Karen Grimson

Karen Grimson’s title is a bit of a mouthful, but her mission is simple: make the Miami Design District the “epicenter of cultural programming.” After nine years at the Museum of Modern Art in New York City, she is now the district’s curator of the Craig Robins Collection and director of cultural programming. “That comes with a huge sense of responsibility, but simultaneously a lot of creative freedom,” she says. Aventura chatted with Grimson to discuss her vision for the district and more. (miamidesigndistrict.net) ­—C.L. AVM: How would you describe the impact of public art? Grimson: There’s no way I could describe the sphere of influence in which it adds; its impact is immeasurable. Its function is never decorative. Public art is never there just to be a pretty background in the form of murals or billboards or sculptural installations, which we have a lot of. Public art will engage passersby in an unexpected way; it’ll stop them in their tracks.

How do you want to move the district forward? There’s this strong history of engagement with contemporary artists that Craig [Robins] has been championing in Miami for so many years, and that’s a legacy I want to continue. It’s a crucial foundation for the work that I do, to keep that engagement with the creative community going and to grow it.

What can the public expect? They can expect a plurality of artistic voices in the public sphere coming from the work that we do with Craig’s personal collection. We work with a lot of designers and emerging artists to make that become a reality, so a lot of works that are in Craig’s collection will find a version of themselves as a public installation in the district.

DIGGING INTO THE DISTRICT

Even before stepping inside The Museum of Contemporary Art, North Miami (MOCA), passersby already get a taste of art thanks to Art in the Plaza, a year-old program that presents temporary outdoor art installations. For the first time, the museum has selected two participating artists from a public call for proposals. From July 29 to October 7, locals can check out works by Autumn Casey, followed by VantaBlack (aka Chire Regans) from October 14 to January 20. It’s this accessibility to art that drew Adeze Wilford to MOCA. She’s the museum’s new in-house curator, having relocated to South Florida after serving as assistant curator at The Shed in New York City. “When you can bring art to the public and into your public spaces and have it be something that people can see as they’re driving down the street…it’s really a special thing to be able to do,” she says. Wilford looks forward to not only digging into the museum’s archives to discover how its history can help guide its future, but also working with visiting curators to craft exhibitions. “Having more than one voice at the table is something that is necessary for institutions to really have varied perspectives,” she says. ocial media is often just a highlight reel of life’s most polished moments. But a scroll through influencer Lindsay Silberman’s Insta posts offers a more honest reality at @lindsaysilb. Sure, she edits stunning photos to AT IV match her aesthetic and shares E dreamy videos with her hubby, Matthew Stevens (who has changed his handle to @instahusband), and their mini dachshund, Pierre, during their fanciful forays to luxury locales. But one thing’s for sure: She’s always remained true to herself. “I’ve always been myself truly,” admits the 35-year-old, who splits her time between New York City and Miami. “But I do think back in

the early days of Instagram when it was a very different time. It wasn’t cool to show things that weren’t perfect.” She recalls an instance when she was receiving medical treatments a few years after being hit by a car in 2012. “I was in my hospital bed, and I was posting on Instagram this beautiful photo of me at a beach that I had taken a couple of months or years before, and [it] was so not at all representative,” she says. Her dad suggested she post her reality instead. “I remember a switch flipped in my brain, and I

was like, ‘I just need to be my raw, real self.’ I think more people will relate to that.” This type of “real” content would eventually change her life. The New Jersey native spent a decade in the magazine business, covering the ins and outs of beauty and luxury travel for publications like Vogue and Town and County, and building her Instagram following. With thousands of fans keeping tabs on her posts, brands began to take notice—offering to pay Silberman to collab. Satisfied with her career but itching for a change, she decided to take a leap of faith in 2018 to become a fulltime content creator and influencer.

during the COVID-19 pandemic. “I really wanted something on my own that was not on Instagram— sort of a brand that I could build that didn’t have my name on it,” she says. The idea came to fruition after years of traveling the world and is inspired by the scents of luxury five-star hotels. “I had this thought about turning the concept of [the] scent inside hotels into a candle.” She admittedly had no idea where to begin and spent months researching, looking into manufacturers, and going to “Google University,” as she likes to joke. Her husband even quit his job to join her as the brand’s co-founder. Together they balance the company while playing off one

