As you gear up for summer with the kids (or grandkids) out of school and seasonal residents back up north, there is plenty of outdoor fun to plan. A wide and lush natural landscape surrounds us in Naples, and it’s always worth remembering that there is an added bonus to soaking it all up. Whether it’s gliding in a kayak through the mangroves or swamp-walking in the Everglades, spending time in nature has long been shown to help tamp down stress levels. Simply being among the greenery seems to deliver a restorative breath of fresh air that’s as good for the soul as it is for our health and happiness. In fact, among the several studies over the years that have touted these benefits, a small one conducted a few years ago by Stanford University researchers is particularly intriguing, as it tracked and tested 38 mentally healthy people who lived in urban environments. Half the participants took a 90-minute walk through green spaces with plenty of trees and scenic hills, while the other half strolled along a traffic-jammed, four-lane city street. You likely won’t be surprised to learn which group ended up happier. The participants underwent brain scans and other tests before and after the walks—and researchers found significant differences in the prefrontal cortex, the area of the brain that lights up when we’re in a loop of negative thoughts and emotions. It was less active (meaning: fewer negative emotions) among those who walked in nature versus those walking the city streets. The results, published in the scientific journal Proceedings of the National Academy of Sciences, showed trackable evidence that getting outside in our verdant Southwest Florida landscape or anywhere in nature truly does a body (and mind) good. Of course, there are countless ways to experience the beauty of Naples and our surrounding area. SOAPBOX At age 7, Camryn Grimes first stole the hearts of soap opera fans playing the uber-cute, freckle-faced character Cassie Newman on the CBS daytime drama The Young and the Restless. Exuding natural talent, Grimes snapped up the role on her first theatrical audition more than two decades ago. She has been working on and off for that soap ever since, first as Cassie and now as her long-lost, salty-sweet yet sensitive twin, Mariah. The Daytime Emmy Award–winning actress is among several soap stars attending SoapFest Charity Weekend in Marco Island May 25-28. NI: Do you have a connection to Southwest Florida? Grimes: My grandmother lived in Naples for a long time and we would visit when I was younger. I love Florida. My favorite animal is the manatee. How did your love of manatees come about? My grandma would send manatee postcards from Naples, so I started reading up on them. I loved that they were these bumbling, beautiful sea cows without any natural predators. I connected with their plight [protecting them from boaters] and it became a love for me. I even have a manatee

painting in my room. My No. 1 goal when I get there [Marco Island] is to find the nearest manatee. I didn’t get to see one last time. What do you love most about your work? I love soaps. I think what we do is so underrated. Many people who’ve worked in primetime will come on our show and [tell me] they were thrown for a loop because it’s so fast-paced and different than movies and TV shows. It almost feels like live theater. What do few people know about you? I’m an avid sketch artist. I have a naked [sphinx]

cat. I love the macabre and listen to podcasts like “My Favorite Murder.” I also like the supernatural, the unexplained, and the mystical—like tarot cards and mediums. What’s it like to be part of SoapFest? This will be my second year at SoapFest. It’s really nice to do events where you can be yourself, joke around, and have one-on-one time with the fans over the course of an incredible weekend. While the Special Olympics is long known for empowering athletes with intellectual disabilities, Immokalee High School teacher Kelly Stevenson says it goes far beyond that for her students. Over the past 18 years, the Ave Maria resident has been a driving force in growing the Special Olympics in Collier County (specialolympicscollier.org). Stevenson was recently honored for her efforts when she was selected among 135,000 coaches as the Special Olympics North America Coach of the Year. Her passion and commitment, she says, comes from the big difference she sees in students with intellectual disabilities once they get involved in the Special Olympics. “When they walk down the hallway, they have friends and they don’t feel excluded anymore,” Stevenson says. “They are recognized at pep rallies and receive the same varsity letter, pin, and certificates, just like the varsity athletes. It builds their confidence, and their attitudes and attendance [get] better throughout the years.” To Stevenson, seeing that enthusiasm keeps her going. “It makes your whole day,” she says. The excitement continues this summer when two local athletes will compete in the 2018 Special Olympics USA Games in Seattle, beginning July 1. Vivy Pantoja is part of the Special Olympics Florida stand-up paddle team and Jill Walker is on the Special Olympics Florida bocce team.

