The winter just flew by in Naples. Not something that happened for everyone, as one of the harshest weather seasons ever blanketed much of the nation.

It was hard to envision what was going on up north as we soaked in the warm, sunny days with temperatures hovering in the mid 70-degree range during what I experienced as one of the most beautiful winters I can recall. But this is a major reason we live here, isn’t it?

The arrival of spring brings a whole new array of splendor in our flora. The blooming magnolias, royal poincianas and birds of paradise fill in the beauty gap as our breathtaking bougainvillea start to fade. I often wonder how I don’t notice the dazzling tabebuia trees until their explosion of bright yellow flowers brings such stunning visuals to our medians and neighborhoods. Speaking of those medians, kudos to our city management for creating works of art out of once-upon-a-time eyesores.

I have a few extra treats to look forward to this month. I received a phone call from my friend Vicky Tracy a few months ago inquiring if Naples Illustrated would be interested in supporting an event for The Shelter for Abused Women & Children called the Old Bags Luncheon. This branded event includes a silent auction of donated new and gently used handbags, with all proceeds benefiting The Shelter. (Need I say more? Vicky, you had me at hello!)

Another event I have awaited with great anticipation is the second part of our bicoastal sponsorship for the Everglades Foundation. Ellin Goetz, a career advocate for environmental causes and a foundation board member, introduced me to this organization.

Her contagious passion swayed me to get involved. The first part was a fundraising event in Palm Beach at The Breakers resort, sponsored by our sister publication, Palm Beach Illustrated, featuring the Zac Brown Band and a surprise appearance by the legendary Jimmy Buffett. On April 11, Naples gets its turn to host the ForEverglades event at The Revs Institute for Automotive Research Inc. Won’t you join us in our mission to support such worthy causes? Of course, one of the most memorable food and wine events of our season is the Naples Winter Wine Festival vintner dinner. The pairing of food and wine is indeed an art form and it is done in the most masterful way at these exclusive dinners.

In this Food & Wine issue, we take you inside two remarkable vintner dinners from this year’s festival, featuring highly acclaimed chefs in the farmto-table tradition. In “Perfect Pairings,” page 78, discover the intricacies of the dishes that are artfully prepared by Christopher Kostow from The Restaurant at Meadowood in Napa Valley at a dinner hosted by festival co-chair Anne Welsh McNulty. Designer Carmen Marc Valvo is known for creating dresses that flatter every figure at any age.

Just ask mega-stars Angelina Jolie, Taylor Swift and Queen Latifah, who have all worn his glorious gowns. Valvo will bring his full Fall 2014 runway show to the Old Bags Luncheon for The Shelter for Abused Women & Children April 8 (see page 44 for more details). In advance of his visit, which will also include a trunk show and appearance at Saks Fifth Avenue, Naples, the designer spoke with Naples Illustrated about personal style, a common fashion mistake and what you’ll always find packed in his suitcase.

NI: What’s the one piece that should be in every woman’s closet?

CMV: A little black cocktail dress in either double-faced wool, or cotton, if wool is too heavy. It’s seasonless, it’s timeless, it travels well—it’s your best friend. I love double-face because whatever size you are, the double-face has stretch. If you gain a few pounds or lose a few pounds (and we all do) that dress is still going to be flattering and so forgiving.

How can women balance runway trends with dressing for real life?

You can incorporate the trends without wearing them head-to-toe. Don’t be a slave to fashion.

Incorporate trendy pieces into your wardrobe, but you don’t have to embrace it as a huge statement. Pick the ones that speak to you most.

What fashion mistake do you wish women would stop making?

One of the biggest mistakes is wearing too many accessories. For day, throw on the scarf, layer on the bangles. But when you’re wearing a cocktail dress or an evening gown, be selective. Choose one great piece. I want to see the woman. I want to see her inner and outer beauty. I don’t want clutter.

You’ve been successful in many areas of fashion and recently started designing shoes. Are there areas you haven’t explored, but want to?

Menswear! It’s an entirely different business, but maybe something strategic, like evening wear. I can never find a tuxedo shirt that I like and I’m not really a bow-tie guy. Black-tie should be fun! It doesn’t always have to be black, either. You don’t want to look like the proverbial penguin.

What’s the one item that always makes it into your suitcase?

Flip-flops … always! I can travel with one pair of shoes, but I always have two pairs of flip-flops.

Home for the holidays: For a creative place-card setting, a bird's nest made of grapevine carries robin's eggs—a twist on traditional Easter eggs. Tufts of heather are tucked into ceramic birds to signal the spring season in this tabelscape.

In this distinctive holiday tablescape, we put a modern twist on the traditional Easter repast. Capturing the essence of spring, the centerpiece is crafted on a foundation of complementary blooms in varying hues, ranging from blues and deep purples to pinks and vibrant reds. The hydrangeas, tulips and hyacinths are a beautiful contrast to the more than a half-dozen rich green topiaries that dot the table. The top of the centerpiece features mercury glass vases and ceramic birds tucked with heather.

The powder blue linen with a silver sparkle inlay was selected as the perfect backdrop to showcase bold silver bengaline silk napkins, which are laid over the table edge to serve as another vivid design element.

When designing your own tablescape with flowers, selecting no more than three different types of blooms will allow you to create a stunningly unique look without appearing cluttered, says Rufino Hernandez, owner and creative director at the Garden District, Naples. And always pull in at least one decorative element that already exists in your home to bring a level of comfort and familiarity to the holiday table, he says.

Finally, get creative with the location of the seating place cards.

