s our world rapidly changes (and we get older), we hearken to go back to a simpler time, when the only things we held in our hands at dinner were our utensils. Nowadays, our smartphones aren’t even held in our hands—they’re attached to our arms (Apple Watch, anyone?). While I admit, I love my numerous electronics and the many conveniences they offer, there’s a time to put them away, especially at the dinner table while enjoying a meal and connecting with the ones seated across from you.

Meals are for connecting, communing and celebrating with others. Food relates us to one another, to our unique pasts, our ancestors and our cultural differences and similarities. It’s a way of preserving traditions, practicing rituals and passing our culture down from generation to generation. Since South Florida is a melting pot of ethnicities, there’s no need to fly abroad to tantalize your taste buds with global influences.

Some of the best international cuisines can be found right here in our backyard. In our “Culinary Tour de World,� we immerse you in different cultures through 10 eateries in the Palm Beaches, as local chefs introduce you to new flavors, recipes and traditions.

One time-honored tradition that’s doesn’t seem to be showing signs of extinction is tea time. Just as shrimp is the fruit of the sea, tea is the elixir of life. Like Bubba Gump’s shrimp, there are endless ways to enjoy it: You can have green tea, matcha, oolong, kombucha, cheese tea, bubble tea, tea facials, tea body treatments, tea cocktails and tea ice cream, just to name a few. The whole farm-to-table social movement brought to light the importance of organic, locally sourced products and knowing where your food is coming from. Free of pesticides and full of flavor, organic foods are preferred, but not always necessary. However, if you are strict about eating organic, you better be prepared to ask a lot of questions!

Designing a Salon for the Future Joel Warren on revolutionizing the salon concept inside the doors of Saks Fifth Avenue

C

elebrity hair stylist Joel Warren is clad in a red bandana that’s tucked into the collar of a black shirt below his signature feathered fedora, and he’s discussing how I should style my hair. The New York native explains his vision on cut and color to make me look like the best version of myself inside his latest venture: The Salon Project by Joel Warren.

In the back room done up with blue and green palm-print wallpaper, guests receive treatments like waxes and facials. In the front is the ultra-modern salon that Warren helped design as part of his new concept inside Saks Fifth Avenue with locations dotting the U.S., including right here in South Florida at Town Center at Boca Raton. He’s creating a salon experience for the future, including services from cut and color, to eyelash extensions, makeup, microblading, manicures and more.

“This salon in Boca really kind of is how a salon should work,” Warren says. “I have hairdressers here that are master hairdressers.

My goal is to allow hairdressers to expand their repertoires.”

He’s also straying far from the almost robotic flow salons have taken on. “In most typical salons, you check in at the front desk, you go to a color department, you go to a cutting department and you’re constantly being moved around,” Warren says. He explains further: “And when you leave, even if you want to buy products, you have to go to the front desk.” He relieves the hassle by letting clients get everything done right at the chair with their stylist. The addition of an iPad at each station provides the option to purchase products with a touch of a button.

Boca’s location marks Warren’s third Salon Project opening with plans to open two more inside the flagship Saks Fifth Avenue store in New York City before the end of April, and an additional nine throughout the country.

Why is a hairstyle important?

I always feel like hair is your most important accessory.

It’s one you really have to live with and then it’s one you have to manage. Learning how to manage is why it becomes so important. Your hair also takes time and technique to do it.

On top of that, you need to see professionals to help guide you, so it’s more complex than anything else on your body.

Let’s talk trends.

Every one has a different layout, and I kind of like to decorate them for the town it’s in. So when I did this one, I did it with a lot of flare for Florida. You see the pink and the tangerine and the greens and the blues. It’s very Florida, especially Boca, which I love Boca by the way.

My trend is always to look your best. Everybody is different. Some people don’t want to stand out. Some people just want to be comfortable. There’s form, there’s function.

Some people want the greatest form of all, some people just want to function well. It’s all about having the ability to figure out what that person wants and try to make it the best they can.

What’s your day-to-day like?

What’s most important with a color treatment?

Tell us about the salon openings inside of Saks.

I am so crazy these days. Today I showed up and five of my clients showed up because they knew I was here. You’ll find me behind the chair, having fun—I love it because I have the freedom to do anything. It’s my place; I can do whatever I want. I cut hair, I can color hair, so I can really orchestrate what I want done even though I’m not doing everything.

It’s really about being able to figure out how to lighten up the base color of people’s hair and do highlights. What happens also is that people try to cut corners and save money and end up in positions they don’t want to be in and they don’t look that great.

f you’re a regular at Lola Chiq at Downtown at The Gardens, then you’re familiar with the stylish boutique and its punchy pink accents. Sisters Maria and Marietta Mercado opened their brick-andmortar store in 2011, offering shoppers hand-picked fashion curated from around the world. And now, they’ve opened a new concept, The Accessory Bar, highlighting all of their favorite accessories.

“Our clients love our accessories, and we found that in the boutique setting, which is small and intimate, we were limited to the amount of inventory we could offer at a time,” Marietta says.

So, the next logical step for the sisters was to open a separate space dedicated solely to accessories. It sits just two doors down from Lola Chiq and provides a different shopping experience.

Interior walls are painted a calm beige, allowing the jewelry to act as the focal point in the room. Natural touches like greenery and wooden details help bring the space together.

