Cortina inaugura la stagione più frizzante dell’anno con il Fashion Weekend, un lungo e glamorous fine settimana dedicato a shopping, sport ed eventi. In calendario oltre cento appuntamenti tra cui in nostro Comunicare il Tempo, la mostra-evento organizzata da Platinum eXperience e Bartorelli Gioiellerie. Per quest’anno il tema scelto è “La femminilità al polso” e sarà presentata in anteprima a stampa e selezionati ospiti, l’8 dicembre con un cocktail alle 18.30 all’Hotel de la Poste, e proseguirà in sala Dolomieu fino a domenica 11. E fra tanto fermento, Wonder Cortina ha scelto diverse storie da raccontare: dal villaggio recuperato allo spettacolare snowkite, dalle tavole d’eccellenza a una casa magnifica “dominata” dalle rose scarlatte, dai Mondiali 2021 all’aeroporto che verrà... E, fuori dal coro, una straordinaria avventura esotica alle Maldive e Zanzibar firmata Diamonds Hotels & Resorts.

Cortina opens the most sparkling season of the year with the Fashion Weekend, a glamorous long weekend dedicated to shopping, sport and other happenings. The programme comprises over a hundred events, including our “Comunicare il tempo” (Communicating Time), an exhibition-event organised by Platinum eXperience and Bartorelli Gioiellerie. This year’s chosen theme is “Femininity on the Wrist”, and members of the press and selected guests will be given a preview on 8 December with cocktails at 18.30 at the Hotel de la Poste.

The exhibition will continue in the Dolomieu room until Sunday 11.

There’s a lot going on, and Wonder Cortina has chosen to tell a number of stories, from a renovated village to fine food and wine, spectacular snowkiting, a lovely home dominated by red roses, the 2021 World Championships and the airport...plus a change of focus with a fantastic exotic adventure to the Maldives and Zanzibar, hosted by Diamonds Hotels & Resorts.

Un breve sunto delle azioni fatte dall’Associazione da gennaio ad oggi e, in particolare, quelle da lei promosse e volte allo sviluppo di Cortina e del territorio “Con il mio insediamento il consiglio ha deciso di intraprendere una linea più sindacale, il che equivale a dire una maggiore attenzione alle problematiche inerenti le numerose norme che sovrastano le nostre strutture. Nel 2016 l’Associazione Albergatori si è concentrata nella ricerca di contributi volti alla riqualificazione e ristrutturazione degli alberghi nell’ottica dei Mondiali 2021, che sono una grossa opportunità per ridisegnare le strategie turistiche dei prossimi 15 anni. È proprio di pochi giorni fà la pubblicazione dei bandi regionali che mettono a disposizione per la provincia di Belluno con finanziamento a fondo perduto del 40% con deminimis 200.000,00 euro che permetteranno di aiutare i nostri associati nella ristrutturazione delle loro case.

Oltre al reperimento dei fondi, abbiamo creato un prodotto che sia in grado di assistere le aziende in tutta la progettazione, finanziamento e richiesta di accesso al credito per la riqualificazione, in modo da essere assistiti da professionisti capaci durante tutto l’iter, evitando sorprese nel futuro.

Molto è stato fatto anche con le banche per avere l’accesso al credito con trattamenti paritetici a prescindere dalle singole capacità economiche”.

Ci sono state nuove adesioni di alberghi all’Associazione in questo anno?

“Nel corso del 2016 abbiamo avuto una nuova adesione, ma sinceramente non è stata fatta una campagna per incamerare

nuovi hotel, perchè credo che prima bisogna soddisfare gli associati esistenti, dopodichè andremo a richiamare anche gli altri”.

Come si sta preparando Cortina per accogliere i Mondiali 2021?

“Diciamo che di carne al fuoco ce n’è tanta, dalla viabilità alle piste da sci alla ristrutturazione degli hotel, ma sicuramente questo non è sufficiente per essere appetibili per un mercato turistico in continuo movimento. Sarà fondamentale dialogare con quelli che si candideranno per le prossime amministrative, in quanto l’Amministrazione deve tracciare una strategia turistica condivisa in modo che pubblico e privato remino nella stessa direzione”.

Quali eventi ci sono in programma per l’imminente stagione invernale?

“Partiamo con il Fashion Weekend, che è diventato di fatto l’apertura della stagione invernale. Poi ci saranno la gara di snowboard in Faloria, la Coppa del Mondo di sci, la classica Gran fondo Dobbiaco Cortina e Cortina Metraggio a marzo, oltre a una serie di eventi culturali ed enogastronomici che si svilupperanno nel corso della stagione. Finiremo con la Punta Nera, manifestazione free rider che coinvolge atleti da tutto il mondo”.

Qualche cenno sulle azioni in programma per il prossimo anno “Il 2017 sarà l’inizio della riqualificazione degli hotel che ci vedrà impegnati per aggiornare le nostre case con gli standard richiesti dal mercato e tornare ad essere l’eccellenza che eravamo”.

Can we start with a rundown of what the Association has done since January, especially those promoted by you, aimed at developing Cortina and the region?