In this tablescape, delicate robin’s eggs (a refreshing twist on the traditional colored eggs) are tucked into tiny bird’s nests crafted from grapevines, which serve as an eye-catching, creative base for guests to find their place at the table—and enjoy coming together for the holiday feast. —Teri Evans

Fashion-Forward Celebration

For award-winning, Naples-raised artist Lana Gomez, change has been good. During the six years since her last exhibition in Naples, Gomez graduated from art school, moved to Los Angeles, worked with renowned interior designer Kelly Wearstler and got married—all occurrences that influenced her work. Inspired by vintage fashion, classic art and the world around her, she is known for bright, colorful works that have been shown in galleries from New York to San Francisco. The artist brings her interpretations of life’s milestones to Edward Gary Design in Naples (edwardgarydesign.com) April 9. The show will feature paintings created with the Naples community in mind. Named a 2014 Design Tastemaker of the Year by California Home + Design magazine, Gomez, daughter of Simone Lutgert, is excited to return to where she grew up. “My family has always been my rock, but learning to navigate the world on my own has been empowering and priceless,” Gomez says. —Lauren Daniels

In two and a half decades, The Shelter for Abused Women & Children has built a nationally acclaimed shelter and ever-expanding programs created to eliminate and prevent domestic violence. The Shelter began with Collier County Spouse & Abuse Task Force members who organized a meeting of volunteers to plan a domestic violence shelter in the late 1980s. Today, some 56 full- and parttime staffers serve people in need confidentially and free of charge in Naples, Immokalee and Bonita Springs through residential and outreach programs, as well as through the Options Thrift Shoppe. On April 8, the 25 years of determination and accomplishment by supporters of The Shelter will be feted with the first-ever Naples edition of the nationally branded Old Bags Luncheon at The Ritz-Carlton Golf Resort, Naples. It promises to be a spectacularly fun way to celebrate The Shelter while also raising money to support its activities. It will include an auction of new and previously loved handbags (featuring some rather covetable items, to be sure), and the full, hot-off-the-New York Fashion Week Fall 2014 runway show and personal appearance by designer Carmen Marc Valvo (see our interview with the designer on page 41), presented by Saks Fifth Avenue, Naples. A Leg Up Mixing fashion, fitness, function and philanthropy, Neapolitan Lisa Reddish started at the bottom—literally, with socks. The fitness fanatic was spurred to design legwear (crossfitsock.com) by friends who noticed her considerable kneesock collection. That, plus she was unable to find pairs that performed during workouts while also looking good. Because Reddish is committed to giving to worthy causes, 10 percent of the proceeds from four patterns of her CrossFit-inspired line of athletic socks benefit charities. Made in the United States from a blend of CoolMax nylon and Lycra, the socks and the groups they support are personal for Reddish. A portion of her first design, “The Lola,” benefits St. Jude Children’s Research Hospital, the favorite charity of her late mother. New Reflection The United Arts Council of Collier County has rebranded itself to better reflect its role in the Naples community. Along with a new logo, it has a new tagline, “Your connection to the arts.”

The UAC, which recently celebrated its thirty-third anniversary, has made many changes over the past year, including moving to a new space called Arts-Mart in Mission Square West on Pine Ridge Road, which offers space for displaying work by local artists.

Art aficionados can buy tickets there for shows by performance groups that don’t have permanent locations, and the center has a new hotline number, 239-777-3145, for daily updates on ticket availability around town. By Jennifer Pfaff You created the iconic wrap dress 40 years ago. Why do you think it has had such lasting power?

I had no idea the wrap dress would become such a phenomenon. It was such a simple little dress, but it was a dress that allowed women to go to work and still feel like a woman. It gave them independence and confidence when that was exactly what they needed. But really, I think it is a dress that is all about the woman, and that is what has made it timeless.

What can we expect from your latest collection?

Spring 2014 is called Oasis, and it is all about finding serenity and beauty in the unexpected. The colors are black and white with pops of bright blue and dreamy sunset neutrals. The silhouettes are also important, from a corset and flare skirt combo to chic tunics over pants and sleek column dresses that flatter the body.

Your garments exude qualities you possess: glamour, sexiness and confidence. How do you harness these qualities in your personal life, and how do you convey them in your aesthetic?

Thank you. I think it is really the confidence that leads to glamour and sexiness. It is all about joie de vivre and being true to yourself. So I try to be true to who I am and hope that it comes through in my life and my designs.

Do you have a muse?

I am inspired by all women. I have never met a woman who is not strong. And there is nothing more inspiring than a woman who knows her own strength.

What’s your must-have fashion for spring?

The corset top is really important, and the column dress. And something black and white, like a zebra-printed tunic.

Who has had the biggest influence on your life?

My mother, Lily. She was a very strong woman and she always taught me that fear was not an option. She was a Holocaust survivor and she was not meant to have a child, but then I was born. It was really a miracle. She told me that she survived in order to give me life. So that has been my flag to carry, and it has always kept me going. It has made me more willing to take risks and to fail, which is so important because your failures are really your lessons.

Verdant grasses and vibrant sunflowers once again blanket the hillsides, heightening the beauty of the history-steeped châteaux, stone-hewn homes and medieval townscapes. As young Pinot Noirs emerge on the storied vines throughout this cradle of wine civilization, village life erupts in full bloom.

