmental capital projects, GOJO performs a financial analysis. The company primarily looks at the net present value (NPV)

or payback period depending upon the size of the capital project. To be able to determine the NPV or payback period, they calculate the capital required and all streams of cost savings by performing an extensive amount of research and testing on the proposed project.

Additionally, they make sure to include all non-financial benefits within the analysis to portray the entire benefit to key decision makers.

In addition to the financial analysis process, teams utilise lean six sigma tools and techniques, score carding progress and use of other metrics including process flow diagrams to improve environmental performance.

A specific example of the use of these practices is the journey of the Water Reduction Team. The team was formed in 2010 and began by collecting data, adding meters where necessary and developing a water balance.

The water balance was utilised to identify water savings opportunities that resulted in an action plan outlining water reduction activities to be implemented to achieve its water reduction corporate goal. Throughout the implementation process the financial analysis was utilised to determine if the identified activities brought sustainable value to the enterprise.

ellevue Orchard is a third generation family business run by two brothers, Joe Russo and Robert Russo, and two cousins, Joe’s daughter Bernadette and Robert’s son Nicholas.

On Australia Day 1998, after a devastating hail storm hit the orchard and destroyed the crop, the business installed a small apple processing plant to make juice from the damaged fruit.

The processing plant has been incrementally upgraded and now, nearly 20 years on, is a world class juicing facility.

The “Summer Snow” juice label is unique. The company juices each apple variety individually, creating a range of ten different juices. Summer Snow’s “Sparkling Pink Lady” is a lightly carbonated juice in an elegant glass bottle. It contains 100 per cent Australian fruit, all juice, no preservatives, no added water, no added sugar and no concentrates.

Summer Snow juices are variety specific and the “Sparkling Pink Lady” is made solely from the juice of the Australian-developed and much loved Pink Lady Apple. Crushed on the orchard and made from quality juice fruit it offers an eight-month ambient temperature shelf life and is an alternative for those wanting a sophisticated alcohol free drink, or for parents looking for a healthy alternative to soft drink.

The company always aims to

keep its ingredients list as short as possible, and to make a high quality juice by focusing on the standard of raw products used rather than masking imperfections with complex flavour combinations. The aim is to showcase the natural flavour and freshness of the fruits, in this case the Pink Lady Apple.

It all starts with the fruit. They use high quality apples, sourced from their own orchard and from surrounding properties in West Gippsland. When it comes to processing, they use European juice extraction equipment that uses no heat in the extraction process. The filtration plant is state-of-the-art and allows them to filter with very little intervention, with no processing aids and without exposing the juice to excessive oxygen. This keeps the product clear, bright and fresh tasting.

Every bin of fruit is serialised as it comes out of the pack-house or off a neighbouring grower’s truck. This provides granular traceability and ensures rotations of raw product.

Bellevue Orchard has a solid commitment to sustainability and the environment as a whole.

Environmental initiatives in place at the facility include: 1. An 83KW solar panel array across processing and cool-store roofs.

2. In 2013 a new water recirculation unit was installed as part of an upgrade to extraction machinery.

This reduced daily water consumption by two thirds and trebled daily output. (Estimated water saving of 89 per cent).

3. All fruit sourced locally and packaging made as close to facility as is practical to reduce food miles.

4. All waste water is treated on site and used in other parts of the operation.

5. Any waste juice after production (post filtration lease for example) is put through an apple cider vinegar production plant producing approximately 300,000 litres of vinegar annually. This vinegar is

used as a natural supplement for dairy cows, livestock and horses.

6. The solid waste from the juice post extraction is sent on to be used as cow feed. Bellevue is currently working on further processing this

waste for breakfast cereals and other food products.

The company’s food safety procedure is fully HACCP accredited and all activities within its production facility comply with strict internal procedures and policies.

For Twisted, the main focus of sustainability is within the manufacturing environment. In the last six months, the company has reduced energy consumption by 50 per cent. This was achieved by developing a custom ventilation system for the clean room.

90 per cent of hot air produced by their machinery is vented out of the room. This has resulted in their no longer requiring any air conditioning in the area. Additionally, the machines now run under less strain and use less electricity. As such, the company can deliver a product that has less environmental impact, from the moment it’s created to when it is packaged in recyclable materials.

The company relies on its social media presence to keep in contact with its followers and keep them updated on the latest developments.

For example, at the moment they’re exploring opportunities to export their products to New Zealand and Hong Kong.

