Fine Tuning here are so many demands for our attention in today’s fast-paced world. It’s sometimes overwhelming. That’s why we look forward to the summer months and the chance to catch our breath. Whether we’re relaxing on vacation abroad or just enjoying a slower pace of life at home, this is our time to recharge our batteries. It’s important to take advantage of these reprieves when they come our way, because we’re otherwise expected to constantly be engaged. Research says the average American is bombarded with about 10,000 direct messages a day— everything from traffic signals telling you when to stop your car to cable TV shouting heads participating in what passes for reasoned discourse. And that figure grows more understated every day, having been developed before websites and blogs took root—and well before Twitter became a 24/7 phenomenon. (Which reminds me: Does everyone really need a Twitter account? Is there some reason the world needs to know right now what you’re eating for lunch?) For our own psychological well-being, we ought to reduce our sensory input occasionally. I’m fascinated, for example, by the premise of In Pursuit of Silence: Looking for Meaning in a World of Noise, a book by George Prochnik extolling the health benefits of peace and quiet. The author encourages us to hang up the cell phone and turn off the iPod, and get away from the jackhammers and blaring televisions, and get back in tune with the extraordinarily rich world around us—the sound of flowing water, bird songs or even ice rattling in your cocktail glass—to restore some sanity to our busy lives. I think you can make a similar argument about the power of a good magazine. With the aforementioned proliferation of TV channels, websites, blogs and tweets, there are more media voices out there than ever before, and it’s impossible to pay attention to all of them—especially those that only occasionally provide useful information. The best magazines, on the other hand, authoritatively filter and deliver information that their unique audiences really want—ultimately providing some clarity amid the media cacophony. Not surprisingly, there’s research that says magazine readers are highly unlikely to use any other media—listen to music, go online or watch television—while they’re reading. It’s unrealistic to think we can tune out everything all the time. I can’t imagine life without e-mail, cell phones or jazz, and there are plenty of times to make a joyful noise or embrace the sounds of a big city. Just be sure to take the opportunity to turn the volume down whenever and however you can.

To Your Health iving in a place like Palm Beach, we can’t help but want to lead a health-conscious lifestyle. Of course, it is almost always sundress weather here, inspiring us to be as fit and trim as possible, but there is more than that. Our little slice of paradise is chock full of outdoor areas begging to be discovered on foot, by bicycle, by kayak, or even on horseback. Healthy living, Palm Beach-style, is the main focus of this issue. We explore some of today’s most au courant fitness trends, such as Hyp-Yoga and Ki-Hara, in “Fitness Wave” (page 66). The point of this feature is to show how creative and fun exercise can be, whether you are the outdoor type or prefer a more meditative approach. West Palm Beach native Ada-Nicole Sanger is making a name for herself in Hollywood and she’s only 12 years old. The actress stars in the summer comedy Grown Ups, which premieres June 25. Sanger plays the on-screen daughter to actor Kevin James, but also shares the silver screen with Adam Sandler, Chris Rock and Salma Hayek. In her spare time, Sanger is developing a clothing line for young girls called The Perfect ANSwer. ■ WHAT WAS YOUR MOST EXCITING MOMENT ON THE SET? I was most excited to meet Adam Sandler because I have always loved his movies and dreamed of being in one someday. I never thought I’d get the chance so soon. My favorite thing about working on Grown Ups was being part of the Happy Madison family. ■ IN THE FUTURE, WITH WHOM WOULD YOU LIKE TO SHARE THE BIG SCREEN? I’d love to do more movies with anyone from the cast. Adam, Rob Schneider and Salma Hayek were so nice and complimentary while we were filming and really put me at ease. It would also be amazing to work with Drew Barrymore, Amy Adams or Will Smith, because they are such versatile actors, and I think I could learn so much from them. ■ WHY DID YOU DECIDE TO BECOME AN ACTRESS? I was inspired to be an actress by watching old musicals with Gene Kelly, Bing Crosby, Debbie Reynolds and Judy Garland. The first thing I wanted, I told him, was to witness the vast migration on the Serengeti Plains in Tanzania, where each year, more than two million animals follow the rains that nourish the grasses they feed upon.

