Home is Where the Dog is

I became a crazy dog person later in life. Growing up, my parents worked hard to raise the four of us energetic whirling dervishes and permitted the occasional small pet—gerbils, budgies, and fish. But dogs and cats were out of the question. After Hurricane Irma, in September 2017, my friend Monica, who’s deeply involved with animal rescue efforts across Florida, told me that so many dogs were abandoned by owners who just didn’t have the resources to care for them anymore. She could tell she’d touched something inside my heart, so she whipped out a cell phone photo of a scraggly little bleached-out dog that a nearby shelter had just rescued off the streets of a small town in Central Florida. Impulsively, I told Monica that I wanted to meet the dog to see what her personality was like. She arranged for my family to visit the rescue agency truck at a farmers market where they were doing an adoption event. The dog was so friendly, wagging her tail as we walked her around the market. Smitten by her cute face and sweet disposition, we took a leap of faith and adopted her. At the time, the shelter had named her Trina. This, of course, was too close to my name, Christina. My family of five agreed to come up with a new name for her that we all liked. It took us about two weeks—and a spreadsheet randomizer—to find one that fit. We decided on Tilley, after a pond we used to live near in Darien, Connecticut. Since then, Tilley has changed our lives for the better. She’s a silly little terrier mix mutt who does fake sneezes, chases her tail, and looks at you like, “Why’d you stop?” when you are done rubbing her belly. Anyone who has a pet—cat, dog, bunny, whatever—knows how amazingly comforting and distracting they’ve been during the pandemic. We’ve devoted several pages in this issue to the wonder of animals and household pets. Check out our story in Insider about the magical powers of the two tiny ponies who’ve joined the Naples Therapeutic Riding Center (page 44). We also interviewed caring pet parents Doug Olsen and Philip Douglas about the many dogs they’ve rescued over the years (see Favorite Things on page 162). Lastly, we dedicated a feature story to the Kurtz family, who are well-known in Naples both for building beautiful high-end homes and for being dog lovers (read “Rolling with Bentley” starting on page 104). Though I’ve only recently discovered my love for dogs, I’ve always enjoyed being outside and exploring the great outdoors. So have Clyde and Niki Butcher, this issue’s distinguished cover stars. They are fixtures in the Southwest Florida art scene, and many of you know Clyde as the “Ansel Adams of the Everglades.” However, for this feature, we’ve put the focus on Niki. Writer Eric Barton uncovers the impact Niki has had on Clyde’s success, plus the course of her own journey as a fine art photographer as she prepares for her first gallery show. Also enjoying the fresh air in a different way is Neapolitan John “Hap” Fauth, who shares his story of boat racing leading up to this year’s America’s Cup on page 98. Have a healthy and happy March.

Now in her tenth year as superintendent of Collier County Public Schools, Kamela Patton, PhD, has spent the last year tackling one of her biggest obstacles to date. In response to COVID19, she sprang into action with her team to implement in-school and virtual programs, creating broad educational opportunities for all students. This is no small feat, given that Collier County covers an area roughly the size of Delaware. Never one to shy away from a challenge, Patton has stayed in constant communication with colleagues in the school district (teachers and administrators alike), government agencies, and communitybased organizations. INSIDER TEACHING and Reaching CONT. NI: How are Collier County Public Schools (CCPS) making it all work during the pandemic? Patton: Obviously, the entire way we are delivering education has changed. We now have three options. Just under 80 percent of our students are back in school, and it looks very different. Everybody’s wearing masks. Desks are spread wall-to-wall to maximize space. Students eat 6 feet apart. The other 20 percent are at home on a synchronous line called Classroom Connect. [There are also some] in eCollier Academy, a full virtual school. Based on 2020 end-of-year CCPS survey data, the number of in-school students is projected to go to 88 percent for the January through May 2021 period. What have been your most significant contributions since coming to CCPS? I’m very proud of our graduation rate, which is now 91.9 percent, compared to 72.5 percent when I started in June 2011. Our students with disabilities graduation rate is up to 84.8 percent. The migrant student graduation rate has gone from 53 percent to 88.1 percent. In terms of academic achievement, we’ve gone from being thirty-third to tied for fifth out of 67 Florida

counties. These are big needles to move. They help improve kids’ lives and, in turn, that helps the economy. Our schools are now among the few three-year A-rated school districts in the state. Our other major focus has been on the 30 percent who do not go to college. We communicate that we need cosmetologists, welders, electricians, and others. We’re making sure our kids know about the two technical colleges [that are] local; they provide job training, costs are low, and financial aid is available. It’s part of our shift to career readiness. We want all students to end up in a career, not just a job. A high school diploma is a game changer.

SILVIO’S KNOWS SOLES After 40 years of repairing shoes to perfection, the family-owned and -operated Silvio’s Shoe Repair moved to a location on Tenth Street North in December. Inside their new walls, customers can expect the same expert craftsmanship and care that Silvio’s has provided since the 1980s. “We love what we do for all of our customers, especially our orthopedic customers,” says owner Michael Palomba. “We repair many shoes to compensate for some sort of leg or foot discrepancy. When clients pick them up, their expression of joy and gratitude over how we have discreetly altered their shoes to eliminate pain is why we continue to do what we do.” Silvio’s also has clients across the country. There are “hundreds of customers who live far away and send us their shoes, bags, belts, and wallets because they trust no one else to do their work,” says Palomba. “Knowing our small family business affects so many lives motivates us to continue to service our customers.” —Maddie Laufer

What are some specific changes you’ve made? We’ve done a lot with STEAM: science, technology, engineering, arts, and math. We now have engineering entrepreneurship in all the middle and high schools. We’ve started NAF academies in medical, finance, hospitality, tourism, and others. We’re the only school system in the country that offers Cambridge at all levels. Grad walks, academic career signing days, and a shift to career readiness are recent additions. There have been enhancements to our two technical colleges, Lorenzo Walker Technical College and iTech. Teachers are moving mountains as we speak. What do you think education will look like in the future? Technology will provide more opportunities for self-directed learning. There’s growing equity because every kid now has a laptop and internet, with CCPS-provided hot spots, if needed. If you’re sick or away, you can keep up. eCollier Academy is an all-day, distinct, local, virtual school, providing flexible instruction so students can work at their own pace. What do you do for fun outside of work? I love to travel and go RVing. I love photography. I have a scooter and explore the back roads of Naples. I love going to concerts. After graduating from Messiah College [now University], I worked for the Bee Gees for two years, going on world and U.S. tours with them. I love unique experiences like trapezing, tandem parachuting, and dogsledding on a glacier. That’s what makes life fun. Who do you look to for inspiration? Abraham Lincoln for perseverance and Thomas Jefferson for strength. Abraham Lincoln’s first love died, he lost an election, but he persevered. And Jefferson said, “In matters of style, run with the current; in matters of principle, stand like a rock.” You have to be strong enough to stand like a rock when you know it’s the absolute right thing to do.

Naples author Theresa Hickey published her third poetry collection titled SHY (Finishing Line Press, $15) this winter. Hickey, a member of the Pelican Bay Writer’s Group, noticed that her poems reflected people’s need for quiet time and a calming influence amongst all the uncertainty in the world today. “I called it SHY because I thought that this is something that we think is so unattainable in today’s world as everything is so fast and moving at such a quick pace,” she says. “I think we are always thinking to ourselves, ‘I need that, but I can’t find it.’” Hickey’s two other collections, Raising the Child (2006) and Size of a Gracious Nature (2010), are also about reflecting. “We all want to be our most authentic selves,” she says. “The quiet time brings you that and draws you into the writing, it compels you to write, but you also see the flaws and the big picture in ways you maybe didn’t see before.” —Mackenzie Griffith

Inside the Naples Aircraft Rescue and Fire Station The Naples Airport Authority and City of Naples Fire-Rescue Department celebrated the grand opening of the new Aircraft Rescue and Fire Station No. 3 in December. The main purpose of the $5.8 million facility, funded by the airport and Florida Department of Transportation, is aircraft firefighting. However, it is also the most weatherprotected building on airport grounds, built to withstand a category 5 hurricane, so it serves as both the fire department and the airport’s emergency operations center. Station 3 was previously located on the north end of the airport. With the new facility now on the southwest end, firefighters do not have to cross any runways to reach calls on and off airport grounds, allowing for a faster response. —M.G.

