FROM THE EDITOR

The Gift of KINDNESS

MEGAN DIPIERO

You had me at hello. And it wasn’t even the holiday season, when affability is expected. It was last February at the post office on Goodlette-Frank Road. I was visiting Naples from Florida’s east coast, where I’d lived for decades, and had popped in to mail a package to my niece in North Carolina. A woman in line noticed the address and asked where I was from, and here’s what surprised me: She was interested in the answer. A warm conversation ensued, one that would foretell similar chats after I moved west, and I was intrigued not only by the charm of this city but also by its generosity of spirit. December may be a month of bow-topped boxes and wish lists, but Neopolitans give of themselves all year round—to worthy causes that support the community and to complete strangers asking for directions. That kindness, a blend of sincerity coupled with self-assured achievement, is what captured me. I grew up in a military family and have lived around the country, but I’ve never moved anywhere on instinct until now. There’s an intrinsic grace here that I craved—a willingness to wave someone into your lane rather than blare the horn—and this relaxed civility is why many others have come to Naples, too. National surveys repeatedly rank the area as among the happiest places to live in the United States, but for me, it boiled down to gooey butter cake. This decadent dessert, a St. Louis favorite dropped off on my doorstep by hospitable new neighbors, sealed the deal that my new home was the right fit. Speaking of dessert, take a moment to feast your eyes on the festive creations whipped up especially for us by some of Naples’ top pastry chefs in “A Very Berry Holiday” on page 82. From Lexie Ward’s naked berry drip cake to Paw Mikkelsen’s tower of crepes, there are luscious layers to tempt every Neopolitan palate. Meanwhile, if you feel Christmas colors are best left for berries, explore the subdued hues of “Desert Bloom” dresses on page 62. From Gucci and Oscar de la Renta to Dior and more, designers are pairing soft floral prints with bold Western accessories for an unexpected contrast, not unlike Naples itself. As editor in chief, I want to bring my passion for Naples—with its small-town camaraderie and big-city cosmopolitan edge—to life in these pages. I welcome your input as my new journey begins, and I wish you the warmest of holiday seasons.

Students ages 6 and older can create a masterpiece by using form, technique, heat, and gravity to shape glass.

021_INSIDEROPEN_1218.indd 21

Before dusting off that box of go-to ornaments to trim the tree this month, consider starting a new tradition and create your own yuletide art. Dale Chihuly–trained glass artist Conrad Williams is hosting glassblowing workshops on how to design an ornament or bowl. The Naples-based instructor takes participants through every step of the process, from choosing colors to forming the molten glass with shaping tools and your own breath. The best part? No experience is needed so anyone can be an artist. Classes are one-on-one and open to ages 6 and up. Workshops will be held Thursdays and Saturdays in December at The Ritz-Carlton, Naples, with daily classes taking place from December 13 to 22. Space is limited, and cost to attend is $99 per ornament session, $199 per bowl session. (conradwilliamsglass.com) NAPLESILLUSTRATED.COM | DECEMBER 2018

INSIDER Q&A: ZACK McDERMOTT

Mad LOVE

Zack McDermott is a public defender, writer, and bipolar gorilla. The author of Gorilla and the Bird: A Memoir of Madness and a Mother’s Love, McDermott is a tragic hero who feels no shame in telling the world about his psychotic breaks, depression, and manic episodes. On the contrary, he candidly recounts being on a subway platform in Brooklyn, shirtless, barefoot, crying, and convinced he was being filmed for a reality television show. Dazed and confused, he was transported to Bellevue Hospital’s locked psychiatric ward, the very same one that housed his insane clients, those deemed unfit to stand trial. With grace and gratitude, he credits his mother, Cindy Cisneros-McGilvrey, for keeping him grounded in reality. “He is my son, and I would never give into the idea that he was not going to return to his right mind,” she says. McDermott and his mother will share their story at the National Alliance on Mental Illness’ Twelfth Annual Hope Shines Luncheon on December 7 at Grey Oaks Country Club, Naples. McDermott recently spoke to NI about his deeply personal and intimate memoir. (namicollier.org) NI: Where did the idea of writing this book come from? McDermott: I’ve always wanted to do something creative. When I first wrote Gorilla and the Bird: A Memoir of Madness and a Mother’s Love, I had just gotten out of the hospital after my first psychotic break. I was on medical leave and suffering from severe depression and agoraphobia and was still processing it all. I wrote 300 pages in a couple of months, put them in a manila folder and forgot about them. I later decided to get serious about writing a book, and it took me about eight years from start to finish. It seems like the book is an ode to your mom. Did you have that in mind from the onset? I didn’t sit down to write a book about my mother, but it ended up becoming that in a lot of ways. Its story is from the point of view of someone who’s gone through a severe psychotic break and takes you inside the mania and psychosis. Then you have a profile of this superhero, my mom, who is an inner-city schoolteacher and a single mother raising three kids. She started as a grocery store bagger and went on to earn a PhD in education. She was living paycheck to paycheck in Wichita, Kansas when she found out her 26-year-old son, who had just graduated

22

from a top law school, was found disoriented on a New York City subway platform and taken to a psychiatric ward. After hearing I was in Bellevue, she put her Wichita life on hold and came to the hospital for every minute of every visiting opportunity. It couldn’t have been easy for her to witness people screaming, fighting, getting tackled, and injected with tranquilizers. But even so, she never gave up on me. How does your mom inspire you? I’ve been totally shaped by her. Even with little money, she would welcome anyone who needed a place to go into our home. She started an afterschool tutoring group, and we would have the Crips and Bloods sitting around our dinner table while my mom helped them with their homework. She instilled in me an oversized empathy. I think it’s pretty contagious—in a good way. What message do you want readers to take away from this book? One of the biggest aims in my book is to show people what mental illness is and why you should have empathy for [those] going through it. I feel as if I won the lottery with having a good job, a spot of creative talent, and people who support me. Not everyone has that. We have to change the way we approach that problem in society.