Five minutes after landing on a dirt airstrip, a parade of ungainly wildebeests surges toward us. With horns too small for such large heads, these beasts seem slapped together from spare parts. Soon we’re surrounded by the herd— 2,000 to 3,000 head, our driver estimates. We witness beautiful gazelles mingling with the wildebeests. Frisky zebra colts gambol about. Driving six miles to camp takes two hours, as we stop to admire giraffes craning their necks for succulent leaves, as well as elephants, lions, eagles and prairies black with wildebeests. Each day, soulful-eyed dik-diks, the tiniest antelopes, stare at us as we embark on game drives. After dark our personal butlers, armed with flashlights, escort us to our tents. How they would protect us from a lion attack only they know; thankfully we don’t need to find out. Although the idea of a tent that folds up to be

pitched later somewhere else sounds less than luxurious, this is a special tent. Each night I sleep on fine linens that have been turned down by my butler. Roughing it involves listening to the rhythmic sounds of buckets being filled with hot water to shower down on guests in private enclosures under the African sky. On the last evening in the Serengeti, we sit around a crackling fire, listening to tales of stealthy predators, pugnacious buffalos and barrel-shaped hippopotamuses. My lasting image is of the endless plains, blanketed by wildebeests and zebras. My second wish is to visit the Ngorongoro Crater. Jones places me in a huge suite in the Ngorongoro Crater Lodge. The pink stucco walls curl around sitting areas with woodburning fireplaces, past freestanding tubs under domes hung with crystal chandeliers, to a

mammoth four-poster bed. Large, freeform patios sprawl outdoors. The 100-square-mile volcanic bowl spreads out below, viewed from the lodge’s priceless perch on the rim of the crater. But where are the animals? We see grasslands, sheer walls, Lake Magadi plopped down off-center, but not a sign of life. Only when we descend do we realize how high the lodge sits. On the way down, the driver halts by three stately Masai warriors arrayed in brilliant robes who agree to be photographed for a fee. Shortly after, we stop again near a large hawk sitting in an acacia tree. Finally, on an immense circular plain, we behold one of the largest concentrations of wildlife in Africa. Vehicles are restricted to park on roads. The nonchalant animals cause traffic jams, as enthralled visitors gape at them from an arm’s length away. Millions of years have passed since the Ngorongoro Crater was formed. In few places do peaks, plains, valleys and lakes coexist in such proximity. The magnificent landscape we see is much the same as the one that Stone Age,

It sparkles like a million Cartier diamonds. For five short minutes, every hour on the hour from sunset until after midnight, most of Paris seemingly stops in its tracks to witness the magical flashing lights of la Tour Eiffel. That is until our sleek, new, steely silver, longwheelbase Jaguar XJ whooshes silently by. Then heads rotate, jaws descend and a collective “Ooh-lala, magnifique!” echoes from the sidewalk. The effect is quite remarkable. Swarthy taxi drivers nod in knowing approval, kamikaze motorbike riders sweep within millimeters to get an up-close-and-personal look, old men tip their berets in respect. Ahh, c’est la nouvelle Jaguar. As we cruise Quai Branly paralleling the Seine, there’s no better place to watch this shimmering of 20,000 flashbulbs. Open the new XJ’s giant double-panel panoramic glass roof, look skyward, and watch the light show. We’ve come to the fabulous City of Light to get a first taste of this critically significant new Jaguar. Paris is, after all, the European epicenter of fashion, design, chic style, elegance and all things of good taste. This is the new Jag. Replacing the staid and sedentary last-generation XJ, it trades conservative, old-school sedan styling for the bold, dramatic, sexy, sloping-roof lines of a coupe. Instead of being a second-string rival to the lardy Lexus LS and Mercedes-Benz S, it now locks horns with the likes of the Porsche Panamera and Maserati Quattroporte sports sedans, and yes, even Aston Martin’s new Rapide four-door. In the metal the XJ looks simply breathtaking, a true piece of 42

