Free meal service for Windsor seniors is still operating during COVID-19

The COVID-19 outbreak has not stopped local organizations from providing free meals for Windsor seniors.

Eric Lucas, Windsor public services director, said the Weld County Area Agency on Agency provides free meals. The Windsor Community Recreation Center is a host site.

Seniors typically go to the recreation center to sit down, have a hot meal and socialize with each other. The center serves about 10,000 meals per year at the center.

“We have a lot of seniors who get together for the food and social interaction,” Lucas said.

“Anecdotally, I know there are leftovers and (some) will take leftovers with them. Those folks need the food and if it wasn’t for us and the service, they may go without.”

The residents might not be able to sit down and play Bingo together right now, but they can receive food.

Lucas said the program transitioned to a drive-up service

in the rec center parking lot. Staff members also deliver meals to roughly 10 residents who cannot leave their home.

Distribution previously took place on Monday, Tuesday, Wednesday and Friday. It will occur every week day, beginning next week.

“We wanted to ensure that no matter what happens we can continue to serve them food,” Lucas said. “That’s why we are going to five days, so they have at least one good meal five out of the seven days.”

To obtain a meal, seniors should call the rec center two days prior to the pick up day. For example, residents should call on Monday if they need a meal for Wednesday.

Any Windsor resident aged 60plus is eligible. Donations are accepted.

Lucas estimated the location served 50 meals per day. That jumped to almost 70 for Friday.

“The need is beginning to increase,” he said.

Meals are made by the University of Northern Colorado Dining Service, the Area Agency

Windsor Parks, Recreation and Culture staff hands a meal to a senior at one of its free distributions. on Aging said. They feature a hot portion, fruits and vegetables.

Lucas has eaten leftovers from previous meals and said he thinks they are “pretty healthy” and “well balanced.”

The Area Agency on Aging provides information about other food resources and stores providing special shopping hours for seniors.

Lucas said, however, he wants people to take advantage of the service. They should not be afraid to ask for help.

“I would hope that people, especially in times of need, put their pride aside and come get a meal,” Lucas said.

HOW TO OBTAIN A FREE MEAL Anyone who is a Windsor resident age 60 or older is eligible for a free meal.

Call the Windsor Community Recreation Center at 970-6743500 two days prior to register for pick up, Public Services Director Eric Lucas said.

On the day of pick up, residents simply need to drive up and a staff member will hand them the free meal. Donations, however, are accepted and encouraged.

Starting on March 30, the service will be available Monday through Friday. Pick up is at the east entrance of the rec center from 11 a.m. to 11:30 a.m.

Weld animal shelter sees increase in foster help during coronavirus outbreak

BY ANNE DELANEY A local animal shelter is feeling the effects of the coronavirus outbreak, and it’s managing the crisis with the help of a foster program designed to allow certain animals to leave the shelter before they’re adopted.

The Humane Society of Weld County, a nonprofit shelter and 6|

veterinary clinic on 42nd street in Evans, is limited in the number of spay and neuter procedures it can perform, according to Gov. Jared Polis’ March 23 executive order suspending all voluntary or elective surgeries.

The directive includes medical, dental and veterinary procedures, and it’s disrupted the flow of animals processed for adoption

at the shelter, according to Human Society of Weld County Interim Executive Director Sarah Witherell.

“It’s a very unusual time,” Witherell said. “I don’t think any of us have been faced with this.”

With the statewide stay-athome order going into effect late last week, Witherell said this is the first week the shelter

has seen a “marked decline” in adoption traffic with an “uptick” in abandonments.

“In the weeks to come we might see the trend increase,” Witherell said of the number of abandonments. “With being out here, in Colorado, I think they’re anticipating we’re at the beginning of the peak (of the virus) of what’s going to hit.”

ADOPTING AN ANIMAL AT THE HUMANE SOCIETY OF WELD COUNTY The Humane Society of Weld County has animals available for adoption despite the ongoing public health crisis from coronavirus.

Monday-Friday; 11 a.m. to 5 p.m. Saturday and Sunday. The shelter is closed the second Monday of each month.

