Lincolnshire s Best Kept Villages It’s a celebration of all that makes Lincolnshire such a wonderful place to live: community spirit, environmental awareness, pretty villages and thriving towns. This year’s 2012 winners for the county’s Best Kept Villages and Small Towns Competition have been revealed with four categories plus categories for Past Winner and Best Shops. This year was the 50th anniversary of the competition, with a display of previous winners at the Lincoln-based awards ceremony last month.

This year’s winners were revealed as Stubton (Small Village category), Tetney (Medium Sized Village category), Woodhall Spa (Large Village/Small Town category) and Crowland (small market town category). The title of Past Winner was awarded to Freiston whilst Caistor took the Shops Competition title.

A smart redesign has transformed The Chequers from a non-descript pub into a smart country restaurant.

The bar area is comfortable and informal - but the dining room has an unexpected degree of formality. Crisp table linens, sparkling cutlery, a fresh flower and a silver wine cooler by each table adds a high quality feel to the overall dining experience. It’s a good job the food is up to the same standard as the restaurant’s appearance, then.

ichelin star standard dining at pub restaurant prices... it’s bound to appeal to Lincolnshire diners, which is why we anticipate great success for one of Lincolnshire’s newest pub restaurants, The Chequers at Gedney Dyke.

The restaurant was already closed when the current owner purchased it in 2009, they then promptly started a six figure refurbishment and shrewdly installed Michael Binnington as Head Chef.

His pedigree includes the venerable Midsummer House in Cambridgeshire, a two-Michelin star establishment, and Foliage in The Mandarin Hotel, in London’s Knightsbridge; a starred venue too.

Michael installed a brand new kitchen, created a three-strong brigade and now works alongside a front of house team headed by Nicholas Challinor.

The venue caters for just 50 covers and has a bar menu for evening and daytime diners, as well as a set lunch, Sunday lunch and à la carte menu.

Starter, main course, and dessert...

Shown right is charred fillet of mackerel with beetroot, apple and horseradish.

Our main shot shows a slow roast belly of pork with creamed savoy cabbage, fondant potatoes and caramelised apple purée.

Glazed white chocolate and passion fruit crème brulée.

Menus are changed regularly and the à la carte usually includes a choice of six starters, six main courses and five desserts with an additional cheese board option featuring three or five local cheeses served alongside home-made chutneys.

Speaking of suppliers, Shearers and Jacksons of Holbeach provide locally reared butchery, whilst Wellocks source vegetables growing in the Fenland surrounding the restaurant.

Coles of Kings Lynn deliver fish daily to the restaurant, and specialist suppliers of goods like truffle oil provide lavish flavours.

The restaurant itself is especially beautiful, with bespoke soft furnishings, oak and leather furniture and a posh conservatory leading onto a terrace for what will definitely be a busy summer.

Sparkling cutlery, pure white table linens and a fleet of designer crockery make a real spectacle of each dish.

What we really love about the restaurant though, is the number of smaller dining rooms that have been effectively created by the use of dividing walls. It’s as though a number of smaller private dining rooms have been hewn from one large area.

This creates a feeling of intimacy and warmth, which is further enhanced with low ceilings and candles.

Portions are fairly generous, embellishment is neat, with no foam or nouveaux nonsense, just formidable flavours.

Examples include the Pork Belly we enjoyed during our visit - it was, with no danger of overstatement, spectacular.

Before meals, the restaurant serves bread baked freshly by the team in house every day. Likewise, all ice creams and sorbets are home made too.

Our dessert was a real treat, with crème brulée a particular favourite of mine.

On our visit, a white chocolate derivative featured passion fruit, adding a zesty, imaginative tang to a restaurant staple.

As Pride goes to press the venue’s wine menus were undergoing a significant revamp courtesy of Nick.

Having spent a gap year during his Hospitality Management degree ‘studying’ the vineyards of New Zealand, the restaurant manager’s appreciation of wine,

especially those from the New World is impressive, and during our visit Nick offered a number of insights into the correct wines to accompany each course.

With fine wine completing a triumvirate that includes exceptional food and great surroundings, it’s easy to recommend The Chequers.

