BY KALEY RHODES Professional framing of artwork is in itself a true art form. Well placed colors in matting, layering, sizing and the style and size of frame will have a big impact on how your piece is preserved, viewed, treasured and most importantly, loved by the collector. As an artist, there are few things more pleasing to the eye than a beautifully framed piece of art.

Your local professional frame shop can assist you in all your selections and make suggestions to help bring your piece to life.

COLOR: A frame can blend or contrast with the art or mat it is adjacent to. Blending colors will bring a subtlety to the design whereas a stronger contrast will be more dramatic. One look may be more appreciated than the other for specific colors and styles of art.

STYLE: It is common to choose a frame that matches or relates to the style of the art, but it isn't always necessary. When framing period pieces it is desirable to choose a matching style. When framing newer art it can be fun to intentionally choose an unexpected style to add interest. There should be a relationship between the art and frame but it may come from a pattern on the moulding replicating the look of something in the art.

SCALE: Choosing an appropriate width and depth frame is important. The frame needs to be substantial enough to physically support the size and weight of the piece being framed, meaning a heavy plate glass mirror will require a wider frame than a lightweight stretched canvas. A frame should also look supportive of the visual weight of the art. Darker colors, heavy textures and bold patterns can all contribute to the appearance that art is heavier than it may actually be. If framing several sizes of the same print, the frame should get progressively wider for larger sizes to maintain the same sense of balance from one to the next. The era of the art can also guide your selection. Different frame widths were popular at various times in history.

TIP: The depth of a frame should be able to accommodate all the contents that will accompany the art, including glass, mats, backings, etc. Deeper frames than needed can also be used to project the art outward or recess it to add depth.

MORE THAN A PRETTY FACE In addition to the natural beauty indoor plants bring to a space, they can help improve indoor air quality by removing pollutants known as volatile organic compounds (VOCs). Plants’ ability to help us breathe easier indoors was first demonstrated in a two-year study conducted by NASA in the late 1980s.

At the time, the agency was looking for houseplants to help clean the air in space facilities. The study examined the ability of 15 houseplants to remove three common indoor pollutants — the VOCs benzene, formaldehyde and trichloroethylene — from the air. Benzene is emitted from paints, synthetic fibers and plastics, among other sources. Formaldehyde is released from many sources, including foam insulation and plywood, and sources of trichloroethylene emissions include paints

and varnishes. Below is a list of 10 household plants that were found to be effective at removing VOCs in the NASA study; take this list to your local garden and supply store or ask for their assistance in helping you find the perfect indoor plant for your personal or working space.

KEEP IN MIND: To establish an effective plant-based air pollution control system, you’ll need more than one plant in your home or office. The NASA study recommends using one potted plant per 100 square feet of space, in diameters of at least six to eight inches.

An art form once reserved solely for the likes of aristocrats, new-age pet portraits and commissioned paintings are on the rise.

T

he history of animals as artistic subject matter goes back as far as the bison paintings in the Lascaux caves in Dordogne, France. Since dogs and other pets have shared their lives with humans, they have been depicted in carvings and paintings in early Egyptian, Greek, Mesopotamian and Roman art.

While Lascaux paintings date back to 15,000 BC., and while animals may have appeared in paintings throughout the ages, it wasn’t until the 19th century that animal portraiture became immensely popular.

When thriving, it was largely due to aristocratic values; a lord was hardly properly represented in oil unless surrounded by his hounds.

Portraiture at this time was part of a family’s holdings and heritage, and paintings were a way of immortalizing the suject matter; making future generations aware of, and pay homage to, the past.

Respect for the past declined in the wake of the Industrial Revolution, when the emphasis on property shifted to real estate and factory ownership

rather then family heirlooms.

The rising trend of pet portraiture is a natural extension of acknowledging the growing bond between animals and humans. This deep connection we feel for our pets keeps us connected to what is still good in life: unconditional love, acceptance, fun and simple enjoyment. The emotional appeal of a pet, combined with a piece of art means passing the spirit of the animal into the work and immortalizing its existence onto canvas.

So what should one look for if seeking to commission a pet portrait? Look at the artist’s previous works and determine which styles you prefer.

How does the artist work with the animals? If the artist likes to work with the personality of the pet, have plenty of stories on hand to educate them about the pet’s life. Consider the ways in which you would like to see your pet represented and then try to match your idea with previous portraits the artist may have done.

pring-cleaning is a well-known ritual in many households. As you welcome spring with a clean house be sure to keep animals away from toxic household cleaners and out of recently cleaned areas until floors and surfaces have dried completely. When you are finished, be sure to securely close all containers and store products safely out of reach of pets. Switching to nontoxic cleaners can also help to put your mind at ease but should still be safely tucked away. If you are painting or renovating your home be sure to keep pets confined to another area out of harms way to avoid ingesting toxic products or possible accidents. Check windows and doors for damaged or loose screens.

Patch any damaged areas to prevent your indoor pet from sneaking outside without your knowledge.

If your pet does manage to make its way outside a microchip and ID tag can help to identify lost pets quickly and notify you as well. An ID tag with your basic contact information can be made at some major pet stores or ordered online. While this may seem old-fashioned compared to a mircochip, an ID tag just might aid in a faster return.

