If you count Super Bowl Sunday, this month brings three of my favorite days. While Valentine’s Day has its obvious merits, I like Groundhog Day as well. Although it’s not an actual “holiday” in the truest sense of the word, I enjoy the tongue-in-cheek tradition that supposedly tells us whether spring is right around the corner or we’re in for an extended winter.

Most of us understand it’s scientifically meaningless, but I suppose we eagerly take notice of anything that calls itself a barometer of the future because we always want the scoop, inside information. But, really, what does it matter if we get another month of gray weather? I find there are seldom any cloudy days when I surround myself with people who bring their own sunshine, as the saying goes. When you associate with people who do what they love, their attitude is contagious.

All my life, I have been fortunate to have lived and worked with exceptionally passionate people. Family, friends and colleagues at various times have each shown me how deeply they care about their particular pursuits—whether it’s their careers, their favorite causes or their personal interests—and that ultimately inspires me in many ways. It’s easy to find myself invigorated about my own pursuits after spending even a little bit of time with them.

At our offices, for example, it’s therapeutic to walk around and simply observe some of the brightest people in the publishing business in action. For most of them, this is more than a job, it’s a reflection of their own personalities—a calling. Of course, this is not unique to us.

Business executives (the late Steve Jobs of Apple immediately comes to mind), teachers, physicians, even a friend of mine whose hobby is handcrafting fine furniture … the world is filled with people passionate about what they do. Those are the people whose company I seek.

And, yes, passion in the traditional sense—the kind associated with Valentine’s Day—can be just as energizing. There is nothing quite as simultaneously impressive and amusing as watching people going to every extent possible to demonstrate they’re worthy of someone else’s affection, plying them with flowers, jewelry, chocolates and other indulgences. It’s easy to feed off that kind of verve and vivacity, regardless of your own romantic attachments at the time.

In the end, we’re not at the mercy of a rodent in Pennsylvania to tell us whether we’ll see cold, gray skies. Engaging with those who radiate passion and energy on a daily basis overcomes any weather forecast. What we choose to experience is entirely up to us.

COOL AND COLLECTED eapolitans are collectors. In their working lives, many collect accolades as they grow and develop successful businesses. They also collect friends through their communities and charitable endeavors, and many who have retired are free to pursue passions that they may not have had time for while building their careers.

That means that at nearly every turn are connoisseurs of wine, food and art whose generous spirit promotes sharing these pursuits with others.

Art collector Olga Hirshhorn, whose art resides at the Corcoran Gallery of Art in Washington, D.C., the Patty & Jay Baker Naples Museum of Art, and her homes on Martha’s Vineyard and in Naples, will be honored with the 2012 Patron Award by the International Sculpture Center (page 162) for her support of the arts.

Each year, art aficionados can share the creative process with artists, as well as the results, at the Third on Canvas fundraiser.

Renowned maritime painter John Stobart gives an insider’s look into the process of finding a suitable scene to paint for this year’s event in March (page 84).

Dr. Ernestine A. O’Connell wanted to make sure her collection of artifacts from around the world would be studied and enjoyed for generations to come, and she found a home for it at the Golisano Children’s Museum of Naples, which opens this month. At the museum, O’Connell’s collection will delight along with a fine art collection started by William Meek (page 100). The museum was envisioned and funded by a collection of friends, among them Shelia Davis (page 192).

Sandi and Tom Moran created a home to house their collections, not the least of which are large gatherings of friends for various charitable endeavors. In addition to wine collections, the home is a showcase of a unique collection of Art Deco chandeliers (page 106).

Executive Chef Brian Roland at M Waterfront Grille wanted to share fine ingredients along with the talents of fellow Naples chefs, so he created a Chef Series, five food-focused dinners that paired amazing ingredients prepared by Roland and other local chefs (page 90).

In this month of love, celebrate your passions as well as the passions of others. What’s not to love?

If they have a chance, to see the film, 100 Voices. … Some 30 percent of the people in Warsaw were Jewish, and they’re all gone. Krakow had 70,000 Jewish people before the war, and 120 now. In this film, Poles talk about the culture they want back that they lost because of the Holocaust. It’s necessary to preserve the heritage and culture, and always remember what happened in that period in Europe. n What’s next on your agenda?

I’m going to start on a piece I’m going to conduct in Munich this summer, a memoriam to the Israeli athletes who were killed in the Munich Olympics. In the meantime, I’m working on two shows, hopefully for Broadway.

Naples has a new dining destination that offers many cuisines in a variety of venues. Nearly all of the restaurants on one block of Fifth Avenue South near U.S. 41 are independently owned. In November, customer favorite Mangrove Café reopened after being closed for 10 months following a propane explosion. Aqua Seafood & Steaks opened in the former Bert’s Seafood & Chowder House with a familiar name behind it, Mr. G (who, like Cher, needs no other introduction). Mr. G, formerly of Vergina and Mr. G’s, has opened more than eight restaurants in Naples with friends, and has many staff members who have been with him for years. His newest venture focuses on fresh ingredients and whole fresh fish. Alberto Varetto, chef at Sale e Pepe on Marco Island for 11 years, opened his own northern Italian restaurant, Alberto’s on Fifth to offer fine Italian cuisine. The new restaurants join Chops City Grill, which recently debuted a new menu, and Pazzo, both by Skip Quillen, a long-time Naples restaurateur. Bistro 821, offering natural fusion, is also a longtime favorite, owned by Bill Holcomb, who was part of the team that opened it in 1994.

The only chain in the group, Rossopomodoro, features Italian food from southern Italy.