COACHING with Grace As a young mother in Kentucky, 38 weeks pregnant with her second child, Jana Seaman learned that her husband was terminally ill. He passed away in 2016 after a 15-month battle with cancer, when her two children were only 1 and 5 years old. “In the early days of loss, my heart was so heavy, but I was so grateful to go home to my kids,” says Seaman, who moved to Naples in November 2017 to turn over a new leaf. In Kentucky, she worked as an office manager in dermatology and plastic surgery practices. After putting in the soul-searching work to heal herself from this devastating loss, she knew she had a higher purpose. She studied and researched grief, loss, and coaching, and is now certified to help others get through traumatic changes. Through her Naples42

FROM MUNDANE TO SUBLIME As part of the “Art is Everywhere” project, 12 local mailboxes were selected to be a part of the Marco Island Center of the Arts’ 2021 calendar and poster. Board members Mary Pat Palombo and Bruce Robertson were the visionaries behind the project. The idea initially came to Palombo when a new home in the area added a crystallized mailbox in the shape of dolphins leaping out of the water. The center began by collecting 50 cell phone photos. After the board chose 12 images for the calendar, William H. Rheiner, executive committee member and board member, enlisted photographers Phil Wheat and Ed Cohen to professionally capture the artwork. The project serves as a fundraiser to counter COVID-19 losses, explains Hyla Crane, executive director of the nonprofit art center, which offers 180 to 200 adult education classes. Funds are being directed toward cleaning supplies, virtual courses, and Artist Talk Live streaming events. “We are doing everything we can do to make sure we can be here another 50 years,” Crane says. She describes her client base as ranging in age from 24 to their 70s, and “not all are dealing with loss through death, but some are struggling because of a job loss, the end of a long relationship, or a divorce that is wrecking their life.” Thanks to the global pandemic, more people are aware of how overwhelming life transitions can be. It is Seaman’s mission to give her clients the tools they “need to learn how to deal with emotions” so they can “move forward, having a vision of what they want their life to look like.” During COVID-19, her business has seen a steady influx of clients. “We typically work with clients for a minimum of 12 weeks and an average of six months. Some clients meet weekly, others twice a week.” Her coaches are always available by text or phone. “Grief strikes you at odd hours, so we walk with them when a trigger occurs.” —Christina Cush

Our Little Ponies

Two adorable new miniature horses at the Naples Therapeutic Riding Center are primped to SPREAD JOY By Cathy Chestnut

The Naples Therapeutic Riding Center recently welcomed Itty Bitty (left) and Toulmin (above). They’re pictured (above right) with equine resource manager Rachel Vaa.

Toulmin and Itty Bitty, two miniature horses, will soon be the trending darlings of Collier County as they make their rounds through the Naples Therapeutic Riding Center (NTRC). Toulmin is a 3-year-old gelding who, at 36 inches, stands about the height of a Great Dane and weighs about 225 pounds. Itty Bitty, a 6-year-old mare, is only 30 inches tall but weighs almost 45 pounds more than her new friend. Despite their stature, they have a big impact during in-person encounters, says Missy Lamont, NTRC’s executive director. Itty Bitty’s hooves are so small, she can wear boots from Build-aBear Workshop, notes Lamont. Their diminutive size makes them ideal for the center’s new mobile program that can travel to schools, nursing homes, hospitals, rehabilitation centers, and hospices. “They have a a good disposition and demeanor,” Lamont says of the horses. “They don’t get startled, and they’re not scary or intimidating.” NTRC purchased the “minis” with a $100,000 grant from the Virginia B. Toulmin Foundation, a New York–based organization supporting equestrian therapy programs and equine-related activities certified by the Professional Association of Therapeutic Horsemanship International. Through the foundation, in 2017, Lamont and her team visited a center in New York utilizing a mini mobile program. After researching minis’ needs, habits, and trainability with Rachel Vaa, NTRC’s equine resource manager, they realized the merits of adding two minis, which would bring the center’s herd to a total of 16. Toulmin and Itty Bitty will act as NTRC ambassadors within the community. “They are less intimidating than a large horse and easy to lead around small spaces” and

transport, Lamont says. The goal is to introduce the equines to children who may be fearful of full-size horses. NTRC staff can also take the minis to facilities where patients are bedridden or convalescent. The pandemic quarantine and isolation brought to light the challenges of providing on-the-ground psychosocial and emotional support for children and adults with physical, social, and mental health needs. For almost 25 years, NTRC has provided unique equine-assisted therapies to more than 800 participants annually. But 2020 presented new hurdles to overcome.“When we closed due to COVID-19, knowing our participants couldn’t come to our center made us realize that taking our program to them was a good reason to move forward with the ponies,” Lamont says. The truck and trailer to transport the ponies was made possible by funding from Arthrex.“We can take them to our riders. They can see them out their window when they aren’t able to come to our campus.” The minis are stabled near the center on the property of a longtime NTRC volunteer and supporter who raises minis and has all of the resources in place for their care. Toulmin and Itty Bitty came from separate places “and didn’t know each other before,” notes Lamont. “Luckily, they like each other.” Because they are young, “we have the opportunity to train them without bad habits,” she adds. “They’re coming in fresh and green, and we can expose them to an environment that’s safe.” Since the minis arrived, Vaa and the equestrian crew have worked closely with the petite animals in training and desensitizing them to public settings with the goal of rolling out the program in February. Itty Bitty was raised in Wellington, Florida, as a therapy mini and was already acclimated to wheelchairs, buildings filled with children, and other experiences. Those interested in requesting a visit with one of the minis can do so on the NTRC website. Applications are reviewed for potential therapeutic benefits, and the nonprofit center also works with requests from other nonprofits, such as Make-A-Wish Southern Florida. Mini visits are not intended for events such as children’s birthday parties. “When you look into their eyes, they’re kind, understanding, and trusting,” Lamont says of Toulmin and Itty Bitty “Nothing compares to the touch and smell of being around them. Surely CHIC in Park Shore

When traditional and contemporary collide, the result is a coastal-meets-classic home in a hot neighborhood By Mary Thurman Yuhas | Photography by Venjhamin Reyes Photography Designers are sometimes like marriage whisperers, asked to produce a finished product to please both clients in a committed couple, even when those individuals have distinctly different preferences. Seasoned designers have been caught in the middle before and can adapt to the challenge of making a particular pair happy. In

this project, Carrie Brigham, creative director of Naples-based Carrie Brigham Design, figured out how to beautifully blend a husband’s contemporary leanings with his wife’s more traditional tastes. “This home is light and airy and an example of timeless coastal elements that can keep our clients happy for many years,” Brigham says. Built by Naples contractor BCB Homes, the 3,700-square-foot residence is situated in the gated, dog-friendly Park Shore neighborhood, where stunning sunsets and leafy surrounds are de rigueur. Subtle layers of custom design choices work together to create the coastal transitional home, starting with a sandy color palette infused with pops of turquoise and warm gray. Voluminous 16-foot-high ceilings in the four-bedroom residence make the home feel grand. Brigham loves to deliver an immediate statement, evidenced by this home’s custom entry doors. Louvered at the bottom to add a casual counterpoint, they are flanked by windows with mullions composed of overlapping arches. The console and pearl-framed mirror are from the clients’ collection. “We love incorporating our clients’ pieces into our designs because it creates a more personal and unique feel to the space and adds instant character,” Brigham says. In the living room, the floor-to-ceiling built-in holds an 85-inch TV and displays family pieces—most importantly, the wife’s trophy fish. Floating shelves alongside the built-in’s traditional molding offer a contemporary touch. Beams and brackets painted a bright white highlight the magnificent whitewashed tongue-and-groove poplar ceiling. Dominating the space is a chandelier featuring cloudy selenite crystals. “It is jaw-dropping and the focal point of the room,” notes Brigham.

