couldn’t have predicted, when I relocated to South Florida seven years ago, that I would end up here. Putting together a magazine for the town I now reside in. A town I adore. Thanks, Jupiter! So let’s get to it.... First, I’m so excited to unveil the result of our redesign. As you’re flipping through these pages, you may notice some changes to the look and flow of things. The goal was to make Jupiter Magazine even better than it already was by giving it an overall cleaner design and more structured sections—including new columns I hope you’ll come to look forward to each month. In “Character,” for example, you’ll meet locals from all walks of life who make our community what it is. “Explore” roams the area, getting to know more about the unique places and adventures we are so fortunate to have all around us. We’ll be rolling out more regular columns like these as time goes on, all geared toward showcasing both beloved and hidden treasures, from North Palm Beach to Tequesta. In this issue, we’re so honored to feature the Nicklauses and all of the important work they do for children through their foundation (page 38). Barbara and Jack are, in a word, legends. With huge hearts. And we thank them both for being such amazing humans. Also inside? Food! Lots of food. We visit Kai-Kai Farm (page 44) and experience an alfresco farm-to-table dinner prepared by Chef Adam Brown, and we’ve added a “Flavor” section (page 63) to highlight some special things happening on the local cuisine scene. Of course, favorite staples like social photos are still here—you’ll find those filed under “Hot Shots” (page 100). And we’ll also be adding more fashion to the mix, which I’m definitely okay with! Check out our shoot at Dubois Park featuring lots of gorgeous dresses, just in time for spring (page 50). here’s no shortage of awe-inspiring beaches and parks in our area, and with Earth Day celebrating its fiftieth anniversary this year, now is the perfect time to chip in and do your part to keep them looking great. For more than 30 years, the nonprofit Keep Palm Beach County Beautiful has been doing just that, organizing grassroots volunteers to maintain the area’s gorgeous landscape. Each year, the group takes part in the “Great American Cleanup,” a nationwide project started by Keep America Beautiful that corrals locals to remove litter from beaches, parks, waterways, and roads all around the county including MacArthur Beach State Park, Juno Beach, Carlin Park, and more. Executive Director Lourdes Ferris says the annual cleanup draws participation from around 1,000 volunteers. “It’s amazing that we have that many people interested in coming out to help, especially since there’s so much going on in April in the county,” she says. The Great American Cleanup takes place April 18 this year (four days before Earth Day), with a few additional locations in the area happening April 25. Movies on a Mission CELEBRATE EARTH DAY AT THE WILD & SCENIC FILM FESTIVAL
T
his month, Jupiter Inlet Lighthouse & Museum will once again showcase short films from the Wild & Scenic Film Festival. The California-based event was founded to inspire environmental activism and a love for nature through film as it takes its show on the road to more than 250 events each year, including Jupiter. Pack a lawn chair and head to the lighthouse April 10 and 11 for the outdoor viewings plus live music, beer, wine, and food trucks. Here, Director of Marketing and Community Affairs Kathleen Glover notes five films not to miss.
AIDEN’S BUTTERFLIES (14 min) 1. Eleven-year-old Aiden Wang has been growing and releasing monarch butterflies since he was 6. With the milkweed plant diminishing, monarchs are endangered—and Aiden hopes to preserve the species. “He learns from an older woman and shares his knowledge with kids in the neighborhood,” Glover says. “It’s a great example of what even a very young person can do.”
(RE)CONNECTING WILD – RESTORING SAFE PASSAGE (12 min) 2. Follow the decade-long effort by the Nevada Department of Transportation to create safe crossings for wildlife over two busy highways. The project allows mule deer to migrate more than 1.5 million acres of habitat. “Every time I drive across Florida, I see dead animals on the side of the road,” Glover says. “I think this is a great film that shows an example of what can be done—and done economically—to help take care of the wildlife in our own state.”
WHERE THE WILD THINGS KEEP PLAYING (4 min) 3. The sequel to Where the Wild Thing Play follows athletes pursing their passions—getting dirty, going on adventures, and doing extreme

sports. “The film shows people just getting outdoors, enjoying all different aspects of nature,” Glover says. “[Director Krystle Wright’s] filming is fantastic, and her projects have always stunned people. I think the audience will really love this one.”

