Fall in Florida is different than anywhere else. When growing up in the Northeast, I always associated the season with new, warmer clothes and a defined chill in the air. Here, it means the kids go back to school and summer vacations come to an end. Retailers that temporarily closed for the past couple of months are back in full swing. Because September is Restaurant Month, it’s the perfect reason to talk about local restaurants, particularly those garnering much fanfare for representing two of my favorite concepts: farm-to-table dining and the slow-food movement, an opposition to fast food and the “fast life.” The Cooper Craft Kitchen and Bar in PGA Commons is the newest farm-to-table eatery on the scene and is setting the bar high by using local, fresh, seasonal, high-quality ingredients. Chef Adam Brown has a background in French cuisine and adds Mediterranean touches to his dishes. We have been enjoying Max’s Harvest since it opened in Delray Beach in 2011, and the kitchen always knows how to turn simple ingredients into sheer pleasure. As the season changes (even when the weather doesn’t), we hope you have an opportunity to experience all that our area has to offer—and to support local restaurants at the time of the year they need it most.

florida’s Dessert Creamy, sweet and tart, Key lime pie is the quintessential Florida dessert. Enjoy the last days of summer with this classic recipe dating to the 1850s. For more, head to palmbeachillustrated.com/keylime Ingredients Crust: • 1b/e cup graham cracker crumbs • 2 tbsp. sugar • 5 tbsp. unsalted butter, melted Filling: • 1 can sweetened condensed milk • 4 egg yolks • b/c cup fresh Key lime juice • b/c tbsp. Key lime zest Topping: • 1 cup heavy cream • 2 tbsp. confectioners’ sugar Crust: Combine ingredients thoroughly and press into a 9-inch pie plate. Bake pie crust at 350 degrees for 10 minutes or until lightly browned. Remove from heat and let cool. Filling: In a large bowl, combine condensed milk and egg yolks, mixing well. Slowly add Key lime juice and zest, mixing until fully incorporated. Pour into crust and place in oven at 325 degrees for 15 minutes. Remove from oven and let cool, then refrigerate until serving; always serve cold. Topping: Whip cream with sugar until nearly stiff. Serve each wedge of pie with a dollop of whipped cream.

teven Chase points to an inch-tall pineapple growing inconspicuously among the plants in the Society of the Four Arts’ Botanical Garden. “It’s like a treasure hunt here,” says Chase, the society’s new gardener. He’s right: Noticing every plant among the 170 species in this kempt jungle off Royal Palm Way requires looking up, down and all around as well as using all senses—visitors might miss the just-blooming frangipani or the allspice tree if they didn’t smell them. With so much to take in, we asked Chase to identify a few notto-miss plants in Palm Beach’s lush public enclosure. Look for these unique blooms during your next visit: Ylang-ylang (Cananga odorata): Smell familiar? The fragrance from the long-petaled, yellow-green flowers on this tree, seen in the Four Art’s Chinese garden, is the inspiration for Chanel No. 5. Amorphophallus titanum: Although this Indonesian flower in the property’s Bromeliad Garden is still in its infant stages, the plant is the tallest in the world, reaching roughly 10 feet in height. Old Man palm (Coccothrinax crinita): This palm tree, found in the Bromeliad Garden, gets its funny name from its trunk, which is covered with stringy wood-like fibers, resembling a long shaggy beard. Sausage tree (Kigelia pinnata): Look up and you’ll notice sausageshaped fruit hanging from the limbs of these trees, which grow in the Four Arts’ Bromeliad and Informal gardens. While the African fruit is part of the diet for indigenous animals like elephants, Chase admits he once ate it—“and I’m still alive.” (561-655-7227, fourarts.org)

It’s not every day you find a shop that is half couture millinery and half embroidery and monogramming, but that’s exactly what Hats Etcetera in Boca Raton is. The store is owned and operated by Carina Gatto and Joseph Orlando, a talented husband-andwife duo with a combined 34 years of experience in custom designs with high-profile clients such as Ralph Lauren and Lilly Pulitzer. Below, Orlando shares his expertise.

