love to cook, but it’s also nice to go out and enjoy all of the amazing eateries we have in the area—and the weeks spent working on this issue have been filled with tasty adventures! I spent a wonderful Saturday in February at the Jupiter Seafood Festival with friends, sampling fresh local fish and watching Matisyahu perform at Carlin Park. I visited a private residence to attend a photo shoot for our sister publication, Stuart Magazine, where I got to indulge in delicious brunch items prepared by Chef’s Table. I went to the Palm Beach Gardens home of our cover star, Coolinary Chef Tim Lipman, where I watched him prepare a casual, weeknight dinner for his family. I also got to nibble on some top-notch barbecue this past weekend at Coolinary’s 10-year anniversary BBQ party. And later this week, I’m excited to visit Honeybelle, Chef Lindsay Autry’s new restaurant at PGA National, for what I’m sure will be a memorable dinner. I’d say I’m definitely feeling the spirit of this month’s “Foodie Issue,” and I’m excited to share some of that enthusiasm for all things food on these pages. Turn to page 38 to get to know more about Tim Lipman and his wife (and Coolinary partner), Jenny, in our cover feature, “The Cool Kids.” They have their hands extra full right now with a new baby, Oliver, but they still manage to run one of the best restaurants in town and whip up fresh meals every night at home (which Tim considers “simple” but, from what I witnessed, are certainly far better than your average Thursday night dinner!). And on page 46, five local influencers share their favorite haunts for everything from happy hour with friends to special occasion splurges in “Young & Hungry.” I was happy to see some of my favorite spots made their lists (Food Shack, anyone?), and I learned about a few hidden gems I can’t wait to try too. We also talk to a nutrition expert about some immune-boosting foods you should incorporate into your diet to stay healthy in our Wellness column on page 26. We meet a local who makes sweet jams and started a business from her Palm Beach Gardens home on page 23. And this month’s Flavor section (page 81) spotlights PGA National’s new steak house, The Butcher’s Club, wine pairings to try during your next visit to The Parisian, and more. Cheers! I
f you Google the word “foodie,” this is what you’ll find: A person with a particular interest in food; a gourmet. My husband and I definitely fit this classification. We are always looking to enjoy a delicious meal; seeking out new, interesting options; and discovering out-of-the-ordinary cuisine. Fortunately, northern Palm Beach County abounds with restaurants, many of which I still need to try. Over the years, I have taken on the role of the planner of family vacations and couples’ getaways. When traveling with my husband, Keith, I immediately start researching and asking friends for recommendations on where to go for the best culinary experience. We favor dinnertime, so it is important to book super early before we leave for our travels. The first research we do on our destination is to find out whether a Michelin-star restaurant exists there. Not every town or city has one, but we’ve been lucky to experience several of these restaurants in our lifetime. One fond memory was during a trip to Montreal several years back. I booked Toqué!, and we had an amazing seven-course tasting with wine pairings. We sat for hours, and when I say there were fireworks of flavor, that’s an understatement. Keith and I have had many foodie adventures, the latest one in February when we traveled to Sea Island, Georgia for Valentine’s Day. We didn’t have a single bad meal during our trip, and the city was just so magical! My favorite dinner memory was on the last night. We were traveling with our good friends, the Brown family, and we all went to The Lodge at Sea Island and dined downstairs in the wine cellar. The chef did a phenomenal job (see how happy we look below?). I continue to feel blessed to live where there are endless choices and so much talent in the culinary field. And I’m sure I’ll add more restaurants to my list after flipping through the pages of this issue of Jupiter Magazine, which is centered on food. hen Sarah Cohen realized she would have to wait months to get her Florida bar exam results, she needed something to pass the time. She decided to teach herself how to make wine jelly, and 11 years later, the juvenile dependency attorney has parlayed her love of jams and jellies into Sarah’s Slow Jam, a cottage industry she runs out of her home in Palm Beach Gardens. “My passions are justice and jam,” Cohen says with a laugh as she proudly scoops out samples of her Raspberry Pepper Jelly— the “Best of Show” winner at this year’s South Florida Fair. Cohen sources all of her seasonal
ingredients locally for what she terms “fruitforward” freshness. Her unique flavor combinations such as Spicy Smoky Tomato Jam and Pineapple 5 Spice Jam make her a popular stop at the Swank Farmers Market on Saturdays in Loxahatchee. As summer approaches, Cohen will be bringing back her popular Fig and Honey Jam and Mango Jalapeño Jam with fruit plucked from a tree in her parent’s North Palm Beach backyard. Her passion for fruit runs in the family: In 1919, her great grandparents moved to Florida to run the Trio Market in the Flamingo Park neighborhood of West Palm Beach. Reaching New Heights MEET AMANDA VALDES, THE LOCAL ARTIST BEHIND POPULAR MURALS FEATURING DOLL-LIKE DAMES
A
manda Valdes has some lofty goals. “I would love to do a large-scale commercial property—like six stories or more—with a fashion brand,” says the Jupiter resident when talking about projects she wants to accomplish in the future. To date, the largest building she has painted is four stories tall, but a fear of heights is not an option in her line of work. “I have come to love being up on a boom lift,” she says with a laugh. Lately, Valdes has been spending a lot of time up in the air. Her international projects have taken her around the globe to locations as far-flung as London, Canada, South
24
Korea, New Zealand, and Australia, but she maintains roots in Palm Beach County. She grew up in Palm Beach Gardens and credits her great-grandmother with her early interest in art. “She used to draw with me when I was little,” says Valdes. “I loved creating paper dolls, and these characters evolved as I grew.” Her distinctive characters with large eyes and no pupils can be seen in much of her work, contrasted by florals, butterflies, insects, and more. She finds inspiration in books, music, and flowers. “I love symbolic references and like to leave hidden things in there,” she says of her art. After graduating from William T. Dwyer High School, Valdes studied at the Art Institute of Fort Lauderdale before launching her career as an artist. One of her first mural commissions was for the twenty-first anniversary of Respectable Street in downtown West Palm Beach in 2008. Last year, she completed another project not too far from there. “I loved the Clematis Social project,” she says of the colorful murals that adorn the interior and exterior walls of the nightclub on the 200 block of Clematis Street. “It was super detailed and a lot of fun.”

