HOW TO PROPERLY THAW A FROZEN WHOLE BIRD TURKEY Safely thawing a turkey is one of the most important steps in preparing your meal.

There are two recommended methods, depending on the amount of time available.

By Chef Rich Smice, Performance Foodservice – Thoms Proestler Fill a shallow bowl with flour. Whip eggs and milk together in a second shallow bowl. In a third bowl mix panko bread crumbs & Parmesan.

Coat pork in flour, then egg mixture, then bread crumbs & set aside. Slice onion, zucchini and squash length wise. Heat half of olive oil in sauté pan. Add onion, zucchini, squash and chopped garlic, heat until tender. Heat remaining olive oil in another sauté pan. Pan fry the prepared pork until golden brown. Arrange vegetables on a plate. Fan pork across part of the vegetables, garnish with parsley.

Char-grill ribs and brush with sauce again. Flip rib and brush again. Cut to desired serving size. Plate and sprinkle with seeds and green onion.

To taste salt and pepper

Season the pork chop with salt and pepper and sear on both sides. Place some of the Thai Peanut Sauce (recipe below) in a separate cup and brush both sides of the chop. Place in an oven and roast until an internal temperature of 145° F is reached. To make the sauce, cominbine all sauce ingredients in a blender. Pour some fresh sauce over top and heat for a minute in the oven. Serve garnished with Sriracha sauce and fresh cut scallions.
