Read On hen I bought this publishing company in the early 1990s, the media landscape was very different. Newspapers were the dominant source for information, television was primarily about comedies and dramas, and few people beyond university scholars and military personnel had ever heard of the Internet.

The only thing that hasn’t substantially changed since then is the role magazines played—and still play—for media consumers, as the ultimate oasis for people who want to be informed and entertained.

These days, information comes at you faster than ever before and in larger quantities, even though the methods have changed. Newspapers are struggling but still cover the world. Network television is splintering into hundreds of niche channels. And almost everyone uses the Web on a daily basis now. In fact, half of the U.S. adult population has a social media account.

But all of that pales in comparison to the substantial influence magazines enjoy.

In an increasingly noisy and crowded media marketplace, magazine readership is growing. Research shows that some 93 percent of American adults—a number that has risen more than 4 percent in the past five years—read magazines, paying equal attention to advertising and editorial content. Magazine subscriptions are up, new magazines are launching, and the median age of magazine readers remains younger than the median age of the U.S. population as a whole. Indeed, 96 percent of adults under age 35 consider themselves magazine readers.

Today, as was the case when I got into the publishing business, people still depend on magazines for a few minutes of pleasure, to put their world into perspective and to discover new things that appeal to their interests. At our company, however, we have embraced the best aspects of modern media—our robust multimedia websites and locally intensive Facebook pages are increasingly popular, and many of our team members maintain blogs and Twitter feeds—to connect with more people in different ways. And, from an industry perspective, research shows magazines drive Web searches more than any other medium, inspiring readers to find more information online when they see it on our pages. While mobile “apps” and e-reader subscriptions are growing as technology enables people to approach the ink-on-paper experience, the research says, and buying patterns confirm, magazine readers are not abandoning magazines on paper for iPad, tablet and other digital versions.

It may happen someday, but most experts don’t think consumers will give up lavishly illustrated magazines for an on-screen version. Some of our international readers like our digital edition (subscriptions are available on our website) because they get it sooner, but they still want the printed version. (Friend us on Facebook and you can see the digital edition.)

Sure, there’s a lot to consume these days and a lot of ways to consume it. But in the end, magazines are stronger than ever, and here’s all the evidence you really need: A few weeks ago, there was an announcement about the impending national launch of a new, monthly printed magazine.

It will cover social media sites and technology.

v NOLAN SOTILLO West Palm Beach’s “boy next door” is now on the silver screen.

Just five months after settling in Los Angeles part time, taking acting classes and vocal lessons and auditioning, Nolan Sotillo was in a leading role in Disney’s teen “dramedy” Prom. Sotillo, who graduated from Rosarian Academy in 2009, performed in the school’s theater program, and did stand-up comedy at Standing Tall Comedy/Kids and Teens in Las Vegas and Los Angeles. n How are you like Lucas, the character you play in the movie?

Lucas and I both have a strong love of music, but I’m even more passionate by playing guitar, piano, drums, writing songs and, of course, singing. Unlike my character, I am not that much of a geek. n What new acting projects are in the works for you?

A new pilot from Disney called Madison High. It is a High School Musical spin-off. It’s a great fit for me because the role involves acting, singing and dancing. I [also would love] to do an action movie, and work with Will Smith. n What do you miss most about West Palm Beach?

Of course, my mom and my brother, and also my friends and my dog. I miss riding my bike around, too. I will be in Florida this summer. I plan on hanging with my friends and playing golf; just having fun and relaxing in my hometown. —Lola Thélin

Greg Hauptner is well versed on how an idea

can snowball. Hauptner started a summer program for kids to learn video production, and it turned into a TV show that ran on PBS for four years. Then he heard about a charter school opening. Despite having no initial knowledge of what a charter school was, he ended up beating out 18 companies, and the G-STAR School of the Arts for Motion Pictures and Broadcasting opened in 2003, with 150 kids. “I started G-STAR from day one with the thought that we have to create an industry to employ our students when they graduate from college,” he says. He lived up to that promise, building something out of nothing by creating a movie studio that he gave away for free to generate an industry. —L.G.S.

SLIM DOWN, POWER UP Shedding weight has given Porsche’s latest Cayenne Turbo a real performance boost.