What is the etiquette for monogramming? Usually, the last-name initial is in the center of a three-letter monogram and is the larger of the three. If you want to have the initials all in a row, because it’s how they are read—for instance, “JJR” for “John Jacob Roberts”—the letters will be all the same size. Are there items that shouldn’t be monogrammed? When you’re talking about rubberized items or an item with a lot of spandex in it, the process melts some of the background material. So these are the only items I wouldn’t advise monogramming. What trends are you seeing? Scripts are very popular right now, as are metallic threads. Also, I think businesses are beginning to use embroidery and monogramming as a promotional tool, as well as gifts for their employees or clients. Everyone loves to have something personalized.

aloha, Kauai Few would dispute Kauai as the crown jewel of Hawaii. With its multihued mountains, skyscraping waterfalls and rugged canyons, the lush “Garden Island” is the Hawaii of legends. Kauai’s exotic environs have landed starring roles in blockbuster films, as the imaginary Isla Nublar in 1993’s Jurassic Park and the ethereal jungle arena in 2013’s Hunger Games: Catching Fire. But the island’s fantasy landscapes are indeed reality, the subject of countless “Wishing You Were Here” missives detailing a faraway land synonymous with such terms as “heaven” and “Shangri-La.” Nestled on Kauai’s northern shore, the St. Regis Princeville Resort proves “heaven” is a five-hour direct plane ride from California. By way of tiered, outward-facing design, the rooms and suites at the St. Regis Princeville dole out postcard-perfect views of Hanalei Bay—and all its oceanic and mountainous 42

excess—through expansive glass walls in the bedroom and bathroom. Soft earth tones and light-wood furnishings frame this natural splendor in marble vanities and oversized Jacuzzi tubs (with a privacy switch that turns the glass wall from translucent to opaque). These nature panoramas have branded the St. Regis Princeville Hawaii’s most coveted address (and the fact that it’s located within the prestigious 9,000-acre resort community doesn’t hurt). So it should come as no surprise the resort capitalizes on the million-dollar views whenever possible, far beyond the rooms and suites. Gawk at Hanalei Bay from the glass-enveloped lobby lounge; soak in the scene from the 5,000-square-foot infinity-edged swimming pool; toast to the Aloha state from a beachfront cabana; paddleboard into the horizon with an expert instructor; tee off at the waterfront Robert Trent Jones Jr.-designed Makai Golf Club; and watch the sun descend over the mountains from signature restaurant Kauai Grill, helmed by celebrity chef Jean-Georges Vongerichten. Moorea to love It’s just one of French Polynesia’s 118 islands, but little Moorea makes a big impression. Often overshadowed by her illustrious sister Bora Bora, Moorea emerges from the Pacific a high-rising mountain chain engulfed by crystal-clear waters robust with marine life. A Villain on the Prowl

Jaguar’s new 550-horsepower F-Type R Coupe shows it’s good to be bad By Howard Walker

In its latest advertisement, Jaguar points out the best movie villains always seem to be played by Brits. Case in point: the inestimable Sir Anthony Hopkins playing Dr. Hannibal Lecter in The Silence of the Lambs, who admits, “I must confess I’m giving very serious thought … to eating your wife.” In You Only Live Twice, the icy, kitty-stroking Donald Pleasence as arch-villain Ernst Stavro Blofeld states, “I shall look forward to personally exterminating you, Mr. Bond.” Alan Rickman as Hans Gruber in Die Hard? Brilliant. “I am going to count to three. There will not be a four,” he warns. It may not yet be a Hollywood star, but there is something villainous about Jaguar’s newest sports car, the 2015 F-Type R Coupe. Just see it in the metal, riding on those 20-inch alloys, and it has all the muscular tension and hunkered-down pugilist stance of The Transporter star Jason Statham, another villainous Brit. This car is much more than an F-Type convertible with a metal lid. While the F roadster has always looked a little on the bloated side, this new Coupe is a visual masterpiece. The way the roofline cascades down towards the rear is breathtaking.