Valdes’ unique style has since grabbed the attention of the owners of Fu Manchu, who are opening an outpost in the former Shipwreck Bar & Grille restaurant on Old Dixie Highway in Jupiter. Her Asianinspired murals for the space will feature cherry blossoms as the signature flower. What role does food play in maintaining a strong immune system? Nutrition is protective, reparative, and restorative for the body. Consuming a variety of nutrient-dense foods and adequate energy is beneficial for immune health. Inadequate intake can stress the body and make it more susceptible to illness.

What are some of the “hero” nutrients? Macronutrients are fats, carbohydrates, and protein. Fats aid the body in the absorption of fat-soluble vitamins such as D, E, A, and K. Carbs are the main source of energy in the body. Protein is essential for repair and recovery, as well as for growth and development. Micronutrients are all of the vitamins and minerals, which play a role in many aspects of health.
[serves four] Ingredients: 1 sweet potato, diced into 1-inch cubes 1 diced red bell pepper 1 cup sliced mushrooms 1 cup diced red onion 3 leeks, chopped 2 garlic cloves, peeled and halved Red pepper flakes (to taste) 1 tbsp. extra virgin olive oil � cup uncooked quinoa 1 cup water
� cup mint leaves 2 cups arugula � cup crumbled feta cheese 1 lemon (juiced) 4 10 oz. oven-baked salmon filets (optional)
Directions: If you are using salmon, cook your filets ahead of time in the oven seasoned with oil, pepper, and lemon juice. Preheat oven to 415 degrees Fahrenheit. Combine sweet potato, red bell pepper, mushrooms, red onion, leeks, and garlic cloves in a large mixing bowl. Toss well with red pepper flakes and olive oil. Place veggies on a foil-lined baking sheet and cook for about 30 minutes or until golden. In the meantime, add quinoa and water to a small saucepan and bring to a boil over medium-high heat. Cover pot and reduce heat; let simmer for 12 minutes. Remove from heat and fluff with a fork. When your veggies are finished roasting, put them in a large mixing bowl. Add quinoa, mint, arugula, and feta. Sprinkle with lemon juice. Serve alone or with oven-baked salmon filets on the side.