During this magic of spring, a handful of luxury barges takes to the picturesque waterways of central France, exposing sybarites to the back lot of prime wine country. Meandering through the postcard-perfect veins of the Burgundy region, the five péniche-hôtels of Orient Express’ Afloat in France commingle the best of luxury cruising with complete immersion into rural France. One day, passengers visit the caves of Maison Joseph Drouhin in Beaune, Burgundy’s official wine capital, to learn about the regional terroirs and how sun exposure, soil, slope and Earth’s elements can create the perfect wine. A candlelit pathway of carefully placed stones enticed guests into the Port Royal home of Anne Welsh McNulty, the site of one of the highly sought-after vintner dinners at the Naples Winter Wine Festival in late January. Once inside, they sipped flutes of Krug Grande Cuvée as the sun set over the Gulf, and waited to be seated at a quartet of dramatic and elegantly decorated tables. Names were beautifully etched on stones to serve as place cards. The title of the dinner was “Like A Rolling Stone,” but the plaintive tones of Bob Dylan were nowhere to be heard. Instead, a Rolling Stones cover band rocked through the

evening. Contrary to the Stones’ lyrics that “you can’t always get what you want,” the lucky diners received far more than they ever could have anticipated.

The deep blue and burnished gold table settings echoed the colors of the logo of Opus One, California’s iconic Cabernet Sauvignon and the evening’s featured winery. Hundreds of polished glasses stood ready to receive four vintages of that wine, poured by Master Sommelier Ian Cauble. The menu was designed by Christopher Kostow from The Restaurant at Meadowood in Napa Valley, California, one of the youngest NAPLESillustrated.com | APRIL 2014

chefs ever to receive Michelin’s ultimate accolade of three stars—among just 109 restaurants in the world deemed “worthy of a special journey.”

David Pearson, CEO of Opus One, first experienced Kostow’s cuisine when he invited the chef to prepare a dinner at the winery. “Everything suddenly seemed to click—the style, flavors and presentation came together seamlessly,” he recalls. Pearson and his partner, Michael Mondavi, later visited Meadowood for dinner and decided Kostow’s cooking would provide the right foil for Opus One’s first appearance at the Festival.

Kostow’s prodigious talent was immediately obvious in the bite-sized hors d’oeuvres that accompanied the Champagne. Guests were treated to kale chips augmented by “fla-

vors of chorizo,” a purée of savory Spanish sausage piped onto the crispy chips by the chef’s precise, focused kitchen team. Pastry pillows stuffed with fromage blanc (a creamy cow’s milk cheese) were served on an actual pillow, but this presentation paled next to the pumpernickel macaroons. These were a culinary pun on the French macaron, a petite dessert sandwich normally consisting of two meringue rounds filled with buttercream. Kostow’s version substituted pumpernickel rounds for the meringue, and inserted slices of radish and butter in place of the cream. They were offered to guests on a series of scrapbooks from the Meadowood garden—an indication of Kostow’s commitment to sustainable cuisine, and a foreshadowing of things to come.

2014 Naples Winter Wine Festival The exclusive vintner dinners at the annual Naples Winter Wine Festival in late January kicked off a weekend that has become the leading charity wine event on the planet. As the fundraising vehicle for the Naples Children & Education Foundation, the festival has raised more than $123 million since its inception in 2001, all to support underprivileged and at-risk children in Collier County. On the eve of the festival’s signature auction, 17 of the country’s top chefs converged on Naples to prepare exquisite meals at the homes of the Festival’s trustees, and their artwork is paired with the fruits of the world’s greatest wine estates. During this year’s Festival, we went behind the scene of two of those vintner dinners.

Once seated, the first course resolved one of the puzzles of the evening: How do you design a dinner around an acclaimed winery that only produces Cabernet? Fortunately, Opus One is a joint venture with Bordeaux’s Chateau Mouton-Rothschild, so Pearson was able to pair Aile D’Argent, the white wine made at Mouton, with the astonishing combination of raw lobster and caviar. Pieces of lardo, or cured Italian fatback, caramelized under high heat and added a savory element to the dish.

The atmosphere in Kostow’s kitchen resembled an operating room presided over by one of the world’s most precise surgeons, as his team tackled the heart of the dinner. The three courses in the middle part of the menu would accompany four recent vintages of Opus One, to allow the attendees to get a sense of how the wine develops over time. Kostow rose to the

challenge with the coal-roasted sturgeon that accompanied the 2001 vintage.

Prepared in a manner that evoked the earthiness of an Argentine asado, the sturgeon was an enormous hit with the guests. Garnished with onions and smoked sturgeon fat, it was David Pearson’s favorite dish of the evening.

“It’s rare for a Napa Cabernet to pair so effortlessly with a white fish,” Pearson says. “It was a nice cut of sturgeon that was firm, moist and flaky, highlighted by a reduced sauce poured over it—probably the simplest presentation of the evening, but also the most surprising and satisfying course. Of course, it was helped along by the bottle age and soft tannins of the 2001 Opus.”

The momentum built with the next course, a large ravioli composed of rye pasta, filled with minced capon and cabbage and escorted by

the 2005 Opus One—a fully mature wine just approaching its window of drinkability. The savory part of the meal culminated with beef, aged at Meadowood and transported to Naples, garnished with fermented turnips and wild mushrooms and accompanied by the 2007 and 2010 vintages.

Like the Rolling Stones doing an encore, however, Kostow was not through. His dessert was as brilliant as the rest of his menu. It consisted of epoisses, a pungent, unpasteurized cow’s milk cheese from Burgundy, whipped into a froth incorporated with butter, shaped into quenelles and garnished with preserved fruit. This was served with the 2005 Château Coutet, a sweet wine that Mouton-Rothschild distributes globally, and ended the dinner on a perfect note. «

For a winemaker about to host a vintner dinner at the Naples Winter Wine Festival, Doug Shafer seemed surprisingly relaxed. “I did my work back at harvest,” he says cheerfully. “On top of that, the chef knows best, so I leave it to him.”