We all know the benefits of losing a few pounds. Yes, we’re talking about you, Al Roker. In addition to your waistline feeling a little less like a lump of marshmallow, you tend to move faster, feel fitter and have more energy.

So, when the good herr doctors at Porsche were formulating their plans for a midterm facelift for their notoriously porcine Cayenne SUV, instead of ladling on more power to offset the poundage, we’re thinking they called up 1-800-JENNY. They were ruthless. A whopping 145 pounds were shaved from the body, including 86 pounds from the doors alone. Out went a smelting works’ worth of steel, to be replaced by featherweight aluminum, magnesium and exotic composites.

Then there were the 73 pounds that were lipoed from the all-wheel drive system.

Another 18 pounds were whittled off the 38

wheels. I have visions of a fräulein with a Dremel grinding at the Cayenne’s valve-timing adjuster to lighten its load by 3.8 pounds.

And the grand tally? An impressive 408 pounds. Or the weight of a small baby elephant. Were the Cayenne a person, he’d be jumping up and down after being crowned the Biggest Loser.

In the latest flagship 2011 Cayenne Turbo I’ve been driving, these weight loss benefits instantly are apparent the moment you stomp your size 11 on the right pedal. Now, the whoosh from standstill to 60 mph takes a mere 4.4 seconds—unbelievable, and unthinkable, for a family-toting, speedboattowing, two-and-a-half ton truck. That compares to a still-crazy-fast 4.8 seconds for the last Cayenne Turbo I drove. And all this action doesn’t quit until the speedo needle is kissing the 172 mph mark.

Not only is this less lardy Cayenne Turbo a performance demon, it’s also more thrifty at the pumps. Instead of the 12 mpg city/19 highway of its predecessor, it now returns a slightly more palatable 15 city and 22 highway.

Of course, the Cayenne’s facelift story isn’t just about losing weight. Bodywise, everything is changed, from those stunning new 21-inch wheels up. Its dimensions have grown in pretty much every direction; it’s 1.9 inches longer and a tad taller, but the additional inch and a half in the wheelbase provides much-needed extra kneeroom for those in the back.

And Porsche’s design team has done a nice job of evolving the original Cayenne Turbo’s bad-boy styling. It’s curvier than before and more tapered at each end, giving it the impression of actually being visually smaller.

There’s also a lot of new technology

packed beneath that blunt instrument body, like the new eight-speed Tiptronic S auto transmission, which fires off changes like a Kalashnikov with a stuck trigger.

Then there’s the new all-wheel drive system—lifted from Porsche’s Panamera sedan—with its trick torque-vectoring feature to sharpen handling.

In the Cayenne, this new 4x4 system results in even higher levels of grip, less scrubby understeer in tight curves and a much greater feeling of agility. If a 4,700-pound SUV could ever be described as nimble, this is it.

Powering this beast is the same nuclearreactor-like 4.8-liter twin-turbo, all-aluminum V8 from the last Cayenne Turbo. As before, it packs a massive 500-horsepower and stump-uprooting 516 pound-feet of torque.

But with less weight to move, its acceleration seems nothing short of staggering.

Pull out to pass slower traffic, squeeze

the throttle and the Cayenne lunges forward like a rocket out of a bottle. You have to keep telling yourself you’re piloting an SUV and not Porsche’s 911 Carrera twoseater, which, incidentally, is slower to 60.

Inside, the Cayenne’s cabin has benefited from many of the quality upgrades that went into the four-door Panamera sedan—the Cayenne and Panamera are assembled alongside each other in Germany. The materials look and feel richer and fit together better.

This is an SUV that exudes luxury with its heady mix of acres of buttery leather,

sexy, suede-like Alcantara and brushed aluminum. It’s how you imagine Giorgio Armani’s living room to be.

The new Cayenne Turbo has a base price of $106,000, though the list of must-have options stretches from here to Nebraska. Our well-loaded test car stickered at $128,610.

Back in 2003, Porsche pretty much created the benchmark for the performance SUV with the Cayenne Turbo. Now with less weight giving livelier performance and more agile handling, it has raised the bar even higher. u

TOTAL AWARENESS Connie Beaudoin, yoga teacher Though yoga is enjoying a contemporary resurgence as an enlightened approach to a healthier body, its roots go back thousands of years as a method to free the mind and spirit.

