Stuff each enchilada with equal parts Bacio cheese.

Place into a bake-able dish.

In a skillet, cook the chorizo and add the peppers and onions.

Remove from heat and add the cheese dip.

Pour over the enchiladas, top with cheddar and bake until cheese is melted.