Pizza Delivery What to do when the wood-fired pizza oven ordered from Italy is too big and too heavy to fit through the door? Go through the roof! Fabrizio Aielli, creator of Sea Salt, opened Barbatella Spirited Italian Trattoria with pizza, pasta, rotisserie meat, gelato and a wine bar earlier this year. Creating the new restaurant in two separate buildings—a former gallery and flower shop joined by a courtyard—was not without challenges. When the nearly 4,000-pound dome-shaped Marra Forni pizza oven arrived from Naples, Italy, it wouldn’t fit through the door. Since builders had to open the roof for air conditioning, says chef Dario Leo, they brought in a large crane to lower the brick oven into the restaurant. Leo met Aielli in Italy, and has worked with him on and off at other restaurants, before relocating to Naples to open Barbatella. Now the oven is humming along with the restaurant’s gelato machines, Enomatic wine server, and rotisserie. The restaurant was designed by GrizForm Design Architects, Washington, D.C., which also designed Sea Salt. The decor includes ceiling medallions in the bar side of the new restaurant, 1,400 of them overhead and on the walls, along with brick salvaged from a burned Chicago building, and black and white images of famous Italians eating pasta.

UPTOWN FRENCH The creators of Le Lafayette French Gourmet recently celebrated the restaurant’s tenth year in Old Naples, but they are not resting on their laurels. Le Lafayette’s Sebastien Maillard and his sister Astrid, with Dave DiGrazia, have launched Paris, a chic yet casual restaurant in the Plaza Walk, Naples. The bistro, bakery and lounge serves breakfast, lunch and dinner in comfortable dining areas inside and out, along with a dazzling assortment of eclairs, croissants, meringues, macaroons and other French pastries and breads. A welcome element of Paris is its latenight menu, available from 10 p.m. until midnight, Thursday through Saturday. “It’s good to sit and relax in a quiet lounge atmosphere,” DiGrazia says. From omelets, crepes and quiche to escargot casserole and cheese raclette, a visit to this Paris is like a trip to the City of Light without leaving Naples.

If you were shoveling snow at this moment, you might balk at the notion that it’s cold in Florida. Everything is relative, of course, and the winter months here can be downright chilly at times—not cold enough to go ice-fishing, but brisk enough to rationalize indulging in our favorite winter cocktails. Some classics to warm up your evening: MANHATTAN: The legend, likely untrue, is that it was invented at New York’s Manhattan Club in the 1870s at a dinner for politician Samuel Tilden, at the request of Jennie Jerome (otherwise known as Lady Randolph Churchill, Winston’s mother).

The type of whiskey also is a matter of controversy. Lifelong New Yorkers will insist that the drink be made with rye; many people believe that bourbon or Canadian whiskey are the only choices. As with other cocktails of this type, feel free to experiment with the vermouth until you reach a proportion that is correct for you.

WHISKEY SOUR: There’s some evidence that the whiskey sour, pisco sour and similar drinks all had a common ancestor, namely punch, while others claim it originated in Wisconsin. Either way, the key is not to use mix. The difference between a

drink concocted from scratch and one made from sour mix is similar to the difference between fresh-brewed coffee and instant.

OLD FASHIONED: Most cocktail historians date the origins to the Pendennis Club in Louisville during the 1880s. As with the Manhattan, there is serious disagreement about the type of whiskey to use. Purists demand bourbon, but there are plenty of recipes using Scotch, Canadian or Tennessee whiskey.

IRISH COFFEE: Everybody’s Irish when it’s cold. You don’t need to be a mixologist for this one: Pour hot coffee into a mug, stir in Irish whiskey and sugar, and float cream on top. Most versions call for whipped cream because it floats easily, but purists use fresh, heavy cream. u

NEGRONI: This classic aperitivo consists of equal parts gin, sweet vermouth and bitters (generally Campari). It was supposedly invented in 1919 when Count Camillo Negroni asked a bartender in Florence to strengthen his favorite cocktail, the Americano, by adding gin in place of club soda.

STINGER: This is one of the most famous examples of a duo cocktail (a combination of a spirit and a liqueur). Simply combine in a proportion of three parts brandy to one part crème de menthe; for a Green Harvest, use green crème de menthe in place of white.

RAMOS GIN FIZZ: Also known as a New Orleans fizz, this is the quintessential Mardi Gras cocktail, made with gin, lemon juice, sugar and soda, plus egg white, orange-flower water and cream or milk. The trick is to shake until your wrist hurts, creating the trademark white froth on top.

SAZERAC: One of the oldest American cocktails and the official drink of New Orleans, the Sazerac combines rye whiskey, absinthe and Peychaud’s Bitters. It is complex to make and not for the faint of heart, but will warm you up faster than just about anything else.

HOT BUTTERED RUM: Put another log on the fire and start skewering those marshmallows—this is the mother of all toddies.

The Seabourn experience is so different that the cruise line doesn’t even call its vessels ships. It refers to them as “the yachts of Seabourn.”

True, they are much smaller than typical cruise ships. The largest in the fleet—the Odyssey, Sojourn and the new Quest—can accommodate up to 450 guests, with the smaller ships limited to 208. For comparison purposes, large ocean liners have a guest

capacity of about 1,000, with some mammoth superliners going as high as 2,500.

And yet there is nothing small about the experience. On the Quest, which recently made its debut on North American shores, every room is a suite, and 90 percent of these have balconies. Unlike other lines’ staterooms, where you always seem to be bumping into the furniture, even the most basic suites on the Quest have walk-in closets, generous sitting areas, writing desks, tables inside and out for private dining (any meal can be taken in-suite), and bathrooms with separate tubs and showers and double vanities.

Public spaces are large, too (with the exceptions of the casino and Restaurant 2, the more-intriguing dining option, which seats only 48). For example, the two-deck spa measures 11,400 square feet and offers a Kinesis wall, herbal bath facilities and an extraordinary indoor/outdoor spa villa that is ideal for couples.