“I can’t think of the last time I had two days in a row that I did the same thing,” says Silberman during a morning in her Miami apartment. Her days are chock-full of everything from emails and meetings to shooting campaigns for brands like Sephora or Charlotte Tilbury in her bedroom with a tripod and ring light. “I feel like I’m constantly changing hats, literally and figuratively.” Silberman is also tending to her latest venture as the founder of Hotel Lobby Candle (HLC), a home fragrance brand released 32

Setting up Shop: Versace purchased the Amsterdam Palace for $2.95 million and the neighboring Hotel Revere for $3.7 million— eventually razing the latter to build a pool and a guest wing. Over time, he spent $32 million on renovations to Villa Casa Casuarina, converting it into a celebrated example of Italian Baroque splendor. South Beach preservationists cheered Versace as the building’s savior—and locals hailed him as an emblem of South Beach’s newly elevated status.

Meeting Miami: Gianni Versace first found himself on Ocean Drive in 1992. While in town to attend the opening of a namesake boutique in Bal Harbour (and to visit his sister, Donatella), the designer asked a cab driver to show him something “fancy and fun” about South Beach, according to The Miami Herald. The driver took him to 1116 Ocean Drive, a 1930sera Mediterranean-style mansion once known as the Villa Casa Casuarina. The property had been converted into an apartment complex called the Amsterdam Palace—and was in considerable disrepair. Legend has it that as Versace admired the bronze statue of Aphrodite that sits at the entrance, he caught a glimpse of the mansion beyond the gates and was smitten.

The Fashion Flock: Versace threw lavish events studded with celebrities like Madonna, Princess Diana, and Elton John. Soon, the fashion world followed. “All of a sudden, what was going on in L.A. moved here when Gianni came here,” Donatella told The New York Times in 2001. “All the fashion shoots were happening here. Music people, fashion people, actors—he attracted everyone here. He had that power.”

SoBe Style: In 1993, Versace released South Beach Stories, a coffee-table book featuring iconic photos of Linda Evangelista poolside, Kate Moss and Christy Turlington rollerskating on the boardwalk in poppy-red jumpsuits, and mobs of male models clad in Versace’s famous silk shirts.

4 Community Minded: On any given day, Versace could be seen strolling down Ocean Drive or popping into his boutique on nearby Washington Avenue. At night, he frequented gay bars like the Warsaw Ballroom or the Barrio. “The mood is very, very easy,” he told The Miami Herald in 1993. “That is special and I don’t find the mood any place else in the world.”

Living Legacy: The house Versace built remains a draw, with throngs of people recording videos and snapping selfies in front of its famed gates each day. Although it’s now a luxury boutique hotel owned by Victor Hotels Management, Villa Casa Casuarina is said to be the third most-photographed home in the United States, after Graceland and the White House. The property features Versace-installed mosaics, marble floors, onyx toilets, hand-painted frescoes, and the ultimate Insta-worthy fountain-fed swimming pool flecked with 24-karat-gold tiles. Taking a dip is strictly reserved for hotel guests, but the curious can step in for a drink at the six-seat Onyx Bar (carved out of Versace’s former kitchen) or make a reservation to dine at the on-site Italian-Mediterranean restaurant, aptly named Gianni’s. enables the body to perform such vital functions as digestion, waste production, and temperature regulation. It is also a key player in the health of our brain, skin, heart, and joints. The body has no way of storing water, which means that the average adult loses approximately 3 liters a day. That loss must be replenished through food and water consumption. The tricky part is knowing how much you need— and it’s not one size fits all. You must take into account the climate in which you live as well as your personal diet and exercise habits. For example, if your diet is high in protein, you will require more fluid to process the protein and prevent constipation. If you are mostly sedentary and live in a cold climate, you will require less water than a person who exercises intensely and lives in a warm climate. In relation to your weight, the amount of water you need per day increases by 6 to 7 ounces for every 10 pounds, starting at 67 ounces per day for someone who weighs 100 pounds. Someone who weighs 150 pounds would need 100 ounces per day, on average, while someone who weighs 200 pounds would need 134 ounces. For every 30 minutes of exercise, add 16 ounces of water. If you live in a hot climate, also add 16 ounces. These ounces can come in the form of liquids or solids, and there is a vast array of hydrating foods that can help you reach your daily goal. Read on for my tips on how to get the most hydration bang for your buck.