A team that can revamp a dowdy pub to the degree that the Chequers’s staff has is to be admired. But to provide Michelin star quality dining too, and to do so at pub restaurant prices is the real story here.

Our advice is to book a meal soon, before word gets out about the pub that caters for Lincolnshire diners with stars in their eyes.

ongratulations all round as we this month reveal the winners of our 2012 Good Food Awards - and name the county’s Restaurant of the Year, Bistro or Coffee Shop of the Year and our Food Hero.

Back in September, we asked our readers to send us their nominations, and we were delighted by the response.

Meanwhile, Winteringham Fields retains its reputation as one of the county’s most desirable dining rooms with three AA rosettes and its Michelin recommendation. Accepting the award on behalf of its Chef Patron was the restaurant’s brigade, as well as owner Bex McGurren and Bryony Cox. Lincoln’s White Hart Hotel was judged the best restaurant in Lincoln, with seasonal menus of exceptional quality utilising lots of local ingredients.

istros and coffee shops in Lincolnshire have taken a quantum leap in quality over the past 10 years or so. A slice of cake can be a moist, delicious treat. Brunch can feature the very best Lincolnshire produce. A cold meat platter can bring the county’s artisan food producers together, and our featured bistros also offer main courses that would put many à la carte restaurant menus’ offerings to shame.

Top of the list is Boston’s Sack Store. From the outside it’s a retailer of tiles, fireplaces and furniture, but its characterful first floor coffee shop offers brilliant paninis, salads and home made cakes. It’s a real treat, and we’re happy to recommend it to the uninitiated.

East Heckington’s Abbey Parks takes its farm produce and uses it to spectacular effect, especially during asparagus season. Pop-up Wine Bar events and themed dining evenings make Abbey Parks one of the county’s best bistros, and with fresh veg and deli products available to take home, it’s a great option for daytime dining.

Also winning an award in this category is Horncastle’s Old Stables. Just a year old, there’s a superb range of grazing platters, ciabattas, salad bowls and brunch options all using fresh, locally sourced ingredients.

2012 was a really busy year for Thierry Daugeron! The Stamford chef has started his outside catering business in 2004, expanding to create a cookery school in early 2001 and launching a new line of products, Thierry At Home.

Thierry opened his patisserie, the Riverside Café, in September, followed by his Theatre Lounge

restaurant in Stamford’s Corn Exchange. His efforts in promoting the enjoyment of food earn Thierry a deserved 2012 Food Hero title.

THE EVENT The Petwood Hotel Helicopter Ball Last month saw the annual Helicopter Ball hosted by Katherine Thornally and her committee, held at The Petwood Hotel, Woodhall Spa. The event aims to raise money for the county’s Air Ambulance service which serves both Lincolnshire and Nottinghamshire, and flies 1,000 missions each year. The service began operating in April 1994 and is funded solely by charitable donations, receiving no NHS or EMAS funding. It’s a boon in the ‘golden hour’ - the first hour of treatment time when a patient will benefit most from medical attention - and is used for emergency medical transfers to specialist units as well as attending road traffic collisions, agricultural and equestrian accidents across the county.

Natural colours look great in period properties, whilst heritage patterns with modern, eclectic hues can help to reconcile the two in an energetic scheme for a contemporary look in a traditional home...

One area that has held tight for the past few seasons is checks, stripes and tweeds. Gone are the days of only having the option for traditional green and red tartans; make way for the use of a multitude of colours, designs and textures.

These patterns can be found in a number of new fabric collections from top designers and can transform a room, keeping it classic and timeless but still on trend. In particular, it’s a great way of making a traditional property look ‘younger’ - reconciling traditional fabrics with bright colours for a really contemporary look.

Always opt for a consultation with an interior designer or soft furnishing specialist and mix and match fabrics, either within one collection or across brands to ensure a range of fabric whilst still achieving a consistant look. roperty developer Dean Wann has made the seaside town of Skegness what it is today. The talented architect has lived in the county since he moved to Lincolnshire with his parents and began working as an architect in a local practice back in 1988.

Being involved in a number of seaside businesses, Dean has had a hand in designing most of Skegness’s most recognisable landmarks and buildings.