The kitchen is very well-appointed yet not overly complicated. For instance, simple drum shade pendants floating within a lantern do not compete with the nearby living room chandelier. Blending into the kitchen’s overall design, a pantry door to the left of the range appears to be part of the cabinetry when closed. Decoration on the side of the island adds personality and ties back to the decorative mullion element on the glass cabinets. “Kitchens are my favorite to design, and they are the largest investment in the home,” Brigham explains. “I make each kitchen unique to the home’s architecture and account for every detail.” Old and new speak to one another in the relaxed formal dining space. A fun feature is the bar. “The custom built-in bar was finished in a bold blue that was not part of the original design, and it really paid off,” Brigham says. Wood-framed dining chairs wrapped in fine linen enhance the traditional dining table. Filled with some of the clients’ existing furniture, the master bedroom required a shopping excursion to freshen things up. Two night chests clad in navy bluegrass, a pair of turquoise bedside lamps, and several plush pillows later, the calming space came together. Beige tones on the bedframe as well as crisp white bedding trimmed in blue further augment the Zen vibes. Perfect symmetry in the sumptuous master bath imbues a spa-like

ambience. Dimensional cast ceramic tile glazed in a soothing blue highlights the freestanding tub. His and hers vanities are bejeweled with concentric, modern selenite lanterns with a silver-leaf finish and transitional pulls. In the guest-friendly part of the house, graphic gold tile on the powder room floor is offset by a simple yet effective choice of wallpaper and mounted faucets. A silver-leaf, ribbon-framed mirror softens the space. Located just off the utility room, the charming sand room is Southwest Florida’s answer to colder climes’ ubiquitous mudrooms. ABODE storage keeps flip-flops and pool toys at bay. Flecks of blue in the adjoining laundry room’s color scheme inspired the built-in bench’s hue. Amid lush greenery and palm trees, the outdoor living space is a tropical oasis, complete with a summer kitchen and dining area for the clients to enjoy alone or with friends and family. “We brought the inside out with the TV and fireplace wall, textures, and tones of whites, browns, grays, and blues,” Brigham says. Soaring high above the lanai is the walnut-stained ceiling. Walls and the pool deck are clad in a natural shell-stone tile. A live-edge oak dining table lends an organic feel, with woven dining chairs serving up coastal texture. A sun shelf on one end of the pool holds lounge chairs. On the opposite side, entry steps span the entire width. A built-in bench runs along the pool’s perimeter. Everything about this alfresco area makes a splash—even the outdoor shower boasts an elegant aura, with cleats to hold towels and a louvered aluminum panel door to ensure privacy. “This is a great home and was a fun project,” reflects Brigham. “Everything in it is top-notch and creates a nice experience for the clients.” «

Through her company Organize Create Decorate, Neapolitan Christine Talaba makes people’s organizational dreams come true. Talaba left a legal career after she discovered that when her home was organized, she felt better mentally. She brings her passion for creating beautifully put-together spaces to clients in Southwest Florida looking to improve their homes, workspaces, and lives. Below, she shares her best strategies for boosting the efficiency of your pantry and fridge. (ocdorganized.com) Fridge coasters add a pop of color and help keep things clean and tidy. In addition, soda bins, which are available at The Container Store, are a great way to maximize space.

NI: How does your organizational process start? Talaba: I first ask clients to envision the space how they want it and describe their desires. From there, I ask about specialty items/zones that they may need. Diet and lifestyle play a large role in deciding how to lay out an area. For instance, if a client makes smoothies every day, I will designate an area specifically for that purpose. I customize the space to the individual needs of the client and other household members.

ORGANIZE CREATE DECORATE

Why and how should you separate food into categories? In both the fridge and the pantry, I create an “Eat First” bin/zone that allows you to see what will expire soon and will assist you with grabbing those items first. Additionally, I organize by type (i.e., greens, fruits, veggies, deli, cheese) using customized products to ensure that you see the items, which leads to using them.

Should you adhere to the manufacturer-created zones your fridge has? Many fridges come with designations. However, if you have a drawer for produce that you don’t need, I say designating it as the kids’ zone (or something else) will be more beneficial to your daily life.

Things do not need to go in the traditional spots if it works better for you another way.

What is a favorite strategy you employ in your fridge organization projects? Stacking bins. There is a lot of unused vertical space in a fridge. Make sure that you capitalize on it.

What items take up unnecessary space in the fridge? Always decant and take things out of the packages. Typically, most packaging takes up space and makes it visually cluttered.

What is a common mistake people make in their fridge organization? Trying to make it picture-perfect. Make sure it is functional first.

A fridge comes with shelves and drawers, but what other elements can maximize effectiveness? I love a good drawer liner. Fridge Coaster (fridgecoaster.com) makes amazing ones. Turntables are great for condiments and jars. Stacking bins, including produce and fruit bins, are a No. 1 item.

What’s your overall approach to the layout of a pantry? I look at the items that the client purchases, ask them what they always use, and try to establish their habits. I will then break the space down into sections like cans, dry goods, pastas, and snacks. What organizational accessories do you recommend in a pantry? Jars and containers for decanting. Lazy Susans are always a must,

What types of food should be put into transparent containers and what can be left in its original packaging? This really depends on the budget. I recommend decanting your everyday items: cereal, coffee, flour, sugar, and other dry goods. Then if you have the budget, pasta, chips, and snacks. If you have young children, I recommend BPA-free plastic containers for the children’s items, that way the contents stay fresh and the containers will not break.

What are a few favorite strategies you use in pantry organization? Using the back of the door for additional storage (like Command Hooks for lunch boxes) and designating zones for each family member or lifestyle are always things I do.

What about kids’ snacks? I first ask the client whether they want the snacks accessible for the children. If so, I will put the items lower in the pantry or fridge with open bins for easy access. I will label it, making it easy for the kids to see and read what they are grabbing.

What’s the best way to ensure that items in the back of your shelves don’t get forgotten? Usually, if you are using bins, they are specific to the measurements and are easily pulled out. I place the items expiring first in the front and group like with like products, which allows them to be seen and used.

What are your thoughts on labeling? For the bins, I keep the labels more generic, that way the bins can grow and change as the contents do. For jars, containers, and other specific items, I label them specifically. I write or label the expiration date on anything I decant.

What is a common mistake people make in pantry organization? Not planning the full space out. It needs to be looked at overall, then you must place the products to make sure it works. I always bring a multitude of products with me. That way, if something isn’t working, I can switch it out and adapt to the items.

Up in the northern Serengeti, Asilia Africa’s Sayari Camp (asiliaafrica.com) reopened following a comprehensive refurbishment. The pioneering property, best known for its role in fostering a conservation economy in a former poaching hot spot, sports a new look courtesy of celebrated designer Caline Williams-Wynn. The 15-tent camp pays homage to its setting: Kuria people of the northern Serengeti are depicted in original artworks, the color palette is inspired by the surrounding topography, and beaded Maasai soft goods adorn rooms. Situated near the Mara River, the location here is also tops; wildebeest and zebra abound during annual migrations—and apex predators tend to follow. The Gran Meliá Arusha (melia.com) is another welcomed addition to the Serengeti safari circuit. MEET THE CATS OF THE UNTOUCHED EASTERN SERENGETI. From 1994 to 2014, much of the eastern Serengeti—and its iconic short-grass plains—remained off limits to tourism as part of a concerted effort to protect dwindling numbers of big cats (namely cheetah) and provide a safe haven for repopulation efforts. Once the region was reintegrated into the National Park circuit, eco-conscious operator Asilia Africa (asiliaafrica.com) planted roots in this prime predator real estate. Fast-forward to present day, and Asilia’s tented camp, Namiri Plains, stands as the superlative place within the Serengeti to see African cats, big and small. A recent visit to Namiri Plains lived up to the hype. I counted a minimum of six cheetah encounters daily, with one jumping right into our vehicle. I marveled at interactions among lion cubs, including the progeny of famed lions Bob and Ziggy, known for their size, strength, and massive black and blond manes, respectively. I witnessed rare daylight sightings of caracals and servals, even catching a glimpse of two melanistic serval kittens. The camp itself also impressed as one of the Serengeti’s best. Transformed in 2019 from its humbler origins, Namiri Plains is now a collection of 10 solar-powered tents and tricked-out common areas, all crafted from ancient sedimentary rock, resulting in a fabulous, fossil-chic vibe. With outdoor salas in each tent and prolific design-forward spaces along the Ngare Nanyuki riverbed, there are ample swoonworthy spots for reflecting on the day’s adrenalinefilled, feline-forward adventures.