Chocolate, candy and gum all pose a threat to animals if ingested. Xylitol, an artificial sweetener found in some candy and gum, and chocolate poisoning can be harmful and even fatal to animals. Keep Easter decorations and treats off the floor and away from animals. Even a sweet smelling candy wrapper that has been dropped on the floor can be ingested and cause intestinal blockage or vomiting.

To keep our lawns and gardens looking their best fertilizers, herbicides, pesticides, and insecticides are sometimes used. If the product is able to eliminate a pest it may also be harmful to your pet.

The changing season may bring around several changes in you and your pets’ routine. Increased exercise, outdoor playtime, spring cleaning, and lawn care all may play a part in your pet’s well being. Keeping a few tips in mind, writes Kelsey Orr, will ensure a safe and healthy transition into spring.

Before applying any possibly toxic products to your pets’ outdoor playground, check with a lawn care professional about animal-friendly products and always read the label’s directions and warnings for all products your pet may be exposed to. Natural or organic alternatives can offer a safe approach to gardening and lawn care without endangering your pet.

Before planning your flowerbeds be sure your choice flowing plants are not toxic to pets. Flowering plants such as tulips, hyacinth, daffodils, lilies, crocus,

and lily of the valley can all be toxic or harmful to pets if ingested. If you choose silk flowers for your flowerbeds, these also may be a tempting treat for pets to chew on and ingest. This may lead to vomiting, diarrhea, or intestinal blockage.

Searching for the best deal on preventative medicines for fleas, ticks and parasites may not be in the best interest of your pet. Speak with your veterinarian about the most beneficial option for your pet.

ROLLER DERBY: ROCKY MOUNTAIN STYLE

Roller derby’s popularity grew during the 1940s and ’50s as a sport with a reputation for being rough and aggressive; with players developing intense rivalries. Inspired by the fascination of watching skaters collide during races, the current roller derby revival started in 2001. New leagues have kept the same general structure of the game but with distinctive, female driven teams.

A contact sport, roller derby is played by two teams of five members roller skating in the same direction around a track. Game play consists of a series of short matchups in which both teams designate a scoring player who scores points by lapping members of the opposing team. The teams attempt to assist their own jammer whilst hindering the opposing jammer—in effect, playing both offense and defense simultaneously. Local Colorado teams are adding style and flare to the growing attraction; here we meet a few area teams kicking butt and taking names. >>>

The Boulder County Bombers is Boulder County’s original and only all-female flat track roller derby league, established in the Summer of 2011. BCB became a member of the Women’s Flat Track Derby Association (WFTDA) in September 2013. In the summer of 2013 BCB added a Junior League for children 6-18. BCB is family focused and has a kid’s room for children so parents can attend practices. BCB is a Colorado Non-Profit committed to spreading the anti-bullying message. BCB strives to provide a competitive and affordable community-centric roller derby league representing Boulder County.

Rocky Mountain Rollergirls

Rocky Mountain Rollergirls is one of the original 14 roller derby leagues to revive the sport in 2004, paving the way for the formation of the more than 1,500 leagues existing around the world today, including six along the Front Range. A Division 1 team, Rocky Mountain is ranked one of the top 10 roller derby teams worldwide.

Rolling strong in Denver for a decade, 2014 marks the 10-year anniversary of the Rocky Mountain Rollergirls.

“Roller derby is a whole different beast than it was 10 years ago or 90 years ago when it started in the 1920’s,” said Wynde Priddy, head of Marketing and PR for Rocky Mountain Rollergirls. “Because it is a self-owned and self-run sport, it doesn’t always get the attention of the “pro” sports, but unlike other amateur sports we sell out large venues like The Fillmore Auditorium. “ “What a lot of people don’t realize is roller derby is a fantastic family-friendly sport that is extremely affordable and super intimate,” added Priddy. “Fans are right near the action if they want to be; tickets are only $15 plus kids 12 and under get in free. Kids love roller skating so a sport that is so rough and physical on eight wheels is pretty exciting. And all the skaters stay to sign autographs following the bout.”

CHOICE CITY REBELS

The Choice City Rebels were founded in 2009 by 11 derby-addicted women referred to as the founding mothers. As most of the surrounding teams, they were originally a women’s only league with a Jr. team of 6-17 year old girls. In 2012 the Jr. team grew to include boys and the adult team added men. Taking it co-ed has brought a new dynamic and cohesion to the team they greatly enjoy. The Rebels are working diligently to bring banked track to the area and to their league, truly allowing them to be the league of derby choices. The Jr. team is also undergoing some major changes this year.

This month, in fact, they become part of the YOSA group (youth olympic sports association) at the Qdoba Event Center. The Rebels are excited for all the opportunities this will allow them in the future.

SOUTH SIDE DERBY DAMES CASTLE ROCK ‘N’ ROLLERS

Castle Rock ‘n’ Rollers (CRR) was founded in 2008 and is Douglas County’s only flat track roller derby league.