The chef in question is Joseph Lenn of The Barn at Blackberry Farm, located at the elegant resort in Tennessee’s Great Smoky Mountains, where Lenn has forged a reputation as one of the key figures in the current revival of Southern cuisine. He uses produce from the Farm’s garden and sources organic, sustainable ingredients from local sup

pliers to create a style of cooking that is fresh, natural and vibrant.

“He’s been doing that for years,” says Shafer, “long before it became popular and fashionable.”

At the Tiburón home of Patricia Brisben, Lenn prepared to pair his food with the wines of Napa’s Shafer Vineyards. Guests gathered at the entrance to the estate, honing their appetites with wine and carefully crafted hors d’oeuvres while being serenaded from the balcony by a retro rock band. As the sunlight was gradually replaced by the glow from a bevy of outdoor lanterns, Brisben mingled cheerfully NAPLESillustrated.com | APRIL 2014

with the crowd, assisted by her co-host Linda Malone—one of the founding trustees and a co-chair of this year’s festival.

The theme here was “Wanderlust,” and the multicolored, gypsy-inspired tablecloths provided a riot of color, reflecting the free-spirited nature of travel. Rock gave way to soothing sitar music as the evening wore on, but the decor remained as bright and vivid as the food itself.

Chef and vintner had met before. Several years earlier, Doug Shafer spent some time at

Blackberry Farm and experienced Lenn’s signature “Foothills Cuisine,” a style of preparation that bears a close resemblance to the sustainable cuisine typical of the Napa Valley.

There was an immediate affinity between the two men, and Shafer wines have graced the restaurant’s list ever since.

Lenn’s first course set the tone for his menu: a salad of “Surreyano” ham (smoked and cured in Surrey, Virginia, in the style of Spanish serrano) paired with the 2011 Shafer Red Shoulder Chardonnay. The saltiness of the ham was beautifully balanced by a soft, creamy cow’s milk cheese from Blackberry Farm, and sweetened by an elderflower vinaigrette.

The bounty of Tennessee was also on display in the next dish, a fried Blackberry Farm egg with torn bread, black truffles and garden kale accompanied by Shafer’s 2011 Merlot.

The combination of roasted quail wrapped in Benton’s bacon was another celebration of Tennessee ingredients. Allan Benton is the dean of pork, a Madisonville native who has raised the traditional practice of dry-curing ham and bacon to a fine art. His bacon allowed the quail to remain moist while cooking; the plate was enhanced by mustard-glazed turnips and preserved collard greens, and paired with the 2010 Shafer Relentless, a full-bodied Syrah from the Vaca Mountains south of the Stags Leap District. Gifted wine tasters frequently detect aromas of bacon fat in Syrah, and the wine complemented the dish perfectly.

Lenn’s most daring match of the evening was roasted broccolini, buckwheat, hazelnuts and butternut squash paired with Shafer’s One Point Five Cabernet Sauvignon. The pairing successfully defied the conventional wisdom that vegetables are not the best accompaniment to Cabernet. “Believe it or not,” he said, “the broccolini has a smoky flavor that goes very well with Cabernet, and the smokiness is enhanced by a touch of Moroccan

spices.” Doug Shafer noted that the broccolini course, which seemed the most unusual at the outset, was the one that drew the most praise from diners; he also had an intriguing observation on Lenn’s style.

“The thing that was striking,” he said, “was the acid levels in the dishes. My wife noticed it because she’s a Culinary Institute of America grad. By keeping the acidity high, the flavors in each dish were very bright, which enabled the wines to show very well.”

Lenn’s approach to food and wine pairing throughout the evening was a blend of the traditional and the modern. In classical French cooking, wine appears in almost every sauce, and sommeliers use that knowledge to craft their recommendations.

Modern chefs prefer a simpler and more straightforward style of preparation, so the best wine pairings tend to be contrasts rather than complements. Lenn’s notable contrasts included the salad of Surreyano ham, the kale dish and the broccolini; he used complementary flavors in his roasted quail and the beef rib-eye caps that accom

panied Shafer’s flagship Hillside Select Cabernet Sauvignon. The tannins in the 2009 Cabernet melded perfectly with the animal fat in the beef, creating a union that was greater than the sum of its parts.

The meal concluded with a comforting dessert that evoked memories of nights around the campfire: Toasted-marshmallow ice cream was placed atop homemade graham cookies and garnished with slices of crispy chocolate mousse. No wine was paired with it—partly because Shafer doesn’t produce a dessert wine, and mostly because there was little that could be added at that point to improve the perfection of the evening. « NAPLESillustrated.com | APRIL 2014

Would you spend $1,300 for a beer? Within the past year, several people did exactly that on eBay: the first was a bottle of Midnight Sun from California’s Lost Abbey Brewing Co., and the other was a rare magnum of sour beer from famed Belgium brewer Armand Debelder.

Among collectors, craft beer is obviously the new wine. The demand for the most sought-after craft brews now resembles the hysteria once reserved for cult Cabernets such as Harlan Estate and Screaming Eagle. Many of these beers are produced in small batches and sold only at the brewery, where they sometimes sell out in a few hours. The most exotic of them never get into general circulation—not officially, although a vibrant black market has evolved and driven prices skyward.

“For a long time, craft beer was an exclusive club,” says Mitch Steele, brewmaster at the Stone Brewing Co., which has been referred to as the all-time top brewery on Earth by Beer Advocate magazine.