automotive art. From its oversized, air-gulping grille and cat’s-eye headlights to its cascading rear LED lights, the car oozes sporting elegance. And speaking of metal, like its predecessor, its body and chassis are crafted from lightweight aluminum that’s bonded and riveted, aircraft-style, for strength and rigidity. Lighter weight translates into more dynamic handling, more athletic performance, and improved fuel economy. But it’s the new XJ’s cabin that will have you reaching for the Veuve Clicquot in celebration. Here, quite simply, is the sexiest, most stylish, most sumptuous interior this side of a Bentley, an interior that could quite easily have been assembled by Bentley’s own artisans. There’s more wood here than in any Jaguar past, yet it sits in the background, almost as an accent. The attention-grabbing materials are the glove-soft leather, chrome and ultra-glossy Piano Black. And there’s real, usable technology here, like the 3D virtual instruments. Press the “start” button and on the glass screen behind the wheel, three big dials magically appear—speedometer in the center, rev counter to the right, and fuel/water temp to the left. Yet
the instruments switch around depending on priority. Approach a turn with the satellite navigation system engaged, and the fuel gauge is replaced by a turn-by-turn arrow. Select the sporty â&#x20AC;&#x153;dynamicâ&#x20AC;? setting to sharpen throttle response, and the speedo and tachometer switch places so the tach becomes the main dial. Itâ&#x20AC;&#x2122;s rather brilliant. The cabin is designed to cosset and comfort five adults in seats that are big on support and adjustment. For limo-like legroom, the XJâ&#x20AC;&#x2122;s long wheelbase adds an extra five inches in the back. But to drive it is to love it. Gone is the former pillow-soft Jaguar XJ ride. Thereâ&#x20AC;&#x2122;s a new underlying firmness that hints at BMW levels of ride comfort, and reflects the carâ&#x20AC;&#x2122;s sportier, more athletic character.

FOOD SCIENCE The term “molecular gastronomy” has been much deliberated in foodie circles. Basically, it refers to the study of food on the molecular level. When foods are broken down and then reconstructed, it challenges the way we think about what we eat. Up to now, that was done only in places like El Bulli in Spain and Alinea in Chicago. But, unbeknownst to many, that sort of haute cuisine also is happening in our midst. Chef Greg Vassos is sending ripples through the Palm Beach food culture with his unique brand of cooking at L’Escalier, The Breakers’ modernFrench dining venue. Flavored foams, powders and emulsions frequently make it into his dishes as enhancements and even counterpoints to the main ingredients. On a recent visit, he told us he was looking forward to an impending delivery of liquid nitrogen. The concept is visionary. To give you an idea: Vassos recently featured a vegetable “garden” with layers of potato risotto, porcini mushroom “soil,” and micro-vegetables and a pastry rake planted into the mushroom dust. We’ve all heard the motivational speech a million times before. It goes something like, “Exercising is half the battle.” The problem for many is exercising on a consistent and long-term basis. The key is to find your fix. From alternative yoga sessions to pullovers on a trapeze, there is an ideal exercise option for every person. It’s a matter of finding it. Yoga, with its physical and mental disciplines, has been a favorite for centuries. The gentler form of exercise is offered everywhere. Best of all, there’s a yoga for everyone—Hatha yoga, Ashtanga, Bikram—and if there wasn’t, there is now. At the JCC North in Palm Beach Gardens, HypYoga helps align the mind with the body and its behaviors. This next-generation workout combines the expansive full-body poses and deep breath work of yoga with hypnosis, which allows the participant to reach a heightened state of awareness and tap into a more relaxed state. “Some of the benefits of

It’s a strength and conditioning system built on constantly varied, functional movements practiced at a high intensity. “The workouts are constantly varied, relatively short and totally scalable for all levels,” says Sarah Bowling, owner of CrossFit Delray Beach. You wouldn’t put low octane gas in a Bentley and expect it to run smoothly, so why would you load up your personal machine with unhealthy or processed foods? While we all know that maintaining a healthy diet can stave off obesity, type 2 diabetes, heart disease, high blood pressure and certain types of cancer, it might surprise you to know that a healthy diet complete with certain “superfoods” can actually make you look younger. 70

What dermatologist Dr. Nicholas Perricone FACN has discovered during his 25 years of research on aging is that a low-grade inflammation in the body on a cellular level causes the aging process and also age-related diseases. “I found out that foods are a huge factor in either creating or preventing inflammation in the body,” he says. “They’re very powerful and act almost like pharmacological agents. I started looking at foods, and came up with a list of superfoods that fell into the antiinflammatory category, but they also fulfilled other nutritional requirements that are very important.”