CRR is owned, managed and operated entirely by the skaters and is a 501 (c) not for profit organization. CRR has been a WFTDA Member since 2011 and is sometimes referred to as the “Mom” team. While there are some skaters on the team that are not mothers, 16 moms out of 23 skaters are; a statistic they think makes them especially tough on the track. There are lots of mothers playing on teams throughout the world, making roller derby thrive in addition to managing successful careers and motherhood. What unifies all women in derby is the shared love of the sport. Castle Rock ‘n’ Rollers is a team of hard-working, strong women who juggle so many things, including making a small, suburban derby team flourish and working to better their own communities.

Besides, if Mama ain’t happy, ain’t nobody happy, right?

South Side Derby Dames Inc. (“SSDD”) is an organization run by volunteers – by the skater, for the skater.

Denver Roller Derby on the Southside is back and exciting as ever. The Southside Derby Dames are here to excite and entertain derby fans! SSDD is a volunteer run organization; embracing women of all shapes, sizes, backgrounds, and skill levels. CAN IT BE DONATED, REPURPOSED OR GIVEN AWAY? Work through each room with a goal in mind to organize and minimize the amount of “stuff.” If an item does not have deep sentimental value or serve a purpose, then it should be removed from your home and put into storage (for a sale) or donated to a local non-profit. File away any loose important papers and shred or recycle the rest. Dispose of outdated electronics, appliances and other old technology by using a local “e-waste” disposal service. MAKE IT YOURSELF

ALL NATURAL CLEANING PRODUCTS For tile and grout: mix 1/2 cup of baking soda into 2 gallons of water. An effective all-purpose cleaner begins with mixing together 2 tablespoons distilled white vinegar, 1 teaspoon baking soda, and 1 cup hot water in an empty spray bottle. Add enough cold water to fill the bottle along with 1/8 cup dish soap and a dash of your favorite essential oil (like orange or lemon oil). For a fabulous refreshing spray: mix 3 tablespoons of your favorite fabric softener with 2-3 cups hot water and 1 tablespoon of baking soda in an empty spray bottle.

We tried it on a pair of sad patio chairs and presto! Chic outdoor seating with a simple coat of paint!

WORK ROOM BY ROOM, FROM TOP TO BOTTOM

Dust all surfaces including any light fixtures, ceiling fans and air vents. Wipe down appliances, countertops and light switches with an all-purpose cleaner. Move on to walls and windows, thoroughly wiping down every surface, using a damp sponge to scrub away dust and dirt from painted walls. Spot treat couches and sprinkle carpets with a deodorizer before vacuuming; then mop all floors and be sure to include rubber protectors underneath heavy furniture on wood floors.

nspired by a warm weather frenzy of new beginnings and fresh spring starts, utilize the excitement of a new season to update cherished family photos.

CHOOSING A PHOTOGRAPHER Although this may seem like an easy task, it’s the most important to insure that you, as a client, end up getting what you want— fabulous, share-worthy images to hang up and hand out.

For starters, do your research. Be sure to check out multiple photographers in the area(s) you’re most interested in holding your session. By looking at past reviews, previous session images, and general information on a photographer, you can usually get a pretty good sense of what their style may be—including if it will be compatible with your family dynamic.

For instance, if you notice that a photographer mainly shoots in-studio but your family is typically together outside, it may be better to look for a portrait photographer that specializes in using the outdoors. Not only will you feel more comfortable in your own element, but it also adds character to your session!

Once you find a photographer that you think may be well suited for your family, it’s a great idea to arrange a meeting. Typically, these “consultations,” are free and create an ideal opportunity to get any questions, comments, or concerns that you may have answered.

Why meet and greet? Research shows that in a matter of seconds, first impres-

Springtime is often coupled with bold descriptives like “new,” “fresh,” and “vibrant.” For many, the gorgeous, warmer weather also tends to inspire a bit of “spring cleaning,” and for some that includes updating family photos or switching out fine art photography for new images. To help alleviate any mishaps, it cannot be stressed enough to know what you’re paying for. What does your total, final cost include? Are you only paying for the session or are images also included? Do you get an online gallery?

Are the images provided to you via USB/CD? Do you get a non-commercial print release?

Talk, talk, talk to your photographer! By doing a little research, getting to know the person behind the lens, and planning ahead, your session will be a huge success.

COLOR COORDINATING Ah, yes. The dreaded “outfit selection.”

Choosing ensembles for photo sessions can be tricky, but here are a few simple tips to ease the woes of clothing your family and bring some color and creativeness into your spring session.

To begin, decide if your session is formal or casual-themed. Typically, mixing these two categories is avoided; so make

sure that you coordinate with everyone involved in the shoot prior to the session on if you’re wearing slacks or jeans.

When picking a color palette, think of shades of color versus color matching.

By choosing to work with various shades in a color family, such as several shades of turquoise or violet, you don’t limit yourself on what will—or won’t—work.

Color schemes, especially in the springtime, should have elements that catch the eye, so don’t be afraid to think beyond the basics. Perhaps at one time there was a place for everyone posed in a white tee, but now? A turquoise shirt here, a violet bow there, a patterned

By doing a little investigating prior to your session, you’ll not only feel more confident during the session, but also won’t “wish you hadn’t worn that” after the fact.

Lastly, have a back-up plan. The great thing about working with a professional photographer is that many times, they offer various packages that allow for outfit changes. Planning two-to-three ensembles not only gives you options, but it also is just a good rule of thumb for those unforeseen oh-no’s, like spilled coffee on a shirt or a toddler slipping in the mud.