The gorgeous bodywork bulges over the rear wheels. Picture Stallone in his Rocky prime, wearing a Savile Row tuxedo one size too small—that’s the F-Type R Coupe. In terms of jaw-dropping beauty, this is the first modern-day Jaguar that comes close to the iconic ’60s E-Type Coupe. And that little “R” badge on the rear flank denotes it is the most potent, driver-focused Jaguar of all. It’s powered by a thundering 5-liter V-8 that cranks out 550 horses. Pedal to the metal, it can scythe from standstill to 60 mph in four seconds. It has a top speed that’s restricted to 186 mph. Subtle it is not. With that big V-8 exhaling through a quartet of tail pipes the size of sewer drains, the R Coupe snarls and snaps with

every prod of the accelerator. Drive it hard and fast, and it can be quite a handful. Unlike American muscle cars, the Jag can carve curves like it’s running on invisible rails. Tap the “Dynamic” switch on the center console and the F Coupe goes into full attack mode: The steering, dampers, engine, transmission and exhaust all become much more alive, more responsive. Stick vinyl numbers on the doors and you could hit the grid at the Sebring 12-hour with this race car for the road. It does, in true Jaguar tradition, have a suave, sophisticated side. The

engine has so much torque and low-speed punch that it doesn’t need to rev hard to waft along. And unlike most rivals, its suspension can absorb lumps and bumps without loosening dental work. Shortcomings are few. The hip-hugging sports seats are so firm, Jaguar might have left out the padding. And Jaguar’s navigation systems continue to run molasses slow. But at $99,895 the F-Type R Coupe is a performance bargain, especially compared to its Porsche 911 rivals. A British villain might think of it as a steal. «

If you are a daring foodie, chances are you are all about the chef’s table concept, where you enter a restaurant with no preconceived notions and let a chef decide what you’re having for dinner. If you’re going to trust one chef to dictate the menu, let it be Tim Lipman, the gastro-genius behind Palm Beach Gardens’ Coolinary Cafe. It works like this: You and five friends sit at a long table and nosh on house-made pickles, chips and deviled eggs while Lipman and his crew work their magic. Five courses later, you will have tasted such creative fare as a before-and-after Scotch egg with house-made chicken sausage (hey, which came first?) or Buffalo-style sweetbreads, poached in buttermilk, lightly fried and glazed with chili. What we think: Lipman’s fearless cooking style and his singular focus on fresh, real food puts the “cool” in Coolinary.

Let us consider the macaron, shall we? It seems simple enough—egg whites, sugar, a bit of almond flour—yet it is so impossible to get just right. Even restaurants that claim to offer authentic French macarons cannot achieve the elusive crumble-in-your-mouth fluffiness of, say, Ladurée or Chantal Guillon. Our frustration over finding a magnifique macaron this side of the Seine ended at precisely the moment Patrick Lézé opened in Palm Beach. Lucky for us, the French pâtissier and his wife fell in love with the island during a motorcycle tour—and stayed. Now we can enjoy his colorful confections (peach apricot, how do we love thee?) anytime. Bonus: They’re perfect when we need a hostess gift in a hurry.

A great day in nature awaits. Welcome to Camp Fort Drum, the latest offering at Pine Creek Sporting Club in Okeechobee. The camping pavilion consists of two outfitter tents that sleep eight in utter comfort, a cooking area, the aforementioned fire pit, an archery range and a game-viewing tower. This is glamping at its best, folks. Opening October 1 for members and guests, the camp is nestled within the loblolly pines, oak trees and sable palms and overlooks acres of palmettos. Wildlife, including white-tail deer, Osceola turkeys and quail, roam the grounds, adding to the richness of the experience. The best part is the educational aspect. During monthly camping excursions, children will learn survival basics and get to know the native ecosystem with master naturalist Jerry Walls. All that, and s’mores too. 54

Supporting area businesses is a concept that hits close to home at Shoppe 561, a sunny boutique of gifts made by Florida artisans, like bangles of sea glass, custom dog collars and handmade baby clothes. The store introduces patrons to the craftsmen through their bios, displayed around the shop, and in classes such as soap making and chocolate tasting. Continuing its feelgood mission, Shoppe 561 has donated more than $1,500 to Hope House, Florida, a safe house for victims of sex trafficking. “To me, the shop is all about hope—hope to end modern-day slavery, hope to help artisans achieve their personal goals, hope for customers to feel inspired and a mindset of change,” owner Janelle Lang says. “I just want people to feel like they’re home.” 56