When I started the job I decided to take a more supervisory approach, which means paying more attention to the problems inherent in the many regulations that control our services. In 2016 the Hotel Owners Association focused on seeking finance aimed at redeveloping and restructuring hotels in the run-up to the 2021 World Championships, which present a wonderful opportunity to reshape tourism strategies for the next fifteen years. A few days ago the regional tender notices were published, making available grant funding of 40% for the Belluno province under the EU’s rule allowing a ceiling of 200,000 euro. This will help our members to restructure their premises. As well as finding funds, we have created a product that can assist companies throughout the planning, financing and credit request stages of redevelopment, so they can benefit from the help of professionals who can accompany throughout the entire process, enabling them to avoid any unpleasant surprises.

We have also worked with the banks to provide access to credit on the basis of account individual financial ability.

Have any new members joined the Association this year?

We’ve welcomed new members in 2016, but to be honest our campaign wasn’t aimed at new hotels, I think we should give priority to meeting the needs of existing members and then go looking for new associates.

How is Cortina getting ready to host the 2021 World Championships?

We have lots of irons in the fire - access, ski runs, hotel renovation and so on - but that’s not going to be enough to satisfy a constantly-evolving tourism market. It will be

crucial for us to open a dialogue with those putting themselves forward for the next administration, as we have to develop a shared tourist strategy so that the public and private sectors are singing from the same hymn sheet.

What events are in the pipeline for the upcoming winter season?

We’re starting with the Fashion Weekend, which has become the unofficial opening of the winter season, the snowboard competition in Faloria and then the skiing World Cup, the classic Gran Fondo Dobbiaco Cortina, Cortina Metraggio in March and a whole series of cultural and gastronomic events held throughout the season. It’s all rounded off by the Punta Nera free rider event that will involve athletes from all over the world.

Can you give us an idea of what’s on next year?

Next year will mark the start of the hotel renovation initiative, which will see us involved in updating our facilities to current market standards and regain the standards of excellence we always aim for.

Incontri ravvicinati con la natura. A Cortina si possono fare facilmente e non è raro imbattersi persino in esemplari di cervo nobile (Cervus elaphus) come quelli ritratti in questa foto. Ma i cervi sono solo una delle 160 specie che popolano il Parco Naturale delle Dolomiti d’Ampezzo. L’area protetta, istituita nel 1990, si estende per 11mila ettari fra imponenti gruppi montuosi, le cui cime più elevate superano i 3.200 metri di quota.

Close encounters with the natural world. Not difficult in Cortina, where you may even come across some red deer (Cervus elaphus) like the ones in this photo. But red deer are only one of the 160 species that live in the Dolomiti d’Ampezzo Nature Reserve. The protected area was set up in 1990, and covers 11,000 hectares of imposing mountain peaks, with the highest standing at over 3,200 metres.

Cortina è riuscita a mantenere intatto nei secoli il territorio che la circonda grazie a un’attenta politica di protezionismo della flora e della fauna alpine e di ripopolamento delle specie animali in via di estinzione.

Oggi all’interno del Parco vivono stambecchi, cervi, caprioli, camosci, aquile, marmotte, scoiattoli, aquile reali ma anche volpi rosse (Vulpes vulpes) come lo splendido esemplare in questa foto.

A strict policy of protecting the alpine flora and fauna and repopulating animal species threatened with extinction has enabled Cortina to ensure that the surrounding area has remained intact. Now the park is home to ibex, deer, roe deer, marmot, eagles, squirrels, golden eagles and even red foxes (Vulpes vulpes) like the magnificent example in this photo.

Paradiso dei birdwatchers, il Parco Naturale delle Dolomiti d’Ampezzo ospita ben 113 specie di uccelli, tra cui la simpatica Cincia dal ciuffo (Lophophanes cristatus, foto sopra). Invece il camoscio alpino (Rupicapra rupicapra, nella foto a destra) è senza dubbio l’ungulato più rappresentativo: la consistenza complessiva si aggira attorno ai 1.500 capi, con maggior densità nella zona di Croda Rossa.

Not many people would think of Cortina as a garden of red roses, but the colours and materials in this house looking out onto the woodland celebrate this lovely flower

he Dolomites, especially the peaks around Cortina d’Ampezzo, are often associated with the fiery red colour they take on at sunset and the vivid greens of the woods and meadows. Not many people would think of Cortina as a garden of red roses, but the colours and materials in this house looking out onto the woodland, recently renovated by architect Ambra Piccin, celebrate this lovely flowers. Here and there, against the background of extensive hand-planed, waxed, antiquated larch panelling, appear roses and artistic patterns inspired by them, creating a decorative theme for the entire project - from the wall lamps with glass decoration in the living area to the details on the large corridor painting by local artist Paolo Barozzi, to the inlays on the bedhead in the master bedroom and the lovely coordinated fabrics. Even the wall decorations in the shower of the master bathroom recall these

e Dolomiti, e in particolare Cortina d’Ampezzo, si associano spesso al rosso per il colore infuocato delle rocce al tramonto, mentre la natura richiama il verde intenso dei boschi. È raro pensare a Cortina come ad un giardino di rose rosse, ma questa casa affacciata sui boschi, recentemente ristrutturata dall’architetto Ambra Piccin, celebra nel colore e nelle finiture proprio il più famoso dei fiori. Sullo sfondo di un’importante boiserie in abete spazzolato, piallato a mano e poi trattato a cera, spuntano qua e là, come leitmotiv dell’intera ristrutturazione, rose e giochi artistici che le richiamano: dalle applique con decori in vetro della zona living ai dettagli sull’importante quadro del corridoio, firmato dall’artista ampezzano Paolo Barozzi, per continuare con gli intarsi sulla testata del letto padronale, abbinati ai preziosi tessuti a tema.