LOVE, TRAILS & DINOSAURS (8 min) 4. Garan Moore is the first person with autism to hike every trail in the Great Smoky Mountains National Park. He accomplished it with his mom, who hoped to lose weight‚ and ended up with a new shared passion. “It’s a wonderful, heartwarming film,” Glover says. “It’s such an achievement for mother and son to hike the trails and travel 900 miles together.”

SPAWNING HOPE (10 min) 5. A team of scientists is testing new techniques to try and reestablish coral in the Caribbean. If it works, conservationists may be able 5 to restore endangered coral from near extinction. “This is important for [Floridians] too because if we can’t figure out a way to preserve coral, it’s going to impact—and it is impacting— Florida in ways people don’t even realize,” Glover says. jupiterlighthouse.org; $15 per night v

F
or bread maker Johnny VanCora, championing one of the most competitive verticals in the food industry began with a recipe. At 15, the Jupiter teen was struggling to find a summer job when a family friend gave him a recipe for a simple white bread he could whip up and sell door-to-door. “It was a good bread, but very different from what I make now,” he says. “I sold six [loaves] in the first week.” That triggered an intrinsic talent in VanCora, and in just two years, his grassroots baking business— which consisted mainly of selling at farmer’s markets and to a loyal base of friends and locals— had expanded to 200 loaves a week. Eyeing a future in the food and beverage industry, he applied to Cornell University’s prestigious School of Hotel Administration. While his grades and business sense were certainly noteworthy, it was the crusty creations he brought to his interview that likely sealed his acceptance. “The bread was fantastic,” recalls FAU professor and Cornell alum Gregory Bohan, who conducted the interview. “I kept tearing off pieces of crust... I think I ate half the loaf before we finished.” After graduating from Cornell, VanCora returned to Jupiter, selling bread out of his

parents’ garage. He promoted his goods at local greenmarkets as he worked on plans for his own bakery. Six months later, in November 2018, he opened the doors to Bread by Johnny on Indiantown Road. Located within Sims Creeks Plaza, the 1,000-square-foot shop balances nearly 35 fluctuating flavor profiles ranging from rustic sesame (VanCora’s favorite) to a chewy Honduran pan de coco dusted
with coconut flakes. He has also made focaccia bread from seedlings revived from his late grandfather’s prized basil plants. The loaves are baked in a 5-ton Polin oven from Verona, Italy, the bakery’s pièce de résistance. When it comes to his success, VanCora is matter of fact: “It’s about just taking really good ingredients, managing fermentation correctly, not taking shortcuts, and
knowing what to look for with the bread and the dough.” While there is always the possibility of expanding his brand with products like coffee to complement his breads, for now VanCora is content with honing his craft. “I want to make one product really, really well,” he says. “The fact that it’s impossible to get a perfect loaf is exciting to me. onfession: There was a point in time when I was hooked on YouTube videos about making chocolate. I’d watch anything—how to perfect chocolate bonbons at home, recreating viral chocolate trends like chocolate spheres with cake inside… You name it, I’ve watched it. I collected the necessary supplies like fillings, numerous molds, and of course chocolate, ready to create magic. They sat on top of my fridge for months. When I learned about a chocolate-making class at Tasty Image in Tequesta, I signed up without hesitation. I arrived on a Saturday, walking through the doors of the tiny shop with excitement, and was greeted by a cacophony of cocoa treats on display that made my mouth water. I fought the urge to sample