Citrus fruits and cruciferous vegetables are good sources of collagen-building vitamin C.
The key to fighting off free radicals in the environment that can damage the skin (sun exposure, pollution) and cause inflammation at the cellular level is antioxidants and phytonutrients. “Phytochemicals are chemicals found in food that are not vitamins or minerals,” says Christine Bandy, a registered dietitian and nutrition therapist based in Palm Beach Gardens. “They are these other separate ‘super chemicals’ that also help in disease prevention, and give you the same type of assistance that antioxidants do.” Blueberries pack a lot in their tiny packaging—they are one of the greatest sources of antioxidants (only the açai berry has more) and they have great anti-inflammatory properties. They also fall under Perricone’s “brain/ beauty connection.” Blueberries increase brainpower, restore balance and improve memory. “If something is therapeutic for the brain, it works on skin because the brain and skin are both derived from the same level of tissue [in the body].” Bandy concurs. “The entire berry family is super antioxidant and phy72

tochemical,” she says. “They’re full of vitamin C and vitamin A. These are the things that are going to be most protective against cellular damage. [They] protect against sun exposure, and help prevent any kind of skin breakdown and help with regeneration.” Vitamin C in citrus fruit can make your skin look amazing. “You have to have vitamin C to build collagen,” says Perricone, author of Forever Young (Simon & Schuster, September 2010). Collagen and elastin are crucial for healthy, youthful skin. These fruits also contain powerful antioxidants that help protect lung function, boost the activity of detoxification enzymes in the liver and lower cholesterol levels. Also great sources of wrinkle-reducing vitamin C—kiwi (eat the skin, too) and sweet potatoes. A great way to enjoy fruit is to mix it into plain yogurt and kefir, which Perricone likes “because they have the healthy bacteria that change the gut flora, and we now know that your gut flora can determine your total inflammatory load in your body.” Also, both are rich sources of calcium, which is needed to help preserve and build strong bones. “You get better effects in terms of bone density with fermented milk products versus straight dairy products,” he says. Your mother was right. It’s important to eat your vegetables, especially if they are the cruciferous kind, like broccoli, cauliflower, Brussels sprouts and watercress, which are chock full of vitamins C, K and A (beta-carotene), as well as chemicals called indole-3-carbinols, which can help regulate protective cell enzymes. “If you have a watercress salad at night, you’re doing more for your body than you can absolutely begin to imagine,” Perricone says.

Former President George H.W. Bush famously proclaimed his dislike of broccoli, but he might change his tune when he hears that cruciferous vegetables, like broccoli and bok choy, are not only rich in bone-building calcium, studies also have shown that the phytonutrient sulforaphane in broccoli has powerful anticancer properties. Fiber helps to fill you up, and helps you lose weight. The fiber in beans and lentils “helps the body with regulation, not to mention it’s a cholesterol-lowering fiber,” Bandy says. Beans and lentils also are “low on the glycemic index,” Perricone says. This means they do not cause a rapid rise in blood sugar when eaten. By keeping blood sugar stable, and also being anti-inflammatory, they are key to preventing dull, dry skin and hardto-lose body fat. Speaking of fat, it is important to incorporate some in your diet. This does not mean you get a green light to load up on french fries. “Good” fats help the body absorb nutrients from fruits and vegetables, keep cells supple, and skin glowing and wrinkle free. “People that I’ve seen in my office that don’t get enough fat, their skin is very dry,” Bandy says. Extra virgin olive oil is a good fat. It contains oleic acid, which helps the body absorb essential omega-3 fatty acids and, according to Perricone, “is vital in keeping the outer portion of the cell supple, thereby allowing nutrients to enter the cell and wastes to exit.” EVOO also contains an antioxidant called hydroxytyrosol, which “decreases our risk of cardiovascular disease and aids in keeping our skin more youthful.”
Speaking of good fats, Wild Alaskan salmon has high levels of omega-3 fatty acids, which are essential for beautiful skin, brain health and maintaining a good immune system and bone mass. Also, the pink color of salmon comes from astaxanthin, a powerful carotenoid antioxidant with potent anti-inflammatory properties, which can improve eye function, and some studies show it to improve the appearance of fine lines on the face. Omega-3s also can be found in other cold-water fish, like mackerel, sardines and herring.
Nuts are another source of good fats. Almonds are rich in antioxidant vitamin E, which helps defend against sun damage. Flax seeds and walnuts are packed full of essential omega-3s. You are never too old to start getting healthier (and better looking) by improving your diet and incorporating more superfoods, while still making variety your spice of choice. “The key, even with superfoods, is you want to cycle and get as much variety as possible, because there really is no one superfood that is going to give you everything,” Bandy says. ◆ PALMBEACHILLUSTRATED.COM | JULY/AUGUST 2010