But, to the rescue comes the surge of available foster homes — either families or individuals — who have taken some pressure off the shelter by offering to keep animals at their homes. Since the beginning of March, the number of foster homes available to the shelter has nearly quadrupled — from 50 before the month began to 165 at most recent count with an

additional homes being processed.

“I think it’s being able to help the community,” Witherell said, explaining reason for surge in foster help. It helps them feel connected and they’re giving back at a stressful time.”

The shelter’s foster program is for dogs and cats not ready for adoption because of the following reasons, according to the shelter website: • A need to be socialized • Nursing a litter • Recovering from injury or illness In Colorado, state law mandates dogs and cats must be spayed or neutered prior to adoption from shelter. Polis’ order on unnecessary medical procedures is in effect until at least April 14.

If the shelter can’t perform spay and neuter procedures, then it runs the risk of overcrowding and creating an undesirable environment for the animals.

“We are trying to keep lower

numbers at the shelter as a whole,” Witherell said. “Our foster homes, they expand our capacity and they do that on a normal basis. In this time, when there is so much uncertainty, it’s so ideal.”

There is no set time frame for fosters to keep an animal.

Witherell said it depends on the animal. While some fosters extend for one or two weeks, there are longer commitments too.

The help is valuable, and allows the shelter to keep its inhouse numbers down at a time when it’s being “conservative” with the operations it performs.

Shoes provide a canvas for Windsor’s Kustom Kix

J

essie Schaefer of Windsor is an over-the-top fan of the Colorado Avalanche hockey team and, as any self-respecting fan might do, she likes to dress the part from head to toe when she attends games.

That, however, necessitated a pair of Avalanchetheme shoes to show her spirit to one and all. She saw a Facebook ad for decorated tennies that appeared to be Converse quality and ordered a pair.

What she got in the mail was a pair of cheap shoes two sizes two big and done with a basic screen print.

“They were totally crappy,” Schaefer said.

She attempted to return the shoes — they were shipped from China — to no avail even though they

supposedly came with a money-back guarantee. Sound familiar?

But Schaefer really wanted a pair of Avalanche shoes to wear to games — she and her husband, Steve, are season-ticket holders — so she decorated a pair of canvas shoes herself. Friends loved them and told her she should turn her talent for shoe decorating into a business. So that’s what she’s done.

Kustom Kix is just a few months old, but already Schaefer is getting inundated with orders for decorated tennis shoes of all designs. Working at her kitchen island, she first sketches out the design and then fills it in with acrylic paint and tops it with glitter (and

sometimes not). When completed to her client’s satisfaction, she seals them with Scotchguard Fabric Protector. The shoes can be spot cleaned, she said, but not thrown in the washer.

Because she works with customers on coming up with just the right design, no two pairs of shoes are alike. Price for the shoes depends on the complexity of the design, but generally start around $90.

“They need to be affordable, Schaefer said.

One pair with a Harry Potter theme was sent to a customer out-of-state. Others have featured the Windsor High School Wizard, the Broncos and — gasp! — even the Raiders. She’s also done a pair of shoes for a pediatric nurse, a theater buff, and another pair with a great big pink kiss.

The Schaefers, who have three children, Cadence, 11; Cole, 9 and Carson, 7; moved to Windsor from California about two and half years ago. While in California Schaefer had a furniture refinishing business called DoOvers, and also taught elementary school.

She currently substitutes in the Windsor School District — or she did before COVID-19 concerns forced schools to close — with her goal to someday return to teaching full time. Until then, she gets her kicks from Kustom Kix.

‘The lashes just took off’ Small business finds its market in Windsor

eautiful eyelashes make women look more youthful and feel good about themselves — that’s why Jessica Amicarella believes her business, Lash House, is so successful.

Located in Windsor, the main service at the Lash House is lash extensions. The business also offers lash lifts and tints, facial waxing and spray tanning, plus its newest services microblading and henna.

“Most people who try it say they prefer how they look with lashes,” Amicarella said. “The misconception is that it’s for high maintenance women, but really it’s the opposite. It’s great for busy moms. It makes you look like you have mascara on — you wake up ‘in your makeup’ with lash extensions. It’s great for people on the go.”