“I started my own practice in 1998 and left it in 2003 to develop rather than just design property.” says Dean.

It was to be Dean’s pièce de résistance, somewhere he and wife Susie could live with their children Taylor, 11, and Liberty, nine. However, with business interests in Woodhall Spa in the form of Woodhall Country Park, and in Lincoln in the form of the new Doubletree by Hilton which Dean helped to design and now owns, the serial developer is now creating another new home for the family on Lincoln’s Carline Road.

For practicality’s sake there’s also a separate utility room and double garage connected to the property plus an annexed garage block with three further garages too.

January is a pretty month in the garden - but not a slow month by any measure! It’s time to prune, plant and prepare your garden for the season.

Use the winter months to plan a redesign of your garden and create an ‘action plan’ for 2013. your garden should have a natural split between hard landscaping - paving, paths, etc - and the soft landscaping, the plants.

Bare-rooted trees and hedge plants are ideal for planting now. Plant them as soon as possible, unless it is freezing. If you don’t have the time do so straightaway, entrench them temporarily: dig a trench, place the plants in it or lay them in at a slant, and cover the roots with soil.

In January we’re likely to receive a dusting of snow. A thick layer of snow offers excellent protection to your plants.

Snow is highly insulating.

The hard landscaping should form the bones of the garden and it is this you will look at over the winter months.

Onto this structure you lay the soft landscaping so that it clothes the garden softening all the hard edges and bringing it to life with colour shape and form.

If you’re completely overwhelmed, talk to an experienced garden designer like Alison Hutchinson, who has been creating gardens for over 10 years... she’s seen pretty much everything and will come up with practical creative solutions to your garden problems.

However a layer of snow can press heavily on conifers with upward branches, which can cause the branches to bend and even snap off. remove the snow in order to make sure that the tree isn’t permanently deformed.

An ice preventer helps ensure that your pond does not freeze over entirely.

Harmful gasses can escape from the water and oxygen can get in. This keeps the pond healthy even if the water is covered in ice.

Avoid walking on a frozen lawn as much as possible. This avoids causing poor spots on the lawn. regularly scatter sharp sand on such spots to make the ground less muddy.

This is the month to plant and force rhubarb in the kitchen garden. A generous helping of well-rotted compost or leafmould will really help to get your growing going.

January is the time to enjoy a wonderful display of snowdrops. Only buy snowdrops from your local garden centre, as they dry out easily. Plant them as soon as possible in late Spring.

If you thought winter was just a month for maintenance in the kitchen garden, think again! January is a great month to plant and force rhubarb ready for the first harvest in March.

Planting ’in the green’ can take place in January for a wonderful display the following year. you can also plant them as bulbs in the autumn months

Also this month prepare potatoes for planting by chitting your spuds in a cool dark place ready for planting out in a couple of months.

Winter 2012 was something of a blast from an icy past! Spare a thought for our feathered friends though; birds struggle during winter, so help them by putting out some extra bird food or hanging a fat ball from your trees, and don’t forget to leave fresh water out for them to drink.

Snowdrops grow best on lighter neutral soils, struggling a little on clay grounds.

Plant them in dappled shade and always in clumps. Leafmould will help snowdrops to thrive; keep soil moist. By way of ongoing care, be sure to divide dense clumps of snowdrops and plant them elsewhere.

A generous leafmould mulch will get your growing going, and if you fork in well-rotted compost and manure, you’ll certainly see the benefit throughout the year.

For a dazzling display, Easton Walled Gardens and Barnsdale Gardens present a spectacular show.

Make use of this time by clearing any perennial weeds that plague your beds, and plan your gardening year by ordering fruit and seed stocks. As always, our recommendation is always to order from a local independent garden centre, who have quality stock and lots of expertise!

ON THE FARM: BARRy POSTON reflecting on a challenging year for farmers and looking forward to the future. This month Barry Poston looks at what this year may hold for farmers across the county in 2013...

F

or most farmers in our region the year 2012 will go down as one of the most difficult in living memory. Dry weather in the winter and early spring was followed by abnormal rain in April and May just as most crops were expected to be planted. This was followed by even more rain in September and October when valuable root crops were due to be harvested.