Cindy Cisneros-McGilvrey nicknamed her son, Zack McDermott, Gorilla because of his hairy body and surly demeanor. He calls her Bird because she moves her head in choppy semicircles when her feathers are ruffled.

Held in the mornings and at sunset, these half-day tours are sure to include visits by many birds, though alligators (and maybe even a bobcat) could make an appearance, too. Wear closed-toed shoes, sunglasses, and a hat; everything else will be provided. Bonus: The tour company was started by a former U.S. Park Ranger. (ecoeverglades.com)

CLYDE BUTCHER

1. Step into the swamp. Master naturalists lead private swamp walks to experience the primitive pull of nature that landscape photographer Clyde Butcher has long found in the Everglades. The one-and-ahalf-hour trek begins behind Butcher’s Big Cypress Gallery, which houses his breathtaking River of Grass photography. Come prepared to navigate knee-deep wetlands under the cover of ancient cypress trees. Wear lightweight pants, a long-sleeve shirt, and old sneakers—and don’t forget bug spray, sunscreen, bottled water, and a change of clothes. This outing is a must for adventurers and nature lovers alike. (clydebutcher.com)

3. Explore by airboat. While there are several airboat tours across Southwest Florida, Speedy’s Airboat Tours in Everglades City uses small airboats with a six-passenger maximum for a more personalized experience. This family-owned company also has access to a private section of the Everglades that includes mangroves and grasslands. Be on the lookout for a glimpse of local fauna, as well as possibly alligators, manatees, and dolphins. The one-hour tours run throughout the day beginning at 9 a.m., with the last excursion departing at 4:15 p.m. (speedysairboattours.com) 24

Building on Memories

An Old Naples residence combines past and present in one charming package By Mary Thurman Yuhas Photography by Naples Kenny

035_ABODE_1218.indd 35

When Molly Hoover, president of Naples-based Molly Hoover Design Group, was commissioned to design this new single-story, three-bedroom residence, she already had a history with the clients. Ten years earlier, Hoover designed their condominium, and much of that expression has transitioned into the new project. “The husband spent his youth vacationing in Naples and wanted the house to be reminiscent of his family’s vacation home,” Hoover says. “We brought over a lot of custom furniture and memorabilia from their condo.” NAPLESILLUSTRATED.COM | DECEMBER 2018

A seamless feeling permeates the home, with the kitchen opening to a great room that flows into the outdoor entertaining area via a bank of sliders. 36

Located near Old Naples and the beach in The Isles of Collier Preserve, the Cape Cod–style residence was rich in architectural integrity. To heighten its coastal feel, Hoover augmented the white woodwork with additional trim and gave the oak floors an aged patina. Walls were painted a pale mushroom gray to complement the light woods throughout. To break up the long, narrow foyer, Hoover added more millwork to the doorways and a large mirror for reflection. In the interest of creating a thread between the past and present, she flanked the console with two iron cranes that stood in the husband’s parents’ Florida home. In the great room, Hoover reupholstered the sofa and side chairs with a modern take on a houndstooth fabric. A large clock with a nautical feel is another nod to coastal living, as is the mermaid standing next to the television cabinet. The mini propeller is a lighthearted reference to the husband’s father’s days as a pilot. Since the seaside lifestyle is based on spending a great deal of time outdoors, the room connects to the exterior via a long bank of sliders. The pool just beyond the outdoor entertaining area is enriched by a cascading water feature that pleasantly obscures sounds. The open kitchen connects seamlessly to the great room through a muted color palette and shimmering accents, like the motherof-pearl on the marble backsplash. The owners enjoy giving their

homes a sense of place with locally sourced items, including the oil painting 360 Café, created by Naples artist Paul Arsenault, that hangs above a bar cart in the kitchen. Another oil by Arsenault, View from the Pier, is displayed in the dining room. In an interesting variation on seating, Hoover used two love seats and four chairs to create an intimate conversation area around the square table. Also noteworthy is the whimsical orb chandelier—a metal cage filled with sea glass–colored balls. “When the light is on and it goes through the glass, it is a fabulous effect,” the designer says. Hoover’s neutral palette of beiges and grays is enhanced by pops of blue and white in select rooms. In the den, for instance, she has introduced a navy sofa and chair with white piping, a blue tartan ottoman used as a coffee table, and blue paisley curtains. The look is very traditional and suggestive of island living. Similarly, in a guest bedroom, Hoover has combined bamboo furniture with blue and white bedding and draperies, creating a warm, Colonial look. The dresser is from the clients’ former home and the decorative objects were sourced during a trip to Africa. The coconut-stained furniture in the master bedroom was custom made in a transitional style. The look here resonates with the coastal vibe but has just enough formality to feel elevated. Hoover accomplished this with elegant fabrics, unusual accessories such as intricate paper art, and a splash of cool, oceanic color. “I used a classic toile fabric with aqua so the look isn’t too beachy and is a little different,” she says. A jute rug and coral-like lamp bases add to the relaxed but upscale feel and imbue the space with a sense of tranquility. The master bath is equally calming yet elegant. Hoover is a big fan of wallpaper in bathrooms, as is evident in this space, as well as in the guest bathroom and powder room. “It brings in a little pattern

without using artwork,” she says. To keep clutter down in the master bath, she placed a tower on the counter between the two vanity mirrors. “This way, everything is neat, and it’s nice to have personal items at eye level instead of in a drawer,” she notes. For those who reside along Florida’s western shores, the outdoor living area is an all-important aspect of the home. Here, the exterior space is as functional as it is handsome. A retractable power awning extends 12 feet for additional sun protection—a must on those sunny

days—while a dual-level pool deck looks distinctly resort-like. A landscape ClearView screen, which has no bars on the vertical portions, provides unimpeded views while offering protection. Adjacent to the pool, an outdoor living area is one of the most popular parts of the house. A stained cypress ceiling adds richness to the seating and dining areas, which are comprised of rattan furnishings and blue-and-white fabrics. The most successful homes are the ones that honor the clients’ personalities and effectively embrace all that’s current without disregarding the past. “This home is not all new and shiny,” Hoover says. “It comes with a lot of history. I love it.” «

