November has arrived, the temperature is dropping, the sea is getting choppy and the Christmas lists are growing. In this edition of OM, we have five business profiles, lots of local festive events, our favourite advent calendars of 2022 and a shop local section full of brilliant gifting ideas.

We spoke to Rodgers of Plymouth who are shining the light on the new fully-electric MG4. Find out why you should go electric, what Plymouth has to offer on electric charging.

We headed into the Plymouth Market this month to speak to some of the traders to find out what’s on offer this month.

We had a tour of Plymouth’s brand-new recording studio, Shearwater Studios, and found out about the work involved in creating the space that can now be shared with the community.

We learnt more about the visitor and learning centre located next to the Tamar & Royal Albert Bridge called, Bridging The Tamar and what they offer to the local community.

Not only do South West Highways maintain our roads, they also get involved in the local community too. Find out what they have been up to recently in the magazine.

South West Highways are the Term Maintenance Contractor (TMC) for Plymouth City Council. We won the contract in 2017, have recently secured the 10 year contract and we look to continue this partnership going forward. Our primary function is to undertake highway maintenance improvement schemes throughout Plymouth, as well as carry out daily safety defect maintenance. Examples of our schemes include the paving on Tavistock Place, outside The Box Museum and the creation of the Ponsonby cycleway. We employ 110 staff which include both office based workers and operatives.

In addition to our day-to-day works, SWH are dedicated in their contribution to the community of Plymouth, this is inclusive of Environmental Awareness, Community Events and Charitable Contribution.

Some of our initiatives and projects that incorporate this are:

Workplace in Bloom

Between spring to summer 2022, SWh undertook an environmental and community driven initiative to encourage biodiversity in the workplace and promote recycling. the objective was to utilise discarded materials and containers around prince Rock Depot and create planters for a variety of fruits, flowers and shrubs. one of the most successful aspects

of this has been the involvement of local primary schools, namely hyde park primary School, Stuart Road primary School and St andrews c of e primary School. pcc Streetworks team donated discarded dust bins which we cleaned, put on a base coat, and delivered to the local primary schools to paint with the theme of ‘What plymouth means to you’ and ‘the environment’. the paint was kindly donated by Qc engineering. once complete, these have been positioned around the depot and planted with a variety of flowers and shrubs generously donated by ygS landscaping. this has been a communal effort from SWh, pcc, our suppliers and local schools. in addition to the bins we have used discarded traffic cones, wheelbarrows, hard hats, pallets, grit bins, tractor tyres, road

signs and manhole rings. all work was carried out by volunteers and all materials used were donated from local suppliers.

Armed Forces Day

We annually volunteer our time to provide the traffic management for armed Forces Day which is a celebrations for those who have served the country and promotes veterans charities. this includes providing and maintaining road closures throughout the city as well as gatemen to monitor the closure points and ensure the safety of the public throughout the event.

Building Plymouth

We sponsor and support plymouth city council’s ‘Building plymouth’ initiative which is a scheme designed to promote local employment into the construction industry in plymouth, thus encouraging career prospects and sharing opportunities. this involves the support of over 45 events in plymouth, ranging from speaking to Royal marines at hasler naval Service Recovery centre, to contributing to the delivery of fun educational activity days for children, such as Stemfest at the national marine aquarium.

Community Contributions

We host road safety scheme events for children to promote awareness of road safety and help to improve the mindfulness of children when negotiating the streets of plymouth. in the wider community, we also supply

traffic management for events such as Sail GP, the 60th Anniversary of the Commando Gunners Military Parade, and the Plymouth Half Marathon. Lowprofile contributions include assisting with local activities such as community associations and residents’ street parties; providing and implementing traffic management and the loan of barriers and signs, and project planning.

Schools

In addition to the Workplace in Bloom initiative, we are regularly involved with local schools around Plymouth via open-days, career fairs and school events. Delivering over 80 inspirational and educational sessions within schools and educational facilities across Plymouth, such as practical lessons relating to construction skills and assisting with mock job interviews. The artwork for the recently undertaken Bridge Refurbishment Scheme was carried through a design event from local schools. SWH also sponsors 4 schools in Plymouth under the Constructing Excellence South West’s ‘Adopt a school’ programme: Plympton Academy, Stoke Damerel Community College, Sir John Hunt Community Sports College and St Boniface’s College. Miller Way School also designed traffic signs for the new zebra crossing 20mph zone as part of a traffic safety scheme (please see picture above).

