Wabi-Sabi: Imperfection proves “perfect” for interior design

Still Grounded.

Being largely stuck at home may be starting to wear on you; I know it is me. But as we all anxiously await what the fall may bring, there are some things we can do to make home life a little more pleasant.

How can you implement hot design trends in your real-life surroundings? We have some ideas about that. And what about the Japanese principle of Wabi-Sabi? The idea of embracing the imperfect has a lot of appeal right now, when perfection can be hard to attain, but can we apply it to our western aesthetic? Why not?

And as long as we’re spending more time with family, so how can we enhance the time we spend together? There’s a lot to be said for organization to maximize quality time. And the addition of a spa, might just get your family away from screens and outside with each other.

I know most, if not all, of us are trying to rush 2020 to its very timely demise, but (and this is something I have to remind of myself daily), we may never again be in such a position to really revel in our home and family; try and make it count.

by Colorado State University Extension and the National Center for Home Food Preservation.

In Longmont’s own backyard, there is an awesome resource through CSU Extension Family and Consumer Science Extension Agent, Anne Zander. Anne is a long-time expert in food safety and food preservation.

There are many methods of food preservation.

According to Zander, “....you can freeze...dehydrate, ...can high-acid items with a boiling water bath canner or using a pressure canner for low-acid vegetables, fermentation and pickling.”

Anne says“Some mistakes that first time preservers make are: Doubling a recipe to share time, which only causes you to have a product that you will not like. Remember that food preservation is a ‘science’ and there is a reason to follow tested recipes. The second thing that people like to do is alter a recipe and add their own preference of ingredients, such as adding more onions to a salsa recipe and leaving out the vinegar or lemon juice that is needed to increase the acidity of the salsa so that you can use the boiling water bath method to heat and seal the jars.

Stick to the tested, reliable and safe recipes.”

The internet can be a varied resource as well, but to make sure you’re getting tested and safe recipes, search with the phrase, “State University Extension” and add whatever method and fruit or vegetable you are interested in preserving. For example, type “State University Extension, pepper jelly” into your preferred search engine and a wealth of reliable results will pop up from all over the country. Or visit your local library. Zander says, “The Ball Blue Books and other Ball recipe books dated 1994 to current all have safe recipes because Ball has testing labs specific to food preservation.”

She warns you to be wary of unverified or outdated sources, however: “Finding a book on how fast and easy microwave canning is or the LongmontMagazine.com

Zander will be offering CSU Extension food preservation classes online starting mid-September and continuing through until the end of 2020. Due to COVID-19 the classes/presentations will all be virtual and not face-toface. Each participant will get resources sent to their email address, so that they have some great documents to refer to. There will also be some YouTube videos to show participants the howto’s— something that they would have seen in the face-to-face training. There will also be time for participants to ask questions, as that is a major part of any good training.

Generally speaking, there are two top garden producers that spark a lot of interest in preservation: zucchini and tomatoes. Here are some quick tips for both.

Zucchini

Zander says that during this time, most people have abundance of zucchini. “Dehydration is a great way to preserve this vegetable by making zucchini chips. When you dehydrate...it keeps its fresh intense flavor.

your garden: Choose young squash with tender skins. Wash and scrub with running water and then grate. Steam blanch it in small quantities for 2 to 3 minutes until translucent. Pack it in measured amounts into freezer containers leaving 1⁄2 -inch headspace. Cool by placing the containers in cold water.

Once completely cooled, seal, label with date, and freeze.

“If the zucchini is watery when thawed, discard the liquid and then it’s ready for zucchini cake, bread, muffins, donuts, etc.”

Tomatoes

“You can make a salsa, tomato jam, dehydrated tomato slices or do try grinding up the dried tomato slices into a powder and you will have a wonderful jar full of the fresh flavor of tomatoes to add to pizzas, stews,sauces, etc. If you are not following a tested reliable recipe for salsa you can then prepare your own recipe but you need to freeze it and not store it in your cupboard.”

So whether you are a first-time food preserver or you have preserved foods for years there have been changes and more research done in order to provide safe and delicious recipes.