Perfino gli addobbi sulla doccia del bagno padronale richiamano questo fiore, così amato e unico.

L’architetto Piccin ha saputo rendere omogenea questa figura, spesso stilizzata come nel dettaglio dei giochi verticali della cucina o nei capitelli delle colonne del rivestimento, nell’insieme di una

La ristrutturazione pensata dall’architetto Piccin riesce a garantire ampia vivibilità nelle tre camere da letto e nei tre bagni, pur privilegiando, come spesso accade a Cortina e nelle località più ambite, la zona living. Qui, oltre al divano ad angolo, un grande tavolo ospita porcellane e decori anche d’epoca ed è sormontato da una lampada con putto e decori animali, nel più classico stile alpino, per un insieme affascinante e unico, proprio come un fiore.

Red, of course, is the chosen colour for the decoration on the handpainted ceramic stove, which stands in a relaxation corner that dominates the entire house. The overall decor is embellished by the details in the wood, which can be seen in the curves and ceiling coffers. Although this was not a large project, Ambra Piccin’s renovation provides plenty of living space in the three bedrooms and bathrooms, whiole retaining the traditional local feature of a spacious lounge. Here, the corner sofa is joined by a large table with porcelain pieces and period decoration. It is surmounted by a lamp with putti and animal decoration in the most classic Alpine style, creating a unique, charming effect - just like a flower.

Aspettando i Mondiali n paese non si parla d’altro. Ora è ufficiale: i Mondiali di sci alpino saranno ospitati da Cortina tra poco più di quattro anni, e l’attesa monta tra gli addetti ai lavori, la gente comune e i turisti.

Questo è il primo grande evento sportivo organizzato in Italia da tantissimo tempo a questa parte. Cosa è stato deciso di fare a proposito di piste e impianti? E quali altre nuove infrastrutture sono state previste?

I

già oggi arriva la linea che sale da Venezia. Si chiuderebbe il cerchio creando un vero circolo virtuoso che moltiplicherebbe il traffico degli sciatori e diminuirebbe quello su gomma.

Si è perfino parlato di una linea da Bolzano che passi attraverso l’Alpe di Siusi, la Val Gardena e l’Alta Badia. E qui si giocherà la battaglia dei finanziamenti.

Now it’s official - in just over four years’ time Cortina will be hosting the Alpine World Ski Championships, and there’s a growing sense of anticipation among those involved professionally, the townsfolk in general and tourists, as it will be the first big event held in this part of Italy for quite some time. What decisions have been made regarding pistes and facilities? And what new infrastructure is planned?

EXPECTED NUMBERS AND EFFICIENT CONNECTIONS We’ll start with the reason for all this - Alpine skiing, for athletes and above all for tourists.

We know the arrival area must be revamped and some ski lifts will be renovated as part of the normal cycle, as they must meet the requirements of the thousands and thousands of skiers arriving here by, increasing the hourly lift rate - in other words, carrying more people up the slopes, more quickly. We predict that 230,000 spectators will arrive in Cortina for the Winter 2021 World Championships in Cortina - half of these Italian or Austrian plus 800 million TV and web connections.

So far the decision has been made to build two new cable car installations, both of high strategic value. The one in Col Drusciè will link the centre of the village to the competition areas, and the so-called Son dei Prade – Bai de Dones lift will link the Cinque Torre area.

This route will connect Cortina with the Alta Badia and the rest of the Dolomites, and will also play a crucial role in the facilities offered by all the surrounding valleys. The length of inter-connecting runs available is every skiier’s priority, and the links between one ski area and another will determine Cortina’s future. That’s why everyone has a stake in knowing above all if the possible railway connections will really

the World Championships be built. There’s talk of extending the line that already links Brunico and San Candido via Padola (at the start of the pistes that run down from Alta Pusteria) and Calalzo di Cadore, also served by the line coming up from Venice.

What’s needed is a circle, a virtuous circle that would multiply ski traffic and decrease road traffic. Some have even suggested a line from Bolzano through the Siusi Alp, the Val Gardena and the Alta Badia. The problem here is financing.

BY THE PROSPECTUS The future of a community is at play in the bid for the 2021 World Championships. It’s a great opportunity, like the 1956 Olympics. Of course, Cortina will invest not only in ski-lifts but in all tourism facilities. Discussions are taking place about hotel renovation projects, wi-fi on the slopes, wellbeing centres, swimming pools and even re-opening the airport without having a negative impact on Cortina’s inherent

charm, upsetting the harmony of the its countryside. That’s one of the aims of the Cortina Charter, the document signed by all the bodies involved that binds everyone to reduce environmental impact. As for the question of road access, the dispute surrounding the new road to Rumerlo, the location of the arrival area, stands, media and some services, has yet to be resolved.

Some have suggested a tunnel but others are seeking valid alternatives. The ring road will be extended and new parking spaces created in Largo Poste. How will fans access the competition run? As well as the usual shuttle services, cable transport will also be needed - the Freccia del Cielo hybrid lift for the slalom and the Roncavo chair lift for all the other events. The current Olympia delle Tofane, reserved for women’s events, will be modified and the Valon, Canalone, Vertigine Bianca and Rumerlo will be prepared for the men’s events, as well as pistes A and B on the Col Drusciè.

enticinque anni fa li chiamavano “sport estremi” e quell’aggettivo che si portavano dietro regalava loro grande fascino. Oggi molti vengono più laicamente chiamati ‘sport outdoor’ e l’uomo della strada - o, se vogliamo, lo sciatore della domenica - ha ben inteso che sono attività molto divertenti e facilmente accessibili a chiunque. Lo snowkite è uno di questi sport.