Apprentices

Internally, we maintain the recruitment of a minimum of 6 apprentices per annum, often we exceed this number and offer support throughout their career going forward. This is inclusive of both office-based staff and on-site operatives. We currently have 1 officebased business apprentice and are looking to recruit another in the coming months. On-site we have 6 apprentices under the supervision of our experienced charge hands.

Charities

SWH in Plymouth recently donated supplies to the non-profit organisation Shekinah, who specialise in helping those who are homeless, at risk of homelessness or in temporary accommodation. The collection was achieved through generous donations from the Prince Rock office-based staff. In addition to this, SWH works closely with various other Plymouth-Based charities such as Princes Trust, Remploy, Routeways and Tomorrow’s People, helping to provide opportunities for those who may need a helping hand. As an example of our support, in collaboration with a local

design consultancy we have recently volunteered our time, labour and materials to help with paving works for Routeway’s ‘The Castle’ project to refurbish an area of Devonport Park Activity Centre. Most recently we have undertaken a fundraising event in collaboration with The Mental Health Foundation UK in our Plymouth depot which took place between Monday 10th October to Friday 14th October 2022. We managed to raise £200 in total for the foundation. This was achieved via a bake sale, selling of green ribbons (for mental health awareness), donation pots and custom QR code to the donation web page. We also set up a ‘Positivity Jar’ with positive quotes, free for all to take one. The left-over cakes from the bake sale were then donated to Plymouth Soup Run who are a local charity that deliver soup and hot drinks to the homeless and those in need.

Local Supply Chain

We are dedicated to the support of local businesses and almost exclusively use local suppliers for our materials, fleet and sub-contractors (if ever they are required). This is not only beneficial to the local economy but also benefits the environment by reducing the need for fuel consumption and minimising our environmental impact wherever possible.

There is no doubt that recent events at Westminster and the Bank of England’s decision to increase interest rates has come at a difficult time for the UK’s economy. Outside of the financial markets, many analysts look to the property sector for signs of change in confidence, affordability and general consumer mood.

But buying a property is always going to be more than a commodity or investment, as it is a home that people seek and regardless of market conditions, homebuyer’s personal needs and circumstances will always be the driving force in property sales. there are clearly signs that with the changes to interest rates, borrowers are not able to afford as much as they had previously been promised or illustrated too as affordable, and we will no doubt see buyers needing to adjust their expectations, and similarly sellers in line with that demand.

however, through my career i have experienced change before, and i have always found resilience in the property market with demand being driven by the constant need for people

wanting their own home. particularly for the younger generations, plymouth is still cheaper than many parts of Devon and cornwall, and with plenty of employment opportunities and being located on the sea and with Dartmoor as its backdrop, it offers so much.

over the last few weeks, we have listed a range of properties for sale and successfully sold them. We may see the need for some good old-fashioned negotiation, which is not a bad thing for our industry, and provided that every party involved sees value in their purchase, there is clearly a willingness to still get on and move home.

The countdown to Christmas is on, and plenty is planned at Plymouth’s Royal William Yard throughout the winter to make it a memorable occasion.

There will be bustling Christmas markets under the stars with tempting treats aplenty; gifts galore from the South West’s best artisans and makers; festive tunes from a Barbershop Choir; and an abundance of places to eat, drink and be merry.

The Christmas Good Food and Craft Markets open with a bumper offering on the first Sunday in December, with over 70 stalls offering festive wares and unique gifts. Amongst these will be flowers from Sunday Bunch, handcrafted accessories from Terra Jewellery and Southway Silver, vegan skincare from Soap and Pamper, tipples from Barbican Botanics, tasty treats from Devon Fudge, Chunky Cookie Company, and Heyl Bakery, and much, much more.

• For those looking to start their Christmas shopping sooner rather than later, the November Good Food and Craft Market will take place on Sunday 6th November, 10am-3pm and Native Makers will run a weekend market with a festive feel on Saturday 26th and Sunday 27th November in Ocean Studios.