SEEK OUT THE ARTS AND CULTURE IN THE BUSH. While wildlife will always be the main draw of a Serengeti safari, many properties are going the extra mile to showcase the region’s artistic and cultural assets. Case in point: the aforementioned Four Seasons Safari Lodge Serengeti, home to the likes of an artist-in-residence program, an inspiring Discovery Center, and Boma Grill, a restaurant that celebrates Maasai culture through performance and Tanzanian culture through cuisine. During the year, eight up-and-coming artists complete residencies between two weeks and two months long, painting new works and interacting with guests daily in a studio near the main bar. WEIGH THE RISKS VERSUS THE REWARDS OF TRAVELING NOW. Tanzania and its safari lodges are currently open to international visitors and have been since May 2020. With tourism at recent lows, a lack of human presence (and those pesky vehicles that accompany it) have permitted an unparalleled regeneration within Serengeti National Park and its peripheral reserves. Now, the animal sightings rank arguably the best in recent decades. As one who has ventured on 23 safaris in as many years, my expedition last Novem-

ber topped them all. Coveted action sequences typically reserved for television specials, such as leopards mating in daylight, back-to-back cheetah kills, and face-offs between giraffes and lions, are currently happening in real time, all the time. Suffice to say, those who feel comfortable traveling to the Serengeti now will witness what few get to see: Nature completely ruling Africa’s heartland. Nevertheless, if late 2021or 2022 feels more logical and responsible, an epic safari still awaits—the Serengeti never disappoints. «

Mary Brandt, the owner and operator of The Hotel Escalante, started her professional life in the health care industry in Indiana. The stylish mom of Emry, age 17, and Allie, age 11, discovered the Escalante property while on vacation in 2003. Enchanted by Naples, she started as a seasonal Neapolitan in 2004, then became a full-time resident in 2010. Around 2013, ready to make a bold move, Brandt took the helm as the sole proprietor of the Escalante. Because the boutique hotel is just a few blocks away from her home, she is able to spend lots of time with her girls while giving her guests an amazing experience. “Considering the many places we’ve seen, Escalante serves as a mixture of the charms of France, New Orleans, Puerto Rico, and Napa Valley,” says Brandt. To stay on top of hospitality trends, she travels with her daughters to evaluate what might be worth implementing into Hotel Escalante and its restaurant, Veranda E. “We enjoy seeing new things, experiencing new cultures, and broadening our perspectives,” Brandt adds. When they are home, the Brandts focus their time on nonprofits that support children, such as Youth Haven and Ocean Kids. For now, though they aren’t traveling internationally, the Brandt girls will keep adventuring together, with their sights set on Alaska for June 2021. —Christina Cush

NI: What kind of regional or domestic travel have you enjoyed during COVID-19? Brandt: We’ve been to New Hampshire, New York, Maine, South Carolina, and Orlando. What stands out are our trips to Amelia Island in North Florida, and coastal Georgia, including the private Cumberland Island and Sea Island. We highly recommend the Cloister at Sea Island and the Greyfield Inn at Cumberland Island; they were the highlights of this summer’s travel. Where have you been that you’d like to revisit? The Amalfi coast and the Greek islands. For Emry, Paris is ideally an annual stop. What’s your favorite European city? Allie absolutely loves London for Harry Potter and theater. My favorite is Venice. Emry is split between Paris and Venice equally. What trips are on your bucket list? An African safari, Machu Picchu in Peru, and Australia.

What’s the best meal you’ve had on a trip? Paris and Italy have such exquisite cuisine. In Italy, the pizzas, pastas, and fresh fish are to die for. In France, the baguettes, wine, cheese, chocolate, and croissants are killer. Allie still dreams of the gelato in Italy. What’s the best hotel you’ve stayed at? We try to stay at top-notch five-star prop-

erties with a preference toward boutique hotels. Some hotels we’ve enjoyed include The Gritti Palace, The Danieli, and The Ham Yard. Where are the best shopping cities? The best cities for shopping are Florence and Paris. In Paris, the Champs-Élysées is fun. In Florence, the Mercato Centrale is a two-level food market with everything you could ever imagine. We recommend the fresh truffles with the pasta. Do you have a favorite museum? The Louvre is home to the Mona Lisa, and the art and architecture of the museum are like nothing else. Have you been to an amazing spa? We were very impressed by the Cloisters’ spa services in Sea Island. Can you share your favorite travel resources? We use the American Express platinum travel site and Relais & Châteaux, in addition to personal references. What are your travel necessities? We can’t travel without our Hartman luggage. Mine has over a million Delta miles and its wheels are still rolling. For Allie, she needs to bring her stuffed animal, Hippie. We always bring our small travelsize Louis Vuitton purses.

W

hile at an art fair 40 years ago, Niki Butcher had a hunch about what people really wanted to buy. Yes, many of them purchased her husband Clyde’s prints of West Coast woods and mountains, but there was a clear market for happy, simple works of art. “I realized the stuff that sells were teddy bears, ballerinas, and seashells,” she recalls. Already an accomplished photographer, Clyde offered to take some images of such subjects. But Niki didn’t want to change the

trajectory of her husband’s nature photography, so she did it herself. Sure enough, at the next art fair, her photos of teddy bears, ballerinas, and seashells sold quickly and just as well as she thought. A few months later, she was selling those photos at a street art fair on Miami Beach when she glanced over at the Art Deco buildings along Ocean Drive. At the time, developers were looking to raze the historic hotels. They were shabby and drab, unloved relics of another era. “They were painted NAPLESILLUSTRATED.COM | MARCH 2021

chocolate brown, hospital green—such ugly colors—and I started daydreaming about the colors they should be,” says Niki. “I thought, that’s what I want to do.” Niki took black and white photos of the buildings, printed them out, and hand-painted the images with Q-tips and cotton balls, the same process used to hand-paint photographs before the invention of color film. For her entire adult life, she had been the wife of a famous artist, but she was on the brink of becoming one herself. These days, Niki, now 76, is renowned for her efforts colorizing black and white photos, mostly in pastels as soft as beachfront sunrises. This year, she’ll show her work at the J.N. “Ding” Darling Wildlife Refuge in Sanibel, in an exhibit slated to open November 13. Their daughter and manager of the Clyde Butcher gallery in Venice, Jackie Butcher Obendorf, predicts this will finally be the year that her mother earns the fame she deserves. “My dad is so popular now and it’s so overwhelming,” Obendorf says. “We have such a huge business with him. It’s hard for her to find time for her and her art. With the Ding Darling show coming up, my mom’s going to paint new pictures, and I’m hoping it inspires her to keep going.” 82