While movies have been filmed in Southwest Florida before, Rebeca Seitz is looking to build a film industry from the ground up in Naples. As president and CEO of SON Studios (sonstudios.org), she led the charge to film a TV pilot in Naples. The Neapolitan was shot last fall and, at press time, was being shopped around to networks with the expectation of Filming The a summer deal. The storyline is based on a novella Seitz Neapolitan wrote called First Blush. In the meantime, Seitz announced she has also entered into a first-look agreement with writer and director Brent McCorkle for the TV series Starlight, a follow-up to I Can Only Imagine, a film he co-wrote, co-edited, and scored, which hit theaters in March. Seitz expects to begin shooting the fantasy series pilot in late 2018 or early 2019. Starlight focuses on a little girl whose world is turned upside down after an alien crash-lands behind her house. Seitz says the project was attractive partly because of “its power to address the nuances of relationship with those we deem as ‘other.’” As a nonprofit, SON Studios strives to create films, TV shows, and books that have “a positive impact on society.” Seitz adds, “Everything we bring in is a story that, if an audience member reads it or views it they will be left a better human being for having engaged with that story.” Despite its name, SON Studios does not yet have a working studio in Naples, though there are plans to build a 184,000-square-foot facility once they’ve secured a network for their first series.

here are so few residential options on Naples’ downtown thoroughfare, Fifth Avenue South, that the opportunity to revitalize a home does not come around very often. When it does, it’s deemed quite special. For Dwayne Bergmann, principal designer of Fort Myers–based Dwayne Bergmann Interiors, a commission to remodel a 25-year-old condominium on Fifth Avenue South presented some exciting possibilities. Just shy of 2,000 square feet, this secondfloor, two-bedroom apartment was in need of a complete renovation. Bergmann’s strategy was to infuse the space with a new attitude that was apropos to the owner’s avocation as a ballroom dancer.

Though she also is a general contractor specializing in high-end buildings in Indiana, she wanted this space to reflect her more glamorous side. Bergman’s inspiration was twofold. “We anticipated the style and luxury of living on Fifth Avenue South, and got a sense of the bejeweled lifestyle our client leads as a ballroom dancer,” he says. Pristine white glass porcelain tile covers the floors in the main rooms of the house. The material is durable but has a reflective sheen that gives it a luminous, almost delicate quality. Shades of white, silver, and champagne with accents of fuchsia, pink, and pale lilac play beautifully against the white expanse. Bergmann sprinkled in bejeweled ornamentation as a nod to the gem-encrusted

costumes that are worn on the dance floor. Because the great room and kitchen form one contiguous area, a coherent design was paramount. Cool gray tones infuse both spaces, from the great room walls to the veining of the kitchen’s marble backsplash. The color scheme is softened by white furnishings in tactile fabrics like chenille, and the sleek surfaces have just a hint of sheen. Sparkle comes courtesy of crystal lamps, jeweled hardware, and pops of silver. An oversized acrylic painting by Mallory Page, with vibrant shades of pink and fuchsia, creates a focal point and enlivens the great room with a burst of color. In the kitchen, Bergmann eliminated some of the functionality—his clients favor dining out over

Kitchen functionality was second to the showstopping glamour of crystal lamps, Swarovski crystal hardware, and marble backsplash. Reminiscent of a city-chic hotel lobby, the dining area (below), with its high back chairs and cowhide rug, is suited more for entertaining than traditional dining.

cooking—to create more of a showpiece. He removed upper cabinets and installed display shelving, and added high-gloss white lower cabinets adorned with Swarovski crystal hardware. A soffit over the island was removed to make the space consistent with the 10-foot ceilings elsewhere in the home. The kitchen-adjacent dining area recalls a high-end hotel lobby with four high-back chairs and a low table atop a cowhide rug. The arrangement is more for entertaining than traditional dining, which is ideal for the owners’ lifestyle. The family room is equally glamorous. A floor-to-ceiling silver-gray color palette with splashes of fuchsia and just the right amount of sparkle grants Hollywood-style allure. The crowning touch is a light fixture with feather-like nickel extensions. To personalize the space, Bergmann hung photos of his client dancing. A jewelry box was inspiration for the dramatic powder room. A pair of chandeliers flank the mirror in the manner of sconces, casting light onto a custom quartz vanity and glass vessel sink.