LIGHTING the Way

Shine brightly with these designer tips for establishing radiant indoor and outdoor spaces Within the field of lighting design, Nathan Orsman of Orsman Design Inc. is considered an artist—sculpting with light to create intrigue in both interiors and exteriors. His canvases include luxe residences in New York, Connecticut, California, St. Maarten, and our own Southwest Florida. Here, Orsman shares insight into his design process and tips for achieving excellence in illumination. (orsmandesign.com) NI: What can lighting design do for an interior space? to minutely understand the area we are illuminating: Is it task-driven, such as a kitchen or gallery? Is it leisure-driven, such as a living or music room? Or, is it intimate, such as a bedroom or spa? This determines whether we use high hats, dome lighting, under-cabinet lighting, recessed, or any of

all outdoor staircases, steps, and angled terrains are safely lit for ease and safety of entertaining. Secondly, people want to see each other. We avoid down-lighting as that casts unflattering shadows, so we use a variety of in-ground fixtures and sconces where appropriate. We have also mastered the lighting of trees and shrubbery along with outdoor pieces of art. What mistake do people make when lighting their outdoor space? Not having enough lighting. Sounds simple, but many people really do not realize just how much it takes to cohesively light an outdoor environment. Everything from the walkways to the grill to the pool area all need to be clearly lit, while also not forgetting that they need to be attractive fixtures. Budgeting for outdoor lighting is something people often overlook but in hindsight really need to do. What new technologies are you loving? Now all filament bulbs are LED, so we’ve embraced that cleaner, more efficient light. Also, we can now MICHAEL STAVARIDIS

What element of a home’s interior design most influences the lighting you choose? First is the layout to see how light will flow from room to room; we never want there to be an imbalance. Secondly, is the home modern, traditional, or a mix? We can create products for every single style, and that really is half the fun of this profession. What’s the trick to establishing a vibe conducive to entertaining? The key to successful entertaining is to make your guests comfortable. We start with warm, flattering lighting, such as dimmed lamps and an accent center fixture like an artistic pendant. We love under-cabinet lighting in the kitchen because it is indirect on faces but helps keep the counters functional. My favorite lighting option for entertaining would be low light (candles and fireplaces included), so that the room comes in on itself [and] feels intimate and inviting. What are the goals of outdoor lighting? First off, practicality and safety. Often times, people entertain at night, and we need to make sure

What’s the most effective way to use spotlights in Florida backyards? Shine lights away from wherever you are sitting and be sure to highlight the vertical of the property: hedges, trees, sculptures, etc. Also, if you want to light the lawn, do it symmetrically. What’s your favorite unique lighting touch? Using more fixtures with less wattage. It creates a warmer, more balanced atmosphere, as opposed to just having a couple of super bright lanterns scattered about.

onald Matheson, it could be said, was the Henry Flagler of Scotland. In the early 1900s, the head of the Caledonian Railway Company sought to build a destination hotel for wealthy train travelers (sound familiar?), a place he deemed “a palace in the glens.” In Perthshire, on a long stretch of moorlands in the shadow of the Ochil Hills and the Trossachs, he laid out two master

Warslin’ Lea (Wrestling Ground), and the reaction will likely be a combination of exaltation and vexation (ah, the sweet dichotomy of golf). Since those early days, a third course, the PGA Centenary, has been added. This tour de force by Jack Nicklaus has hosted the 2014 Ryder Cup and is due to welcome the 2019 Solheim Cup. If you can avoid being distracted by the awesome panorama that is the Scottish countryside, this is some of the best golf anywhere. Gleneagles has come a long way since Matheson’s day—though you can still arrive by train to the hotel’s own station. Now owned by Ennismore, the legendary property features an

extensive lineup of country pursuits, including shooting, horseback riding, off-roading, fly fishing, archery, and falconry. For a full dose of British tradition, put on Wellingtons, chaps, and Barbour coats (all supplied by the British School of Falconry) and spend a day in the woods with a trained falconer and the BSF Harris hawks. There’s something very Zen about walking beneath a leafy canopy at the edge of a glen, releasing hawks to hunt, and working with them in tandem to locate game. It doesn’t always yield a reward, but it does deliver a closer connection with the birds of prey. Considering the rugged terrain, it could be argued that Scotland is one of the best spots in the world for off-roading. Jump into one of Gleneagles’ Land Rover Defenders and explore

The Junior Off-Road program puts kids in mini Land Rovers and teaches them driving skills on a safe but challenging course. Adding to Gleneagles’ allure is the recent large-scale renovation that transitioned the property to a modern country style—a combination of tradition and innovation. Suites and rooms have been refurbished to reflect elegance and comfort, seen in gorgeous tailored craftsmanship, a new take on typical country fabrics like velvet and leather, and generous floor plans. The Crescent and Grand Pavilions are surrounded by glass for (sometimes) sun-drenched views of Belgravia and St. Paul’s Church, and feature outdoor terraces and gardens that are ideal for cocktailing among the fabled London rooftops. The restaurant is known for its use of local ingredients like Scottish lobster, Perthshire roe deer, and highland lamb, among others. Equally devoted to Scottish heritage is the Strathearn, which offers a fine dining, silver service experience. In Scotland, aperitifs and digestifs are essen-

MEMORY Makers

Beyond luxury, Acqualina’s Acqua Experiences inform and delight By Daphne Nikolopoulos

In addition to its Acqua Experiences, Acqualina recently unveiled a new penthouse suite that includes a dining room and a large terrace with a private saltwater swimming pool.