DESIGNER LYMPH NODES Moffitt Cancer Center and Scripps Florida have been awarded a five-year, nearly $2million grant from the National Cancer Institute (NCI) to design lymph nodes for cancer immunotherapy. Moffitt is a NCI comprehensive cancer center, and Scripps Research Institute is one of the world’s largest independent, nonprofit biomedical research organizations. During cancer, the patient’s immune system is damaged or significantly weakened by the disease or the treatment used to eradicate it. The two teams have collaborated to create human lymph nodes to help restore anti-tumor activity to the immune system of cancer patients. A clinical trial is in progress with 12 patients diagnosed with melanoma. The researchers hope these efforts can lead to cures for some cancer types and a variety of infectious disease, and to improve the weakening immune system due to aging.

clinical research and how-to lessons about insulin injections and glucose monitoring. The center offers individual and group classes in English, Spanish and Creole. There also are children’s group classes that use positive peer relationships to achieve goals. “We also provide education for those individuals and families who are at risk for diabetes,” says Dr. Mary Vaccarello-Cruz, a pediatric endocrinologist and the medical director of the center. “I emphasize families at risk because in essence the epidemic of diabetes that we are currently experiencing in this country is family- and culturally based and parallels the obesity epidemic.” The goal of the center is to teach families and their children to adopt healthy lifestyles that incorporate good eating habits and daily exercise in order to slow and possibly stop the epidemic of obesity and diabetes. “In essence, we are trying to change a society that has become dependent on technology and immediate self-gratification that has led to the demise of our health as we knew it 30 to 40 years ago.” (561-803-8880, palmhealthcare. org/diabetescenter) The Palm Beach County School District also is working to solve the obesity dilemma. Led by Steve Bonino, director of the School Food Service (SFS) department, and Paula Triana, nutrition and
wellness promotion assistant director, the district’s Wellness Promotion Task Force serves as a forum for the district and community partners in promoting healthier lives and seeks to encourage a proactive approach to address health and wellness. “[Our goal] is definitely to partner and collaborate with internal and external partners to improve lives of our children and the community as a whole,” says Triana. “There’s still much ground to improve on in the future but thus far the changes have been wonderful.” Since its creation four years ago, the task force, with help from the SFS department, has implemented food and exercise programs and changes to the menu. A partnership called Farm to School between SFS and R.C. Hatton Farms in Belle Glade was developed to provide all school levels with fresh produce weekly for lunches. There’s also the Commit 2B Fit, which encourages middle school students to record their physical activity, fruit and vegetable intake and academic assignments in a customized academic and wellness journal. The Kids Read-n-Run Marathon has elementary students walk or run 25 miles in increments over three months and requires students to read 15 minutes each day. The last 1.2-mile is run December 4, the day before the Marathon of the Palm Beaches.