KEEP YOUR LOCATION IN MIND Depending on where you choose to have your session, keeping your location in mind is key when planning the elements of your shoot. Come prepared. Many family sessions last at least an hour to an hour and a half, so if little ones (or pets) are involved, be sure to pack extra snacks, toys, clothes, and shoes.

Be sure to consider your surroundings.

Ideally, you’ll already have an idea of what to expect from your location of choice, but just in case you’ve never been there before, it’s always a good idea to check it out prior to your session. You wouldn’t

Getting pictures taken can sometimes inspire drastic changes, such as a hair cut or color. If you must, make appointments at least a week in advance of your scheduled session to allow the color and/or cut to take on a more “natural” look.

MEGGIE SUGGESTS: Naturally, our eyes are drawn to ‘flesh’ colored objects and wording, so watch your neck and hemlines and leave shirts with words and pictures at home.

Show up early. Showing up prior to the start of your session is a great way to give yourself a chance to look around and get comfortable. By arriving beforehand, you also have the opportunity to fine-tune any last minute adjustments.

Perhaps the bridge you had planned on standing on is under construction or there is an event taking place in the park. In an instances such as these, allotting yourself these few extra minutes, would give you, your family, and your photographer the opportunity to brainstorm together about a different location without stressing about limits.

BE GENUINE! Captured memories are meant to last a lifetime, so make sure that you stay true to your family! When choosing a professional photographer, it’s a great idea to know if they specialize in posed

or lifestyle portraiture. Many times, photographers are seasoned in both, but which element is best for your family session?

Posed portraiture is just that—posed.

Everyone is looking at the camera, smiling. If shot in a studio, enhancements may include items, such as props, backdrops, or artificial lighting to create a formally posed look. Typically, these are the images individuals choose to share with family and friends.

Lifestyle portraiture takes on a more organic, or natural approach to photography. Here, you may find shots of your family laughing and conversing with one another or your children chasing butterflies. Movement can be magical—don’t be afraid of it! These images often catch the “little things” that create the here and now—a kiss on the forehead or help with a stuck high heel. Much like its name, these sessions are meant to embody a full-of-

life example of you and your family.

It should be noted that many professional photographers will take both posed and lifestyle images during a session, but again, it’s always a great question to ask your photographer prior to your shoot.

Showcase your family. Does your family love to go mountain biking on Saturdays or have hot chocolate at a local café? Perhaps you could creatively pose your mountain bikes in a few of your session’s pictures or stop by the café for a couple of fun lifestyle portraits with your photographer.

Don’t forget to relax and enjoy yourself!

There are only so many things you can control as a parent, spouse, or pet owner, so make it your goal to go with the proverbial flow. Believe it or not, those unplanned moments your photographer catches during your session will probably be your favorites!

CLEAN IT OUT Even the most organized of closets need regular attention and cleaning. Spring is a perfect opportunity to organize, update and retire pieces that have seen better days. While the task at hand may seem daunting, getting started is the hardest part of the process. Stay organized, calm and on track with these guidelines and you’ll be enjoying a renewed space with additional storage just in time to house the new spring trends you’ve had your eye on.

Now that you have removed the unnecessary items from your closet you can move onto organization:

Take inventory of what you have and what you need.

Maybe you decided to donate a closet staple that now needs to be replaced. Make a list of items that are missing from your closet combining classics with a few trend pieces for the next season that you’ve had your eye on. Having an organized list in mind when you do go shopping helps to curb impulsive buying and will keep you on track to only purchase the items you truly need.

Store your sweaters.

Now is the time to pull out your heavy winter sweaters and prepare them for storage. Fold sweaters into air tight containers and for safe measure toss in a cedar block to keep away the moths. Seal them up and store them in a hall closet (or the bottom of your own closet if there is room).

Save your hanging space for tops and dresses and designate an area for denim to be folded.

Spring is a perfect opportunity to give your closet a little spring cleaning treatment! It’s a chance to organize, update and retire pieces that have seen better days. While the task can seem daunting here are some easy spring closet cleaning tips to help you get organized: For starters look through your entire wardrobe with one guideline in mind: if it has not been worn within the year then get rid of it! If it still has the tags attached then get rid of it! Pull items that are not getting worn out of your closet and stop holding onto them for a rainy day. Chances are if you have not worn an item in a year’s time then you won’t wear it...ever.

Along those same lines pull out items that are not your size. Perhaps you’ve lost weight (or gained it) but it is important to remove items that do not fit from your closet. You want to dress for the size you are right now, today.

Looking at items hanging in your closet that are too big or too small can be a hit to your self-esteem, not to mention they take up valuable real estate!

Next, pull out items that need tailoring attention – pants needing hemmed, a button needing replaced, and so on. Put these items in a garment bag and take them to get the tailoring TLC that they deserve. A quick trip to your local seamstress will breathe life into items that need to be fitted, hemmed or repaired and will instantly make your wardrobe feel fresh! If an item is beyond repair then trash it. Except for that one favorite tshirt from college that has holes in it and is completely see-through. You can still hang onto *some* of your favorites.

Some people like to hang their denim but it is bulky and takes up a lot of room in your closet.