“Recently, people’s tastes have changed, and more consumers are willing to experiment. The category is exploding.”

The explosion has gone beyond the community of collectors and into mainstream America. Craft beer now accounts for 10.2 percent of domestic beer sales, with an annual volume of nearly $4 billion, according to the research firm IbisWorld.

At the same time, demand for traditional, mass-produced beer has plummeted. According to Beer Marketer’s Insights, an industry trade publication, sales of Budweiser declined 28 percent between 2007 and 2012. Even worse: Old Milwaukee dropped 54 percent during the same period, and Michelob Light was down a staggering 70 percent Price does not seem to be a factor. A six-pack of Budweiser sells for between $6 and $8 in most parts of the country, while the same quantity of the Stone Brewing Co.’s IPA (India Pale Ale) fetches from $14 to $18. Increasingly, proprietors of upscale liquor stores are finding that the consumer spending money on craft beer is likely to be the same person who buys expensive wine.

“Craft beer is an affordable luxury,” says Tyler Jones,

head brewer at Portsmouth Brewery in New Hampshire, the nation’s first brewpub. “You can spend 10 bucks for a delicious six-pack, versus $50 or $60 for a good bottle of wine. They tend to appeal to the same people. The average wine drinker already has the sophisticated palate that the new craft beer drinker needs.”

Naples’ first craft brewery arrived in the fall of 2012 when Will Lawson opened the Naples Beach Brewery. A Michigan native, Lawson became a home brewer after moving to Florida when he discovered that the type of beer he was accustomed to drinking wasn’t available locally. His moment of epiphany occurred years before, during a visit to the Founders Brewery in Grand Rapids, Michigan.

“I remember sitting in the taproom with a few friends,” he recalls. “It was the first brewery I had ever visited, and they had glass windows so you could observe the brewing process. I watched them for several hours, and realized that this was the work I wanted to do. I really admired the craft involved.”

Lawson enrolled in a course at Chicago’s Seibel Institute, part of which took him to Munich, Germany, to study brewing up close. He worked in a series of brewpubs after Seibel, and eventually decided to become his own boss. The Naples Beach Brewery is currently a small operation with an output of 400 gallons per week; the beer is available only in kegs, which limits exposure to restaurants and pubs. He is keenly aware that the appeal of craft beer plays strongly into the current trend for locally produced products.

“I keep telling people here that this is their own small brewery, that it belongs to the folks in the greater Naples area. It’s something they can be proud of, invest their time and money into, and share our product with their family and friends.”

The strategy is working. His beer is on tap at more than 40 area establishments, and the brewery’s tours and tastings have become a weekend destination for both locals and tourists. Lawson’s most popular brew is his weissbier, a Bavarian wheat beer, followed by his American pale ale.

He is planning an expansion that will allow him to bottle his beer and sell it throughout the state.

Although Naples Beach is the only full-blown brewery in the area, the Fort Myers Brewing Co. is the first microbrewery in Lee County, and the Marco Island Brewery turns out handcrafted beer farther south. Also in Naples, Fantasy Brewmasters “develops real-life beers inspired by the magical worlds of dwarves, wizards and dragons,” including Burdisson’s Dwarven Ale, now handled in Florida by Brown Distributing. For home-brewing enthusiasts, Brewing Daily, a supply store in Naples, sells everything you need to make your own craft brews.

Broadly speaking, beer is divided into two groups: lagers and ales.

Lagers tend to be light in color, dry, low in alcohol and easy to drink. Ales are higher in alcohol, and are usually more complex and full-bodied than lagers. Here’s a quick guide to craft beer styles:

Pilsner: Originally from Czechoslovakia, the pilsener style is extremely popular: clean, crisp, simple and pleasantly bitter.

Wheat Beer: Native to the Bavarian region of Germany, this light-colored beer is brewed with 50 percent wheat and 50 percent malt, and is generally regarded as a summer product.

Brown Ale: An amber-colored beer first brewed in seventeenthcentury London; versions range from low-alcohol and sweet to stronger and moderately bitter.

Pale Ale: Made from pale malt and gently roasted barley, the American versions tend to be spicy with a strong hop flavor.

IPA (India Pale Ale): First brewed for British troops in nineteenth-century India, the IPA is a sub-category of pale ale.

One of the most popular craft beer styles, it has a strong flavor of hops and a slightly bitter taste.

Bock: A strong German-style lager, bocks are deeply colored, rich in flavor with a hint of bitterness.

Porter: Very dark in color, porters are made with roasted malt or barley and have complex notes of chocolate, toffee and toasted grains.

Stout: Virtually black, stouts are high in alcohol and assertive in flavor, displaying notes of coffee, chocolate, molasses and licorice.

a following beyond their immediate area, the logistics of distribution can sometimes be daunting. Beer is a perishable commodity. Like wine, it is easily spoiled when subjected to high temperatures for an extended period of time, either during transport or after it reaches its destination. The nationwide popularity of craft beer has spawned a cottage industry of people devoted to caring for it, concerned with delivering it to the consumer in its natural state.

The Cicerone Certification Program is in the front line of that effort. Simply put, a cicerone is the beer world’s equivalent of a sommelier. Ray Daniels, an expert who has written more than two-dozen books on beer and brewing, founded the program in 2008 and it has grown quickly. It focuses on education, with the goal of keeping beer fresh through proper storage, handling and service. Like the Court of Master Sommeliers, there are different levels of achievement. The entry-level certification is the Certified Beer Server, a credential held by more than 28,000 people around the country. There are fewer than 1,000 individuals who have qualified as a cicerone, and a mere seven Master Cicerones in the country. To pass the master’s exam, a candidate must possess a near-encyclopedic knowledge of beer and beer styles, and survive several grueling days of written and oral testing and tasting sessions.