Crosby Kitchen & Bar New York flare heads south to a Jupiter bistro

ike many concepts in South Florida, New York culture is at the very core of Crosby Kitchen & Bar. For partners Peter Pace, Tim Hall and Robert Gillin, their love of the street in the Soho District of New York City inspired the name of their new American bistro, which edges between Jupiter and Tequesta.

“The train went by when I was visiting the property [and] that sealed it for me,” Pace says reflecting on the lot that once housed Pasquale’s Italian. “It’s part of the charm and makes it feel even more a destination as the crossroads of here and there. In New York, it’s Crosby Street; in Jupiter, it’s Crosby Kitchen & Bar.” The neighborhood restaurant opened in late fall, serving classic dishes with a modern twist. Inside, the decor is homey with vintage light fixtures, accents of deep blue, and mirrors and

photography hanging on the walls—including a New York Crosby Street sign.

Sit at the bar or take a seat in the dining room and order a Fign’ About Time to get things started. Its contents include vodka, Figenza liquor, thyme and fig jam. Pair it with Pace’s favorite appetizer, the Bao Steam Buns.

The dish features sesame pork belly, pickled vegetables and a Chinese barbecue sauce delicately placed inside the fluffy dough-like

pocket. There’s also fried green tomatoes with mozzarella cheese and charred baby octopus accompanied by tomatillo salsa verde.

A wide variety of flavors are offered in the form of entrees. A few favorites include the short rib with a parsnip, celery root mash, fried okra, crispy shallot and red wine jus; the squid ink linguine made with rock shrimp, pickled chilis, arugula, scallions and rosemary breadcrumbs; and the Burger CKB—what Pace says is a worthy contender alongside the best in town. This one is topped with bacon, white cheddar, grilled onions and burger sauce on a challah bun with hand-cut fries.

And while side dishes can be boring, CBK offers a few options more colorful and flavorful. Those include the Bottom of the Pot Rice made with burnt pork belly, grilled corn, cauliflower, jalapeño vinegar, pickled radish and celery salad with a sunny up egg, to the Purple Cauliflower served with onion soubise, golden raisins, red onion salsa verde and breadcrumbs.

W

hile some people find a spiritual connection with animals, Palm Beach wine connoisseur Jessica Altieri would be better matched with a botanical, such as a grape or, better yet, an entire vineyard.

As Four Seasons Resort Palm Beach’s newly minted wine director and wine and water sommelier, Altieri knows a thing or two about good grapes. A level-two wine somm and one of a handful of certified water somms around the world, she spends most of her days and evenings sharing her wine knowledge with hotel guests and restaurant patrons.

In the seven months she has worked for Four Seasons, she’s completely revamped its wine program and designed wine lists for every food and beverage outlet, including the resort’s brand-spanking-new, fine dining room, Florie’s.

Menus are dotted with vintages close to her heart and brands from winegrowers with whom she’s established close-knit ties, like Francis Ford Coppola. The two met in 2015 at an awards dinner and shared a selfie (“That’s the millennial in me,” she says) while Altieri was helping to judge the San Francisco Chronicle Wine Competition, the largest competition of North American wines.

Additionally, she curated the first-ever water menu in the Four Seasons global luxury brand’s 58-year history, which showcases many of the world’s finest mineral water brands as well as rare and harder-to-come-by selections. Locally, it can be enjoyed at Florie’s in Palm Beach.

For Altieri, the menu seemed like a no-brainer.

“At Four Seasons, we’re always considering new ways we can enhance the guest experience,” she says.

She even has a luxury water flight spotlighting different water regions, like Vichy Catalan, the No. 1-selling water from Spain, and Svalbardi from Svalbard, which is about 600

miles from the North Pole and where there are more polar bears than people. “It’s an ultra-low, mineral Arctic iceberg water and sells for $110 on my menu,” Altieri says.

Possessing a bottle of well-balanced mineral water calved from Alaskan icebergs also makes an excellent alternative for customers who prefer something other than wine or Champagne to celebrate a special occasion or to say “cheers.” “Then, when I tell them how we can get more calcium from certain mineral waters than a glass of milk, they’re sold,” she laughs.

Altieri also stages daily wine and water tastings to provide partakers with a broader understanding and deeper appreciation for the quietly complex beverages they sip and swirl inside their glasses.

Beginning April 5 and 6, she will be kicking off a pair of wine and water tasting experiences at the property’s posh boutique and gift shop, Swell, and in the main lobby bar’s lounge, respectively.

Every Friday, guests attending the Sip and Shop event at Swell will receive complimentary 5-ounce pours only available by the bottle at Florie’s and costing more than $100.

“I wanted to give everyone an opportunity to sample wines that weren’t served by the glass,” she says. “This way, if they like it, they may feel more comfortable ordering it next time they come in to dine.”

ing that day. “So, say, for example, we were going to feature silver jewelry from David Yurman, I’d pick out something like a sparkling wine because it’s light and crisp,” she says. “But if we were doing something warm and cozy, like cashmere, I might pull a cabernet sauvignon.”

Her blue eyes light up when she talks about the Wine and Water event she’ll be hosting in the bar-lounge on Saturday afternoons. She says, “It’s not going to be a formal tasting and you won’t be punished if you’re running late.”

In fact, guests can arrive and depart any time they choose. They’ll also receive two glasses to sample three wines and three water varietals. If someone prefers to drink wine instead of water or vice versa, she won’t mind.

“These experiences are meant to be customizable,” she says. “Whatever the guest wants, goes.”

During the 30-minute tasting, she’ll discuss drink properties, how each wine-andwater duo complements and contrasts each other, and why they make good bedfellows.