The main benefit of cruising Seabourn, however, is the service, in both quantity— the Quest’s mostly European crew numbers upward of 330, for a guest-to-crew ratio of nearly one-to-one—and quality. The company training must be rigorous, because these polished men and women ensure you want for nothing. If you happen to be aboard a cruise that offers the Caviar in the Surf experience, you’ll know what we mean. After the ship anchors, servers walk in the shallows with trays in hand to ply you with Champagne and caviar as you float without a care. It may not be for everyone, but no one can dispute it is the height of indulgence.

As you read this, the Quest is on its maiden world cruise, stopping at such ports as Cape Town, South Africa, and Ho Chi Minh City, Vietnam, before terminating in Venice, Italy, in April. That enviable itinerary includes enrichment programs like lectures by composer Marvin Hamlisch and astronaut/aquanaut Scott Carpenter, performances at the Saigon Opera House, and private tours of the eponymous winery of golfer (and Jupiter resident) Ernie Els. All this is typical of the Seabourn experience, where much is lavished upon few. After tasting it once, it’s hard to imagine any other way. seabourn.com u

Luxury PLUG AND PLAY Driving the remarkable new electric Rolls-Royce Phantom 102EX is a lesson in current affairs.

Sleeping babies make more noise than this. Marcel Marceau performing before Benedictine nuns creates a greater ruckus. All you hear from your throne-like driver’s seat is a distant whoosh of wind noise, the muted thrum of tires pitter-pattering over acned asphalt.

We’re driving an electric Rolls-Royce. No, not one of those cheesy chrome-grilled golf carts you see at the Tiburón Golf Course. This is the Rolls-Royce 102EX Phantom Experimental Electric, to give it its full title.

Instead of a gas-gulping V-12 engine under that mile-long hood—11 mpg city on a good day—there’s a 1,400-pound battery pack comprising 96 lithium-ion cells cranking out 71 kilowatthours of juice. Hook it up to your laptop and it’ll run until the next century.

All that voltage and wattage are channeled to two enormous electric motors ironically occupying the real estate normally reserved for the gas tank. Together, they crank out an impressive 389 horsepower and axle-twisting 590 pound-feet of torque. The Hoover Dam in full flow doesn’t generate this kind of energy.

The end result? Zero to 60 mph acceleration in fewer than 8 seconds and, most important, around 125 miles on a single charge— 72 NAPLES ILLUSTRATED

without a single drop of Texaco’s finest consumed in the process.

But don’t go rushing down to your local Rolls-Royce retailer just yet. This 102EX is a one-off, high-tech rolling test bed to help Rolls engineers explore ways to lessen their size 14 carbon footprint and explore alternative powertrain technologies.

It’s also given Rolls-Royce the opportunity to discover whether its customers around the globe would be partial to an electric Phantom. Since its debut last spring, the car has been flown, trucked and trailered to no fewer than 28 international cities—everywhere from Shanghai to Singapore, Paris to Pebble Beach—where customers have eased behind the wheel.

Stop 26 on the 102EX World Tour was Miami, where we got the chance to find out “watt” this plug-in Roller is all about, and whether it has the volts to take us “ohm.” (Sorry, couldn’t resist.)

From the outside, there’s little to distinguish the 102EX from the standard Phantom. It has stunning one-off Atlantic Chrome blue paintwork that features minuscule chrome particles in its 16 coats.

You might also notice the gorgeous Lalique-like translucent Spirit of Ecstasy made of polycarbonate. At night, tiny LEDs cause it to glow with an eerie blue hue.

With no key to twist or engine to crank, the 102EX is ready at the prod of the accelerator. And accelerate it does, like a clown being shot out of a circus canon. From standstill to 30 mph, it’ll shame Ferraris, so explosive is the off-the-line thrust.

But what’s so crazy-spooky about this car is its total absence of noise as you rocket forward. There’s no revving engine, no revving anything. It just lunges forward in dead-of-night silence.

After this initial thrust, performance tails off ever so slightly; the benchmark 0-to-60 mph sprint is covered in a whisker under 8 seconds, compared to 5.7 seconds for the gasoline Phantom. And to conserve energy, top speed is limited to 100 mph instead of 155.

While 102EX has a socket to plug in a charging cable—it’s where the filler cap usually lives—the really cool feature is its induction charging. A receiver pad is mounted underneath the car’s battery pack, and the idea is that a similar-sized transfer pad is mounted on the ground—say, in your home garage or office parking space.

You simply drive the Phantom over the pad and park it, and the miracle of induction charging will transfer electrons across the five-inch gap to charge the batteries.

No cables, no plugs. With household-appliance 220 volts, a full recharge takes around eight hours.

Rolls-Royce says there are no plans to put the EX into production. That said, some kind of electric powertrain—maybe an advanced gas-electric-hybrid—will likely be in its future. One thing’s for sure: This is certainly an electrifying start to its program. u

Not in Plein Site Painter John Stobart takes his artistic vision on a tour of Naples, in search of a suitable scene.

Naples is picture-perfect. Artists have long recognized its beauty and have flocked to its waterfront to soak up the layers of light and render on canvas its vibrant palette.

This abundance of artists and scenes to paint inspired a fundraiser, Third on Canvas, which invites artists outdoors to paint the Naples landscape, and to donate those paintings to benefit a nonprofit organization.

sailing ships, is not immune to the allure of water and boat-rich Naples. After having a gallery in town for many years, he still comes often from his home and studio in Fort Lauderdale to visit friends in the art and collector community. For two years he has joined plein-air artists who paint on-site for two days, interacting with the public and creating a scene to be sold for charity.