5 cups chopped tomatillos (or green tomatoes) 11⁄2 cups seeded,chopped long green chiles 1⁄2 cup seeded, finely chopped jalapeños 4 cups chopped onions 1 cup bottled lemon or lime juice 6 cloves garlic, finely chopped 1 tablespoon ground cumin (optional) 3 tablespoons oregano leaves (optional) 1 tablespoon salt 1 teaspoon black pepper Yield: 5 pints Combine all ingredients in a large saucepan and stir frequently over high heat until mixture begins to boil, then reduce heat and simmer for 20 minutes, stirring occasionally.

Caution about additional ingredients: Adding ingredients not listed in a salsa recipe will result in an unsafe product if done before canning. This includes thickeners as well as ingredients not listed in the recipe. Do not thicken salsas before canning. Salsa can be thickened after you open the jar by pouring off some of the liquid or adding cornstarch, tomato paste, or other thickening agent. The flavor can be enhanced with additional ingredients such as corn, black beans, or other additions just before serving.

Filling the Jars Fill prepared, hot, clean jars with hot salsa, being careful not to leave any salsa on the rims, leaving 1⁄2-inch headspace. Remove any air bubbles and adjust the headspace if needed. Wipe jar rims with a clean, damp paper towel. Put on lids and screw on metal bands.

Adjust lids and process in a boiling water canner for 20 minutes at 1,001–6,000 feet; or 25 minutes above 6,000 feet.

Processing Using a Boiling Water Canner 1. Use a rack to keep jars from touching the canner bottom and to allow heat to reach all sides of the filled jars. Fill the canner half full of water.

2. Preheat water to 180°F. Place empty jars into the canner to preheat to help prevent breakage. Jars can also be preheated in a dishwasher. Pretreat lids LongmontMagazine.com

3. Fill hot jars according to the recipe instructions. Load filled jars into the canner, keeping them upright at all times.

to bring water 1–2 inches above jar tops. Avoid pouring water directly on the jars. Place the lid on the canner. (If a pressure canner is used for waterbath canning, leave the cover unfastened and the petcock open to prevent pressure buildup.)

5. Turn heat to the highest setting and heat until water reaches a full rolling boil. Once boiling, set a timer for the total minutes required to process the salsa.

6. Keep the canner covered and maintain a boil throughout the processing time. The heat setting can be lowered to a gentle boil as long as the boil is maintained for the entire process time. If the water stops boiling at any time during the process, bring it back to a full rolling boil and begin the timing of the process over, from the beginning.

7. Add more boiling water if necessary to keep the water level above the jars.

8. When the processing time is complete, turn off the heat and remove the canner lid.

Wait 5 minutes before removing jars.

9. Using a jar lifter, remove the jars, being careful not to tilt them, and place on a towel 1-inch apart. Spoilage could ocSeptember/October 2020

cur if the jars are left in hot water.

Cooling the Jars Cool the jars on a rack or cloth at room temperature, allowing air to circulate freely around them. Avoid cold drafts or fans blowing on the jars.

Do not retighten screw bands after processing.

Retightening hot lids may cut through the gasket and cause seal failure.

Testing for Seal After cooling 12–24 hours, test each jar for a seal. Jars with flat metal lids are sealed if any of the following apply: 1. The lid has popped down in the center. 2. The lid does not move when pressed down. 3. Tapping the center of the lid with a spoon gives a clear, ringing sound. (This is the least reliable method.) If a jar is not sealed, refrigerate the contents and use within a few days, or reprocess within 24 hours of the initial processing.

When reprocessing, the salsa must first be heated to a boil before packing in hot jars.

Wipe the jar rims clean.

Use a new lid and process for the full amount of time listed.

Boulder County Fair

Events have been a little different this year as we find our way through, but The Boulder County Fair soldiered on, and adapted with a new format. This year’s entrants competed in a socially distanced format, but nonetheless worked just as hard.

Creating Your Own Home

There’s nothing quite like a good cup of coffee.

But of course, going to the café right now is a bit of a challenge. Fortunately, there is a way to bring the coffee bar experience home.

