Priscilla Williams is an architect with over 20 years of professional experience, 18 of these as the Senior Designer at Paul Kelly Design. Priscilla brings an incredible depth and breadth of architectural experience to the table, and her conceptual sensibility and capacity sets her apart in the industry.
Priscilla has worked on over 200 projects at Paul Kelly Design, with a passion for design and a sharp eye for style, that is nothing short of gifted. Priscilla brings a wealth of experience and flexibility to every project, working closely with the client and consultants to create unique and dynamic food and beverage projects.
Scott Trevitt is an interior designer with over 20 year’s professional experience, 13 of these as the Senior Interior Designer at Paul Kelly Design. Scott understands the big picture on a project and his management ability and personable approach to the internal team, consultants and the client’s representatives make him a standout in the industry.
His design prowess is second to none and his ability to create both exciting and working environments keeps him at the top of his field. Scott designs down to every finite detail; this consistently creates impressive quality in every design.

The concept for this modern Bar and Brasserie took inspiration form Australia’s unique produce, culture and colour palette.
The clients passion to showcase quality Australian produce and flavours was a strong driver in the initial layout planning. The open kitchen and its cooking philosophy inspired by charcoal and flame provides a theatrical backdrop which both grounds and energise the dining space. With the menu being the hero it was important to us that the interior compliment and not compete with this vision. The dining spaces are casual, inviting and approachable flowing seamlessly from inside to out with a colour palette inspired by the unique hues of our Australian flora.
THE LONGUEVILLE HOTEL
MAIN BAR AND RESTAURANT
The Longueville has been a landmark hotel in Sydney since 1929, recently receiving its second upgrade by Paul Kelly Design.
The hotel consist of a public bar, dining room and terrace deck known as ‘Villa’, all of which have been lovingly refreshed with a reference to mid century aesthetic. At the Longueville Hotel, Paul Kelly Design has created a character-filled venue, a perfect space to celebrate fun and enjoyment.

This renovation nods to the vibrancy and attitude of classic Palm Springs style, incorporating a sense of timelessness and a respect for perfect details.
The whole experience has been developed by Paul Kelly Design to deliver a unique and exciting product for old and new customers of the hotel.

THE GRAND CAFE

Located in the heart of Sydney’s CBD at Chifley Square, The Grand Café offers a refined breakfast and lunch experience in a striking, high-ceilinged setting. Drawing inspiration from Florentine design principles, the space combines old-world elegance with a contemporary sensibility.
The interior unfolds in two distinct zones: the main dining area and the espresso bar—each crafted with the same commitment to quality and timeless appeal. Cool-toned hues set a calm, sophisticated tone, while a rich interplay of multi-coloured marble surfaces introduces depth and texture.
High-end finishes, detailed joinery, and a restrained palette all contribute to a sense of quiet luxury. Every element of the design speaks to craftsmanship and clarity of vision, creating a space that feels both classic and current.
FLEET ROOFTOP
MELBOURNE CBD
Fleet, on level 22 of the Vibe Hotel Melbourne building, opened April 2024 and is home to one of the city’s most iconic and picturesque views, transforming the hotel’s former penthouse apartments into a chic, 90-pax rooftop bar reminiscent of an intimate private suite
Fleets fun yet sophisticated fit out, with design touches from the 1980s, is complete with amber and dusty pink tones, custom made furniture and a long bar where rum reigns supreme. A wraparound outdoor terrace is decked out with green and white striped upholstery to add a garden party frisson, while the retractable roof and glass paneling not only caters to all weather conditions, but frames stunning city views to perfection.

Babblers anchors the eastern edge of Sky Deck with a space defined by openness, warmth, and connection. The design embraces natural textures, fluid lines, and abundant light, creating an atmosphere that is both relaxed and elevated. Panoramic views across the river city become part of the interior language, reinforcing a seamless dialogue between setting and experience.
More than an all-day dining venue, Babblers is a social hub—a place designed for gathering, lingering, and returning. Its character lies in the balance of scale and intimacy: expansive enough to feel alive with energy, yet detailed with moments that invite comfort and familiarity. In this way, Babblers has been shaped not just as a restaurant, but as a contemporary Brisbane landmark for community and connection.