For this year’s event, Stobart’s work began long before he will set up his easel next month. Last fall, Stobart took a tour with Frank Russen, director of modern masters acquisition at The Englishman in Naples. Russen first became familiar with Stobart’s work in Pennsylvania 16 years ago. “I went to the Stobart Gallery in Pittsburgh every day until they hired me,” Russen says. He worked for Stobart’s gallery in Pittsburgh for nearly 10 years, splitting his time with Stobart’s Naples gallery for nearly four years until 2003.

Russen has remained friends with Stobart ever since, and has represented his work often through the years, including now at The Englishman. The two were searching for the right scene for Stobart to paint for this year’s Third on Canvas.

“Last time we looked all over until we found this opening through the trees into Naples Bay near the Dock Restaurant,” Russen says. The time before, Stobart found a path through sea grapes with a view of the iconic Naples Pier that he liked.

This trip, Stobart was looking for similar inspiration. “When you sit in front of something, that’s when the magic happens,” he says.

“I love architecture, nature, and a mixture of each. Maritime painting is a plein-air thing. You need to see the place at different times of the day. You can hit something by accident after a few hours of looking. I’m looking for something that’s framed in a certain way.”

Growing up in landlocked Derbyshire, England, Stobart developed a penchant for sketching and drawing. On a trip to Liverpool to visit his grandmother at age eight, he went to the waterfront.

“Liverpool was crammed with ships of all kinds,” he says. “It completely seduced me. I knew I was married to that subject.”

After Stobart failed in school, his pharmacist father was able to get him into Derby College of Art. Stobart received a rare appointment to the Royal Academy of Arts in London, where as a student he learned he could making a living when he sold a hastily rendered

Third on Canvas Each year, artists flock to Old Naples to paint the scenes of the historic community, interpreted through their own style and artistic eye. Paintings are donated and sold at auction to benefit The Children’s Hospital of Southwest Florida.

This year’s painting days, which will include nearly 40 artists painting throughout the area, are March 12 and 13 from 10 a.m. to 4 p.m. The auction gala at Sea Salt restaurant March 18 includes a live and silent auction.

scene of boats on the River Thames for more than a month’s living expenses. On a boat trip to Bulawayo, Zimbabwe (then known as Southern Rhodesia), where his father lived, he painted boats in exotic ports along the way. Stobart’s work caught the attention of some British shipping companies, which began to commission him to create paintings that would be used for annual calendars sent to clients around the world.

While living in Canada, Stobart learned about the majestic sailing ships at the Maritime Museum of Upper Canada, and set out to paint the scenes of nineteenth-century American clipper ships.

As his work became more popular and his skill more refined, a friend sent him to New York to market his work. On the train Stobart happened to sit next to an art magazine editor who liked his work and gave the inexperienced Stobart connections at New York galleries. At age 35, Stobart took four paintings to the Kennedy Galleries, where he was booked for a one-man show after being in New York for a little more than an hour. Sales at the show averaged $6,000 each, earning a total of $140,000. Today paintings by Stobart are some of the most sought-after works of any living marine artist, commanding record prices nationwide.

He attributes his success to extraordinary luck, along with talent and hard work. A martini glass he created for the Celebrity Martini Glass auction in Naples in November fetched $3,250. It was purchased by art collectors and major supporters of the Naples Museum of Art, Jay and Patty Baker, who were not familiar with

Stobart’s work before the glass caught their attention. “We looked at it and liked it,” Jay says. “We love art. I have to see his work. I know he does a lot of scenes from the East River in New York.”

On this scouting trip, Stobart wasn’t so lucky in finding inspiration for his next Naples painting. He looked at the historic Port Royal boathouses, Crayton Cove, Tin City, the beach in Port Royal and waterside locations during a sunset boat trip. But the artist, whose career has been marked by good providence and a refined vision, wasn’t worried.

“We’ll find something, even if it’s at the last minute,” he says.

“Things happen by miracle.” u

KITCHEN MASTERPIECES Chef Brian Roland’s recipe for creative cuisine: Cooperation, collaboration and community, with a dash of competition.

Imagine steaming dozens of tiny quail eggs, shelling them, and removing the yolks to make a multitude of teeny deviled eggs. Or firing up a special machine to turn out 70-plus little puffs of foie gras cotton candy to garnish a dessert. These may not be examples of average restaurant preparations in Naples, but are two examples of the imaginative creations hatched by Brian Roland, executive chef at M Waterfront Grille, working alongside an impressive lineup of other great Naples chefs for the Summer Chef Series.

Producing the five monthly dinners— each with a theme ingredient used in amuse-bouches, two courses by Roland, two by visiting Naples chefs, and a jointly conceived dessert—was like walking a highwire without a net. The chefs hadn’t worked together before, and the visiting chefs were working in a strange kitchen, making complex new dishes. In daredevil fashion, the chefs presented the dinners with nary a slip off the tightrope.

“We had to develop a wine dinner program for the summer,” Roland says. “And I

thought, what would be fun and exciting?

Head-to-head competition-like cooking battles are popular,” he says. “I thought of this concept where I could invite different chefs into my own kitchen and do a similar kind of head-to-head action, where we’re not really competing for anything more than bragging rights, but gives us a sense of camaraderie in the community.”

Each night was dinner and a show. In addition to unique cuisine and interesting wine pairings, the chefs presented each course with informative and often funny comments.

Chefs can be egotistical, but Roland says the overwhelming attitude was one of cooperation. Diners received a comment card to say which dishes they liked best, which conferred those bragging rights, but with so many dishes at each dinner, all the chefs got their props.

Kurobuta Pork The inaugural event paired Roland with Tony Biagetti of Handsome Harry’s Third Street Bistro, with the theme ingredient Kurobuta pork.

