However, this month I felt particularly blessed after creating my very own range of chocolates and trying quite a few - purely for journalistic purposes - with Fiona Sciolti, Lincolnshire’s chocolatier and Brigg’s best kept secret.

As well as being out and about, I’ve been able to write about some very interesting topics in the office. This month’s history feature centres around Lincoln Castle, and I spoke to the archivists at the Castle to delve into the crimes of the 17th and 18th centuries and the punishments criminals received.

Summer has been fun, but there’s still so much going on in autumn. As we head into September, you can enjoy everything from the Morris Dancing Festival in Lincoln to the Scampton Airshow.

Divers Search for the Dambuster’s Bouncing Bombs SCUBA DIVERS IN SCOTTISH LOCH SEARCH FOR BOMBS...

LOCH STRIVEN Daring divers are planning on searching for and recovering two bouncing bombs that are currently at the bottom of Loch Striven in Scotland.

They will be put on display in Brooklands Museum in Surrey and Havilland Aircraft Museum in Hertfordshire.

The bombs were used for testing before the raid on the dams held by Germans launched from RAF Scampton.

A team from the British Sub-Aqua Club will be plunging into the depths of the Loch to rescue the Highball bombs.

There are currently no Highballs on display to the public so they’re very valuable to the museums.

LINCOLN A recent online national poll of over 10,000 voters names Lincoln Castle the uk’s favourite.

Not only did Lincoln Castle win, but it did so by a landslide as 43% (5,116 people) voted for our county’s castle.

LINCOLN Lincoln strongman Dave Johnson raised money for charity last month when he pulled a fire engine carrying two firefighters across St Mark’s Shopping Centre’s car park.

Dave Johnson has often been involved in similar charity events pulling trucks, deadlifting cars, and even pulling the Lancaster Bomber ‘Just Jane.’

Last year he raised £500 for local charity and he aims to do the same this year.

The fundraiser was in aid of the Ethan Maull ‘Up Yours to Cancer’ Foundation, Firefighters Charity and funds for Aurora who is severely autistic. Dave says he does it in memory of friend Mark Browne who sadly passed away due to a battle with cancer.

HUNDREDS OF PEOPLE have registered as potential stem cell donors to save a Sleaford soldier. Army friends and family march on to the aid of Private Myles Brown in Germany barracks. The 27 year old has been diagnosed with acute lymphoblastic leukaemia.

This means he needs a life-saving stem cell transplant; his family have launched this desperate search for a donor to save his life.

£20,000 RAISED FOR IPADS AT SCHOOL The Ton 4 a Tablet push was started by parents at St Giles School in an aim to give every single pupil at school a tablet.

The team of parents have managed to raise an incredible £20,000 so far and they’re aiming for £32,000.

Top Chef Opens Pop-up School

GREAT BRITISH MENU STAR DANNY GILL HAS OPENED A SCHOOL/RESTAURANT LINCOLN Great British Menu finalist and owner of Browns Pie Shop in Lincoln Danny Gill has set up the city’s first pop-up school restaurant with the aim of inspiring the next generation of food professionals.

Danny has always been passionate about food. His first job out of school was with Le Manoir aux quat’Saisons under Raymond Blanc aged 17.

He was formerly the head chef of a two-Michelin starred restaurant in Cambridge.

Danny recently set up the pop-up school with his sous-chef Will Hodson at North kesteven School who used to study at the school.

“Will and I were just sat having a coffee together and discussing the chef shortage in the industry and why less people are getting involved in catering and hospitality,” says Danny.

BY FIREFIGHTERS IS SOON REHOMED! A vulnerable kitten who used up one of her nine lives after getting stuck 20ft up a huge tree has landed on his feet, after bagging a new home with the firefighter who rescued him!

It took 90 minutes to get to the little ginger puss who was buried deep inside a very dense tree in Bigby High Road, Brigg.

Breast Cancer Care 50th Birthday Charity Celebration for Jayne

Sleaford woman Jayne Cooke recently celebrated a milestone birthday in style - with a Hollywood Glamour themed birthday celebration that would also raise funds for Breast Cancer Care. Jayne is a cancer survivor and has beaten the disease twice.

This event was designed both as a celebration for her 50th birthday, but also as a fundraising event to raise money for the charity so other local women can beat the odds too. The event attracted around 100 guests and was held in a marquee in the grounds of Sleaford

Rugby Club, with key suppliers including A1 Premier Marquees, caterer Appetites of Sleaford and Lincoln’s Red Carpet Ready.

HRH VISITS CONINGSBY

The Duke of Cambridge has recently visited RAF Coningsby for the 60th anniversary of the Battle of Britain Memorial Flight to meet with veteran Lancaster flight engineers...

VISIT Mr Rusty Waughman, a veteran pilot of the Lancaster for 101 Squadron with HRH.

On the 11th July 1957 three Spitfires were flown from Duxford to Biggin Hill in a three ship founding, marking the BBMF Foundation.

Today, Lincolnshire, synonymous with military aviation, is called Bomber County and is host to the Battle of Britain Memorial Flight. This acts as a living tribute to those who served, and lost their lives, in the RAF and in the Battle of Britain.