• Le Vignoble is hosting its Mega Christmas Wine Tasting on Thursday

• Christmas Good Food and Craft Markets will run throughout December on Sundays and Wednesday evenings. It was once the dream of a music producer to give back to the community he grew up in and offer something unique to the Plymouth music scene. A few weeks ago, friends and bandmates Joe, Harry and Jonah managed to make this dream a reality by opening up a brand-new recording studio together. Shearwater Studios presents a contemporary take on the classic recording studio with their carpentry skills and outstanding equipment lifting it into the 21st century. We headed into their studio to meet Joe, Jonah and Harry and find out more about their studio.

Joe and Jonah have been friends since secondary school and often shared drum lessons, this soon prompted them to set up an indie/rock band. Joe played the drums, Jonah played bass and a friend of theirs played the guitar until he left the band a few years later. Harry had seen the band play before and knew of Joe and Jonah through music festivals and events. After overhearing the two discussing their need for a new guitarist, Harry gladly offered to join the band and their friendship flourished.

their careers within the music industry were thriving; as sound engineers, music producers, lighting engineers and photographers until the beginning of the year 2020 when the pandemic hit the globe. unfortunately, the music industry was the hardest hit and the last to recover which meant the three

boys had to change direction. Joe and harry are music producers so they could continue working on single-led projects but Jonah had to take a temporary job at the covid testing centre to make ends meet.

During this period of free time, Joe was pondering the idea of creating a music space in which he could produce music and the band could re-form again.

to create an idyllic recording studio, Joe had planned to invest his earnings as a reputable music producer to construct something meaningful within plymouth, to help grow the city’s music scene as well as offer up a space to hang out with his fellow bandmates. giving something back to the community that Joe, harry and Jonah grew up in was always very close to their heart. plymouth deserves

Finding the space was the easy part, constructing the space was the challenging bit. the boys found the idea of designing their own studio extremely exciting, ideas were bouncing back and forth and walls were being put up almost instantly. new build challenges were unfolding almost daily. From uneven and cracked concrete surfaces to dodgy electrics, they developed essential communication skills that were required to finish the job.

A few months into the build and the walls had been plastered and they heard themselves saying, ‘It’s really coming along now, I think we’re nearly there…’ Slightly ignorant to the fact that it would eventually take them 1 year and 9 months to complete. The boys took their time with the project and were very patient and attentive to every detail therefore they carried with them the mindset of ‘It will take however long it will take.’

Harry’s father has significant building and renovating experience and just so happens to have a lot of friends in the trades industry. he acted as the pool of knowledge for harry, who spearheaded the entire project, to develop and refine his building skills.

and seeing Harry surrounded in wood and covered in wood chippings.

By carrying out most of the DIY themselves, they saved a lot of money that they were then able to invest in local, high-quality materials and later on, excellent music kit. The desk from which they make most of their music was crafted from Beechwood from a farm on Dartmoor and then placed upon an iron frame that was welded together by a friend.

As the three were working on this huge project together, they have grown closer as a team, as friends and now as business partners.

The space they have created can now be used for a variety of different uses but ultimately, it is a place to relax with like-minded individuals whilst creating works of art.

Shearwater Studios offers recording, mixing and mastering of audio as well as photography, videography and post-production for the visuals of your music. The studio can be turned into a photography studio with lighting and a backdrop, or Jonah can shoot on location for an additional charge. It’s important to note that the team are there for you to work with and ask for advice or assistance. They don’t expect you to know all of the software or know how to play every instrument, when you book Shearwater studios, you are getting everything that is under that roof.

They have a drum kit, electric and acoustic guitars, a piano and a few other instruments of which, Joe, Jonah and Harry can collectively all play if you require that specific sound.

Booking is essential to not only ensure that the studio is available but to ensure that the team have everything you need to make this experience as smooth and enjoyable as possible. They are also happy to sub-contract, whether that be a violinist or a singer.

They charge from £40 per hour and offer larger packages at discounted rates to encourage people to take their time to enhance their creativity.

Shearwater Studios hopes to be working closely with schools, colleges and universities in the local area, offering students experience in a modern recording studio whilst learning how to use their equipment. Workshops and mini internships are just some of the things they can offer for educational purposes.

Their biggest achievement would be to have helped a band or an artist make it in the music industry and to watch their career flourish from Shearwater Studios. In a few years, they would love to take their studio and place it in a location that feels cut off from the world and surrounded by nature. But for now, it is perfect.