every morsel and made my way to the back of the store, where owner Derri Cerbone carefully explained the process to six chocolate enthusiasts before the hands-on learning began. We started with dark chocolate nonpareils, essentially small chocolate buttons with one side coated in colorful sprinkles. Each student took a turn holding a warm funnel of melty chocolate over a tray of sprinkles, raising the wooden stick inside holding back the flow and quickly returning it to drop dollops of chocolate into rainbow beds. By the end of my row, I already felt like a professional chocolatier. We moved on to tuxedo marshmallows—simple treats that look oh so fancy. After coating the marshmallow in white chocolate and allowing it to harden, we were instructed to dip the sides into dark chocolate at an angle to create the coat. This part was a bit tricky because you have to move fast or you’ll melt the white chocolate beneath, and you have to be precise. With a wooden stick and some extra dark chocolate, I added a bowtie and buttons to finish off my dapper confection. Next Cerbone began placing pretzels on the conveyor of a chocolate enrobing machine, which has a steady flow of chocolate to cover anything placed beneath. I felt like I was in an episode of I Love Lucy, everyone scrambling to get the chocolate-covered pretzels off the belt before they fell. (We only dropped three by the end of it.) Now it was time for the best part: eating. We put everything together in chocolate bowls, filled them with some ice cream from the shop, and topped it off with our newly made treats. My sweet tooth was more than satisfied! We wrapped our tuxedoed marshmallow friends and took them home to snack on later. The artifacts, including jars of whale oil, an array of scrimshaw (carved whale ivory), and the suspended skeleton of a 46-foot sperm whale, provide a fascinating snapshot of early island life.

ention the “Golden Bear” and even most non-golfers know about the man behind the famous moniker. Jack Nicklaus conjures up images of pure Americana, striding confidently across the golf course with tousled blond hair and one club raised in salute to fans. But while he may appear to be enjoying a relaxing Sunday afternoon game, a closer look at those blue eyes trained on the horizon reveal a focused competitor who, over a 20-plus-year professional career, won a record 18 major championships, beginning with the stunning 1962 triumph over Arnold Palmer at the U.S. Open when he was just 21 years old. He was a sports prodigy for sure—but even more, the Golden Bear was an all-around nice guy and a devoted family man. And fans loved him for it. Today, his record of the highest number of wins in the Masters Tournament stands at six, along with an impressive five PGA Championships, four U.S. Opens, and three British Opens. Jack’s professional sport days are now behind him (he turned 80 this year), but the golf icon’s popularity endures with his various business ventures—Nicklaus Design has more than 400 golf courses open for play around the globe— and his commitment to giving back. Jack has directed his business expertise and love of children toward supporting his wife, Barbara, in her philanthropic endeavors, as she did him throughout his sports career.

“I was blessed with a great partner,” he says of his wife of 60 years, with whom he shares five children and 22 grandchildren, during a relaxing afternoon at their comfortable North Palm Beach home. “I think Barbara is probably the most selfless person I ever met. She never put herself first. I couldn’t have played golf and done what I had to do to be tough and competitive without her. She supported me through all the years I played and made it all possible.” Trim, energetic, and possessing an easy friendliness rooted in her Midwestern upbringing, Barbara, 80, credits their happy marriage to mutual support. “It’s 95 percent give and 5 percent take, on both sides,” she says. She met Jack the first weekend of their freshman year at Ohio State University and changed her major from nursing to elementary education after realizing the intense nursing schedule might interfere with her burgeoning relationship. Recalls Jack: “I walked her to the bacteriology building for a class and thought she was nice. A couple of weeks later, she worked me in [to her life].” They got engaged the next year and married between junior and senior years. Barbara happily took on the role of the woman behind her man throughout Jack’s successful career on the fairway, racking up her own list of accolades along the way in a field that she’s extremely passionate about: bringing health care to as many children as possible. Among her honors, she was the recipient of the 2019 PGA Distinguished Service Award and the 2015 Bob Jones Award— the U.S. Golf Association’s highest honor, bestowed on those who show “spirit, personal character, and respect for the game.” Sixteen years ago, at Barbara’s urging, the couple founded the Nicklaus Children’s Health Care Foundation (nchcf.org). Barbara serves as chair, cofounder, and tireless ambassador, guiding the foundation in raising more than $100 million over the years to provide care to children in every state and nearly 120 countries. The foundation also supports outpatient and urgent care centers up and down the coast of Florida (including Palm Beach Gardens) and a children’s hospital at Jupiter Medical Center (the De George Pediatric Unit). “This is Barbara’s vision, but it has changed my life,” Jack says. “Charity in golf always meant a game to raise money, but now it has become more personal. I’ve gotten close to some of the kids and stay in touch. It’s very rewarding.” One of the beneficiaries of the foundation is the Nicklaus Children’s Hospital in Miami. In 2015, the hospital formerly called Miami Children’s Hospital (which celebrates its seventieth anniversary this year) was renamed in honor of the couple’s personal and financial commitment. “Bearing the name ‘Nicklaus’ has allowed us a greater level of integrity and a