The nod to luxury continues in the private areas. In the master suite, a leopard carpet in a silver colorway blends seamlessly with the platinum and champagne faux-painted wall behind the custom headboard. In the guest suite, drapes pool behind the night stands with theatrical flair. Crushed velvet fabrics and a willow-like crystal chandelier contribute to the quiet opulence of the room. “We softened the drama and kept it in the details,” says Bergmann. “The bedding fabrics are subtle but luxurious to touch.” It all came together beautifully, thanks to Bergmann’s meticulous creative process. For every project, he uses a storyboard detailing every material, color, and texture. “A well-planned home is not happenstance,” he says. “It is 100 percent intentional.” «

This impromptu stargazing session comes courtesy of the newest and brightest star in the rapidly expanding Aston Martin universe, the achingly gorgeous DB11 Volante. While a convertible, any convertible, will put sun on your face and wind in your follicles, it also makes the perfect sky-at-night viewing platform. Swamp Walks Leave those Manolos in the car and get ready for some down-and-dirty walks that will take you through the underbelly of Southwest Florida’s ecosystem at the closest range possible. Clyde Butcher’s Everglades swamp tours are legendary (clydebutcher.com). An iconic landscape photographer once called the next Ansel Adams by Popular Photography magazine, Butcher first fell in love with the mysterious allure of the swamp in 1983. He decided to share his adoration with the public and proffered his backyard at his Big Cypress Gallery, located in the Big Cypress National Preserve, for eco tours and explorations he calls Photo Safari Swamp Walks. Both adventures are open to the public.

Florida is host to half of the orchid species found in the United States. The rarest is the ghost orchid, which thrives in cypress swamps as well as pond apple and palm trees.

At Corkscrew Swamp Sanctuary in Naples (corkscrew.audubon.org) visitors can traverse through the heart of the Everglades. There are various levels of swamp walks available, ranging from beginner (a two-hour, 1.5-mile program suitable for ages 10 and up) to advanced (a physically demanding, adults-only outing lasting at least four hours). Other local options include paths at Naples’ Collier-Seminole State Park (floridastateparks.org). The Hiking Adventure Trail covers 6.5 miles, is wet most of the year (except for winter and early spring), and takes between three to four hours to complete.

Hiking A Stanford University study found that volunteers who hiked through a verdant Gordon River Greenway portion of campus were more attentive and happier afterward than those who strolled for the same amount of time near heavy traffic. Thankfully, Southwest Florida has many natural areas where you can put these findings to the test. The Sabal Palm Hiking Trail is an impressive 3.2-mile, packeddirt trail in Picayune Strand State Forest. Here, amidst 100-year-old cypress trees, await various species of birds, including the hairy and red-cockaded woodpeckers, making it a definite must-do for bird-watchers. A little gentler on the knees, the Gordon River Greenway in Naples (gordonrivergreenway.org) offers a scenic paved trail with water access along the Gordon River.

Look Out For

Once considered fairly common, the red-cockaded woodpecker is now an endangered species due to a decline in mature pine forests, its natural habitat. Its name is derived from the distinctive red cockade behind the eye of the males.

Mountain Biking You don’t have to ride at full throttle down daredevil hills to enjoy mountain biking. Slow it down and take a nature tour through undulating terrain. The Pepper Ranch Preserve in Immokalee (colliercountyfl.gov) is a jewel of a track suitable for intermediate levels and above. While only open Fridays, Saturdays, and Sundays, it’s well worth the wait to ride through the bucolic fields and trails at this magnificent preserve, home to Florida panthers, black bears, and deer. For a less arduous experience, try an 11-mile ride through natural canopies at the Caloosahatchee Regional Park in Alva (leegov.com), or head to Lovers Key State Park (loverskey adventures.com) to bike the Black Island Trail, which follows a 2.5-mile-long estuary.

Look Out For

The blue morning glory is a beautiful twining vine native to Florida that can climb as high as 45 feet. The endangered Florida panther, a rare but spectacular sight, can weigh up to 160 pounds.

Road Biking Southwest Florida’s fantastic weather and scenery provide prime conditions for all cyclists. Whether you want a scenic ride or something more challenging, there are dozens of trails and paths through parks, along U.S. 41, and beyond. Janes Memorial Scenic Drive in the Fakahatchee Strand Preserve State Park in Copeland (floridastateparks.org) boasts an 11-mile, hard-compact dirt trail that travels across various ecosystems including cypress domes, pine forests, and prairies. For a more leisurely ride, Naples’ Gordon River Greenway (gordonrivergreenway.org) has paved pathways and a boardwalk that crosses a cypress and mangrove swamp. In addition, Naples and Marco Island Guided Bike Tours (naplesbicycletours. com) offers a recreational tour that is fun for the whole family.