Exotic cocktails and bold botanical infusions set the rhythm—ideal for sunset aperitifs or late-night rendezvous. As evening unfolds, music builds and the bar transforms, its enigmatic lighting installation casting shifting tones across the space, echoing the energy of the city below.

PERRY STREET KITCHEN
The Matraville Hotel Perry Street Kitchen brings new life to the existing Hotel’s Bistro offer. The concept for this area was to provide a more serious restaurant style offer with a warm contemporary interior and courtyard outdoor dining experience.
The internal space is a light, bright and neutral space with subtle, but well throughout inclusions like the central ceiling details, suspended pendant and custom artworks.
The external space is filled with an abundance of natural light, various textured white walls and natural planting. A central void over the Olive tree ensures there is a real connection to the outside environment, while fans, misting and heaters ensure there is a comfortable balance.
MATRAVILLE HOTEL
SPORTS BAR
The Matraville Hotel Sports Bar and TAB is a new take on the traditional sports bar, consisting of a light filled internal space and strong connection to the outside environment.
The concept for the space was to provide an outdoor style of space however, with the facilities in place to control the extremes of the outside elements so that it can be enjoyed all year round. The introduction of a centralized ceiling coffer with a fully opening Vergola roof and surrounding pockets of voids with gardens allows for a very strong connection to the external environment.
The introduction of a new Bar facility means the owners have the ability to offer customers in this area a tailored food and beverage experience, which might not be experienced elsewhere in the Hotel.
FLYING FISH
THE STAR SYDNEY
Flying Fish has a new home. After 14 successful years on Jones Bay Wharf, owner Con Dedes and chef Peter Robertson have joined forces with PKD to launch a new restaurant concept at the Star Casino.
The creative vision takes its inspiration from coastal New South Wales, expressed through unique light sculptures, lush colours and meticulously knotted column tapestries by local artists. Quality craftsmanship is on display with custom wine display cabinets, intricate joinery and unique, custom-designed carpets. With an inviting bar to greet patrons, a private dining room for 40 guests, chefs table for 16 and smaller semi private dining rooms, this new home for Flying Fish sees the iconic Sydney establishment step up in style.
DARLINGHURST, SYDNEY
Opulent and exclusive, The Avenue by Paul Kelly Design delivers an intimate performance and hospitality space in Sydney’s Darlinghurst. Entering through the Kirketon Hotel, Mayfair Lounge’s rich finishes and sophisticated detailing transports guests into a theatrical showcase of live performance, premium cocktails and cuisine.
Tasked with creating a warm and inviting interior with a feeling of exclusivity, Paul Kelly Design sought to create moments of depth and intrigue. The customer is designed to sit in the shadows, while the performance, food and drinks are played out in front of them –a dynamic that is crafted through deep contrasts in materials and lighting. The My Muscle Chef Test Kitchen has been envisioned as more than a workspace, it is a stage for innovation and collaboration. Every detail elevates cooking into an experience, merging precision with creativity in an environment that feels both refined and dynamic.
A sculptural marble island anchors the room, edged with subtle lighting that defines it as both functional hub and visual centrepiece. Expressive stone veining, warm timber joinery, and herringbone floors add depth and richness, while integrated lighting and curved forms create rhythm and drama across walls and ceilings.
A custom dining table framed by leather seating extends the kitchen’s purpose, transforming it into a space for sharing and refining ideas. Robust, contemporary, and unapologetically premium, the Test Kitchen embodies My Muscle Chef’s values of quality and innovation.