Two-Time Survivor The Executive Women of the Palm Beaches Foundation has tapped Lara Logan, a TV personality whose name is synonymous with CBS News, as keynote speaker for the April 17 Women In Leadership Awards.

he covered the war in Afghanistan while pregnant with her son. The then chief of foreign affairs correspondent for CBS News returned to the country one year later—on two occasions—while pregnant with her daughter.

“That’s how crazy I was,” says Lara Logan, an award-winning broadcast journalist who will deliver the keynote address at the Executive Women of the Palm Beaches Foundation’s annual luncheon.

Logan has a powerful story to tell.

When her son was 4 and her daughter was 3, she was in Tahrir Square reporting on the collapse of Egyptian President Hosni Mubarak’s regime. On the night of Feb. 11, 2011, she was raped and beaten by a mob of men who left her for dead. She survived, only to learn in 2012 she had stage-two breast cancer, leading to surgery and radiation. Frequent hospitalizations from the long-term effects of both traumas—she recently was admitted six times in eight months—prompted her to re-evaluate life.

“I grew up thinking that women can do anything they want, and they can have it all,” says the 48-year-old South African na-

tive. “You can have it all, but having it all at once is a near-impossible task. I had compromised so much on my health, and I think the message was clear to me that I couldn’t do this anymore. I knew I had to make a change.”

Logan relocated to Fredericksburg, Texas. She appears on “60 Minutes” occasionally, opting to spend more time raising her children.

“I don’t really separate work from who I am as a person and what I believe in and what is important to me,” she says. “I wasn’t prepared for how much that would mean for my family.”

Logan has made her mark as a public speaker, as well, boldly opening up to audiences about her experiences.

“I love to speak to women because, for me, it’s kind of like home,” she says, referring to her four sisters. “I’m a strong woman who loves other strong women, so I enjoy doing these kinds of events. It has profound echoes for me.”

The Women In Leadership Awards takes place April 17 at the Kravis Center in West Palm Beach.

Logan would be lucky to stay in the area for a few days.“I never spend an enormous amount of time anywhere, now, because of my children,” she says.

“That’s my challenge. I probably will only spend a night or two, which is a shame because I really love that part of the world. I am an ocean-andsunshine girl. The beach is my favorite place.”

Luncheon chairwoman Amy Brand says Logan topped the foundation’s list of potential guests this year.

“We had discussed Lara being an internationally known correspondent, and for that, we greatly respect that she’s kind of broken ground,” Brand says.

“We want it to be a very positive, upbeat message and certainly an inspirational message when people leave our luncheon.”

Co-chairwoman Cecilia Hudnet agrees.

“We want people to think about it, talk about it and have it open up conversations for the future,” Hudnet says. “It’s really great to have her as our speaker.”

Seek and Find The Keys shake things up with a first-time all-inclusive resort, Bungalows Key Largo.

I

’ve called Florida home for several years now and, surprisingly, have yet to make the trek to the southernmost point—to the land of famed authors, deep sea fishing and arguably the best Key lime pie served. I will get there eventually. But until then, a stop at a lesser-visited Key enticed me.

West of Overseas Highway and off the coast of Buttonwood Sound lies the newly opened Bungalows Key Largo. While its sister property, Little Palm Island Resort & Spa, offers an all-

inclusive option, this property marks The Keys’ first true luxury adults-only, all-inclusive resort. It was designed by renowned hotelier Jerry Johnson who pays homage to his favorite eastern and western destinations around the world throughout the exterior and interior design details.

Past the gates, the secluded 11.2-acre property is home to a network of private bungalows—135 to be exact—that include either waterfront views of the bay or a private garden oasis. Quaint

living spaces come with verandas and outdoor soaking tubs and rainfall showers, and beach chic interiors are done in cream and gray with coastal touches like sea life artwork. The remainder of the property features bespoke aqua accents, bringing pops of color to its otherwise calming undertone.

My trip began with a quick drive through South Florida (Bungalows is just 63 miles south of Miami), but future guests can arrive via helicopter or by a 35-minute seaplane ride offered from Fort Lauderdale Executive Airport.

Perhaps the best part of each day was waking up to a serene view. With sailboats anchored in the distance, it was like an oil painting had come to life. Adirondack chairs created the perfect place to enjoy the fresh breeze before a quick walk near the pier to get to Fish Tales, one of the resort’s restaurants, for a breakfast buffet complete with a bloody mary and mimosa bar.

How to spend the rest of the day is never far reach from reach. There are two pools for soaking up the sun; paddleboards and kayaks for exploring nearby Pelican Island; and beach cruisers for roaming the property. And, seek out a number of Buddha statues inspired by Bali, one of Johnson’s favorite spots. There’s one that portrays a woman sleeping, which Johnson’s niece designed. His 2-year-old daughter lovingly refers to it as “lady night night.”

I made an appointment at the Zen Garden Spa, complete with four outdoor treatment cabanas, a steam room and a Himalayan salt room. Black bamboo commonly found throughout Bungalows is woven into the outdoor spa’s relaxing room with yet another Buddha statue as a focal point.

For avid snorkelers, the property is a short distance from John Pennekamp Coral Reef State Park, and soon, the resort will offer allday fishing and snorkeling excursions.

It’s been nearly two years since Hurricane Irma rocked the Keys, and proof like the Bungalows shows things are picking back up just fine. I confirmed this to be true during an afternoon on a Duffy electric boat while zipping through the mangroves to spot dolphins and manatees in the bay.