“Fare snowkite significa andare con gli sci sulla neve trainati da una vela”, ci racconta Michele Alì che da una decina di anni al Passo Giau, a pochi minuti dal centro di Cortina, dirige una delle scuole di snowkite più apprezzate dell’interno arco alpino. Si chiama Kite4Freedom e fa base proprio al Rifugio Passo Giau, a 2236 metri di altitudine.

wenty-five years ago they were described as “extreme sports”, a name that gave them an aura of intense fascination. Now many use the more prosaic term ‘outdoor sports”, and the person in the street - or, if you will, the typical Sunday skier - has realised that they are fun activities that can be enjoyed by all. Snowkiting, or kite skiing, is one of these sports. “Snowkiting means being pulled across the snow on skis by a kite”, says Michele Alì. For ten years or so he has led one of the Alpine region’s most highly-regarded snowkiting schools at Passo Giau, a few minutes from the centre of Cortina. It’s called Kite4Freedom and

Uno sport, quindi, che fa scorrere adrenalina nelle vene, che si può praticare con grande sicurezza e che è perfino ecosostenibile.

“La zona del Passo Giau è perfetta. Non ci sono impianti e quindi mancano i cavi e i tralicci delle seggiovie che ci impedirebbero di solcare cielo e neve. Tanto vento costante e tanta neve su un grande pianoro senza pendenze”. La scuola aprirà il prossimo 8 dicembre e richiamerà come sempre un pubblico eterogeneo, per provenienza geografica (“il 60% dei clienti sono italiani ma

abbiamo ospitato perfino dei brasiliani”),

E sottolineiamo che con lo snowkite non

Diamo qualche indicazione agli aspiranti kiter? “È molto più semplice provare con gli sci che con la tavola, per una questione di stabilità.

Vestitevi poco: è meglio abbigliarsi come se si andasse a fare scialpinismo con una giacca leggera antivento perché gestire sci e vela allo stesso tempo ci fa consumare molte calorie e ci si scalda molto.

Qual è la prima cosa che gli aspiranti kiter chiedono quando entrano da Kite4Freedom? “Ovviamente vogliono sapere quanto tempo serve per essere autonomi. Bastano otto ore di lezione nei due giorni del weekend. L’obiettivo è imparare a pilotare l’aquilone in sicurezza: una volta appresi i fondamentali, poi si viene qui a noleggiare l’attrezzatura per divertirsi da soli. Nel weekend del 14 e 15 gennaio, organizzeremo anche un Demo Day in cui tutti potranno provare lo snowkite gratuitamente”. Un’occasione da non perdere.

The school opens on 8 December, and as usual will attract a varied clientele from all over the world (“Around 60% of my clients are Italian, but we’ve even had some Brazilians”), of all ages (“From fifteen upwards, you just have to be reasonably fit and have a minimum of skiing ability”) and different sports backgrounds. “Many of the people who come to try out snowkiting have some experience on the water.

It’s true that knowing how to kitesurf halves the learning time but you shouldn’t underestimate the differences, starting with the kite - on the snow we use one that’s much more similar to the paragliding wing”. Have you any tips for aspiring kiters? “It’s much easier to try with skis than with a board. It’s

a question of stability. Don’t wear too much kit dress as you would for alpine skiing with a light, windproof jacket because controlling skis and sail at the same time burns a lot of calories and you’ll soon warm up. We also emphasise that you aren’t supposed to take off from the ground when you’re snowkiting! People doing what they call speed riding launch themselves from high slopes with a small sail.

n attesa dei Campionati Mondiali di sci alpino del febbraio 2021, quando le splendide montagne della conca ampezzana saranno in “mondovisione” per circa 800 milioni di telespettatori, Cortina allestisce Olympic Winters, una mostra dedicata alla complessa ed esaltante vicenda delle Olimpiadi d’inverno, dagli albori degli anni Venti alla magia irripetibile di Cortina 1956, per arrivare infine a Sochi 2014. Dopo la prima esposizione estiva, dall’ 8 dicembre al 17 aprile 2017, l’Alexander Girardi Hall, replica per la stagione bianca.

n the runup to the February 2021Alpine World Skiing Championships, when images of the soaring peaks around Cortina will be beamed around the world and watched by around 800 million TV viewers, Cortina is mounting an exhibition called Olympic Winters, dedicated to the complex and exciting events of the Winter Olympics from its beginnings in the 1920s through to the unrepeatable magic of 1956, and then Sochi 2014. After an initial summer showing the exhibition will be hosted at the Alexander Girardi Hall from December 8 to April 17. This interactive journey through the history of the Winter Olympics takes the form of dozens of panels, facts and statistics, illustrations and stories organised into over twenty sections. The exhibition takes a look at the Olympic disciplines and structures, examines the costs and benefits of every game and includes a focus on the winners. It also shows

A visit to Olympic Winters makes it possible to understand how Cortina 1956 was such a watershed event in the Winter Olympics story - the early games were met with scepticism by Baron De Coubertin, the “Father of the Games”. The events held among the mighty Dolomite mountains that year achieved a media impact that enabled them to free themselves for ever from the dominance of the Summer Olympics. The exhibition follows the Olympics timeline to reach Sochi in 2014, and the plans for the future Olympics in PyeongChang and Beijing. The Sochi Olympics of two years ago marked a significant step, the peak of this dizzying progress.