As a result of this weather most arable farmers suffered with lower than normal yields and poorer quality wheat, rape, field vegetables, potatoes and sugar beet.

Probably the greatest worry will be the lasting effect of heavy machinery travelling over saturated fields causing serious damage to the soil structure. Many fields will take several years of careful management to redress the condition of their arable soils. Most arable crops require good soil structure and the absence of ‘pans’ in their fields. All arable crops need their roots to be able to breathe and penetrate the soil without difficulty and waterlogging.

The yield and quality of wheat and rape produced in 2012 was well below average. Fortunately the price rise has helped growers to cover costs. The prospects for these two crops looks fairly optimistic with 2013’s future prices holding up.

Unfortunately most pea crops and 70% of potatoes are sold on forward price contracts and 2012’s poor yields will badly affect their returns. In 2013 contract prices will have to increase considerably to encourage farmers to continue to grow these crops. Sugar beet because of its longer growing season will produce an average yield at the relatively low contract price. I have always felt that another outlet besides the British Sugar Corporation would produce a more competitive price structure and may be good for British Sugar itself; competition is, after all, healthy in any industry.

In the year 2013 we will be looking for a normal year in terms of climate and hope that the experiences of 2012 will not be repeated; with farmers having the chance of redressing the affects of 2012 both physically and financially.

£ THE HAxEy HOOD Without doubt one of the oldest local traditions in England, probably dating back to the fourteenth century, the haxey hood takes place on January 5th 2013 on the Southern border of the Isle of axholme, in North Lincolnshire. a bizarre game akin to rugby, at around noon the Lord of the hood and his boggins begin a tour of the four public houses in the parish. after the ‘Fool’ makes a speech, the haxey hood begins, with a rugby scrum or sway that can number up to 200 participants. We had five bridesmaids, three best men and seven ushers which was quite a crowd but it was lovely having such a big group involved in our big day!

I knew my dress was the one for me!

T

here are so many little things you don’t think of when planning a wedding!

I was very lucky I had a lot of support from family and friends, I had a huge folder with everything organised in sections I had at least three ‘to do’ lists going at any one time! Drew and I met in 2005 when he was staying with mutual friends.

whilst this was not it, it was perfect nonetheless. It was ivory, with a sweetheart neckline, corseted top and subtly embellished bodice, it was beautiful but understated.

The wedding grew and grew, with five bridesmaids, three best men and seven ushers, but it was lovely having a huge group involved in our big day.

We held the reception at my uncle and aunt’s golf club, We’d been together for 18 months when Drew went down which made organising the day much easier and with canapés on one knee over supper at a local restaurant. He had even and champagne on arrival, our photographs were able to be seen my parents the day before the meal to ask permission The day was really relaxed, just the way we wanted which I think is so romantic!

We decided the theme had to be ivory, gold and coral, and that we’d marry on the seventh of the month, this being our lucky number and the number of our house.

It’s impossible not to sound clichéd, but its true; once I had tried the dress on I knew it was the right one for me. In my mind I always had an idea of what I thought I wanted and

taken in beautiful surroundings. The day was really relaxed, just the way we wanted it to be, and everyone we chose to be part of our day really took the role on with enthusiasm and helped in so many different areas.

ong after your wedding cake has been eaten and the flowers have wilted, your photographs will prove a lasting legacy for the happiest day of your life.

Remember that photography and videography are not interchangeable, and each serves a very different purpose.

Whilst a wedding DVD will provide a literal record of your day, with the moments, funny outbursts and expressions you may have missed, wedding photographs, when kept on your mantelpiece or on your desk at the office, have the potential to be moments frozen in time. It’s important, then, to freeze them perfectly, and to do so with a high level of both technical and creative mastery.

Fortunately, the advent of digital cameras plus Photoshop and a new generation of technology-savvy digital photographers has provided brides with the greatest ever scope for creative, clever and artistically shot images.

In general, most photographers will shoot a combination of formal (i.e: staged) and reportage photography (i.e: unposed, unobtrusive, on-the-fly). Look for a photographer who values natural light, as well as being competent with flash, one that can provide an album as well as digital images.