When the physical and spiritual elements are linked together, says certified yoga teacher Connie Beaudoin, the result is achievement of peace and harmony. Beaudoin, owner of the Palm Beach yoga shala Parasutra, says many people initially take up yoga as a unique way to stretch their muscles or lower their blood pressure but ultimately find something deeper— increased awareness as a natural byproduct of the ritualistic movement, breath work and meditation. “The physical practice is just a small part of yoga,” says Beaudoin, who has taught locally for 12 years. “The comprehensive approach allows us to unravel when we’ve tightly wound ourselves up.”

needy family, for $25 a month. He persevered to get a visa to visit the States and arrived in New York in 1973. Even though he didn’t speak English, he tracked down his sponsor to thank him. That man was so impressed that he gave Assad a job as a filing boy in his insurance agency. That opportunity, combined with an insatiable drive, led him to a career in the insurance industry and he eventually became the No. 1 salesperson in the country for State Farm.

His background has taught him tenacity, if nothing else.

The path to making a lifestyle change starts when guests book their stay. Members of the staff conduct “pre-arrival” interviews to get to know the guest in advance. Also, a list of the lectures and exercise programs offered during their stay is sent out a week before guests check in.

There are several packages available at Canyon Ranch, some that focus on fitness in general, and some with specific focuses on, for example, stress management, which integrates education on stress-reducing food and nutrition with exercises and ways of thinking to help better control life’s stresses, or healthy weight, which guides guests through new approaches in diagnosing and treating weight problems through hormone balance and chemistry.

Huh? Hormones? Chemistry? Yes. But not artificial hormones and fad pill chemistry. Canyon Ranch helps balance the hormones and chemistry in your body to make you a healthier you.

Upon arrival, each guest receives several cutting-edge biomedical and diagnostic tests from the physicians on staff.

Medical Director Dr. Karen Koffler says, “We might do genetic testing on you to see what you are at risk for, and that includes genetic testing on things like your liver function to see how well you are able to detoxify. We do a lot of very sophisticated hormonal testing. We do testing on your gut function that lets us see how well you are breaking down and absorbing nutrients, whether or not the bacterial population in your gut is optimized or has been somehow compromised by [something like] antibiotic exposure or too much sugar in your diet. We do food sensitivity testing that helps to see if your diet is a core source of inflammation that’s provoking your migraines, your arthritis, your depression or bloating. A lot of things that people ‘live with,’ we’ve identified as being correctable problems.”

Armed with this information, as well as through interviews, the staff at Canyon Ranch can customize a program to meet that guest’s specific needs.

“A lot of what we do is education,” Koffler says. “It’s not the traditional medicine, saying ‘you need to do this, you need to do

She adds, “First, we help people realize that for everybody, change is a process. We appreciate that people might take two steps forward, one step back; so first, when they choose to do a health package, regardless of what their emphasis is, they’re seen by multiple members of the team. So they end up hearing, through our different lenses, some of the same information, spoken in a different way, which helps them to get why it’s important to make those changes.”

Don’t get the impression, however, that Canyon Ranch is a sterile, hospital-like environment. All of this happens under the roof of a luxury hotel right on the ocean, with 150 guest suites complete with HDTV, Internet access, kitchens with KitchenAid and Miele appliances, spa-like bathrooms with deep soaking tubs, and comfortable beds made with 400-thread-count sheets.

All guests have access to the wellness spa and state-of-the-art fitness center, with more than 40 fitness classes and wellness lectures offered daily. Workouts range from beach walks and yoga to boxer training and boot camp. Lectures are hosted by the ranch’s staff or visiting experts. Topics run the gamut from diet and nutrition led by nutritionist Larisa Alonso, proper exercise techniques, breast and heart health, and Chinese medicine and acupressure, to improving your energy flow and creativity with energy healer Michelle Maniaci.

you choose the Hydrospa, where jets offer a gentle water massage, a steam or sauna experience, or the Experiential Rains shower, finish up your experience in the Igloo, where three varieties of Arctic mist surround you in an invigorating yet soothing way.