Nestled within the newly completed Parramatta Council building, Publique is a contemporary café concept that blends civic sophistication with warm, urban flair.
Designed to serve breakfast and lunch, the space balances functionality with a light-hearted vibrance—making it both a practical venue for daytime dining and a visual standout in a government precinct.
Our design celebrates texture and contrast: custom terrazzo surfaces anchor the interiors with a timeless polish, while pops of coral upholstery infuse energy and softness into the clean architectural lines. The result is a welcoming, thoughtfully layered space that invites conversation and community—an elevated yet approachable take on the modern public café.
THREEFOLD PASTRY
RETAIL BAKERY
A working pastry and bakery kitchen, Threefold’s is a space that is functional,bespoke and streamlined. Utilitarian in its look, the design of the space celebrates the industrial bakery equipment, which are in full view for the customer.
Simplicity in its design, finishes are kept to the minimum. Mosaic white tiles, white wash brick, concrete floor, marble and terrazzo serves as a backdrop to the stainless equipment. A full length servery counter, complete with custom cold and warm baked goods display greets the customer upon entering. It’s clad in marble,with a fluted marble front to add texture and interest to the counter. Above the counter is a custom light feature. Linear tube lighting illuminates the space, whilst the arches above provides the neon glow.
Threefold Pastry brings next-level indulgence to its customers with a creative range of sweet and savoury pastries folded to perfection. The venue is designed specially to cater for these creations, providing a space that is functional, simple and contemporary.

The new exterior has been wrapped in a screen veil, providing glimpses of the treasures within while providing protection.
The internal spaces offer a direct connection to the environment, with natural sun light and natural air flow enticed to penetrate. The extensive height, use of natural light, monolithic brick finish and abundance of planting make this a unique space.
The different levels and spaces each offer a contemporary vision. The ground floor presents a large centralised bar and a feature kitchen that is defined by a wall of display, acting as a backdrop. The Evening Star in Surry Hills is back. PKD has transformed a tired venue into two distinctive operations, pairing a busy gaming experience with a bustling, late night, inner city hotel.
The design direction references Blade Runner and sci-fi films, with the interplay between the Asian-focused menu and custom artworks creating a hyper-real vision of the future. Situated on a busy corner, the venue offers a perfect space for customers to escape the maddening crowds.
MAIN BAR, BISTRO AND OUTDOOR AREA
Located in Sydney’s beachside Manly, the Ivanhoe Hotel is an expansive venue spanning four floors. The venue caters to several distinct customer markets, reflecting a diverse set of food and beverage offerings available across the venue. A coastal design aesthetic reflects the spirit of Manly, tinged with a Hamptons influence, with a palette of white, soft blues, and jade greens complemented by weathered driftwood greys.
The design direction has links to a classic coastal interior while creating an atmosphere of quality and subtle design. All of the exterior spaces of this venue are operable, allowing customers to experience the dynamic landscape architecture and vibrant use of materials all year round.
THE OAKS
The Oaks Hotel remains one of Australia’s most iconic and well-recognised hotels. PKD has worked with the Hotel owners to ensure its history and reputation continue to evolve and be embraced by new generations of patrons. A classic food and beverage concept links to the Hotel’s history, with appeal to a discerning clientele.
The Bar & Grill steak house concept services customers through an old butcher shop, placing them in front of the action of the kitchen and surrounding them in fine wine and Art Deco styling.

The Union Place Hotel offers a contemporary interpretation of the classic American diner.
A dramatic bar occupies central place in the room, custom blue stained timber paneling and brass halo lighting imposing a strong, masculine presence.
The coffered timber ceiling with its exposed metal fittings and dark walnut stain emphasises the strength of the design, which is then softened through the introduction of plants at key points in the room. The Bistro incorporates booth seating, inspired by the quintessential American diner experience.
PKD explores a new approach to a traditional “red, white and blue” colour palette throughout the Main Bar and Bistro. In the Gaming room, darker hues take over, complemented by a dramatic feature ceiling and brass mirrored columns. The custom carpet is a unique nonrepeat design, which further develops the moodier colour tones of navy and gold to red.
The outdoor area is a contrast to the dark, strong interior. A lighter colour colour palette of blues and yellows is applied through playful and bold patterns. Fairy lights create a welcoming ambience at night, while strategically located plantings juxtapose the striking geometric patterns of the exterior tiles.