Il villaggio recuperato

Frutto di un’idea di Enrico Mattei e realizzato da Edoardo Gellner, l’ex villaggio ENI diventa un borgo incantato dedicato a vacanze a tutta natura metà degli anni ’50 Enrico Mattei decise di costruire un villaggio turistico sulle Dolomiti riservato ai collaboratori del Gruppo e alle loro famiglie. Il progetto venne affidato all’architetto Edoardo Gellner, istriano di nascita e cortinese di adozione, famoso per aver realizzato alcuni edifici per le Olimpiadi Invernali del ‘56.

Identificato il luogo, Borca di Cadore, in una zona ghiaiosa ai piedi del Monte Antelao, nel 1955 iniziarono i lavori, e grazie alla piena complicità tra Mattei e Gellner, vennero costruiti una colonia per 600 bambini, un campeggio a capanne, un albergo, un residence, la chiesa, realizzata in collaborazione con Carlo Scarpa, e 263 villette unifamiliari, perfettamente integrati nell’ambiente circostante. Gellner, spinto dalla passione, realizzò un villaggio unico nel suo genere, il “Villaggio Sociale ENI”, un pezzo di storia dell’architettura delle Alpi, e curò personalmente ogni aspetto, dall’urbanistica al design, dalle strade alla piantumazione degli alberi, fino al progetto di mobili e arredi. Oggi il villaggio rivive e diventa meta di una vacanza di quiete e tranquillità: insieme alle ville originali e recuperate, molte delle quali mantenute con le caratteristiche tipiche degli anni ‘50 o ristrutturate all’insegna del rispetto verso la tradizione e l’ambiente, sorgono 24 nuove ville di design che si rifanno a quelle originali di Gellner e sono la prosecuzione e il completamento di un progetto innovativo iniziato mezzo secolo fa. Le nuove ville di Corte delle Dolomiti sono ecosostenibili perché costruite utilizzando materiali ecologici secondo i

criteri di CasaClima, utilizzando le tecnologie più adeguate in termini di comfort e risparmio energetico.

Tutte le ville hanno ottenuto la certificazione CasaClimaA. Un risultato di eccellenza che si raggiunge solo con una altissima qualità nel progetto, nei materiali e nella realizzazione. Le ville di Corte delle Dolomiti offrono questo altissimo livello in ogni loro caratteristica, dalla progettazione dei volumi all’individuazione della tecnologia costruttiva, dalla scelta dei materiali alla posa degli impianti. THE RESTORED VILLAGE The brainchild of Enrico Mattei with design by Edoardo Gellner, the former ENI village has become an enchanted village for holidaying in untouched nature

corner of the Dolomites reserved for the Group’s collaborators and their families. The project is from the pen of architect Edoardo Gellner, Istrian by birth but a native of Cortina by adoption, famous for his work on several of the constructions built for the Winter Olympics in 1956. Work began in 1955 after choosing the site, Borca di Cadore, a gravelly stretch at the foot of Monte Antelao. The total cooperation between Mattei and Gellner led to the construction of a colony for 600 children, a cabin campsite, hotel, residence and church built in collaboration with Carlo Scarpa, plus 263 singlefamily chalets, blending perfectly into their environment. Driven by a passionate commitment to the scheme’s success, Gellner created a

unique resort, the “ENI Social Village”, a piece of Alpine architectural history, supervising every element personally from planning to design, from street layout to tree-planting and designing furniture and fittings.

Nowadays the village has been brought back to life to become a holiday destination offering exceptional peace and tranquillity. Many of the original, restored chalets have retained typical 1950s features, while others have been redeveloped with respect for tradition and the environment. They have also been joined by twenty-four new villas echoing Geller’s original design. Their construction represents the completion of an innovative project initiated half a century ago.

are built using ecological materials in line with CasaClima criteria, with technology that generates the highest levels of comfort and energy savings. All the villas have been granted CasaClimaA certification. This outstanding achievement was only made possible by the extremely high quality of the design, materials and construction. In centro città il ristorante dello storico Hotel De La Poste della famiglia Manaigo, un’istituzione come il mitico Bar, lanciato da Renato Haussmann, che ha consacrato la fama dell’albergo. Basta guardarsi intorno per respirare l’atmosfera calorosa dell’antica stube ampezzana, che si trasforma in un ottimo ristorante per pranzi e cene proposti dall’eccellente chef Gianfranco Faustini.