CULTURAL FESTIVAL

Since 2007, the Festival of the Arts Boca has been a mecca for classical music, jazz, dance and literature. The Schmidt Family Centre for the Arts at Mizner Park established the event to bring to Boca Raton seasoned performers and writers—like violinist Itzhak Perlman and author Doris Kearns Goodwin—to promote cultural arts in the community. In 2014, the festival had one of its most successful years ever with ticket sales nearly tripling from 2013 and a total attendance of 15,000, the second-largest crowd in its history. The festival offers many reasons to applaud: It engages the community with author discussions and intimate performances; it brings the arts to new audiences via master classes and open rehearsals; and, it imbues Mizner Park with an unparalleled aura of excitement. The 2015 festival is scheduled for March 5-15, so prepare to shout “Bravo!”

There’s more than just java percolating at Subculture Coffee in West Palm Beach. A joint venture of Sean Scott and Rodney Mayo, Subculture arrived on Clematis Street in March and has become an urban gathering place for artisan roasts, lattes bearing works of coffee art, organic teas and even local beer. The coffee beans arrive from direct- and fair-trade farms in areas like Sumatra and the Sierra Madre and are roasted each morning on a large red Diedrich IR-12 on display at the entrance. Passionate baristas are eager to talk about their products, and patrons who want a taste of something more can learn about coffee 101 at one of the shop’s free cupping classes. While Subculture’s ethically minded cup of joe is delicious, its best brew is the sense of belonging it has come to foster—both for visitors and as a thriving, eccentric contributor to the neighborhood. 58

It’s a stormy Thursday and Farmer’s Table, that altar to all things fresh and healthy, is packed to the rafters. Not even an apocalyptic downpour can keep Boca Raton’s faithful away. There’s a good reason for that. The restaurant’s self-styled “feel-good food”—made with whole, recognizable ingredients, many from local farms—is so savory and satisfying, it might not occur to you this is clean eating. But it is, and it’s highly addictive. We can’t get enough of the kale hummus or the Santa Fe veggie burger with zucchini bacon, which will make a believer of the most hard-core carnivore. Even the kids’ menu is healthy (whole wheat mac and cheese! gluten-free chicken fingers!)—now that, sadly, is novel.

In her small Jupiter kitchen, Dianna Muscari has concocted hundreds of delicious meals: searroasted haddock with blood-orange salsa; sparkling guava coolers; amaretto pumpkin pie. Her best dish, though, is a combination of recipes, vivid photography and heartfelt stories—the ingredients for her cheerful blog, The Kitchen Prep. A self-taught cook, writer and food photographer, the South Florida native reinvents recipes or creates her own from scratch. More than just a virtual cookbook, The Kitchen Prep is also a public journal sprinkled with compelling snippets from Muscari’s life—like how she’s expecting her first child in November, the impetus for her recent “mocktail” experiments. A true DIYer, Muscari uses her Canon to photograph each dish in her “studio”—aka, her living room coffee table, which only adds to The Kitchen Prep’s labor-of-love essence. “My life revolves around food,” Muscari says. “Whether I’m on vacation or making a weeknight meal or thinking about what I want to eat, I’m always thinking about how I can share it on the blog, make it relevant and connect with people.”

HIDDEN GEM

Lake Worth is full of hidden gems: Boutique restaurants, eclectic shops and cooler-than-cool hangouts dot the city’s downtown streets. But the area’s best-kept secret is nestled next to one of its biggest attractions. The Stonzek Theatre, an offshoot of the Lake Worth Playhouse, sits adjacent to its parent organization on Lake Avenue. A hole-in-the-wall black box, The Stonzek opened in 1995 to present an ongoing cinematic installation of indie-art flicks, foreignlanguage films and documentaries. Since then, it has become the home of critically acclaimed yet belowthe-radar cinema and a beloved partner of the Palm Beach International Film Festival. It has also expanded its mission to include live theater as part of the Playhouse’s Black Box Series, which produces works suited for the intimate atmosphere. This year, The Stonzek produced one-act plays by Woody Allen and Amy Herzog’s Pulitzer Prize-nominated 4,000 Miles. In the coming season, The Stonzek will add a new cabaret series to the mix and continue to present nearly daily film showings on its 70-square-foot screen. Can you say, “Pass the popcorn”?