Joe, Jonah and Harry often look around in awe of what they have been able to create and they are excited to watch people feel the same way they do about the space and in turn, make some brilliant music.

The fastest shortcut into Cornwall connects two communities that otherwise would be miles apart. The Tamar Bridge has enabled millions of vehicles to effortlessly glide over the river Tamar for 61 years and continues to provide this service to the people of Devon, Cornwall and beyond. Running parallel to the Tamar Bridge is Isambard Kingdom Brunel’s 163-year-old Royal Albert Railway Bridge. Adjacent to the Tamar Bridge Toll plaza lies the Control Office and new Visitor and Learning Centre where the magic happens. During this interview, we spoke to three members of the team to find out all about this hub of activity and what it brings to the community.

The Bridging The Tamar Visitor and Learning Centre provides people young and old with the ability to learn about civil engineering and what goes into the day-to-day runnings of the bridges. This cannot be possible without the team of staff, contractors and volunteers that help to educate people on the heritage of both the 20th-century Tamar Bridge and Brunel’s iconic 19th-century Royal Albert Bridge.

Sharing the knowledge of thousands of highly skilled engineers, artists, mathematicians, scientists and innovators became achievable through a grant from the national lottery heritage Fund (nlhF) along with extra funds from the tamar Bridge and torpoint Ferry Joint committee. in 2018, they were able to transform the old control office into a Visitor and Learning centre and extend the building to create a larger control office with meeting rooms for collaboration projects. this hub is not only used for educational purposes but it is also created to keep people safe and the traffic flowing.

Bridges are not just a continuation of the road, bridges are monumental structures that show engineering brilliance and highlight the history of civil engineering in Britain. the team hope that people come away from the centre with a new level of appreciation for the history of civil engineering and a new or nurtured passion for the craft.

the centre offers many free interactive activities such as mini bridge building, costume dressup station, interactives and video content. in addition to the exhibitions in the centre, you can book a guided tour of the bridges or a talk about the history and what’s involved in the creation and maintenance of the bridges, as well as anchorage tours where you head underground and see for yourself where the cables meet the earth.

educational workshops prove popular with schools and colleges as an interactive way to learn more about engineering. Entry into the Visitor and learning centre is free of charge for

During our interview, we learnt a lot about the history of both bridges and how they are continuously maintained to the highest standards to ensure deterioration is kept to a absolute minimum so everyone can enjoy their beauty and use for years to come.

the tamar Bridge was completed in 1961, 102 years after the Royal albert Bridge was built in 1859. to ensure user safety and journey time reliability, the tamar Bridge is managed by a dedicated 24hr/7 day a week Bridge control Room supported by a highly specialised engineering team. Bridge control constantly assess a range of environmental sensors, CCTV cameras and other data to ensure traffic plans match prevailing traffic flows and loading on the structure is efficiently distributed. This is important to both reduce delays and to enhance the life of the structure which is course, open to the SW climate and strong winds!

Following changes to the weight of European Heavy Goods Vehicles (HGVs), the Tamar Bridge underwent a landmark Strengthening and Widening project between 1997 and 2001. as the bridge was already in use carrying tens of thousands of people each day, closing the bridge for 4 years wasn’t an option. the solution was to add two additional lanes, or cantilevers, to either side

of the bridge onto which traffic could be diverted so that the replacement of the original central section of bridge deck could proceed. Through innovative design and the use of lighter and stronger materials, the additional cantilevers became part of the permanent design giving five lanes where there were once three! Completed in 2001, the new revitalised bridge could now accept new HGV classes and had a Saltash local traffic lane as well as a dedicated footway and cycleway to promote sustainable transport. The project, the first of its kind to be strengthened and widened at the same time whilst still in use, won many awards and was officially re-opened in 2002 by the Princess Royal. Princess Anne. This was a proud moment for not only the project team, but the people of Devon and Cornwall too.

Today, an average of around 45000 vehicles cross the Tamar Bridge every day, although this varies considerably over the days and months and especially so during the Summer holidays or when the SW hosts a popular event.

Regular users of the Tamar Bridge will have noticed the central traffic lane switches direction throughout the day.

