Dishes like adobo and bagoong found their places on menus, and entire restaurant concepts cropped up to showcase the bright, sour, sweet, funky flavors of these tropical locales.

2019: International Breakfast In an effort to go beyond eggs and bacon, restaurants are pulling inspiration from their travels and looking at international breakfast foods. Middle Eastern and Korean influences are especially finding an audience with dishes like shakshuka and riffs on bulgogi becoming more common on breakfast and brunch menus.

Social Media 2018: Instagrammable Dishes

Specialty food producers and restaurants realized in 2018 that creating an Instagram-worthy food or dish could attract a huge foodie following. It seemed everyone was in search of the next cronut, and with good reason.

So-called social media influencers have big sway when it comes to who gets noticed, and it’s the ones with the memorable meals that make it to the top of the list.

2019: Instagrammable Spaces If what was on the plate was the focus last year, it’s the entire setting that’s getting attention in 2019. Big, bold wallpaper and murals that beg for selfies are becoming standard fixtures of the hot new places to see and be seen. Think wallpaper with monstera leaves and unique, commissioned works of art. It’s not enough to put art on the plate these days; it needs to follow the guest into the bathroom because, yes, they’ll be taking pictures there too.

Industry Expectations 2018: Alternative Proteins and Plant-Based Foods As we predicted last year, alternative proteins and plant-based foods were an area of focus for consumers, with products like the ‘bleeding’ Impossible Burger popping up on restaurant menus across the country and similar products like the Beyond Burger grabbing retail space. As issues around sustainability become more commonly understood, this trend is poised to get even more attention and mainstream acceptance.

2019: Transparent Labeling After food safety scares, consumers are increasingly voicing an interest in transparent labeling and sourcing. Consumer confidence is becoming linked to an ability to know exactly where a product comes from, when, and what’s in it. For now, much of this type of labeling is at the discretion of the producer, but the demand is growing to the point where producers who choose not to share that information may be pushed out of the marketplace by their more transparent competitors.

Flavors 2018: Tahini That salty, nutty sesame paste was a darling ingredient this year, finding success in both sweet and savory applications. Hummus, yes; but also pairings of sesame and chocolate, like the classic combination of peanut butter & chocolate, all grown up.

2019: Timut Pepper Similar to Szechuan peppercorn, Timut Pepper is a Himalayan spice with a fruity, floral flavor and a surprising, tingly analgesic property. Look for it everywhere from soups to chutneys to cocktails, as chefs and bartenders use it to awaken and surprise the palate.

Color Theme 2018: Matcha (Green) Consumers were seeing green in 2018 with the addition of matcha, a powdered green tea, in everything from lattes to cheesecakes. The nutrient-rich tea brought bold green color to any item it appeared in, making it the perfect subject for Instagram influencers to share with their followers.

2019: Ube (Purple) Hailing from the Philippines (and further evidence of our first 2018 food trend above), ube is a purple sweet potato that is traditionally mixed with sweetened condensed milk to make a dessert. Its bright purple hue has made it attractive to bakers in search of the next new ‘it’ thing, and you’ll see it more on menus— in things like cheesecake, donuts, and ice cream—in 2019.

We have recently brought in some very unique items into our warehouse under the Magellan brand. These are high quality, authentic chef-centric products sourced domestically and across the globe.

We have 3 dried mushrooms offerings, and once reconstituted, they have a meaty texture, earthy flavor and an array of nutritional benefits. The best way to bring them back to life (reconstitute) is soak them in hot water or some kind of broth.

The Porcini mushrooms (#547349) are Grade A, full-bodied and umami-rich in flavor. You definitely want to save the broth and use it in stews, soups and sauces. They are also ideal for risottos, pasta dishes and stir-frys and are naturally gluten-free.

We also brought in a HimalayanStyle Red Rice (#547354) which is a long grain, dark red rice with a nutty and earthy flavor. It’s slightly sweet, has a complex flavor and a firm, hearty texture reminiscent of coconut. I recently cooked some and combined it with the Kettle Cuisine Black Lentil and Roasted Garlic soup. It made a great base for a super-delicious burrito, with Chorizo sausage and FarmSmart diced chicken, topped with dices tomatoes and Manchega cheese…oh that was so DELICIOUS!!!

