Katie Bulger CORPORATE CHEF
I studied Culinary Arts at Johnson & Wales Denver, and have worked in many different restaurant concepts, from catering, to farm to table, to high-end casino steak houses. I have 15+ years of back-ofhouse experience, 10 of which were leading kitchens as Executive Chef in both Denver and St. Louis. Since coming to Wisconsin in 2014, I have worked on the broad line distribution side as a specialist/consultant assisting customers in finding solutions for profitability, trends, and labor. Our industry is ever-changing, so I’m always excited to learn about new trends and ways to help our customers succeed and grow! Think of me as your back-of-house consultant!

Kris Jacob BUSINESS DEVELOPMENT MANAGER
In collaboration with the Performance Foodservice specialist team, my role as the Business Development Manager is to work closely with restaurant owners and managers to ensure a smooth and precise transition. With 15+ years of restaurant experience and a unique ability to navigate problems, my goal is to make each customer I work with as profitable as possible.


PETER LUKE PIZZA & ITALIAN SPECIALIST
My deep passion for all thing’s food started in kitchens at age 15 on a path from pizza and Italian experience to fine dining, all backed by a certified culinary apprenticeship and training from a range of talented chefs. From the stove side of the business I transitioned to a distribution specialist, consulting in multiple product segments for the past 10 years. I’m driven by the understanding that restaurants thrive by being relevant through consistency, trend, and in turn profit. With our team, I look forward to sharing my experience in the food service industry by always working toward our customers success.

MARY LAROCK HEALTHCARE SPECIALIST
With a background in food service management as well as clinical nutrition, I have the expertise to support our healthcare and senior living customers. I connect our customers with the right healthcare products and value added services ranging from menu software to TRACS features to providing the cost analysis needed to determine the best fit in group purchasing contracts (GPOs). Whatever needs you have, I have a solution.

ALLI DEARTH CUSTOMER ENGAGEMENT MANAGER
I’ve been with the Performance team since 2016 with 15+ years of restaurant management experience. My goal is to show our customers the tools we have available to increase their profits. I provide our customers with training and continued support of our TRACS Direct and Mobile online platforms, Cost Analysis, Menu Design Assistance and more! Whether it’s setting up your inventory or creating an online presence, I have the solutions for you. I’ll help you with the challenges faced in Operations, Marketing, and Food Cost with the partnership of our One Source Program. With over 40+ partners (and growing) we’ll find the perfect fit for you.