YOUR BREW METHOD

Coffee lovers can indulge from the comfort of their own home while we all wait for the world to return to normal. Here’s how.

There are four main methods for brewing coffee.

YOUR BASIC SETUP

Where do you put a home coffee bar?

You’ll need a spot near an electrical outlet. You’ll also want space for mugs, filters, spoons and other supplies.

And you’ll want a spot that’s convenient.

Pressure

Hot water is forced through grounds at high pressure making for a strong tasting brew. This is how espresso machines work. Single-serving coffee makers often operate similarly, but with less pressure. They produce a milder taste.

Decoction

Add boiling water to grounds, then let the grounds steep, settle and cool.

Infusion

Also known as steeping, hot water

is added to coffee grounds and left to steep for several minutes before separating the resulting brew from the grounds. The French press is a popular method.

It’s an important question. So we asked Shane Gansen, the Director of Coffee at Brewing Market Coffee.

He continued, “The problem with buying ground coffee is freshness. Ground coffee has more surfaace area than whole bean, meaning it will grow stale faster.

been sitting before you’ve purchased it. Buying from smaller, local suppliers means you can be more confident in its freshness.

ROAST OPTIONS EXPLAINED For a while, dark roasts seemed to be all the rage. Now coffee tastes are trending toward more mild or light roasts.

It can get a little confusing. Gansen offers his thoughts on selecting a good roast.

“I believe light roast coffee is superior to dark roast. The specialty coffee industry is supporting my belief by trending towards light roasted coffees. The thing about a dark roast is you no longer can taste the beans’ original flavors.

“When coffee is dark roasted, you

only taste the flavor of the roasting process. This is why dark roasts, such as French roast, taste like smoke and carbon. Light roast allows you to taste the unique flavor notes of a particular coffee.”

Those who are turned off by the slight acidity of a light roast may want to consider coffees from Indonesia, such as Sumatra or Sulawesi. Coffee grown in Indonesia has a much lower acidity than other growing regions.

This allows a coffee drinker to enjoy the full flavor of a light roast without the same bitterness.

Another critical difference between light and dark roasts is the amount of caffeine present. The darker the roast, the more caffeine you lose.

Niwot Tavern

BY MISTY KAISER for LONGMONT MAGAZINE Just prior to the pandemic crisis hitting in full force, Tara Shaheen and Stacy Szydiek bought a fixture of the Niwot restauant scene—Niwot Tavern—and three months later, shutdowns began. It’s no secret that restaurants have had a tough go this year. Yet, in the midst of all the uncertainty, they have continued to provide Niwot with their favorite menu items via takeout.

“Currently we are open 11 to 8 daily, for takeout only,” Szydiek says. That’s not to say they’re not making adjustments as they go, trying to provide Niwot with a safe spot to venture out.

“We are really trying to get things going, not only in our business, but also in the town of Niwot. We really started to get the ball rolling with our nightly live music on the patio and the car show in Cottonwood Square on Friday nights,” Szydiek points out.

Even the most enthusiastic homechef among us needs a night off now and again and sometimes every family member is in the mood for something different. Niwot Tavern is more than willing to step in, all you have to do is pick it up. “We offer our full lunch and dinner menu at all times. [There’s] little something for everyone, ranging from chicken piccata, udon noodle bowls, Thai spiced citrus salmon, Greek gyros, burgers, meatloaf, and even prime rib on Mondays. We also offer family pack meals.”

Preheat oven to 325 degrees.

In saucepan, combine milk, cream, spices and sugar Bring to a simmer and remove from heat.

Place chocolate in a bowl and slowly add hot milk mixture to chocolate while constantly stirring with a whisk, allowing the chocolate to melt completely.

Temper eggs by adding a bit of the chocolate mixture to them as you whisk constantly. Slowly whisk the tempered eggs back into to the chocolate mixture until incorporated and smooth.

Ladle the mixture into ramekins and place in a large baking pan and fill with hot water until the water reaches halfway up the sides of the containers.

Bake for 40 minutes or until just slightly wobbly in the center.