With deep roots in the Botany community, the Captain Cook Hotel has always been a local landmark—where heritage and hospitality converge. The design approach focuses on warmth, comfort, and flow. Material selections play a central role in shaping the identity of the lounge. GAMING ROOM
Classic Australian Hotel design is paired with the latest developments in boutique gaming experience at the updated Rose Bay Hotel.
Elegant, traditional timber features have been enhanced through a comprehensive design process. The design has drawn inspiration from the existing building architecture, emphasising and embellishing existing features such as arch windows, feature curves, and repetition of key elements. Contemporary approaches to room lighting and attention to details such as custom carpets have created a gaming experience that is modern yet timeless.

The El Toro Hotel is located in Sydney’s Liverpool Area. The Hotel already had a strong Gaming revenue but Parras Hospitality wanted to maximize this and asked Paul Kelly Design to be involved.
The Gaming Room has a dominant ceiling design that maximizes the available ceiling height. The ceiling design provides the perfect balance between form and colour with the perception and size of the room available for patron comfort and safety. The selection of materials and geometry match perfectly with the gaming layout and machine selection, whilst providing a timeless response to gaming design.
THE ENTRANCE HOTEL

The Entrance Hotel is located on the NSW Central Coast and is owned and operated by the Thomas Family. The scope for this project was to create a stand alone gaming venue adjacent to the hotel but with direct access to the car park and non hotel guests.
The Exterior of the venue is intended to Architecturally pick up on the coastal design from the 60’s and 70’s utilising single story references. The exterior palette has links to the hotels coastal location and the sandy natural tones in the waterways in close proximity.
The Interior of the space touches on the Gold Coast and the exciting colours and experience of a beach holiday. The experience is definitely Casino inspired with bold expressions of colour and materials, backed up with vibrant lighting and sub-tropical landscaping.

THE STAR SYDNEY
When first encountering Jade Rabbit at The Star, the viewer is struck by the dramatic use of light and materials. Light emanates from the backlit sculpted bar, and plays through the complex ceiling artwork, created from hundreds of crystal clear acrylic rods.
From the spectacular illuminated display feature behind the bar, the mirrored columns and perforated panels, through to the dramatic use vertical fish tanks. The unique carpet, inspired by the way light hits water, anchors the design, while the custom furniture softens the surfaces, creating an inviting and stylish space to experience the excitement of The Star.
Black by Ezard is a truly unique international steak house and contemporary dining experience. Located within the Star Casino in Sydney and partnered with Melbourne based celebrity chef Teage Ezard, Black by Ezard is a sophisticated, refined, tailor-made restaurant concept that seats 150 guests.
PKD has created what can only be described as a masterpiece in restaurant design. A palette of rich yet approachable materials, combining stone, timbers, leathers and dramatic lighting, have ensured Black by Ezard remains one of the country’s most popular steak restaurants.

Nestled within the lobby of the prestigious Chifley Plaza in Sydney’s CBD, District Brassiere launched in 2017 offering casual dining elegance for the well-heeled corporate crowd.
The centrepiece of this establishment is an imposing, central island bar of green marble and brass, featuring a multitude of fine wines on display. A fully open kitchen is equipped with a Spanish Josper charcoal oven, and an all-day patisserie works overtime to tempt patrons with its tartines, croissants and Single Origin coffees.
The casual elegance of the space is tempered by the distressed gritty treatment of the walls, with aged brass highlights contrasted with post-war inspired Stucco, midcentury leather furniture and New York style banquettes.

Located at the historic Murray Street Pier in Hobart, Franklin Wharf Restaurant and Bar is a celebration of Hobart’s locality and produce. The concept of the space references the heritage buildings and picturesque natural environment through tactile materiality, coastal colours and maritime built forms.
The venue offers a journey engaging, multi-sensory experience for each individual, offering multiple dining and beverage options. These areas include an outdoor seating area overlooking the pier and the sea. An informal bar casual seating area that leads into a more intimate formal dining area. In addition, the venue includes multiple adaptable function spaces located at the first floor. Each dining experience flows naturally from each other with each offering expansive views of Hobart’s historical piers and natural environment.