FOOD ARTIST

If making sushi is an art, the Picasso among local chefs is Roy Villacrusis, the experimenter behind the sushi bar at Aah Loi, which Thai Chef Charlie Soo opened last September in Jupiter. Influenced by Japanese culture, self-taught Villacrusis has been developing what he calls “Asiatic cuisine,” an interpretation of traditional dishes presented in a contemporary way. With seating for only 44, Aah Loi treats a handful of diners to inventive and beautiful sushi that might incorporate foie gras, truffles instead of mushrooms or even Italian ingredients. The ambitious among us opt for the omakase tasting menu, in which Villacrusis serves a surprise of whatever he feels like creating for as many courses as desired (the record is 25). He may be a big fish in a small pond, but Palm Beach County, where his culinary journey began, hasn’t stopped inspiring him to grow. “There’s really something about West Palm Beach. … [Here, I can] be as creative as those

From the creative mind of renowned archi-

tect Zaha Hadid comes a line of superyachts that look more like spaceships than boats. Pritzer Prize-winning Hadid has partnered with Hamburg-based Blohm + Voss to design a family of five 295-foot Unique Circle Yachts, all based on a 420-foot master prototype. The first, Jazz, has already been commissioned and is being specified and detailed by naval experts Blohm + Voss. The yachts look much like Hadid’s ethereal architecture—all glacier white with fluid dynamics—and mimic her architecture in structure as well, with an exoskeleton that connects the various levels and decks of the ship with expressive diagonals. The design evokes the organic structural systems found in natural marine formations. Inside, stark pod-like furniture (similar to that found in the Hadid-designed Roca London Gallery showroom) fills the captain’s deck. Lunar

By definition, motor sailers tend to offer the worst of all worlds:

They motor like a Hummer on two cylinders and sail even worse. The Polish-built Conrad 115 motor sailer Lunar may just break that mold. But first, the Conrad’s looks. Designers Newcruise of Hamburg, Germany have given this all-aluminum, 115-foot, ketch superyacht styling at its finest. That wavelike sheerline, the straight-up bow, the rolling edges to the superstructure, the silver-painted hull … It’s all absolutely gorgeous. She’s a ketch with twin carbon masts and cutter rig. And there are no grinding winches here; everything is hydraulic. As for the “motor” part of the motor sailer, she’s powered by a couple of Cat C18Ds, each good for 725 horses. That’s enough to shove along at 14 knots. And with 1,340-gallon tanks brimmed, Lunar should be good for Palm Beach to St. Barths without topping up. Not that you’d need to with all those sails. Below decks, there’s a choice of four spacious en-suite cabins, while on deck there’s a mini pool to cool off in plus a hydraulic bathing platform for those back dives with a half-twist. Lunar was commissioned for a Baltic billionaire who intends to sail her to the far corners of the earth, though the folks at Conrad will be happy to replicate her. (conradshipyard.com)

There seems to be an economy of lettering in modern-day yacht-naming.

After Russian oligarch Andrey Melnichenko’s A and the Perini Navi Group superyacht P2, now comes M, a bold new composite-hulled 132-footer from the family-owned Istanbul yard Bilgin Yachts. Reverse bow styling is nothing new; it goes back to pre-World War II warships, though Melnichenko’s submarine-like A arguably brought it back into fashion. Bilgin’s M is the latest superyacht to incorporate this head-turning nautical design cue, which is reckoned to pierce through the waves more smoothly than a conventional bow. H2 Yacht Design penned the exterior and interior of this $15 million silver bullet. Powered by twin V-16 MTU oil-burners each cranking out a healthy 2,400 horsepower, the 195-ton M will scythe through those waves at 23 knots max and cruise leisurely at 18. Inside, she’s very much on the SoHo loft-style side, with lots of sleek and sexy Macassar ebony and zebrano timber, plus lashings of leather and designer fabrics. Eight guests can relax very comfortably in a quartet of cabins, with zerospeed stabilizers to calm those Mediterranean swells. While M was built only in 2012, she has already hit the used boat market. Last time we looked, the sticker on the windshield read $12.6 million. (bilginyacht.com) 86