Amicarella has been doing lash extensions for six years, and said most of her clients she’s had for just as long. She gets occasional clients who will try lashes out for a wedding or special occasion, and “more often than not, once you have them, you grow to love them and you’ll continue with the service.”

While the Lash House is currently closed due to concerns over the COVID-19 outbreak, Amicarella said she is hopeful she will be able to reopen at the beginning of May, along with the rest of the Windsor business community, and looks forward to seeing her customers again.

Offering lash extensions and other related work was a natural fit for Amicarella, who has been wearing her lashes for 10 years. When she and her family moved to Windsor seven years ago, there was no one in the area doing it, so she got trained. Amicarella already had a professional license as a hairdresser and this gave her the opportunity to do more.

“I was doing hair and lashes, and the lashes just took off,” she said. “I wouldn’t trade it for the world— it’s such a great business.”

Amicarella explained that with an

established client base that requires regular lash maintenance — about every two weeks — it’s hard to expand. That’s when she decided to open the Lash House.

There was a demand for the service, and her business quickly grew. She eventually employed enough people to provide for clients day-of or next-day services.

There are many tiers of service available at the Lash House, and a variety of things to try.

Whether a client wants a simple full-volume lash that looks natural or something thicker and more pronounced, there are 17 different lengths of lash available, four curvatures and different weights.

“We’ll tailor to what you want,” Amicarella said. “I’ll give my professional opinion on what they can do or what they might be carried away with. I really want to enhance the eye, make it look more open and bigger. A lot of the details are based on your natural lashes and how long they are.”

The highest cost is up front; from there, the maintenance every two weeks is less. And Amicarella said it’s something that more and more women are doing, often putting it at the top of the list of desired services.

“It condenses the getting ready time, and makes you look great,” she said. “People are choosing now to opt out of other things like having their nails done. They say lashes come first now.”

Newer services like microblading and henna are becoming more popular, too.

Microblading, Amicarella explained, is like tiny tattoo strokes down to the first layer of skin to fill in the brow and offers a clean look. She said the tiny strokes look like hair.

Microblading lasts usually 18 months to two years.

Henna is significantly cheaper than microblading, but is shorter lived. Amicarella said it’s a great introduction to microblading without the big commitment

Industrial revolution calls for bachelors’ quarters in Windsor

T

he second industrial revolution (18701914) was not only an achievement in progress for the nation, but it was also a time of masculine independence for the American bachelor.

Single men left their family farms in search of factory work in large cities, following a different life path than that of their fathers.

The need for affordable housing, social ties and the benefit of pooled resources led to the establishment of bachelors’ clubs across the nation. These formal and informal clubs

cemented camaraderie among men that lived and worked in locations where family ties were absent.

Formal bachelors’ clubs, such as the one organized by faculty at the University of Colorado, Boulder in 1900, had elected officers and bylaws.

One of the CU Boulder bylaws stated that no member could spend more than five evenings a week in the presence of any young lady. If violated, a fine in the form of no more than 10 boxes of cigars or less than four quarts of cider were due.

Although Windsor was not a large city, it did offer agricultural and industrial promise for young men in the early 1900s.

Ranches, sugar beet farms, and employment at the sugar factory supplied steady work.

In as early as 1903, a bachelors’ hall is mentioned in the Windsor newspaper. The photograph associated with this article gives a glimpse into Windsor’s Bachelors’ Hall.

#WindsorStrong Facing COVID-19 restrictions, Windsor restaurant owners remain optimistic

uring a time in which hope is at a premium for small businesses, Mick Occhiato isn’t giving up his.

One of the other Windsor restaurant owners that shares a building with Occhiato, Tim Downey, also isn’t losing hope.

In the face of a gloomy and uncertain economic environment created by the COVID-19 pandemic, Occhiato and Downey have kept their heads up.

Call them optimists if you like. Just don’t call them blind optimists. They have reason for their positive outlooks during these dire times.

Occhiato is the owner of an Italian restaurant, Cacciatore at Heller’s Kitchen, in the recently revitalized historic Windsor Mill building, 301 Main St. Downey is one of the co-owners of the Windsor Mill Tavern.

Both dining and drinking establishments opened just a handful of months ago, in October, on Main Street —

an area that has seen a resurgence in recent years with new restaurants, pubs and shops.