In actuality, Niki can’t remember a time when she wasn’t an artist. She grew up in Palo Alto, California, and notes that everyone in the area was encouraged to express their individuality, a phenomenon she attributes to either the influence of Stanford University or an innate Californian sensibility. “I didn’t even think about it, whether I was good at it or not. In the society I was raised, you were expected to be you.” The push was so strong, a fundamental question never occurred to her, one that would trouble her family later: How do you make money from art? She sold her first painting at age 16 and majored in art at the local junior college. It was during this time that she met Clyde through a friend. He was at California Polytechnic State University in San Luis Obispo, 200 miles south, so for their first date, he came up and spent the weekend in a travel trailer parked behind her parents’ home. Clyde had been into nature photography since he was 8 years old, when he’d run around

the woods surrounding the Kansas City golf course near where he grew up. When he was 10, his parents took him on vacation to the West, and he discovered an obsession for photographing the Rocky Mountains. With Niki and her family, Clyde found compatriots in their appreciation for art and the outdoors. Clyde and Niki would often head to the woods and call it a date. “We didn’t have any money, so we took walks on the beach, in the redwood forest, or downtown,” Niki recalls. “We didn’t do anything that cost money.” They married in 1964. Clyde graduated with a degree in architecture and had early success working for a company building and photographing architectural models. But with a downturn in the economy in 1969, Clyde lost his job. On a whim, he brought the nature photos he had been taking for years to an art fair, where he learned that he could make more money with photography than he could as an architect. Not long after, he

was selling his photos to department stores. Clyde switched to color photography, and his popularity exploded when he began putting his images inside of clocks. It became a multimillion-dollar business with 200 employees. At one point, they figured Clyde’s work was in one out of every 10 homes in the country. Clyde wasn’t the only artist behind his photos. For every frame he snapped, Niki was likely there too, helping to pick the perfect time of day and the location of the camera. “Most black and white photography is either masculine or feminine, but my father’s work is both because he works so well with my mom,” Obendorf says. “He knows visual space from architecture, and she knows fine art, lighting, texture, and composition. For his early work, they would be out there for hours, working together to figure out the right time of day to take the shot. They’re like one person.”

and, now based out of Southwest Florida, Clyde went back to where he started: Selling work at art fairs, traveling the east coast in the summers to hit the most profitable ones. He lived out of a Wells Cargo trailer, sleeping on a bench he built in the back. That’s when Niki began taking those commercially viable photos of teddy bears and the like, so that her husband didn’t have to remain on the road all summer. When she had her moment of inspiration at the Miami Beach art fair, Clyde helped Niki start her project. She’d take the photos, and then Clyde would develop and process the pictures. They’d dry mount them, and then she’d color them with oil paints she had stored in a box since college. Her new work was more artistically satisfying—and it sold well and won ribbons at art fairs. Clyde relished carrying her gear to a shoot for a change. “I thought it

Niki had been pulled in to manage the business, but it was a role she hated, her free spirit fighting the need to tell people what to do. In 1972, Niki recalls, their marriage was falling apart, the stress of the company proving to be too much for both of them. They decided to return to nature. With a son and daughter who were still toddlers, they lived on sailboats, in a pop-up trailer in the Redwoods, almost never an actual house. They spent months in Mexico and, even as Clyde was running a massive company, they lived on a sailboat moored in the harbor, with no running water or electricity. “We would come home from this big business and get in this little rowboat and be in this different world,” says Niki. “It saved our relationship, because it was nature.” They sold their portion of the company in 1977 and moved to Florida in 1980. Clyde built a sailboat, and they took it to the Dry Tortugas, the Bahamas, and then up to Fort Lauderdale. They soon ran out of money,

was great because she had always been into art,” he says. “She could have a venue for what she did.” Those good times when both of them were having success lasted three years, until a drunk driver killed their son, Ted, in 1986. This tragedy is something Niki can barely discuss. “There are no words for the sting of the sorrow and the loss,” she says. “I have no words for what that feels like.” The weekend after the accident, they were due to attend an art festival in Ann Arbor, Michigan, and they went anyway, the two of them in separate booths, far away physically and mentally. When they returned home, Niki recalls that Clyde escaped to the Everglades and barely left. He took his color equipment to the dump one day and watched it get crushed, vowing to only take the kind of black and white shots that he felt defined him better. His customers loved that the ancient trees Clyde so beautifully captured could be found in the United States and, for some, not far down the road in the Everglades. In 1993, the success of this black and white series

led the couple to buy property east of Everglades City and open the Big Cypress Gallery, where they began displaying their works. Their daughter joined the business in 1999 and they opened a second gallery in Venice. At Big Cypress, they conduct regular swamp walks for guests, which have included notables such as President Jimmy Carter. In 2017, Clyde, who’s now 78, had a stroke. When he goes into the swamp these days with his walker, he can’t carry his large-format cameras, so he’s switched to digital. Still there to help her husband, Niki hopes Clyde inspires others with disabilities to seek out nature. “Clyde takes his walker where no man has gone before,” she says. Sometimes, doing what they do seems to be riddled with new challenges, like when Clyde’s camera breaks after being exposed to brackish and salt water. Niki occasionally thinks about slowing down, but she and Clyde both quickly dismiss that. “There are days when I just want to retire,” she admits. “And then I think, no, this is keeping me alive and on the earth.” « NAPLESILLUSTRATED.COM | MARCH 2021

along, it’s become a younger man’s game.” The equipment for the younger crew manning the fast, highly responsive AC75: Kevlar suits and custom life vests, helmets, and bulletproof goggles for taking on 50-knot speeds. Fauth, Doug DeVos (the former president of Amway), and Roger Penske (a car racing icon who owns Penske Corporation) are the principal backers of the $160 million syndicate. Last March, Fauth, DeVos, and Terry Hutchinson, American Magic’s skipper and executive director, held a fundraiser at Naples Yacht Club. Eighty members got to hear firsthand about the behind-the-scenes excitement of this international endeavor.

J

ohn “Hap” Fauth is a familiar face who casually pedals around Port Royal, hits the links at the Hole-in-the-Wall Golf Club, and dines at the Naples Yacht Club. Despite his relaxed demeanor, he’s a razor-sharp powerhouse in the international yacht-racing community. As CEO of the United States’ 2021 America’s Cup challenger syndicate, American Magic, Fauth has been focused the past few years on bringing the Cup back to the U.S. this year, while upping the ante on sailing yacht innovation and design. With four years between each America’s Cup (AC) challenge, Fauth had been absorbed

with fundraising for the multimillion-dollar endeavor, including the specifics of the team’s foiling monohull design called the AC75 and the cliffhanging competition at multiple tiers that boils down to mere seconds. “You can race the same course on the same day and the wind and currents will be different,” he says. “We win races by five seconds—by half a boat length. It’s competitive as hell.” It’s called the “challenger syndicate” because “there’s always been a group of gentlemen who have put a team together to race in the AC, all the way back [to when] J.P. Morgan was the helmsman,” Fauth explains of the competition for the oldest trophy in international sport, dating to 1851. “As it’s gone

NAUTICAL CALLING Fauth, 75, grew up on the waters of New York’s Great South Bay between Long Island and Fire Island. He began racing at the age of 7, when his father dropped his golf game to spearhead a youth racing team and committee at Babylon Yacht Club in West Islip, New York. Fauth has extensive experience in highlevel races with his own custom racing sailing yachts, including his Bella Mente Maxi 72, which took first place in the New York Yacht Club 2020 Queen’s Cup in September. He also owns Whisper, a 116-foot luxury mega yacht available for private and corporate charters. For Fauth, sailing “has always been about interpreting the majestic nature of water. The dynamics of sailing is a three-dimensional chess game. It’s not only you and the wind; it’s you, your crew, your boats, and the tide—what’s happening on the water. It’s a geographic equation. You’re having to think and perform at three different levels, at least.”

WE WIN RACES BY FIVE SECONDS—BY HALF A BOAT LENGTH. IT’S COMPETITIVE AS HELL.

