Grilled Chicken and Roasted Vegetable Pasta

by Caroline Ossorio Last year around this time, I had the opportunity to interview Chef Jeremy, a Renton Local and the head chef for both Rain City Catering at the Renton Piazza and the Seattle Mariners.

Chef Jeremy taught me how to make Edgar Martinez’s favorite pasta at the player’s kitchen at Safeco Field, a comforting bowl of carbs filled with cream, butter, pasta, ribbons of pepperoni and more cream.

It was divine.

And with baseball season starting back up again, I thought it would be fun to catch up over a healthy alternative to the delectable but sloth-inducing pasta that Chef Jeremy and his business partner Chef Kenny at Rain City Catering concocted.

Neighbors with the Renton Chamber of Commerce, they run the Events center at the downtown Renton Piazza.

Chef Jeremy and Chef Kenny have a staff of six fulltime employees, but the other morning we had the kitchen to

ourselves and I was excited to learn their recipe for a tasty and healthy version of Edgar’s favorite pasta in a jiffy.

But just because it’s fast doe snot mean they lose their attention to detail on which they pride themselves, such as making sure to heat dinner rolls.

“I don’t like bread that’s cold with hard butter chips. So we take the time to butter the rolls and warm the bread…it’s

extra steps that take up a large chunk of time but these are the details that really differentiate Rain City Catering from the pack,” Chef Jeremy said.

I took a photo of the simple mis en place that Chef Jeremy had prepared: Sliced pre-grilled chicken, pre-cooked wheat pasta, veggies, grated parmesan, tomato paste.

The two chefs work together like cheese and crackers: each brings a unique set of skills to the table.

Chef Kenny began to grill the peppers and diagonally cut yellow squash and zucchini, but not for too long.

“Only about a minute on each side to get the smoky grill mark for flavor,” Chef Kenny said. “We don’t have to take the time to char the vegetables but on a simple dish like this it adds a tenderness and a smokiness to the vegetables, just attention to detail and a little more finesse.”

When it comes to taking care of the guest, Chef Jeremy and Chef Kenny are on the same page, verse and chapter.

As Chef Kenny tonged the veggies off the grill, Chef Jeremy heated the pan with a healthy amount of the garlic-infused oil that he keeps on the side of the grill.

Every week Chef J crushes and minces fresh garlic into a container and then pours about three cups of olive oil and just lets it sit voila olive infused garlic for his recipes.

“Grapeseed oil is also a healthy alternative,” Chef Kenny added, bringing up the roasted veggies as Chef Jeremy began to sweat some chopped garlic, onions and mushrooms.

Their back-and-forth comes from many years of friendship and is a unique part of their business. They have been friends

since they became neighbors when Chef Jeremy was 3 and Chef Kenny was 5.

And in the best of partnerships, each contributes their unique skill set to create a powerful force, as a result their business has grown. The Renton Event Center is almost booked up for the year, they have a new contract with the Mariners, (Chef Jeremy cooks for the Mariners, Chef Kenny cooks for the opposing team) and they do a robust business of off-site catering.

“When we first started out we came from nothing, so we had our dreams and hit the ground running. We had no idea about pricing, we were just so happy when we got business. We look back on what we charged and were just like, ‘what were we thinking?’”

Along the way they have learned how to be organized in their business and with experience they value what they have to offer.

“We charged so little because we didn’t know and we didn’t value ourselves…now we have learned to be organized—to the penny and tally every minute we spend on what we’re doing and we’ve learned to value ourselves,” Chef Jeremy said.

I watched Chef Jeremy bring the other ingredients together in the sauté pan: the pre-cooked penne noodles, tomato paste, veggies, and chicken stock and pour the pasta onto a plate that Chef Kenny had eased over with. Chef Jeremy sprinkled on parmesan and Chef Kenny wiped a drip of sauce off the side and added chopped parsley.

What can I say? I felt special. And, the dish was delicious; just as good as the coma-inducing comfort food pasta. The wheat noodles lightly coated in a light olive oil, garlicky sauce were al dente, and delicious.

Chef Jeremy loves to make people happy through his food. As I was eating the plate, he was smiling, but I got the feeling he would prefer to make the creamy comfort food that we all love to eat.

I love interviewing self-made people like Chef Jeremy and Chef Kenny from Rain City Catering because I can relate to their journey AND of course there is always a scrumptious plate of food involved.

And at the root of all their success, they are still humble. Their experience, drive and passion always is at the core of whatever they do, in catering and life.

Tip: If you want superlatives to be visible from all sides, make two copies of each photo and tape them back to back when attaching to twine.

Use a thinner cardstock or paper if you want balloons to float on ceiling.

Latex balloons will typically float for 5-7 hours. Temperature, humidity and altitude may affect float time.

On large rimmed baking sheet, toss shrimp with 2 tablespoons extra virgin olive oil, paprika, 1/4 teaspoon salt and 1/4 teaspoon pepper. Roast until pink and cooked through and beginning to lightly brown, 8 to 10 minutes.

Remove from oven and transfer to bowl to chill in refrigerator.

In large bowl, whisk together remaining 4 tablespoons extra virgin olive oil, lemon juice and honey. Season with salt and pepper.

Toss lettuce, mango and chilled shrimp in olive oil lemon juice mixture. Divide among plates, and sprinkle with Parmesan.