“A lot of people think beer is like vodka,” says Nicole Erny, one of the few Master Cicerones. “They believe it will last on the shelf indefinitely, but that’s absolutely not true. Most beers have three to six months of shelf life, and shelf life affects taste.”

Erny has been intrigued with craft beer since her college days. Although she grew up in Northern California and was “fascinated with flavor,” she never got involved with wine, because she felt “there was too much pretension to wade through before you got to the good stuff,” a sentiment echoed by a number of

PAIRING BEER & BITES “When you pair beer with food,” says Master Cicerone Nicole Erny, “importing ideas from the world of wine and food pairing doesn’t work.

You have to turn a lot of it on its head.” Here are some basic rules, all of which can be broken: ● Light lagers such as pilsners tend to go well with salads, seafood, white meats (especially pork), mild cheddar cheese and spicier foods, such as Mexican or Cajun. ● Bocks are a good match with Thai or Korean food, game dishes, barbecue and mild cheeses. ● Drink pale ale with pork, roasted poultry, smoked fish, mild cheese or curry. ● IPAs are a natural with spicy food (particularly curry) and sweet desserts. ● Roasted or smoked meats go well with porter, especially barbecue; blackened fish is also a good match, as are chocolate desserts. ● Stouts pair well with steak, meat dishes, roasts and stews—and, oddly enough, oysters.

brewers and craft-beer aficionados. She works full-time as an educator for the Cicerone Certification Program, and is particularly concerned with service standards, such as cleanliness of glassware.

“When it comes to glasses,” she says, “there’s clean, and then there’s beer clean. Just a very small amount of chemical or detergent residue is going to impact the way the beer tastes. It can also make the beer go flat very quickly.”

Despite the growth of the program, don’t expect cicerones to replace sommeliers anytime soon in the world of fine dining. Beer generally doesn’t cost as much as wine, and there simply isn’t enough profit in it to justify a fulltime staff member. Walk into an upscale bar or lounge, however, and you’re likely to find a cicerone. Apart from that, the greatest impact of the program has probably been to improve storage and transport conditions within the distribution chain.

The current popularity of craft beer has created several challenges for small brewers. The first is competition within the category: More than 400 craft breweries opened during 2012, but 43 also closed. The other challenge is external. The success of craft brews hasn’t gone unnoticed by the large commercial breweries, and many have started their own labels to regain a slice of the pie. Blue Moon Belgian Wheat Beer is made by Miller Coors, while Shock Top is produced by Anheuser-Busch; both have the appearance of craft beer, and insiders refer to them as “crafty” brews. The official price for a six-pack of Blue Moon is $11, but it’s not hard to find it for $8, and more than two million barrels were sold last year. Ultimately, craft beer—like boutique wine—may turn out to be in the eye (or on the taste buds) of the beholder. « NAPLESillustrated.com | APRIL 2014

Many visitors are drawn to the River of Grass to capture a glimpse of the many types of spectacular birds it harbors, including the endangered wood stork and bald eagle. And while the mosquitos in the marsh environment are far from welcome by birders, perhaps they should be. As the largest wilderness in the Southeast, the Everglades is home to 67 threatened or endangered species Everglades National Park keeps a close eye on all its endangered species, including the Florida panther, which it monitors by aircraft and radio collars. Tracking every move of the elusive panther, as well as what it eats, is critical in managing its future, according to the National Park Service. The Florida panther was hunted nearly to extinction by the 1950s, nearly 80 years after a bounty was placed on the carnivores because they were feared to be a threat to humans and livestock. Today, the National Park Service estimates there are fewer than 100 Florida panthers living in South Florida's wildlands.

An Entertaining Twist to Tradition The Sissmans take a convivial and unconventional approach to Passover

On an April evening at the home of David and Daryl Sissman and their three children, ages 5 to 9, all eyes are on Arthur Sissman, the family patriarch. The Passover seder service is about to get under way and about 40 friends and family—Jewish and not, old and especially young (nearly half are under age 10)—are waiting for his cue.

“Now everyone open up Sammy Spider,” Arthur says with a grin.

Even though Arthur, David’s father, could have easily passed for a vaudeville performer, given his penchant for comedy and reverberating voice, the spider reference was no joke. It’s the title of a playful version of the traditional Haggadah prayer book that has been read aloud during

“Large family seders when I was a kid were pretty intimidating—big tables, fragile plates and Haggadahs filled with antiquated English,” David says. “We’re glad to bring a more kid-friendly environment to a great tradition.”

The night indeed has become known for surprises, laughs, inspiring decor and Daryl’s universally loved recipes. Anyone can appreciate the family’s novel approach to celebrating a religious holiday, and as Naples gets younger and more diverse, the Sissmans and their inner circle are reimagining what the holiday dinner means.

“With my friends, I have an open-door policy and the majority of the people who come are not Jewish. I want them to experience something different, but I warn them that they have to bring a sense of humor and understand that this is not how most people do it,” Daryl says.

A natural entertainer, the former bond trader kicked her creativity up a notch when she traded in watching the financial markets to be at home with her kids full-time.

When David accepted the position of managing director at Naples-based investment fund Private Capital Management in 2010, the family moved here from Miami. Even as the new family in town, Daryl began to host unique parties, quickly warming up to the town and her new neighbors. Over the years she has figured out how to marry elegance and whimsy.