broader reach for the brand,” says Michelle Boggs, president of the Nicklaus Children’s Hospital Foundation, which she says raised more funds than ever in 2019—$23 million. “People ask all the time if [the Nicklauses] actually come to the hospital. What has been truly, pleasantly surprising to me is how often they come, at least quarterly. And when they’re not physically here, they’re hosting fundraising events in their home or going to various events. They’re both 80, and they’ll come here and be on their feet the entire day and are jam-packed with meetings—yet you see their level of empathy and caring when they’re around the kids. They hug them and their parents and take the time to talk. You can tell that’s the driving force for them. They just want to help kids.” Of the many patients treated at the hospital, Jack cites the case of twin 4-year-old girls, Teegan and Riley, as one of the most moving. Born in Minnesota, Riley was healthy, but Teegan was
born with one lung and half of her heart. “The doctors sent her home and said she wouldn’t live very long and that her condition was inoperable,” Jack recalls. “We got her in with Redmond Burke, one of the surgeons in Miami, who told us, ‘Inoperable is not in my vocabulary.’” Over the next few months, Dr. Burke performed six operations to rebuild Teegan’s heart. Then, says Jack: “The doctor told her mother, ‘Take this girl home to play with her sister!’ I'm sitting here half-crying every time I talk about this. Actually, I am crying,” he adds as he wipes his eyes. “We obviously get attached to the children. We don't want to run the hospital; our job is to fundraise. to her and Jack in 2005. That’s the year they lost their 17-month-old grandson, Jake. In his memory, they created the foundation’s biggest annual fundraiser, The Jake. The two-day golf event at The Bear’s Club in Jupiter draws PGA Tour stars to Jack’s home club and brings in millions for the foundation. Another signature Nicklaus Children’s Hospital Foundation event that scores high in fundraising is the annual Golden Heart Luncheon, featuring a silent auction and a celebrity speaker that in past years has included former First Lady Barbara Bush and actress/television personality Marie Osmond. This year’s luncheon, held at The Country Club at Mirasol in Palm Beach Gardens in January, raised $550,000 and attracted nearly 400 attendees. Keynote speaker, actress and philanthropist Jane Seymour, told the audience that Jack and Barbara “understand that what you leave behind is the love you shared in life and the difference you’ve made.” A 12-year-old boy who underwent surgery to straighten a severely twisted spine also spoke movingly about how the foundation made it possible for him to thrive. By the time he invited attendees to raise their auction paddles for the $250 “Give a Bear, Get a Bear” program— which buys the purchaser a stuffed bear and donates one to a child at Nicklaus Children’s Hospital—nearly every attendee raised a paddle. Reflecting on their shared success in philanthropy, the Nicklauses marvel at how things have grown from the “teeny-tiny” foundation Barbara envisioned all those years ago. “When Jack first started out in golf, I was so proud of him, and I guess I wanted him to be proud of me,” she says. There is no doubt there; Mr. Nicklaus is clearly beaming with pride and admiration for his wife’s accomplishments. “Golf is just a sport; it’s just a game, although it turned out to be very important to me in life,” Jack says. “But I’ve seen miracles in the hospital, and what I’ve seen happen is much more important than a 4-foot putt.” ❖