Which nutrients do you recommend? Some foods that research indicates are beneficial to immune health include foods that contain vitamin D, zinc, and vitamin C. Some excellent sources of vitamin D include wild-caught fish, mushrooms, and eggs. Vitamin C foods include citrus, red peppers, and berries. engineering at the University of Pittsburgh. It wasn’t until after she earned her degree that she realized she wasn’t cut out for a cold weather existence. “I came back to Florida to get warm,” says Williams, now 38. She moved to Florida’s west coast, to Sanibel Island, and eventually settled in Stuart two years ago.
She started working remotely for a Pennsylvania-based company, residing in Florida but traveling constantly for the job. Five years later, she needed a change. “I was looking for joy, so I started doing freelance photography,” she says. “I’d shoot mostly landscapes, water-oriented subjects, and underwater scenes.” One day, while paddleboarding Sanibel’s J.N. “Ding” Darling National Wildlife Preserve, she passed a mangrove-lined shoreline and noticed it was littered with fishing lines and lures. Disheartened, she decided to return to the site the next day and clean it up. Nippers in hand, she began freeing all kinds of flashy-colored hooks and rings that were tangled in fishing line along the shore. In the days that followed, she started regularly visiting the Blind Pass waterway between Sanibel Island and Captiva, where a lot of people fish. She was shocked by the debris she encountered. “There was a ton of trash,” recalls Williams. “I saw an ibis skeleton wrapped around a mangrove and fish and other creatures tangled in lines. I hate to see wildlife destroyed.”

ike most people who grow up in South Florida, Marissa Williams has a natural affinity for the outdoors. She spent her youth exploring local waterways— swimming, surfing, and fishing in and around her hometown of Jupiter. In 2013, she moved north to study biomedical

She made it her mission to clean the 100-foot stretch of shoreline anytime she was outside paddleboarding, fishing, or hanging out on the beach. She often took her frustration to social media, posting photos she had taken of the various lures and tangled rope she collected. “When people saw this and asked what I do with the lures, I started giving them away to local artists to use in their work,” she says. Then something clicked: Williams began reworking the discarded lures she gathered with new split rings and hooks. Some resembled dangling earrings, pins, and other jewelry; others looked like colorful pieces of art. And she started selling the repurposed trinkets. Her very first sale was to a charter captain, who bought them for clients he took out on his boat. “I sold him 120 of them,” she says. “He was local and liked what I did. He wanted to educate others on this idea. I think bringing awareness to this issue helps fishermen who are just starting out to avoid picking up the habit [of tossing their gear], where it ends up wrapped around a bird.” Williams donates 50 percent of her profits to local wildlife and conservation efforts, including Loggerhead Marinelife Center in Juno Beach, Clinic for the Rehabilitation of Wildlife in Sanibel Island, and various animal rescues. “I want to do my part and make a difference,” she says. To keep up with the growing demand, Williams launched an online shop in 2019, Salt Collins Lures (lures.saltcollins.com). Her website boasts a rotating inventory of designs, which she sells for between $20 and $27 for a set of four. She is also
branching out to create Christmas ornaments ($10-$15 each). As she continues to clean up local shorelines, one of Williams’ goals in the coming months is to expand her photography business. “Taking photographs makes me
happy,” she says. “I want to continue cleaning up and selling repurposed lures on a much larger scale, and I want to use my photography as education and inspiration so others will get outside, enjoy, and help preserve this beautiful coast.” ❖