Mineral Water: Although the sodium found in mineral water is naturally sourced, it’s still sodium, which can dehydrate the body if drunk excessively.

Alcohol: Alcohol is a diuretic, meaning it causes your body to remove fluids from your blood and other organs at a faster rate than other liquids. Too much consumption can leave you severely dehydrated.

Protein: Protein requires more water to process, so be mindful to up water intake if you’re on a high-protein diet.

Processed Foods: Processed foods are generally very high in sugar and sodium, both of which dehydrate the body.

In total, both Secret Bay and greater Dominica shine as two of the Caribbean’s final secrets. After a lengthy pandemic pause, major cruise lines are rolling out one stunning ship after another, freshly minted with state-of-the-art amenities, elevated dining spaces, and contemporary designs in tune with the desires of today’s cruising elite. One such vessel is the MSC Seashore, a new incarnation of the Italian brand’s slick Seaside class fleet, dubbed Seaside Evo (which stands for evolution). With nearly 140,000 square feet for outdoor endeavors, the 2,270-room mega-ship features the highest ratio of outdoor space per guest of any MSC ship and several firsts for the brand. Think: a seafront boardwalk, an aft infinity pool (bringing the total pool count to six), a massive aquapark, and an impressive glass skywalk. The onboard excitement never ends thanks to more than 300 entertainment activities per sailing, plus prolific amenities to enjoy at your leisure. The 2023 Range Rover SV takes automotive luxury to a soaring new height—and it can still climb mountains By Howard Walker A toast to luxury. A toast to the good life. And life is definitely good in the back seat of the all-new, best-of-the-best 2023 Range Rover SV. A flute of Cristal, perhaps? Open the chiller compartment in the rear console to find a bottle of bubbles, plus a pair of cut-crystal glasses. Of course, you’ll need a table to perch them on. At the touch of a button, a handcrafted “club” table levitates majestically from the console. Another button initiates the rising, flute-holding cupholders. Time to recline. The seat goes back, the footrest comes up, and the builtin massager gets to work. How about a little Beethoven or Bach? Crank up the 1,600-watt Meridian surround-sound system, with its 35 speakers and noise-canceling tech, and you’ll be transported to, well, ecstasy. Here is a vehicle that spreads opulence around its cabin like a drywaller spreads plaster. I’m sure if Range Rover designers could have gotten away with hanging chandeliers from the rearview mirror or encrusting the door handles with rubies, they would have. 54

This Range Rover SV is the creation of Land Rover’s Special Vehicle Operations department in merrie olde England. Much like Rolls-Royce’s Bespoke division, it can satisfy a customer’s every automotive fantasy. It’s all part of Land Rover’s mission to make this new-from-the-tires-up “Rangie” the very pinnacle of SUV luxury—and deliver the kind of superlative experience an owner might expect of a superyacht or a private jet. Naturally, they plan to charge for it. The flagship SV long-wheelbase model kicks off at $219,650. The example I spent a couple of blissful days piloting across Napa Valley stickers at $262,000. Keep checking the options boxes, and you can easily top $280,000. You can pay more for a well-equipped Bentley Bentayga Speed or Lamborghini Urus,

but, in my opinion, this new Rover is in a class of its own. At the core of all this luxury is a new aluminum chassis and body structure that’s as much as 50 percent stiffer than the outgoing model’s. It also boasts new independent air suspension, rear-axle steering, active roll bars, and 23-inch wheels. Powering the SV is a new BMW-sourced 4.4-liter twin-turbo V8, good for 523 hp and a muscley 553 lb-ft of torque. That’s power-aplenty to sweep this all-conquering 4x4 from standstill to 60 mph in 4.4 seconds and cross continents at a bullet train–like 155 mph. Before you hit the road, just gaze at this work of modernist automotive art. It is spectacular, with its broad-shouldered stance, floating roof,

clamshell hood, and flush door handles and glass. While the overall design is a little on the evolutionary side, changes to the rear end—with those blacked-out vertical taillights and lack of adornment—deliver a fresh, sophisticated feel. The current 2022 Range Rover is the flagship of a whole new lineup of models that are now offered in standard or long-wheelbase lengths, with pricing from $105,850. And, for the first time, surprisingly roomy third-row seating is available. Coming later for 2023 is a plug-in hybrid version with 434 hp and 48 miles of electric range, plus a highly anticipated all-electric version due in 2024. But this, this Range Rover SV is without a doubt the most luxurious, most desirable 4x4. I’ll raise a glass to that. «