W
hen Carl Frost and Diane Cordeau visited the Solomon Islands and saw natives growing vegetables on coral, they realized the unlimited possibilities of agriculture. “If they could do it on coral,” Diane remembers thinking, “we could do it anywhere.” That moment of awakening inspired them to purchase 40 acres of old citrus land in Indiantown in 2003. Three years later, the site blossomed into Kai-Kai Farm, where they grow beans and greens (more than 80 varietals of vegetables). Today, the couple is busy seven days a week, farming and supplying local residents and chefs with produce

through their own farm stand, The Gardens Green Market, and a community supported agriculture (CSA) program where consumers can pick up fresh “veggie boxes” on a predetermined regular basis. Kai-Kai also hosts on-site weddings and private events, cooking classes, and a special series of farm-to-table dinners by visiting chefs. “Everything they grow tastes right,” says Chef Adam Brown, who created his fourth dinner at Kai-Kai in January. “The quality of their produce fits into my approach to cooking—you don’t need

to manipulate the ingredients to appreciate the delicious flavors.” As the former chef at The Cooper in Palm Beach Gardens, Brown was one of the first to use Kai-Kai’s produce on a large scale. “I met with them before we opened [The Cooper] in 2014,” he says. “I wrote a paper on Alice Waters in culinary school, so I was immediately attracted to what they were doing: a hands-on, mom-andpop operation growing sustainable and healthy crops.” Brown’s recent menu reflected the bounty of Kai-Kai, from the appetizers

Kai-Kai’s list of visiting chefs reads like a who’s who of local culinary talent, including: Buccan’s Clay Conley and Zach Bell, Oceano Kitchen’s Jeremy and Cindy Bearman, The Gafford’s Taylor Wilson, Coolinary Café’s Tim Lipman, and Café Boulud’s Rick Mace. They work in an open kitchen, in view of the up to 120 diners seated in the rustic, screened-in pavilion. The dinners, which cost between $95 and $105 a ticket, are typically four-hour events that begin at 4 p.m. with a tour of the farm led by Diane. Upon arriving back at the pavilion, guests are greeted with Champagne and passed hors d’oeuvres before taking their seats at the elegantly set farm tables for the multicourse dinner. While BYOB is encouraged, each course is paired with a wine (Gourmet Galaxy’s Franny LaRue supplied the beverages for this dinner) and enjoyed amid live music on a nearby stage. Guests can also sample or purchase treats from other vendors who set up shop at the dinners—Oceana Coffee as well as a table of spices, teas, and other treasures from The Spice & Tea Exchange. Kai-Kai is certainly thriving, and Carl and Diane are planning to grow the farm and its services/ events to offer more to their beloved community. “We’re trying to awaken our neighbors’ taste buds,” Diane says, “and hopefully educate them on how to eat better.” View Kai-Kai’s full dinner calendar and learn more about the farm at kaikaifarm.com. ❖

hen Jacquelyn Armour, principal of JMA Interior Design, was contacted by the owners about their plantation-style home on the Loxahatchee River in Jupiter, she was delighted at the rare opportunity to shape its interiors before the residence was fully designed and constructed. The couple, empty nesters who had long lived in the area, wanted Armour to work hand-in-hand with the architect and builder from the ground up—not only selecting the materials, fixtures, finishes, and furniture for the interior spaces, but also influencing the spatial configuration of the rooms and how they would flow from one to the other “It’s great to be able to work with the architect and builder on a home from the very beginning,” Armour says. “It allows you to more fully address both the functional and aesthetic needs of the client.”

The clients, who already owned an oceanfront condo nearby, decided they wanted a larger, single-family home to more fully accommodate their lifestyle, which often includes entertaining friends and hosting family. They worked with Tequestabased Mitch Miller of Village Architects, along with Armour, on the design and interior elevations before Jupiter-based Dan Reedy of Onshore Construction went to work building the 20,000-square-foot home of their dreams. From a functional perspective, the space had to work for the couple’s adult children and young grandchildren who frequently stay with the owners. “The bedrooms and guest areas had to be well thought through, so people of different generations
would be comfortable under one roof,” Armour says. “They wanted a variety of spaces— both formal and casual—for different types of entertaining, and they asked that as many rooms as possible be oriented toward the spectacular river views, with plenty of options for outdoor entertaining as well.” Aesthetically, the clients had very clear ideas about the ambience they were hoping to establish. “The wife desired a British