As the demand for experiential travel increases, top resorts are repackaging guest activities into lifestyle offerings. For example, it’s nice to have a lagoon-style pool, but providing scuba diving instruction with a PADI master in that pool is even better. The idea is to engage guests and help them create memories, which is the real currency of travel. Acqualina Resort & Spa on Sunny Isles Beach jumped on that bandwagon early and now has a catalogue of at least a dozen Acqua Experiences that vary from yacht cruises to etiquette classes for children. Most are expert-led, and some are quite exclusive. For example, A Taste of Miami exposes guests to the best of the local food scene, including some hidden gems, with the guidance of a Miami food writer who understands the subtle nuances among Cuban medianoches. The private tour takes a maximum of four guests into Wynwood, Little Havana, and, of course, the beach for a sampling of everything from anticuchos to arepas, with a few craft cocktails thrown in for good measure. Any food tour really should visit Acqualina’s own Il Mulino and its new sister restaurant, AQ Chop House. Il Mulino is a southern copy of the New York Italian restaurant, including all the classics from the original and a couple of Miami-specific twists. AQ Chop House is more casual and bright, with seating both indoors and on the terrace overlooking the ocean. This is essentially a highquality steak house, but the crudos and seafood are equally enticing. Don’t miss the sushi (the AQ Roll with spicy tuna, salmon, and jalapeño is a good bet) or go all out and opt for the seafood tower, with oysters, crab, shrimp, and lobster. And trust us on this: Do not skip the truffle fries. Another guest-favorite experience is Spinning with the CEO. Deborah Yager Fleming can sprint and jump with the best of them during the spin classes at RedBike, which emulate the energy and pulsing lights of a night out in the city. For families, the Art of Social Decorum etiquette class teaches children good manners for any social environment, and Wildlife at Acqualina allows them to get up close and personal with rescued animals, as well as learn about wildlife conservation practices. A fun activity parents can share with their children is Painting by the Sea. Art instructors bring all

the supplies and participants bring the creativity, setting up easels outdoors and painting whatever strikes their fancy. Even those who have never painted before, and never thought they could, surprise themselves with their creations. In Miami, spending a day on the water is strongly encouraged, if not downright compulsory. Acqua Experiences’ three-hour private yacht cruise is a particularly memorable way to accomplish that. Not only can guests lounge, Champagne in hand, on the sundeck, they also have the opportunity to snorkel or dive around a secret sandbar, where dolphins, sea turtles, and tropical fish frolic. Another way to enjoy the water? Kayaking through Oleta River State Park on Biscayne Bay. Though Oleta is located in the city (hence its designation as an “urban park”), it feels miles away thanks to serene mangrove trails and a profusion of bird life. Acqualina guests paddle along the bay with a private guide to arrive at Sandspur Island for swimming and sunning. All in all, a perfect Florida day. Not all “wow” moments at Acqualina are part of the Experiences program. The resort’s newest feature is a 7,725-square-foot penthouse perched on the forty-sixth floor, with bird’s-eye views of the Atlantic. This is a presidential suite on steroids: five bedrooms, a huge living room with fireplace, a saltwater swimming pool with cabana guest house, a 10-seat dining room, a Crestron smart-home system—and a $20,000 per night price tag. The Perry Hotel in Key West prioritizes good food and gastronomic experiences By Mary Murray

Aesthetically, The Perry embraces a modern nautical design. It brings that same philosophy to food, and its main restaurant, Matt’s, serves great, approachable grub with fine-dining nuance.

While Duval Street is a brief shuttle ride away, it’s just as alluring to spend a long weekend at The Perry, sipping a craft beer poolside, indulging in a sunset cruise with Sunset Sail Key West, or snorkeling with charters such as Lost Reef Adventures. Those who wish to further explore the area can hop on a sightseeing adventure with Key West Jet Ski Tours and glide past such landmarks as Fort Zachary Taylor. Back at The Perry, memories are made among friends and food. At Matt’s, expect to see references to the island’s fishing-centric past, like a seafood tower presented in a tackle box. You’ll also notice a distinctly Lowcountry sensibility among these Keys ingredients, and that’s all courtesy of chef Kalen Fortuna. Here, the 30-year-old South Carolina native cooks crave-worthy dishes, including a cornbread mash that will occupy your dreams for weeks. Fortuna works closely with local monger Fishbusterz to ensure he’s serving the best.

COURTESY OF THE PERRY HOTEL

Just when you think you’ve seen every inch of Key West, another part of this southernmost paradise unveils itself. Case in point: Stock Island. This working waterfront for shrimpers and fishermen has gone through a reinvention and is now home to The Perry Hotel, a culinary destination for travelers and residents alike. Since debuting last year, The Perry has earned a reputation for its stellar food and beverage program that includes Salty Oyster, a relaxed bar with mammoth chicken wings, and Matt’s, a higher-end (by Keys standards) resto run by a talented young chef. The hotel’s industrial-meets-nautical design has garnered acclaim, as well. Named one of Architectural Digest’s 12 best designed hotels of 2017, The Perry feels like an elevated wharf building with interiors that marry ship-inspired wood and metal details with a cool, oceanic color palette.