They’re also working on a national PR campaign leading into the warmer weather. This will aim to increase brand awareness and create a buzz around the company’s Founder Cass Spies and the journey she’s been on as a mother of three and a successful entrepreneur.

Confectionery Product of the Year Dark Chocolate Coated Blueberries - Morlife

orlife’s business mission is to enable customers to ‘get more out of life’ by consuming high nutritional value, functional foods.

Confectionery is moving away from high sugar content and consumers are looking for ‘better for you’ snacks. As such, Morlife dark chocolate coated blueberries contain more fruit and higher cocoa content (43 per cent).

Blueberries are a popular fruit.

When they are dried and covered in high cocoa chocolate, they deliver a higher concentration of the healthy, protecting nutrients, because antioxidants come from both.

For example, a 10g serve of a choc-blueberries provides the same amount of antioxidants as a tomato, a kiwi fruit, a piece of watermelon, or a carrot.

The snack pack is intended as a tasty treat and thereby appeals to a wider base of consumers. In addition, it can be sold in a far wider range of outlets. The packaging depicts a very tasty rich chocolate, with fresh looking blueberries falling into it.

The Morlife brand is now leading the market in building consumer knowledge about what functional foods are and their nutritional benefits.

The product was developed to incorporate the highest level of cocoa mass, and thereby provide the highest antioxidant strength. This is the goal of Morlife, to provide high nutritional value.

The problem then was to overcome the bitterness from the higher cocoa. This was achieved by a delicate drying process that enabled retention of the strong blueberry taste. The berry taste then overcame the bitterness.

Since the chocolate was thicker it needed to be more runny so it could be sprayed onto the berries. This was overcome by adding soya lecithin.

There is always the issue of

he Protein Bread Company was founded to meet the needs of consumers who could not eat bread. Today, it allows thousands of athletes and health focused individuals to take it to the next level, with natural high protein, low carb and gluten free products that allow them to meet their daily nutritional requirements.

The company was founded by siblings Anna and Luke Hopkins who grew up on the far south coast of NSW. Both are passionate about using Australian ingredients - many

of which come straight from the farm - like golden flaxmeal grown in south-west Victoria, almond meal from Renmark in South Australia, lupin from Irwin Valley in Western Australia and whey protein from Warrnambool in Victoria.

The challenges of modern day living can mean that many consumers really don’t know how good their body can feel. The company aims to change this through creating natural, high protein, low carb products that are accessible to all.

The current range includes: Protein Bread, Protein Pancakes, Protein Muffin Mix and Pizza Base Mix as well as freshly baked loaves of Protein Bread.

The Protein Bread Loaves are packed in a unique, stand up carton that sits on shelves much like a milk carton. As a chilled product (being preservative free), the problem the company faced was how to maximise shelf presence when shelving in retailers’ fridges were not optimised for bread.

After talking to retailers, it became apparent that the loaves would be stocked alongside milk. The

Key features of the packaging include a cardboard outer, which is designed to protect the product and reduce wastage as a result of damage.

Plus, due to the box nature of the packaging, the loaves can be stored, displayed and transported in an efficient and space saving manner, reducing shelf space with retailers, reducing shipping costs and increasing efficiencies.

The products fill an important market need for natural, low carb, high protein, gluten free products.

By creating packaging that reduces its shelf footprint, the company has created an incentive for retailers to stock their product in their fridges, which are often high demand areas.

The new design was implemented in conjunction with the company’s bakery team who advised on the most effective way to take marketing designs and implement them, both

in terms of the efficient packing of the loaves, storage in cool rooms and product quality.

Feedback from the trial implementation meant that changes to the packaging were required, including removing a plastic film in the window due to condensation forming on it.

Condensation also meant that the grade of cardboard used needed to be adjusted along with the gloss finish to prevent damage to the external packaging.

The feedback from retailers is extremely positive, and the shelf space dedicated to the products in high demand areas in the fridge is testament to their versatility.

The packaging design has also incorporated a new block colour approach, with Protein Bread loaves being orange in colour. This approach has meant that there is great brand recognition which translates from the fresh loaves to the company’s shelf stable mixes.

Thermoforming ovenable pouch range FOOD packaging specialist KM Packaging Services has relaunched its range of Superguard Oven films with new features and benefits for food manufacturers.

The company originally developed the films - costeffective alternatives to premade CPET or Aluminium ovenable trays - in response to the growing demand for home cooked-style ready meals which combine quality ingredients with convenience and minimal preparation.