Remove containers and chill.

We spoke with some local design experts to learn about interior design trends in the next decade. Here’s what we learned.

All of us are spending more time at home lately. And not just full-time workers.

You want utility with comfort.

Enter the organic aesthetic— furniture with rounded shapes instead of hard lines.

Students are learning online, extended family comes to stay for a while, and we’re going out less in our normal day-to-day. To adapt, American homeowners are finding creative ways to make more out of less space.

Scott Rodwin, Skycastle Construction president and Rodwin Architecture principal, deals with it often.

“People [are] focusing on functionality rather than appearance,” he reflected. That means more specialized rooms like offices, home gyms and rec rooms. This preference makes sense considering possible shelter-in-place restrictions.

Rodwin says, “It has to do with the incompatibility of certain activities.

If your kid’s playing Call of Duty, it’s hard to concentrate on a Zoom call.”

Though headphones and mandated quiet times help, they’re not permanent fixes. “Families don’t want to drive each other nuts,” Rodwin chuckled. It’s a better solution to improve room utility and perceived space.

Rodwin explained that improving acoustic separation makes occupants feel blissfully alone. All it takes is September/October 2020

For example, when purchasing bedding, consider function and appeal equally. A set with a thousand beaded throw pillows looks overwhelming. A few soft bolsters with colorful edging feels useful and pleasing.

Bold Colors

If our goal is making rooms homey, then it shouldn’t surprise you that wall color matters.

Color theory has moved us beyond stale, white-on-white neutrals. Folks crave uniqueness in each room.

Imagine creating a house-wide color theme.

It’s not a bad idea to gussy up exteriors, either. Dark siding or brightened window dressings look striking in repetitive suburbs. (Make sure your HOA won’t throw a fit over your color choice, first.)

Remember, homes aren’t doctor’s offices. Don’t be afraid to make bold choices.

And isn’t that what homemaking should be about anyway?

Look around you right now. If you know what makes you happy, you know how to start decorating. Any designer worth their salt will have your back.

What is Wabi-Sabi?

Wabi-sabi is a Japanese term for an aesthetic of transience, incompleteness and imperfection and refers to finding beauty in that imperfection.

Wabi is a matter of being one with nature living a life of humility and simplicity, while sabi is the ability to accept the flaws in things.

Bringing wabi-sabi to the home is applicable especially now when so much time is spent indoors engaging in remote work and schooling and as a result of social distancing.

It also fits the imperfect, difficult times brought on by the COVID-19 pandemic.

Wabi-sabi doesn’t require a large financial investment and time commitment. It can start with something as simple as looking for what’s already in the home and reducing clutter to let individual personality come through the décor that’s chosen.

“I’m a big proponent of authenticity in design. That’s one of the main components of wabi-sabi,” said Driscoll, who follows wabi-sabi in some of her design philosophy. “I keep saying authenticity, just having

Driscoll talks with clients to find out their design plans and if there are things they already have that can be used without having to start from scratch. She encourages applying the idea of “shopping your home,” looking for furniture, accessories and decor that can be refurbished, rearranged or brought out of storage and put to use.

These pieces can make a statement or tell a story that, with some refinishing, painting or reupholstering, can be made almost new again.

Changing the location of a piece or bringing out something put away can change the perception of both the piece and the room.

“It gives furniture new life. It gives the space new life,” Driscoll said.

While shopping the home, it also is a good time to start decluttering, getting rid of those things that no longer are used or needed and crowd a space, Driscoll said.

Decluttering is different from the wabi-sabi idea of embracing imperfection, since clutter can cause mental chaos and not peace and tranquility. A wabi-sabi space is one that is organized and free of what’s unnecessary, not used or doesn’t bring about an aesthetic of beauty.

Engage in Minimalism Reducing to the essential and practicing minimalism go along the same lines of decluttering, but minimalism shouldn’t be applied just for the sake of simplicity but to bring about a sense of order.