Paul Kelly Design developed the Harbord Diggers project with the Mounties Group to become a key entertainment destination and part of the larger overall residential site developments.
The project was to relocate the heart of the Harbord Diggers development into the new Entertainment Precinct, also designed and planned by Paul Kelly Design. The process had several stakeholders and a large consultant team, requiring a detailed team approach resulting in one of the most awarded club developments in Australia.

MAIN LOBBY AND CAFE
Canterbury-Hurlstone Park RSL Club is now a destination of choice in Sydney’s Inner West, a place known for its variety of dining and entertainment experiences. PKD has worked with the venue owners to continually diversify and extend its offerings, attracting a new class of patronage, while maintaining a quality offering for its loyal community.
PKD’s ambitious redesign relaunched the venue as a landmark destination, positioned to attract the premium, discerning patron. Bold floor and ceiling concepts entice patrons into an elaborate gaming experience. An all day dining offer is featured within a vast yet classic space, awash with natural light and ambient elegance.
RESTAURANT (HURLSTONE PARK RSL)
Nu Bambu launched in 2018 as the late night food offering by Canterbury Hurlstone Park RSL, embracing a new blend of Asian cuisine and a new direction in style for the much loved RSL.
Patrons are welcomed into the space by a signature sculptural piece made of hand-dyed silks hanging resplendent above a communal dining table. Natural textures and finishes are lit up with pop-art references, and the venue’s open kitchen pays homage to the busy street kitchens of Saigon.
Inviting and contemporary, the venue has diversified the membership base for CHPRSL and created a new destination for Sydney’s discerning food lovers.

Opened in April 2017, Kenny Rens is a dramatic yet intimate Japanese Restaurant and whiskey bar. Kenny Rens is famous for robata, a centuries old style of slow grilled meats over hot coals.
The striking façade is classic yet contemporary while the interior space is traditional yet sophisticated; beautifully detailed and elegantly restrained. Textural charred and warm timbers contrast against monochromatic cool greys of concrete and stone. A bold art work by local artist Amy Finlayson sets off the interior, with beautiful organic indigo brush strokes meandering through the space.
RESTAURANT AND BAR
This Canberra-based European steak house offers the ultimate environment in which to luxuriate in a unique dining experience all year round. Classic European styling and a post-industrial concrete shell combine together to create a warm, inviting space that feels both intimate and timeless.
Featuring an expansive open kitchen and a dining room for 150, the heart of this space features a central zinc table, seating up to 20 guests in a period ‘feast’ experience. A separate bar area situated opposite the restaurant offers customers a more casual food and beverage option inside this classic interior.

PKD has drawn on the atmosphere and direction of the venue’s sister restaurant in Noosa to create a striking new vision of contemporary Australian dining.
Social dining in a relaxed, stylish atmosphere is the focus of Miss Moneypenny’s Broadbeach. In a space focused around a striking central fireplace, patrons are surrounded by the warmth of natural timber and hues of grey, navy and terracotta. Brass and stone elements add visual and tactile sophistication to the design.
Above the seated diners a detailed ceiling feature attracts the eye with flowing movement
The room features an extensive bar running the entire length of the room, and a dramatic window opening offers a view into the inner workings of the superb kitchen. PKD has made a feature of natural light, which adds to the seamless flow between the detailed luxury of the indoor spaces, and the more casual approach of the exterior settings.

