MATERIAL RESOURCES

Aluminum is another commonly-used food-grade metal. Some key advantages of aluminum are its temperature tolerance, light weight and corrosion resistance.

Amorphous Polyethylene Terephthalate (APET) is a transparent material, but can also be colored. APET is very suitable for foods where maximum exposure of the product is desirable.

MATERIAL RESOURCES

Bagasse Blend is made of a blend of Bagasse (Sugar Cane) and Bamboo that are resistant to grease, moisture and helps eliminate messy leaks. Certified biodegradable and compostable that offers durable construction for multi-food applications. Not suited for home composting.

Food-Grade Polyethylene (Foam) is a preferred plastic that is used throughout the food packaging industry for its purity. It has a very simple molecular structure that does not require harmful chemical additives, i.e. as opposed to phthalates in vinyl/PVC. High Impact Polystyrene (HIPS) is a versatile, economical and impact-resistant plastic that is easy to machine and fabricate. HIPS is often specified for low strength structural applications when impact resistance, machinability, and low cost are required.

Mineral-Filled Polypropylene (MFPP) contains an average of 50% less plastic polymers than standard polypropylene containers which reduces plastic usage.

Molded Fiber products are made from a blend of pulp fibers. Not suited for home composting.

Oriented Polystyrene (OPS) is a rigid version of polystyrene. It is also a less expensive option than other clear plastics such as PP or PET. PLA is a natural plastic material made from corn, and is 100% annually renewable. It is best used for cold applications and has a heat tolerance of 105° F. Not suited for home composting.

PLA Coated Paper Hot Cups & Soup Cups (Pactiv EarthChoice® PLA Lined/Coated Paper Cups) are made from 100% renewable resources and are ASTM D 6868 certified and compostable in commercial facilities only, which may not exist in all areas. Not suited for home composting.

Plastarch Material (PSM) is manufactured from renewable plant starch and contains a blend of polypropylene fillers. PSM is derived from corn, which is an annually renewable resource that can handle temperatures up to 200° F making it perfect for higher heat applications.

Polystyrene (PS) is a versatile plastic used to make a wide variety of consumer products. As a hard, solid plastic, it is often used in products that require clarity, such as food packaging and laboratory ware.

Polypropylene (PP) is a widely used plastic. You likely have polypropylene plastic in your fridge and cupboards right now: it's regularly used in reusable food storage containers. It's also the resin used to make yogurt containers and other single-serving tubs. PP plastics are approved for food contact.

Recycled PET (RPET) is produced from previously used post-consumer plastic products. This product is recyclable in the few communities that have appropriate recycling programs.

Our Grow To-Go program features pizza boxes from single-serve slice boxes to full size pizza boxes in diameters of 6” – 28.” Available in kraft/kraft or kraft/white with a variety of design choices, you’ll find the right option for your to-go needs. Pizza boxes are stocked in counts of either 25, 50, 100 or 200, and availability of box diameter, color and design choices for the top of the box varies by OpCo. All of our pizza boxes are designed to be strong and allow pizzas, calzones and strombolis to retain their heat and limit humidity, keeping your pizza and other baked goods, vented, warm and ready to enjoy at home. All boxes offer excellent crush resistance and an exceptional printing surface. The higher the flute, the thicker the corrugated board; a B Flute box, for instance, is 1/8” thick and typically is stronger, thicker and presents less warping than does an E Flute box (1/16” thick). *Please contact your local Performance Foodservice Account Manager for your specific Pizza Box needs.

EcoCraft® line of Eco-Flute® Grease Resistant Insulated Clamshell Containers constructed with a sturdy light weight micro-flute corrugation. Eco-Flute® balances moisture, resists grease and retains heat and crispness to ensure the quality of the food is maintained. BARBECUE America loves its barbecue and it has an abundance of meat choices and preparation styles from pulled, sliced or chopped. Pork is No. 1 but if you’re from Texas you might disagree and say it’s beef and beef brisket. One thing is for sure, BBQ is a regional thing in terms of meats, flavors, preparation and what it’s severed with. Besides pork and beef, barbecue is served as chicken, turkey, sausage and even tofu.