“Minimalism—having a lot less stuff and a lot more serene space— does not mean that a space can’t be homey,” Tepler Drobnitch said. “Using a lot of natural materials in your décor makes a space feel homey and healing—our brains are comforted by the subtle, random patterns. A space will always be homey if the few objects that are on display or being used are truly loved and can be safely touched and handled by anyone who visits. Having too many precious items can actually make a space feel pretty scary.”

“Those are going to create that feeling of comfort and beauty that you want to achieve in your space,” Driscoll said.

“You end up with things that are beautiful and comfortable and make you feel more at home. There aren’t extra items that are taking up your space, your visual space.”

A wabi-sabi space that isn’t perfectly matched gives it more character and a homelike instead of an unwelcoming feel.

“In decorating, it is important to echo a color or texture throughout a room or house to make the house feel cohesive,” Tepler Drobnitch said. “However, these days, true matching furniture sets are a statement.”

Matching furniture sets can be overwhelming and hard to personalize and instead, diverse collections of non-matching items are more popular, Tepler Drobnitch said.

matched room, however, matching size is really important. Don’t buy a giant sofa on Craigslist and put it next to the world’s tiniest ottoman,” Tepler Drobnitch said.

To help bring together furniture that isn’t part of a set, reupholster the pieces or add covers so that they have the same materials, textures and color schemes for a more cohesive look. Throw pillows in the same patterns also can tie together couches and chairs.

“Throw pillows in neutral colors bring together different patterns,” Driscoll said. “Don’t get rid of pieces but move them around. Separate that mismatch. It comes back to the imperfection and embracing it.”

“Time blocking is a great suggestion,” Stephanie said. “During those time frames block out 30 to 60 minutes of time to work while your children concentrate on a project for the same amount of time. You may need headphones or access to a quiet space for video calls to function with team members without the dogs barking or phones going off.”

A unified theme can create needed structure. “Find out what works for everyone. Set mealtimes, lunchtime, breaks, 10- or 15-minute recesses.

Create times that allow a mental break for everyone. This is especially good for children to create a routine that they can anticipate.”

“I love to have separate colors for each member of the family,” she said. “Color coding the calendar allows everyone to see what each person has to do, from all of the schoolwork to home-centered activities such as chores. Have dedicated bins or baskets for each person. With kids’ stuff, I would have color-coded bins with matching supplies and folders, so they don’t have to search everywhere for their own items. At the end of the day that allows everyone to put their things away.”

Organizing is one of Stephanie’s passions. “In terms of creating a designated space, clear the surfaces off. Stash the piles of papers that might be adding to chaos. I recommend 30 minutes one evening a week and once on the weekend.

We’re all in this together and we are figuring out how to adapt to the times. Especially if you have school age kids, you probably find yourself being a part- or full-time teacher and teacher assistant. Give yourself grace. You can make it work for you and your family.”

The physical requirements are minimal: A flat foundation – though some hot tubs require a concrete pad, many can be placed on any flat surface – and an electrical 220 outlet. While Gallegos said most hot tub buyers station their hot tub outdoors, hot tubs and spas may be installed indoors.

Swim spas for athletes In contrast to a hot tub for soaking, many athletes, craving their gym pool experience, are installing swim spas, an aquatic fitness pool that starts at about 150 by 90 by 50 inches and produces a continuous current. “This gives swimmers a convenient, private place to exercise, and you can set the custom lap speech and jet strength to create a workout that works for you,” Smith said. Bigger Hearts, Stronger Streets

The idea of turning Longmont’s Main Street into a pedestrian-friendly walking mall didn’t start with the COVID pandemic.

The historic thoroughfare in the heart of the city has long boasted diverse eateries, funky fashion shops, mod music stores and other independent businesses that perfectly fit the walking mall model. Combined with Main Street’s central location in the city, the mom-and-pop appeal of its business community has made it an ideal candidate for a walkable, open design.

While the idea has long been circulated among city planners and residents alike, it took a global crisis to test its viability.

The sudden arrival of the COVID pandemic was a challenge to commerce of all scales and types across the nation, and the scrappy community of businesses on Main Street was no exception. The sudden need for social distancing and other safety measures directly conflicted with the business model that many of the 38 LONGMONT MAGAZINE

shops had been following for decades. Breaking bread with others at the same table, offering news and gossip over clothes racks in an intimate space, crafting original art in a cozy Main Street studio – all of these seemingly harmless practices had suddenly become too risky to continue.