The Farro (#547267) is an ancient whole grain wheat with a nutty flavor and firm chewy texture. Our Megallan Farro is also pearled to reduce cooking time, so it should take about 30 minutes to cook. It is high in fiber, a hearty whole grain and can be used for a healthier risotto, in stews, salads and side dishes.

We carry a plain Middle-Eastern Couscous (#547352), which is the peppercorn-sized, pearl-shaped pasta made from durum wheat semolina flour and will take on any dish’s flavor.

A SMALL START WITH BIG FLAVOR

lex and Wendy Caisse started Buck’s in a small garage across from the ‘Big Indian’ in Freeport, Maine smoking quality meats southern style. It was cold in the winter (loyal customers used to wait in their cars to stay warm!) and hotter than Memphis in the summer but their authentic dry rubbed, also known as ‘Naked’ slow cooked BBQ, was a hit. With fingers crossed and high hopes, Buck’s Naked BBQ relocated to an 8,800 square foot post and beam building up the road in 2008. An open style kitchen is framed by a dining room oozing with southern rustic charmed décor imagined from the mind of Wendy Caisse. They rounded out the menu with steaks and fish, added live music and a kid’s play area decked out with fanciful ‘Crooked Playhouses’. ➢ Kids Play Area with ‘Crooked Playhouses’

MARKETING Al Brown was asked about their marketing. They have a beautiful website, the décor is fantastic in their restaurants and the branding is strong. He absolutely, without hesitation replied, “Our staff is our marketing.

We consistently serve quality product with great staff.

They enjoy serving great well-prepared food in a fun environment. We are who we are because of them.

Word-of-mouth is our marketing. Great food with great service. Catie Meier, Whitney Scott, Charles Joans (bar manager) lead a team of the best front-of the-house crew I’ve ever worked with. It’s the reason people come back.”

Consistency was a common theme throughout our visit with Buck’s staff. Sourcing the same high quality product is important particularly with meats. The long temperature controlled cook times would change if the meat was not consistent which would affect the final product.

The atmosphere in the restaurant oozes with FUN the moment you walk in. The décor is rustic, the staff is welcoming and casual and families are welcome.

The ‘Crooked Playhouse’ play area is a favorite with children. Diners can expect children to be playing and families enjoying their time together. Weekends can have one hour wait times and people wait.

In addition to dining in, Buck’s does a tremendous takeout and catering business managed by Susan Brown. About 10% of their sales is off site or takeout.

These menus are extensive taking care not to promote items that do not travel well. Attention to detail in packaging takeout food is given. Warm sandwiches are packed with the meat in a small container and the bread on the side. “Who wants a soggy sandwich?”

Al asks.

Buck’s Naked BBQ also has an online retail site where their number one item is Blueberry BBQ sauce. You can find T-shirts and other items.

Buck’s Naked BBQ uses an ole Hickory Pit using locally sourced hardwoods such as Oak, Apple and Shag Bark Hickory. Three smokes are run per day to make sure patron’s BBQ is fresh and delicious. Depending on the meat, the smoke time can run from 3 to 4 hours for ribs or wings while brisket reaches perfection around 14 hours…..which means they have some early rising pit masters rolling in at 4 A.M. The BBQ is dry rubbed or ‘naked’ served with a variety of scratch made sauces on the side.

When asked about the BBQ craze and competition, Owner Al Brown agrees there is a lot that have entered the market. “Really good southern style BBQ is challenging to master. It takes a lot of tending to ensure proper temperatures over a very long period of time. You need the right equipment, time and skill.

It is hard to do consistently. We’ve worked many years at our process and continue to work on getting better. We have a refined procedure we follow including logging temperatures during cook time. Our pit masters have been with us a long time which provides consistency, important to restaurants and particularly smoked meats.”

The entire menu is made from scratch following recipes scoured, researched and perfected from the south. “We are continuously researching, learning and working towards perfection. It’s a passion for food that is obvious in our kitchen. Steve Day, Nate Graf, and Kyle O’Brien lead our team of cooks and our pit master, Dave Howe assures consistently great ribs, brisket, pulled pork, etc. They are why people come here!” ➢

Summer employees return year after year. Of course they do experience some turnover, but are not as affected as some other businesses.

