Windsor boasts 9 college signees

BY JADYN WATSON-FISHER Windsor High School has nine signees who will continue their athletic careers at a college or university after graduation. It has the most out of the other schools in the Greeley Tribune’s coverage area.

Several students have already signed their National Letters of Intent to participate at various institutions. The regular signing period for Division I football began Feb. 12 on National Signing Day. Some, however, inked their commitments in the fall.

Athletes who are competing in Division I or Division II sports other than basketball or football have been allowed to sign at any point since Nov. 13, 2019.

Here are Windsor’s college-bound student athletes:

WYETT EKELER, FOOTBALL Wyett Ekeler signed his NLI on Dec. 18 to play for the University of Wyoming. He was the 4A Northern Colorado Player of the Year.

The senior rushed for 1,435 yards on 146 carries for 22 touchdowns. Ekeler also logged 218 yards on kick returns. He is the brother of former Eaton High School standout and Los Angeles Chargers running back Austin Ekeler.

TYLER SHIELDS, FOOTBALL Tyler Shields signed to play at Colorado Mesa last week. Shields recorded 570 rushing 6|

yards and seven touchdowns in his varsity career. Shields had 301 yards and three TDs his senior year before a knee injury prematurely ended his final season.

Brady Bohlinger committed in early February to join the Wyoming football program. He finished his career at Windsor with 203 total tackles, including 104 solo. He also recorded eight tackles for loss and 2.5 sacks. Bohlinger was named an All-Conference First Team member and All-State Second Team member his senior year.

Ellie Garrett will play at Eastern Washington in the fall. Garrett was named to the Tri-Valley League All-Conference First Team.

She was an honorable mention selection her freshman year and Tri-Valley Athlete of the Year her sophomore season. Garrett has previously made the USA Volleyball Junior National Championships All-Tournament team.

ISAIAH SALAZAR, WRESTLING Isaiah Salazar (182) signed in the fall to continue his career at Minnesota. He has won three state titles and is working toward a fourth, like Greeley Central’s Andrew Alirez accomplished in 2019. Salazar is 135-6 through his most recent victory against Logan Staatz of Roosevelt.

DOMINICK SERRANO, WRESTLING Like Salazar, Dominick Serrano (133) signed last fall to wrestle at Nebraska. He has three state titles in three years and is also on track to earn a fourth. Serrano is 134-0 through his most recent match against Roosevelt’s Shug Cantu.

CODY EATON, WRESTLING Cody Eaton will stay home and wrestle with

Windsor to run 3 for mayor, 3 uncontested for town board

BY CUYLER MEADE April’s municipal election in Windsor features a fascinating three-way race for mayor, but no such excitement will be found in the races for three open town board seats. All three open seats — Districts 1, 3 and 5 — will see uncontested races for the positions.

The mayoral candidates include two current town board members, David Sislowski and Paul Rennemeyer, and a 17-year-old Windsor Charter Academy High School student, Hunter Rivera.

For District 1, the candidate

is newcomer Scott Charpentier, a 15-year Windsor resident and the founder and owner of Fort Collins Mortgage. For District 3, incumbent Ken Bennett will be the sole candidate.

District 5 will be represented by newcomer Victor Tallon, who was Windsor’s planning commissioner for 20 years.

A Meet the Candidates event is scheduled for March 17, hosted by the Windsor Chamber of Commerce, the League of Women Voters and the Clearview Library District.

The event will be held at 5:30 p.m. at the Windsor Community Recreation Center.

Move over Paul Bunyon Ax-throwing bar set to open this spring

ou’ve gone bowling. You’ve hit the movies. And you’ve putt-putted more times than you can count.

If you’re in the market for a new way to spend your nights in northern Colorado, Loveland’s forthcoming ax-throwing establishment, Axe to Grind, might be for you.

“We are that something new,” said Jonathan Frazzell, Axe to Grind’s general operations manager.

Axe to Grind is set to open this spring at 217 E. 3rd St. in Loveland, Frazzell confirmed. It will be the chain’s third location, joining sites in Manhattan, Kansas and Sioux City, Iowa.

Jumping on the ax-throwing bar trend that been spreading through major cities across the world, Axe to Grind is the second dedicated ax-throwing establishment to be announced in northern Colorado. In December, axthrowing bar The Axe and Ale announced it would open in Fort Collins this spring.

Axe to Grind will feature ax-throwing lanes, but Frazzell said the Loveland location’s layout has not been fully determined yet. The business will welcome throwers 12 and older, though throwers who are under 18 will need to have a parent or guardian sign a waiver and be present while they throw.

Frazzell said throwers who are 10 and 11 will also be evaluated on a case-by-case basis to see if they have the strength and dexterity to participate.

Axe to Grind is in the process of getting its liquor license, and Frazzell said the business will limit its offerings to beer. They will sell some snacks but also welcome customers to bring in their own outside food.

“We like to think of ourselves a social house — we’re not a bar,” Frazzell said, adding that while Axe to Grind won’t have a drink limit, the staff will monitor customers’ consumption.

“We should be the first stop in the night versus being the last stop,” Frazzell said.

Frazzell said Axe to Grind is excited to open its first location in Colorado — a state he says has been on the company’s radar for a while.

“We were looking for a homey spot still with that big-city entertainment value,” Frazzell said. “(Loveland) just felt like a good fit.”