Axopar’s new 45-foot XC Cross Cabin is an SUV for the water By Howard Walker It’s rare for a boat brand to be instantly recognizable. So many fall into the floating Clorox bottle category: generic, practical, functional, yet easily forgettable. Not so for Axopar. Since 2014, the Finnish builder has been cranking out 22- to 37-foot day boats that have been setting the market on fire. So far, more than 3,500 examples have been sold around the globe. It’s easy to see why. With their razor-sharp axe bow, distinctive twin-step hull, and faintly militaristic lines, these go-fast day boats spin heads from Miami to Maine. See one screaming up behind you, piercing waves at 50 knots, and you half expect Clive Cussler’s Dirk Pitt to be at the helm, chasing the baddies in some new blockbuster novel. Building on the success of its 37-footer, Axopar is now dipping a toe into luxury waters with its brand-new 45 XC Cross Cabin flagship. In the process, it’s creating what just might be the perfect day cruiser for Floridian families. 56

Yes, the hull shape stays largely the same, with that impossible-tomiss bow, low freeboard, and straked hull. But what’s different—and arguably the boat’s greatest appeal—is that dramatic pilothouse. In addition to its wraparound tinted glass windows and workboat-like, angled windshield, the cabin has twin-sliding side doors that enable you to flood the helm area with that sweet ocean breeze. Want even more fresh air? Either or both of the canvas sunroofs can glide open with the touch of a button. Plus, for the ultimate in alfresco living while at anchor, simply drop the built-in balcony doors nestled within each side of the hull. The seating layout inside the pilothouse is equally versatile. At the helm station, with its 360-degree visibility, there are three seats in a row. Behind them is a well-equipped galley station (with a grill, sink, and fridge) that can move backwards and forwards on sliders. At the back is a U-shaped sofa, complete with a fold-out, swiveling table that can easily accommodate up to 10 diners. While the 45 XC Cross Cabin is a terrific day boat, there’s a cabin up front with a double berth, a separate toilet, a shower, and lots of storage. It’s here that you’ll find one more Axopar party trick: electronic gullwing hatches that rise, like the wings of a cormorant, to fill the cabin with air and light.

gravity, Axopar claims impressive handling in gnarly seas. That, and a super-smooth ride. All Axopar models are built on an automotive-style production line at a state-of-the-art factory in Poland. Judging by the examples I’ve toured at boat shows, the quality is impressive. There’s a Florida connection here too: Axopar’s main Southeast distributor is in Fort Lauderdale. «

chance encounter on Miami Beach sparked new love and a life of exploration for Jeremy Austin and Angie Villa. It was 2015, and Villa was practicing acroyoga with friends when Austin decided to jump in and show off his handstand skills. “We just clicked,” recalls Villa. Little did they know they would soon become the ultimate in #couplegoals among travel influencers. Both Austin and Villa were initially focused on building online followings centered around fitness and working out. Little by little, however, they started traveling. First, they spent Villa’s birthday in the Dominican Republic, which marked Austin’s first trip outside of the United States. “From there on, we decided that we were going to try and travel as much as we could,” she says. They

stopped spending carelessly in Miami and continued doing smallscale trips, like a cruise or a jaunt to the Bahamas. Austin got rid of his car, they downsized, and saved up. “In the beginning, we were funding all of our own trips,” says Austin. They’d shoot content using a GoPro and their camera phones, and began posting their new foray into travel influencing. Although they had an already established (and devoted) social media following for their fitness content, the couple noticed that their travel adventures were picking up even more likes and follows.