For example, last year’s party dazzled guests with an ethereal play on water, as the story of Passover takes place on the banks of the Nile River and Red Sea (celebrating how Moses led the Jewish people to freedom from the Pharaoh). A turquoise tablecloth was accented by a glitter-embellished overlay, and tall vases filled to the brim with strands of orchids were interspersed with lower-profile vessels featuring calla lilies and giant tropical leaves.

Napkins, folded to resemble lotus blossoms, sat atop each plate; tiny origami frogs served as place cards.

When it comes to the younger participants, the challenge for this holiday (and most religious holidays) is finding ways to subtly add educational touches. At the neighboring kids’ tables, Sissman accomplished this by creating wheatgrass centerpieces sprinkled with frog figurines, as frogs play a role in the Biblical story. She

also turned the usually humdrum task of finding a seat into a game for the children.

Place cards had their names printed in hieroglyphics—the language used in Egypt at the time of Passover—and everyone was given a code to decipher the ancient language.

Passover is a weeklong observance, and the Sissmans hold an intimate seder for immediate family the first night, followed by this festive gathering the next evening.

“Many Jews celebrate the first two nights of Passover by having two seders. We do a standard, traditional Haggadah text the first night, but this is a wonderful second night for younger children,” Arthur says.

The first break from tradition at the party is how the religious service is presented.

Rather than Arthur conducting the ritual at the dinner table, he stands before a group of youngsters lying on an aquamarine rug in

the family room, while adults line couches along the perimeter. Because of the earlychildhood reading level in the Sammy Spider book, every person around the room takes turns reading the story.

“It melts your heart when children and grandchildren take responsibility for part of the seder,” says Susan Sissman, David’s mother. “This whole thing is not traditional.”

(the part that sets up the retelling of the Passover story), that’s where the Sissmans add another twist. At a regular seder they’re read once, but here they’re spoken aloud in at least three other languages—most years it’s Spanish, French, Portuguese and Greek because of regulars in the crowd. At the same time, anyone is welcome to read them in a language of their choice, thanks to the Sissmans’ weathered copy of a book that lists 300 ways to ask the four questions.

Howard Schott, a first-time attendee last year, recited in Shakespearean English how the bitter homemade horseradish about to be served “doth remind us of the sour tenor of the hour,” which elicited a chorus of giggles. “The four questions in other languages is definitely a Sissman tradition,” Daryl says. “It’s fun, but we also do it as a reminder to kids that there are Jews all over the world.”

Shortly after the ritual ends there is, of course, a feast. It is also where Sissman painstakingly incorporates traditions from around the globe.

For her last seder, rather than only serve the apple-cinnamon gremolata-like charoset typical of Ashkenazi Jewish households from Eastern Europe (which is the Sissmans’ heritage), Daryl prepared that version plus a Sephardic Jewish recipe, one with seven fruits from Suriname in South America and Syrian charoset “truffles.”

“By having recipes that represent various Jewish traditions, it makes it clear to everyone at the table that they are welcomed and included,” says Ashley Solomon, a repeat guest and friend from Temple Shalom. “The night in general opens us up to a world beyond our Naples seder.”

Sissman puts her own spin on the typical dishes. One thing she doesn’t do is create a separate menu for the children—but her tweaks do make some of the more grown-up offerings easier to embrace. Rather than serve gefilte fish (dense jarred fish patties), she whips up light, fluffy salmon cakes that are served hot and crisp, garnished with dill sauce. Even the brisket dinner gets a twist with a sweet mangoginger chutney marinade. And everyone can’t wait for a piece of her “matzo crunch,” a chocolate-covered toffee rendition of the brittle, unleavened bread.

“This is a formal dinner party with a sophisticated menu, but the night is really geared toward the kids,” Daryl says. “It’s a way to get them involved, and that’s what it’s all about.” «

The decor reflects the evening’s raison d’être: deep blue hues, frogshaped place cards, orchids, calla lilies and wheatgrass centerpieces recall the banks of the Nile River, where the historical story of Passover took place.

As a fifth-generation chef, SebastiEn Maillard says cooking might as well be in his genes. He grew up watching his parents, grandmother and great-grandfather work their magic in the kitchen, which is reflected in his culinary creations as chef and owner of Le Lafayette in Naples.

Having lived in Cannes, France, and Martinique before arriving in Naples in 2001, Maillard says his dishes encompass flavors from all of France.

“I am classic traditional, not a regional person,” he says, likening his cuisine to that of Lyon, “the capital of the world for food.”

In this interview, Maillard shares his influences, plus where his sweeter side comes from. ­—Stephen Brown

Homegrown talent: I never went to cooking school. I learned from my mom, my grandma and my greatgrandpa. It is in my blood. When my mom is with me in the kitchen in the winter—she spends five to six months here—she always checks what I do, and that is fine. It has helped me be more consistent.

Mom knows best: We are always creating, doing research. My mom is in France all summer, creating new recipes for her friends, and they critique them. Then I go to France and we try the recipes. I might change them a little or keep it her way, then we bring the recipes here. This is the way we work.

Favorite ingredient: Aged goat cheese. It can be with fish, it can be with meat. Fresh goat cheese is nice but too plain for me. I like when it has a lot of flavor and aroma.

Recipe rule: When I create a recipe, the simpler, the better. When you eat fish, the first thing you should taste is the fish. When you eat meat, you should taste the meat.

The rest is important, but the most important is the quality of the fish and the meat.

Island influence: After I spent time on Martinique, I modified my cuisine and introduced a sweeter side. For example, on a rib-eye, I will put passion fruit. The acidity of the fruit with the sweetness is very nice.