Standouts among the evening’s dishes included Biagetti’s duet of appetizers— Barolo-braised pork-cheek tortelloni with Taleggio cheese, rosemary, lemon and sauce verde, and fennel-cured pork belly “agro dolce” with cipollini onion confit and fennel crudo. Roland’s entrée, a vanilla-spice-rubbed Kurobuta pork tenderloin with sweet corn and white truffle polenta, almond caramelized Brussels sprouts and pomegranate-espresso gastrique, was also a favorite. Perhaps the most appreciated dish was dessert—Vermont maple semifreddo with crispy sweet cured bacon, dried blueberry syrup, bourbon-pecan tuile, and smoked fleur de sel.

“It was killer,” Roland says.

Sablefish In the second dinner, chef Fabrizio Aielli traveled uptown from Sea Salt on Third Street South to create courses featuring one of his favorite ingredients, sablefish.

“It was innovative, full of flavor, it challenged the senses in many ways. The food was interactive, very creative,” Roland says about this dinner.

Roland made a crispy sablefish brandade using a thermal circulator to make a sous-vide Meyer lemon confit to accent the dish. He made pasta for little raviolis he filled with the brandade, then fried and topped it with tomato-sage jam. And this was just his amuse-bouche. Aielli’s little bite was a similarly intricate, a warm white chocolate-sablefish “milkshake” with black truffle essence. “Sablefish and white chocolate go well together, surprisingly,” Roland says.

Aielli’s first course focused on umami, the fifth taste. He created fluorescent sablefish carpaccio, soaking it in beet juice so that it went from the center out from white to pink to purple. It was sliced thin

and served with Acquerello risotto, an Italian barrel-aged rice, and Colonatta lard (pork belly that’s 90 percent fat) used for texture and flavor in a sea urchin cappuccino. Dry ice was placed in the serving shooter glasses, to which the chef added the cream cappuccino, creating foam that bubbled over onto the fish and the rice.

Roland’s entrée course, curry seared Pacific sablefish with molten truffled lobster potato fritter, semi-frozen Jersey corn custard brûlée, spinach and salsify, involved a pipette containing a reduced wild mushroom liqueur skewered with mushrooms. Guests could use the pipette to squeeze the liquid onto the fish or into their mouths.

For his second dish, Aielli’s orange agave broiled sablefish included a clever extra virgin olive oil dust that guests were instructed to eat first.

The only instance in the series in which a course did not include the theme ingredient was the dessert. Instead of trying to incorporate sablefish, Aielli and his executive chef came up with a fun and interactive concept, with a chocolate praline “burger” on a sweet brioche bun, with an “egg” made of gelatinized coconut milk and mango sphere yolk that burst and spread when bitten. Biscotti “fries” were served in a tiny Chinese takeout container, with raspberry sauce “ketchup” and vanilla saffron gelato “mustard.” On each table a bowl was filled with dry ice

and vanilla scented water that filled the air, and servers went through the dining room spraying lime and rosewater to get all the senses engaged.

Petrossian Caviar Things changed up for the third dinner, as two chefs, Vincenzo Betulia and Mike Mueller, of Campiello and Café Lurcat, respectively, came to make dishes incorporating caviar.

This dinner was especially well attended, with fans of Betulia and Mueller filling many spots. As cutting-edge as the evening with Fabrizio Aielli’s and Roland’s cuisine was, the dishes prepared by Betulia tended toward rustic simplicity, which created a nice contrast with Roland’s

cooking. The chef from Campiello served uovo in raviolio, a satisfying first course with handmade ricotta, Swiss chard, egg yolk, Vacche Rosse Parmigiano, Schrencki caviar and nocciola butter. “Vincenzo’s ravioli was fantastically prepared, the flavors were awesome,” Roland says. The funny, charming Betulia added a lot to the entertainment as well.

In keeping with his penchant for creating food that’s fun and different, Roland presented smoked Scottish salmon and buckwheat blinis with Petrossian trout roe, crème fraîche espuma, crumbled egg and garlic flowers for his first course. The presentation was ingenious—alongside the blinis and salmon was a shot glass made out of ice with a glow stick embedded on

the side, filled with vodka, and accompanied by a liquid olive, a caviar cube, and a little icy blue cheese lollipop, sort of a deconstructed martini.

Mueller’s entrée course of Australian Wagyu beef rib eye was a savory success, with roasted beef bone marrow, buttermilk fine herb crêpes and Alverta white sturgeon caviar.

The dessert, toasted almond biscuit with white chocolate, lemon curd and Petrossian caviar, plus a bourbon-vanilla panna cotta with hazelnut butter, macerated berries and berry “caviar,” sounds odd, but it was a delicious multilayered taste experience.

Foie Gras The chefs of I.M. Tapas, Isabel Polo and Mary Shipman, came next to Roland’s home turf, to tackle dishes with foie gras.

Polo and Shipman prepared a stunning appetizer of roasted black mission fig “sushi.” Figs were stuffed with foie gras mousse, flavored with thyme, bay leaf and brandy, served with deep-fried pickled ginger, green peppercorn gelee, and a wine reduction.

The winning name for any dish in the five-part series was Roland’s Duck, Duck, Goose! Ménage à Foie. More than just a clever name, the appetizer included duck liver crème brûlée with vanilla salt, lavender and honey crisp; duck prosciuttowrapped asparagus with Ermitage triple cream, quince and foie vinaigrette; and goose liver torchon with tomato marmalade, goat cheese panna cotta and pumpernickel. While it may sound like liver overload, all the ingredients were used in balanced amounts with ingredients to tickle rather than overwhelm the palate.

Polo and Shipman’s entrée was a magic marriage of Chilean sea bass and seared foie gras, while Roland’s second course pairing filet mignon and medallion of foie gras departed from the classic dish with savory brioche French toast and truffled popcorn cream.

The over-the-top dessert, “Foie 3 Ways,” incorporated chocolate-dipped éclairs filled with foie gras mousse, foie gras ice cream, caramel ganache, berries and a whimsical cloud of foie cotton candy.