What spa would be complete without a full selection of massages, facials and specialty treatments? An add-on to the Canyon Ranch experience, the spa features massage therapies from all over the world, including Thailand, India (Abhyanga) and Japan (Shiatsu and Ashiatsu). Healthy skin is a necessity for a healthy body, so signature treatments, such as the Your Transformation Facial, a restorative anti-aging treatment that boosts the skin’s moisture retention and free-radical defense, and the Marine Facial, which is perfect for all skin types, are popular with guests. A full-service salon also is on site.

Working out or getting worked over builds up quite an appetite. Guests are in luck, as the Canyon Ranch features gourmet meals that also are healthy. Alonso works directly with Executive Chef Giovanni Arias and within Canyon Ranch’s philosophy to create the menus. “The emphasis is on whole, organic [ingredients] as much as possible, local and sustainable,” Alonso says.

The items on the varied menu in the Canyon Ranch Grill are broken down to show the calorie count as well as the grams of carbs, protein, fat and fiber of each dish. And just because it’s all healthy does not mean it’s “rabbit food” or that it tastes like cardboard. While there are vegan and gluten-free items available, there also are dishes made with lean cuts of meat, poultry and fish. And, the Miami location is the only Canyon Ranch that does offer a selection of wine and cocktails.

“I think that’s one of the biggest surprises for most people who come here: that it’s delicious,” says Alonso. “And they’re satisfied by the portion size. They look at the portion size and think, ‘I’m never going to feel full,’ and they do.”

With all there is to learn at Canyon Ranch, guests may feel overwhelmed when it’s time to leave. Koffler meets with them, to prepare them for their new and improved lifestyle.

“When they sit with me before they leave,” she says, “I have them walk through the recommendations that we made, so that they can see and actually visualize their day-to-day life and how it might look integrating these changes. And certainly living here for several days, you get to eat the food we want you to eat, you get to do the exercises we want you to do, so they are actually living what it is we want them to bring home with them. And they get to experience a greater sense of energy and vitality [and feel] more hopeful, more optimistic. All of that helps to make it much more real.”

In addition to giving guests literature and menu ideas to take home, staff members also follow up with guests to find out if they are getting along, and if they can tweak any problems that might come up. “Just because they leave doesn’t mean our relationship ends with them,” Koffler says. “We invest a lot of time getting to know them, and they feel connected to us.”

Be Fit One way or another, most people have experienced the yo-yo fitness effect, trying one fitness fad after another and never reaching one’s ultimate goal. “The truth is most fitness programs do not deliver the level of results that keep people encouraged to maintain the two most important facts for long-term success—consistency and dedication,” says Marissa Lysaght, owner of Fitness Re-defined. Lysaght suggests a functional, circuit resistance training, a method that involves total body movements and interval-based cardio training; but before you commit, she suggests asking yourself one question: “‘Can I picture myself doing this for a long time?’

If the answer is no, the program is not for you.” Jupiter (561-904-6262, fitnessredefined.com) Boxing is an esoteric sport, but 9Round has found a way to make it accessible to the everyday athlete. Founded by professional kickboxer Shannon Hudson, 9Round is a gym that breaks down boxing and kickboxing fitness into nine trainer-supervised workout stations for three minutes apiece. The full-body circuit training, which lasts only 30 minutes, focuses on cardio, anaerobic and resistance training. The constant change in exercises eliminates workout boredom and helps burn up to 500 calories. Boynton Beach (561-732-9889); Boca Raton (561-482-9899, 9round.com) Cycling classes have long been a cult in Manhattan, and when Ruth Zukerman opened Flywheel in the city, the studio immediately took off. When it was time to expand, Zukerman chose Boca Raton.

Flywheel’s 45 bikes are stationed on an amphitheater-style arrangement, which is both curved and tiered so that every rider can properly see the instructor. Each bike is equipped with monitors displaying performance data, which is stored into the rider’s account so that he or she can track individual performance and goals. “Over the course of our signature 45-minute ride, you get an efficient, full-body workout that includes a high-repetition upper-body series using a weighted bar,” explains Zukerman. Be sure to try Fly ’n Flex, a 45-minute ride with a half-hour of Vinyasa yoga.

The $15-million facility boasts an Olympic sheet ice surface, which is the international ice size for hockey and figure skating. There is a plethora of classes available year-round, including group skates, jump, spin and spiral classes and competitive tracks for aspiring figure skaters. For hockey enthusiasts, there are clinics, open hockey sessions and private instruction, as well as youth and adult hockey leagues.