Soon, they began grabbing the attention of brands in the luxury lifestyle travel realm. Media invites and collabs followed, paving the way for the duo to become full-blown travel influencers by 2016. “There was no one within the luxury travel space, so we were really at the forefront. Our eyes were on that only; like, ‘How can we make this a life for us?’” says Austin. “It was kind of just a dream at that time until we started to see that we could make this into a career.” Today, the couple has amassed more than 1 million followers with their combined Instagram accounts (with more fans to boot on TikTok). They post original content daily from some of the most far-flung locales and dreamy destinations in the world, and their media company produces professional photography, videography, and content campaigns for exclusive resorts. They’ve traveled everywhere from the Maldives and Namibia to Mykonos and the Galápagos Islands

and countless other idyllic spots (including some you’ve probably never even heard of). “The main thing that really separates us is our consistency in the space,” says Austin. “We’re traveling, we’re seeing new locations, we’re bringing new, fresh content from the beginning of

the year to the end of the year. It doesn’t stop.” But it did stop during the COVID-19 pandemic, as lockdowns rippled across the globe in the first half of 2020. Villa and Austin were in the middle of a shoot in the Maldives when they got word about a full ban on interisland travel for tourists and locals. They were forced to move their departure date to almost three weeks later; once the ban was lifted, they arrived safely back in Miami. Still, their work continued, hosting live online chats with travel creators and compiling a comprehensive travel guide to the Maldives, among other pursuits. Since the couple now receives constant invites to collab, they’ve had to become seriously selective about who they partner with. “I think the main thing for us is content op-

portunities,” says Austin. “We’re always trying to step up our game and continuously provide new locations that no one has seen, because it has a lot more likelihood to go viral, to catch attention, to grab exposure.” Although each day brings with it new challenges and inspiration, their mornings typically start with Austin awake at sunrise, usually flying his drone and gathering content. If conditions are in their favor, they’ll set up an early

shoot then break to have a quick bite or hit the gym. More shooting ensues throughout the day before it’s time to edit at night. “Sometimes we’re never done because Jeremy wants to shoot everything again and again,” Villa says with a laugh. Austin and Villa have garnered such a devout following that they’ve created their own line of photo presets and launched a first-of-its-kind luxury travel master class dubbed

“The Creator Retreat,” teaching subjects such as content creation and how to pitch to brands. And their participants are not just travel influencers; Austin and Villa say they’ve helped everyone from Google executives to designers reach their goals of becoming better marketers and photographers. “It’s a unique way for us to bridge the gap with our audience,” says Austin. Adds Villa: “It’s everything we’ve learned in six years, putting it down in five intense nights of knowledge.”

The couple, who got engaged in 2020 during a trip to Bora Bora (Austin surprised Villa during a photo shoot at the Four Seasons), spends most of their time traveling. But in between their nomadic pursuits, they find solace at their home in South Florida. “We feel very lucky to be living here in Miami,” says Villa. “I feel like we take a lot for granted. That’s why we also tell people— especially [Americans]—to travel because they will come home and appreciate it so much more.” This summer, the couple is planning a jaunt to Greece to host another creator retreat; then they’re off to Vietnam and Cambodia, which will mark a first for both Austin and Villa. At the end of the day, the couple always makes time to reflect on what has gotten them to this point: spirituality and gratitude. “Before we were anything we would say, ‘I work with the best resorts in the world. I travel to

the top destinations.’ …We would write and journal it down,” Austin says of their manifesting practices. “All of that to just rewire our minds and program ourselves to think beyond ourselves. There’s no secret sauce; we built this ourselves with our belief and our work.” « JULY/AUGUST 2022