or Stephen and Ellen Tabor, the boating lifestyle isn’t a foreign concept. Previous owners of both a jet-powered boat and a pair of Sea-Doo personal watercraft—along with a Sea Ray 240 that was claimed by Hurricane Sandy at their northern home on Manahawkin Bay, New Jersey—the Tabors had already dipped their toes into the boating lifestyle. During a scouting trip to the Fort Lauderdale Boat Show last year, they found themselves admiring a beautiful 33-foot dual console by Southport Boats. A few factors appealed to them about this design. The company is based in Gardiner, Maine, and since Stephen’s mother grew up in Down East Maine, there was a sentimental aspect at play. There was also some practicality involved: The layout of a dual console was perfect for their growing interest in partaking in some extended cruises with their local boating club.

ew Orleans boasts a unique charm as diverse as its dialects. Nowhere else will you find street corners radiating with jazz ensembles and dotted with people waiting in line to indulge in fried dough. It’s upbeat and steeped in tradition, with culture aplenty. And now the new Four Seasons Hotel New Orleans stands at the ready to enhance your visit to the Crescent City. Like much of the city, the property has survived and thrived over the years. Before evolving into the crown jewel it is today, the structure housed the former World Trade Center. A

three-year, half-billion-dollar renovation has turned the skyscraper into a modern marvel spanning 34 stories and topped by an observation deck with panoramic views of the city and the Mississippi River. Lead designer Bill Rooney transformed the interiors to reflect New Orleans’ historic architecture. nyone who has ever owned a restaurant knows, or quickly learns, the required sacrifices and challenges: managing 18-hour days on your feet, meeting the ever-changing tastes of customers, and constantly striving to maintain high standards of service. But beyond those basic hurdles, there’s that indefinable something that makes people in the industry feel comfortable returning time and again. For Tim and Jenny Lipman, owners of Coolinary in Palm Beach Gardens, the indefinable part of their success is wrapped up in a philosophy that says life should be centered on sharing high-quality, simple food with friends and family. It’s a custom rooted in Tim’s childhood in Titusville, where the family regularly assembled for rustic, homemade meals prepared by his grandmother. “The dinner table is a special place for building memories,” he says.
“It was very much like that in my own house. We always had breakfast and dinner together, and I think it’s an important part of the day.” He is committed to recreating that tradition with his own growing family and extending the experience to Coolinary patrons as well. From fresh, clean, minimalistic design to the refined but casual service and menu, everything at Coolinary is crafted to make people feel like they are having an intimate experience with loved ones. “It’s about being welcoming,” says Tim. “When a customer says thank you to us, we like to respond, ‘No, thank you.’ We get to know our customers and, as much as we learn about them, they learn about us too. Many have become our friends over time.” On a Thursday evening in their Palm Beach Gardens home, Tim is whipping up roasted spatchcock (backbone removed) chicken that has been soaking in brine overnight, creamy polenta with blistered tomatoes,

and green beans with Castelvetrano olives from Sicily. All the while, new mom Jenny lovingly tends to their baby, 4-month-old Oliver. The Lipmans are relaxed and clearly in their element at home, as the aroma of garlic fills the kitchen and one of their two dogs, Mowgli, a 115-pound rescue boxer, settles at Jenny’s feet. Tim is an adventurous cook, and even with a casual dinner at home, he insists on the freshest ingredients. Vegetables and fruit figure prominently in their family menus, and they look forward to planting a vegetable garden in a corner of their yard. While Jenny also cooks (“She makes the best crispy eggs and great bread,” Tim notes), most of the kitchen work is done by Tim, who is the executive chef at Coolinary. At home, he concocts simple meals like fish, vegetable soup, and cacio e pepe with pecorino cheese, black pepper, and butter. “Anything I can put on the stove and smell all day is great,” he says. “And on Sundays, we get out the pasta roller and spread batches of fresh pasta on the kitchen island.” Tim and Jenny have known each other since elementary school, but it wasn’t until high school that they saw each other