Unless you’ve got a great walk-in and don’t mind losing the space, fold your denim on top of a shelf or neatly stack it on the floor.

Purchase a closet shelving unit .

These little organizing add-ons can slide easily into a back corner and are perfect for storing your accessories. Toss scarves, belts and handbags in plastic drawers or containers to save space elsewhere.

Organize your items in a way that is easy for you to navigate.

Some people prefer color coordinating items, while some prefer to keep like styles with like styles. The end organization is a matter of personal preference so do it in a way that makes sense to you!

We tested it! For the past few months we’ve been enjoying a Bitty Box of fresh produce from Door-toDoor Organics. What started as an every other week delivery has been upped to weekly – we just can’t get enough! Divide evenly into two pint sized mason jars and store in the refrigerator for up to one week. Shake well before drinking.

CLEAN EATING BASICS

Clean eating is gaining popularity all across the country. Due to popular diets such as the Paleo diet there are more people making the transition to not only live healthier but to also eat cleaner. There is more to clean eating than simply restricting your diet to foods you may or may not have tried before and have a hard time pronouncing. One simple rule to eating clean is if it grows naturally from the ground, or falls naturally from a tree, then it should fall into the clean eating guideline.

Eating clean does require some changes to the typical diet, but these are positive changes to make.

This article will discuss some of the basics around clean eating including: fruits and vegetables, whole grains, lean protein, healthy fats, and water consumption.

Fruits and vegetables: Fruits and vegetables are a staple for clean eating. Non-starchy vegetables and fruits contain higher levels of fiber than most grains and are a healthy staple for your diet. Fruits and vegetables are in constant debate regarding the use of organic produce.

Organic produce can be purchased locally, which is a great way to find seasonal deals as well as potentially save money. Check out your local farmers market to see some of the great deals as well as pick up some clean local produce.

Whole grains: Whole grains can be deceiving because when you look around the grocery stores there are many products titled whole grain.

Some important foods to avoid are white breads and pastas because these are processed and loaded with high carbohydrates. If you are looking for a different way to incorporate whole grains into your diet try quinoa or steel cut oats.

Lean protein: Just because you are eating clean does not mean that you have to give up eating meat for protein. Lean meat is an excellent source for protein and helps to keep you feeling full longer. Most places recommend eating heart healthy fish such as salmon because it not only provides protein but also healthy fats. No matter if

you are choosing to eat red meats, fish, or chicken make sure you buy grass fed or wild caught to ensure you are getting the cleanest meat possible.

Healthy fats: Not all fats are created equal. Healthy fats include Omega 3 Fatty acids, monounsaturated fats, and polyunsaturated fats. All of these fats have been found to help decrease an individual’s cholesterol levels. Omega 3 Fatty acids are found in flaxseed oil, and in some fish such as salmon.

Monounsaturated fats are found in avocados and olive oil. Polyunsaturated fats are also more common in oils such as corn oil or sunflower oil. One easy way to increase the intake of healthy fats is to supplement coconut oil or extra virgin olive oil when cooking. Avocados can also be used to provide flavor to eggs, sandwiches, and a lot of other meals. Don’t be afraid to get adventurous and try some new food ideas, you may just like it.

Water: This is one of the most important parts of a clean eating diet.

A great tip for helping to make sure you get the water you need is to have a glass of water next to your bed and drink 8 ounces before you feet hit the floor in the morning.

This gives you some hydration to start your day. Try to minimize the amount of drinks that dehydrate you such as coffee or tea. Try to get a minimum of 64 ounces of water every day. With water it is very hard to “over do it” so drink often and drink plenty.

If you are new to clean eating make sure you take your time and have fun. You don’t have to make all of these changes over night. To be most successful try changing one aspect of your diet per month and by the end of the year you will have a healthy diet that you are more likely to make a lifestyle. If you don’t feel that confident with your cooking find a local bookstore and pick up a recipe book for clean cooking or find a local cooking class that focuses on clean eating. So get out in your local neighborhood, find some local grown food, and start eating clean.

RECIPE WORKBOOK PEANUT BUTTER RHUBARB & FUDGE 1/2 C. creamy peanut butter 1/4 C. honey 1 qt. vanilla ice cream, softened 1 9 inch graham cracker pie crust 1/2 C. cashews, chopped & divided 1/2 C. fudge ice cream topping, warmed garnish: whipped topping, additional warmed fudge & cashews Combine peanut butter and honey; stir in ice-cream. Spoon half of ice-cream mixture into pie crust; sprinkle with half of cashews. Drizzle 1/4 cup of fudge topping over cashews; spoon remaining ice-cream mixture over top. Sprinkle with remaining cashews and drizzle with remaining 1/4 cup fudge topping. Freeze about 8 hours or until firm. Garnish with whipped topping, additional warmed fudge topping and chopped cashews.

1.5 C. chopped rhubarb, 1 inch slices 2 egg yolks 2/3 C. heavy cream 1 C. white sugar 3 Tablespoons flour dash salt nutmeg, freshly grated or ground 1 9 inch unbaked flaky pie shell Preheat oven to 350 degrees.

Place chopped rhubarb in the bottom of a 9� unbaked flaky pie crust. Beat egg yolks till creamy then add cream, sugar, flour and salt mixing until combined.

