Soup as a Meal?

I

t’s the time of year when night comes early, the leaves are off the trees, and there’s a nip in the air. That means its comfort food time. We crave those hot meals that seem to stick to the ribs. One of the most popular categories in this area is soup. Did you know that soup is one of the oldest entrees dating back to the rst clay bowl, some 9,000 years ago! Anything that stands that test of time deserves our respect. Many restaurants today offer soup all year round, but during the late fall and winter, sales of these great concoctions ourish. Most establishments offer soup by the cup and/or the bowl as a meal starter, but I would like to suggest we offer this category more as a light lunch or a full meal. During lunch time, pairing Tomato Basil or Minestrone soup with a nice small salad creates a great healthy light lunch that will provide low food cost and a nice opportunity for a pro table menu item. A more full meal could involve a heartier soup like Rich & Chunky Potato with Bacon or Broccoli Cheddar served in a bread bowl with a salad.

Performance Foodservice-AFI has just released our new Rye Street Soup line to help meet these needs. These soups can be heated from frozen or thawed and will provide an easy low cost way to create variety on your menu. They are easy to handle and will provide consistent, great tasting unique offerings for your customers. Although they are great on their own, you can create signature soup ideas as well. When asked what distinguishes McCaffrey’s from the other local supermarkets, people browsing the aisles at the Princeton location quickly and cheerfully point out four things: the best quality meat around, ready-to-eat gourmet meals, artisan cakes, and heart-felt professional service. Steve Carney, store manager at the Princeton location for ve years, has been with the company from the very beginning when the rst store opened in 1992. Since then, McCaffrey’s in Princeton has grown to become the hometown grocery store for an eclectic neighborhood in the central New Jersey town that not only boasts a renowned university, but is also home to a diverse clientele with high expectations for world-class products and service.

Impeccable Meat Counter

Nearly two decades ago, Steve was working in a small butcher shop when friends told him about the opening of a new store with a large and ambitious meat department. He was wowed by McCaffrey’s impeccable meat department at his rst visit, and so he started his career there as a meat cutter. “When I walked in there, I made up my mind that I wanted to work there,” Steve says. “I was blown away by the quality of the meats, the impeccable cleanliness; I had never seen anything quite like it in my life.” The standards that have been set for the meat department from the early days continue to earn the respect and the regular business of customers who claim without hesitation that when they look for the best quality meats for their families and for entertaining, nothing beats McCaffrey’s. “We start with the highest quality meats, reject anything that’s not rst-rate, and we have the know-how to cut meat with expertise, precision and attention to cleanliness,” says Steve. No matter what day of the week you visit the store, the shelves for poultry, pork, beef, veal, and lamb are brimming with the best cuts and meal-inspiring packages for expert chefs and less experienced cooks alike. In the summer time, the custom ground and seasoned McCaffrey’s burgers and marinated kebobs piled up in the sparkling clean trays by early Saturday morning are the mouthwatering grill party-starters for thousands of the neighborhood families.

Ready-to-eat meals come to lunch and dinner rescue—deliciously McCaffrey’s focus on quality ingredients and expert food preparation is also evident in its prepared food area—and customers notice it, appreciate it, and buy it. As a matter of fact, Steve says that the Princeton store prepared food sections is busiest Monday through Friday when local residents and people working in the area stop in to pick up ready-toeat, or heat-and-eat meals for lunch or dinner. Big hits include the grilled marinated chicken, soups and chili, meatballs and pasta dishes, not to mention McCaffrey’s famous crab cakes. Other seafood favorites are cooked shrimp with McCaffrey’s own cocktail sauce, glazed salmon on a board, and the freshly prepared tilapia, among the many options available daily. The dozens of showcase items in the prepared food section are constantly rotated to provide variety for customers who drop in multiple times throughout the week in search of a quick and delicious meal. What they might nd on any given day are All-American Meatloaf, Mexican Grilled Flank Steaks, Italian Breaded Pork Chops, Greek Lemon Chicken, and a lot more with side dishes ranging from Garlic Roasted Red Potatoes to Green Bean and Pepper Sauté, from Orzo Salad with Grilled Veggies to Edamame Tofu Salad, just to name a few. This past Thanksgiving, McCaffrey’s three stores in Princeton, West Windsor, and Yardley, PA, have prepared more than 700 complete holiday meals with all the trimmings and dessert—another testament to how integrated this supermarket has become into the lives of its customers.