in a new light. “We kind of ran into each other at a friend’s house, and from then on we hit it off,” says Jenny. In 2000, in search of more opportunities, they migrated to Palm Beach County, where Jenny attended Palm Beach Community College and Tim enrolled at the Florida Culinary Institute. After steadily moving up the ranks as a chef, Tim became executive chef at Leftovers in Jupiter, and Jenny worked in service. Although they say they moved to Palm Beach Gardens with no idea what it would be like, they’ve fallen in love with the area. “It’s the best thing we’ve done,” says Tim. “We’ve met great friends and amazing people.” The vision to open their own restaurant came to them on a wedding anniversary trip to Scottsdale, Arizona (they married in 2009). “What they were doing at the restaurants there was right up our alley,” says Tim. “They were chef-driven and had the vibe we wanted to create. We started thinking we could do the same thing back in Florida.” Coolinary Café opened in 2012 on Donald Ross Road, with Tim as chef/co-owner and Jenny as co-owner, overseeing a staff that has grown from little more than a handful to nearly 50 today.

With Coolinary Café, the couple retained the Scottsdale vibe that initially appealed to them by offering something different from the usual area menu. “We didn’t want to open another seafood restaurant,” says Tim. He describes the cuisine as American but notes that the menu changes often, sometimes veering into a bit of Southern, Latin, or Asian. Jenny supervised every decision outside of the menu, from the decor to the plates, glassware, and staff, with an eye on high quality that wouldn’t be intimidating. “We wanted it to be casual enough that people didn’t feel they had to dress up,” says Jenny. As for the menu, Tim says he tries to “keep the food simple enough that it’s approachable but elevated enough that there’s value.” The formula seems to have worked. “Almost immediately, we saw repeat customers,”

Jenny says. In 2017, they added The Parched Pig, a bar that served small bites next door. Fast forward nearly a decade, when the couple made a conscious decision to rein in the all-consuming lifestyle of running both a restaurant and a bar. “I’m 42, and Jenny’s 40,” says Tim. “We’re finally focused on having kids and putting ourselves first. We love the restaurant and love the business, and that will never change. I’ll probably always be in a kitchen, but we had put everything else on hold for a long time. Now it’s time to do it all—and if you want a family, you can’t work 70 hours a week.” In 2019, they ceased the lunch service to focus on dinner only. And late last year, they moved to a 3,100-square-foot space in the same plaza, The Shops of Donald Ross Village,

and combined their two establishments, Coolinary Café and The Parched Pig, under one name: Coolinary. The new space opened November 12—precarious timing for the family. “Oliver was born four days later,” says Jenny. The menu at the new Coolinary retains popular dishes from the old location—fried chicken and waffles is a perennial fave— but Tim says he likes to change things up often, taking inspiration from everywhere. “I don’t want to get tunnel vision by
being focused too much in one direction,” he says. “I’m always open to experimenting, but first and foremost we have to maintain balance on the menu, and then the products have to be available and in season. We’re not doing anything with peaches in January.” The Parched Pig now offers the full restaurant menu as well. Patrons will also take note of the same casual-butupscale atmosphere, with its minimalistic, clean design. The combination of the restaurant and bar has altered the clientele a bit, says Tim. Regulars of The Parched Pig and the old Coolinary Café still come in, but a new patron who wants to have a martini with dinner at the table has also emerged. “At the old Coolinary [Café], we just served beer and wine, and the bar didn’t really have food,” he says. “By combining the two, we now have the best of both worlds. As far as I’m concerned, we just opened a completely new restaurant.” The pandemic had slowed the reopening by a few months (the new Coolinary was originally meant to open in its combined space last summer), but the business continued to thrive as they kept busy with takeout orders. “For almost six weeks, the menu was based on what we had and what we could get,” says Tim. But as soon as they were able to reopen,