Pour pie filling on top of rhubarb and dust with a sprinkling of nutmeg. Bake 40-45 minutes or until center is set.

Serve warm with vanilla ice cream.

A BRIEF HISTORY

Pilgrims brought English-style, meat-based recipes with them to the colonies. While pumpkin pie, which is first recorded in a cookbook in 1675, originated from British spiced and boiled squash, it was not popularized in America until the early 1800s. The colonists cooked many a pie: because of their crusty tops, pies acted as a means to preserve food, and were often used to keep the filling fresh during the winter months. A cookbook from 1796 listed only three types of sweet pies; a cookbook written in the late 1800s featured 8 sweet pie varieties; and by 1947 the Modern Encyclopedia of Cooking listed 65 different varieties of sweet pies.

NO FAIL, FLAKY & PERFECT PIE CRUST 3 C. flour 1 C. butter flavored shortening 1/2 teaspoon salt 1 large egg 5 Tablespoons cold water 1 teaspoon white vinegar Cut together the flour, shortening and salt until the mixture resembles a sand-like texture. Mix the egg, vinegar and 3 Tablespoons cold water together, add to flour mix and stir just until moist and a soft dough forms; adding additional 2 Tablespoons water if needed.

Divide mixture into 2 disks, wrap in plastic wrap and refrigerate until ready for use. Fill or pre-bake at 350 degrees 10-15 minutes, or until golden in color.

MALT SHOP

1 qt. vanilla ice cream, softened 2 Tablespoons milk 1 C. crushed malt balls 6 Tablespoons marshmallow cream 6 Tablespoons chocolate malt powder 2 Tablespoons milk 1 pint whipping cream, whipped 1/2 package chocolate sandwich cookies 1/2 C. butter Crush chocolate sandwich cookies and mix with melted butter; pat into bottom of 9x13 inch pan or 9 inch pie plate. Blend ice cream, milk and malt balls; pour over crust and freeze. Beat marshmallow cream, malt powder and milk together and add to whipped cream. Spread over ice cream layer and freeze. Sprinkle with crushed malt balls before serving.

BAKERY STYLE COCONUT CREAM 1 9 inch flaky crust, baked (a 10-inch is even better!)

1.25 C. half & half 1.25 C. coconut milk 1 C. sweetened flaked coconut 3/4 C. white sugar, divided 1/4 C. cornstarch 2 eggs 2 teaspoons coconut extract (optional) 2 teaspoons vanilla 1 C. whipping cream, unwhipped 2 Tablespoons toasted coconut, for garnish In a saucepan, heat half and half with the coconut milk over medium heat, until steaming.

In a large bowl, whisk 1/2 cup sugar with the cornstarch; whisk in the eggs until blended.

Gradually mix in hot milk mixture into the egg mixture to thin, in a steady stream. Return the mixture to saucepan; cook, over medium heat, whisking constantly, for about 10 minutes, or until thickened to pudding consistency. Transfer to a bowl; stir in coconut extract (if using) and vanilla then mix in 1 cup coconut. Place plastic wrap directly on surface of pudding mixture; refrigerate until cool. In a bowl, whip whipping cream with 1/4 cup of the remaining sugar to soft peaks. Set 1-1/2 cups of the whipped cream aside to use for topping.

Fold the remaining whipped cream into the cooled filling; spread into pie shell. Using a piping bag, or with a spoon, garnish top with reserved whipping cream. Sprinkle with 2 tablespoons toasted coconut. Refrigerate for 1 hour, or until set.

VINTAGE BUTTERMILK 3 Tablespoons butter, softened 1.25 C. white sugar 3 eggs 1 Tablespoon flour 1/2 C. buttermilk 1 teaspoon vanilla 1 9 inch flaky pie crust, unbaked Preheat oven to 300 degrees.

Cream the butter and sugar together. In a seperate bowl, whisk 3 eggs, flour, buttermilk and vanilla; add this to the creamed butter and sugar; mix well. Pour mixture into unbaked pie shell and bake for 1 hour & 45 minutes, or until a knife inserted into the middle comes out clean. Serve warm with fresh whipped cream.

FROZEN LEMON CHIFFON 2 eggs, separated 1/2 C. white sugar 1/4 C. fresh lemon juice 1 teaspoon lemon zest 1 C. whipping cream 1/2 C. white sugar 1 9 inch shortbread nut or vanilla wafer crust Over a double boiler, whisk egg yolks with lemon juice and 1/2 C. white sugar. Whisk constantly till mixture thickens, 5-10 minutes. Beat 2 egg whites until stiff, add 1/2 C. white sugar. Fold egg white mixture into custard while hot. Let cool. Whip the cream until stiff peaks form and add this to the lemon mixture; pour into the crust and freeze 2-4 hours until firm.

FLORIDA’S FAMOUS KEY LIME 4 eggs, separated 1 14 oz can sweetened condensed milk 1/4 C. key lime juice 1 teaspoon key lime zest (grated) 1 9 inch flaky pie crust, baked 1/2 Tablespoon cream of tartar 8-9 Tablespoons sugar Preheat oven to 350 degrees.