1. In small bowl toss together the 3/4 cup KEEBLER Graham Cracker Crumbs, 2 tablespoons sugar and 1 teaspoon lemon peel. Stir in 1/4 cup butter. Press onto bottom of 8 x 8 x 2-inch baking pan coated with cooking spray. Bake at 325¡ F for 10 minutes or until beginning to brown.

2. Meanwhile, for Þlling, in mixing bowl beat cream cheese and 1/2 cup sugar on medium speed of electric mixer until ßuffy. Add lemon juice and 2 tablespoons lemon peel. Beat until combined. Add eggs. Beat until just combined. Spread over warm crust. Sprinkle with blueberries.

3. In small bowl stir together brown sugar, ßour and 1/4 cup graham cracker crumbs.

Cut in 1/3 cup butter until mixture resembles coarse crumbs. Sprinkle over Þlling. Bake at 325¡ F for 40 to 45 minutes or until topping is browned and Þlling is almost set.

Cool on wire rack for 1 hour. Refrigerate at least 2 hours. Carefully cut into squares.

The ability to order food online is growing in demand among consumers. According to a Deloitte report titled, “The Restaurant of the Future,” 40 percent of restaurant customers prefer ordering online—and dining establishments are jumping on board to reap the benefits.

“For merchants, the two most important things are saving time and saving money,” explained Chris Dikes, NCR’s product manager for the API platform and NCR Console. “Online ordering does that for them. It enables you to process more orders and frees up your line in-store. So when it’s working well, it’s a big win for merchants.” Giving your customers the option to order ahead online can boost your restaurant’s bottom line in a number of ways.

According to Deloitte, customer spending increases 20 percent when ordering via technology. Their research found that online ordering grew check averages for quickservice restaurants by 26 percent and fast casuals by 13 percent. Dikes said online ordering has the added bonus of receiving payments upfront, lowering the risk of making food for which you don’t get paid.

In an industry rough on profit margins, cutting costs is key for restaurants. Online orders can help you increase revenue without needing to hire more staff. “With online ordering, you don’t have to have people taking those orders. Anything you can take out of a person’s hand and cut hours of labor is a big plus,” said Zagor.

» Improved order accuracy Online ordering also helps ensure your guests get exactly what they want. Instead of relaying their orders verbally by a game of telephone, customers select exactly what they want, indicate any special instructions and have a chance to review and confirm what gets sent to the kitchen. Steve Zagor, dean of business and management programs at The Institute of Culinary Education, said that while online ordering does provide an added level of accuracy for a restaurant, “That’s not to say that someone won’t pick up their order and get something incorrect. Human error is always a possibility.”

» Greater efficiency Picture this: a customer places a carryout order on your website. In your restaurant, a receipt prints and the ticket is added to your kitchen’s queue. The meal is prepared, bagged and ready for pickup—and since the customer has already paid online, she can simply run in, grab her order and go. “It creates a much more efficient experience. That’s why I use [online ordering] myself,” said Zagor. “You don’t have to wait in line; it’s a much simpler process. Ordering, pick-up and check resolution are all under one big roof and so it’s relatively simple.”

» Minimize customer pain points According to Zagor, the two most painful times in the dining experience are waiting for your food and paying the check—both of which play less of a role in consumers’ minds when they order online.When a guest orders ahead, the wait is less noticeable because it is spent driving to your restaurant’s location, helping minimize the impact of those difficult moments for the consumer.

» Better customer data Online ordering also gives you more restaurant data to work with so you can make better business decisions. You can track customer preferences and analyze trends for different food items and dayparts, which will help when creating your menu, changing prices, or creating custom marketing communications based on a diner’s preferences.

» Competitive edge When it comes to branding, Zagor said online ordering can provide a competitive edge because “it discreetly puts that restaurant’s technology into the guest’s mind as a futuristic business.”

Dikes echoed: “There are people out there making their choices based on whether they can order online or not.

By not offering online ordering, you’re losing customers.

By offering online ordering, you’re gaining customers, and you’re increasing your margins.” But adding an order-ahead option isn’t just about meeting consumer demand—it’s about growing your business, Dikes continued. “Restaurant owners, for so long, have always been told it’s all about location, location, location. If you’re in a bad location, it’s too bad. But online ordering allows merchants to put on their entrepreneurial hat again. It’s now about driving business. It’s another way to break down the wall of your restaurant to get people to come to you, or for you to be able to deliver food to them.” 