Occhiato and Downey said their restaurants had really begun to gain momentum and a solid footing in their new markets in recent months. But restrictions put in place

by Gov. Jared Polis in mid-March to help limit the spread of COVID-19 prohibited restaurants and bars from allowing dine-in service, restricting them to take-out and delivery.

This likely essential measure has increased public safety but has also created a tense, uncertain environment for small businesses and their owners, who operate without the millions of dollars of financial cushion large, national chains have.

The restrictions have also created uncertainty for the resurging Windsor Main Street itself, threatening to undo much of the progress the area has enjoyed in recent years.

Fortunately for Downey, Occhiato and the dozens ALEX MCINTYRE

of other proprietors in the rapidly growing town of 30,000-plus, the town government has stepped in to ease some of the intense financial burden that these small businesses are trying to endure.

The town of Windsor has initiated a plan to defer sales tax payments for five months, including a choice for February — retroactively — for small businesses.

“We really feel that (town officials) care and they want to help us,” Occhiato said.

“They listened to several small-business restaurant owners in Windsor, and they were on it immediately. The support has been really good. … I feel really good about it. This week is kind of a reversal of how I felt the week before.”

Cacciatore’s executive chef Troy Heller had been following the news about COVID-19 well before Gov. Polis placed restrictions on dining in restaurants. Heller was proactive, designing a take-and-bake menu the restaurant was able to implement as soon as dining in became prohibited.

This has allowed Cacciatore’s to mitigate at least some of the financial toll this virus has taken.

Also, Blue Ocean Enterprises — Cacciatore’s and the Windsor Mill Tavern’s landlord — has helped by deferring its tenants’ rent and common area maintenance expenses for three months.

“That’s really what people need — just a little bit of a break to keep some cash flow going, to be able to ride this out,” Downey said.

In addition, the United States Treasury has made available money to assist small businesses through a pair of loans, administered through the Small Business Administration: the Paycheck Protection Program and the Economic Injury Disaster Loan.

The Paycheck Protection Program is a $349 billion program that will loan money to small businesses owners to help them maintain their employees or rehire employees they’ve laid off.

The SBA will forgive the portion of the loan proceeds that are used to cover the first eight weeks of payroll costs, rent, utilities and mortgage interest. Businesses could receive loan money significantly sooner than they would a typical loan through an insurance company.

almost their entire staffs as they operate with a skeleton crew that prepares takeout and delivery orders.

The Economic Injury Disaster Loan allows small businesses — 500 or fewer employees — impacted by COVID-19 to apply for loans up to $2 million. The low-interest loan waives collateral, upfront fees and early payment penalties.

The East Colorado Small Business Development Center is helping businesses in the area apply for these loans.

Lisa Hudson, the director of the East Colorado SBDC, said normally she and her staff don’t advise small business owners to seek financial relief by going into debt.

But, in this case, the SBA’s loans could be a necessary tool for businesses striving to stay afloat — particularly the portions of the Paycheck Protection Program loans that are forgiven.

“Typically, I wouldn’t necessary advise small businesses to consider debt as an answer,” Hudson said. “But, given the times that we’re in, I think that this could be a short-term solution.”

Downey said the toughest meeting he has had in his life is when he recently told his 34 employees they no longer had jobs.

However, the path to recovering and, hopefully, restoring normalcy has begun for Downey and other business owners in Windsor.

The Windsor Mill Tavern has been relying heavily on loyal customers to place takeout and delivery orders, as well as purchase gift cards. Downey said he has even sold gift cards to supportive customers in other parts of the country.

“Customers and guests are our lifeline, even when our doors are open,” he said.

“When they place an order, it just makes you smile and you want to do the best you can for them.”

Even though the Higas haven’t had to lay off their staffs like Occhiato and Downey have, they’ve faced all the same challenges during this difficult time.

They have also seen many of the small businesses in Windsor come together and form a fraternity of support during this pandemic.

Because of such camaraderie — accompanied by the support from customers and the town — Andrew Higa said he’s confident Windsor’s growing community of small businesses will survive this tough economic time and continue to move forward at a rate similar to that of recent years.