While out on a floating tiki bar, captain Glen Davis shared tidbits about Key Largo’s vibrant past. He’s quite the island man, having lived on several since the ’80s. This upper Key is dotted with crayon-colored houses and motels that have called this piece of land home for decades. Passing by locals out and about,

the lifestyle here could be summed up by a popular song’s lyrics: “No shoes, no shirt, and no problems.”

Back on land, an aperitif in the grand Hemingway Bar was calling my name.

Bartender James whipped up a “Love Potion No. 9,” just one cocktail specifically crafted for a permanent stay on the menu at the

writer-influenced hangout. A six-course dinner and wine pairing followed at Bogie & Bacall’s with dishes featuring seasonally caught fresh fish.

As developer Johnson intended, Bungalows is all about the sunsets. I toasted to the evening and watched as golden rays sunk behind the bay.

hink back a decade ago, walking through the aisles of say the Publix produce section, back to when things were a lot simpler.

Maybe tucked away in the corner, under a proud green banner, you’d find a few organic strawberries or apples, marked up high, maybe even past the price point where it even made sense.

Now, walk into that same store and you see those green organic labels everywhere, stamped on heads of cauliflower and wrapped around English cucumbers, sometimes barely any more expensive than their pro-pesticide cousins.

Go to restaurants, meanwhile, and organics are still a generation behind what we find in the supermarket. Can you, if you try hard, fill one hand with local restaurants that use only organic items?

If you’re willing to pay extra to make sure what you eat at restaurants began its life at an organic farm, read on. We spoke to our local experts about what to ask, where to go and how to know when everyone at a restaurant is lying to you—and yes, it definitely happens.

t was, for his legions of fans, good news in the dining world when Dean Max returned to South Florida in January.

Technically, he had been here all along, as a resident of Fort Lauderdale. But Max, who made a name for himself in the last generation at a series of local restaurants, including 3030 Ocean, didn’t have a local place for a few years. Instead, he had his attention on seven restaurants elsewhere, including the Bahamas and Grand Cayman.

In January, Max returned with Even Keel, a raw bar and fish house in north Fort Lauderdale. Max is known for helping bring the farm-to-table movement to South Florida, but at Even Keel, you won’t find a long list of organic items.

That’s because Max says it’s simply not worth the extra money to pay for organic foods when it’s not going to increase the flavor. Citrus and butternut squash, for instance, do not see improvement with the organic treatment, he says. Instead, he hunts down organic items like chicken, carrots and tomatoes—things that improve by non-pesticide farming.

“We try to buy organic when it makes sense. It’s based mainly around flavor for us. Because flavor is the key,” he says. “A lot of farmers put money into organics, and then some farmers put money instead into seeds, and that’s going to produce better flavor.”

It’s also unrealistic, Max says, to expect a restaurant to choose unripe or underflavored produce simply because it’s organic. Instead, diners ought to look for restaurants that use organic items smartly, where the produce is picked simply for its quality.

EXPECT UNTRUTHS

W

hen Jodi and Darrin Swank started the Loxahatchee farm that bears their name 18 years ago, they faced lots of hurdles. It wasn’t just the difficulty of the business, of getting a working farm going, but the distributing of all that produce that became a nightmare—a constant slog to get restaurants to continually buy their produce.

Nearly two decades later, that’s still true, Jodi Swank says. Every week, she’s calling restaurants who have bought their produce for years, wondering why they haven’t put in an order yet.

The problem is that produce from suppliers like Sysco is undeniably cheaper than the fruits and vegetables the Swanks grow down the road. Restaurants regularly go with the cheaper option, and—here’s what really irks the Swanks—don’t update their menus. Even though the produce isn’t from Swank, many local places are still selling dishes with the promise that they are.

“My husband is out here killing himself 14 hours a day, and for them to put ‘Swank’ on the menu even though it’s not; it’s insulting,” she says.

While Swank isn’t certified organic, the farm does grow produce without herbicides, fungicides or pesticides, Jodi Swank says. They haven’t gone through the process of getting certified because “the whole organic thing, in my opinion, is political,” she says.

The fact that restaurants can simply lie about where they get their produce puts diners in a difficult spot, she admits. Even if you ask about where the restaurant is getting their produce, they simply might lie about it. Local farms like Swank have at least gotten some help lately from local health department inspectors who have begun to ask restaurants for proof of “local” claims on menus.

It also helps when consumers ask questions about the source of local ingredients. Ask to speak to the chef, and ask for the specific names of the farms, Jodi Swank says. If they’re lying about it, no doubt it’ll be more difficult to do so face-to-face. “Ask, ask, ask,” she says. “Ask the chef to come out and explain where the produce is from.

Just ask. Always.”

LEARN HOW TO TASTE IF IT’S REALLY ORGANIC

ew people have been more connected with the organic and local movement than Joey Giannuzzi. Back when he started the Green Gourmet in Delray Beach in 2008, he hoped to ditch the flavorless, waxy fruits and vegetables served at most local restaurants.

That wasn’t so easy, as few suppliers back then offered anything better. Since then, Giannuzzi says nearly 100 Florida farms have begun supplying restaurants with local and organic vegetables, fruits and meats. Without a doubt, Giannuzzi says, you can taste the difference.

Organic chicken, for instance, is pleasantly firmer and far more flavorful than a traditional bird, which seems plasticky and pumped with water, Giannuzzi says. Beef will be more lean and flavorful, with a texture that is denser and seems somehow more real, more natural.

