MEET THE TEAM

JOHN CARPENITO

John was introduced to the produce industry at a very young age by his family who owned and operated a wholesale and retail produce business in Boston, MA. Over the years, he gained an intimate understanding of the industry, achieved by walking the Boston Market and performing roles including quality control, purchasing direct from suppliers (growers) and delivery and distribution. He had not only gained a thorough understanding of the produce sector, but he had also established a strong work ethic serving him well in this position over the past 15 years.

John remains vigilant maintaining the image behind the Peak Fresh Produce™ label. Launched in 2015, the team has been able to maintain a reliable program containing high quality produce items, creating a comfort zone amongst our customer base. The driving force behind its success lies in our customers and sales team. Without their necessary & constructive feedback, we could only anticipate needs based on market trends.

John’s uncompromising desire for quality has built one of the strongest broadline produce programs in the Northeast. Informative, knowledgeable and on top of the latest trends, John is an incredible resource when making produce decisions in your operation.

MARIO RODRIGUEZ

Mario has been with Performance FoodserviceSpringfield for 25 years, operating as Produce Quality Control Coordinator for the last 15. During this time, he has gained an incredible understanding of the product mix, translating to thorough produce inspections. This allows for the best product available for our customer at all times. His passion for the job is infectious, and he is revered by our staff and vendors alike. What’s more, Mario consistently has the customer’s best interests in mind, making him a wonderful asset to the facility.

DANNY MARTINEZ

Danny has been with Performance Foodservice for 26 years, building a well-rounded career through dedication, adaptability, and a deep understanding of operations. He began his journey in driver checking before transitioning into inventory, where he spent over 10 years developing a strong foundation in product flow and accuracy. Danny later took the opportunity to move into operations, spending time as a forklift operator before being offered a receiving position—a role in which he continued to grow and excel.Through his hands-on experience assisting with produce receiving in the past, Danny gained the confidence and knowledge needed to step into his current role as a Quality Control Coordinator. His extensive background across multiple departments gives him a unique perspective and a strong appreciation for teamwork, efficiency, and quality. Danny’s commitment and experience make him a valuable asset to PFG and a trusted member of the team.

PROGRAM CONCERNS ADDRESSED

PRODUCT QUALITY AND DELIVERY SCHEDULE

• Performance Foodservice’s produce is as fresh or fresher than the competition due to high frequency of deliveries from the field to the OPCOs.

• Freshness is determined by regular weekly deliveries from the growing regions to our OPCOs, not by number of deliveries to the operators’ location.

• Due to our field to OPCO freshness, 2 day a week delivery has proven to be successful on all produce items.

• Start by getting the hardy items that can be delivered once per week: Potatoes, Head Lettuce, Onions & Citrus, Apples, Carrots, Cabbage.

LIMITED WALK-IN STORAGE SPACE

• Use value-added items, including the different levels of cuts and packs.

• Utilize Performance Foodservice for dry storage items such as tomatoes, potatoes, onions, etc.

• Evaluate walk-in cold box for inappropriate storage of items, and mishandling to reduce spoilage (page 12).

John feels this focus is instrumental in our customers’ success, as well as our success as a broadliner.

PRODUCE STORAGE

APPLES

• Ideal temperature 34-36°. Keep away from airflow. Keep dry. Do not sprinkle.

• Apples absorb odors from strong smelling foods (such as onions). Apples also emit ethylene gas.

• To avoid bruising, keep handling to a minimum. To prevent browning, dip cut fruit in citrus juice and water solution. Store in front area of walk in; close to door.

AVOCADOS

• Ideal temperature for ripe fruit is 40-45°. Fruit can be ripened at 65-70°.

• Ripe avocados should always be firm to touch. To check for ripeness, cradle the fruit in your hand and squeeze gently.

• Once the fruit has been cut, brush with lemon, lime juice or water to control darkening.

BANANAS

• Ideal temperature 56-60°. Do not refrigerate. Do not store below 56°, or chill damage and graying of skin will occur. To slow ripening, open box and liner to release heat.

• Stack boxes in a way to give good air circulation. Do not drop or stack heavy product on top.

• Do not refrigerate Bananas.

BLUEBERRIES

• Ideal storage 34-36°.

• Do not wash berries before storage. Wash berries just before preparation.

GRAPEFRUIT

• Ideal storage 40-55°.Store dry. Suffers chill damage below 40°.

• Long storage can result in stem end rot. Store all grapefruit in a well-ventilated area and keep cartons off the floor to prevent dampening from moisture in the

GRAPES

• Ideal temperature 34-36°.

• Grapes are picked ripe. Sugar content will not improve once harvested. Do not wash or sprinkle before storage.

• Rinse under cold water just before serving. For best flavor and texture, serve grapes chilled.

HONEYDEW

• Ideal temperature 40-45°.

• Ripen firm melons at room temperature until slightly soft at blossom end. Refrigerate ripe melons until ready to use.