Like Toyota’s hybrid, this 131-foot Columbus Prima has two

giant electric motors that allow it to cruise silently and with zero emissions. But if anyone makes a Prius analogy, just whip out the RINA Green Star Plus Award given to Naples, Italy-based yacht builder Palumbo Shipyards by His Serene Highness Prince Albert II of Monaco. The secret of the Columbus Sport 130 Hybrid’s environmental friendliness is its hybrid system of fuel-sipping generators charging up batteries that juice those twin electric motors. As long as you’re content to amble along at 7.5 knots, it’ll likely cruise for eternity—or at least 5,000 nautical miles. Want to go faster? That’s when the big muscle diesels kick in and the knots rise to an impressive 25. Helping save on diesel is the lightweight aluminum used for Prima’s semi-displacement hull and swoopy superstructure. She may not be the prettiest yacht in the harbor—the towering sides, bulbous bow and steely-bronze paint created by Hydro Tec Naval Architecture make her look a little industrial. But there’s no doubt her new Russian owner is ecstatic. Below decks, there’s a quartet of beautifully finished cabins featuring a mix of light fabrics and dark marble. One of the exterior highlights is its massive rear deck that the designers call “The Beach Club.” Prima’s rumored cost is in the region of $30 million. (columbusyachts.it)

At over 138 feet long, Adastra is the second-largest trimaran yacht ever

built. Its owners, billionaire Hong Kong shipping magnate Anto Marden and wife Elaine, commissioned it for long-range ocean exploring. Designed by UK–based John Shuttleworth Yacht Designs Ltd. and

Yet pedal-to-the-metal, she’ll hit an impressive 29 knots, while 11 knots will give Ghost a transatlantic range of more than 4,000 nautical miles. Alberto Vismara of the Undicimetriquadri interior design group crafted accommodations for eight in four spacious cabins together with a sprawling master. The decor is said to be on the minimalistic side with lots of brushed aluminum and light veneers. Right now, Ghost’s design is just that—a design. The restaurant’s roll call of purveyors includes local luminaries such as Swank Specialty Produce in Loxahatchee as well as Pontano and Bedner Farms in Boynton Beach. The decor is eclectic, something between an upscale steak house and a casual sports bar, and the restaurant is open nightly for dinner. A Glass of Italy What do Erbaluce, Schiava and Negroamaro have in common? All three are regional Italian wine grapes, are relatively unknown in the United States and are sold at the area’s newest wine shop: Vinoutlet in Palm Beach. David and Domenica Frankland, who moved to Florida from New York three years ago, opened Vinoutlet in February after lamenting the impossibility of finding their favorite style of wine locally. Their credentials in the wine industry are broad and deep: The couple owns a Sangiovese vineyard, Massoferrato, in Tuscany, while Domenica’s sister operates a wine store in Florence and her brother is an importer and distributor in Manhattan. “Our customers tend to be a mix of adventurers and people looking for something familiar,” David says. “For the second group, we try to suggest something that will expand their horizons. We lean toward wines that are fresh and straightforward, with less oak and more fruit.” Roughly two-thirds of the wines are Italian regional specialties, but there’s a healthy smattering of bottles from France, California, Spain and Argentina, not to mention a wellchosen selection of craft beers. In 2009, when the Junior League of Boca Raton was celebrating the tenth anniversary of its cookbook, Savor the Moment: Entertaining Without Reservations, member Stephanie Miskew came up with a savory plan to promote it: Cook all 275 recipes in the James Beard Award-winning book. A wine lover, she paired dishes with vino and documented her culinary journey on a blog she titled Stephanie Savors the Moment— which has since snowballed into a whole new passion for the former speech pathologist. Now under the alias The Glamorous Gourmet and The Wine Atelier, Miskew’s blog has become a resource of recipes, wine reviews and travel articles along with an online store of wines Miskew has personally sampled and recommends. She also offers a monthly wine club, is a contributing writer for Fox News, hosts private events and is launching classes and a video series this fall. Now, wine is “my passion. It’s what I absolutely love to do in life,” she says. Her favorite local wine spot: “I love the Grove in downtown Delray Beach. The wine list is beautiful. The prices aren’t too crazy, either.” A wine she recommends for September in South Florida: Rosé. “Everyone thinks of it as a summer wine, but let’s face it: September in South Florida is pretty much like summer. There may be no better drink on a hot September afternoon than a chilled, bracing aperitif. The best among them are crisp, low in alcohol (roughly equivalent to table wine) and high in acidity—we’re talking the type of libation that sharpens the appetite and leaves you with the desire for another sip. Bitters are a natural with the Italians, while vermouth is a charm for the British, but few aperitifs have the universal appeal of France’s Lillet. Brothers Paul and Raymond Lillet first concocted the libation in 1872 in the town of Podensac, south of Bordeaux. They infused white Bordeaux wine with citrus liqueur and quinine to make a golden potion with a pleasantly bitter bite that was then matured in oak casks. Originally, all Lillet was white; a red version was added in the 1960s, primarily geared to the U.S. market. The real vogue of Lillet dates to the 1920s, when the company launched a major advertising campaign featuring the colorful, now classic posters by French artist Robert Wolff. The drink spread to the United Kingdom, where it was featured in magazine ads with legendary mixologist Harry Craddock, and eventually the drink caught on in America. The classic serving method was either straight from a chilled bottle or on the rocks, both accompanied by a twist or slice of orange.