“This is the toughest time that I can ever remember operating as an independent business owner,” he said. “But I’m also curious and hopeful to see the resolve that comes out of something this tough. …

Sometimes we get pushed to the limit, but from that spurs a lot of great things.”

That sense of optimism is permeating throughout Windsor’s small business community, even in likely its darkest and most uncertain hour.

“I’m feeling very positive we’re going to look back and say, ‘We made it through this, and we’re going to come back and pick up where we left off,’ ” Occhiato said. “It’s going to take us a couple months, but we’re looking forward to staying open and in business and continuing to serve Windsor.”

Boston Marathon beckons as Windsor woman finds her stride

atrina Lambert has 26.2 reasons that she could cite for not running another marathon.

She has a full-time job and is a mom to a teenager and 7-yearold twins. Her knees and hips ache. Her toenails fall off occasionally, And her lungs burn in the cold air.

But Lambert, 39, doesn’t think about the reasons she shouldn’t run.

Instead, she focuses on what running does for her — the inspiration, the post-race elation, the friendships and the sense of personal accomplishment.

Besides, the legendary Boston Marathon beckons.

The Windsor woman began her journey toward becoming a marathoner in 2007 when she first decided to train for a half-marathon.

She always kept fit, and had run 5k and 10k races when she was in her twenties. The idea of a half-marathon — 13.1 miles — stuck with her, but there were plenty of challenges away from running that kept her from her goal. Yet, Lambert never lost vision, and 11 years later, she began training for her first half-marathon.

She found her stride, thanks in large part to run.Windsor, an allfemale running group that formed in 2017. The diverse group includes beginners as well as veteran runners. Some have a goal of running a shorter race, and others train for marathons.

Group leaders develop running plans that suit each member individually, and members often can be found at the finish line encouraging each other to achieve their dreams, no matter the distance.

“I needed someone to hold me accountable,” Lambert said, “They helped me with a plan and gave me support.”

So much support that Lambert found herself signing up to run a full marathon even before she had completed her first half-marathon.

“I signed up in March 2018,” she said. “When I woke up the next day, I said, ‘Oh, my God, what did I do?’ “ Her fellow runners kept her going, though. Mandy Mullen, a founder of run.Windsor and a certified coach, helped Lambert understand how to make her runs more efficient by breaking down training into elements such as speed work, tempo runs, progressions and long, slow runs in addition to strength training.

Lambert distinctly remembers one of her first training runs with the group — an 8.5-mile trek.

“I finished and looked around at the girls and said that I had never run that far in my life,” she said. “They couldn’t believe it. I was so pumped.”

In between the longer races, she also participated in the Wild West Relay from Fort Collins to Steamboat Springs and another halfmarathon this January.

“How would I describe Katrina?” Holland asks. “Beside strong, tenacious and genuine, she is one of the hardest-working people I know. She has a demanding career (Lambert is a life insurance underwriter). … She is an amazing mom to her three kiddos, each with their own athletic interests. I’m constantly amazed at her ability to balance work and family and still find time to train. She also has an awesome, scrappy, don’t-mess-with-Mama Bear-side, and you just know that, as her friend, she will always have your back.”

These days, Lambert is focused on Boston, the Holy Grail for marathoners, which will be held September 14 after concerns over the COVID-19 pandemic forced it to reschedule from it’s traditional April date.

She and Holland had to adjust their training plan because of the schedule change, but they are still planning on going, even shopping for matching outfits to wear for the trip and race events.

Lambert loves the travel that goes along with participating in the races. Her ultimate goal is to run all six major marathons: Boston, New York, Chicago, London, Berlin and Tokyo.

She is quick to note that she couldn’t participate at such a high level without the support her husband, Kirk. Lambert said she knows her children Liliana Salas, 13, and 7-year-old twins Uriah and Brecklyn Lambert, are watching and learning from her example.

“My workout comes first. I’m not willing to give it up, And I’m a better mom and wife because of that,” she said, “It’s just like in an airplane when they tell you to put your mask on first before helping others, you have to do what is right for you to be good for others.”

She said her children benefit by seeing their mother making her health a priority.