SUPER JUPITER Jupiter Medical Center is making a strong impression in the world of medicine. U.S. News & World Report ranked the hospital ninth out of 69 hospitals in the Miami/Fort Lauderdale Metro Area. It also was recognized as high-performing in five specialty areas: cancer; ear, nose and throat; gynecology; kidney disorders; and neurology and neurosurgery.

Earlier in the year, it also became the only hospital in the county to receive national accreditation of its breast health program by the American College of Surgeons’ National Accreditation Program for Breast Cancers. The program, which was named after local news anchor Kristin Hoke, who lost her battle against cancer last summer, is a comprehensive breast health program offering screening and diagnosis, treatment, rehabilitation and survivorship support services.

Jupiter Medical Center’s Ella Milbank Foshay Cancer Center offers some of the most effective and new treatments. In 2008, the center received the $3.3-million Varian Trilogy Linear Accelerator, an advanced image-guided radiotherapy and radiosurgery system for cancer and neurological lesions. Most recently, RapidArc was added, making the Trilogy system even more effective. RapidArc delivers a complete radiotherapeutic session in less than two minutes. Because the machine acts quickly, doctors can more accurately deliver radiation to the intended target.

Earlier this year, the hospital announced a $50-million capital campaign to fund an ambitious but necessary expansion. The campaign hopes to raise funds for a three-story, 75,000-squarefoot building, which will add 45 patient rooms, with one floor dedicated to an orthopedic and spine center and another to the Women’s and Children’s Healthcare Services with a Level II Neo-Natal Intensive Care Unit. By receiving grants for groundbreaking work and conducting research studies, local scientists are pushing the limits and knowledge of diseases and their impact on the body.

A study conducted by Scripps Research Institute in Jupiter about the formation and progression of prostate cancer recently received a $2-million grant to be shared with Tampa’s Moffitt Cancer Center. Prostate cancer is the second leading cause of death in American men. The grant will be spent on researching the origins of prostate cancer and the role that inflammation plays in its development, and the development of novel therapeutic strategies for treatment and prevention.

Another discovery is a new class of highly selective compounds that suppresses the severity of multiple sclerosis in animal models. This recent discovery could be put to use in provid-

ing new therapeutic approaches to multiple sclerosis and other autoimmune disorders. Current treatments affect the patient’s entire immune system but the new compound only blocks the actions of a specific cell type, which appears to avoid widespread side effects.

More studies are also in the works, including a recent study that has shown that DNA can fine-tune the activity of certain proteins known as nuclear receptors. This discovery could help design therapies that highly target specific genes in diseases such as osteoporosis, autoimmune disease and cancer. a-peeling experience Classic Cointreau’s twenty-first century revolution

The search for the perfect orange liqueur began in the Caribbean and culminated in Angers, a small town outside of Paris.

The Cointreau brothers set up their distillery in 1849. Curaçao was very popular in Europe at the time; Adolphe and Edouard-Jean Cointreau set out to make something drier and more aromatic. They called their initial efforts Triple Sec, since it was three times drier than Curaçao.

Eventually they refined the recipe, using a combination of sweet and bitter oranges sourced from around the world, and Cointreau was born.

“The brothers were masters of distillation,” says Richard Lambert, Cointreau’s brand ambassador for Europe, Asia and the United States, “but they were also masters of marketing. They were friends of [filmmaking pioneers] the Lumière brothers, and saw the potential in movies immediately. In 1889, Cointreau was the first liquor to be the subject of a commercial.

They also became involved with the Tour de France early on.”

Today, the distinctive orange spirit is made with the same original recipe, using 19 alembic stills specially designed for Cointreau. An estimated 50 million bottles are sold annually, and 60 percent of the cocktails made worldwide involve Cointreau. It has become a key component of the margarita, sidecar, white lady and cosmopolitan.

Of course, bartenders frequently use Triple Sec to cut costs, but Lambert does not approve.

“Using a top-shelf tequila in a margarita and substituting Triple Sec for Cointreau is like asking your wife to go out in a beautiful gown and a pair of old slippers,” he says.