Blend 4 egg yolks and milk until well mixed; add lime juice and zest, blending well. The mixture will thicken.

Pour mixture into pie crust and top with meringue.

Meringue: Beat 4 egg whites with cream of tartar until mixture begins to stiffen (you will see soft peaks) Begin adding sugar while beating until stiff (mixture will appear glossy and you will notice nice stiff peaks forming). Top pie with meringue and bake 10 minutes or until meringue is golden brown. Let pie cool to room temperature before refrigerating. Serve chilled.

PRETZEL 3/4 C. butter, melted 3 Tablespoons white sugar 2.5 C. crushed pretzels Mix all ingredients, press into a 9 inch pie plate; bake at 350 degrees for 10 minutes.

VANILLA-WAFER ALMOND 1.25 C. vanilla wafer crumbs (40 cookies) 5 Tablespoons butter, melted 1/8 teaspoon salt 1 teaspoon vanilla extract 1/4 C. thinly sliced almonds Process cookies in food processor; mix all ingredients, press into 9 inch pie plate; bake at 350 degrees 8-10 minutes.

2 C. flour (use Four Flour Bean Mix below) 1/4 C. sweet rice flour 1 teaspoon xanthan gum 1 teaspoon baking powder 1/2 teaspoon salt 2 teaspoons sugar 1/3 C. margarine or 1/3 cup butter 1/3 C. Butter Flavor Crisco 3 Tablespoons liquid egg substitute or 1 small egg 1 Tablespoon vinegar 6 -8 Tablespoons ice water (divided) sweet rice flour, for rolling Four Flour Bean Mix: combine and keep in pantry 2 cups garfava bean flour 1 cup sorghum flour 3 cups cornstarch 3 cups tapioca flour Mix flours, xanthan gum, baking powder, salt and sugar.

Cut in the margarine and Crisco with a pastry cutter until you have shortening the size of lima beans (not cornmeal).

In a separate bowl, beat together the egg, vinegar and 3 tablespoons of the ice water with a fork. Pour egg mixture into the dry ingredients and stir with your fork (about 20-30 seconds). Add 3 more tablespoons of ice water and stir for another 20-30 seconds. Continue to add water, 1 tbsp at a time, and stir until there are no crumbs left at the bottom of the bowl. Generously sprinkle surface and rolling pin with rice flour; divide dough in half and roll each to 1/4� thickness.

For a baked pie shell, prick the pastry with a fork on the sides and bottom. Bake in a preheated 425 degree oven for about 12-14 minutes. Cool before filling. Makes one 2-crust pie or 2 pie shells.

Perfect Catch: Walleye

Abundant in Colorado waters, the savory and firm white filet of the Walleye is a delicious prize in the sport.

The Walleye is the largest member of the perch family and has been known to reach 25 lb. Its closest relative and look-a-like is the sauger (Stizostedion canadense). Both have large, glassy, opaque eyes that gave the walleye its name. In shallow water at night, the eyes glow eerily under lights, readily identifying these fishes even before they can be seen.

WALLEYE IN LEMON DILL BUTTER 12 - 18 Walleye fillets / 1/2 # Salted Butter / 3 Fresh Lemons / 1 Tablespoon Dill / Old Bay Seasoning Fillet and skin walleyes, rinse and pat dry / Thinly slice one lemon and set aside / Have your camp fire going so your coals and flames are about 8-12 inches below your grate. / Use heavy duty aluminum foil and triple it up for strength (make this large enough to accommodate all filets in a single layer). Use part of butter to layout pats across the foil, generally one or two pats per fillet. Lay fillets on top of butter pats.

Season lightly with Old Bay Seasoning. / Melt remaining butter in a small pot and squeeze the juice of two lemons into butter , adding 3/4 of the dill to the mixture. Bring to a simmer and let stand for five minutes. / Pour butter mixture over fillets, place sliced lemon over fillets and sprinkle with remaining dill. Cover with a single sheet of foil sealing tightly and place on grill. After 15 -20 minutes the top should rise up and then poke two small holes to release the steam.

The US News and World Report magazine provides a wellregarded analysis of universities and is often the primary source of information about universities. Webster University is currently ranked by the magazine as the 21st best regional university in the Midwest. The US News and World Report described Webster as a suburban St. Louis based school established nearly 100 years ago with a total enrollment of 18,609.

by Susan T. Meyer, director of MSBA Programs, College of Business, Colorado State University who stated, “We have long used this data [incorporated in the Military Friendly Schools list] along with their academic accreditation in determining which schools are military friendly.”

Military Times Magazine Rankings

The Military Times magazine also compiles a list of schools it describes as “Best for Vets” for the purpose of helping veterans make informed decisions about education. More than 600 schools were evaluated in this well-regarded report, and Webster University was ranked 26th in “Best for Vets” 4 year school category.

DR. LOUIS FLETCHER One of Webster University’s many campuses includes its Denver Metro Campus at 9250 E. Costilla Avenue in Greenwood Village. Dr. Louis Fletcher is the chief administrative officer of the Denver campus and a living example of Webster’s philosophy that blends academic excellence and patriotic duty. Dr. Fletcher was a career Air Force Officer before starting his academic career.