Located 3 miles off Naples, Keewaydin Island is one of the largest unbridged islands in Southwest Florida. The majority of its 1,300 acres is conserved land, part of the Rookery Bay National Estuarine Research Reserve (rookerybay.org) and home to a rich habitat and excellent shelling. The northern tip boasts pioneer history and a dozen privately owned cottages that are sometimes available to rent. There is no infrastructure on the island—and no public dock or bathroom facilities. Most visitors make it a day trip on a private or rented boat or through charter and sightseeing companies. Rookery Bay, Hemingway Water Shuttle, and Pure Naples, among others, offer trips. This slice of paradise is close to the sophisticated culture of Marco Island and Fifth Avenue South. The Inn on Fifth and its Club Level Suites (innonfifth.com) are within 10 minutes of Pure Naples’ pontoon docked at Tin City on the Gordon River (purenaples.com), and the journey out passes Naples landmarks, the mansions of Port Royal, and mangrove-fringed barrier islands. Locals refer to the southern tip as Boater’s Beach, where they tether their boats offshore. The food boat Just Beachy Burgers & More is open most days for lunch. Visitors who want to spot wildlife seek out hiking trails or head to the island’s west side. Being isolated on a sandbar of an island with more coves than people may be an urbanite’s fantasy, but for those of us within driving distance of the Florida Keys, it’s as real as the coconuts that line these shores. Hellas Bakery has all the classic sweet and savory baked goods (try the galaktoboureko, a semolina custard wrapped in phyllo dough and drizzled with honey syrup), and Hellas Restaurant makes a mean saganaki—flamed tableside, of course. The menu is rather vast, featuring just about every Greek dish you can imagine. Is it as good as you’d get in a taverna in Athens? FIORELLI WINERY & VINEYARD Perhaps the most traditional of all Florida’s wineries, Fiorelli Winery in Bradenton has been making dry, semi-sweet, and sweet wines fermented from grapes for 20 years. The Fiorelli team produces nine wines on their scenic property, which overlooks acres of Muscadine-filled vines. The Breeze variety—a blend of Noble and Valvin Muscat—is a medium sweet wine that makes for a lighter riff on the classic rum mojito. BY JULES ARON hile Florida might seem like an unlikely choice for a wine destination, it is actually one of the original homelands of American wine. Spanish missionaries harvested native Muscadine grapes to make wine as early as the sixteenth century, and Florida is currently home to around 20 certified wineries. These wineries and additional vineyards produce wines from a variety of Muscadine grapes as well as tropical fruits and citrus varieties—many of which make a great base for cocktails. From traditional vineyards to lush courtyards and oceanfront destinations, Florida’s wineries and their flavorful creations are worth exploring. Here’s a look at five properties and their unique wines.

Rum, sugar, mint, lime— the Cuban mojito needs no introduction. For days when you fancy something lighter, this lowerproof option is sure to satisfy. 1 oz. white rum 1 oz. Fiorelli Breeze wine ½ oz. lime juice ½ oz. simple syrup 8 mint leaves Mint and lime wedges or wheels to garnish In a shaker with ice, add all the ingredients and shake thoroughly. Strain into a glass with ice and garnish with mint and fresh lime.

For a more unconventional wine experience, visit Keel & Curley in Plant City. Here, instead of vineyards, you’ll walk through fields of blueberries. In Florida, blueberry wine production comes in second behind grape, and Keel & Curley is one of two main producers with the Florida Farm Winery seal of approval (the other is Island Grove Wine Company in Hawthorne). Using Southern Highbush blueberry varieties— which are most adaptive to Florida’s temperate winters—vintners ferment the berries with the skins on, just like with Cabernet or Merlot. The resulting wine is complex in flavor, with a nose that most resembles a Cabernet or Syrah. Keel & Curley makes three types of blueberry wines, ranging from sweet to semi-sweet to dry, as well as a blueberry rosé, a black raspberry Merlot, a wild berry Pinot Noir, sangria, a strawberry Riesling, a peach Chardonnay, and a key lime wine. The official cocktail of Wimbledon, the quintessential Pimm’s Cup is made with Pimm’s (a gin liqueur that oyster bar owner James Pimm created in the 1840s), lemon juice, and ginger ale, served over ice with an abundance of mint and fresh fruit. The Somm’s Cup calls for a dry blueberry wine for a refreshingly light, fruitforward variation. 2 oz. Pimm’s No. 1 1 oz. Keel & Curley’s dry blueberry wine ½ oz. lemon juice 2 oz. ginger beer, to top Cucumber spear or slice, mint sprig, seasonal berries, and citrus to garnish

In a Collins glass, add Pimm’s, wine, and lemon juice and stir. Add pebble or crushed ice, top with ginger beer, and stir gently to mix. Garnish lavishly with cucumber, fresh mint, berries, and citrus.