“I think I’m a lot nicer, too, when I get a run in,” she said, with a chuckle.”

“Her energy is just so upbeat and inspiring,” Holland said.

Some mornings, Lambert doesn’t want to get up at 5:30 and go out for a run.

“But I try to remind myself I can do this,” she said. “It’s no longer something I fit in; instead, I build my life around my running. It’s a part of me now.”

to May 2018 to finish her first half-marathon — the Marine Corps Historic Half. Soon, she was hooked on distance running.

November of that year, Lambert flew to Nevada for the Rock ‘N Roll Las Vegas Marathon. On the flight there, she read a book on sports psychology given to her by a co-worker.

The book helped her focus on the mental side of running far more than the physical challenges. She learned to channel pre-race nerves into excitement and positive energy.

“I truly believe that the mental side is more important than the physical part of running,” Lambert said, “The mind is so incredibly powerful.”

The laser focus and positive support from her running partners proved to be an unbeatable combination. Lambert found herself at the finish line of the Rock ‘n Roll Las Vegas Marathon after 26.2 miles of sweat and pain. She crossed the line with a smile on her face.

“Just that feeling of accomplishment is something I will never forget. I did it for me. I found so much confidence,” She added with a smile, “There was pain all through my body, and walking around Las Vegas afterward was comical.”

That first finish line proved to be only the beginning of a longer journey. Lambert had watched her friend and running partner, Beth Holland, qualify in Las Vegas for the Boston Marathon, and she knew that would be her next hill to climb.

Holland and Lambert had become fast friends, bonding over run.

Windsor training runs. Even though Lambert led Holland astray on their first training run — they got lost — the two women found they had so much in common, including being mothers to young children and having September birthdays.

Holland said, “Mandy (Mullen) designed our training plan, and we would meet up every weekend for our long run, spending hours pounding the pavement and cementing our friendship. When we finally made it to Vegas, I finished with a (Boston Qualifier), but Katrina ran a great race but came up a bit short.”

Holland said the idea of running in Boston without her bestie bummed her out.

“But in true Katrina fashion, she set her sights on another marathon, as determined as ever to get her BQ,” Holland said.

Lambert acted fast by finding a qualifying run, which she did in the Tunnel Vision Marathon in North Bend, Wash., held in August.

Lambert had to shave 25 minutes from her first race to comfortably qualify for her 35-39 age group.

She crossed the line at 3:26:56 — an impressive 28 minutes faster than her first marathon.

“I had just walked out of church, and there was a text from the finish line in Washington,” Holland said. “It was a photo of Katrina holding signs that read, ‘Going to Boston!’ and ‘I did it!.’ Her text message read, ‘This one is for you, Beth.’ I’m tearing up now thinking about it.”

Now, Lambert is nearly unstoppable. Last October, in honor of her brother and father, both Marines, she traveled to Washington, D.C., to race in the historic Marine Corps Marathon.

Known as “The People’s Marathon,” the race is the largest of its kind that does not offer prize money, instead recognizing the sacrifice of those who have served. She marked her third marathon in less than a year.

Run.Windsor, FusionFIT give runners a supportive community

andy Mullen is a runner — and not just in the literal sense.

She runs a business: FusionFIT in Windsor, a 3,200-square-foot fitness studio, opened in early 2019.

She runs after her two small young sons, ages 5 and 7, in a constant bid for balance that many parents understand.

She runs the first women’s running group in Northern Colorado. Run.Windsor now hosts a race series with the Town of Windsor Parks and Recreation District.

And, she runs with people that support each other in their fitness goals, whether that means competing in marathons or taking the first steps toward a healthier lifestyle.

None of this came easy for Mullen, 34.

And because of her own struggle, she 18 |

understands that there are plenty of women just like her who have a family, a job and a goal of running their best times.

“I wasn’t a natural athlete, and I had developed some unhealthy habits in college,” Mullen explained.

She started running with her husband, but she said she found herself intimidated by a running culture that focused on training plans with time commitments that were unrealistic for her. She was thrilled to watch her husband run the Boston Marathon in 2013, but the sport didn’t bring her fulfillment until she realized her lack of confidence was holding her back.