people came back. “At first, it wasn’t a flood, but they started to trickle back,” says Jenny. They only had to close down completely for one weekend when they finally made the move from the two previous locations to the new combined location. During the enforced downtime of the pandemic, Tim and Jenny also rediscovered how much they enjoy spending time together at their home, which is nestled on two acres in Palm Beach Country Estates, west of I-95 off Donald Ross Road. Jenny grew up on 20 acres

in Titusville, where there were always horses to ride. At their current home, the Lipmans have two horses on the property, Red and River, that Jenny exercises on the dirt roads throughout the immediate area and into neighboring Jupiter Farms and Riverbend Park. “COVID made us stop a little, and it was nice,” says Jenny. Adds Tim: “We had breakfast together every day. In 24 years, that really never happened!” With a new baby and renewed commitment to maintaining a balanced home life, Jenny has pulled back from full-time work at the restaurant to care for Oliver, though she plans to continue supervising the frontof-house operations. “It’s Oliver time now,” she says. That doesn’t mean they don’t have plans for the future. “Down the road, I could see opening another restaurant with a different concept,” says Tim. Whatever the future holds for them in terms of business, home will always be their happy place. “We absolutely can go all day on this property without seeing another person,” says Tim. “We turn up the music and let the animals loose (in addition to Mowgli, they have a French bulldog/pitbull mix named Tiny). I fire up the grill, and we relax by the pool, often with friends or family.” “It’s all about balance,” he continues. “I love cooking, but I really love the relationships that develop over shared meals. The 50-ounce Swinging Wagyu Tomahawk is aged for 50 days and emerges from the kitchen suspended above a layer of crunchy patatas bravas. The steak is sprayed with overproof rum and flambéed before being carved and served

arzi Cenador’s journey to becoming a restaurateur was a happy accident. Even though his father and uncle were both chefs, Cenador chose to work as a flight dispatcher for Air France. After a stint in New York, he made a pitstop in Jupiter to relax on his way home to Paris when a friend asked him to step in and temporarily manage his French restaurant. “After two weeks, I was hooked,” he recalls. “I had fallen in love with the restaurant business. I quit the corporate life, gave up all the benefits, and decided to follow my passion.” That passion led to the opening of The Parisian Restaurant & Wine Bar in 2015, a faithful rendition of a French brasserie. From the beginning, Cenador blazed his own trail. “French cuisine has been so limited in the United States,” he says. “I didn’t want to play it safe and give people dishes they were used to, like coq au vin or beef bourguignon. The American palate has developed far faster than the French, and people here are more open to refinement and experimentation.” Cenador emphasizes the pairing of food and wine, which he regards as the touchstone of French cuisine. THE DISH: Pan-seared sea scallops with Dijon mustard sauce, basmati rice, ratatouille, and root vegetables THE WINE: Chassagne Montrachet, Château de Santenay, 2018 BEHIND THE PAIRING: “This is a very traditional dish found in both Brittany and Normandy in the northwest of France. We serve the orange-colored roe along with the scallop, which lends a delicate and oceanic flavor to the shellfish. Also, when you see the roe being served, you know the scallops are extremely fresh. While a light, crisp white wine might work with this dish, you really need a full-bodied Chardonnay to stand up to the mustard sauce. The flavors of the dish will bring out the citrus and oak in the wine.”

NONNA’S CANNOLI CREAM [yields 12 cannoli]
INGREDIENTS 1 ½ lbs. ricotta 9 oz. powdered sugar 1 tsp. vanilla extract ¼ tsp. cinnamon ¼ tsp. orange extract ½ cup mini chocolate chips 12 cannoli shells (available at Doris Italian Market) PREPARATION “Our Nonna always said, ‘Anything tastes good if you add some sugar to it,’” says Jacqueline Alfano, Doris’ marketing and administration director. Mix the ricotta with the sugar, then pass the ricotta-sugar blend through a sieve for a creamy mixture. Add vanilla extract, cinnamon, and orange extract and mix well. Stir in mini chocolate chips (because what are cannoli without chocolate chips?). To prevent the shells from getting soggy, fill the cannoli immediately before serving. Garnish the ends of the cannoli with chocolate chips.