Whether it be grouper, hogfish, or snapper, Fortuna and his team will present it in a memorable way. His must-try creations range from blue crab beignets accented with Old Bay aioli, to a seafood chowder that screams for bread to sop up every last drop. End the meal with one of his beer floats—think: a raspberry Lambic paired with ginger ice cream—around the firepit. The Perry’s culinary commitment extends to special events. It regularly hosts one-night-only dining experiences on property and collaborates with area businesses and chefs for off-site projects, like the Lost Kitchen Supper Club, a pop-up concept that celebrates local food history and products. But regardless of how you dine during your stay at The Perry, one thing’s for sure: Come hungry and ready to watch that “bikini body” grow. (perrykeywest.com) «

An indigenous split rock marks the entry to Simone and Scott Lutgert’s summer home in Linville Ridge, North Carolina. Here, in one of the most captivating geographical areas in the country, the view extends past Grandfather Mountain and into Virginia and Tennessee. “In the 1980s, Scott developed this breathtaking Linville Ridge Golf Course Community that has the highest elevation east of the Mississippi River, proffering magnificent views from every hole,” explains Lutgert. “Naples is our home, but we love coming here in the summer. Our family and friends are always milling around enjoying the laid-back atmosphere and the perfect weather.” A friendly community, majestic vistas, stellar climate, and lots of family activities is the recipe for la dolce vita, Appalachian style. —Carla Evans

MCLAREN’s magical open-top 570S Spider takes the sports car concept to the NEXT LEVEL By Howard Walker

We’re cruising for caffeine, hightailing it from Carmel, south of San Fran, down the Pacific Coast Highway to Big Sur. Thirty-odd miles of serpentine twists and turns. Frothy Pacific to the right, towering rock faces to the left. We’ll be ready for that cappuccino on the deck at Nepenthe. This should be a tourist sightseeing meander. Speedo stuck at 30, ready to dive into every scenic overlook, prepared to stop and gaze in awe at crashing waves and the marvel that is the Bixby Bridge. Not today. PCH is our racetrack, and we’re here to carve curves. Fast, open sweepers, pinch-tight rights and lefts. This is nothing less than an asphalt roller coaster with lumbering RVs and dawdling Dodges to act as chicanes. The stopwatch is ticking—not to measure zero to 60s, but to count down three hours. That’s our time allocation to sample and tame one 56

of the world’s most thrilling, most rewarding supercars money can buy: the $211,300 McLaren 570S Spider. This car has already won more accolades than Game of Thrones at the Emmys. In particular, it’s garnered applause for its laser-precise handling, slingshot performance, and single-minded focus on slightness and agility. This is arguably the most driver-centric convertible available. And now, it’s time to find out what this screaming projectile is all about. Press a hidden button and the swinging scissor door—deemed “dihedral” in McLaren speak—hinges upward. It’s a company trademark that never fails to draw “oohs” and “aahs” from onlookers. This is a low, low beast, so clambering in is never elegant. Yet dropping down into the beautifully formfitting driver’s seat feels like entering a fighter-jet cockpit. Only the oddly positioned seat controls (they’re out of sight and nearly impossible to reach) detract from an otherwise superb design. Now for a party trick: Toggle a center console switch and the twopiece composite top lifts, folds, and disappears. Gone in 15 seconds, and at speeds of up to 25 mph. Mechanical ballet at its finest. But enough with the features; the clock is ticking. It’s time to play. Prod the start button, listen to the raw snarl of the 570’s mid-mounted 562-hp

DINING

Savor THE SEA

CHARLIE MCDONALD PHOTOGRAPHY

Over the past decade, the health benefits of the Mediterranean diet have made previously exotic ingredients, such as octopus, seem almost commonplace. “I cook this dish the way my mom taught me,” says executive chef Mounir Loqman of his Moroccan octopus, easily the most popular appetizer on the menu at Veranda E in Naples. Loqman first poaches the octopus in a broth of star anise, bay leaves, onions, and cloves, then sears it in olive oil before coating it with a balsamic glaze. It’s served on a bed of sautéed vegetables and accompanied by both romesco sauce and a tomato-and-black-garlic jam. “The octopus releases all the fragrant spices when you put the glaze on it,” he says. “People love it because it’s exotic and something they don’t cook every day.” (hotelescalante.com)

BRAZILIAN-BORN HIGOR VALLE, A SOMMELIER AT D’AMICO’S THE CONTINENTAL IN NAPLES, HAS REACHED A MASSIVE MILESTONE IN HIS CAREER. HERE, HE CHATS WITH NI ABOUT HIS LOVE OF WINE AND HOW NOVICES CAN WORK TO REFINE THEIR PALATES. Originally from São Paulo, Brazil, Valle started as a server when D’Amico’s The Continental opened in 2014. He took charge of the wine program with the 2015-16 season. Recently he became one of 650 people in the world to pass the advanced level of the Court of Master Sommeliers. The grueling three-day exam, which focuses on tasting, theory, and service, is a prelude to the Master Sommelier examination itself. (damicoscontinental.com) NI: How has The Continental’s wine list changed since you took over? Valle: We had about 350 selections in 2014 and more than 500 now. The growth is due to the availability of great wines in Florida that you couldn’t get 10 years ago. We’ve been able to add producers such as Hervé Souhaut from the northern Rhône Valley, who makes fresh, pure Syrah. On the domestic side, there’s Tatomer in Santa Barbara County, who specializes in Riesling and Grüner Veltliner, or Arnot-Roberts, making small-

batch wine from some of California’s best vineyards. With Arnot-Roberts, I had to email them and persuade them to sell us some wine, and we started with six bottles. What are your personal preferences? I love Pinot Noir for its elegance and complexity. Syrah is the black sheep among the most popular grape varieties, but it’s truly magical when you taste a great one. Nebbiolo is the legendary grape of Barolo and Barbaresco: It has similar weight to Pinot Noir, with a blend of tradition and excitement. It’s important to start with the Old World [because] once you understand the classics and benchmarks, you can move on to variations in other regions. What’s the best way to understand those benchmarks? Try buying the same grape variety from different regions, then taste them side by side to appreciate the differences. If you want to understand Pinot Noir, for example,

compare bottles from California, Oregon, and Burgundy. It’s also useful to compare the same styles of wine from different price points to get an understanding of why certain wines are more expensive than others. For you, what’s the most interesting thing about wine? The exciting thing is that it’s always changing. There’s always a new region or grape variety, and every vintage is different. How can beginners learn more about wine? I spend a lot of time surfing Instagram; almost every major winemaker and wine personality has an account, and it’s fascinating to see what they’re posting and what they’re drinking. Of course, that doesn’t mean you should only drink what other people say you should drink. Don’t rely on critics, ratings, or points—trust your own palate, and you’ll discover what you like and dislike.