LAID-BACK: Time to relax in style and take part in a wildlife and shelling tour on the Calusa Spirit, a 45-foot catamaran operated by Marco Island Water Sports (marcoislandwatersports.com). An onboard naturalist helms the cruise, which travels across the Gulf of Mexico and through the Ten Thousand Islands. During a leisurely stop on Cape Romano, you’ll be able to stuff your bags with exotic shells. ADVENTURESOME: For a truly interactive sightseeing and shelling experience, try out a two-person CraigCat boat courtesy of Backwater Adventure Marco Island (backwateradventure.com). A guide will lead the way in a separate vessel, steering you in and out of narrow channels along the Ten Thousand Islands, home to manatees, dolphins, shore birds, and other sea life. SHELL OUT This classic combination of lump crabmeat and avocado appeared on the menu at Ridgway Bar & Grill (ridgwaybarandgrill.com) shortly after the restaurant opened in 2001. The preparation is simple and stresses the quality of the ingredients: The crab is bound with a lightly seasoned mayonnaise, the avocado is mashed, and the timbale is turned out on a bed of house-made gazpacho. “It’s best served with a homemade ciabatta roll so you can sop up the gazpacho,” says the restaurant’s marketing director, Caroline Ridgway. The popular dish is available as either an appetizer or entrée at both lunch and dinner.

The Other Side Bistro, Bonita Springs Many wine lists rely on commercial brands and famous labels to sell bottles to diners. Not so at The Other Side Bistro (bonitaspringsbistro. com) in Bonita Springs, where chef-owner Brian McCarley has assembled a remarkable collection of limited-production gems from some of the least known and most talented vintners on the planet. “We have just about every flavor profile you can imagine,” McCarley says. “They’re not necessarily names you would recognize, but if a customer is a little bit adventurous, we can give them something they like.” McCarley, who became interested in wine while at culinary school, accumulated his knowledge through a combination of tasting, travel, and research. His list currently contains 158 selections, with 36 available by the glass; the restaurant’s total inventory is approaching 15,000 bottles. You can have a glass of Schloss Vollrads Riesling, Santo Assyrtiko from Greece, South African Pinotage, or a Rhône-style blend from the Yakima Valley. Bottle selections are global and equally exciting. Plus, the wines are offered at reasonable markups. “They’re priced to move,” McCarley says. “I’m a wine seller, not a collector. We’re totally guest-driven, and we have very educated consumers, which makes our job easier.”

Riding the health-inspired wave of the Mediterranean diet, Middle Eastern cuisine is one of this year’s hottest food trends. The cooking of Lebanon neatly bridges the gap between those two worlds. Lebanese cuisine is now on display at Kareem’s Kitchen (kareemskitchen.com), which opened in March in the Sugden Park Plaza in East Naples. At the helm is chef Rachid Eido, who grew up in his grandfather’s restaurant in Beirut. After formal training at the Culinary Institute of Beirut, he came to America and logged stints at the Intercontinental and Four Seasons hotel chains. “Kareem” means “generous” in Lebanese, and the name sums up both the range of fragrant dishes and chef Eido’s approach to hospitality. His menu features authentic ingredients and intense flavors, beginning with appetizers such as falafel, grilled halloumi (sheep’s milk cheese), and the chef’s special eggplant salad, drizzled with virgin olive oil. There are five variations on hummus, and shawarma plays a vital role, too. In fact, meats can be seen roasting on rotating vertical spits in the glassed-in kitchen. Diners have the option of sampling a number of dishes in the two different Taste of Beirut platters. A quartet of homemade desserts provides a sweet ending.

NI’s wine and spirits editor examines the history and science behind the countless choices in drinking vessels BY MARK SPIVAK