colonial–style atmosphere with lots of custom woodwork,” says the designer. The couple, who Armour says favors traditional and antique furniture, also hoped to integrate several pieces from their existing collection into the new home. “But they also hoped to introduce a more contemporary feel and bring the outside in,” she adds. Lastly, they wanted to avoid replicating the look of their condo, which Armour says has “a darker color palette.” At the new home, Armour opted for a lighter palette, “painting much of the millwork white and drawing from the soft blues and greens outdoors.” The result is a sense of relaxed formality that begins in the living room. Framed by a pair of classic Doric columns and crowned with a coffered ceiling, the space is fitted with a mix of antique furnishings—including a reupholstered Bergère chair and a Swedish-style bench—along with new pieces atop a walnut wood floor. The soft hues of the fabrics “pull colors from outdoors into the house in a subtle way,” says Armour.

A Persian rug adds to the elegance of the space and ties the room together. In contrast to the more formal sophistication of the living room, the large family room facing the pool brims with a casual, beachy feeling that not only makes it an inviting family-friendly gathering space but also eases the transition between indoors and out. Beneath a vaulted ceiling supported by cypress trusses, a pair of white contemporary sofas covered with durable Crypton fabric are coupled with updated pale blue reclining wing chairs from Baker, which comfortably accommodate grandkids and dogs. Fringed throw pillows contribute to the classic blue and white waterside color scheme. Armour also collaborated with the architect and builder to surround the room with doors that pocket into the walls, enabling a clear view of the pool and supporting an indoor-outdoor lifestyle as well as a sense of connection to the summer kitchen and covered outdoor dining area nearby. Armour carried the beach vibe into the kitchen, where she deployed a variation on the water-inspired palette: barstools covered is a soft blue fabric from Kravet; a creamy marble-like quartzite for the countertops. antique French zinc range hood injects a touch of elegance. In the adjoining breakfast area, ocean blue Lexington chairs and a custom-colored buffet align with the palette of the kitchen. The second story of the home, accessed by a grand winding staircase, houses three guest bedrooms, five baths (three others are on the first floor), and the master suite. Drenched in a soothing variation of the color scheme and anchored with an antique four-poster bed, the master is an oasis of calm. The room’s comfortable seating area overlooks the massive river beyond the French doors leading to a terrace. In the baths, the owners

he isle of Capri doesn’t feel so far away at celebrity Chef Laurent Tourondel’s new concept, Scusi Trattoria, located inside the former Vic & Angelo’s space in PGA Commons. Known for his BLT restaurants and addictive Gruyère popovers, the French restaurateur beckons diners to a sun-drenched Mediterranean café marked by a whitewashed interior dotted with hues of blue and citrus. All that’s missing are the waves crashing on the shoreline outside. Inspired by Sunday suppers he once shared with his Italian grandmother, Tourondel orchestrates a menu that forwards the coastal vibe—bright zucchini salad with almonds, octopus ’nduja with a spicy aioli, Neapolitan pizza so crispy you’ll want to dip every last piece of crust in chili oil… A wood-burning oven imparts a subtle smokiness to dishes like branzino al limone and charred cauliflower dusted with pecorino. “The idea was to create something simple where people could come to eat two or three times a week,” Tourondel says. ince opening in 2017, The Parched Pig has become an unexpected local mixology oasis. The watering hole on Donald Ross Road originally launched as an annex to Coolinary Cafe, Chefs Tim and Jenny Lipman’s enormously popular but tiny restaurant, and served an extensive list Katy Galluccio of craft beer and