When you suspect something isn’t what it’s purported to be, Giannuzzi says to ask the server to explain. Ask for the chef or a manager.

“I do this all the time, and it drives my wife crazy,” he says. “She’s like, ‘Oh my God, leave them alone.’”

In 2013, Giannuzzi and real estate developer Mitchell Robbins opened Farmer’s Table in Boca Raton. Giannuzzi says it’s now far easier for him to source local and organic ingredients, but it remains difficult to find them at restaurants elsewhere. His advice: Train yourself on tasting the difference and you’ll know when restaurants are telling you the truth.

It’s really unfortunate that we have to do this, a taste test to see if something is really organic, Giannuzzi says. But too often restaurants will make stretching statements about what they’re serving. “It’s really knowing the integrity of a restaurant,” he says.

ASK A LOT OF QUESTIONS

A

s the owner of Ground Floor Farm in Stuart, you might think Jackie Vitale won’t go out to eat unless it’s an organic restaurant. But actually, she often finds herself out with friends, at restaurants with no or few organic choices. When she spots an organic item on the menu, though, Vitale will undoubtedly have questions to ask.

“There are a lot of questions to ask about how the food is produced. Sometimes the wait staff knows, sometimes they don’t, and sometimes even the kitchen staff doesn’t know,” says Vitale from her urban farm, market and restaurant in downtown Stuart.

Let’s say it’s a menu that promises local organic tomatoes in a caprese salad. Vitale will ask for the name of the farm, knowing few in Florida can produce organic tomatoes, especially in warm months. If they say all organic produce is local, it’s almost certainly not true, Vitale says, because it’s nearly impossible to source a menu of entirely organic produce. So if a menu promises it, ask the server how they’ve pulled it off. “Thing is, sourcing locally is really

hard,” she says. “I spend most of my day sourcing local, and it takes much of my time.”

Then, even if the restaurant can explain which farm the organic and local items came from, there are plenty of other questions to ask. Are the organic items certified? Fair trade? Any GMO items on the menu?

“Don’t be embarrassed about asking specific questions,” Vitale says.

Then, if the restaurant can’t come up with the answers, if they tell you things that aren’t true, what do you do?

Sitting there, with a group of friends on a Saturday night at someone’s favorite spot, do you get up and walk out? Vitale says no, that you just have to live your life.

“It’s too hard to feel constantly guilt-ridden about your food choices,” she says. “Do your best, be OK with it, and move on.”

o need to splurge on a ticket to France for the meal of a lifetime. James Beard Awardwinning French chef Daniel Boulud brings Parisian cuisine to West Palm Beach in the form of caviar, foie gras and sweet pavlova at his namesake restaurant, Café Boulud.

In 2003, the acclaimed chef— who’s garnered various awards and accolades in the past 30 years including numerous Michelin stars— opened his eponymous restaurant Café Boulud in Palm Beach, bringing a piece of his hometown nearly 5,000 miles away to South Florida.

“About 20 years ago, Florida did not offer much in the area of fine, yet casual dining,” he says. “With Café Boulud, we offer a new style of French cuisine with more seasonal, ethnic and classic dishes. While all of my restaurants have French roots and DNA, we always evolve and create restaurants that are relevant with the times.”

or nearly a decade, Casa Mia has redefined Italian cuisine in Jupiter by serving traditional, housemade cuisine. Stefano Paggetti, who has spent much of his life around restaurants, credits his father, Mario, for teaching him the business.

In fact, his father was at the forefront of Italian dining in Chelsea, London, and ever since, Paggetti has worked to bring that same kind of authenticity to Jupiter.

“I spent most of my youth traveling back and forth to Tuscany,” Paggetti recalls. “You could say it was a given that I would end up opening a restaurant of my own one day, so in 2010 I decided to do just that. I felt we needed something a little different, so my partner and I at the time came up with a menu that reflected our northern Italian heritage. We added menu items not typically found in Italian restaurants in these parts, and I suppose after [all these] years it works.”

cott Linquist’s journey with Mexican cuisine has been a long one. Growing up in Southern California, the food and culture was part of his life from a young age. Now more than 20 years later, he owns the popular South Floridabased fast-casual Mexican restaurant, Coyo Taco, which includes locations in Wynwood, Brickell, the Dominican Republic, Panama and Palm Beach.

“I really fell in love with Mexican cuisine a few years after graduating from culinary school while working at a high-profile Mexican restaurant in Santa Monica called Border Grill,” he says. “Since, I have spent over 20 years eating, studying and traveling through Mexico.”

Opened in April 2018, Coyo Taco in Palm Beach slings a slate of tacos, burritos and quesadillas using hand-pressed corn tortillas, slow-roasted and chargrilled meat, Modelo beer battered fish, marinated chicken, and various house-made sauces and creams such as pico de gallo, chipotle aioli and citrus slaw. The restaurant also includes a margarita and tequila bar stocked with dozens of different spirits.

“Most people don’t realize the depth and diversity of the cuisine, region by region,” he says. “It’s safe to say my life has been immersed in Mexico and its cuisine for decades.”

o matter how late Peruvian chef Carlos Brescia stayed up, he was always the first one of his friends to wake up in the morning. As everyone slept, Brescia was busy in the kitchen, marinating fish and chopping vegetables to create his legendary ceviche. That’s how he earned the nickname, “the doctor,” which would later inspire the name of his fast-casual restaurant chain, Dr. Limon.