Quail Eggs Rounding out the series with quail eggs—pun intended—was David Speegle, formerly of Roy’s in Naples.

For both chefs, executing something as à la minute as quail eggs in large volume was a challenge they relished. Making crêpes, cooking sous vide eggs, even just shelling

the diminutive eggs without getting shells in the food was a bit tricky.

Roland’s crowd-pleasing amuse-bouche paired toasted brioche with poached quail egg, preserved lemon cream, lava salt and chive. “I like to take traditional flavors and drive them to the plate with wacky presentations,” he says. For his first course, quick-fried quail egg and steak tartare napoleon “nouveau,” he layered the beef on the bottom, then asparagus with crème fraîche, lemon, fried capers and more beef, with a fried quail egg on top. He added aerated capers to create caper foam, and suspended crispy capers on top, then offset the dish with mustard gelato.

Speegle made an unexpected version of deviled eggs, served with maple bourbon-glazed pork belly and white cheddar grits, a tedious dish to make, and one he is unlikely to make again, even though it was a hit with guests.

As with the previous dinners, the collaborative dessert was well received. The quail and chicken egg crêpes included Speegle’s trio of sweet and salty caviars in raspberry, mango and soy, with white chocolate mousse, anglaise-flavored chantilly and toasted macadamia madeleines.

At the conclusion, Roland says, “One of the coolest things for me is that I pushed myself to do new things that I’ve never done before. It’s been great because I pushed myself to learn and at the same time trying to create a dining experience for people that they’ve never had.” Plans are under way for another series that will be different in some respects, with all new guest chefs cohosting. Masked Museum The new Golisano Children’s Museum of Naples is world-class for many reasons.

When the new Golisano Children’s Museum of Naples opens this month, the tech-savvy, state-ofthe-art exhibits will delight, educate and surprise.

Children will play in the snow and the Everglades, at the beach, in the trees, on the farm and many other places through the latest interactive exhibits designed to engage imagination as well as intellect.

Staff and donors have spent years planning, consulting, raising money and building to finally have children experience the efforts.

As the newest children’s museum in the United States, it’s a bright and shining addition. What really makes the Naples museum a standout nationwide, though, is old stuff—the museum is one of few to have an extensive global artifact collection, and possibly the only to have its own fine art collection.

The O’Connell Collection Education is the museum’s primary purpose, so introducing children to different cultures was always within the plan for its World Café. The “how” part of that desire was resolved spectacularly with the donation of the complete collection of Dr. Ernestine A. O’Connell, a Venice, Florida, resident who amassed tribal, folk and other art and objects from 145 countries during 45 years of travel.

The call about the collection came from a curator of the International Museum of Folk Art, which had been contacted about donating the collection

by O’Connell, an only child who never married. The curator, who had worked at a children’s museum, contacted Joe Cox, executive director, to see if the Naples children’s museum would be interested in what his museum didn’t want.

“I get an awful lot of calls from people wanting to donate,” Cox says. “Usually it’s seashells or Barbie dolls. With this call, my heart skipped a beat.”

O’Connell, who was then 85 years old. She liked Cox and the plans for the museum so much, she decided to donate her entire collection, some 2,000 objects, to the children’s museum.

“We went to Venice to her 1950s bungalow,” Cox recalls. “I walked in and my jaw dropped. From floor to ceiling were masks, puppets, costumes, musical instruments.”

Carrie Cutchens, a professional curator, had recently moved back to her hometown of Naples and began volunteering at the museum. As a volunteer, she met and began working with O’Connell, learning about her and the collection.

“She had books, amazing stuff, every drawer had documentation, receipts,” Cutchens says. “She started traveling at the age of four, and the first thing she collected was shrunken heads.”

O’Connell traveled 10 months of the year, and when she was home in Florida, she shared. She kept journals and had 140,000 slides organized into lectures she would give at the public library. The museum also has her handwritten and typed notes and 236 audio recordings of the lectures.

“What makes this collection so special is the items, but also the provenance,” Cox says. “She kept track of where she was when she bought a piece, down to practically what she had for lunch. When we display a mask, it’s not going to be, ‘Here’s a mask from Africa.’ We can tell what Dr. O’Connell bartered for it.”

Cox says those stories are as important as the artifacts. “She has some rare masks from the South Pacific that are in very few museum collections because the tribes made them and threw them into the fire,” Cox says. “She was a single woman traveling the world in the 1970s, and she pulls the masks from the fire and starts bartering.”

O’Connell died in October 2009, less than a week after Cutchens was named the museum’s curator. Cutchens spent the next several months cleaning out the house, taking inventory of the collection and preparing it to be moved. “It took six guys nine hours to pack up her house,” she says. The initial inventory, for which items were tied back to documentation and photographed, took a year and a half. “We still have a couple hundred pieces to tie back to the documentation.”

As Cutchens and interns have been working with the collection, the rest of the staff has planned how to bring it to life. Four display cases in the World Café will showcase pieces from a specific country or region, with each destination changed quarterly. The pretend café will include menus from the spotlighted country, and museum programs will include festivals, folk tales, art projects and educational curricula for children of all ages.

“It’s a big part of interpretation of culture, from traditional to modern,” Cox says.

The first World Café exhibit focuses on Thailand. “We will tell the story of Dr. O’Connell in Thailand,” Cox says. “She will almost become a character in the museum.

We’d love to do a series of books about her.”

Parts of the exhibit that are not on display will be upstairs in a visible collection storage space, where Cutchens and others can be viewed working with the art and artifacts.

Eventually, with grants and funding, the museum plans to use O’Connell’s slides and tapes to help tell her story, as well as to pre-

pare traveling exhibits to other museums.

“It’s so exciting to be a brand new museum coming out of the gate with this collection,” Cox says.