THE FEMALE ALTERNATIVES In 2006, 569,000 women in the United States had hysterectomies according to the American Congress of Obstetricians and Gynecologists. However, experts say that two-thirds of the hysterectomies performed every year may be unnecessary, and that there are different approaches that women should consider that are less complicated and have shorter recovery times. Dr. Jennifer Daif is board certified and a fellow of the American College of Obstetrics and Gynecology who practices at the Delray OB/GYN Associates in Delray Beach, and she suggests a simple procedure known as endometrial ablation for abnormal uterine bleeding. The procedure uses a lighted viewing instrument to destroy the uterine lining. “In the past, hysterectomy and medication was the mainstay of treatment for abnormal uterine
bleeding,” says Daif. “These techniques can be performed in the office with oral pain medication therefore minimizing the length of time in recovery, and these procedures carry a satisfaction rate in the ninetieth percentile.” For female sterilization, Daif performs Essure, a non-reversible outpatient procedure. “Now we can perform sterilization in the office using a hysteroscopic approach, [where] a camera goes through the cervix into the uterus. Through this, a device is placed into the fallopian tubes, which causes scarring and occlusion of the tubes.” There also is a new sterilization procedure called Adiana that recently was approved by the Food and Drug Administration and also works by stimulating your body’s own tissue to grow in and around tiny, soft inserts in the fallopian tubes. Small-batch distilleries are producing quality spirits with locally grown ingredients. BY MARK SPIVAK

The locavore movement, which places emphasis on consuming locally grown food and ingredients, has spilled over into the world of spirits. Currently, there are slightly more than 200 craft distillers in the United States, and some of them have been around for decades. In 1981, Ansley Coale met displaced Cognac master Hubert Germain-Robin; the next year, Robin found an antique still and shipped it to Coale’s ranch, thus the beginning of Ukiah, California’s Germain-Robin. They pioneered the concept of making brandy from high-quality wine, and were the first to distill their product from Pinot Noir (as opposed to the standard Colombard or Ugni Blanc). Their Fine Alambic Brandy ($45) was called “the best on the planet” by one reviewer, and their Select
Barrel XO ($100) beat out the $1,500 Richard Hennessy in a blind tasting. There are more and more distilleries producing organic vodka in the United States: TRU, Shadow and Square One (California), Prairie and Crop (Minnesota), Liquid Ice (Idaho), CapRock (Colorado) and Ocean (Hawaii), to name a few. Their fresh, pure taste has caught the attention of consumers, and many of them are entering mainstream distribution around the country. While they may not qualify as micro-distilleries, they are miniscule in size compared with Smirnoff and Absolut. Connoisseurs are becoming familiar with Philadelphia Distilling, which turns out a trio of handcrafted spirits from local ingredients. Their Penn 1681 Rye Vodka ($20) is made from grain grown in
Southeastern Pennsylvania. Distilled five times, Bluecoat American Dry Gin ($25) is made with organic juniper berries and crafted in a custom-built copper pot still. Vieux CarrĂŠ Absinthe SupĂŠrieure ($60), produced by master distiller Robert John Cassell, appeals to one of the current spirits trends in America. Tuthilltown Spirits, in the Hudson Valley, proudly bills itself as New Yorkâ&#x20AC;&#x2122;s first legal whiskey distillery since Prohibition. They turn out no fewer than eight small-batch whiskies, the best known of which is their Hudson Baby Bourbon Whiskey ($50). In addition, Tuthilltown produces Spirit of the Hudson and Heart of the Hudson vodkas, made from Hudson Valley apples and apple cider respectively. In Utah, of all places, the High West Distillery is breaking new ground. Located at 7,000 feet in the Wasatch Range of the