Customer Service and Service to the Customer Community Much like the other two stores, the Princeton location of McCaffrey’s has worked tirelessly for nearly 20 years to deserve the trust and loyalty of this Ivy League town. Located between New York City and Philadelphia, many of McCaffrey’s customers have experienced the best of culinary and social trends in these cosmopolitan “foodie” cities bringing high expectations to their hometown grocery store. “Part of our missions is to give back to the community and support the causes that are important to our customers,” says Steve. McCaffrey’s participates in the life of its neighborhood by helping local schools, joining environmental efforts, raising funds for charities, as well as donating surplus food to several local food banks and soup kitchens each and every day. This kind of community involvement and customer service can only be achieved by a staff that works together as a team which is another area where McCaffrey’s distinguishes itself from competitors. Having 80 percent of employees as full-time workers in contrast to the industry standard of 40 percent, McCaffrey’s is able to build and nurture a culture of service that makes customers feel like their dollars are well spent on fresh and high quality food at a store that reinvests a respectable amount of that money in enhancing its own community.

hen you ask Peter Sedereas how it is possible to be prepared to serve everything at any time on the eight-page menu at the Townsquare Diner, he laughs. He says he has heard the question many times before, and the answer lies somewhere between careful business planning, culinary expertise, and a never-fading passion for pleasing the customer. Peter represents the third generation in the family business working with his father Costa and still inspired by Papa Pete, Peter’s grandfather, who opened his rst diner in the 1940s. Today, long-time business partner Dimos Paxos completes the Townsquare leadership team that’s proud to carry on traditional family recipes, but is also forward-looking enough to recognize that changing times require an open-minded attitude to run a successful restaurant.

CAREFUL BUSINESS PLANNING While stepping into the family business right out of school might have been the natural route for Peter to take, he had other career plans and so he earned a degree in nance. After seven years in banking, the desire for a career change pulled Peter back to the family business, and Townsquare quickly became the bene ciary of his experience in long-term planning, scal management, and pragmatic sales and marketing techniques. “Changing demographics have a huge impact on any business,� Peter says adding that just one of many external factors that Townsquare had to adjust to over the years is the residential and commercial development taking place in and around Wharton, NJ. “As the neighborhood develops, our customers are changing and we have to keep up and respond to the needs of our clientele.� For example, lunch customers on a quick break in the middle of the day are expecting not only the

traditional home-made diner meals, but also lighter choices, like salads, wraps, and paninis. With food prices rising and the economy still uncertain, nding ef ciencies and managing expenses are also key contributors to keeping the business healthy. Peter’s knowhow and discipline in constantly analyzing costs—skills he honed in the corporate world—Townsquare is consciously making adjustments to business practices to achieve savings without sacri cing the quality of food and service.

CULINARY EXPERTISE “In the early years, many items on the menu were high-calorie, heavy foods made for hungry laborers,” says Peter. “Today’s customers are more health-conscious and look for variety of options on the menu, and our diner now delivers all that.” Townsquare is eager to maintain NEW YORK STYLE CHEESECAKE with strawberry topping its reputation for excellent meals,

and while tastes and trends have changed over the decades, some of the old favorites maintain their allure. Among the breakfast favorites are Papa Pete’s homemade buttermilk pancakes and the freshly baked bread served in his secret French toast dip . Popular lunch and dinner choices include Papa Pete’s Original Stuffed Peppers, chicken croquettes, stuffed mushrooms with crabmeat, and, of course, the Greek specialties—spanakopita, moussaka, baked pastichio, and the Mediterranean shish kebabs. Prior to the opening of Townsquare, Chef Dimos had been a renowned chef in North Jersey working at some of the culinary powerhouses of the area developing recipes that today customers can enjoy at Townsquare. His specials run the gamut from roast turkey, spring chicken and duckling to sautéed calves liver, baby back ribs, baked meatloaf, and even a Cajun combo of steak, shrimp, and chicken. To complete the culinary experience, all the desserts, cakes and pies are made on the premises, but Townsquare has also elevated the experience for coffee lovers by offering the Lacas Coffee Bar with regular and espresso choices. Peter, Costa and Dimos periodically visit the Lacas Facility where the highest quality new crop of Arabic beans are custom roasted to Townsquare speci cations.

Sweet POTATOES are NOT just for the holidays… they are gaining in popularity for health reasons and they offer a nice variety to the menu.