NEW & NOTABLE

Come Sail AWAY At Sails Restaurant, it’s all about the details. The marble used for the bar was imported from Greece, the stemware was hand-blown in Slovenia, and the Laguiole flatware is both elegant and utilitarian. An extra perk for female diners: Your handbag can recline on a custom leather purse holder until you’re ready to leave. The husband-and-wife team of Veljko Pavicevic and Corinne Ryan worked on the “pescatarian’s haven” for nearly three years before opening in February at the base of Fifth Avenue South. Joining them on this journey is executive chef Jacob Jasinski from Seasons, the award-winning restaurant at Ocean House in Westerly, Rhode Island. Most of the fish and shellfish are flown in daily from Europe, although the restaurant uses local seafood when it meets Pavicevic’s high standards. “We’re only interested in fish that has been out of the water less than 24 hours,” he says. Selections Veljko Pavicevic are pricey and tend to run out during the evening, and Corinne Ryan so it’s best to either arrive early or reserve your

fish in advance. Either way, it will be cooked on the cherrywoodburning grill and presented with lemon, sea salt, and olive oil. That organic, single-estate olive oil from Greece forms the foundation of many of the restaurant’s dishes, from the heirloom tomato salad to the grilled or sautéed seafood. “It’s the most important component in European coastal cuisine, for flavor as well as health,” says Pavicevic, who earned his stripes at The Ritz-Carlton in Naples and worked at many Ritz hotels around the country. He describes Sails as “a simple family restaurant.” While true in one sense, it’s also a distinctive addition to the local dining scene. (sailsrestaurants.com)

usy spouses and harried parents know the most time-consuming part of making dinner isn’t cooking but rather menu planning, shopping, and kitchen prep. Neighborhood Organics in Naples is expanding to become a local one-stop solution for that. In June, the family-owned business moved from one storefront to another in the Shoppes at Vanderbilt. Now, they have a complete commercial kitchen that allows them to prepare grab-and-go lunches and takeout dinners. “We specialize in feel-good lunches, such as baked ziti, mac and cheese, or quiche,” says Janet Blanchard, who owns the store with her sister, Jenny Breton. “Customers can buy one of our take-and-bake dinners, such as pecan-parmesan pork chops or chicken breasts stuffed with feta and sun-dried tomatoes, then just pop them in the oven and follow our instructions.”

Visitors can also dine at the café during breakfast or lunch. In addition to prepared foods, Neighborhood Organics sells a range of products from small businesses and solo entrepreneurs, offering them shelf space and visibility they may not get from grocery chains. Many of those vendors are drawn from the Farmer’s Market at the Shoppes at Vanderbilt, which the family manages every Saturday in season. “Our mission is to support the organic growth of small business entrepreneurs,” says Breton, who worked as a caterer before opening Neighborhood Organics. “I want to use my experience to achieve that in a community-oriented, storefront environment.” (239-631-6282)

FINAL CUT

«

Almost any chef will tell you a good knife is the one essential piece of kitchen equipment everyone should have. But what constitutes a good knife, and why? We asked a few local chefs to name their favorite choices for aspiring home cooks.

«

« Jason Goddard, Corporate Chef, Aielli Group: “Having a great knife is important because it cuts more precisely and makes the job easier. I recommend the Bob Kramer knives, which are amazing works of art. I use several of them, but I’d recommend the 8-inch chef’s knife for its versatility.” Kramer is one of 120 master bladesmiths in the U.S. He crafts knives by hand, using a blend of Japanese tradition and Western sensibility. His 8-inch Stainless Damascus chef’s knife by Zwilling J.A. Henckels is sold at Sur la Table for $400.

Zachary Labadie, Chef, Fresh Fit Foods: “Anyone starting out needs three knives: a chef’s knife that can handle any task, a paring knife for smaller tasks, and a serrated knife for slicing meats as well as bread. Wüsthof is the most common brand for beginners because of its affordability and durability. Mac knives will hold their edge longer.” Wüsthof is available at dozens of retailers including Williams Sonoma, Bloomingdale’s, and Crate & Barrel. Mac knives can be purchased at macknife.com. For either brand, an 8-inch chef’s knife can be found for under $150.

TASTE OFF THE VINE

Ready to POP

Celebrate this special time of year with an exquisite bottle of CHAMPAGNE By Mark Spivak

Lucky visitors to Veuve Clicquot’s Manoir de Verzy can sample La Grande Dame and other fine Champagnes.

Despite the continuing popularity of Prosecco, Champagne is still the world’s leading luxury drink. Each major Champagne house has its unique style and personality, and the nonvintage Brut is usually the best introduction (not to mention the bottle with the most accessible price tag). But there are times when only the best will do, and at those moments we reach for the tête de cuvée. If you’re feeling festive this holiday season, sample some of these tête de cuvée Champagnes currently on the market. Dom Pérignon: This was the first prestige Champagne to appear, with the 1921 vintage released in 1936. A varying blend of Chardonnay and Pinot Noir, it is the ultimate expression of the house of Moët et Chandon and a universal symbol of excellence. The style is ripe, forward, and accessible. Dom Pérignon 2006 ($165) has a rich nose with whiffs of lemon, lime, and melon. The wine is even more satisfying in the mouth, exhibiting a full-bodied array of stone fruit and citrus. The texture here is lush and soft; this is a crowd-pleaser rather than a bottle for wine geeks. It finishes long, with a touch of yeast and sweetness. Formerly known as the Oenothèque series, the Plenitude wines are special re-releases from the Moët cellars. The Dom Pérignon Plenitude Brut 2000 ($325) has a complex nose with glimmers of ginger and candied pear mixed with toasty vanilla. It’s complex in the mouth as well, exhibiting a Sherry-like overlay on a background of freshness. Amazingly youthful at 17, it ends with intertwining notes of ripe pear and stone fruit. La Grande Dame: The luxury cuvée of Veuve Clicquot is named for Barbe-Nicole Ponsardin, the widow at the helm of the Champagne house from 1805 to 1866. The nose of the 2006 ($145) 96

gives up hints of Meyer Lemon and mint with coaxing. In the mouth, the flavors sneak up on you: Citrus, preserved lemon, and candied zest linger for nearly a full minute, intensifying and building. La Grande Dame Rosé 2006 ($285) has a similar nose to the 2008 Rosé but with more intensity and a faint essence of black cherry. It’s quite earthy on entry as well, followed by a reduction of sweet red berries. There’s a fascinating contrast between the richness of the fruit and the earthiness of the wine.