Childhood craving: Riz au lait, rice with milk [rice pudding]. I remember my dad would make it when we were kids every Sunday afternoon. We had a farm next to the restaurant so the milk was straight from the farm. It was amazing. All of my inspiration comes from my dad and mom.

South Africa Rising The renaissance of a world-class wine region born in the mid-1600s has reached U.S. shores.

After languishing for many years during the apartheid era, South African wines have once again taken their place on the world stage. South Africa has a distinguished winemaking history dating back to the midseventeenth century. In the eighteenth and nineteenth centuries, the dessert wines of the Constantia estate near Cape Town were prized around the world. The country’s best wines combine Old World tradition with cutting-edge New World techniques and have caught the attention of oenophiles everywhere. Below we highlight some of the most interesting estates.

Fairview: Although the first wine was made on this property in 1699, the fortunes of this producer (now called Fairview Wine & Cheese) really started to skyrocket when the Back family purchased the winery in 1937. The current owner, Charles Back, has been a pioneer in areas such as sustainability and fair trade. Perhaps best known in the United States for the whimsical Goats Do Roam label, which represents exceptional value at a reasonable price, Back is a stellar producer of Chenin Blanc (known in South Africa as Steen) and Pinotage, a cross between Pinot Noir and Cinsaut.

Neil Ellis Wines: In 1986 Ellis broke the mold, setting up shop as a négociant—someone who makes wines from purchased fruit or juice—in a country that places great importance on the pedigree of estate-

grown wines. Interestingly, his greatest successes have come in the United States. American wine consumers have developed a penchant for his Sauvignon Blanc, aptly named Sincerely ($12) in homage to Sancerre.

It displays mouth-watering acidity and makes a great match with shellfish, particularly oysters. Equally enticing is his red blend, The Left Bank ($14), a mix of Cabernet Sauvignon, Shiraz, Merlot and Cabernet Franc.

Ken Forrester Vineyards: In 1993, the Forrester family purchased the historic Scholtzenhof estate, which dates back to 1689. The estate’s Petit range (Chenin Blanc, Sauvignon Blanc, Rosé, Cabernet Sauvignon, Merlot and Pinotage) retails for around $10 to $12 and provides Americans with an excellent introduction to South African wine. Consumers who want to experiment further should try the regular Ken Forrester labels ($15) and the Icon range ($45).

African wine industry. His family still manages the property. Popular offerings include the Game Reserve line of wines ($13-$18) and the Cap Classique sparklers, method champenoise blends of Chardonnay and Pinot Noir.

House of Mandela: In the post-apartheid era, many estates place equal importance on producing first-rate wine and on being conscious of the social issues that contribute to their product. Not surprisingly, one of the wineries combining the two concerns is the House of Mandela.

The project was started by Makaziwe and Tukwini Mandela, the daughter and granddaughter, respectively, of Nelson Mandela. They wanted B:7.75”to enter the

wine business because they perceived that a very small number of black South Africans were involved in the industry, and even fewer women. They place great importance on sustainability, fair trade and biodiversity, and are particularly dedicated to improving the plight of impoverished vineyard workers. They are operating as négociants, buying grapes from three carefully selected estates, one of which is Fairview.

The House of Mandela puts out an entry-level line called the Thembu Collection, a trio of Reserve wines, and a methode champenoise sparkler. Roughly onethird of their production comes to the States, and the wines represent an opportunity for consumers to drink well and contribute to a good cause at the same time. «

Agenda Cut and Paste New York State-born artist Dan Rizzie is widely regarded as one of the country’s foremost collage artists. Since 1975, he has had 50-plus solo shows of his paintings and collages at museums and galleries around the United States, including selected collections at the Metropolitan Museum of Art and Museum of Modern Art in New York. The collages reflect Rizzie’s interest in antique documents—bits from old maps, stamps, sheet music and legal papers all appear in his collages.

Giving BACK

A casual, yet startling, conversation at a charity luncheon in 2010 started Jackie Bennett on a path that would ultimately lead to the launch of a children’s foundation. “They were talking about the different needs of children, and I was amazed to hear many kids went to school and didn’t even have underwear—such a basic need,” says Bennett, a Naples resident. “So I was going to buy a couple hundred dollars’ worth and take them to a school.”

Then she started to think bigger. Bennett asked friends to pitch in, who then asked their friends, and it resulted in a cocktail party that raised $5,000 for the cause. “When I saw what 20 women could do in a couple of hours, I realized I was onto something that I could build on,” she says.

She then learned that the children were also in desperate need of school uniforms. Since Bennett always knew she wanted to start a foundation, she saw this unmet need as her chance to give back in a big way. In 2012, she officially launched Angels Undercover. To date, the nonprofit has donated more than 15,000 uniforms, plus underwear and socks, to more than 7,500 needy students in 11 Collier County elementary schools. Bennett expects to add three more schools to the list by year’s end.

“It has been a pretty amazing experience,” she says, “This is what I was supposed to do.” Angels Undercover has since received many grants, the most recent for $30,000 from the Naples Children & Education Foundation. The biggest stamp of approval, though, has come in the form of wide smiles from the kids, especially when they see the tags on the uniforms.

“The tag shows them that they’re getting a new item of clothing,” she says. “They get so excited about having a new shirt; it’s really a big thing to them.” One side of the tag says: “This garment is provided by Angels Undercover, who believe in you.” The flip side is a reminder for us all: “A simple act of kindness can change a child’s life.” Indeed it can, and then some. —Teri Evans 168 NAPLES ILLUSTRATED
