Summer Recipes

Summer cooking is all about vibrant flavors and easy, joyful meals. From chilled treats to smoky grilled favorites, these recipes capture the essence of long, warm days and carefree gatherings. Dive into the season’s best tastes and savor every bright, delicious bite.

LEMONGARLIC HERBCHICKEN SKEWERS

INGREDIENTS

2 lbs boneless skinless chicken breasts, cut into chunks

1 large zucchini

1 red bell pepper

1 yellow bell pepper

¼ cup olive oil

Zest and juice of 2 lemons

3 garlic cloves, minced

1 tbsp chopped fresh rosemary

1 tbsp chopped fresh thyme

1 tbsp chopped fresh parsley

1 tsp salt

½ tsp black pepper

Wooden skewers (soaked in water for 30 minutes)

DIRECTIONS

1. Marinate the chicken: In a large bowl, whisk together olive oil, lemon zest + juice, garlic, herbs, salt, and pepper. Add chicken and toss to coat. Cover and marinate in the fridge for 1–4 hours.

2. Prep veggies: In a separate bowl, toss zucchini, peppers, and onion with a drizzle of olive oil and a pinch of salt and pepper

3. Assemble skewers: Alternate chicken, zucchini, peppers, and onion on skewers.

4. Grill: Cook over medium-high heat for about 12–15 minutes, turning every few minutes until the chicken is cooked through and veggies are lightly charred

5). Serve: Plate with warm pita, a dollop of tzatziki or garlic yogurt, and lemon wedges.

Brazilian Lemonade

FUN FACT: IT’S ACTUALLY MADE WITH LIMES, NOT LEMONS AND THE SECRET INGREDIENT IS SWEETENED CONDENSED MILK. TRUST THE PROCESS!

INGREDIENTS

4 fresh limes (smooth, thin-skinned ones are best)

4 cups cold water

1/2 cup sweetened condensed milk

1/3 to 1/2 cup sugar (to taste)

Ice (lots of it!)

Optional: A pinch of salt (to bring out the flavor)

Mint leaves for garnish

DIRECTIONS

Step 1: Wash and quarter the limes. You’ll blend them peel and all, so make sure they’re clean!

Step 2: Blend the limes with water. In a high-speed blender, combine:

4 quartered limes

4 cups cold water

Blend for about 15-20 seconds no more, or it will turn bitter from the rinds.

Step 3: Strain the mixture. Pour through a fine-mesh strainer into a pitcher, pressing down with a spoon to get all the juice. Discard the solids.

Step 4: Add sweetness and creaminess. Stir in: 1/2 cup sweetened condensed milk

1/3 to 1/2 cup sugar (start with less and taste as you go)

Step 5: Serve over ice.

Pour into glasses filled with ice and serve immediately. Garnish with mint or a lime wheel if you’re feeling fancy.

NotesServe fresh! This drink doesn’t keep well make and enjoy right away.

Want it dairy-free? Use sweetened condensed coconut milk as a substitute.

Frozen S’mores

DIRECTIONS

INGREDIENTS

1 cup heavy cream (chilled)

1/2 cup sweetened condensed milk

1 tsp vanilla extract

1 cup mini marshmallows

1 cup crushed graham crackers

1/2 cup mini chocolate chips or chopped chocolate

Optional:

Optional: chocolate sauce & extra crushed graham crackers for garnish.

1. Whip the cream: In a large bowl, whip the heavy cream until stiff peaks form.

2. Mix the base: Gently fold in the sweetened condensed milk & vanilla extract until combined.

3. Add mix-ins: Fold in the mini marshmallows, crushed graham crackers, & chocolate chips.

4. Freeze: Pour the mixture into a loaf pan or freezer-safe container. Smooth the top, cover with plastic wrap, & freeze for at least 4 hours or until firm.

5. Serve: Scoop into bowls or cones. Drizzle