At a reception to celebrate the 60th anniversary of the flight that marked the BBMF Foundation, The Duke of Cambridge was able to meet a number of veterans at the BBMF Visitors Centre who flew and worked on the aircraft during the Second World War. The day included HRH meeting veterans, a special air display sequence by the BBMF 17

aircraft and an evening celebration. The celebration explained the role of BBMF and celebrated the work of the past 60 years.

Veteran Rusty Waughman, 94, who was a Lancaster pilot from 1943 to 1944, spoke to William.

“He was so easy to talk to, so pleasant,” he said. “Being here brings back so many memories.”

Prince William is the patron of BBMF. The Duke of Cambridge, who completed his service in the Armed Forces with a Tour with the Royal Air Force Search and Rescue Force at RAF Valley, Anglesey, is also Honorary Air Commandant of RAF Coningsby.

It demonstrates continuing tributes to our veterans, in particular the dwindling band

“Prince William is the Patron of the BBMF and he’s also the Honorary Air Commandant of RAF Coningsby...” from World War Two and it provides comparisons between historic and contemporary operations.

The RAF Battle of Britain Memorial Flight currently operates from the otherwise thoroughly modern RAF Coningsby.

The flight now includes six Spitfires flown regularly from Coningsby in addition to two Hurricanes, a Lancaster and a C47 Dakota.

Two Chipmunks are currently being used for training purposes.

The now iconic Memorial Flight has displayed or flown past thousands of events; around seven million people a year have the chance to see them.

There is a visitor centre and café at BBMF. Their mission statement is to maintain the priceless artefacts of our national heritage in airworthy condition in order to commemorate those who have fallen in service of this country.

They also aim to promote the modern day RAF and inspire future generations.

For 60 years BBMF has commemorated the history of the RAF, a Royal Air Force created to defend the uk, its interests and its people. This mission is intended to continue for many years to come. n

1940s Festival

held throughout the town of Woodhall Spa

An estimated 45,000 visitors flocked to Woodhall Spa during its 1940s festival, making it the biggest and best event in its six year history.

Despite a rainy start to Saturday, the total visitor numbers surpassed 2016’s record of

40,000, with Sunday proving to be the most popular day due to finer weather.

“I’d like to thank everyone who came to Woodhall Spa for our Festival this weekend,” says Andy Hunter, Chairman of the festival.

It takes a year of work and it pays off !”

PuNISHMeNT

Lincoln Castle has been used as a prison and a law court since it was first commissioned to be built by William the Conqueror in the 11th century. In recognition of the Castle hosting a crime & punishment twilight tour on 20th September, we delve into the past and discover what crimes people committed and what punishments they received through the ages...

History was always one of my favourite subjects; it’s like reading a 17th century gossip column. But it’s subjects like crime and punishment, actual accounts, that really peak my interest, especially when they’re based here in Lincolnshire.

There are some truly shocking accounts and records from Lincoln Castle, and some of these will be told to you if you attend the attraction’s twilight tour on 20th September.

But in light of that, Douglas Carstairs, archivist of the Lincoln Castle Prison Group, has provided us with some interesting stories and trials from a decade in the 1700s.

These little anecdotes from the 1770s really help to paint the picture of what life was actually like... and it’s not too pretty.

Serious crimes in the 1700s may be considered as anything from stealing a shilling to murder.

after he was arrested,’ and he had been planning the killing for three years. He was hanged for his crime aged 21.

Some of the most dangerous characters in Lincolnshire weren’t caught. George Dales of Horncastle was involved in fights, affrays, and stabbings for many years and he was last heard in a warrant for his arrest after assaulting a bailiff. It’s marked ‘not found.’

In the district of Lindsey, there were eight accounts of sheep stealing in the 1770s, six accounts of murder, 21 cases of grand larceny and 18 burglaries in addition to various other crimes.

Some well known criminals were caught in Lincoln too during this time. The notorious highwayman Captain Cox was hanged at Lincoln in 1778 after being caught trying to steal a horse from a magistrate’s stable at Tathwell.

There was a matricide too. William Farmery cut his mother’s throat because she corrected him when he was a little boy. He was driven to confess when he ‘felt his mother’s shade

There are 31 examples of husbands beating wives. Sarah ellis of Flixborough was a carpenter’s wife and had told the magistrates that her husband often tried to take her life.

When she and her daughter aged 14 were in bed one night, he had put a furze bush under the bed and ‘all on a blaze, with the intention to set her and her daughter with the bed on fire.’ He had also followed her into the kitchen one day with a hay fork swearing he would stab her with it and destroy her.

For cold blooded brutality, few exceed William Paddison of kirton. He mayhemmed his wife, which is to deliberately try to break limbs, stamping on her leg until it was

Theft was a very serious crime in 18th century Lincolnshire with serious punishment to be expected. Richard Slingsby of Luddington stole beans valued at just five pence. The judge ordered that he was to have 20 lashes on his back. and 121 suffered the most common punishment; ‘to be flogged until his body be bloody.’

broken. Luckily some neighbour overheard and stopped him from trying to break the other leg.

These punishments were for petty thefts too.

Richard Slingsby of Luddington stole beans valued at just five pence. He was ordered to have 20 lashes on his back.

However, it was servants who suffered most of all. A total of 40 actions for assault were brought by servants against masters. They present a rather gruesome picture of what servants, many of them no older than children, had to endure.