The Bridge Control Room can set various traffic plans to suit prevailing traffic conditions. Whilst years of experience and traffic flow statistics allow us to predict general trends, constant changes in our leisure and business activities requires vigilance by the Bridge Control team to constantly monitor and adapt to

ever changing circumstances. If for some reason, the traffic unexpectedly changes, traffic plans can be set within minutes to keep people moving. On a typical day, lane plans are changed between 6 and 10 times!

The safety of all bridge users is paramount. Lane plan changes can often be made to aid the passage of emergency vehicles or to assist broken down vehicles. Bridge Control carefully and considerately monitor footpaths and cycleways to ensure everyone is okay and if required, customers receive help and assistance. Bridge Control also protect wildlife and pets who can sometimes find themselves on the bridge.

People use the Tamar Bridge for numerous different reasons, and whether it’s part of their daily commute or the beginning of their holiday to Cornwall, everybody has a story to tell. This is something Mark Meredith, Bridge Manager, finds incredibly fascinating and very much close to his heart‘Engineers of course love to build bridges, but it’s the fact a bridge connects people and communities together which is the most amazing and deeply human aspect that brings joy.’

To allow for a smoother journey and journey time reliability, the Tamar Bridge offers regular users the Tamar TAG discount scheme which uses a small electronic device (the TAG) in a vehicle’s windscreen to automatically open lane barriers without the need to open your window. During certain times , TAG only lanes are available to further aid transit through the toll plaza. For one or less frequent users, cash or contactless card payment options are available to all vehicle classes.

Embrace the history of I.K.Brunel’s Royal Albert Bridge and understand why the Tamar Bridge plays an integral part in today’s society. The Centre hopes to inspire young people and especially more women and girls into engineering and indeed all areas of STEAM (Science, Technology, Engineering, arts and Maths).

By combining the ease of travel with the connection of two communities, the Tamar Bridge stands as a beacon in the landscape and a structure to be cherished.

As a product of post-war Britain, the 60-year-old market has stood the test of time and remains to be a welcoming hub of passionate sellers and friendly customers located in Plymouth’s ‘West End’. Plymouth Market house a variety of different cuisines from British and American, to Caribbean, Mauritian and Japanese, therefore, when combined, they produce a mouth-watering aroma that fills the building.

With the freedom of such a large space, they often hold family-friendly events and are heavily involved in the West end carnival. this christmas, Santa will be coming to the market to meet you all, along with a few festive activities for the whole family. holding a stall at the plymouth market is an affordable way to try out a new business idea without the huge investment of a premise. these stalls provide a safe space to showcase your hard work and in turn, create a growth in the local economy.

the 36,000 sq. ft market hall complete with its unusual waved roof is best appreciated in person to understand the beauty of the building and what’s inside. But to take some of the guesswork out, we will be telling

Fancy trying something new? mauritian street food vendor ‘maurish’ has been in the plymouth market for all but 6 weeks (at the time of the interview). the inspiration came from the owner’s family roots that originate from mauritius. With mauritian food, you can expect a mix of african, indian and chinese cuisine, with fresh ingredients, made from scratch that same day.

the chicken curry is the most popular dish on their menu and they have received a compliment from a customer saying that it was the best chicken curry he’s ever tasted!

With specials changing weekly and vegan, vegetarian and gluten-free options always available, why not come down and try a dish or two?

In need of a fry-up fix? On the righthand side of the mezzanine market floor is PJ’s Diner, an American/ British style diner serving american pancakes, gut buster breakfasts, burgers, homemade cakes and pizza. on the left-hand side of the mezzanine floor is Pete’s Place serving British cuisine such as english breakfast, steak pies and roast dinners.

Both PJ’s Diner and Pete’s Place are owned by tracy and keith after the original owner, pete, decided to sell. tracy and keith are proud to call both eateries their own and have nurtured them over the years with the help of their children.

Bringing Nepal to the Plymouth Market. The newest edition to the market is Nepalese food vendor Everest Flavours. At the time of the interview, Everest Flavours was in its 4th week at the market when owner, Biraj, spoke to us about his new business venture.