He and his wife of 44 years, Geren, bought a Port Royal home on Naples Bay in 2005 and joined Naples Yacht Club in 2007. “I belong to several golf courses,” Fauth notes. “I bike and fish. That’s my MO when I’m in Naples.” The couple also has a summer home in Rhode Island and property in Colorado. In addition, they spend a lot of time in Minneapolis, Minnesota, where his investment company, The Churchill Companies, is headquartered. Behind their Galleon Drive home is a 30foot Intrepid powerboat, which the family uses for sunset cruises, jaunts to Boca Grande and Key West, and fishing trips in search of tarpon, snook, redfish, and bonefish. “I’m a fly fisherman,” Fauth says. “I am not into harvesting meat; I catch and release.” The Fauths also use the Intrepid for overnight and day trips each winter with the informally organized Port Royal Yacht Squadron, a group of 12 neighborhood friends who are yacht club members. They strike out to dine

or captains. American Magic represented the New York Yacht Club, where Fauth is a longtime member and trustee. The venerable yacht club “held the Cup for 132 years,” says Fauth. “It’s part of the club’s DNA.” The other competitors were Italy’s Luna Rossa Prada Pirelli Team and the British Ineos Team UK. (Luna Rossa is the “Challenger of Record” because it launched the first challenge to New Zealand following its 2017 victory, and had a hand in writing the series’ rules.)

on Marco Island or play a round of golf at the historic Gasparilla Inn. “Four or five boats go out to a destination and sometimes members double up,” he says. Their guesthouse is frequently buzzing with weeks-long visits from their three grown children and six grandchildren, who enjoy golfing, fishing, and exploring the Port Royal Beach Club at their leisure. One of their daughters is an intense golfer, while son Forrest “fishes every day he’s here,” Fauth reports. SAILING AT THE HIGHEST LEVEL The current America’s Cup holder, called “the Defender,” is Emirates Team New Zealand from the Royal New Zealand Yacht Squadron.

Challengers in the America’s Cup World Series who have made it to this level of battle need to win 11 races in the Prada Cup Challenger finals. The winner will go head-to-head with the Defender in the thirty-sixth America’s Cup in Auckland, New Zealand, March 6-21. During a Prada Cup race in mid-January, Patriot was in the lead when it suddenly capsized in strong gusts. The crew was okay and the vessel was repaired and returned to the racecourse, but it didn’t make the cut. “The exhilarating, unforgiving and, sometimes, utterly heartbreaking nature of sailing at the highest level” was “on full display,” the American Magic team stated after the loss. Syndicates represent clubs, not boat owners

GETTING TO NEW ZEALAND American Magic worked closely with dignitaries and through official channels after New Zealand closed its borders in the wake of COVID-19. It was touch-and-go until midJune, when American Magic personnel received border exemptions and quarantined before getting under sail. The American Magic syndicate created two foiling monohull racing yachts, Defiant and Patriot, both built in Bristol, Rhode Island, to meet this year’s race regulations. Defiant became the first AC75 to sail and foil in September 2019. It logged thousands of training miles to provide valuable data for the design of Patriot, which was transported by air to Auckland in late August. The plan was for Patriot to undertake the final America’s Cup challenge against New Zealand, if all went well. The American Magic syndicate totaled 145 paid team members, Fauth says, including 40 designers, 40 boatbuilders, and up to 25 sailors, with backups for onboard crewmembers, coaching staff, and ground crew. Getting to Auckland was a massive logistical operation. Thirty-seven shipping containers served as a mini village to cover a variety of purposes: a press room, kitchen to feed 100 people three meals a day, and an electronic simulator for the sailors to practice. Some housed workshops for sail making, metal machining, and carbonfiber repairs. “When you’re going consistently at 40-knots-plus, stuff breaks,” Fauth says, noting that the 75-foot vessel weighing 1,200 pounds was hoisted out of the water following each practice and race. “It’s about efficiency and durability. Hopefully, efficiency equates to speed, and durability suggests you will stay on the racecourse and not have to drop out because of a broken item on the boat. You can’t win if you don’t finish.” «

The KURTZ family is known for building beautiful luxury homes—and for their love of dogs, like this furry guy Long before #pandemicpuppy was trending across social media, the Kurtz family of Naples has been a dog-digging bunch. However, these serial builders haven’t succumbed to adding a pandemic puppy to their team of two dogs that includes Bentley, developer Randy Kurtz’s beloved Goldendoodle, and Riley, his daughter Carolyn Gordon’s chocolate lab. “Bentley is 11 or 12 now,” says Elizabeth Kurtz, the youngest of Randy’s two daughters, both of whom work with him at Kurtz Homes and at The Collective. “He is getting up there; his life expectancy is 13 or 14 years. We are hoping that a puppy will bring life to an older dog. That’s why my dad is thinking about reaching out to the breeder we got Bentley from. But then again, it would be quite the feat to have two Goldendoodles to care for.” 104 NAPLES ILLUSTRATED

Sales from reputable breeders, like the one Bentley came from, have boomed during the COVID-19 pandemic, and so have national dog adoptions. That trend took off locally, too, with Humane Society Naples finding homes for nearly 1,600 animals in 2020. Why are dogs benefitting from such strong popularity right now? Dogs, unlike humans, cannot grasp the concept of social distancing. Instead, they commandeer your side of the bed, act like a lap dog when they weigh in at 50 pounds, and lick your face with slobbery kisses. Their utter disregard for staying 6 feet apart could be exactly why the country and Collier County residents are rolling over for dogs. PET MENAGERIE Years ago, when the pound sign was not yet a hashtag, the Kurtz sisters cared for a slew of critters. “We are such a big pet family,” explains Carolyn. “Our dogs are always spoiled and treated well as an extension of us. I can’t imagine it any other way. I think it was our parents trying to instill responsibility in us.” Elizabeth adds: “That’s why I don’t have a dog right now. I am never home. I wouldn’t do that to a dog.” Elizabeth and Carolyn agree that being raised in a house full of pets also taught them about the wonderful connection people can have with animals. “Growing up we had a Yorkie, Alex P. Keaton, named

after the Family Ties character,” recalls Carolyn, a married mother of three children ranging in age from 2 to 7. “Then we got another Yorkie, Cooper, a real scraggly, manic, neurotic dog who had more than nine lives.” Carolyn has lots of fond and funny memories of the various pets she and her sister brought home. Naturally, some random lizards and frogs were smuggled in from the outdoors. “We had countless fair fish that made our mom mad,” notes Carolyn, who also shares the tale of

She lived in my room and gave birth to six baby hamsters: two black, two cream, and two brown. We ended up giving one of each color away. Lizzy kept a black one, Rascal. My mom kept a cream one and named him Stuart Little—until we found out he was a she, then she became Martha Stewart. And I kept a brown one, Peanut. She smelled like peanut butter and was an escape artist. She lived the longest and acted like a dog. We often found her out of her cage, walking down the hall like she was a Labrador. She would chew through the twist ties we used to keep her door shut and get out of the cage, then flop down the main, curved staircase in the foyer. When we had a painter come do family portraits at our home, she painted a portrait of Peanut on the grand staircase. It’s still there.” Not surprisingly, Carolyn’s husband, David Gordon, who also works at Kurtz Homes, is a dog guy. “David had a little lab mix named Annie when we were dating in college at Elon University,” Carolyn recalls. “She was our first baby. After she passed, we got a beagle, Penny, out of grief, while we were still in school. She was a good dog and is now buried in our backyard. We got Riley right before we had kids. We have a big backyard for kids and dogs, but we are a one-dog family for now. Before we had kids, our dogs were our world. Dogs are expensive, but kids are more expensive.” BENTLEY BASICS Bentley helped Randy get through his divorce from his wife and the mother of his children about six and a half years ago. Randy and his ex both have roots in Iowa, but most of his family, including his mom and dad, whom he started the construction business with in 1982, relocated to Naples. Randy and his mother have homes in Mediterra, while Carolyn lives in Livingston Woods and Elizabeth in Bonita Springs. Carolyn notes that when Randy is away on golf trips, “Bentley is the main dog and everything revolves around him. We have a friend who watches my dog if we travel, but we have to look after Bentley.”