That’s when the community came together to change the model. In May, business owners and representatives from the Longmont Downtown Development Authority started collaborating to find ways to welcome residents back to Main Street in a safe way. In looking for a solution to the new distancing requirements and safety practices, they didn’t need to look far. Indeed, the spaces in front of the shops offered the perfect solution.

“We looked at the real estate on Main Street, and we looked at it differently,” said LDDA Executive Director Kimberlee McKee. “We wanted to figure out how we could open up this space for the community to just come and walk around. We knew that in this challenging time, outdoor spaces and dining together is still really important to our community.”

The group came up with the “Bigger Hearts, Stronger Streets” program as a way to welcome shoppers, diners and community members to one of the city’s most important gathering spaces. Beginning in July, the city closed Main Street vehicle lanes and parking spaces, converting the area into pedestrian friendly walkways and stretches that could host outdoor tables, stalls and stages.

“We may not be able to gather in the way that Longmont historically has done it, but we can be creative,” she said. “We want our businesses to be open and be able to stay open.

Abiding by local and state guidelines is helping to make their businesses stronger.

“They want to be here for the long haul,” she added.

East Boulder County Artists (EBCA) is presenting a virtual studio tour, September 17-20.

“Our decision was made in an effort to provide support to our artists, many of whom rely on the sales of their art as their source of income,” says Robin Bryant, president of the organization. “After canceling our spring tour, we wanted to provide an opportunity for our artists to showcase their work to the community. We did not want to put our artists and any community members at risk, given the challenges with Covid. So a virtual tour seemed to be a viable option.

“We have 26 artists participating in this virtual tour. We are relying on social media and newspaper ads to direct the community to our website, www.ebcacolorado.org, for LongmontMagazine.com

For Bryant, the biggest challenge in holding a virtual tour is that “the community cannot physically come into our studios to see and touch our art. Much of the work we create should be touched and held in your hands, to be viewed up close and in person. Previous in-person studio tours have provided both the artists and community members a chance to meet and for our visitors to see where and how we work to create our art. From the technical standpoint, this is new territory for many of us. This has provided an opportunity and motivation for our artists to create online sites as a new way to market and sell their art.”

On the plus side, she notes, “In a changing world, this effort will benefit us as we continue to explore ways to introduce our art to others who are not able to attend an inperson studio tour.”

Road Trips That Make Memories Just toss a few darts at a Colorado map—and you can easily find a treasure trove of towns filled with fun ways to get outside and explore the state. Scenic byways – lead to unexpected adventures

Lenore Bates has a cool job. She’s the Colorado Byways Program Manager with Colorado Department of Transportation. So she knows a thing or two about which roads lead to magnificent destinations in Colorado.

Her number one tip is to check for road closures before hitting the road.

That’s when Google maps comes in handy for finding the closest Kum & Go. Let’s be honest. Part of taking road trips is road trip food and stops along the way—if you can convince the driver to stop. Not all overlooks are worth stopping for—but you never know unless you actually stop.

On a recent trip to Pagosa Springs, Bates said the Piedra River overlook was worth the stop.

If you plan a hike into the road trip, primitive hot springs can be found along the Piedra River.

If you make it Cortez, and love wine, a visit to Sutcliffe Vineyard is worth a spot on the itinerary.

Interested in a bed and breakfast experience near the Colorado Utah border? Consider a few days in McElmo Canyon, said Bates.

“In McElmo Canyon, we visited Hovenweep National Monument. It’s just amazing, we hiked a one hour trail that went to all these ruins.”

About an hour from Cortez is McPhee Reservoir, the second largest in the state. Boaters, kayakers and paddle boarders are drawn to the location not only for water recreation, but some unexpected hidden gems.

“McPhee Reservoir has these rock features called the amphitheater and brain rock. When you come up on these geologic features they are amazing,” Bates said.
