Valle Salado de Añana: the origin of one of the best salt varieties in the world Valle Salado (Salty Valley) and the town of Salinas de Añana (Basque Country-Spain) produce one of the best salt varieties in the world: Añana Salt. Its quality is based on its fully traditional and ecological production system and on the opinion of some of the best cooks in the world.

Valle Salado de Añana is a unique landscape subject to a recovery process that consists in thousands of platforms or salt-pans, channels, wells and storage areas. Añana Salt is the fruit of the natural evaporation of the brine from the valley’s springs. The crystallisation process is based on three factors: the sun, the wind and the traditional techniques used by the salt-workers.

Cooks of prestige, such as Martín Berasategui, Joan Roca, Pedro Subijana, Eneko Atxa, Andoni Luis Aduriz, Dani García, Patxi Eceiza, Francis Paniego and Diego Guerrero, with 22 Michelin stars among them, value the quality of Añana Salt and use it in their restaurants. They also help to disseminate the recovery and conservation and Cultural Landscape of Valle Salado, a candidate to become a UNESCO World Heritage Site.

Four salt varieties are produced in Valle Salado: Mineral Salt from the springs Extremely pure salt crystals thanks to the natural origin of the brine and to the evaporation process.

The brine flows from underground veins of solid salt that are over 200 million years old.

Rich in minerals and trace elements, it is recommended to enhance the flavour of all types of food.

Salt Flower flakes Crunchy flakes that form on the surface of the salt-pans during the brine evaporation process.

They are collected by hand before they sink.

Chuzo (Salt Stalactites) Fine, pure and high-quality salt stalactites that form due to the leakage of brine in the salt-pans, structures and channels.