Elizabeth explains that Bentley is really attached to their dad and any time Randy leaves town, the dog gets high anxiety and hot spots on his skin. “The poor guy ends up in a cone,” she says. The sisters assert that the occasional Bentley inconvenience is more than worth it. “He is our dad’s buddy,” says Carolyn. “When Dad gets home from work, Bentley grabs a tennis ball to play with him on the lawn. It’s part of the routine. Bentley has been a constant companion for him. He even goes to the job sites. her lunch break. “He is spoiled and eats better than I do,” she says. “His bed in my dad’s office costs more than my bed.” Yet, she still finds his personality endearing. “Bentley gets groomed at the house and turns into a fluff, then he runs through the office like he’s in a parade to show us all how beautiful he is.” Though Bentley sometimes ignores Elizabeth’s commands—despite ample time spent with a trainer—she happily dotes on him. “He eats a special mix of wet and dry food and, at my house, he eats rotisserie chicken,” she says. Bentley has a soft spot for Elizabeth, too. Every morning at work, he greets his top five favorite people at the office—and one of them is inevitably Elizabeth. When she hears his collar jingle and sees him rounding the desk corner, she says she smiles and thinks, “Oh good, Bentley is here.” «

SPICE is Nice Suman Chaniyil of Le Indya is on a mission to change the perception of Indian food in America. The chef (known to his customers as Sam) hails from Kerala province on India’s southern coast, which is famous for seafood from the nearby Arabian Sea. The region is also known as the spice capital of the world and is a major exporter of cardamom, cloves, and black pepper, as well as coconut milk and oil. Chaniyil immigrated to the U.S. in 2000 and operates two successful restaurants in Fort Myers. He opened Le Indya in Naples last July. “Spicy doesn’t necessarily mean hot,” he explains. “There are thousands of cooking techniques in India, but they all rely

on unique blends of spices. If you change just one element, the entire dish is different. My goal is to give customers the same taste and flavor I would get at home.” He’s also a cheerleader for the health benefits of Indian food. A spice such as turmeric, which contains the anti-inflammatory curcumin, can make a significant contribution to well-being. Chaniyil is quick to point out that the use of canned or processed food is unknown in India, a practice he has carried over to his restaurants here. “We use only fresh ingredients and cook everything from scratch every day. All our vegetables come from local markets. Our meats are slow-cooked in a tandoor oven, so we avoid the use of oil.” His passion has resulted in popular appetizers such as Onion Bhajhi (coated in chickpea flour and spices), Fish Nirvana (simmered in turmeric-infused coconut milk with curry leaves and mustard seeds), and no fewer than 14 dishes containing goat meat. Le Indya also offers a com-

prehensive vegan and vegetarian menu, which reflects health-conscious trends in both India and the U.S. “We’re grateful for the reception we’ve had here in Naples,” he says. “Our clientele is sophisticated and well-traveled, and they appreciate what we’re trying to do.” (leindya.com)

Sebastien Thieffine has been delighting the Paradise Coast with his sweet creations since he started as executive pastry chef at The RitzCarlton Naples in 2007. In late 2019, he moved to Seed to Table, the 75,000-square-foot superstore opened by Alfie Oakes of Oakes Farms. NI caught up with Thieffine to talk all things pastry. (oakesfarms.com)

NI: Why did you become a pastry chef? Theiffine: My two grandmothers cooked all the time, and my grandfather was a baker. When I was small, he used to take me around to professional kitchens and pastry shops. I started at 13, cleaning sheet pans and sweeping up flour from the floor. It was menial work at first, but I loved it. He was my inspiration, and I wanted to make him happy. How many people work with you at Seed to Table? I have a staff of 75, including two pastry chefs and a head baker. We have an in-store pastry shop, an ice cream parlor, and a bakery where we make bread in front of the customers. We really produce everything, including cakes, pies, pastry, cookies, ice cream, and sorbets, as well as special orders. How important is visual appeal? Presentation is crucial. It’s the opposite of a restaurant, where a guest might order a dessert based on the menu or a server’s description. We sell a lot of grab-and-go items, and people have to be able to see the product— otherwise they won’t buy it. Describe a typical day. I haven’t had one yet! We run a 24/7 operation, and I try to see the people on every shift each day. I never sit in an office; I’m always in the kitchen, helping out and jumping in wherever I’m needed.

Tell us about your famous gingerbread house. I started the tradition when I was at The RitzCarlton. It’s nearly life-sized and contains 40,000 pieces of candy, 800 gingerbread bricks, 350 gingerbread shingles, 600 pounds of all-purpose flour, 300 pounds of icing sugar, 320 eggs, and hundreds of pounds of honey and sugar. When I interviewed for the job, Mr. Oakes showed me a picture of his family in front of the gingerbread house at The Ritz and asked if we could have one at the market. Do you have a favorite part of the job? I love interacting with our customers. My favorite part of the job is our commitment to quality. The happiness of our customers is more important than any money we could possibly make. And as I get older, I return more and more to the basics. Trends are fine, but there’s a reason bread and pies have been around for a long time.

However, despite being affordable and easy to drink, Irish whiskey traditionally lagged far behind, dominated by massmarket brands. The situation is rapidly changing. Irish whiskey is the fastest-growing spirit in the world today, and the best examples are on par with the finest single-malt Scotch, premium tequila, or single-barrel bourbon. New distilleries are launching and releasing exciting expressions that combine extended aging with experimental barrel treatment. Here, we highlight some lesser-known brands worth investigating. PUPPY PLAY Your dog can be more than just a furry friend—he or she can be your better health buddy too. Many studies suggest that caring for or simply being around dogs can reduce loneliness and help you feel more satisfied. Spend time with your canine companion while getting a workout by trying an agility class, where you and your dog work together to complete an obstacle course. “It’s great exercise and mental stimulation,” says Aschley Kezeske, owner and lead trainer of Ruffgers Dog University in Naples. Participants begin by learning the basic obstacles. As you master each one, you’ll put them together and progress to more complex actions. While it does take some physical effort, the obstacles can be adapted, with lower jumps or a shorter course available. Kezeske says a trainer can also help run with your dog, if necessary. Your dog should have some obedience training, such as sitting and responding to their name. Beyond that, any breed and nearly any age can

participate. “They’re never too old,” says Kezeske. “They can always learn new stuff, and they really enjoy that.” She adds that the training can also increase a dog’s mobility, help with weight loss, and benefit overall health. No matter which changes you make, Beth Ellen DiLuglio, lead registered dietitian nutritionist at TriCore Wellness in Naples, advises consuming at least three servings of vegetables and two of fruits per day for antioxidants, fiber, and other nutritional benefits. Below, she outlines some ideas for meals throughout the day. (tricorewellness.com) Breakfast: Don’t skip breakfast or grab simple carbs like a doughnut. Do start your day with a complex carb like oatmeal topped with nuts, seeds, raisins, and cinnamon. Straight protein like hard-boiled eggs are a filling to-go option. Lunch: Salads are great, but a well-stuffed sandwich can be satisfying and handy. “You can load it up with vegetables and lean protein,” says DiLuglio. Snacks: Go for a nutrient-rich dip (such as hummus, salsa, or guacamole) with raw carrots and celery instead of chips. Dinner: Rather than frying food in oil, use an air fryer. “It provides flavor and crunch, and it’s easy to use,” says DiLuglio. She recommends brussels sprouts or sweet potato fries. Drinks: Switch out sodas and sugary energy drinks for coffee or unsweetened green or black tea. If you miss that soda fizz, try unsweetened flavored seltzers. Allergies vs. COVID-19 Spring is in the air—and your allergies may be cropping up too. With the ongoing pandemic, it can be more distressing than ever to distinguish between allergies and something more serious. “The biggest thing is itching,” says Brett E. Stanaland, MD, founder of Allergy, Sinus, and Asthma Specialists of Naples. “We really just don’t see itching with COVID-19 or other viral infections.” Still, Stanaland says the differences can be subtle. Sneezing and itching often show up with allergies, he explains. While mild sore throat, fatigue, and fever are less common allergy symptoms, they could indicate the flu or COVID-19. “Think of timeline,” he suggests. “If you have had allergies in the past during the same time of the year, most likely that’s what it is.” Staying indoors can reduce allergy symptoms, especially in the morning when pollen counts tend to be highest or on windy days when pollen blows around. Wearing a mask outside can also help. If those measures aren’t enough, try over-the-counter medications such as antihistamines or see an allergist to help manage your symptoms. (naplesallergy.com)