KIWI FRUIT

• Ideal temperature 34-36°.

• To ripen, store at room temperature for 3-5 days. Do not store kiwi near other ethylene-producing fruits (apples, avocados, bananas, pears, tomatoes) or ripe kiwi fruit as that can trigger the process.

LEMONS

• Ideal temperature 40-42°. Lemons have long refrigerated shelf life.

• Store in front area of walk in; close to door.

ORANGES

• Ideal temperature 45-50°. Florida oranges should be stored at 34-36°.

• Russeting and regreening may occur; neither will affect flavor or quality.

• If operator has a need for a large amount of peeled oranges, steam them for 2-4 minutes and cool at room temperature for 1 minute. After steaming, there is no change in flavor or nutritional value.

STORAGE GUIDE

PEACHES

• Ideal temperature 34-36°.

• Refrigerate ripe fruit to retard softening. Handle carefully to avoid bruising.

PEARS

• Ideal temperature 34-36°. Ripen at 65-70°, then store at 34-36°.

• Handle pears carefully to prevent bruising.

PINEAPPLE

• Ideal temperature 45°. Must be kept dry; will chill below 40°.

• Pineapple will not increase in sugar once it is harvested. Ripening at room temperature will increase color (gold) and juice only. A sure sign of ripeness is a strong pineapple aroma.

RASPBERRIES

• Ideal temperature 34-36°.

• Extremely fragile; do not wash berries before storing.

• For best quality, berries should be refrigerated immediately after receiving and used shortly after storing. Berries should be washed just before using.

STRAWBERRIES

• Ideal temperature 34-36°.

• Strawberries are very perishable. They must be handled carefully. Do not remove caps or wash berries until just before use.

ARTICHOKES

• Ideal temperature 34-36°.

• Store dry. Can mold if wet.

ASPARAGUS

• Ideal temperature 34-36°.

• To store, stand upright in cold water and refrigerate.

BROCCOLI

• Ideal storage 34-36°.

• Peak Fresh Produce™ presents Iceless Broccolieliminating the need for ice or water and extending shelf life.

CABBAGE

• Ideal temperature 34-36°. If cabbage is held at room temperature for any length of time, it will lose moisture and deteriorate quickly.

• For best results, refrigerate whole heads for storage. Leave wrapper leaves in place.

CARROTS

• Ideal temperature 34-36°.

• Product needs good air circulation; direct air flow on product will have a dehydration effect.

• Carrots may develop a better flavor if stored near ethylene-producing fruits.

CAULIFLOWER

• Ideal temperature 34-36° dry.

• To control bruising of cauliflower, do not place anything on top. Bruising will cause decay.

CELERY

• Ideal temperature 34-36°. Keep dampened to control wilting. Warm, moist celery will mildew quickly.

• If product needs moisture re-introduced, it should be submerged in warm water (70-90°F) for two to four minutes. Drain and place back in walk in. Let chill at least six hours in plastic bags or containers.

VEGETABLES

FRESH HERBS

• Ideal storage 38-42° for most herbs, 48-50° for basil.

• Keep fresh herbs in their original plastic shipping bags and place under refrigeration. DO not water or spray bagged herbs.

• If herbs are to be used for display purposes, it is important to keep them damp if displayed outside of bags.

• If herbs become dry from exposure to the air, leaf damage with occur. Properly rotate your stock.

ICEBERG LETTUCE

• Ideal temperature 34-36°.

• Refrigerate with space between cartons. Store away from fruit and citrus; these products emit ethylene gas and can cause russeting in lettuce.

LEAF LETTUCE

• Ideal temperature 34-36°.

• Trim stem at end of head 3/4 of an inch. Remove any damaged or discolored leaves. Submerge produce completely in water ranging in temperature from 85-100° for a total of five minutes. Drain enough so water is not dripping from the product. Place product in a clear food container and place container in cooler.

MUSHROOMS

• Ideal storage 34-36° dry; good circulation is important.

• Do not wash or cut until just before using. Mushrooms are highly perishable and have a high respiration rate. Moisture will produce blemishes on the surface.

ONIONS

• Ideal temperature 45-55° dry with good circulation. May be stored as low as 34° without any harm to product.

• Under proper conditions, onions can withstand long-term storage.

PEPPERS

• Ideal temperature 40-55°.

• Store briefly. Peppers are susceptible to chill injury, so never store below 45°.

POTATOES

• Ideal temperature 45-55° dry with good air circulation. If russet potatoes are stored below 45°, starch in potato will turn to sugar. This causes potato to darken when fried. This may be reversed by storing in 55° temperature for two weeks.

• Potatoes should not be exposed to light or freezing temperatures.

SPINACH

• Ideal temperature 34-36°.

• Peak Fresh Produce™ offers baby and flat leaf spinach options.

TOMATOES

• Ideal storage 50-60°. Good air circulation is necessary; tomatoes stored below 50° will chill, become soft and lose flavor.