Krug Brut Rosé is a divine celebratory sip with a lot of personality.

Krug: Krug Grande Cuvée gained fame as a “multi-vintage,” a blend of 10 or 12 older reserve wines in different batches and proportions. The 164th edition ($170) is robust and fullbodied; this blend announces its presence and grabs you. By the mid-palate, the power has been replaced by a range of apple, melon, pear, stone fruit, and citrus. The finish is long and mouthwatering. On the nose, Krug Brut Rosé ($295) mixes pleasant aromas of red fruits with fresh herbs and mint. In the mouth, the style remains controversial, with a ripeness that is almost excessive, combined with a sensory overload of plump rhubarb, red currant, and raspberry. The texture is racy, exotic, and distinctive, and the wine cries out for rack of lamb or saddle of venison. This is a bottle you’re not likely to forget, and one that proves the old adage, “There is Champagne, and then there is Krug.” «

Rock ’n Ride

Don’t expect a typical spin class at the CycleBar. This brand of premium indoor cycling sessions provides heart-pumping music and a theatrical environment to keep you moving. Co-owner Jake Maulin defines this approach as a “multisensory, total-body experience.” In keeping with the theme, studios are called “cycling theaters” and are equipped with customized Schwinn Carbon Blue bikes, a state-of-the-art sound system, and lighting that changes in intensity along with the pulse of the class. “We offer three levels of rides, all of which enable you to work to the rhythm of your breath, and are geared toward a comprehensive, high-energy workout,” Maulin says. The CycleBar is expected to open at Mercato, Naples, in late December—just before those New Year’s resolutions kick in. (naples. cyclebar.com)

Hair loss is a natural part of life, and it’s actually normal to lose up to 100 hairs a day. But what if you begin to shed noticeably more than that, and it doesn’t seem to be growing back? First of all, “Don’t panic,” advises LaDonna Roye, a hair restoration expert and owner of LaDonna Roye Hair Stylist and Hair Loss Solutions. “There are two types of hair loss: genetic and reactive,” she explains. Genetic hair loss results in follicles gradually shrinking and producing finer, shorter hairs with each passing hair growth cycle. Reactive hair loss is the most common and can be triggered by several factors: hormonal imbalances, stress, iron deficiencies, hypothyroidism and hyperthyroidism, vitamin B12 deficiencies, dramatic weight loss, and age. Telogen effluvium (excessive shedding) is temporary and usually occurs three to six months after the trigger, she says. The good news is hair will grow back. It’s always prudent to consult a dermatologist or general practitioner who can provide a diagnosis, course of action, and testing for any internal imbalances. While you wait for regrowth, Roye gives some tips on how to mitigate the fallout. (ladonnaroye.com)

LADONNA ROYE’S PRO TIPS 5 THINGS TO DO: • Use a low setting on your blow-dryer • Brush the scalp gently with a boar bristle brush to stimulate blood flow • Use a wide-toothed comb, or a wet brush with wet hair • Use a lightweight conditioner to avoid brittle hair • Eat a protein-rich diet 5 THINGS TO AVOID: • Stress • Hairstyles that place weight on the hair and hair follicles, such as tight pony tails or braids • Heavy styling creams and serums • Flat ironing, which can cause breakage • Playing with your hair • Over processing and styling

QUICK SOLUTIONS

PUMP UP THE VOLUME Here, LaDonna Roye shares some expert advice on how to volumize locks and make a grand entrance wherever you go.

1

TOPPERS

Think of a topper as an extension for the top of the head, covering the area of hair loss and adding fullness, volume, and, if desired, length. For an immediate fix, there is nothing better, and some of the best sellers come from the Jon Renau and Raquel Welch lines. How to Apply: Clip it in with a comb-clip buffered with silicone so that it doesn’t damage your hair. Human hair toppers can be curled and styled like regular hair. Cost: Ranging from $200-$400 for synthetic hair and $350-$2,000 for human hair, depending on length and hair quality.

HAIRPIECES

2

3

HALOS

Removable human hair extensions, such as Halos from Halocouture, add length and fullness without damage because they don’t pull or cause stress to existing hair. How to Apply: Attach the one-piece halo on top of the head, and then gently pull your natural hair over the extension and style. Cost: Starting at $99 for synthetic hair and ranging from $300$600 for human hair, depending on length and thickness.

FIBERS

Synthetic fibers, made of an all-natural keratin protein, are a popular choice for both men and women. XFusion Keratin Hair Fibers interlock with existing hair to hide fine, thin hair, or bald spots. How to Apply: Sprinkle them onto hair and exposed scalp areas and distribute evenly. Cost: About $20.

100_BALANCE2_1218.indd 103

Updo hairpieces and ponytails can create a new hairstyle in seconds. How to Apply: Put hair up into a ponytail then wind and clip the hairpiece around it. Top sellers are from Raquel Welch and Hairuwear. Cost: $59-$99.