Consumers in every state make BBQ a favorite menu selection but the big BBQ Kahunas are Alabama, Oklahoma, Tennessee, Texas, Missouri, Arkansas, South Carolina, Georgia, Kansas and North Carolina, this according to the website Estately.com, which ranked the top 10 and every state by BBQ restaurant density in the market, Facebook posts, Google searches, among other criteria.

While a majority of barbecue is eaten in, it is finding itself on takeout and delivery menus as well. The challenge is keeping the BBQ hot and not soggy upon arrival. Coleslaw placed on the BBQ meat between the buns makes it even more of a challenge. For out-of-restaurant meals it might be best to pack the coleslaw in a separate container or compartment — the same for sauces. Other popular side dishes with BBQ include French fries, potato salad, hush puppies or corn bread, baked beans, string beans and collard greens.

BREAKFAST Breakfast on-the-go is much more than picking up a bagel or donut and a cup of coffee or a latte . Breakfast has skyrocketed as America’s favorite meal with breakfast now being offered all-day in more and more restaurants — 80% of Americans consider breakfast to be that most important meal of the day. People are searching out foods that are portable, nutrient-dense, affordable and healthy. Breakfast foods are hitting all those targets — and then some.

According to new data from market research firm The NPD Group, the consumption of breakfast is expected to increase 5% through 2019. To accommodate busy schedules and increasingly long commutes, consumers buy and eat nearly a third of breakfasts on the go. NPD reports that morning visits to fast food restaurants grew by 5% in the past year, on top of a 3% increase the previous year. Even more than a good meal, we crave convenience in the morning, buying more and more breakfast sandwiches — especially breakfast burritos – and other breakfast foods. Technomic’s report also said that 32% of participants indicated they will purchase breakfast food as a mid­morning snack; 45% will purchase at lunch, and 59% will purchase a breakfast food at dinner time.

As for delivery, one of the biggest announcements was

by Denny's® — the restaurant known for breakfast — that launched a 24-hour delivery service called Denny's® On Demand.

Today bar food and burgers remain American favorites.

Burgers (sliders), chicken wings, French fries, and other potatoes, onion rings, nachos, shrimp, dips, fried mozzarella sticks, stuffed potato skins and jalapeño poppers, are patron favorites. But, the menus and offerings are beginning to change.

DELI With the exception of perhaps Chinese and Pizza joints, Delis are king when it comes to takeout and delivery Delis have delivered for decades and often have little room to eat in their establishments. Traditionally, deli foods have meant sandwiches, wraps, soups, wet salads, pickles, chips and beverages. FINE DINING Fine dining and takeout/delivery; almost sounds like an oxymoron. The whole purpose of fine dining is to enjoy cuisine in a wonderful atmosphere and to receive great service. So what’s changed to make fine dining a candidate for takeout containers? It’s driven mainly by a new audience that chooses to dine on premise occasionally but also to enjoy the same delicious food in the comfort of their home or outside location.

This is the challenge: how does a fine dining white tablecloth restaurant keep its loyal patrons happy and satisfied when they choose take out or have their food delivered? The answer is wrapped up in a three-legged stool: takeout menu items, the correct containers and the delivery method.

The fine dining restaurateur need not have the same menu for takeout and delivery as it does for dining on premise.

Items should be selected that can travel well and taste good after 20 – 30 minutes in the containers. Containers should have compartments to keep foods separated and separate containers should be used for hot and cold items. For example, a leaf salad will wilt quickly if placed with food in a hot container. Restaurants should select a delivery partner that could ideally reach customers within a 15 – 20 minute time frame and have the means to keep the respective foods hot and cold and delivered with similar service.

Consumers list other reasons they prefer takeout and delivery of fine dining. Transportation conflicts, too tired, can’t get a reservation and of course, to take home leftovers from their dining experience or a great dessert for later.