Dr. Limon, which Brescia founded in April 2012 in Kendall, made its way to West Palm Beach in late 2018. It quickly became one of the most popular Peruvian restaurants in town, stocked with ceviche, Peruvian-inspired sushi rolls and numerous beef and seafood plates.

“If there is something us Peruvians are passionate about, it’s our food,” he says. “It allows us to share our food and culture with the rest of the world.”

est Palm Beach gained its first food hall in February 2018, bringing together an eclectic group of eateries under one roof. Feeling it was time to create a space that represented the area’s evolving food scene, husbandand-wife duo Chris and Kristen Vila opened Grandview Public Market. Inside the 13,000-square-foot warehouse space, chefs cook up their respective cuisines, serving everything from ramen and dumplings to barbecue and smoked meats, and Thai rolled ice cream.

“We felt there was a void in the culinary scene,” says co-owner and Palm Beach resident Kristen Vila. “There are a lot of talented chefs making great food, but there wasn’t a space that really brought everyone together.

We wanted to build something that would be able to serve a wide range of people and interests.”

First-timers should order the vodka-based Dear Mom cocktail at the Bar at Clare’s with white berry tea, followed by the Tonkotsu Ramen with pork belly and a soft-boiled egg at the Ramen Lab, and the Cafecito at Crema, a Thai rolled ice cream made with Turkish ground espresso beans and graham crackers.

“There is a great amount of depth and creativity here, and it’s wonderful to see how strong the Palm Beach community is when we come together,” Kristen Vila says.

n 2003, Palm Beach chef Clay Conley moved across the world to Tokyo to help open a restaurant for celebrity chef Todd English.

“I was completely blown away by the layered, bright, fresh cuisine of Asia,” Conley says. “At Buccan, many of our small plates utilized these flavor components, however, when the space became available next door, I knew immediately I want to focus primarily on that profile. Imoto translates to ‘little sister.’”

In February 2012, Conley opened Imoto, offering his own interpretations of sushi and sashimi, dumplings and tempura, and various wood-fired items, like tuna foie sliders, pork belly bao buns and Korean barbecue-style wagyu beef.

“In Tokyo I had many opportunities to visit the Tsukiji Market and experience firsthand the superiority of Japanese fish,” he says. “I wanted to be able to provide my guests with the same opportunity here in Palm Beach.

We also serve dishes inspired by other Asian countries. As you can imagine, living in Tokyo, I was exposed to a wide range of Asian cuisine and I want to encompass all those offerings at Imoto.”

t Tapeo, a two-story Spanish restaurant near West Palm’s waterfront, executive chef Javier Gutierrez brings a taste of Spain to South Florida, serving some of the area’s most iconic dishes, including croquetas de jamón, sautéed Spanish sausage, jamón ibérico, seafood paella and red snapper filet stuffed with shrimp and scallops.

hey say timing is everything. Sara Balas Densen was with her client, looking at a more than 5,000-square-foot waterfront home in Juno Beach. Densen, a real estate agent with The Balas Group/ReMax, was trying to convince her client that this was one of the best homes on the market.

In fact, Densen and her husband, a film producer, had spent months looking at the property online themselves, wishful thinking as the price continued to drop.

“And then my client, out of the blue, turns to me and says, ‘This house is really meant for your family,’” she recalls. At first, Densen brushed off the comment.

But it replayed in her mind.

Densen and her husband had recently completed an overhaul of a “short sale” home purchased in 2013. The home had literally been gutted. Were they ready to start a new project?

“It was not an easy decision,” Densen says. “Literally, we had put our blood, sweat and tears into our first home. But this Juno Beach home really was perfect.

I was torn, do we start all over?”

The first home’s design had been adroitly handled by Krista Watterworth Alterman of Krista + Home.

“In the end, we made an offer, called Krista and said, ‘Here we go again,’” Densen says.

Watterworth Alterman was ready.

“What was really nice about working with them a second time was their high level of trust in me,” she says. “They wanted a similar vibe to their previous home, but a bit more sophisticated.”

Along with the spectacular views, the house already came with solid architectural bones, including an open floor plan, a recently renovated kitchen, a 25-foot vaulted ceiling lined in oak wood and a light-filled cupola. This would not be a gut job.

The challenge, though, was channeling the Densens’ casual coastal sensibilities.

“We started by giving the home a modern and fresh look by adding shiplap throughout the home,” Watterman Alterman says. “And [we] built a soft neutral palette for the walls.”

The living room’s relaxed feel features a Swaim Brewster sofa flanked by Lazar Soho side chairs. The inherited built-in media center was re-accessorized with carefully curated curiosities, including a spinner vase and sea urchin ceramic platters from Global Views.

A lucite console table next to the front door is barely noticeable, but it provides the perfect spot to drop off the day’s flotsam.

Opposite the living room is the open concept kitchen with white Shaker cabinets and a herringbone marble backsplash. The large center island, topped with a light gray, quartzite counter, was matched up with Duralee’s Dover stools that Watterworth Alterman covered in gray, faux-leather fabric. She also built shelves between the kitchen and pantry for extra storage.

“The goal was to create a space that is timeless and comfortable, but with luxurious touches throughout,” Watterworth Alterman says. “Marble and natural stone are used in the entire home. Luxurious, high-quality fabrics are all present in the upholstered furniture, pillows and drapery. And of course, all lighting choices are upscale.”