Fine Art Bill Meek knows how to put together an art collection, having established the Naples Philharmonic Center’s permanent collection in the 1990s, the von Liebig Art Center’s Collier County artists 1950-2000 permanent collection, and the collection at Harmon-Meek Gallery, where he has been owner and director for more than 30 years.

He also knows how to get children excited about art, as his gallery served as an art experience for area children brought by school buses before the Naples Museum of Art opened.

From his own childhood, Meek knows the importance of being exposed to art, having been taken to galleries and museums in Europe by his parents.

“I’m an art dealer today because my parents dragged me to art museums as a child,” he says. “It didn’t surface until I got to college and realized I really liked the arts.”

So when plans for the children’s museum began to form, Meek started to think about the possibility of creating a permanent art collection for it. He presented the idea, and although the museum board was receptive, they were concerned about the cost and having enough space to display art.

Meek knew he could get works donated by collectors, artists, and artists’ estates, 104 NAPLES ILLUSTRATED

and he addressed the space problem by limiting the scope of what would be collected to art by American artists where the subject matter is children and/or animals.

Meek put together an initial collection of 17 paintings and two sculptures, including work by artists Bob Kane, Robert Vickrey, Hunt Slonem, Colleen Browning and Richard Segalman. The painting by Segalman is of children, a subject the artist rarely featured.

The collection is made up of artists from Meek’s gallery, but he expects the collection to grow beyond his artists. A collections committee for the museum is already considering additional works.

Planners created a small gallery space where a few pieces in the collection will be on display at a time, with art hung at a

child’s eye level and programming planned to enhance the experience. “To us, interpreting art is looking at textures, ways of expressing yourself,” Cox says. “They can see texture, get up close. They can see you can mix color, can experiment with textures. That’s art too. It doesn’t have to be perfect.”

For a Jon Corbino painting with a puppy, Cox says they may re-create the scene, providing children the opportunity to pose in a similar chair with a stuffed animal for others to draw.

“When children are first seeing art, they need something to relate to,” Meek says. “We’re not trying to be the Naples Museum of Art; we want to get them interested and to begin to develop an educated eye. Naples is known as an art town. This is

one more area where we have demonstrated an interest in providing art for all art appreciators.

I’m very proud of it. Sometimes a small collection can lead to something bigger.”

Presenting fine art to children in an interactive museum designed to engage all the senses, including touch, can be a challenge. Meek is working on a solution, a new scratch-resistant Plexiglas cover that will protect the paintings from sunlight while being virtually invisible to the viewer. It’s expensive, from $1,000 to $2,000 per painting, but Meek is counting on grants and donations. To allow children to experience texture, sample squares with paint applied like the painting on exhibit will allow children to touch without damaging the artwork.

For children who prefer their pictures to be on a screen, Meek has found a computer and virtually indestructible touchscreen on which information about the artwork can be presented.

“The collections just add more to the pleasure and education,” Meek says. “We are thrilled about the art collection; it’s just what we try to do as a gallery. It’ll be interesting to see where it leads. That’s the fun; you just don’t know how it will unfold.” u

Fascinating Fixtures Sandi and Tom Moran added many special features to look up to in their Pine Ridge Estates home.

fter living in a funky 1970s home on their Pine Ridge Estates lakefront lot for years, Tom and Sandi Moran had plenty of time to envision their dream home with better lake views, multifunction space for entertaining, adequate home work spaces, gardens, display space for their growing art collection, a fabulous kitchen and a music room.

When Sandi began to furnish her home, another lightbulb switched on.

She turned her attention upward, and began collecting stunning antique Art Deco light fixtures for each room.

Perhaps it was the orientation of the home they tore down that inspired Sandi. Built by a portrait painter, the home was oriented east and west and was designed to maximize northern light, with ceilings 12 to 18 feet high and nearly all-glass walls on the north side.

On the southern side of the house, only one room looked out on the lake, and rooms had eight-foot ceilings.

It was the wooded lot in the community that attracted them in 1995—that and the plan to eventually renovate or rebuild.

“We loved the property,” Sandi says. “We had the intention of remodeling. It was a fun house to raise the kids in.”

They decided to start over with Kurtz Homes, Naples, instead of remodeling in order to reconfigure the design to give nearly every room in the house a view of the lake. They moved into the new home in 2008.

Once her vision for the new home was firmly in place, Sandi turned to accessorizing with the help of Christina Forbes of Accessories Etc., Bonita Springs. While Forbes helped her blend new and old pieces, Sandi focused on “new” additions for each room—oneof-kind antique light fixtures. “I had a blast finding them,” she says, adding that some were purchased locally, some at auction and some in Miami. To complement the chandeliers, Moran had the ceilings hand-painted to highlight the unique elements of each chandelier.

A large etched-glass and chrome Art Deco fixture encircled by the staircase was found in San Francisco. When Sandi hesitated to buy it because she wasn’t sure it would fit, her father made a cardboard replica she could take home and try out in the space. The fixture fits perfectly, and provides a special

acknowledgement of the Morans’ support of Opera Naples, as it is reminiscent of the kind of huge decorative element one would find in a theater lobby. “They usually didn’t make such big fixtures in that era, so we figure it must have been from a hotel or a theater,” she says.

In the wood-shelf-lined library is an amber-colored chandelier. A converted candelabra from 1801 in the master bedroom was designed to come apart to be completely portable.

When Sandi fell in love with a picture of a one-of-a-kind Tiffany gas chandelier, she had Schaefer Stained & Beveled Glass, Naples, replicate a larger electric version for the dining room, complete with metal fretwork that was necessary for a gas lamp.

“When I walk through my house every day, I love my chandeliers,” Sandi says.

“They are what make my house mine.”