Ever since wine has existed, people have struggled with the problem of how to drink it. Members of royalty never had to worry, since jewel-encrusted goblets were common from 500 A.D. onward. Commoners were more likely to drink out of a hollowedout animal horn. This was a functional solution but not an aesthetic one, as all the wine had to be consumed in one shot—the preferred method for Vikings, but not as appealing for social drinkers. By the eighteenth century, glass goblets with stems had become popular. This period coincides with the rise of the Austrian glassblowing family Riedel. Their market presence grew during the Industrial Revolution under the leadership of Josef Riedel the Elder (1816-94). Today the eleventh-generation company, headed by Maximilian Riedel, has established itself as the premier manufacturer of wine glasses in the world. Riedel subscribes to the Bauhaus philosophy that form follows function. They theorize that every beverage has certain aromas and flavors that are enhanced by a wine glass with a unique shape. Thus, the Sommeliers Collection features 32 types of glasses for wine varieties as diverse as Bordeaux and Burgundy Grand Cru, Alsace, Zinfandel, and Sauternes, as well as spirits such as XO Cognac, grappa, and tequila. Prices for the Sommeliers Collection range from $50-$120 per stem; if you do the math, there’s little doubt it’s good to be Riedel. Does a wine and spirits connoisseur really need 32 separate classes of wine glasses? Riedel insists the answer is yes, and they vigorously back up their claims. In addition to the shape of the glass intensifying the wine’s characteristics, they contend that different glass designs deliver flavors to certain parts of the tongue in a specific fashion. According to them, each glass allows wine to target taste buds to form a flavor pattern. 82

To illustrate this theory, the company conducts a series of tastings around the world. At these events, wines are presented side by side in both Riedel and competing stemware. Most tasters come away with the impression that Riedel glasses yield a superior tasting experience. Skeptics criticize the results on the notion that they are predictive, that expectations are orchestrated by the person moderating the tasting, and that participants are heavily influenced by those around them. There’s pushback from the scientific community, as well. Professor Linda Bartoshuk, the leading researcher on the physiology of taste, asserts that the tongue map doesn’t exist. According to her, people are born with vastly disparate quantities of taste receptors on their tongues, and this accounts for their ability to perceive flavor. If nature has shortchanged you, according to Bartoshuk’s research, a fancy wine glass won’t help. Given this controversy, what’s a wine drinker to do? Here’s a modest proposal: Purchase some glasses with a large bowl that gently tapers at the top (known as a Burgundy balloon). This glass will allow

the aromas to focus toward the nose in a distinct but not aggressive fashion. If you must, keep a set of expensive stemware on hand to use when company comes. (I own a number of fancy wine glasses; like most people, I rarely use them.) If you taste everything from the same glass, you’ll have a basis for comparison that will deepen over time. While I don’t have any scientific evidence to back up this claim, neither does anyone else. «

THE BEET GOES ON Long considered the love-it-or-hate-it root vegetable, beets have surreptitiously taken center stage in health and wellness circles. Aside from being a good source of B vitamins and minerals like potassium and magnesium, beets are packed with betalains and naturally occurring nitrates that may help lower blood pressure and offer protective effects against chronic diseases, such as cancer and heart disease. According to a study published in the American Heart Association’s journal, Hypertension, high blood pressure patients who drank a cup of beet juice daily saw notable decreases in their blood pressure. The benefit likely comes from the beet’s nitrates that convert into nitric oxide in the body, which helps dilate blood vessels, improve blood flow, and lower blood pressure. Beetroot is also one of the few vegetables that contain betalains (the pigments that give it that deep reddish color), which are known for their antioxidant and anti-inflammatory properties.

, owner-director of Harmon-Meek Gallery in Naples, has a long-standing passion for art. “I believe paintings and sculpture have a way of speaking to a person and even picking their owners,” says Meek. “Art is very personal.” The gallery was established in 1964 and grew into a family business that has been passed down from her parents, William and Barbara. Her sister, Juliana, directs a second gallery, Harmon Meek | modern. 1. Great escape: I’d love to repeat the trip to Svalbard with my sister. We stayed in an old Soviet spy station (Isfjord Radio) that had been renovated. There were only six guests, a private chef, sled dogs, guides, and rifles in case of a polar bear attack. What few people know about her: I have a fear of heights but did a skydive from 14,000 feet in Australia while 4 studying abroad. I also traveled to all 50 states before I was 18 and hope to give my son the same experience. 6. Beauty product she can’t live without: Laura Mercier eye shadows. My 2-year-old son once grabbed my eye shadows from my bathroom and threw them across the room in a tantrum; I nearly put him up for adoption! 7. Bucket list topper: I want to take my son, John, and partner, Andrew, to Sogndal, Norway, to meet my distant cousins who still live on the farm my great-grandmother left a century ago. 8. Go-to place for dessert: Preston’s Steak House for chocolate layer cake. Clayton’s wife makes a cake worth saving room 5 for, even after their delicious steak.