The original product was known as Kina Lillet, because the formula included extracted bark from the South American cinchona tree—or “kina-kina.” It was reformulated in 1987 with assistance from experts at the University of Bordeaux, who advocated removing the quinine for mass appeal. Lillet Dry was introduced in 1945, designed to mix with gin in cocktails. In addition to the red (which was revamped in 1990), there is now a rosé as well as a reserve version that receives extra oak aging. The most famous reference to Lillet in pop culture occurs in Ian Fleming’s 1953 novel and 2006 film Casino Royale, when James Bond orders the drink that became the Vesper Martini: “Three measures of Gordon’s, one of vodka, half a measure of Kina Lillet: shaken, not stirred.” Cocktail historians now believe that Bond was really referring to Lillet Dry, but the Vesper has become a classic. Close behind is the Corpse Reviver #2, first mentioned in Craddock’s Savoy Cocktail Book in 1930. This nifty hangover remedy also contains gin, lemon juice, Cointreau and a dash of absinthe—once again, shaken. Among the more interesting cocktail recipes on the company’s website are the Lillet Hugo (Lillet Blanc, el-

derflower liqueur, sparkling water and a slice of lime), the Blushing Manhattan (Lillet Rosé, whiskey, gomme syrup and grapefruit bitters) and Lillet Sangría (Lillet Rouge, Crème de Framboise, pink grapefruit juice and lemonade). More intriguing still are the recipes that incorporate Lillet as an ingredient or preparations that pair well with a glass of the aperitif. One calls for poaching nine large, ripe white peaches in an entire bottle of Lillet Blanc spiked with cloves, verbena leaves and peppercorns. Better yet, steam fresh scallops in a combination of fish fumet, Lillet Blanc, shallots and chervil leaves. For the ultimate hedonistic pairing, purchase a jar of onion jam and the most authentic baguette you can find. Slice the bread thin, spread on the jam, top with shavings of duck foie gras and a pinch of sea salt, then enjoy with a chilled glass of Lillet. You’ll be glad you did. «

find them that perfect home, but also sell their town home. The real estate attorney just didn’t want anyone doing the job; he wanted the right person. And he found that person in Laurie. The Zolotorofes were first impressed with Laurie’s quick-moving skills and actions. David told Laurie he wanted to find a home and sell his current one within 30 days. After listing their town home the day after they met (complete with professional photographs), offers were immediately coming in. “Laurie gave me a few pointers on what to do to make it look better, and we conducted a few open houses,” David says. “She found me several qualified buyers who we were very happy with.” Simultaneously, Laurie got the Zolotorofes access to the PGA National homes in the Marlwood Estates community for their home purchase. After finding their dream home – a foreclosed property – they began the negotiation process, which David admits was tedious and difficult. But through it all, Laurie was there to help the family and offer advice, assistance that the real estate attorney and his wife appreciated. They closed on the home and moved in September 2013. “Laurie was excellent,” David comments. “She was great on both ends of the transaction and very professional. Most important was that she was very accessible. We must have had a hundred phone calls with each other, and she was there with us every step of the way.” For Jacki Breen, listing her home with Laurie was a decision that made perfect sense. “She knows the market better than we knew it. Laurie knows her business, and she takes it very seriously,” Jackie says. “She was very impressive and gave advice on what price we should ask for our home.”

