Lighter, brighter, & full of fresh flavors spring baking is all about celebrating the season’s sweetest ingredients. From raspberry scones to delicate citrus-infused drinks, these recipes bring a touch of sunshine to every bite.

For Raspberry Scones:
3 cups of flour
1/3 cup of granulated sugar
1 tbsp baking powder
1 tsp salt
12 tbsp cold unsalted butter, cut into pieces
3/4 cup whole milk
1/2 tsp vanilla extract
1 cup raspberries
For Lemon Vanilla Icing
1 cup powder sugar
1 tbsp fresh lemon juice
1/2 tsp vanilla extract
Making the Scones
1.Preheat oven to 375°F. Line a sheet pan with parchment.
2.Whisk flour, sugar, baking powder, and salt in a large bowl.
3.Cut in butter until the mixture looks sandy, with pea-sized pieces.
4.Add milk and vanilla; stir until mostly combined
5.Gently fold in frozen berries. Knead lightly just until the dough comes together.
6.Shape into a 1½-inch thick round (imperfections welcome).
7.Cut into 6 wedges and place on the pan, spaced apart.
8.Brush tops with milk and sprinkle with sanding sugar.
9.Bake 20–30 minutes, until golden and puffed.
Making the Icing
1.Stir powdered sugar and lemon juice until smooth.
2.Add vanilla and a splash of milk if needed.
3.Drizzle over warm scones and let set on a rack.
4.Serve warm and enjoy!


Salmon:
4(4-6ounce)salmonfillets
3tablespoonslow-sodium soysauce
2tablespoonshoney
2tablespoonssriracha
2teaspoonsmincedgarlic
3tablespoonswater
Bowls: 2cupscookedwhiterice 1avocado,diced 1cucumber,sliced 1cupcookededamame ½cupsrirachamayo
Garnish(optional): Redpepperflakes Sesameseeds
Prepare Salmon:
Cut your salmon fillets into 1-inch cubes. Remove the skin if you prefer.
Make Marinade:
In a large bowl, whisk together all the ingredients for the marinade: soy sauce, honey, sriracha, minced garlic, and water.
Marinate Salmon:
Add the salmon cubes to the marinade and marinate for up to 1 hour, but ideally at least 20 minutes. The longer the salmon marinates, the more flavorful it will be.
Cook Salmon:
Once the salmon is done marinating, heat a large skillet over medium-high heat with a splash of oil. Add the salmon cubes to the skillet, reserving the remaining marinade for later. Cook for 2-3 minutes on each side, until the salmon is cooked through and has a nice crisp
Thicken Sauce:
Add the reserved marinade to the skillet with the cooked salmon Cook for a few minutes, until the sauce thickens slightly.
Assemble Bowls:
Assemble your bowls with a bed of cooked rice. Add the honey sriracha salmon, diced avocado, sliced cucumber, and cooked edamame.
Drizzle with Sauce, Garnish, & Serve!
Drizzle the sriracha mayo over the bowls. Sprinkle with red pepper flakes and sesame seeds, if desired. Serve the Honey Sriracha Salmon Bowls immediately and enjoy!

3 pink grapefruits
2 lemons
4 sprigs fresh rosemary
32 oz sparkling water agave or stevia to taste optional
Use a citrus reamer to juice the grapefruits and lemons in a large or you can squeeze them by hand (that’s how I did it!). Use a fine mesh strainer to remove any pulp or seeds.
Add the sparkling water to your juice and mix well Transfer to serving glasses with ice and finish with rosemary sprigs