Joining the ax-throwing phenomenon, Axe to Grind opens this spring in Loveland.

Robert Harris Windsor’s first and most eccentric hotelier

W

indsor’s first hotel, the Hotel de Harris, tells the story of a beloved local fur trapper with an indomitable spirit.

Robert Harris, a hunter and trapper born in Canada in 1829, arrived in Windsor around 1881 to trap muskrats around what is now Windsor Lake. He quickly realized the lake’s potential to become a hunting attraction and built the Hotel de Harris in 1883 at the northwest corner of 5th and Main streets. In 1884, Robert’s wife Sally Ann arrived from Canada with their daughter, Bertha.

The hotel became renowned for Sally Ann’s dinners of roast duck and currant jam. Robert and Sally Ann hosted visitors from across the nation, including Colorado

governor Benjamin Harris Eaton.

Robert also ran a muskrat trapping business, trained hunting dogs and horses, and grew his own species of rose.

Additionally, he believed he could predict the weather using muskrat pelts. For years, the Windsor newspaper ran a column of Robert’s weather predictions.

Incredibly, Robert did this all with life-changing foot injuries. Before coming to Windsor, Robert’s feet were severely frostbitten. By 1908, both were amputated, but he continued to hunt, host visitors, and run his fur business.

In December 1912, Windsor’s townspeople, who loved Robert dearly, came together to surprise him with a wheelchair they purchased. When it was presented, the old

trapper was so overcome with emotion he couldn’t speak.

After Robert passed away in April 1914, businessman Charles Yancey purchased the Hotel de Harris and moved it to another area of town. The building survived until at least the 1940s, when it is mentioned in a local history book.

The Hotel de Harris may still exist today.

WINTER ENCHANTMENT Snow heightens enjoyment at Magical Forest event

hile the holiday ornaments, lights and tree skirts have long been put away, used Christmas trees in Windsor found a second purpose.

The town kicked off its second annual Magical Forest event Feb. 8 at the south side of Eastman Park, 7025 Eastman Park Drive, with around 800 recycled Christmas trees.

“Our community brings in their old Christmas trees and we just let the town play with them,” Lexie Spykstra, recreation coordinator, said. “It gets kids outside playing and having fun.”

Attendees at the event had the opportunity to construct, create and craft anything their imagination desired using a variety of hand tools and supplies like saws, hammers and twine.

“People can come out and build their best ‘she shed,’” Spykstra quipped. “And it’s a great learning opportunity for kids that may have not used these kinds of tools before.”

Fransen Pittman General Contractors along with State Farm Insurance sponsored the event.

The Human Bean donated hot chocolate and coffee to keep attendees’ insides toasty warm throughout the afternoon.

Belinda Nunez brought her two sons, Luke, 7, and Ezequiel, 8, out to the event. The family, who reside in Severance, recently moved to Colorado from California.

“I heard about this on Facebook and I thought it would be fun and good for the boys,” Nunez said. “It’s warm now, so it’s a great way to get the boys outside.”

Creations crafted from the trees will be left up in the park for around two months for kids and parents to enjoy.

After that, they will be taken down and the trees will be shredded.

here’s pickled peppers, pickled eggs, pickled carrots, even pickled pigs feet. But pickleflavored vodka?

Yep, and if you are a looking to add to your pickle palate, The Heart Distillery has released its own version of the savory spirit.

In February, dozens of pickle-loving people attended the distillery’s pickle party to celebrate the release of its Pickle Shotz vodka.

The concoction is a combination of the distillery’s house-made vodka infused with dill pickle and

three-pepper brine from the Fort Collins Pickle Company.

The idea to create a pickle-infused spirit sprouted from the distillery’s connection with the Windsor Garden Center, Dustin Tanski, tasting room manager, said.

“We have so many ingredients in our garden center that tie into something savory,” Tanski explained. “I then started using brine from Mykel, owner of the Fort Collins Pickle Company, to make pickle-infused vodka.

“The demand for it was so great that we decided to continue our relationship with Mykel to solidify a commercial recipe to create this.”

After a few failures, the distillery finally nailed its secret blend of pickle-vodka perfection.

“We went through a fair number of tries,” Tanski explained. “What I didn’t want was for ours to taste like everybody else’s or to be too vinegary.”

From Bloody Marys to a Pickle Rick, or even just a straight shot served in a hollowed out pickle, the vodka makes a sassy, yet savory cocktail.

“It’s very good, I’ve had it before and I really like it,” Troy Wagner from Windsor said. “I mix it with the Real Dill Bloody Mary mix and it’s just amazing.”

If you are looking for something a little more bubbly, yet still pucker your kisser, the distillery’s drink of the week is a pickled seltzer.

“Even people who don’t necessarily like pickles, they love this vodka,” Tanski quipped. “We plan to keep the Pickle Shotz around for a long time.”

Safe Sitter Essentials, 8 a.m., Windsor Community Recreation Center, 250 11th St. This is a comprehensive, physician-developed babysitting course that will teach safety skills, first aid and rescue skills, care of a choking infant and child, infant and child CPR, life and business skills-including babysitting as a business and success on the job, child care essentials and more. It’s designed to equip students to feel confident and be safe when they’re home alone, watching younger siblings or babysitting. Curriculum is geared for students in grades 6-8.