D

o you call them Yams or Sweet Potatoes? People use these terms interchangeably even though the two are quite different – scienti cally. The confusion started many years ago, when the rm varieties of sweet potatoes were grown here. As farmers engineered the softer variety, people needed a way to distinguish the difference and since it reminded people of the “yams” that they had enjoyed in Africa or South America, this was the name people adapted. Today – the USDA requires that if your labeling includes the word YAM, it must also be labeled Sweet Potato. Actual Yams are not widely available in the US except in specialty International markets. Flavor and menu preparation are similar. Both Yams and sweet potatoes contain a powerhouse of nutritional goodness. Sweet potatoes are often referred to as one of the most nutritious vegetables in the land. How sweet it is, these yummy treats not only taste great, but are good for you too. Research on sweet potatoes tells us that they have many unique nutritional bene ts to offer. There are a surprising number of nutrient categories responsible for the health bene ts of this underappreciated side dish. Among these categories are antioxidants, anti-in ammatory nutrients, and blood sugar-regulating nutrients. Your customers will welcome, and even pay a little more for these delectable’s when you offer them as an alternative to white potatoes.

A

s a rule, the sh guy doesn’t use the word beef in my articles; but, as they say, “rules are meant to be broken.” Somewhere in our travels Vinny Buffa (Center of the Plate Specialist), Chef Robert and myself were discussing food in general, (as we often do). The topic turned more pointed when the subject of Surf & Turf reared its proverbial head. Whoever said you shouldn’t play with your food has never met Chef Robert. The idea of tossing the steak and lobster and reconstructing the Surf and Turf concept lit up his creative juices and a project was born. Couldn’t sh and meat be combined on the plate in almost limitless combinations to offer new and (at least theoretically) more food cost friendly versions of the timeless classic? The rst step our little trio undertook was to choose some meat/ sh combo’s that we believed would pair seamlessly. Next we contemplated what types of preparations would be fun and interesting. Lastly, (and this was the most important step), convince Chef Robert to write and prepare a few exciting, contemporary and delicious recipes. Proper planning is the key to success! Voila! The mad scientist has brought to life three awesome dishes. I know for a fact they’re good because after we took the pictures, I ate ‘em. Angry Fluke and Fillet Ole – A spicy uke cevice paired with a steak tartar. It’s clean and refreshing, exploding with avor. The Three Carpaccios – Thin slices of seared beef, raw tuna and lightly cured salmon. The different avors with their paired dipping sauces marry perfectly on the plate and the palate. Short Rib Turnover & Lobster Pot Pie - Really? Do I need to say anything here other than yummy! Comfort food on massive steroids.

How a Color Coded System can SAVE your Business.

F

ood safety concerns anyone who prepares food, whether in the home kitchen or professionally. There are many safety procedures to follow when preparing food. One of the most important is to avoid cross contamination. This is all too common in kitchens today. Be sure to clean and sanitize any equipment used to prepare food between uses and be particularly alert when handling a potentially harmful food such as raw poultry, beef, sh or eggs.*

Color Coding your food preparation process is a safety procedure which takes the risk and guess work out of cross-contamination. Cutting boards and knives are the two most likely candidates for cross contamination. It’s important for food safety programs to have different types of food not coming in contact with each other through the use of the same utensils. Serving food on time is the number one priority, and, especially during the rush, your line isn’t always thinking about cross contamination, no matter how much training your staff receives. That’s why color coded knives, cutting boards, tongs, and food labels can really help your kitchen staff minimize contamination without affecting their ef ciency.

Raw meats typically go with red cutting boards or knives. Fish and seafood (tan/beige board), raw poultry (yellow board), dairy (white board), raw vegetables (green board), and cooked foods (blue board). By using color coded food prep utensils also prevents taste contaminations as well. No one wants the juices left over from a piece of sh mixed with their chicken breast. Potential allergens are also effectively eliminated when you assign speci c foods to certain colors. Shell sh is one of the most common culprits as customers can become ill if their food is in contact with any kind of shell sh. Color coded labels can help your staff select the right product to pull from the walk-in box very easily. Most restaurants use a “First In, First Out” policy, which is effective at prioritizing the oldest product for rst use on any given day. Color coded labels (e.g. red for “use now,” green for “just arrived off the truck,” and yellow for “use soon”) make sure you minimize spoilage and use your inventory in a safe way. Even in a busy kitchen at the peak of the dinner rush, clear color codes can help a staff maintain a high food safety standard that will keep customers and your business safe. This is especially important in an industryy where employee turnover rates are so high. A simple color code system means that new hires can plug into the team quickly without having to worry about food safety being compromised. Color coding your food preparation process will make your kitchen run more ef ciently and safely.