PERFECT POSTURE After months of working from home, you may be feeling more back or neck pain than usual. Maybe it’s because you are working from a stool at the kitchen counter or from the sofa on a coffee table. The culprit might be poor posture, which can trigger neck, back, and even leg pain, says Julie Williams, clinic manager at CORA Physical Therapy in Bonita Springs. Often times, people sit with their head forward and their back rounded, putting strain on their neck and shoulders. When sitting, “our ears should be over our shoulders, our shoulders should be over our hips, and our feet should be on the floor,” she says. To maintain proper posture, Williams suggests sitting by a mirror to keep an eye on your positioning or having an accountability partner. “Listen to your body,” she adds. “The first time somebody starts feeling stiff or uncomfortable, then that is a warning sign that they need to fix their posture.” She recommends shifting positions, such as getting up every half hour to do a quick household chore. “You’ve got to take breaks, you’ve got to correct your posture, and you’ve got to move.” Try this quick stretch to release tension in slumped shoulders: Stand in an open doorway, raise your arms, and bend them at a 90-degree angle to the side of the doorframe with palms forward. GROWING Through Grief

Everyone has experienced some degree of change or loss over the past year. Sue “Pinky” Benson, a realtor with the RE/MAX Realty Team in Naples, was already familiar with grief after losing her nearly 2-year-old son, Sawyer, in 2015 from a rare disease. “I don’t move on from my grief; I move through my grief,” she says. “But you have a choice in those moments—you can either be bitter or you can be better.” If you’re dealing with grief from the past year or otherwise, Benson recommends trying to live in the moment by appreciating small things, like a beautiful sunset. She says it helped her to take therapeutic walks on the beach. In addition, through social media, she found a support system of new friends who understood her loss. And while it’s difficult, she says you can take lessons from your experience that may change you for the better. Research shows that journaling can reduce stress and enhance well-being. It can also help increase self-awareness and decrease the sense of being on autopilot, a common side effect of staying home a lot during COVID-19, according to Naples-based psychotherapist Alison Slater. Of the many types of journaling, Slater recommends gratitude journaling, or writing down one or two things you’re grateful for or that went well during the day. Listing any stressors can also be a productive release, she notes, but be sure to then shift your focus back to the positives. Once you’re finished, review your entry and identify core lessons. Assessing the immediate and future economic implications of the pandemic By Judy Martel

If asked to guess what will go down as the greatest economic impact of 2020, the answer should be pretty obvious. “The [COVID-19] pandemic, by historical standards, presented an unprecedented swing in economic activity this past year,” notes Michael Loewy, an associate professor of economics at the University of South Florida. From the extreme setback in the stock market in the second quarter, to the loss of jobs and failure of businesses resulting from the forced shutdown, the world took one economic hit after another. The larger, more difficult question in 2021 is how and when the U.S. and the state will recover from the pandemic-induced recession. However it happens, it won’t be quick, Loewy believes. Although the stock market and housing market held up relatively well in 2020, they are not necessarily complete and accurate indicators for the future of the economy. The loss of jobs and businesses have a broader reach that will require years of recovery, especially in Florida’s tourismdependent employment market, says Loewy. It’s “pretty likely,” he adds, that over the coming year we’ll experience either a slowdown in the economic recovery or a retraction. In some ways, Loewy explains, the employment picture will 126 NAPLES ILLUSTRATED

change permanently, but that’s not necessarily unusual, even in good times. “Economies are, by nature, changing and adapting all the time.” We’ve already seen some trends as a result of the pandemic. Many people in white-collar jobs learned that they can work from home, while those in the service and manufacturing sectors saw their jobs replaced by technology or becoming scarce. That puts immediate pressure on workers to seek training for new positions. Longer term, Loewy worries about the disruption in primary and secondary education and its potential impact on productivity a decade down the road. Additionally, women, who have been especially hard hit by the pandemic recession, may take more time to recover lost careers. They make up a disproportionate number of workers in the retail and hospitality sectors, which virtually shut down for months last year. Women also typically bear more responsibility for childcare and many quit work to care for their families and oversee homeschooling. “These longer-term impacts have been unfortunate consequences of the pandemic,” Loewy says. “We may not know the effects for decades.” Interest rates, which have remained essentially unchanged, will probably not rise anytime soon. But despite the low rates, people aren’t in the mood to borrow money while jobs are shaky, and businesses are reluctant to expand during the uncertainty around COVID. “There’s only so much the [Federal Reserve] can do on the monetary side to help the

economic recovery,” Loewy says. Further assistance has to come from government rescue programs. The initial stimulus packages to date have introduced some fiscal assistance programs, such as a freeze on evictions for renters, mortgage forbearance, and small-business loans and grants, but they are intended to be short-term remedies. In Florida, the state budget is already under pressure from the shutdown and subsequent slowdown of one of its largest industries: tourism. Across-the-board cuts have been rippling throughout the state. Lowey has already seen budget decreases of 5 to 8 percent at universities. “It will be a long recovery for our hotels, restaurants, and theme parks,” he says. The hit to the tourism industry, he adds, “will be tough straits for Florida.” «

Beach ROMPS and SURPRISES Richard Segalman’s ties to Naples date back to the 1950s, when he visited his uncle and aunt at their Third Street South lounge. There, he showed his early charcoal drawings before being formally represented by a downtown gallery. Today Segalman, who has a masterful affinity for capturing the frisson of a stroll along the shore, is represented in 40-plus museums’ permanent collections, including the Corcoran Gallery of Art, Hirshhorn Museum and Sculpture Garden, and Metropolitan Museum of Art. Across his career, the Coney Islander has mastered four mediums—watercolor, monotype, pastel, and oil—notes Kristine Meek of Harmon-Meek Gallery, which has represented the artist since 1981 and hosts an annual solo exhibition of his work. This month’s “Richard Segalman: From Naples to New York” at HarmonMeek|modern on Twelfth Avenue South runs March 2 to April 3. Meek isn’t sure what will be showcased until the artist’s self-selected works arrive from his studio in Woodstock, New York. “It’s like Christmas, unpacking all the crates,” she says. Segalman has previously sent series of tango dancers, urban crosswalks, and black and white, film

BOREYKO RETURNS

Following a year’s absence, Andrey Boreyko, music director of the Naples Philharmonic, returns to conduct a concert March 5-6 at Artis—Naples’ Hayes Hall. The program will include Prokofiev’s Classical Symphony, Beethoven’s Symphony No. 1, and Haydn’s Trumpet Concerto, highlighting the talents of Ansel Norris, the philharmonic’s assistant principal trumpet. Ansel became the first American prizewinner in the brass division during the 2019 XVI International Tchaikovsky Competition in Russia. FAVORITE THINGS Philip Douglas and Doug Olsen

Doug Olsen and his husband, Philip Douglas, have been together since 1992, Naples social scene fixtures since 1994, and married since 2013. The fashionable, charismatic couple has welcomed several pet dogs into their home over the years. Most recently, their family includes Hildy, a Dachshund Beagle mix who sleeps on Douglas’ head and is the watchdog of the group; Arden, a Chihuahua and Humane Society rescue who weighs under 5 pounds but has lots of charity co-chair experience; Tallulah, a Havipoo gifted by literary bestie Janet Evanovich; and Estee, a Corgi Terrier mix they rescued three years ago who is the senior citizen of the bunch at almost 17 years old. Olsen spent the majority of his corporate career as a big-brand cosmetics executive at companies like Elizabeth Arden and now teaches future aestheticians at a local school. Douglas opened his first eponymous Naples salon in 1994 off of Third Street South and moved it to Tamiami Trail North in 2013. Since both gentlemen have been groomed by years in the beauty business, it’s no surprise that they take excellent care of their dogs and get a kick out of making them look cute.