The 18th century was largely controlled by terror. Few criminals could actually be caught so those convicted suffered extreme punishment in public to deter others. By the end of the century, the death penalty might be inflicted for theft of anything valued at more than a shilling.

One parish apprentice ran away from her master, a wine merchant, because he had not given her sufficient food or drink and had beaten her in a cruel manner regularly.

Perhaps mercifully, she was returned to the workhouse.

Men accused of serious crimes would be held in the Castle of Lincoln. Some were returned to the notorious ‘pit,’ a subterranean dungeon for the condemned.

People expected servants to be treated badly but murder was not taken so lightly. In 1753, a parish apprentice disappeared from the house of a baker in Lincoln. It was rumoured that he was murdered by his master, and the man was regularly attacked, his trade ruined. eventually, the boy returned but the master thought it necessary to spend the next three market days standing beside his apprentice on a cart in the cornmarket shouting ‘Here is Tom, I am innocent!’

There were some awful stories about the pit and one example really shows how awful the justice system was in the 18th century.

In 1769, a young man called James Lusby was sentenced to death for sheep stealing.

He managed to buy himself a reprieve by naming a few people in a gang of thieves, who had been a terror to Lincolnshire for the past three years.

Not all were as lucky as Tom.

In 1787 William Rawby, a small farmer from Dogdyke, was hanged for the murder of Ann Leary, a parish apprentice just 13 years old. She died from ill-usage and her mistress had also beaten her with great severity.

The crimes were bad but the punishments were much worse. Theft for example, came with quite a severe punishment. Of those convicted, four were fined more than a shilling, seven were sentenced to imprisonment in houses of correction, 18 were transported, 28

The authorities arrested two of the gang but with astonishing insensitivity, placed them in the same dungeon as poor Lusby. Predictably, they planned to kill the traitor.

They knocked him down in the pit, jumping on his body. They managed to break two ribs and ‘burst his heart.’ Matthews, one of the gang members, ‘cheerfully’ admitted to the murder and another.

1068 - William the Conqueror commissions Lincoln Castle to be built on old Roman remains. His hostages are held at Lincoln Castle 1115 - Robert de la Haye becomes constable of the Castle.

1147 - King Stephen holds court at Lincoln for the first time.

1215 - Signing of the Magna Carta, the first charter to guarantee human rights.

1351 - Lincoln Castle becomes Crown property.

1787 - Lincoln Gaol built.

1831 - Castle purchased by city justices.

1850s - End of the notorious ‘separate system’ for prisoners.

No less than Judge Blackstone sat at Lincoln. He ruled on difficult cases the lower courts had been unable to determine. Other judges were from rich local families. him to be executed early so he might dine with devil at noon.

In one sense, the criminal was let off lightly.

There were much worse punishments than hanging. If a woman murdered her husband, she was burned at the stake, like eleanor elsom.

At Lincoln in 1722, eleanor elsom was brought out of prison barefoot, covered in tarred cloth with a tarred bonnet on her head. She was placed on a tar barrel and a rope hung around her neck. Three irons were fastened round her body so that if the rope was burnt, her body would stay tied.

In all probability she was probably dead before they lighted the fire from hanging.

1868 - Public executions end by law across the UK. 1877 - The last person is hanged at Lincoln Castle.

1884 - Castle grounds are opened to the public. n

But did these measures deter and were such gruesome exhibitions sufficient to terrify people to obey the law?

It’s quite clear the measures were very extreme and didn’t work. Henry Best, the son of a magistrate, saw a number of public executions as his father felt it educational, but he only felt that criminals who had seen one knows he had seen the very worst.

This is only a taste of one era of crime and punishment at Lincoln Castle. Arnhem Commemoration

There will be a special event in September in Woodhall Spa that month to commemorate the gallantry and sacrifice of the troops based in Woodhall Spa who fought in the battle for Arnhem.

There’s also going to be a Battle of Britain Memorial Flight flypast and exhibition.

The 1st Airlanding Brigade was based in Woodhall Spa prior to their deployment to fight in the battle of Arnhem.

The Brigade was based in hutted camps on the eastern edge of Woodhall. The Brigade fought with great gallantry at Arnhem despite the heavy toll of casualties.

The community of Woodhall Spa annually remembers their sacrifice on the anniversary of the battle and it’s also recognised during the Woodhall Spa 1940s Festival.

During the Second World War the Spa took on the atmosphere of a garrison town, recording more air raid warnings than Lincoln so the era was a very important part in the town’s history.

Armed guards surrounded the pine woods where edwardian aristocrats used to walk and where equipment and ammunition were now stored.

Paratroopers went directly from the Spa to Arnhem and came directly back from the battlefield.

Summer Polo Tournament Estate agents Mount & Minster recently hosted their own polo tournament. At the event, there was a hospitality marquee inviting locals to watch the polo in a VIP area.

The event was an excellent opportunity to network with clients from around the county.

Next month represents the third year since Will Vernon and Robyn Howells took on Weston’s Chequers, transforming it from a dilapidated pub into one of Spalding’s best restaurants. Its gourmet menu is a particular highlight...

Driving to Weston, the angry skies and heavy rain broke to reveal a few shards of sunshine trying to break through over a panorama of farmland.

Talk about four seasons in one day; the day yielded all of the climatic elements needed for the area’s vegetable growing industries, so it’s fitting that my journey ended at the same place that a modest quantity of those vegetables would end up too.