In fact, the dining room’s white beaded chandelier is perhaps Densen’s favorite objet d’art, purchased from Pineapple, Palms, Etc. Watterworth Alterman added a double pedestal dining table from Lexington with mixand-match dining chairs upholstered in bone-fabric.

Since all the main rooms of the home look out toward the backyard, the floor-to-ceiling infinity pocket doors give the home openness and plenty of natural light. In fact, the last room is more like a lanai. On one side is a sitting area with a fireplace decorated in a herringbone pattern. The room features Serena and Lily side tables, Lee Industries’ furniture in neutral colors and throw pillows in sea mist tones by Kravet. Similarly hued drapes with a swirl motif add femininity, yet keep the vibe beachy and approachable. Plenty of wood, brass and white ceramic accessories fill the shelves. On the other side of the open lanai room, Watterworth Alterman carved out a space for the kids. She dubbed it the “art room.”

As the parent of two young children herself, Watterworth Alterman says she taps into what kids love when designing their spaces. “I also listen to my own inner child,” she says.

A Pottery Barn work desk, Tribecca Home bookshelves and plenty of budding artists’ work complete the look.

“It has become an essential part of our home that I never knew we needed,” Densen says. “A place for the kids to paint, color, do homework and entertain their

friends and where I can keep a watchful eye.”

Designing a patio that spoke to an active lifestyle was also paramount.

“This family entertains a lot, and they wanted room for the children to play outside,” Watterworth Alterman says. “Since this lot was so large, it was important for us to find ways to create intimate spaces.”

A custom ipe wood table that seats 20 was ordered. Instead of chairs, two benches create a seamless look. The Densen family also built an outdoor kitchen and a cozy fire pit flanked by Adirondack chairs. Loungers, couches, hanging cocoons and even a tire swing tied to an old oak tree fill the yard. There is also plenty of grassy land left untouched for bare-

“I try to design children’s spaces that will last over time, something they can grow into,” Watterworth

Alterman says. To wit, the girl’s room features black-and-white Schumacher botanical wallpaper, lightened up with blush colored fabrics and gold accents. Panels in a black-and-white polka dot pattern tie it all together.

“This is a room that can take a girl into her tween years,” Watterworth Alterman says.

For the boy’s room, favorite animal considerations were pondered.

Watterworth Alterman found a whale repeat wallpaper for an accent wall.

The rest of the room zips with a fresh, Nantucket spin of red accents, navy-striped panels, wooden bunk beds and a sputnik, steel light fixture.

As for the master bedroom, a

palette was chosen that reminded Densen of the old bedroom she left behind. “I wanted it to feel familiar,” Densen says.

Upstairs, a large guest suite with its en-suite bathroom offers sweeping views. A Pine Cone Hill striped duvet and accents brought in from the old home give it a grounded feel.

“Krista did such a fine job the first time,” Densen says. “I just knew I could count on her to deliver a beautiful and comfortable design the second time around. Of course, she knocked it out of the park.”

As for now, Sara Balas Densen is definitely keeping this house off the market.

EDUCATIONAL EXPERIENCES Robin Durfee believes every cup of tea has a story to tell. The South Florida tea sommelier hosts themed tea classes with tastings, like “Tea 101” and “Intro to Green Tea,” as well as tea flights at Fort Lauderdale’s Zen Mind Space. She also teaches cha dao, an ancient Chinese practice that melds meditation with tea drinking. At Kaffee’s Garden Spa in West Palm Beach, spa-goers receive a facial tea compress during the Garden Salt Kur, a hydrating and exfoliating body treatment performed in their Himalayan salt room, or add one onto a facial. So many teas, so little time. Here’s what and where you need to be drinking, and eating, right now.

BUBBLE TEA

Introduced in Taiwan in the 1980s, bubble tea is a whimsical elixir concocted from cold tea, milk, syrup and marble-sized tapioca pearls, or “boba.”

Inside Delray’s buzzy Ramen Lab Eatery, customers flock to Sugar Milk Boba and Dessert Bar for owner Elizabeth Thepithack’s bespoke iterations, like the honeydew tea with egg pudding, lychee jelly and bursting boba (pearls that “pop” with flavored juice). The boba-centric shop serves up other Asian tea drinks with delicious flavors and kooky hues. There’s even an arcade with classic video games and a pinball machine.

CHEESE TEA

If you haven’t tried cheese tea, you must. Similar to the frothy head of a cappuccino, this cold tea drink is topped with a foamy layer of whipped cream, or condensed milk, and cream cheese and is typically finished with a pinch of salt. At Yum Creamery in West Palm Beach, cheese tea is made in 10 variations of Chinese tea, including peach chin and roasted oolong.

ALCOHOLIC TEA BEVERAGE

The Beauty and The Beeeef in Wellington offers a long list of inventive cocktail choices, but the Jing Jang, a libation made from chamomile tea and Southern Comfort and Jameson Irish whiskies, is definitely worth a try.

Delivered in a steaming teapot with an empty cup and one with ice, it can be sipped hot or cold and will either have a wicked bite or a soft, floral taste.

Prefer your kombucha with an extra kick? Head over to City Oyster in Delray Beach where bar manager Ted Downey is shaking up a series of Non-Prophet kombucha-laced cocktails, like the Mexican Bucha, a flavorful

Housed inside a kaleidoscope-colored, Victorian-style home in downtown Delray Beach, the Yaxche Tearoom + Emporium steeps some of the best teas in the state.