Cointreau is on the cutting edge of the current cocktail culture, evidenced by the recent invention of Cointreau Pearls, or “caviar of Cointreau.” Inspired by the revolutionary techniques of chef Ferran Adrià, the company hired

expert mixologist Fernando Castellon to transform liquid Cointreau into solid spheres.

Lambert began by dissolving 5 grams of Spherigel, a lactate of calcium, in 50 grams of Evian water, using a mechanical agitator.

He then added edible 24-karat gold flakes, and followed that with 150 grams of Cointreau to comprise the molecular mix. In a separate beaker, he mixed 100 grams of Evian with a substance called Calci+; using a syringe, he then injected the Spherigel solution into the Calci+ to form perfect, spherical Cointreau Pearls.

Sixty restaurants around the world have been selected to serve the Cointreau Pearls, with a mere six in the United States. They have been featured at venues such as Daniel and the Waldorf-Astoria in Manhattan, Stix Restaurant & Lounge in Boston and the St. Regis in Washington, D.C. The Breakers here in Palm Beach serves a cocktail called the Cointreaurita, which consists of 3 ounces of Patrón Silver tequila, one ounce sweet and sour mix, half an ounce of freshly squeezed yuzu juice and one ounce of Cointreau. The finished drink is garnished with salty foam in lieu of the traditional salt-rimmed cocktail glass, and decorated with Cointreau Pearls.

In molecular bartending, as in so many other things, simplicity is sometimes best. If you find yourself at The Tapestry Bar, order a glass of dry Champagne infused with Cointreau Pearls, and savor the taste of orange liqueur exploding in your mouth as you sip the bubbly. u

local haunt City Cellar is a CityPlace favorite for good reason.

In South Florida, restaurants that survive for more than a decade are as rare as courteous drivers or successful blind dates.

Yet City Cellar Wine Bar and Grill has both survived and prospered. Much of the credit is due to the philosophy of their parent company, Big Time Restaurant Group, which focuses on appealing to a broad range of customers “by offering a wide variety of items in a stylish, relaxed dining atmosphere.� In other words, they offer something for everyone and do most of it well.

The decor was arresting 10 years ago and remains interesting today. Located on the mezzanine level of CityPlace, with a view of the pedestrian square below, the restaurant offers both indoor and terrace seating. The interior space is dramatic, highlighted by towering industrial ceilings, a long curving

bar, a glassed-in wine cellar and an abundance of dark, polished wood. An open kitchen dominates one end of the room, flanked by a wood-burning pizza oven.

The specials change daily and the main menu, which is revamped every six months, is conceived by Corporate Chef Lisabet Summa and executed by Executive Chef David Hagan. On a recent visit, a starter of Mediterranean hummus and flatbread ($11.50) turns out to be a platter of delights that includes feta cheese, eggplant caponata, Kalamata olives and mixed greens. Handmade ricotta gnocchi ($11) are light and fluffy, served in a creamy vodka sauce augmented with Asiago and mozzarella cheeses.

Among the entrees, the grilled Kurobuta pork chop ($27) is tender, flavorful and cooked to perfection, served with creamed

goat-cheese-infused polenta, crisp, garlicky broccolini and a sherry demiglace that provide a perfect foil for the meat. A daily special of pan-seared pompano ($27) is moist and delicate, served on a bed of Israeli couscous and enhanced by a ginger-miso broth.

The long, substantial wine list adds another dimension to dining at City Cellar.

There are nearly 60 selections by the glass, along with a range of bottles heavily weighted toward the wines of California. Commercial, mass-market selections are side by side with rare, artisanal products—like the food menu, the list offers something for everyone. Glasses of Château de Sancerre ($12.50) and a half-bottle of Honig Sauvignon Blanc ($26) are graceful complements to our chosen dishes.

Desserts tend toward conventional offerings such as New York cheesecake, Key lime pie, crème brûlée and ice cream sundaes, but there is an interesting selection of

sweet wines to accompany them. Also, City Cellar is one of the few places where you can get a carefully selected platter of artisanal farmhouse cheeses, served at the correct temperature.

Service is delightful. The staff is young, enthusiastic and committed to guest satisfaction; all are familiar with the preparation of the dishes, and willingly offer suggestions.

Managers patrol the floor, and General Manager Michael “Iggy” Ignatowicz works as an expediter, inspecting each dish before it goes out to the tables.