Si cambia pagina per un altro grande albergo di Cortina, il Cristallo, che da qualche mese ha un nuovo executive chef. E’ Fabrizio Albini, che dopo aver moltiplicato le esperienze all’estero e in Italia,

tra Tel Aviv, la Francia e lo yacht di Giorgio Armani, ha assunto le redini della cucina del Cristallo. La sua filosofia in cucina unisce il rispetto della tradizione, la qualità delle materie prime e il gusto per forme, colori, temperature, profumi nuovi. Infine El Zoco – ossia il nome del tronco attaccato alle radici, quello che resta sul terreno dopo aver segato il tronco - in località Cademai 18. Nicolò Zardini, esperto cuoco e conoscitore di vini, è figlio d’arte ed è cresciuto tra i profumi della buona cucina. Predilige gli ingredienti genuini, e bada poco alle tendenze: “i sapori veri restano, le mode passano”, è il suo credo. Oltre alla cucina ha due grandi passioni: il volo (ha il brevetto di pilota specializzato in volo in montagna) e la Grande Guerra, di cui raccoglie cimeli ritrovati da lui e in bella vista al ristorante. Uomo schietto e genuino, come la sua cucina, istrionico e mattatore, parla inglese, tedesco, olandese e altro, e anche per questo la sua è una clientela internazionale che ama poter parlare con un “oste”, come si definisce, che non si limita a fare l’elenco dei piatti. Nicolò Zardini, expert chef and wine connoisseur, was born into the business and grew up immersed in the aromas of good cooking. He prefers genuine ingredients, and pays little heed to trends. His philosophy is, “The real flavours endure, fashions pass”.

Apart from cooking he has two great passions - flying (he holds a pilot’s licence, specialising in mountain flying) and the Great War. He collects the relics he finds in the area in view of his restaurant.

He is as frank and genuine as the food he prepares, dramatic and always the centre of attention. He speaks English, German, Dutch and other languages, another reason why his restaurant boasts an international clientele that enjoys being able to talk to a host who can do more than simply list the dishes on the menu.

His specialities are canederli (dumplings) and casunziei, handmade according to ancient recipes, grilled meats, squash gnocchi, risottos, grain soups, potato pasta whose flavour is inspired by his grandmother Lucia’s Sardinian “Culurgiones”, the famous spaghetti “al pugno chiuso” (closed fist) and “ciaspes” gratin, his special snails bourguignon, and pear and apple strudel.

LUMACHE BOURGUIGNONNE

Lasciare spurgare le lumache nella crusca 2 giorni, dopodiché lavarle con acqua corrente e bollirle in acqua leggermente salata per un’ora e mezza. Scolare, risciacquare ed estrarre la lumaca con uno stuzzicadenti. Dividere il corpo dall’intestino, lavare la parte anteriore e farla bollire in un brodo di cipolla, carote,sedano,pepe nero in grani, vino bianco, limone ed estragone per un’altra ora e mezza.

Nel frattempo pulire accuratamente i gusci in acqua e bicarbonato, poi asciugarli con un panno o nel forno a bassa temperatura. Montare il burro con un frullatore, aggiungere tutti gli ingredienti inserendo alla fine il vino bianco e il prezzemolo. Riempire il guscio precedentemente preparato con un po’ di burro, inserire la lumaca e ricoprire interamente con il burro. Infornare a 220 gradi per 10-12 minuti.

SNAILS BOURGUIGNON Allow the snails to purge in the shell for two days, then wash in running water and boil in slightly salted water for an hour and a half. Drain, rinse and extract the snails with a toothpick. Remove the intestines, wash the front part and boil in a stock of onion, carrots, celery, black peppercorns, white wine, lemon and tarragon for a further hour and a half. Meanwhile clean the shells carefully in water with bicarbonate of soda added, then dry with a cloth or in a low oven.

Beat the butter in a blender, adding all the other ingredients except for the wine and parsley, which are added at the end. Fill the prepared shells with a little butter, insert a snail into each one and cover completely with butter. Cook in the oven at 220 degrees for 10-12 minutes.

IL RAVIOLO con UOVO e TARTUFO Preparare un ripieno con ricotta e erbette leggermente profumate con poca cipolla, tirare la pasta e formare una corona al centro con il ripieno appena preparato, lasciando un incavo per il rosso d’uovo. Stendere la pasta anche sopra e chiudere il raviolo. Portare il raviolo a cottura in acqua salata avendo cura di lasciare il tuorlo cremoso. Condire con burro e parmigiano e all’ultimo momento una grattugiata di tartufo. L’idea del piatto è che una volta aperto il raviolo fuoriesca il rosso d’uovo il quale permetterà di condire il tartufo.

RAVIOLI WITH EGG AND TRUFFLE Prepare a ricotta and herb filling, lightly flavoured with a little onion. Make the pasta and shape a crown with the freshly-prepared filling in the centre, leaving a hollow for the egg yolk. Fold the pasta over the top and close the ravioli. Cook the ravioli in boiling, salted water, taking care that the yolk is runny and creamy.

Season with butter and parmesan cheese, and then at the last moment add a scattering of grated truffle.

The idea of this dish is that the yolk flows out when the ravioli is opened, adding its flavour to the truffle.

BUCCIA di TOPINAMBUR FINFERLI e LAMPONI Cuocere in abbondante acqua salata i topinambur per 40 minuti circa. Con l’aiuto di un cucchiaio in modo molto delicato per evitare di rompere la buccia, scolarli e lasciarli intiepidire all’interno di un canovaccio.