Proprietor Alexandra Wayne scours the globe for teas she keeps stored inside the glass jars that line the walls. Teas have funky monikers, like Good Omen and Soul Mate, and deliver holistic benefits, like the Nirvana tea that incorporates coconut, almonds and roses to calm the mind.

Adaptogens, or natural herbs with health-promoting properties, can also be added to drinks. Loose teas are packed in reusable, zero-waste tins.

For nearly two decades, Serenity Garden Tea House & Café has been serving afternoon tea from its cozy perch near the Norton Museum of Art in West Palm Beach.

Dublin-born owner Audrey Farrelly brews more than 50 teas and prepares from-scratch, flaky orange scones, mini-quiches, her famous soups and bite-sized sandwiches in flavors like turkey with cranberry. Whatever isn’t made in her kitchen gets sourced from small businesses within a 1-mile footprint.

At Teapots and Treasures Café and Curiosities in Juno Beach, this adorable, shabby chic-inspired teahouse is made up of semi-private vignettes with gracious touches that guests can call ahead to snag. Owner Barb O’Donnell’s tea presentation showcases praise-worthy finger sandwiches and heavenly desserts that include Orange Delight and Black Forest cakes. The gift shop sells whimsical keepsakes and millinery ladies can wear while they dine. O’Donnell says no one has ever left hungry, which explains why most leave with a to-go box.

Delray Beach’s Tealicious Tea House celebrated its 10-year anniversary in December and will be opening a Parkland outpost this spring. he latest thing in running for office in Florida is to not tell the voters what you stand for.

It may be the best way to win an election. As an example, we give you recently elected Florida Gov. Ron DeSantis. If you followed the governor’s successful campaign last fall, you would have only a vague idea of what he would do if elected. He seemed to be a strong supporter of President Trump, wall and all, and had nothing negative to say about outgoing Gov. Rick Scott. A rational person would, therefore, assume that he did not believe in climate change, and saw nothing wrong with his predecessor’s steps, which did little to address the problems of Lake Okeechobee pollution and the effects on the estuaries on both coasts—especially in Martin County, as well as the ongoing neglect of the Everglades.

If you thought that, you were happily wrong. The Republican governor’s first months in office find him acting much like a Democrat—at least on those issues most important to those worried about Florida’s deteriorating environment. He has shown a determination to do something about the problems of Lake Okeechobee and South Florida’s threatened water supply. To say that environmental groups, most of whom opposed his election, are surprised, is to put it mildly.

Eric Eikenberg, chief executive of the Everglades Foundation, one of the most influential environmental groups, echoes the common theme: “This is the most optimistic we have been in decades —to have a governor who made cleaning up Everglades his No. 1 priority. We could not ask for anything more. Now we have to make sure that the legislature puts money behind those priorities and we can solve this problem.”

It was not just the new governor’s actions, but the speed of them, that has generated enthusiasm from environmentalists. DeSantis lost no time in asking

for the resignations of the entire South Florida Water Management District board of directors. These are the people who make the decisions that affect the water flow from Lake Okeechobee.

While theoretically independent, the members are appointed by the governor and therefore reflect his views. And former Gov. Rick Scott’s views were a reversal from those before him.

Under Gov. Charlie Crist there was a plan to buy a huge parcel of land from U.S. Sugar Corporation, the Clewiston-based company that for decades has been growing sugar on land directly south of Lake Okeechobee.

That land was once the headwaters of the “River of Grass” and constituted the northern reaches of the Everglades.

Back in the day of Gov. Napoleon Bonaparte Broward (1905-1909), the land was drained with a network of canals to make it rich soil for agricultural purposes.

Because South Florida was lightly populated at the time, turning wetlands into productive farmland had limited effect of the Everglades. But as our area became the most populous part of the state and the demand for water grew steadily, so did the damaging effects of the stunted water supply.

The problem was compounded by the loss of wetlands, which were a natural cleansing agent for fertilizer polluted runoff from all the farms. South Florida found itself in a strange situation. Lake Okeechobee was surrounded by a dike after disastrous flooding in 1928. Water built up in the lake during the rainy summers, but when the lake became

dangerously high, water that nature intended to flow south into the Everglades was discharged through canals east and west. Areas that did not need water, such as the Stuart area, got too much polluted water, while the Everglades to the south did not get enough.

The U.S. Sugar land acquisition plan would enhance the natural flow of water, in effect restoring a crucial part of The Everglades. But under Gov. Scott, the plan to purchase land died.

A spokesman for U.S. Sugar said it decided not to sell after the state changed its mind about buying the land. But the truth is Gov. Scott nixed the deal by appointing his own people to the Water Management District. n recent years, the situation became disastrous, at least for Martin County, as polluted water from the lake merged with seawater, producing an algae buildup, which killed sea life in an area where economy depends on its reputation as a water wonderland. Gov. Scott’s administration worsened the problem by replacing management of the South Florida Water Management District with directors who favored the polluting agricultural interests over environmental concerns. Scott was obsessed with growth and new jobs. He showed little interest in people already living here. Eight years were wasted, and those years finally saw decades of neglect have their effect. In addition to pollution on both coasts opposite the lake, rising sea levels have been creeping inland, under our shallow crust of soil, encroaching on freshwater supplies for millions of people in Palm Beach, Broward and Dade counties.

Now all this history has been widely publicized. It is hard to live in South Florida without understanding at least the basics of the water problem. But one might think Gov. DeSantis, from far up in Daytona Beach, would not be acutely aware of the situation.

Wrong. So far.