MEXICAN You don’t need to speak Spanish to love Mexican food. This sector has been growing for decades and has climbed to No. 3 in takeout and delivery. We love our nachos, chips and salsa, burritos, tacos, gorditas, enchiladas, fajitas, soups and chilies and everything holy moly guacamole! And, you’ll find these dishes on menus in Mexican restaurants and nonMexican restaurants alike.

While it’s fun to dine in Mexican restaurants, many with colorful decors and Mexican music, takeout and delivery can be just as fun in terms of tasting very flavorful and often spicy and fresh food. Mexican has also branched out to breakfast with the popularity of breakfast burritos and egg and sausage tacos, to mention a few. And let’s not forget desserts such as yummy tres leches cake, churros, flan and puddings.

The good news about Mexican food is it travels well. Tortillas are very forgiving and many dishes have a mix of ingredients that can be combined. That said you want your menu items to arrive at their destination as close to how they arrive at the table. Replicating sizzling fajitas as a take out item is problematic and as such may not present as well as other items in your takeout menu. You want not include this on your to-go menu. As with all foods, keep cool things cool and hot things hot.

SALADS Over the past decade the salad has made the move from being a side dish to center of plate for lunch and dinner.

What’s unique to salads is that consumers purchase with their eyes. In the case of salad takeout and delivery if the salad arrives and looks unattractive and wilted/old, it ruins the entire dining experience for the customer. A real no-no is to pack a green leaf salad in a closed unvented container such as foam container along with a hot entrée. Within 15 – 20 minutes in transit the heat will damage the lettuce and other vegetables, fruits and even cheeses in the salad.

A lot of on-the-go salads are purchased at self-help salad bars where customers are picking and choosing their own items to build the salads. A container that snaps securely may be your best take out option. If your restaurant is known for heated protein on your fresh salads such as chicken, steak or shrimp, you may want to pack these separately to keep them warm and so it does not damage lettuce in transit. Dressings and cheeses might also work ideal to be packaged separate from the salad.

Salads are very profitable and are enhanced by quality packaging with a clear lid. This is true not only for entrée salads but side salads served with the entrée. They key is to keep salads cool during transport and tight in the containers so they don’t shift and arrive unattractive.

SEAFOOD According to The NPB Group SupplyTrackŽ data seafood ranks No. 2 in restaurant sales behind chicken and No. 1 in dollar and pound growth. Seafood, Bar & Grill, Family, Mexican and Asian are the top sellers of seafood in the United States. Restaurants serve $3.5 billion annually with 56% for dinner and 38% for lunch. Top sellers for shellfish are shrimp (68%), crab, scallops and lobster; and for fish — fried (33%), sushi (31%), other, and salmon.

The majority of takeout and delivery seafood is fried (includes shrimp) and sushi. The former is the biggest challenge because fried fish can quickly become soggy and cold and or breading falls off depending type of container and the time in transit. It is an absolute must to package fried shrimp in a vented container to allow steam to escape so it stays crisp. Keep all dressings, condiments and sauces in separate lid-tight containers when transporting with seafood.

STEAK Similar to Fine Dining, one might ask do people really order takeout and delivery for steaks? The answer is “yes.”

In fact, steak takeout orders are growing and offered by independent restaurants as well as known steakhouse chains. Type in steaks in any food delivery app such Grubhub, Seamless or Uber Eats, and you’ll get dozens of steakhouses and other restaurants ready for your order.

Just this past year Bloomin’ Brands Inc. tried a new tactic in its effort to win over customers who want to eat their restaurants’ food at home: It opened a takeout-only location in Hollywood, FL, co-branded as both Outback Steakhouse and Carrabba’s Italian Grill. It has plans to open additional stores in other markets. The company already provides takeout and delivery at more than 246 of its regular locations.

For steak lovers nothing is better than sitting down in a restaurant and having the server bring them their favorite steak prepared to perfection and sizzling hot along with favorite sides. Here lies the challenge for steak delivery and takeout. How can a restaurant closely replicate that indining experience? Packaging plays a big role. Steaks are heavy and can weight up to 16 oz. or more. There’s not only the heat issue — keeping it warm and not having it cook rested from rare to medium in transit and containers must be durable and hold heat well.