Rockies, High West bills itself as â&#x20AC;&#x153;the worldâ&#x20AC;&#x2122;s only ski-in distillery and gastro saloon.â&#x20AC;? In fact, it is Utahâ&#x20AC;&#x2122;s first distillery since the 1870s and produces three whiskies and two vodkas. Theyâ&#x20AC;&#x2122;re best known for their Rendezvous Rye whiskey ($50). How small can the small-batch distilleries
get? Stranahanâ&#x20AC;&#x2122;s, in Denver, produces just 12 barrels of their Colorado Whiskey ($60) each week, compared to thousands of barrels weekly for the large outfits; even so, Stranahanâ&#x20AC;&#x2122;s is now available in 30 states. It all started when liquor aficionado George Stranahan and volunteer firefighter Jess Graber discovered that they had a love for fine spirits in common, and the project grew from there. In Woodinville, Washington, an area best known for wine, Pacific Distillery makes two products, Pacifique Absinthe ($64) and Voyager Dry Gin ($40), both distilled in an authentic nineteenth-century copper pot still using Old World artisan techniques. Made with organic botanicals, the Voyager Dry Gin is intensely aromatic, with scents of fresh herbs and orange zest. It is excellent in a martini, and also shows its best when combined with a natural mixer such as Q Tonic or Fever-Tree. â&#x2014;&#x2020;

Located one block from the water in the new Seagate Hotel & Spa in Delray Beach, the interior of the Atlantic Grille is dark, cool and modern, accented by slate floors and softened by large, curving booths. An open kitchen faces the lively bar area, and a covered outdoor terrace provides a view of Atlantic Avenue. No matter where you sit, the comfortable atmosphere puts you at ease. Best described as an American seafood restaurant, the menu also offers something for everyone—steaks, pasta dishes, sandwiches and main course salads. The kitchen is in the creative hands of Executive Chef Adam Gottlieb; he is assisted by Jason Berg and John Thomas. Dinner begins with an unusual house-made fish dip ($9), spicy and chunky, studded with chucks of salmon and tuna. Garnished with bagel chips and pickled jalapeños, the dip is low on mayonnaise and high on flavor.

Crispy fried oysters ($12) are lightly breaded and fried to perfection, accompanied by a cooling tropical fruit salsa and finished with coconut sauce. Among the entrées, there is pristine pan-seared yellowfin tuna ($28), sliced and seared rare, placed on top of udon noodles and bok choy. The dish is enlivened by a spicy mushroom broth, flavored with cilantro and studded with slices of fresh shiitake mushroom. Maine lobster pot pie ($34) arrives in a ramekin topped with puff pastry and a large lobster claw. The interior resembles a lobster bisque on steroids—rich and filled with fennel, celery root, corn and chunks of lobster meat. There are two fresh catch specials daily, and any carnivore of your acquaintance is bound to be pleased by the short ribs, New York strip or center cut pork rib chop. We choose an interesting dessert—a butterscotch and
is the occasional miscue (plates removed before the entire party is finished); the staff seems to have trouble changing gears when the room suddenly goes from sparse to full, and could benefit by assistance from dedicated management. They are friendly and accommodating, however, and will provide menu recommendations when asked. Even though the Seagate Hotel & Spa was constructed from scratch on the grounds of a former parking lot, it somehow manages to exude the atmosphere of a restored, century-old Victorian building. This atmosphere extends into the restaurant, and makes dining a remarkably pleasant experience. â&#x2014;&#x2020; white chocolate bread pudding ($8)â&#x20AC;&#x201D;which is nothing less than stunning. Warm and flavorful, the dish strikes a perfect balance between the earthiness of the bread and the sweetness of the chocolate and butterscotch, and rests in a pool of rum Ă lâ&#x20AC;&#x2122;anglaise. The wine list runs close to 400 selections, and includes both mass-market bottles and those that are slightly harder to find. Several dozen wines are offered by the glass. The bright acidity of Kim Crawford Sauvignon Blanc from New Zealand ($36) is just the right match for the food. Service is competent, rather than polished or personal. There