SCHNEBLY REDLAND’S WINERY You won’t find any Muscadines or traditional Florida wines at Schnebly Redland’s Winery in Homestead. Instead, this “southernmost winery in the United States” is home to specialty wines made from exotic fruits such as avocado, mango, lychee, passion fruit, guava, and coconut. Take in the views of the covered courtyard and waterfalls while sipping on a glass of tropical fruit wine. Frequent luaus with DJs and fire dancers up the fun factor even more. The Cobbler is a pre-Prohibition cocktail made with Sherry, sugar, and fresh fruit that is shaken and enjoyed over crushed ice. Author Charles Dickens popularized this nearly two-centuries-old drink when the titular character of his novel The Life and Adventures of Martin Chuzzlewit described his delectable first sip. This modern version uses Strong Tower’s own Port. ½ oz. fresh lemon juice 5 berries 2 oz. Strong Tower’s Reserve Port ½ oz. mezcal Fruit and citrus to garnish

LOCAL LEGEND Hyper-talented chef Michael Schwartz is often credited with invigorating Miami’s restaurant scene in the mid-2000s—all while catalyzing the city’s foodie and locavore movements. On the heels of his recognition as an Outstanding Chef nominee by the James Beard Foundation, the superstar sat down with Aventura Magazine to discuss his accolades, sublime Miami restaurants, and upcoming role leading a culinary-focused trip with outfit Modern Adventure. AVM: As a previous James Beard award winner for Best Chef: South, how does it feel to receive the next-level nomination as Outstanding Chef this year? Schwartz: I was honored to be nominated this year, but the highlight was seeing so many South Florida nominations. We have an extremely talented pool of chefs in this market, and I’m thrilled there is more recognition of that. When it opened in 2007, Michael’s Genuine Food & Drink (MGFD) was considered a game changer in the Miami food scene. How have you managed to keep it so relevant for 15 years? I think the secret for us has been to stay true to our roots and offer a genuinely good product and a consistent experience. The city has grown around us, and I’m just lucky that we’ve been able to be a part of it.

with our designer, Marcela Lombana, for many months to ensure that we maintained the feel that MGFD has offered guests for 15 years. We elevated the experience in many ways by bringing the outside into the restaurant and repaving the courtyard. The menu maintained the signature dishes, but alongside our talented team, including executive chef Bradley Herron, we also made additions and introduced new flavors. Favorites including the Genuine Burger, Poulet Rouge, and Vito’s Stracciatella will always be on our menu. New favorites for guests to try include our uni sandwich, tin of sardines, spiced lamb, and charred eggplant. We’re equally obsessed with your bayside restaurant, Amara at Paraiso, which you’ve called “a love letter to Miami.” Can you expound upon this? For me, there is no better homage to Miami than

a bayfront restaurant paired with a breeze. At Amara, we are paying homage to the gorgeous views our city offers and pairing the menu with Latin flavors to showcase the city’s heritage. You recently opened an outpost of Harry’s Pizzeria on South Beach. What’s next from the Genuine Hospitality Group? Our current goal is to keep dialing in the details at our restaurants. Specifically, we are working to become an employer of choice, which means we are launching initiatives that promote talent acquisition, retention, better wages [and] benefits, and addressing environmental issues. We’re also building a strong foundation for our Rethink Food partnership, which addresses food insecurity. You’ll be leading a culinary-focused trip to Sicily and Naples with Modern Adventure in late summer. What can we look forward to? I’m excited to work with Modern Adventure on this amazing trip through Italy in early September. We’re heading to Sicily, Naples, Mount Etna, and other historic locations to explore and connect with local winemakers, artists, and chefs. We’re working to create magical moments on this journey, and Italy is always the perfect backdrop.

SCALLOP CRUDO Chef Christian Chirino of Tur Kitchen in Coral Gables shares the recipe for his simple yet scrumptious scallop crudo appetizer. “This dish is fresh, light, and ideal for sharing,” says the chef of the popular Mediterranean restaurant. “[It] provides acidity and a perfect balance of sweetness from the scallops and the clementine.” (turkitchen.com) –P.R. INGREDIENTS (serves 1-2) 6 clementines 5 scallops (U10 size) Maldon salt (or other sea salt) 1 oz. chopped chives 3 thin slices of fresh chili (fresno or jalapeño) 2 mint leaves 2 finger limes

Create a clementine granita by juicing the clementines and placing them in the freezer until the juice gains an icey consistency. Slice the raw scallops thinly and layer circular scallop slices across a plate. Shave the clementine granita with a fork over the center of the crudo. Sprinkle the salt and fresh chives on top. Crown with chili, fresh mint, flesh of the finger limes, and edible flowers.