Biraj’s idea is to transport people to Nepal with traditional Nepalese decor and authentic flavours. All of the dishes on the menu are affordable ranging between £2-£8 making it a perfect spot to try a few different dishes. Nepalese cuisine consists of lots of rice dishes, they also serve Momo, a traditional dumpling served with two chutneys, one sweet and one spicy to accompany the dish. Pull up a chair and dig in!

Been meaning to get that watch repaired? Coronet Engravers & Jewellery has been trading in the Plymouth Market since day 1 of the market opening. Coronet Engravers can personalise almost anything small or large including rings, dog tags and trophies. They also offer watch repairs, jewellery repairs and ear piercings. They find that a lot of their customers are very loyal and often come in specifically for Coronet.

The ground floor of the market is packed with independent stalls but don’t forget about the café’s on the mezzanine floor that offer an array of different cuisines from Vietnamese to homemade cakes.

It’s officially woolly jumper and log burner season therefore, we have found the best recipes to warm you up.

Coconut & Squash Dhansak Serves - 4

IngredIents

• 1 tbsp vegetable oil

• 500g butternut squash (about 1 small squash), peeled and chopped into bitesized chunks (or buy a pack of readyprepared to save time), see tip, below left

• 100g frozen chopped onions

• 4 heaped tbsp mild curry paste (we used korma)

• 400g can chopped tomatoes

• 400g can light coconut milk

• mini naan bread, to serve

• 400g can lentils, drained

• 200g bag baby spinach

• 150ml coconut yogurt, plus extra to serve

1Heat the oil in a large pan. Put the squash in a bowl with a splash of water. Cover with cling film and microwave on High for 10 mins or until tender. Meanwhile, add the onions to the hot oil and cook for a few mins until soft. Add the curry paste, tomatoes and coconut milk, and simmer for 10 mins until thickened to a rich sauce.

2Warm the naan breads in a low oven or in the toaster. Drain any liquid from the squash, then add to the sauce with the lentils, spinach and some seasoning. Simmer for a further 2-3 mins to wilt the spinach, then stir in the coconut yogurt. Serve with the warm naan and a dollop of extra yogurt.

Summer-inWinter Chicken

Serves - 4

IngredIents

• 1 tbsp olive oil

• 4 boneless skinless chicken breasts

• 200g pack cherry or sun-dried tomatoes

• 3 tbsp pesto

• 3 tbsp crème fraîche (half fat is fine)

• fresh basil, if you have it

1Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.

2Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

Vegan Chocolate Chip Cookies Makes

IngredIents

125g cold coconut oil

100g golden caster sugar

150g light muscavdo sugar

125ml coconut milk

1 tsp vanilla extract

275g plain flour

1 tsp baking powder

¼ tsp bicarb

200g vegan chocolate chips or vegan chocolate, chopped into small chunks

1Tip the coconut oil and sugars into a bowl and whisk until completely combined, then whisk in the coconut milk and vanilla. Tip the flour, baking powder, bicarb and a good pinch of flaky sea salt into the mix to make a thick batter, then fold through the chocolate chips. Chill the batter for at least 1hr. Can be made two days ahead.

2Heat the oven to 180C/160C fan/gas 4. Line a couple of baking sheets with baking parchment, then scoop or roll plum-sized balls of the dough and place them on the baking sheets about 2cm apart. Flatten ever so slightly and sprinkle with a bit more flaky salt if you want. Cook on the middle shelf for 12-15 mins, turning the tray once, until the cookies have spread and are golden but still soft in the middle. Leave to cool slightly, then lift the cookies onto a cooling rack while you bake another batch. Will keep in a biscuit jar for up to three days.

Vegan Curried Squash, Lentil & Coconut Soup Serves - 6

IngredIents

1 tbsp olive oil

1 butternut squash, peeled, deseeded & diced

200g carrot, diced

1 tbsp curry powder containing turmeric

100g red lentil

700ml low-sodium vegetable stock

1 can reduced-fat coconut milk

coriander and naan bread, to serve

Heat the oil in a large saucepan, add the squash and carrots, sizzle for 1 min, then stir in the curry powder and cook for 1 min more. Tip in the lentils, the vegetable stock and coconut milk and give everything a good stir. Bring to the boil, then turn the heat down and simmer for 15-18 mins until everything is tender.

Using a hand blender or in a food processor, blitz until as smooth as you like. Season and serve scattered with roughly chopped coriander and some naan bread alongside.