WILL VERNON, CHEF PATRON, THE CHEQUERS

Background: Born on the Lincolnshire/Leicestershire border, previously working at The Olive Branch in Clipsham and Jim’s Yard in Stamford.

Weston’s Chequers had a chequered past in terms of ownership, until 2014, when Will Vernon and Robyn Howells met with local farmer and landowner Robert Oldershaw to discuss taking over the beleaguered village boozer and creating in its place a really decent eatery for locals to enjoy.

The pair have form in food, with local boy Will working in Thirsk, where he met North yorkshire born Robyn, before moving back to the county and where they worked at places like Clipsham’s Michelin gastropub, The Olive Branch.

“WE HAD A VISION THAT IT WOULD BE A PLACE FOR LOCALS AND DINERS FROM FURTHER FIELD ALIKE, USING FRESH LOCAL PRODUCE...”

“We had a vision that it would be a place for both locals and for diners from further afield, making the most of local produce and providing fine dining quality food but in a restaurant that feels more relaxed and more comfortable,” says Robyn.

The place has been smartened up on the outside and is within half an hour’s reach of Spalding, Holbeach, Stamford and the Deepings, Boston and Sleaford. The pair have redecorated the place but their main focus was on the creation of a new kitchen.

Food Wisdom: “Celebrate the work of our hard working farmers and use their high quality local produce!”

Food Heaven: “Our desserts are very well regarded, especially our chocolate sharing board.”

On this point Will says he produces each dish in small quantities, and is militant that a restaurant shouldn’t apologise for running out of a particular dish. It shows, he says, that everything is prepared freshly.

vegetables, other than the herbs and soft fruit he grows in his kitchen garden, whilst locally reared pork, lamb and beef are sourced from Spalding’s Bennett Butchers.

Will has even been known to butcher a whole carcase of Lincoln Red when one comes his way.

Game when in season is sourced from local shoot whilst Robert provides garlic, onions and shallots. Bread, pastry, sauces and relishes, even mayonnaise are made in house, desserts and the petit fours served with coffee likewise.

Dining at The Chequers is pretty simple, with a single menu for lunch and a single menu for the evening. Daytime service offers open focaccia sandwiches - the bread being homemade - plus a choice of four ‘light bites,’ four starters and 13 main courses including grill options of steak and ‘gourmet’ burger. evening diners can choose from 11 starters, 13 main courses. There are a couple of blackboard specials on offer too, but for exceptional value and to really allow Will to

show off his talent, we’d nudge you towards Friday’s Taster menu which offers three courses, plus an amuse bouche, plus a palate cleanser of sorbet all for a mere £25/head... that’s great value, especially for a primetime Friday evening!

Having worked alongside sommelier Pedro at The Olive Branch, Robyn has curated not just a list of 30 ‘standard’ wines, but also ten constantly changing speciality wines, topping out at about £50 and including, during our visit, an Alsace Riesling, and a Châteauneuf du Pape.

Other recommendations? Well there’s nothing fishy about the exceptional gin cured salmon we tried; with a beetroot and chive crème fraiche it’s highly recommendable. Also, the chocolate sharing board’s Baileys tart, one of nine desserts, is pretty scrummy too.

In short, the place is comfy and informal, warm and welcoming, it offers great food and very good value too. If you’re looking for daytime dining or a Friday treat, The Chequers is a solid recommendation indeed.

Would you believe that amongst Lincolnshire’s wealth of food and drink producers, there’s an international chocolatier? Fiona Sciolti is Brigg’s best kept secret and has travelled from the UK to Switzerland, Thailand and the Maldives creating delicious chocolate treats for the rich and famous at six star hotels. Fiona also travels up and down the country to shows and food markets selling her range of botanical chocolates and last month, I was able to make my very own range...

It was a beautiful sunny day when I visited Fiona Sciolti in Brigg. However, it turns out that beautiful sunny days are not so good if you are trying to make chocolate.

Fiona’s husband Giles welcomed me into a lovely family home as Dotty the Springer Spaniel came bounding up to me, and the smell of freshly made strawberry jam filled the room.

The two are purists with strong family values, making everything at home, and it’s from this passion and creativity that Fiona’s business was created.

She started it 13 years ago when the family made the decision to move to Lincolnshire, and the business has done nothing but grow.

“I’m half Italian so I suppose my passion for food comes from my father’s side of the family,” says Fiona. “My parents were very old fashioned country people living 42

by the seasons, foraging, making their own wine, the last of a bygone era, and I suppose that rubbed off on me.”

Fiona’s creativity and eye for design comes from college, majoring in embroidery. Just before my visit, she had finished making her daughter’s prom dress, handstitching 15,000 beads into the bodice, and of course making an after prom party dress too.

for seven years before we started a family.

Along the way, I had always been making chocolate for family and friends. But as the kids grew up, I became somewhat obsessive about the food I provided, to the point where I was even churning my own butter!’

The two moved from Warwickshire to Northumberland to Cambridgeshire to Milton keynes and finally to Brigg in North Lincolnshire whilst having their four children.

“As the children grew up and became established at school, I began to find a little time for myself and decided to turn my erstwhile hobby into a new venture.”

“However, as I had no formal training in working with chocolate, I was initially a little reticent to actually offer any of my work for sale. Those first couple of years were probably the best few years to

know me; I must have given away thousands of chocolates!’