Main image, reportage photograph is ad-hoc, rather than posed. It’s a great technique for capturing natural expressions and suits shots of a bride getting ready in the morning.

Expect to pay between £1,000-£2,500 for a good photographer who includes post-production work; there are some who provide an ‘images on the same day’ service which is certainly convenient, but images reach their customers untouched and this service usually doesn’t include professional prints and albums.

Here, we’ve asked one of the area’s most experienced wedding photographers to provide his recommendations for the top ten must-capture shots of the day, and for advice when you’re looking for your wedding photographer.

1. I’m Getting Married in the Morning: Many brides opt out of having their photos taken in the morning. We always encourage brides to allow photographers to shoot them preparing for the big day.

“It’s amazing how many interesting and beautiful images you can capture in such a small amount of time, and in just the surroundings of your bedroom’s four walls!” says Ed. The first drop of champagne for breakfast, the finishing touches to your hair and make-up, the proud father looking on as his daughter walks down the stairs in her wedding dress... these images all need to be captured forever!

2. The Small Details: A growing trend over the past few years has been the importance of shooting the fine details.

Whether it’s the rings placed on an interesting texture, or the bride and groom’s place names at the top table, these incidental images help to break up any wedding album from just being a book of ‘people pictures.’

3. I do! If you’re lucky enough to have an easy-going vicar or registrar, that doesn’t mind photos being taken during the ceremony, you can get really memorable images of the two of you exchanging your vows and saying those all important words; ‘I do!’ (or even better, a ‘you may kiss the bride’ shot).

The first drop of champagne for breakfast, the finishing touches to your hair and make-up, the proud father looking on as his daughter walks down the stairs in her wedding dress...

All of these images need to be captured and preserved forever!

Formal shots still feature in many photographers’ remit, but they can still look formal and fun.

A professional photographer can still get capture images on dark or overcast days, above, in dark rooms, below, or in difficult conditions like your first dance, right. Don’t leave the responsibility of photographing your wedding to a well-meaning family friend!

4. Capture the Kids: Whether they’re screaming in the church, or looking as cute as a button, running around the grounds of your venue, there’s no getting away from the fact that kids can make very picturesque subjects for photographs.

5. Just the Two of Us: Both brides and grooms can be camera shy.

If you or your husband-to-be aren’t particularly fond of having your photos taken, the opportunity of having a pre-wedding shoot with your photographer is always a good idea.

“I always offer a pre-wedding shoot as standard on my packages as it means I not only have the chance to get to know my couple, but they also have a free photoshoot and benefit from seeing how I work, and also which poses work for them.” says Ed. “Experience of a shoot with me beforehand helps them to relax on the big day which results in better images.”

6. All Together Now: Some modern photographers are not huge fans of boring group shots where the whole family are lined up, resembling a football team defending a free kick.

So, how do you make these must-haves a more fun shot?

“Personally, I just get the group to hold hands, spread out, walk towards me and look happy.” says Ed. “If I’m really lucky and happen to be shooting at a stunning venue, I make sure that this is in the background of the image.”

7. Speeches: One the most emotional parts of any wedding is the speeches, from the father of the bride, to the groom and the best man.

Whether it’s a tear coming from the bride, groom, or a family member sat at one of the tables, make sure your photographer is keeping an eye out for people showing their emotions. It’s images like this that add drama and atmosphere to your final wedding album.

8. Cutting the Cake: One of the most traditional photographs to be taken at any wedding is the cake-cutting shot.

“I don’t think I’ve ever been to a wedding and not seen the happy couple scream out for a shot of them cutting the cake.” says Ed. It may not be the most imaginative image of the day, but you’ve paid a lot of money for the cake... at least get a shot of you with it before all your friends and family eat the lot!

9. First Dance: It’s been a heck of a long day, and no doubt it fels like it has gone too quickly. Everyone has enjoyed a drink or two and it’s time for you and your other half to take to the dance floor for the first dance.

All eyes are on you, including the lens of the official photographer and in a dark room with a moving subject, this is one of the trickiest shots to capture... it really highlights the difference between a poor photographer and a good one.