“That inspired me to take running more seriously,” she said.

only a few minutes off of qualifying for the Boston Marathon.

After moving from Fort Collins to Windsor, she and a friend started a women’s running group in 2017 that developed some of the qualities that she found lacking elsewhere — support, friendship and personal growth.

Her friend moved away, but Run.Windsor continues to grow organically with new members consistently joining the group.

On runwindsorco.com, Mullen said, “I want to touch as many lives as I can and spread the belief that we all have what it takes to make our dreams come true. We CAN do hard things.”

The group has two 16-week training sessions per year with gaps built in to adjust to other commitments to help women train ALEX MCINTYRE

for 10Ks, half-marathons and full marathons.

The group is training for a race series that includes Windsor’s first half-marathon, to be held in October, pending whatever happens with COVID-19 postponements.

Typically, training runs are short and economical as possible to allow for smart training with a balance of time. With stayat-home and social distancing restrictions in place, the group has started scheduling time slots for training runs, so two members can run separate courses at the same time, providing support without spreading the coronavirus.

“The emotions and friendships are lifelong.

The community and relationships are so important,” Mullen explained. “When we cross that finish line, we are there for each other. ... You are not consumed by your own goal.”

Run.Windsor is for women only — “That’s where so much of the magic is,” she said.

But Mullen is talking about starting a men’s group, as well.

Mothers, in particular, often put their fitness on the back burner. But Mullen and her group help women understand that taking care of themselves is good for their families, too.

“Not everything has to be about our kids,” she said. “Training women to help set guidelines that they have to work at helps them build confidence. They are showing their kids that they can have goals, too, and that they have to balance commitments.”

In addition to the training runs, Mullen is adamant that strength training is part of the program, which is where FusionFIT came into play.

Mullen was originally a marketing manager for a new gym opening in Windsor, but the owner decided to sell out and asked her if she wanted to take it over. Starting a business with two small children by her side wasn’t in her plan, but after discussing it with her husband, Mullen accepted the challenge.

“It was one of those moments,” she said.

“Did I want to jump in or walk away? I decided if this is the opportunity God is giving me, I would take it.”

She found herself laying floors, doubling the size of the daycare and painting walls to create a boutique studio atmosphere where families could come together. The facility also fulfilled her dream of providing a home for ALEX MCINTYRE

Strength, cardio, kickboxing, HIIT and TRX classes are available from professional trainers. Class-sizes are no larger than 20 people, allowing trainers the opportunity focus on individual goals. Due to COVID-19 restrictions, classes are currently offered virtually until the gym is allowed to reopen.

When that happens, Mullen is looking forward to seeing customers again, especially the new mothers, many of whom show up during the mornings.

“It’s a place of reality where moms can feel like they can be themselves. We expect

tantrums from the babies and expect moms to cry,” Mullen said recently, as she took a brief rest on the lobby couch.

She added that not a day goes by where she isn’t holding someone’s child at some time.

While families are part of the picture, the studio caters to all men and women who are looking for a place that speaks to them as individuals. Custom programs include Family FIT and the 2020 Fit Custom 4 Week Challenge, which includes fitness, nutrition and personal training.

FusionFIT also offers FIT & Give, a donation-based class with proceeds going to local charities.

“We want people to feel welcome and paid attention to,” Mullen said. “If you haven’t been to a gym in 10 years, you are welcome here. You are not overlooked. That last thing I want is for my clients to feel intimidated.”

Getting in shape can seem overwhelming, but Mullen advises that small steps can have a big impact. She recommends identifying one goal or task, such as drinking more water, and focusing on that for a week or two.

“See how that goes. Once you have made that part of your life, try another small thing, such as taking a walk every day.

Eventually, these goals just become part of your daily routine.”

And with a final flourish, Mullen is off the couch and on the run again to say goodbye to clients, smile at a baby and talk about run.Windsor’s T-shirts.

magine waking up to fresh eggs every morning without having to make a trip to the grocery store. Just walk out the door, greet your chickens by name and pull a couple of eggs for an omelette.

More than 150 Windsor residents have that opportunity every morning after receiving permits that allow them to host chickens in their backyards.