“Then I started making chocolate again. I’d just pick ingredients from the garden and hedgerows - lavender, lovage, lemon balm, raspberries - and infuse my chocolate with their flavours and scents.”

“I didn’t sell anything in my first two years.

Business Link, a government funded project that encourages smaller local businesses, discovered what I was doing and decided to help.”

“They gave me loads of publicity and really helped my business grow. I’ll be forever grateful.”

Fiona started travelling across the country with the help of Business Link. She visited craft shows, trade fairs, exhibitions and food demonstrations and sold her chocolates.

“To my amazement and delight, they proved to be very popular. They sold like crazy, everyone loved them.”

“No one was more surprised than me when I won, and then I won again the year after. I won four years in a row before I stopped entering, and it was a huge pat on the back for me coming from such humble beginnings.”

Giles decided to quit his job as a barrister to join Fi, and he helps with all the logistics and paperwork side of things, giving Fi time to get on with what she loves doing the most.

“I had previously thought ‘right, I need to do a course now’ but I then realised that’s what

peopled loved about me. I was self-taught, a natural flavourist.”

“My ethos is to only use natural ingredients - there are no artificial flavourings in my chocolate. I use simple quintessential British flavours and always style them round the seasons.”

Fiona mixes cream with honey and the ingredient for example lavender, to infuse her chocolate.

Not only does she sell her chocolates at fairs and shows across the country, they can be bought on her website, and she does bespoke work like favours for weddings and corporate gifts.

you can also buy her products in a number of retailers from London to Aberdeen including locally Doddington Hall, Lincoln Castle Gift Shop and the Brigg Tourist Information Centre in Lincolnshire.

It’s Fiona’s uniqueness, being self-taught, creating chocolates that are completely hand made and using natural flavours that attracted the international attention.

“I’ve created ranges of chocolates for Christian Dior, Country Living Magazine, The Royal Festival Hall in London, The Inner Temple, London, young’s Seafood and Riverfood Organic amongst others. My biggest project was for a six star luxury hotel group.”

Fiona was contacted by Soneva Group, a hotel chain with hotels in the Maldives and Thailand. A British chef approached her looking for an artisan natural flavourist to make chocolate for their hotel resorts. Her first trip was to the Thai resort, Soneva kiri.

“It was a very daunting challenge, but I’m a great believer in stepping out of my comfort zone and just going for it. I was fast tracked through Bangkok airport and welcomed by my very own driver to a limousine.”

“This took me to a helicopter which took me an hour and a half south to a jetty where a speedboat was waiting to take me to the private island, where I was welcomed by all the staff. It’s fair to say it made me very excited about the trip!”

Fiona stayed in one of their budget $5m residencies (there were villas there for $15m).

They’re resorts for the seriously rich and famous; the Beckhams, Brad & Angelina, Buzz Aldrin, they’ve all stayed there.

The trip was a huge success. Fiona used what she could find on the resort - honey, peanuts, lemongrass, ginger - and created a wellness range of chocolates. They were so impressed, she was invited to create a chocolate room at the Maldives resort last year.

She’s now working with internationally renowned chefs, caters for the Bangkok International Flower Show every year, has provided chocolates for the Prime Ministers of India and Bhutan, as well as Buckingham Palace, and she’s got another big project coming up soon.

For a number of years, she has been national food judge for the Great Taste Awards and also for the World Bread Awards. She’s become established in almost every part of the country, but she’s still Brigg’s best kept secret.

“I think my success comes from my passion, and my biggest passion is making people smile, making people happy when they try the chocolates. That’s magical.”

“I’ve never followed the herd, I’ve done my own thing and people appreciate that. We treat customers like how we would like to be treated and giftwrap our chocolates with care and attention.”

Late Summer DeSSeRT ReCIPeS Chocolate Pots with gingersnap

Serves: Eight. Preparation Time: Ten Minutes. Cooking Time: Five Minutes.

150g SMASHED GINGER NUTS • 75ml RUM OR BRANDY • 100g UNSALTED BUTTER • 125g GOLDEN CASTER SUGAR • 1 MEDIUM EGG • 200ML WHOLE MILK • 200g 70% DARK CHOCOLATE, BROKEN

Divide most of the crushed ginger nuts between eight small glasses and drizzle over the rum/brandy. Set aside.

Meanwhile, in a large heatproof bowl, whisk butter and sugar until pale and creamy. Whisk in the egg.

Place the milk in a saucepan and bring to a gentle simmer. Remove from the heat and add the chocolate then whisk until it has melted and the mixture is smooth. Whisk into the sugar mixture.

Spoon the mixture into the glasses, sprinkle over the reserved biscuit crumbs and leave to cool.

Chill for at least eight hours or overnight, and it will be ready to serve the next day. n

100g BUTTER, SOFTENED • 150g GOLDEN CASTER SUGAR • 2 LARGE EGGS, LIGHTLY BEATEN • 150g SELF RAISING FLOUR • 3tbsp WHOLE MILK • FINELY GRATED ZEST OF TWO LEMONS • 150ml WHIPPING CREAM • 250g RASPBERRIES

Peach upside-Down Cake

Serves: 10. Preparation Time: 15 Minutes. Cooking Time: One Hour 30 Minutes.