As temperatures rise, English vintners are giving Champagne a run for its money

ust when you thought there was no possible upside to global warming, along comes English sparkling wine. Although sparkling wine production in the South of England only began in the 1980s, it is now home to more than 100 producers. Most are using the traditional Champagne method and the same grape varieties (Chardonnay, Pinot Noir, and Pinot Meunier). The majority of the estates are located in Kent, Sussex, and Surrey, with the largest producers being Gusbourne and Chapel Down. Given that the area has similar soil and topography to the Champagne region across the Channel, success was probably inevitable. Even the house of Taittinger has joined the party, with its first vintage from Kent expected next year.

Champagne is frequently the standard by which English sparkling wine is measured, but there are distinctions. While the best English sparklers compare favorably to mass-market Champagne, the real analogy would be to grower Champagne. Most English producers are small, family-run, quality-oriented operations, and many of the wines display a vibrancy and freshness that commercial Champagne lacks. Here, we spotlight some wineries to watch. BALFOUR: Founded by Richard and Leslie Balfour-Lynn, Balfour released its first harvest in 2004. The estate gained recognition when its brut rosé ($60) won a gold medal at the 2007 International Wine Challenge; made in small quantities every year, it’s Balfour’s flagship and

worth seeking out. Straddling the divide between brut and demi-sec, Leslie’s Reserve Gold NV ($45) is filled with tart green apple flavors and good acidity, making it a nice match with seafood and a lovely wine to enjoy on a summer’s day. (balfourwinery.com) GUSBOURNE: Imported by Broadbent Selections, Gusbourne is readily available around the United States. The Estate Brut Reserve 2016 ($55) contains Chardonnay, Pinot Noir, and Pinot Meunier. It’s remarkably well-balanced, with a creamy texture and classic Chardonnay flavors of citrus, melon, apple, and pear. It’s also an excellent value for a vintage-dated Brut. (gusbourne.com) CHAPEL DOWN: Kent’s largest producer thumbs its nose at its French counterpart by stating that it operates “without the confines of 350 years’ worth of rules and traditions.” Chapel Down’s Classic Brut NV ($50) is brash and forward on entry, but it fleshes out in the mid-palate to reveal flavors of vanilla, citrus, custard, and candied fruit, all of which linger on a subtle finish. This charming wine is finding its way onto the shelves of both boutique retailers and big-box stores. (chapeldown.com) RIDGEVIEW: Mike and Christine Roberts established Ridgeview in the South Downs of Sussex in 1995, and it remains a family winery. They produce non-vintage brut (Cavendish and Bloomsbury), blanc de blancs, blanc de noirs, and several bottlings of rosé. Pale salmon in color, Fitzrovia Rosé NV ($60) blends wild berry flavors with earthy, savory notes. It was deemed good enough for Queen Elizabeth to serve

to President Obama at Buckingham Palace in 2011. (ridgeview.co.uk) HATTINGLEY VALLEY: Simon Robinson gave up practicing law in 2008 to become a vintner. With the help of winemaker Emma Rice, he transformed this rural Hampshire property into an eco-friendly, stateof-the-art vineyard and winery. Classic Reserve ($45), Hattingley’s non-vintage brut, contains nearly equal parts Chardonnay and black grapes. The clean, fresh texture combines vivid lemon flavors with hints of yeast and brioche. (hattingleyvalley.com) Other English sparkling wines worth investigating include Denbies, Kingscote, Langham, Camel Valley, Nyetimber, Furleigh Estate, Breaky Bottom, Harrow & Hope, Court Garden, and Greyfriars. ARTISTIC LICENSE For the first time in its eight-year history, the Design District’s Institute of Contemporary Art, Miami (ICA) is presenting a major exhibition to showcase its permanent collection. Dubbed “Fire Figure Fantasy,” the exhibit (on view now through October) spans nearly the entirety of the museum’s exhibition space and focuses on recent acquisitions that revolve around themes such as social justice, emerging technology, and global crises that “challenge and reconfigure museum institutions.” Check out works ranging from Henry Taylor’s large-scale acrylic and charcoal canvas The Last Supper, which examines race and labor, to Andra Ursuta’s monumental Soft Power 2, an inflatable fist made of patchwork-quilted comforters that references protest and gender.