Con un coltello piccolo da cucina srotolare la pelle togliendo la polpa del topinambur. Stendere la pelle a forma di rettangoli sopra carta assorbente e conservare la polpa. Montare la polpa del topinambur in un frullatore con l’aggiunta di 30 g di olio extravergine di oliva ed aggiustare di sale. Frullare la metà dei lamponi, setacciarli e conservarli in un contenitore da dressing. Mettere a scaldare l’olio extravergine d’oliva in una pentola da frittura, nel frattempo pulire e tornire i finferli e tritare lo scalogno. Rosolare con una noce di burro lo scalogno, aggiungere i finferli lasciarli stufare per qualche minuto e glassare con il fondo di pollo. Immergere le bucce nell’olio caldo e friggerle. Scolarle e asciugarle con carta assorbente. Adagiare sopra un piatto le bucce, posizionare sopra di esse i finferli, le scagli di Brit, i crescioni, la meta rimasta dei lamponi, la mousse di topinambur e condire con la coulis di lampone.

JERUSALEM ARTICHOKE SKINS, CHANTERELLE MUSHROOMS AND RASPBERRIES Cook the Jerusalem artichokes in plenty of salted water for around 40 minutes. With the help of a spoon, working delicately to avoid breaking the skins, drain the Jerusalem artichokes and wrap in a kitchen towel until lukewarm. Peel the skin off with a small spoon and remove the vegetable flesh. Place rectangles of the skin on absorbent paper and keep the flesh. Beat the flesh in a blender along with 30 g EVO oil. Add salt to taste. Blend half the raspberries, mash and keep to one side in a dressing container.

Heat the EVO oil in a frying pan. Meanwhile, clean and trim the chanterelles and chop the shallot.

Brown the shallot in a knob of butter, add the chanterelles, leave to cook for a few minutes and then glaze with the chicken fond. Place the skins in the hot oil and fry them. Drain and dry with absorbent paper. Arrange the skins on a plate, place the chanterelles, flakes of Brit, the parsley, the remaining raspberries and Jerusalem artichoke mousse on top and dress with raspberry coulis.

Cortinairport DIVENTA REALTÀ

er arrivare in tempo occorre muoversi subito. E non solo con l’obiettivo dei Mondiali 2021 ma, e soprattutto, per ricollocare Cortina in vetta al turismo mondiale d’élite. Per far questo, una cordata di brillanti imprenditori, si è messa in testa di riqualificare l’attuale aeroporto. Costituita la società Cortinairport e depositato il progetto in luglio - progetto che prevede l’allungamento della pista attuale da 1290 metri a 1.600 verso sud - presso il Comune di Cortina d’Ampezzo, tutto è pronto, almeno sulla carta, perché questo sogno si trasformi in realtà.

Per diverse ragioni, di business certo, ma anche di cuore, perché la Regina delle Dolomiti è iscritta a pieno titolo nelle Eccellenze italiane ed è un dovere far sì che diventi sempre più eccellente. Cortina è unica per diverse ragioni e come tale va trattata e vissuta, e anche la sua porta di ingresso aereoportuale deve esserlo. Cortina è unica, così semplicemente, Cortina è. L’unico territorio riconosciuto da Altagamma, la Fondazione che riunisce il gotha del Made in Italy e ne promuove i contenuti a tutti i livelli. Ed è l’unica località italiana inserita nel Best of the Alps, il gruppo delle

location “top” dell’arco alpino. Raggiungere Cortina in aereo è un po’ come gustare l’antipasto di quella che sarà una grande cena stellata perché la magia che la città sprigiona si deve poter sentire già nell’aria, solo scorgendone le luci. A pista finita si potranno accogliere una buona parte di aeromobili impiegati nella Business Aviaton (Beech King 350, Cessna Citation1 e X, Caravan 208, Dornier 228 e 328) e attivare un servizio su

richiesta (di linea all’inizio non sarà possibile) tra le principali città italiane – Venezia, Milano e Roma - con macchine turboelica fino a 19 posti, come il Viking 400 e il Be 1900 d.

E varcando i nostri confini si è pensato a “connection” con Cannes/Montecarlo, Ginevra, Innsbruck e Monaco di Baviera.

Cortinairport ha già suscitato l’interesse di tre compagnie aeree che hanno manifestato la volontà di aprire le connessioni e la società ha intenzione di acquistare due aereomobili turboelica a basso impatto ambientale per attivare i collegamenti. Per riattivare la pista è necessario un anno e mezzo di lavoro e l’obiettivo è essere pronti dal 2018 per poter arrivare nel 2020 a ottenere la classificazione di aeroporto internazionale.

Ma l’ambizioso progetto di Cortinairport prevede anche il rilancio delle zone commerciali del Terminal che dovranno

avere un respiro internazionale e trasformarsi in eleganti showroom, parte del tessuto connettivo dell’Italia vincente e lanciata verso il futuro. Praticamente una fiera continua delle cose Belle d’Italia. Ovviamente tutti i lavori previsti sono green oriented e particolari accorgimenti nella posa delle strutture e nella tipologia degli impianti, tenderanno a ridurre l’impatto ambientale delle nuove costruzioni, mentre l’energia termica necessaria sarà prodotta con impianti a basso impatto ambientale ad energia circolare. Anche i velivoli accettati saranno a nuova tecnologia saranno meno impattanti. E a fine lavori, l’aeroporto di Cortina sarà pronto ad accogliere l’imponente flusso di turisti, sportivi e addetti ai lavori che arriveranno nella conca ampezzana in occasione dei Mondiali Sci Alpino 2021.