But Laurie doesn’t always look that far to connect buyers or sellers with a potential home deal. When the client goals match up properly, Laurie knows she can make a simple phone call to any of her fellow Waterfront Properties team members, whose clients are often looking to either buy or sell their homes, oftentimes even selling a home before it is listed. “Laurie has such knowledge about PGA National, and she knows everybody and every house here,” says Marlies Hulsker, a client whose home Laurie recently sold. Marlies and her husband were looking to relocate and needed to sell their beloved 5,000-square-foot home with five bedrooms and five-anda-half bathrooms that overlooked the peaceful preserve at PGA National. They listed with Laurie in Dec. 2012, and four months later the home was under contract. “We were so lucky to sell our house in four months, and I am sure that her knowledge and her down-to-earth personality helped out,” Marlies says about Laurie. “She doesn’t give you false hope about a potential offer, and she is very honest. Kai-Kai Farm has been operating on a community-supported agriculture model since opening in early 2008. Co-owner Carl Frost explains the model allows Kai-Kai to be a local vegetable resource and offer diverse crops. “Our customers comment that they enjoy fresh-harvested vegetables because they have better flavor and texture compared to grocery store counterparts [that come] from who knows where,” Frost says. At Kai-Kai Farm, the season runs from October through May, with limited vegetation available during the summer months. We spoke with Frost about the environmental and health benefits of community-supported agriculture as well as the basics of the practice. What do you see as the greatest personal health benefit? Locally harvested vegetables are really fresh, super tasty, nutritious and have better shelf lives. How is the produce distributed to members? CSA boxes (a small box has up to 10 vegetables and a large box up to 15) may be delivered to a limited area from Northlake Boulevard up to Jensen Beach. We distribute boxes at green markets [including those in] Palm Beach Gardens, West Palm Beach and Stuart. We also distribute boxes at Francesca’s Terra Verde Farm Club and Fresh Harvest Market. It’s September, so back to school is on the brain for both kids and parents. Packing healthy lunches can be a challenge regardless of dietary restrictions, but a raw diet actually lends itself well to lunchtime. Start with the sides, which can be anything from organic baby carrots to dehydrated kale chips. For the drink, stop by Raw Juce in Boca Raton, which coldpresses juices daily with varieties such as Berry Peary Chia, Un-Beet-Able and Carrot Cake, all with a 72-hour shelf life. For the main course, we suggest this mock tuna salad recipe that will please even the pickiest eaters.

Ingredients • 2 cups sunflower seeds, soaked overnight and rinsed • 1 tbsp. dulse flakes • 1 tbsp. kelp flakes • Pink sea salt to taste • Juice from one or more lemons (depending on tart preferences)

Method Pulse all ingredients in food processor until it reaches a chunky consistency akin to tuna salad. Serve in romaine lettuce leaves.

The exhibit “Wheels and Heels: The Big Noise Around Little Toys” is on display at the Norton Museum of Art through October 26. This playful exhibition chronicles the 55-year-old story of two of the twentieth century’s most iconic and famous toys: Matchbox cars and Barbie, the teenage fashion doll. What’s Buzzin’? Did you know honeybees operate within a caste system composed of worker bees, drone bees and the one-and-only queen bee? Each year, nearly 80,000 female worker bees are responsible for building a hive and collecting close to 66 pounds of pollen. The life of a drone bee is far bleaker, as it is stingless and defenseless and mates with only new queen bees to produce future colonies. The sole purpose of the queen bee is to lay eggs to create the next generation of honeybees. Want to learn more about the secret life of bees?