Ingredients: 300g caster sugar 275g butter, softened 150ml Marsala wine 4 perfectly ripe peaches, stoned and cut into eight wedges 200g self raising flour 60g ground almonds 1tsp baking powder 1tsp vanilla extract 5 medium eggs Crème fraîche to serve

Preheat the oven to 180ºC. Butter and base line a 23cm loose bottomed cake tin and place on a baking tray to catch any syrup that may leak out.

Place 50g caster sugar, 25g butter and the Marsala in a small pan and bubble gently for 15 minutes until reduced to a thick syrup. Carefully pour half the syrup into the base of the tin.

Arrange the peach wedges in the base of the tin. They should fit snugly in a single layer. Beat together the remaining sugar and butter, flour, almonds, baking powder, vanilla and eggs until smooth. Spoon the mixture over the peaches and level off the surface. Bake for 60 - 70 minutes until set.

Leave to cool for five minutes then remove from the tin and carefully invert onto a serving plate. Warm the rest of the syrup and brush over the cake. Slice and serve warm with crème fraîche. n

Preheat the oven to 180°C. Grease and line a 900g loaf tin with baking parchment. In a bowl, cream butter and caster sugar for three minutes until pale and fluffy. Beat in eggs, sift in flour and mix. Stir in the milk and lemon zest.

Put mixture into loaf tin and bake for 45 minutes. Lift out of tin and leave to cool.

Then, use a bread knife to cut into three layers. Whisk whipping cream and 1tbsp sugar.

Spread half of the cream between each layer and add raspberries. Sprinkle the top of the cake with 1tbsp sugar and decorate with raspberries.

Carefully slice and serve.

How to Make an

For the coming winter make sure you’re safe, sound, and secure behind a modern timber entrance door... upgrading the entrance to your property is easier and more cost effective than ever...

Most of the oldest buildings in the country, those that we have all admired and enjoyed - from castles and palaces, to places of learning, prayer, contemplation, and recovery - have magnificent doors made from timber.

Today these national treasures, protected and cosseted with the help of private trusts, public ownership, and a stream of funding to support regular maintenance, look every bit as imposing as they did when they were designed.

Sadly, this cannot be said of the cheap imports, mainly from the Far east, that were much needed to support the explosion of property ownership in the 1960s through to recent times. For those who did, and can still, purchase their local authority house at a fine discount, ownership encouraged investment in new doors and windows.

The market research carried out by the British woodworking industry in the late 1970s, when Taiwanese imports were at their highest level, identified that uk home owners typically paid an average of £50 for a new front door, a stark difference to their West German counterparts who would pay in the region of £3,000.

This prompted an industry-funded campaign aimed at the private home owner to invest 60

in a new timber entrance door, made in the uk, named: What a Difference a Door Makes. The campaign was hugely successful and while it didn’t see off all the cheap imports, the consumer became educated about the benefits of a home-produced timber door and willing to spend more. By the mid ‘80s the market peaked at 3,000,000 units and had a value of £400m.

And then, of course, the bubble burst, brought about by the plastic revolution and

campaigns selling the virtues of double glazed fenestration with low pricing and so called ‘authentic, classic design’.

By 2000 the timber market share was lost in windows alone, by some 80%, in favour of plastic. Timber doors however retained a higher share as the consumer was attracted to its greater security and performance.

More recently the industry has seen the rise of composite door constructions where modern materials have been used to make up the door core. This has then been covered with an external finish of thermal plastic, glass-reinforced plastic, GRP and even wood fibre-based boards.

These products have performed and today account for more than half of the uk market, now measured at £600m with growth of more than 5% per annum.

Security and robustness has been achieved by the strength of the door core together with good ironmongery. Today this will contain espagnolette systems that can lock all three leading edges using shoot bolts, or hooks, with a central controlling arm handle.

A national standard for security has existed, along with test methodology to BS7950, which values security, thermal performance, and weather resistance to regional degrees

of exposure. A police-recommended standard and marketing tool for the private housebuilding sector, Secured by Design, has prevailed for more than 30 years and is frequently a standard requested by designers, architects, and developers responsible for new developments.

It comes as no surprise that the timber door, complete with all the appropriate ironmongery, factory assembled and finished, is now leading the way again to dominate the choice for new door designs and mechanics that more than satisfy today’s demanding standards.”

“While the requirement applies to new buildings only, existing home owners will want these security benefits applied to replacement products for the upkeep and maintenance of their properties as well as for major refurbishments and extensions,” says Roy Wakeman.

These modern finishes now come with life time warranties for the complete door set, with maintenance cycles at a very minimum, and the paint itself is expected to last up to eight years before re-decoration is needed.

Only last year the new Approved Document q Building Regulation was introduced demanding even greater security standards for doors and windows.

“ I just fell in love with Aubourn Hall when I came here. It’s a very diverse garden with a bit of everything, and yet there were still areas for improvement; projects for me...”

>> Belton House, Harlaxton Manor, Gunby Hall, Tattershall Castle... they all have one thing in common. These grand properties are now no longer owned by lords and ladies and they’ve not been kept within families and houses.

It’s fantastic that these properties are still being looked after by charities like the National Trust and open to visitors, but I feel there is more of a connection to history and tradition when a family lives there; something more real about it.

Well Aubourn Hall is not only still in the possession of the Nevile family who acquired it in the 17th century, but it’s a thriving family home far from dilapidation. It has the best of both worlds; the gardens are open to visitors at certain times of the year too.

