Slow Baked Beans

Ingredients:

• 8 tablespoons West Creek® Molasses

• 2 pounds dry Silver Source® Navy Beans

• 9-10 thick slices West Creek® Bacon, cooked and diced

• 2 cups coarsely chopped Peak® Onion

• 3/4 cup roasted Peak® Red Pepper

• 2/3 cup packed brown sugar

• 2 teaspoon West Creek® Salt

• 1/2 teaspoon Burst® Ground Mustard

• 1/2 teaspoon Burst® Ground Black Pepper

Preparation:

1. Pre-soak beans overnight. See directions below.

2. Rinse the navy beans under cold running water. Cover the beans with 16 cups of water; let soak overnight.

3. Bring pre-soaked navy beans to a boil; remove from heat. Using a colander, drain liquids into a bowl. Set aside.

4. Heat oven to 325 F.

5. Layer the beans, onion, and diced bacon in 3 or 4 layers in a 6- to 8-quart covered casserole or bean pot.

6. In a medium bowl, measure 2 cups of the hot cooking liquid. Add the molasses, brown sugar, salt, mustard, and pepper. Stir to blend.

7. Pour the liquid and molasses mixture over the beans. Add enough of the reserved bean cooking liquid to almost cover the beans.

8. Cover and bake the beans for about 4 to 5 hours, or until tender, stirring occasionally and adding more liquid, as needed. If the beans are runny, remove the lid and continue baking for 10 to 15 minutes. Makes 12-16 servings.

Honey Balsamic Vinaigrette

1/2 c. Piancone® Balsamic Vinegar

1/2 c. Peak Fresh Produce® Onion, chopped

1 Tbsp. soy sauce

1/4 c. Silver Source® Light Amber Honey

1/2 c. Peak Fresh Produce® Onion, chopped

1 Tbsp. Peak Fresh Produce Ginger, grated

2 cloves Peak Fresh Produce® Garlic, minced

Marinate chicken wings in soy sauce in large bowl for 15 minutes. Combine Honey

Flavored Sweetener, mustard, preserves, ginger, garlic, curry powder and cayenne in food processor or blender. Process until well blended. Broil chicken until nearly done, 30 minutes, flipping them halfway. Transfer to bowl with honey mixture and toss. Return chicken to oven and broil 5 minutes per side. Transfer to serving dish and garnish with sliced green onion.

Apricot Honey Cake

1/2 c. dried apricots, chopped

1/4 c. rum

2 Nature’s Best Dairy® Large Shell Eggs

1 c. West Creek® Clover Honey

1/3 c. West Creek® Soy Oil

1 Peak Fresh Produce® Lemon, grated and juiced

1 Peak Fresh Produce® Orange, grated and juiced

1/3 c. apricot jam

1 3/4 c. unbleached flour

1/4 c. cake flour

Preheat oven to 350°F. Grease 2 9 X 5 inch loaf pans. In a small bowl, soak the apricots in rum. In a mixing bowl, beat eggs until light and lemony colored. Stir in honey, oil, grated lemon and orange rinds and juices, sugar, salt and apricot jam. In a separate bowl, combine flours and baking soda.

Strain apricots, reserving rum. Add flour mixture alternately with rum to honey mixture. Fold in apricots and almonds. Spoon batter into pans. Bake for 40 minutes or until center is firm when pressed. Yield: 2 cakes

1. Put oven rack in middle position and preheat oven to 350°F.

3. Add butter, remaining 1 1/2 tsps. salt, pepper, garlic, and cheese, stirring until butter and cheese are melted. Lightly beat eggs and milk in a small bowl, then stir into grits until combined.