Dr. Fletcher’s quiet and dignified demeanor befits a university professor, but there is an underlying strength in Dr. Fletcher that makes one thankful he was one of the smart and dedicated warriors protecting our country from nuclear disaster during the cold war. Dr. Fletcher was an Air Force expert in Space Safety, Operational Test and Evaluation, Integrated Tactical Warning and Attack Assessment, Missile Warning, and Intercontinental Ballistic Missile operations.

Dr. Fletcher’s military career also prepared him for such scholarly endeavors as becoming Founding Dean of the Advanced Space Operations School, Assistant Professor of Aerospace Studies at Howard University, Chief of Policy Operations for International Relations and a Regional Director of Admissions for Air Force ROTC. Dr. Fletcher received his doctorate in education while serving his country.

There is no academic substitute for Dr. Fletcher’s experience as a professional airman with his finger on the nuclear button during the cold war, when mutually assured nuclear destruction was a real and valid danger. There is also no academic substitute for Dr. Fletcher’s work with the Russians after the cold war to ensure that Y2K glitches did not cause inadvertent nuclear launch on December 31, 1999. There is also no academic substitute for Dr. Fletcher’s work as commander of a military team to prevent another September 11th terrorist attack. All of these professional accomplishments define Dr. Fletcher as a courageous and strong leader in and out of the academic setting His duties as chief administrative officer of Webster’s Denver campus are a full time job, however Dr. Fletcher is an educator at heart and shares his worldly perspective by also teaching two classes each week.

r. Fletcher was born in Washington, D.C., raised by a father who was a Vietnam veteran and a mother who was a grade school teacher. The foundation for Dr. Fletcher’s service in both the military and in academics started with Dr. Fletcher’s upbringing.

Dr. Fletcher has lived in Colorado Springs for the last 15 years, but he first came to Colorado Springs in 1985 to attend the Air Force Academy Prep school and play football.

He eventually transferred to another college to play football, although Dr. Fletcher’s gridiron dreams were dashed by injuries. Dr. Fletcher quickly resumed his journey to the Air Force by joining the Air Force ROTC program.

Academic excellence extends to Dr. Fletcher’s wife and children. His wife is a former music teacher who is now Assistant Principal of a K-12 blended learning academy at Falcon District 49 in Colorado Springs. Dr. Fletcher’s 22 year old daughter is studying for her doctorate at Arizona State University, and his 19 year old son is beginning his higher education journey with the hopes of following in his father’s football footsteps through a future of coaching.

ONE WOMAN’S COMPASSIONATE NATURE IS PROVIDING BASICS & CHANGING LIVES IN DENVER

or Teri Fous it all started with a simple request from a friend.

By simply agreeing to volunteer at Teen Affinity Clothing Ministries Teri’s charitable spirit sparked into a new found passion that has benefited countless families and individuals.

Today, Teri has her own charity, The Satriano Project, but has her hand in several other charitable projects as well. Named for Teri’s paternal side of the family, her grandmother also had a passion for charity work. Teri’s ceaseless energy and compassionate nature have helped her build a successful charity focused on providing what so many of us take for granted: a new pair of shoes, a present for a loved one or a new piece of clothing.

Teri has continued to collect clothing donations for organizations such as Warren Village, House of Hope and area women’s shelters.

In addition to clothing, she also assists the Abiding Hope Lutheran Church in their process of collecting toiletry items such as shampoo, toothbrushes, toothpaste, deodorant, fingernail trimmers, and hand sanitizer. Nothing donated to The Satriano Project goes to waste, nor are items ever sold or turned away. If Teri receives donated items that cannot be used by her own charity the items are made available to other charities that can distribute the items.

The Satriano Project hosted their first major event during the 2013 Christmas season with great success. Held at Abiding Hope Lutheran Church, clothing that had been collected for months was organized and displayed alongside donated stocking stuffers, small gifts and baked goods. The church was transformed into that of a bustling holiday store at Christmas, except the customers here wouldn’t be paying a dime. The main goal was to give families a chance to come in and pick out a nice gift for their loved ones. Children were also given the opportunity to select a gift for their parents or guardian, then were assisted with wrapping the gift in true holiday fashion before they took the gifts home. Of course an event such as this would not be complete without a visit from Santa Claus himself! Santa shared milk and cookies with the children and helped them to pick out a stuffed animal from under the Christmas tree.

To account for the large number of donations needed to continue The Satriano Project, Teri picks up clothing once a week from several different locations. Plato’s Closet of Littleton has been a huge help to Teri with their large donations of clothing and continuous support.

The work associated with The Satriano Project is endless and Teri admits that she would not be able to accomplish all of the work on her own. Volunteers help to sort clothing, transport donations to events, or work at the events. Every willing set of hands makes a difference and helps to make The Satriano Project a success. Some of the volunteers that help sort clothing are also the very kids that will benefit from these donations. In exchange for their service, Teri encourages them to pick an outfit for themselves from the donations, allowing the kids to feel as if they have earned their clothing while dressing like their peers. Volunteers of all ages and all walks of life are always welcome and appreciated, and Teri insists none of her efforts would be possible without the support, understanding and help from her husband and children. You can also find Teri at Stellar Salon in Littleton where she works as a hair stylist and is constantly grateful for her many clients and co-workers who help with The Satriano Project.