She continues to find interesting chandeliers. Her most recent find is a lamp with pink-frosted glass shades that replaced a practical can light in the entrance from the garage. “It changed the entire feel of the entryway,” she says. “Before it was just functional. Now it’s special. The chandeliers are one of many of the things that make my house unique.”

For the Morans, seeking out interesting light fixtures is an extension of their love of collecting, from decorative elements like art, to wine, housed in two wine rooms— a 1,500-bottle showcase storage under the stairs, and another larger storage room.

Their art collection includes works by local artists including Paul Arsenault, Robert Rauschenberg and Emily James, with many works depicting children, as well as Dale Chihuly glass sculptures. Sandi also collects antique lace and linens.

The home was also designed with another type of collection in mind—people. “We built the house for entertaining and hosting charitable events,” Tom says.

The couple has hosted patron parties for various charities, concerts and Christmas decor tours. The living room, known as the music parlor, was created with excellent acoustics for concerts featuring their

seven-foot Steinway grand piano. They often house performers for Opera Naples, who practice in the Morans’ music room.

The family room adjacent to the kitchen can be cleared of furniture for a seated dinner for 108, and the kitchen, with two sinks, two dishwashers, two microwaves, four ovens, and a pantry with access to the garage is a caterer’s dream. This functionality is important to the Morans, who are Naples Winter Wine Festival trustees.

Sandi is bailli for the Bailliage de Naples of the Chaîne des Rôtisseurs, a group of food and wine lovers.

The same meticulous attention paid to the inside was applied outside. Every plant was carefully chosen to provide privacy in the front. A tree broker found mature oaks in central Florida. Azaleas were planted in large quantity to provide maximum color when they bloom in February.

“I love gardens,” Sandi says. JoAnn Smallwood of Smallwood Design Group, Naples helped with design, “but I was involved in planning every plant. I had a vision of how I wanted things done. I’m gardening constantly,” she says.

In the front of the house, she concentrated on native plants and native lookalikes, including magnolias, sabal palms and oak trees, sprinkled with color from the orchids Sandi grows on the side of the house, which she rotates through the yard as they bloom.

“Our home is a mixture of antique and newer pieces collected through the years,” Sandi says, noting that the desire inside and out was to create something that had modern practicality while feeling established. “We created the spaces first, and then found the right things to go in them.

Into the Woods

Wood sculptor Dennis Elliott’s work will be featured at Sweet Art Gallery, Naples, along with paintings by Dylan Critchfield-Sales, February 1-March 1. FEBRUARY 2012 Tribute to Artists Naples artist Lionel Heddy believes a lot of local artists deserve recognition for their efforts to preserve Naples history and contributing to many initiatives in the city. So Heddy created a body of work to express his gratitude and acknowledge certain artists as part of history in the making, people who have recorded Naples historic landmarks and progress.

ArtGallery Old Naples 2 hosts An Artist’s Tribute … Works in Graphite by Naples Artist Lionel Heddy. A show of painterly graphite-on-paper portraits will be on exhibit in the gallery located near The Dock restaurant, including a stunning work depicting Jerry Vallez, now celebrating his fortieth year as an artist in Crayton Cove. Not Small Scale In Naples, some may know Olga Hirshhorn for her art collection on display at the Patty & Jay Baker Naples Museum of Art. The art is from her former diminutive Washington, D.C., home called the Mouse House.

Olga This month, Hirshhorn will be celebrated for her large contribution to the Hirshhorn art and sculpture world as a collector. Her late husband, Joe Hirshhorn, collected modern paintings and sculpture, and founded the Hirshhorn Museum & Sculpture Garden in Washington. Having artists, dealers, collectors and museum people as friends throughout her marriage, Olga soon developed her own expertise and collection.

When she announced in 1995 she was donating it to the Corcoran Gallery of Art in Washington, her collection was estimated to be worth $10 million. With homes on Martha’s Vineyard and in Naples, Hirshhorn still collects and supports the arts. Her friend, fellow art collector and Neapolitan Bob Edwards, who is on the board of the International Sculpture Center, suggested Hirshhorn for the 2012 Patron Award, an honor bestowed every other year by the sculpture center. The center also annually bestows lifetime achievement awards on artists. Edwards says his idea was supported by the art community, as well as the artists themselves, many of whom know Hirshhorn personally. Hirshhorn will be recognized at a reception February 3 at the Naples Philharmonic Center for the Arts. “I believe in accountability and ask questions about how funds were spent, who benefited, and what results were achieved,” she says. “Most charitable projects have an intended outcome, just like a project in business, and I try to get things done in the not-for-profit area as I did in my career.”

The mother of three, Davis takes aim at causes that support children and their education, including the Community School of Naples, The Shelter for Abused Women & Children, the Naples Winter Wine Festival and its grant-making arm, the Naples Children & Education Foundation, and the Golisano Children’s Museum of Naples. Davis serves as chair for the museum’s grand opening Dream Gala in March.

“I am very aware that I have been blessed in so many ways in my personal life, family, work and opportunities to contribute,” Davis says. “I have a grateful heart and feel an obligation to express this gratitude in a practical way. ‘Work by doing’ is another way to say it.”

In 2009, Davis established the Shelia Smith Davis Fund at the Community Foundation of Collier County. The fund supports projects throughout Florida, Davis’s home state of Ohio, and internationally, including The Prince’s Foundation for Children & The Arts in the United Kingdom. Davis supports several projects within The Ohio State University, including its medical center and athletic scholarship program. She is also an active supporter of her parish, St. Leo the Great Catholic Church, in Bonita Springs. “‘Focused passion’ would be a good way to describe my philanthropic approach,” Davis says. “I believe you should follow your heart, do good things for other people, and always lead by example. That being said, I am not all work and no fun. I very much enjoy celebrating even the smallest of successes them happen.” u