Part of the farm-to-table trend, the practice is growing in popularity among homeowners who prefer to harvest eggs from their own chickens in an atmosphere that they can control. In 2013, an estimated 13 million Americans either had started or were anticipating joining the backyard poultry scene, according to theconversation.com.

Increasingly, residents want to better understand the sourcing of their food, which is a driving force behind owning chickens, gardens and composting.

Sara Daubert, PhD., raises chickens and quail at her Little Dog Farm, a small production hobby farm in Windsor. Daubert, 49, lives in Windsor and commutes to her job as a professor at Cal Polytechnic State College in San Luis Obispo, Calif. Her hobby farm sells quail eggs ($6 per dozen) and other specialty products by special order.

She began keeping chickens several years ago when her children were young because 20 |

she wanted them to have an agricultural experience. She said her children would rush outside to find the first egg of the day.

“That was the first thing they did; it was like a huge prize. Chickens are fearless and friendly and easy,” she said, noting that keeping a few chickens still allows homeowners the flexibility of going away for a weekend because feed and water can be left for them.

“Anything that is fresher is better for you,” Daubert said, explaining the advantages of backyard poultry. “The yolk is so much richer.... They also are high in Vitamin B and have tons of good protein.”

Fresh eggs also have shown they have less cholesterol, less saturated fat and are high in Omega 3s, she said.

She said she can crack an egg from a backyard chicken on a white plate and compare it to an egg from Whole Foods and see how much more vibrant the yolks from her chickens appear. And chicken eggs can last as long as a month in the refrigerator.

Egg production can vary depending on the type of chicken and the atmosphere, but most produce about two eggs per day.

Generally, chickens ovulate every 12-18 hours, depending on the sunrise and sunset.

As the days gets shorter in the winter months, egg production falls.

She said providing a heated environment in the winter months is important, and some owners she knows use a fan in the summer months to keep their chickens comfortable.

Daubert said some people allow their chickens to walk throughout their yards, while others have smaller spaces for their hens. Cages without bottoms that can be picked up and moved to allow chickens to eat grass are also available.

The fowl also eat mosquitoes and bugs, which benefits humans. She said disease is not a problem as long as coops are kept clean and chickens are monitored.

Protection from predators is a priority, whether it’s from the neighbor’s dog or a hawk or raccoons. Cages can be purchased for as low as $30 on Amazon, Daubert said.

Daubert said she cuts a layer from one wing on her chickens to keep them from flying. The practice is pain free and humane, and it allows them to fly as high as 3 feet to reach their coops. It’s important to keep chickens from flying to other yards, where dogs can attack them.

Today, Daubert also is an advocate for quail. She has eight Domestic Japanese quail, from which she sells eggs.

“They (the eggs) are amazingly healthy, have low cholesterol and are full of vitamins and medicinal properties,” she said.

In Windsor, the backyard ordinance was last revised in September 2010, according to Kimberly Overholt, communications manager for the town. Only one incident in the past 7-1/2 years could be found where a homeowner was cited for violating the town ordinance regarding back yard chickens, and the outcome of that case is unknown, she said.

Briefly, residents can keep up to six chicken hens. Structures have to be kept at the rear-most portion of the resident’s property. No part of the chicken house or outdoor structure can be within 15 feet of an abutting property without written consent from the all owners of the abutting property.

Chicken houses must be predatorresistant, properly ventilated, easily accessible and provide at least 2 square feet of space for each chicken. Chicken houses greater than 120 feet require a building permit.

Pick the right breed. Daubert prefers Buff Opingtons and Plymouth Rock breeds, because they are good egg layers and generally have good temperaments. She started her brood with chicks purchased from a store rather than from eggs.

Keep coops locked at night to protect chickens from predators, including dogs and raccoons.

Have next boxes available - at least one for every two chickens. Keep the boxes clean and away from a lot of activity.

Daubert said her chickens like to lay eggs under trees, so if eggs can’t be found in the nesting boxes, look for other hiding places.

Watch for changes in feathers, but don’t be alarmed. Chickens molt at least once a year, which is normal. Generally, they will not lay eggs during this time.

There are a lot of options for backyard chicken coops, but most provide protection from predators, heat in the winter and fresh air in the summer.
