For the sandwich 4 hoagie rolls, split 8 oz sliced Genoa salami 8 oz sliced pepperoni 8 oz sliced ham 8 slices provolone cheese 2 cups shredded iceberg lettuce ½ cup sliced banana peppers ¼ cup diced red onion 2 medium tomatoes, diced For the Grinder Dressing: ½ cup mayonnaise 2 tbsp red wine vinegar 1 tbsp olive oil 1 tsp Italian seasoning ½ tsp garlic powder ¼ tsp crushed red pepper flakes (optional) Salt and black pepper to taste

1.In a small bowl, whisk together the mayonnaise, red wine vinegar, olive oil, Italian seasoning, garlic powder, crushed red pepper flakes, salt, and pepper.

2.On a large cutting board, pile the salami, pepperoni, ham, provolone, lettuce, banana peppers, red onion, and tomatoes together.

3.Drizzle the dressing over the top, then use a large chef's knife to chop and mix everything until evenly combined.

4.Toast the hoagie rolls until lightly crisp.

5.Divide the chopped mixture evenly among the rolls, pressing gently so each sandwich is generously filled.

6.Serve immediately with kettle chips, fries, or a crisp pickle spear.

A Career Rooted in Craft I spent my younger years working cattle in Texas, where I fell in love with beef and the people behind it. My grandfather was a butcher, so respect for the craft and the whole animal has always been part of who I am.

I’ve been lucky enough to build a career that blends my two passions: butchery and cooking. From working as an executive chef and cooking in a Michelin recognized kitchen to teaching butchery classes and creating new ideas in the Culinary Studio, I’ve always believed the best Center of the Plate story starts long before it hits the plate.

When I’m not talking beef, you’ll probably find me chasing great barbecue, especially Central Texas barbecue, or geeking out over smoke, fire, and the cuts that make every pitmaster smile.