wine. Once they secured a liquor license and hired bar manager Katy Galluccio, more and more people began spending the evening lingering over cocktails, oysters, and bites like chili pork tacos. A veteran of 1000 North and Brulé Bistro in Delray Beach, Galluccio has infused the cocktail program with an endless supply of creative energy. “Our goal [at The Parched Pig] is the same as at Coolinary Cafe,” she says. “We strive to provide a high-end experience in a casual setting. There’s always something different and interesting on our list—the cocktail
universe is a whole new world compared to 10 or 20 years ago.” Just how inventive is she? Galluccio pays homage to the current gin and tonic craze with GT No.5, consisting of Hendrick’s gin muddled with cucumber and rosemary and topped with Fever-Tree tonic. She makes a tableside smoked Irish whiskey old fashioned with Tullamore D.E.W., Jameson tincture, applewood smoke, and a carrot-orange ice sphere. “Once guests smell the wood chips and see the presentation, it goes viral,” she says. She also makes her own syrups, shrubs, and infusions and employs non-alcoholic spirits such as Seedlip to concoct virgin cocktails. For Galluccio, the garnish is just as important as the drink itself: She fashions rice paper images on top of egg white libations, and she’s been known to flavor

a glass by torching dehydrated starfruit. “We don’t want the cocktail to be just a cocktail,” she says. “We want customers to be so struck by its appearance that they photograph it before they even taste it.” Galluccio landed her first restaurant job at the age of 15. Although she earned a degree in exercise science from FSU and became a personal trainer, the lure of the bar proved irresistible. Today, the Jupiter resident spends her spare time traveling to festivals such as Burning Man, Coachella, and the more-local Hulaween (which she commemorated with a special limited-edition cocktail list), and she investigates the best bars in the cities she visits. After nearly two decades in the trade, Galluccio regards working for the Lipmans as the high point of her hospitality career. “We have a special atmosphere of teamwork behind the bar,” she says. “We’re constantly brainstorming new ideas, and we always taste each other’s drinks for quality control. GELATO MAESTRO After a disappointing gelato outing while visiting his parents in South Florida, Matthew Cairo knew he had to open his own shop. Here, Cairo shares a peek behind the gelato case. What’s the difference between gelato and ice cream? Ice cream is mostly cream, and there’s much more butterfat. There’s also less air whipped into gelato, so that’s why gelato is very dense and usually more flavorful. What are some of your most popular scoops? Chocolate fudge brownie, coffee chocolate mascarpone, strawberry, and the non-dairy blood orange raspberry sorbet. We have vegan options and no-sugar-added options for diabetics. How often do you come up with new flavors? Constantly. People throw their ideas in the suggestion jar I have on the counter, and I’m always going through them. Recently, someone wanted me to make cinnamon, so I tried it and had everyone taste the batch. It’s never perfect right off the bat. We fine-tune it until we have that happy medium, and now [cinnamon] is in our case. How does it feel to be recognized for your craft? It’s great! The customers make it all possible. A lot of the publicity comes from word of mouth or reading reviews online. That’s why we started a picture wall [of all the visitors]. ailing from Traverse City, Michigan, Alex Sutherland attended The Florida Culinary Institute where he perfected his skills and found a true passion for cooking. While he practices in all areas, his favorite method is cooking food low and slow on the grill to bring out their natural flavors. He was instrumental in the operation of Oakwood Grill as the sous chef and later became the opening executive chef of Carmine’s Ocean Grill, during which he managed the recipes, menu design, and kitchen operations. Alex is currently FireFin Grill’s executive chef. His favorite dish on the new menu is the Salmon Brussel Caesar featuring fire-roasted brussel sprouts, blackened Atlantic salmon, and his signature zesty lemon sauce. When not at work, Sutherland loves spending time with his wife and three kids, and often enjoys pairing foods with locally crafted beer.

INGREDIENTS: 1 store-bought rotisserie chicken, 2 medium tomatoes, 1/2 yellow onion, 1/4 bunch cilantro, 4 cups water, 4 cloves garlic, 2 tablespoons soy sauce, 1 teaspoon sesame oil, 4 chile de árbol peppers, 1/2 cup pumpkin seeds, 2 tablespoons white sesame seeds, 4 bay leaves, chocolate la abuelita. STEPS: Add the tomatoes, onion, cilantro, water, soy, and sesame oil in a pot. In a sauté pan, toast the sesame seeds, bay
leaves, pumpkin seeds, chile de árbol on medium heat. Once everything is warm and simmering, combine all ingredients in a blender. Pour the sauce back into the pot, then slowly add the chocolate la abuelita. Spread the finished mole sauce on a plate and place the chicken on top.