Nothing is as bad, and negative to your overall appearance and ego, than an out-of-proportion torso and lower abdomen. Other people are unfortunately drawn to the defect rather than to the inner beauty of the individual. Compounding this problem is usually an inability to keep your abdomen flat, especially after a full meal. A lower abdominal bulge that will not go away, even after endless sit-ups. There is usually loose skin with significant stretch marks, especially after pregnancy or previous surgery. Often there is excess fat in the flanks and back. Even a compounding abdominal incisional hernia can be part of this “tummy” experience so common to women – even showing up in men. Often the gluteal area has lost its fullness; and now there is a “flat bottom” with a full rounded tummy!
WHY CIRCUMFERENTIAL TIGHTENING WORKS Usually removing loose skin alone cannot solve the problems stated above. To achieve results as seen in these dramatic preop and postop photos, newer and advanced, integrated procedures are employed. Often a “beer belly” as seen above can be completely corrected in a special modified surgery. Often, tightening abdominal muscles will provide internal support that will last a lifetime. This can be achieved by correcting any hernias that are present, as well as lipoplasty of the anterior and posterior hip rolls, low back and the entire abdomen. The circumferential contouring can create a dramatic improvement. The last step will be creating a more natural oval shape to the umbilicus (belly button) which will enhance a natural contour of the abdomen. With new fat grafting techniques, a fuller, more youthful gluteal (derriere) can be created that lasts!
CHALLENGES Dr. Bafitis has taken this surgery to a new level with his “BILA” procedure. By combining liposculpture, fat grafting, circumferential tightening, and abdominoplasty, this procedure can now be done with only IV sedation, or in selected patients monitored “awake” sedation. Patients no longer have to be bent forward for weeks and have worries about excessive tension at the incision line. The patient is usually up and walking within a few days (24-48 hours). Drains are limited and often not necessary. The patients and results speak for themselves.

CULTURE v WOVEN TIME When it comes to glass art, the sky is the limit. The craft has moved forward from blowfish bowls to abstract sculptures and chandeliers. One of the latest tricks is woven glass. At the forefront of this movement are Eric Markow and Thom Norris. The artists combine art, science and alchemy to hand-weave glass into unlikely textured shapes. By manipulating the temperature throughout the creation process, Markow and Norris are able to weave multiple colored layers and thicknesses together. The result is sculptures that have the tactility of fabric and a vibrant mix of colors. CULTURAL CARNIVAL Delray Beach is preparing for a night of culture, cuisine and celebration when the Morikami Museum and Japanese Gardens hosts the 33rd annual Bon Festival. The popular event is inspired by Japan’s three-day Obon festival honoring the spirits. “The Morikami’s Bon Festival is a unique place of commemoration and celebration,” says Kizzy Sanchez, marketing and events manager. “Visitors from all over the country choose this event to remember their loved ones while enjoying an evening unique to the Japanese culture.” The Bon Festival features a street fair with games and booths, traditional folk dancing, and taiko drum performances by Fushu Daiko. Floridians get a taste of Japan with pan-Asian cuisine and beer and sake at the Kirin Beer Garden. The Obon tradition of remembering ancestors will continue at sunset when guests can float purchased candlelit lanterns on Morikami Pond. A fireworks display concludes the festivities. Due to overwhelming popularity, this year’s festival will start an hour earlier, at 4 p.m., and run to 9 p.m., August 14. UNCHARTED ISLAND Artist and author James Gurney is the creative force behind the story of Dinotopia, a faraway civilization of dinosaurs and humans living peacefully together. Since the Birthday Pageant, James Gurney first book in 1992, Dinotopia: A Land Apart From Time, Gurney’s imaginative world has inspired three more tomes, a television miniseries, video games and now a traveling exhibition. “Dinotopia: The Fantastical Art of James Gurney” is on display at the Norton Museum of Art through September 5, featuring more than 50 original oil paintings. GURNEY: When I was about eight years old my parents took me to a science museum where I saw a life-size skeleton of an allosaurus. Do you create the story or the drawings first? The process of creating a book like Dinotopia means alternating the writing and picture-making tasks James Gurney in throughout the process. his home office Writing and illustrating seem like different tasks, but they’re drawing from the same imagination. Are your main characters based on anyone? There’s a little Richard Burton, Henry Stanley, Sven Hedin in [main character] Arthur Denison. I traveled to the Library of Congress to look at original explorers’ sketchbooks from the era before photography, when artists were required to document the flora, fauna, and architecture of newly discovered civilizations. What’s next for Dinotopia? I’ve been focusing on art instruction for the last two years, and after that I’ll dive back into Dinotopia and other fantasy projects that I’m writing and illustrating. We’ve also had interest from motion picture and theme park companies who want to develop Dinotopia, but I’m very careful to make sure it’s done right.