PKD worked with the owners of St Johns Park Bowling Club to invigorate and diversify this Western Sydney entertainment destination. A general seating area provides a gathering point at the heart of the venue, with a diverse mix of food and beverage facilities for customers to choose from.
A retro-inspired design offers both comfort and functionality, integrating a number of development initiatives to create a complete club picture for Western Sydney customers.
BETTY’S BURGERS
DEVELOPED QSR STORE
Betty’s Burgers & Concrete Co is the new creation of PKD, launching its first venue in Noosa, QLD in 2014, and now operating in 60 locations nationally. The concept is a contemporary take on the nostalgic ‘burger joint’ offering, serving the juiciest and most mouth-watering burgers around. The frozen custard and signature ‘Concretes’ set this throw-back apart from the rest.
The interiors concept is a fusion of 1950s optimism with the rustic appeal of a weather-beaten beach shack, relaxed in its simplicity with plenty of quirky twists. This successful, casual dining formula has seen Betty’s Burgers and Concrete Co. hit the streets right across the country.

DEVELOPED QSR
PKD worked closely with the operators to create this QSR Brand with its first store opening on Sydney’s iconic Manly Wharf.
The routes of this unique offer stem all the way back to childhood memories, for us that’s the mid 80’s when timber wall linings and pink tiles were the acquired taste for interiors. We used this rational and the concept of marrying two things great together, to create a visually enticing and fresh approach on something that has been on offer to the vast majority for decades. This belief flows from the interiors, to the visual graphics and right through to the way the food is prepared, packaged and presented to the customer.
Warm materials such as sandstone crazy paving and timber wall / ceiling linings, provide a natural and calm experience. While the cooler / harder materials such as powder coat metal, painted bricks and mosaic tiles have been introduced as contemporary and youthful components, with the overall blend being a well-balanced experience.
The iconic location of Manly Wharf is the icing on the cake, which some would consider to be one of the most famous Sydney locations to stop for fish and chips.

Inspired by retro American diners and Australia’s suburban milk bars, Harvey’s Hot Sandwiches is a Quick Service Retail Brand developed by Paul Kelly Design that plays on old world charm and nostalgia.
Nickel metal finishes, formica wall paneling and lightbox menu boxes are a nod to the diner of old. Authentic counter stools, diner style chairs and tables, and bespoke banquette joinery further adds to the familiarity and charm of the venue. Historical photographs of diners and milk bars line the walls, pieces of memorabilia that inspired the venue design.
Harvey’s focuses on delivering quality, simple and unforgettable sandwiches. The venue design aims to compliment that offer by creating an experience of authenticity, nostalgia and familiarity for the diner.

LOBBY AND CAFE OFFER
580 George Street is located in the centre of one of Sydney’s most dynamic commercial landscapes. With 33 floors of commercial office space, three levels of retail, concierge services and ‘best in class’ end of trip facilities, the main lobby space is a very busy thorough fare. Paul Kelly Design were commissioned to reimagine the main lobby space from a transition space to a destination in and of itself, while bringing the 580 George Street brand to life.
To achieve this elevated customer experience Paul Kelly Design has created three visually connected zones; the Business Lounge, Central Concierge Area and Copper Espresso Café. The integrated mixed use including food and beverage, individual work hubs, small catch ups tables, semi-private larger meetings spaces and building services touch point, all combine to creates a multi-dimensional space that allows customer to meet colleagues and or relax for a moment or two. PUBLIC SPACES AND RETAIL PRECINCT
Paul Kelly Design worked closely with Walker Corporation to create the retail Precinct for the new Parramatta Square Development. The project involved the master planning, retail design and co-ordination of all retail areas of the development. The project which is to be phased in opening until 2024 will see the realisation of a total spend in excess of $2.4B.
The concept Paul Kelly Design used for the project was based on the local Hills district precinct, with a direct connection to the Landscape which forms a large part of the physical location. The overall concept was based on the materials and colours found within the eucalyptus tree, with their soft pink hues all the way to the warm tones of the local sandstone which adorns local experiences for all Parramatta city residents.
A large component of the development is the creation of the outdoor dining areas, with architectural structures and retail design management by Paul Kelly Design, placing some of Sydney's top food and beverage operators in close proximity to the main Parramatta Square area. The integration of the key elements of the local landscape being ‘prospect and refuge’ and ‘Refuge’ have made these external spaces not just an extension of the internal retail but a standout retail experience.
