This year the Easter table will be dressed in Tulppaani (Tulip) pattern designed by Lasse Kovanen. Perky and colourful Tulppaani is like a springlike painting, waking up your home from winter torpor. T

he queen of the Easter table, this lemony Easter cake is a lovely combination of sweet and sour flavours.

Decorate the cake with self-made, edibly sweet chocolate cups.

Lemony Easter cake FILLING 1 lemon 2 eggs 1.25 dl sugar 75 g butter CAKE BASE 6 eggs 2 dl sugar 1.5 dl potato flour 1 dl wheat flour 1.5 tsp baking powder TO MOISTEN 2 dl milk 1 tsp vanilla sugar ICING 4 dl whipping cream 1 tsp vanilla sugar TO DECORATE 150 g chocolate meringue, sweets and sprinkles water balloons

Start by making the filling. Wash the lemon, grate its peel and squeeze the juice from the fruit. Heat all filling ingredients in a saucepan and beat constantly until the filling becomes thicker and starts to bubble. Do not let it cook! Let the kissel cool down.

Preheat the oven to 175° degrees. Make the cake base by beating eggs and sugar until fluffy. Mix dry ingredients together and add them in the egg-sugar foam. Divide the dough into two and put both cake bases into a springform cake pan (diameter approx. 16 cm). Bake the cake base in the oven for about 35 minutes and let it cool down.

Cut both cake bases into two and moisten with vanilla-sugar milk. Beat the cream until fluffy and season with vanilla sugar.

Mix half of the whipped cream with the kissel and fill the cake with this mixture. Spread another half of the whipped cream on top of the cake and put the cake in the fridge.

To make the chocolate cups, fill the water balloons with air.

Melt the chocolate in a bowl placed over a pan filled with simmering water (or in microwave) and dip balloons in it.

Don’t let the chocolate get so hot that the balloons break.

Cool down in the fridge for a few hours. Make a small hole next to the node and let the air out little by little. Carefully remove the chocolate part from the ball. Decorate the cake with chocolate cups, meringue pieces, sweets and sprinkles.

Creamy salmon soup for four 800 g potatoes 600 g salmon 1 onion 1 l water 2 fish stock cubes 1 bay leaf 2 dl cream 100 g butter salt white or black pepper fresh dill rye bread (to serve)

Chop the potatoes and the salmon.

Dice the onion. Pour water in a saucepan and add the fish stock cubes, bay leaf and onion.

Bring to boil. Add the potatoes and let them simmer slowly for about 10 minutes.

Add the salmon and continue simmering for another 5–10 minutes.

Add cream and butter, let the butter melt.

Season with salt and grind white or black pepper in the soup. Garnish with fresh dill on the surface and serve with rye bread.

Blueberry flavoured French toast for four 8 slices of toast approx. 6 tbsp of Pentik blueberry berry sauce 1 egg 2 dl milk butter for frying 1 dl sugar 1 tsp cinnamon TO SERVE whipped cream blueberry berry sauce

Cut the edges from the toast slices and roll them thin with a rolling pin. Spread a thin layer of Blueberry sauce on the slices and roll them into tight rolls.

Break the eggs, whisk them well, add milk and whisk until smooth. Measure sugar and cinnamon on a flat plate.

Dip the toast rolls in egg-milk mixture and fry them on a pan in hot butter. Fry them first the seam side down so that the rolls stay in shape.

In the end, roll them in cinnamon and sugar. Serve the rolls warm with blueberry berry sauce and whipped cream.
