Coffee Cake

Ingredients: • Six eggs • Two tablespoons of instant coffee • Two tablespoons of lemon juice • Eight ounces of cream cheese • One tablespoon of melted butter • Half cup of flour • Five tablespoons of sugar (to taste) • OPTIONAL: Cookies or biscuits • OPTIONAL: Milk Powder

Tools: • Two bowls of a large size • Hand mixer • Measuring cups and spoons • One colander • An eight inch baking pan

1. Preheat oven to 320 degrees (vary based on oven timing). 1. Crack the eggs and separate the egg whites and yolks by putting them into the two different bowls. 2. Put cream cheese, three tablespoons of sugar, melted butter and instant coffee into the bowl with yolks. OPTIONAL: Add milk powder to make it more creamy. 3. Use a hand mixer to mix the bowl with egg whites for around one minute. 4. Put lemon juice and two tablespoons of sugar into the bowl with egg whites, then continue to mix the egg whites until (when you lift it up, it does not drip). 5. Use a hand mixer with the other bowl (with yolks), then mix them until they are smooth. 6. Use a colander to filter the flour into the bowl with yolks. Mix the bowl of yolks until smooth. 7. Use a spoon to move half of the egg white mixture into the bowl of yolks, then use the spoon to mix them well. 8. COOKIE CRUST: You can add cookies at the bottom of the baking pan before pouring the contents of the cake into it. 9. Dump the contents of the bowl of yolks into the egg white bowl, then use a spoon to mix them well. Pour all contents into the baking pan. 10.Bake for twenty minutes. 11. Lower the oven temperature to 230 degrees, then continue to bake for 30-40 minutes or until when nothing comes out when you stick a fork/chopstick in it.