City Cellar has become a fixture of the CityPlace dining scene (“we’re grandfathered in,” as our server cheerfully put it).

It’s a place to meet and congregate, to socialize and watch the passing parade. Despite the sizable amount of seating space, the restaurant is generally full at both lunch and dinner, and the restaurant handles the crowds with grace and style. u

America has always been a melting pot of cultures, and “New American” cuisine is a reflection of that. The notion of blending flavors from around the globe comes to life at Piñon Grill in Boca Raton.

Open for a little less than a year, this restaurant has seen great success in its location adjacent to Town Center. The menu is a variety of flavors and influences, all tied back to simple dishes everyone can recognize and enjoy, and all made fresh inhouse daily.

An interesting starter is the crispy crab fritters.

Not really traditional fritters at all, these are crab and shrimp balls rolled in shredded phyllo dough and fried. The phyllo creates a crispy yet light coating for the crab, and the lobster ginger sauce is just the right tang of flavor.

Salads range in size from “side” salads to entrée salads. Piñon’s goat cheese salad is a wonderful accompaniment to a meal, with spring greens, spicy candied pecans and sun-dried cranberries topped with a piece of seared goat cheese. noodles, Napa cabbage, broccoli, charred corn, mango and edamame with a sesame soy dressing.

Entrées run the gamut from N.Y. strip steak, braised short ribs and roast chicken to a delicious pecan-crusted trout in a citrus Chardonnay sauce and a Chilean sea bass topped with pesto and served on top of shredded Parmesan au gratin potatoes. The desserts are a high point. The white chocolate bread pudding, served warm on macerated berries with homemade whipped cream, is a little piece of heaven.

On the Beach For being a seaside town, there are very few restaurants that actually are on the beach. One of the newest is 3800 Ocean at the Palm Beach Marriott Singer Island Beach Resort & Spa. Opened in the former home of Solu, this modern seafood restaurant is under the watchful eyes of Chef/Owner Dean James Max and Executive Chef Larry LaValley.

This is Max’s sixth restaurant and his second in South Florida. He also helms 3030 Ocean in Fort Lauderdale.

The menu changes frequently, in order to provide guests with the freshest ingredients possible, the majority of which are sourced locally, including produce from Swank Farms in Loxahatchee. Max and LaValley focus on these fresh and simple ingredients to create their dishes, which are unique and flavorful.

A recent chef’s tasting dinner started out with the ahi coconut tuna ceviche, a refreshing treat from the restaurant’s raw bar that is flavored with cilantro, Serrano peppers, green onion and coconut sauce, served in a coconut shell.

This was followed with a crisp heirloom beet salad with arugula, shallots and basil vinaigrette, topped with creamy Coach Farm goat cheese. In the entrée category, Ingrid’s pan-roasted diver scallops with wild mushrooms, Swiss chard,

lobster nage and truffle crème was a perfect harmony of flavor and texture.

Dessert was a decadent duo of Key lime tart with coconut cream and Florida strawberry jam, and a sticky toffee cake with Georgia pecans and bourbon pecan ice cream.

In addition to modern American seafood, the menu also features freerange chicken and beef dishes. The decor of 3800 Ocean is as simple and elegant as the ingredients, with the focus on the fabulous ocean views. Eduardo Mendieta is beautifying downtown West Palm Beach, one mural at a time. The Downtown Development Authority gave the self-taught New Jersey artist creative control of the murals that have popped up over the past year on the sides of buildings in the neighborhood. Completed after the BP spill, the first mural features portraits of his daughter Amira, and represents hope and disappointment in the state of the planet left for the next generation. Another mural of banyan trees was inspired by his daughter Maya, and is a mix of graffiti and child’s storybook. A third mural of 1960s cars was designed during the auto bailout and depicts the “Big Three”—Ford, Chevy and Chrysler. “It’s always been a dream of mine to work in this kind of scale,” says Mendieta. “I believe in public art. The Royal Room has added a new face to the summer lineup.

At only 22, Ariana Savalas is a seasoned recording artist and live performer specializing in songs from the 1930s to 1950s. After Ariana a successful tour in Savalas Europe, Savalas landed the title role of the feature film Miriam in 2007. Savalas will make her Royal Room debut August 19-20, 26-27 and September 2-3.