I spoke to Terri Hodson-Walker, head gardener, on my visit. Terri has been there for two years now having trained at Birmingham’s Botanical Gardens and working at Trentham Gardens previously.

“I fell in love with Aubourn Hall when I came here,” says Terri.

“It’s a very diverse garden with a bit of everything, and yet there were still areas for improvement; projects for me. It’s got a lot of history here too.”

Christopher Nevile, owner of the Lincoln Hotel, and his wife Annabelle have lived here for the past 20 years now. His father Sir Henry was Lord Lieutenant of Lincolnshire and very committed to the war effort. The main lawn was full of potatoes during WWII.

“The gardens are set over nearly ten acres and there are many rooms to it. There’s a large area laid to lawn and a turning circle at the front of the property. There’s also parterre hedging along the front of Aubourn Hall.”

“Nearer the road, there’s the rose garden which is very fragrant and will be in its second flush in September. Through here you enter the croquet lawn with big bright borders, and further through a pergola walk, you’ll find the tennis court.”

“There’s a small orchard just beyond, and a dahlia walk, and then you’ll reach the main lawn. An enormous oak tree stands here with a tree house, and there are full borders all the way around.”

“Past this is the more natural area of garden. The prairie garden is to the left and to the right is the stumpery. Just past here is the fountain.”

It’s definitely worth visiting Aubourn for this area alone. It looks absolutely magical and Terri has done a superb job. When she came to Aubourn, the stumpery and natural area was a nettle bank so she’s really transformed it alongside her colleague Andrew.

“In September, I will mainly be carrying out general maintenance in the gardens, dead heading and preparing for winter. The overall feel of the garden was dark and depressing. Other elements of the client’s brief were to provide an entertaining space using natural materials and a contemporary twist, and different textures to the garden with a Mediterranean feel.

The main requirement was a water feature that would not only benefit wildlife but provide the main focus of the garden.

Our Woolly Heritage

The NFU’s Alison Pratt, our farming correspondent, writes on the topic of livestock, and a particular animal that is an integral part of our history and heritage. This month Alison discusses why it’s important to care for the traditional breeds of sheep...

Our garden backs onto a field of sheep; they’re ewes with their lambs and to me, they provide an everchanging tableau of sheepy society.

it is an endangered breed and is listed as ‘at risk’ on the Rare Breeds Survival Trust’s register.

Modern sheep are bred for meat now rather than wool and the influence of worldwide breeds means that the butcher requires well-muscled, compact and quick-growing lambs rather than the more traditional breeds.

It was great to watch the lambs when they were younger, but now they’re grown and some are nearly as big as their mothers. In July they were weaned, then the ewes are given extra feed and vitamins and in the autumn, the rams will be re-introduced to start the breeding season all over again.

There are phrases in our language like ‘silly as a sheep,’ ‘two shakes of a lambs tail’ and ‘by hook or by crook.’ These all relate to sheep farming and were coined by our ancestors who had a lot more to do with these woolly beasts than we do today.

But sheep played a huge role in the country’s economy from the Middle Ages onwards.

Towns and many of our most magnificent churches were built on the fortunes of sheep farming; in those days it was the wool that was valuable not just the meat.

you might have come across the term ‘wool church’ in your local history; it was a term coined to describe a church financed by local merchants and farmers who’d made money from wool and were hoping to ensure their places in heaven with their largesse. even the prosperity of Lincoln was built on wool. In the 12th and 13th centuries, weaving and dyeing wool were the mainstays of the

Lincoln’s wool trade was so important that in 1291 the town became a ‘staple,’ the term given to a very few ports allowed to export wool, so adding to its prosperity. Later in the 14th century, the staple was removed to Boston and Lincoln’s wool trade suffered because of increasing competition from other parts of the country and from abroad.

Today’s sheep flocks are very different to their Medieval ancestors. Our own Lincoln Longwool is a very different animal and much more like the early sheep breeds than modern sheep.

With their tall stature and long curly fleece, the Longwool is a multi-purpose breed, producing meat and wool in abundance, but unfortunately

The advent of polyester and other man-made fibres meant that wool declined in popularity in the 1970s and 80s, not just in what we wear, but for carpets and furnishing materials, too.

But hope is on the horizon. The Campaign for Wool is leading the wool renaissance. Its patron, HRH Prince Charles has a passion for this great natural and sustainable fibre and all its uses and the campaign is bringing a new focus to wool and the worldwide wool industry.

From aircraft and loft insulation, furniture and carpets and of course woolly jumpers, there is so much that wool can do for us. It’s even used to keep stocks of life-saving vaccines cool when refrigeration isn’t available in other countries.

The Spilsby Show

the popular country event with a past...

Once this country show was second in size to the Lincolnshire Show. Despite it being a smaller event nowadays, it is still one of the most popular events in the county’s calendar.

The Spilsby Show is held in order to raise as much money as possible for local charities and other worthy organisations, and a team

of 20 work up until the day to make sure everything is organised.

For over 40 years the show has welcomed shire horses and it’s a tradition that has stuck for the 2017 show too. It was a tremendous success as was the rest of the main ring entertainment.

“Andy took me for a weekend away in Cambridge. We went punting on the river and he proposed on the balcony of our hotel room, overlooking the river,” says Nicola.