The first dance is quite intimate, with the couple really close together, holding one another tenderly. So, make sure that your snapper concentrates on shooting an image that really captures the moment. The lights, the crowd of friends and family in the background, this is a picture-perfect situation if ever there was one.

10. Relax and Enjoy the Day: You may want to get great shots of you both looking stunning, but you also have to make sure you enjoy the most important day of you life.

Try to imagine that the official photographer isn’t there; that they’re just one of the guests. This way the photographer will not only get more natural photos of you, but you’ll also make the most of your wedding day.

The interior is tastefully finished and well-appointed with a lovely leather dash.

The cherry wood boot is nice too, but as it’s a £4,000 extra and given that it’s less practical than carpet, it’s one optional extra we’ll live without!

M

ercedes Benz cars are beautiful. It’s true that BMW rivals generally have the edge on ride and handling. It’s also true that Audis have build quality nothing short of bullet proof with exceptional ergonomics and lots of kit.

Still, there’s something about a three-pointed star that gives a car a touch of class, and nothing but nothing has more class than the firm’s Shooting Brake CLS. The term is now somewhat dated, but Shooting Brake traditionally referred to a pre-war car made to carry rich shooting parties - space and luxury were crucial.

Over the years, less costly estate cars, Land Rovers and pick-ups rendered the shooting brake redundant, save for a few motoring oddities like the Ferrari FF.

The firm’s E-Class may offer a larger boot and wider tailgate, but look at the CLS... it’s beautiful from any angle with a gracefully curved rear

Mercedes Benz CLS250CDi Price: £49,360.

Engine: 2.1V4 16v diesel.

Performance: 0-60mph 7.8secs, top speed 146mph.

Fuel economy: 53.3 combined.

Equipment: Leather, electric seats, windows, mirrors. climate control, cruise control, Bluetooth.

Still, Mercedes has resurrected the term and remained faithful to the remit of creating a posh estate.

They’ve grafted it onto their CLS model which itself is somewhat of a motoring anomaly; an executive saloon that pretends to be a coupé, and visa versa.

It’s true that the company offers a comparably sized estate in the form of its E-Class model, which is also considerably cheaper and has a more practical boot.

What you can’t deny, though, is that the CLS Shooting Brake is drop-dead gorgeous from any angle and has a beautifully appointed interior.

Prices start from a snip under £50,000 for a CLS250CDi and rise, both through AMG Sport trim and larger engines, to the dizzy heights of £83,000 for the 6.3V8 AMG model.

There’s really no need to opt for anything more than the base model which, with a 2.1 four cylinder diesel engine, will still sprint to 60mph in 7.8 seconds, reach 146mph at full tilt and still return 53.3mpg combined, or 60mpg on the motorway. In short, there’s plenty of power without going further up the range.

As an executive car, even our base CLS came well appointed with 18” alloys, seven speed automatic gearbox, air suspension, power tailgate, windows & front seats, climate control, cruise control, wood and leather, sat nav, Bluetooth, and DAB radio with iPod integration.

A £3,000 Luxury package provides higher quality leather upholstery and leather covered dash plus a choice of more contemporary colourways. Dig a little deeper and you’ll enjoy heated seats, adaptive cruise, air conditioned seats with massagers and a TV tuner.

One option we’re happy to live without is the wood-lined boot. It looks lovely, but it should, given that it’s a £4,000 extra.

We’d avoid the bling AMG models too, with their aggressive body kits and firm ride, opting instead for a few optional extras such as the firm’s adaptive cruise control and a wider colour palette for the car’s interior.

The Shooting Brake’s ride is pliable in base trim, if a little firm on AMG models, with larger wheels and sport-tuned suspension. Ride quality is acceptable, but quieter on well-maintained motorways rather than the county’s bumpy back-roads.

For load-carrying ability, the svelte lines of the CLS is not as conducive as the more conservative E-Class, and a BMW 5-Series with V6 diesel in MSport trim will provide a sharper drive for the same money.

Nonetheless, for driver appeal, class and beautiful looks, the CLS is stylish and luxurious as well as being brilliantly built.

The car’s only achilles heel is the cost of all the special extras that transform the CLS from a less-practical estate into a true Shooting Brake from days gone by.