Renovating the airport is at the top of the list

Y

ou have to act fast to arrive in time. The target isn’t just the 2021 World Ski Championships - the most important aim is for Cortina to reclaim its position as the leader in the international elite tourism market. To achieve this a group of brilliant entrepreneurs have set their sights on renovating the city’s airport. After forming the Cortinairport company and registering the project - an initiative that includes lengthening the present runway southwards from 1,290 metres to 1,600 metres - with the local authorities, everything is now ready, on paper at least, for this dream to become reality. The process is driven by business considerations, but there’s an emotional side, too. The Queen of the Dolomites may be a centre of excellence in Italian tourism, but local people feel a deep desire and duty to make it even better.

There are many reasons why Cortina is such a special destination, and should be seen and experienced as such. Its gateway airport must reflect this. Cortina is unique. It’s the only region to be recognised by Altagamma, the foundation that brings together the best of Made in Italy and promotes it at every level. It is also the only Italian destination to be included in the Best of the Alps, a group of top Alpine locations. Flying in to Cortina is a little like

tasting the starter for what is to be a magnificent gala dinner, as visitors can feel the city’s magic in the air as soon as they see the lights of Cortina below their wingtips. When the runway work is finished the airport will be able to accommodate the most popular business aircraft types, including the Beech King 350, Cessna Citation1 and X, Caravan 208 and the Dornier 228 and 328, and will initiate an on-demand service (although not available online at first) linking Cortina with the major Italian cities Venice, Milan and Rome - using turboprop airliners seating up to nineteen passengers, like the Viking 400 and Be 1900D. There are also plans for connections to Cannes/Montecarlo, Geneva, Innsbruck and Munich. Cortinairport has already attracted interest from three airlines, which have expressed a readiness to provide these links. The company intends to purchase two low environmental impact turboprop aircraft to start the ball rolling.

Work on the runway will take one and a half years, and the aim is to be ready by 2018, achieving international airport classification in 2020. The ambitious Cortinairport project also envisages the relaunch of the terminal’s shopping zone. This will acquire an international look, and will be transformed into elegant showrooms, an element in the broader context of a successful Italy looking confidently to the future. An always-open fair offering the Best of Italy, in fact. Of course, all the planned work is green-oriented, especially in building the structures and facilities. This will reduce the environmental impact, while the thermal energy needed will be generated by circular energy low environmental impact systems. The aircraft using the airport will also use new, more ecological technology. Finally, when all the work is completed Cortina airport will be ready to welcome the tourists, athletes and staff who will be flooding in for 2021 Alpine World Ski Championships.

Every GFase piece is inspired by a theme and embodies a symbol - a story, a fragment of a legend or fairytale. motifs and echoes of symbols, and some of them can be worn by men or women - like the “Nome della Rosa” champagne straw collection, a homage to Umberto Eco’s best-selling novel “The Name of the Rose”. This bronzed, burnished 925 silver straw is adorned with a laser cut floral arabesque. One simple action joins the two sections, and the straw is ready for its owner to sip his or her favourite Champagne. Snug in its elegant leather case, it can be carried in a clutch bag or jacket pocket.

oveva piovere sull’intera Liguria ed è stata invece l’ultima vera giornata d’estate, anche se estate non era più da settimane. Portofino, poi, ha fatto il resto. Decisamente tutto all’altezza del meraviglioso Ocean Pearl. O di Platinum Experience. O viceversa. Il Motor Yacht di 41 mt firmato dall’architetto londinese Norman Foster è stata la floating location esclusiva per l’evento di Platinum Experience, un dinner-party MIDDLE EASTERN EXTRAVAGANZA, con l’esposizione di oggetti di design dei tre brand Daevas, Ivan Paradisi e Igreg Studio che hanno allestito il ponte superiore dell’Ocean Pearl con i loro migliori pezzi di arredo e design, per presentarli e presentarsi a un parterre d’eccezione. ain was forecast across Liguria, but although summer had been in hiding for weeks it decided to make one final appearance. Portofino did the rest. And everything was worthy of the lovely Ocean Pearl - the 41-metre motoryacht created by the famous London-based architect Norman Foster. All on board, then, for the MIDDLE EASTERN EXTRAVAGANZA, an exhibition of design objects by three brands, Daevas, Ivan Paradisi and Igreg Studio. They usually work for an Oriental clientele, but this time they displayed their design and furnishing pieces on the Ocean Pearl’s upper deck, enabling them to introduce their work - and themselves - to a select party of guests.This unique dinner party on board the 41-metre motor yacht was organised by Platinum Experience, with the collaboration of We Are Disobedient and prestigious sponsors like Floating Life (a specialist in super and megayacht management, charter and sales - in fact, they made available this magnificent megayacht from their extensive fleet), Maserati, represented by Forza SpA, official Maserati dealer for the Piedmont, Liguria and Valle d’Aosta regions, which displayed a Levante 275hp Diesel 3.0 and a GranTurismo Sport CC Automatica 4.7 on Calata Marconi facing the Ocean Pearl, and Italy - Sotheby’s International Realty, a hallmark of uniqueness and exclusivity. A special encounter, inviting guests who have shown themselves to be connoisseurs of art, design and elegance, sharing with us this special exclusive event, made all the more spectacular by the exceptional venue. The menu was, of course, Ligurian through and through, enjoyed against the backdrop of a sunset more reminiscent of summer than autumn, and the unique, breath-taking lighting that bathed the Ocean Pearl when the sun dropped below the horizon.