• Do not refrigerate tomatoes.

MINI THEME TREES

• Ideal storage 36-42°.

• After trees have been removed from refrigeration, unpack and water thoroughly. Continue to water well through end of use.

It’s important to have strict policies on organization, food storage, temperature control, labeling, and cleaning for every walk in cooler. Founded by John Repert Szawlowsji in 1910, Swawlowski Potato Farms, Inc. is now one of the largest potato farms in New England. With 5,000 acres of Round White, Red, Gold and Russet potatoes under production in the fertile Pioneer Valley of Massachusetts, we offer local potatoes to customers throughout the Northeast from July through October. In addition to offering our Massachusetts-grown crop, we source and pack product from growing partners across the country, providing quality potatoes to our customers.

Welcome to Yonder Fruit Farms, a family-run orchard nestled in the beautiful Hudson Valley. We’ve been growing fresh, delicious fruit for generations, offering a wide variety of apples, pears, berries, and pumpkins throughout the year. Our focus is on quality, sustainability, and providing our community with produce you can trust. Yonder Farms, Inc. has been in the farming, packing, and storage business since 1967, and today the farm spans over 600 acres of apples, pears, peaches, apricots, and plums, with a primary focus on apples and pears.

During the summer months, our fields burst with strawberries, raspberries, and other seasonal fruits ready for pick-your-own fun. Come fall, the orchards transform into a haven for apple lovers, with dozens of apple varieties and pumpkins waiting to be picked. We also offer fresh local honey, apple cider, and other farmfresh treats at our farm stand.

Beyond our farm stand, we take pride in providing high-quality fruit to wholesale and retail partners. With careful packing, storage, and distribution, we ensure that every apple and pear that leaves our farm meets the high standards our customers expect. Whether you’re visiting for a day of fruit picking or enjoying our produce at home, we’re dedicated to making your experience fresh, fun, and memorable.

local spotlight: NORTH COUNTRY

ABOUT US

In 2021, North Country Growers purchased a 168 acre site in Berlin, NH which provides an ideal climate for growing vegetables in our state-of-the-art hydroponic greenhouses. In 2022, we began the construction of our initial 8 acres of greenhouse space and 2 acre work hall. This construction effort also includes an irrigation system with 3 ponds for collected rainfall and a water treatment system, screening and electrical systems, and the commissioning of our co-generation boiler system for combined heat and power and CO2 dousing.Exterior Construction completed in 2023. In 2024, after months of seed trials, we selected our favorite seed varieties for our products and began harvesting in May 2024!

EFFICIENCY

Our advanced growing operation is designed for maximum efficiency, featuring a cogeneration boiler system that provides combined heat, power, and CO₂ enrichment. This integrated approach allows us to optimize energy use while maintaining ideal growing conditions, resulting in consistent quality, reduced food miles, and significantly less spoilage.

SUSTAINABILITY

Sustainability is at the core of everything we do. Our operation captures 100% of rainwater through an on-site irrigation system with three ponds, while regional production reduces food miles by 94% and food spoilage by 97%. By maximizing energy efficiency and growing locally, we deliver fresher produce with a smaller environmental footprint.

GREENHOUSE

Our state-of-the-art greenhouse operations are built around smart, sustainable technology designed to maximize efficiency while minimizing environmental impact. By integrating advanced energy systems, resource recycling, and proven agricultural innovations, we create an environment where plants thrive year-round using less energy and fewer inputs. From capturing and reusing heat and CO₂ to collecting rainwater for irrigation, every element of our operation is thoughtfully designed to support higher yields, greater flexibility, and a more sustainable future for food production.

Little Leaf Farms has built the most modern, technologically-advanced greenhouse in the world. Our ten-acre facility in Devens, Massachusetts is centrally located to bring the freshest and best-tasting baby lettuce to the East Coast.

ABOUT US

Paul Sellew had a vision for New England – a locally grown salad that was available year-round. As the founder of Backyard Farms, Paul mastered the growing and distribution of flavorful, greenhouse-grown tomatoes. He put his salad plans on the back burner while he built his next company, Harvest Power, into the largest organics recycler in North America. But after leaving Harvest Power in 2015, his interest in locally grown produce was once again piqued and he began to research the best lettuce growing systems in the world.

Paul took to designing the most sustainable technology for growing lettuce in New England. In Fall 2015, Paul was joined by Tim Cunniff, Backyard Farms’ former EVP of Sales and Marketing. Realizing the opportunity to revolutionize the West Coast-dominated lettuce industry, Paul and Tim broke ground on the first phase of their 10-acre greenhouse development and began to line up customers.

Today, Little Leaf Farms is proud to have built the most technologically-advanced, lettuce growing greenhouse in the world. And Paul and Tim are excited to share with you the freshest, best tasting baby lettuces available in New England.

Building greenhouses next to large urban populations and distributing regionally allows us to reduce transportation time, fuel consumption and associated emissions.