WEALTH

THE TAX MAN

Familiarize yourself with these tax reform changes before filing for 2018 By Judy Martel Beginning this year, taxpayers preparing their 2018 returns can take advantage of the new law, formally known as the Tax Cuts and Jobs Act. David Hasen, professor of law with expertise in taxation at University of Florida Levin College of Law, offers insight into some of the most significant tax code revisions for individuals. First, some basics: The standard deduction has nearly doubled, to $24,000 for married filing jointly and $12,000 for single filers, meaning fewer people will itemize, explains Hasen. But these higher amounts are somewhat offset by the fact that the personal exemption (which was a little more than $4,000 per person and could be taken regardless of whether a taxpayer itemizes) is no longer available. Income tax brackets have been lowered, with the top tax tier of 39.6 percent dropping to 37 percent. It applies to taxable income in excess of $500,000 for single filers and $600,000 for married filing jointly. The lowest bracket is 10 percent. Now, let’s dive into some additional highlights of the tax reform.

PROPERTY Interest on home acquisition debt—which includes the purchase, refinance, or substantial improvement of a primary or secondary property—was deductible up to $1 million under the old rules, says Hasen. Going forward, the limit is $750,000 for married filing jointly and $375,000 for single filers. Note that while the deduction can be applied to a primary or secondary residence, it isn’t a separate amount for each but rather a combined total if applied to both properties. When most of the new tax reform laws sunset on January 1, 2026, the amount reverts to $1 million, unless Congress acts before then. Interest on home equity loans, which was deductible up to $100,000, is no longer available, unless used to substantially improve the home. State and local income and property tax can only be deducted up to $10,000 a year for married filing jointly, says Hasen. That makes the prospect of homeownership a lot less attractive, unless you live

reduction in taxes on qualified business income for a sole proprietorship, limited liability corporation, partnership, or S-corporation. “There are lots of limitations so you need to consult your tax professional,” says Hasen. But, if a taxpayer qualifies, it’s pretty significant. The deduction is only available for business income, not income from wages. Business deductions and health insurance premium deductions that were previously taken outside the standard deduction are still in place, Hasen adds.

in Florida, he adds. Because Florida has no state income tax, the full $10,000 deduction can be applied to property tax. BUSINESS INCOME A new provision in the tax code provides a boost to a so-called “passthrough business.” Known as Section 199 Cap A, it allows a 20-percent

ESTATE TAX Under the former tax law, the federal estate tax exemption was $5 million per individual, indexed for inflation. For 2017, that meant each individual could exclude $5.49 million of his or her gross estate from death taxes. Under the new tax law, that amount for 2018 increases to $11.18 million, adjusted for inflation. “Almost no one will be subject to this tax,” Hasen notes. The gift tax is tied to the estate tax and hasn’t really been tinkered with. For 2018, taxpayers are allowed to give $15,000 to each recipient without paying gift tax. Any amount over that is deducted from the estate tax exclusion. But although the rules haven’t changed, Hasen says, the higher estate tax exclusion means more people can gift higher amounts without the concern of exceeding the limit. «

A Holiday Card Gift Card they won’t forget. An indulgent resort stay. A pampering treatment at The Spa. A day of great golf. A romantic dinner at HB’s On The Gulf. However they choose to use it, the Beach Club Gift Card is sure to make everyone on your list happy.

The “Violins of Hope” exhibit, on view at The Holocaust Museum and Janet G. and Harvey D. On December 12, Dr. James Grymes, author of Violins of Hope, will share personal stories of the history of the violins and their owners at Temple Shalom. Then, on December 13, meet Avshalom Weinstein, the Israeli violin maker who brought these fragile slices of history back to life, at a mimosa reception and luncheon at The RitzCarlton, Naples. A SOFT SPOT FOR RUDOLPH Some traditions stick around for generations because they are just that good. On December 21, the Hertz Arena in Estero will present Rudolph The Red-Nosed Reindeer: The Musical live on stage. Who can resist this classic story of a young reindeer who is shunned by his peers because of his bright, shining nose? Following this rebuff, Rudolph leaves Christmastown, meets new friends like Hermey the Elf, and discovers the Island of Misfit Toys. Go-to hostess gift: Flowers, of course! Flowers make a house a home and a get-together into a special occasion.

Best dessert: The made-to-order carrot cake from BrickTop’s at Waterside Shops is out of this world.

director and managing partner of Garden District Design and owner of Golden Gate Nursery, is passionate about design and self-expression. Born and raised in Naples, Hernandez graduated from Johnson & Wales University in Providence, Rhode Island, before returning home in 2002. He is famous for his unique talent with flowers and ability to transform raw materials into award-winning floral statements. 1. Biggest splurge: A trip on The World Residences at Sea. We cruised around the Iberian Peninsula, through the Straights of Gibraltar (on an outdoor bed), and ended in the Balearic Islands. Pure heaven. 2. Favorite cultural attraction: The Naples Botanical Garden. It is incredible what a small group of dedicated benefactors and volunteers can do. Also, the fact that it’s always growing and changing means you never see the same thing twice. 3. Signature sip: Don Julio Tequila on the rocks 4. Beloved charity: Humane Society Naples. I believe the character of a city is judged by the way it treats its animals. We have three rescues at home: two Chiweenie sisters and a Cairn terrier mix. They make our house a home and make us better people. 5. Go-to scent: Acqua di Colonia from Santa Maria Novella in Florence. A classic scent for every day. 6. Esteemed designer: I love anything by Dries Van Noten. His unique take on the world of fashion and architecture is inspiring, eclectic, and fun. 7. Where he takes out-of-town guests: The Naples Beach Hotel beach bar. It has a great local vibe, good drinks, and you can’t beat the sunset from the deck. 8. Must-attend event: This year it’s the STARability Foundation Gala. It’s a young organization, but the work they do is so important and effective.

Hardest lesson learned: Not to take things personally. As a creative, I take my work and projects very personally, and sometimes I forget that it’s not always personal, it’s business.