“We started planning straight away! We had booked the venue within a couple of weeks of getting engaged. We didn’t want a long engagement and knew we wanted a small, cosy venue, so The Poachers was just perfect for us.”

“I bought my dress from The Ivory Room in Woodhall Spa. I loved my dress as soon as I put it on and ordered it there and then even though we hadn’t been anywhere else to look!”

“Andy’s sister-in-law emma made the cake; Andy and his brother are into Marvel and DC films and she was really excited when we showed her our ideas.”

There’s nothing more luxurious for a man than bespoke tailoring. A made-to-measure suit, coat, or sports jacket that provides the perfect fit, great service and beautifully crafted fabrics all create a look, fit and feel that simply cannot be replicated with an off-the-peg suit, no matter what label has been sewn into the back.

There are five items every gentleman should have in his wardrobe, and Andrew provides all five in every style imaginable.

“First of all, every gentleman should have a classic suit. These are usually grey and can be used for work and for the occasional formal event like funerals and weddings.”

The second suit Andrew suggests is a dinner suit for black tie events and other high society events.

Our favourite tailor is Andrew Musson... and he’s the real deal, with 25 years experience cutting on Savile Row for high-ranking politicians and celebrities. Andrew returned to Lincoln’s High Street nearly 10 years ago to take over the business his father, John Musson, established.

Working alongside one another, the two provide two or three-piece suits, either made-to-measure (measured to fit but lasercut off site) or completely bespoke, which means that they’re measured, cut and fitted over several visits for the ultimate flattering fit and a feeling of luxury.

Andrew’s bespoke suits take around 50 man-hours to produce, with over 2,000 cloths to choose from. However, what makes his suits especially appealing is the price.

Andrew undercuts the London’s Savile Row’s premium prices for bespoke tailoring by thousands of pounds.

A blazer is necessary, usually in navy or a solid colour, for less formal events like county shows and golf club events.

“A bespoke suit isn’t about the label sewn into the finished article,” says Andrew.

“It’s about achieving the perfect fit and achieving a suit, hunting or shooting outfit, sports jacket or overcoat that looks and feels special and makes the wearer feel good every time they put it on.”

Andrew’s discerning client base travels from across the uk, even as far as London in some cases, as Savile Row’s price tags can’t compete with Andrew. It’s a service that yields the perfect fit for smart businessmen, or the many grooms who visit.

These were used for shooting, but now a tweed jacket is used more commonly for casual events worn with an open neck shirt.”

“We’ve a really diverse mix of clients but they all have one thing in common; they all value good service and the quality of their finished suit,” says Andrew.

“From the first visit to be measured, and browse through english woollen cloths, to the two or three fittings each bespoke suit deserves, we really love making sure that every man is happy with his finished suit.” n

It has been a very busy year for students and staff of Giles Academy and the events have continued right to the end of the summer term.

The Giles Adventure scheme still proves to be successful with year 10 students completing their final expedition for their Bronze Duke of edinburgh’s Award and year 13 students embarking on a Giles Adventure tour round the Lake District.

During September the new year 10 students will begin working towards their Bronze awards and year 8 students will enjoy team building adventures through a range of outdoor activities.

It’s been a busy few months for the Arts at Giles Academy with our whole school production of Addams Family taking place in

June and our Sixth form Art students showcasing their creative skills in our Annual Art exhibition.

Our year 11 and year 13 students worked hard during the exam season and were rewarded with their end of school proms both of which were held at local venues this year.

A well-deserved ending to their time at Giles Academy. We wish them all the very best of luck in their new ventures.

Giles Academy is looking forward to meeting the new year 7 students in September 2017.

It’s fair to say that the motoring world is split into quite defined classes. From sleek sports cars and convertibles to hatchbacks and SuVs, they all have their qualities and their drawbacks.

However, it’s rare to find a car that combines the quality and style of a sports car with the practicality and efficiency of an SuV or 4x4.

That’s exactly what this month’s vehicle offers. BMW’s new X3 model is already a popular choice; more than 1.5m were sold since 2003. But the brand’s new style X3 is offering so much more.

There’s a new performance flagship model in this series too; the M40i. It is set to be the first ever M performance vehicle in the X3 line-up, adding to the dynamic appeal of this new model.

There are a number of Driver Assistance systems added to the new X3 model too making it safer to drive, and one of the most advanced cars of its class.

The M40i has been developed with an insatiable appetite for revs and superb pulling power. The model’s 3.0 litre M-performance six cylinder in-line engine ensures it sits at the top end of the model range.

In addition to speed, the car offers comfort and practicality. All the cars in the series come with three-zone automatic climate 122

control as standard, and both front passengers can settle into optional perforated leather climate seats.

The climate seats offer heating for cold days, and an active seat ventilation to provide more comfort in hotter climates.

A generously sized panoramic glass roof is also an option for the new X3 model, and the car can be locked and unlocked with the display key as seen with other BMW models.

The display key lets the driver know when fuel levels are low, if a service is due, and even if you’ve left windows or the sunroof open.

BMW have stated that weight reduction was a key factor in the development of the new X3, which helps with its efficiency and agility.

From launch, the X3 model line-up will consist of the xDrive20d with four-cylinder diesel engine and the xDrive30d with a straight-six diesel unit.
