Magic of Lappish winter is a natural wonder
Northern Lights Village in Saariselkä offers a unique experience of watching the northern lights from inside a cabin. The heated windows are always clear, and you can watch the wonder of the Aurora Borealis from bed. There are 80 Aurora Cabins in the Northern Lights Village. Of course, looking at the northern lights is not the only activity in the area. Customers can go to a variety of programmes during day or night, depending on the weather. Everyone will get proper winter clothing and nice, hearty food and all the activities are done by professional guides.

trips, where visitors can see how divers catch king crabs from the cold Arctic Ocean. According to Markku Inkilä, there is plenty of magic in the Finnish summer. -We have a lot of tourists coming over the summer, but not enough activities and services for those who are willing to pay for them. -This is what Midnight Sun Village works to fix! Local food from Tradition Hotel Kultahovi Bark cakes and pine bark by the shores of Juutua river There is something magical about Lappish forests – and it offers the ingredients for magical food, too. And Heikki Nikula makes fantastic and innovative foods from these local ingredients. Siblings Kaisu and Heikki Nikula have owned the hotel and restaurant for fifteen years. They have done a lot of work there over the years; there have been renovations, expansions, and they have even made a new building for accommodation. And constantly developed the menu, of course. Hotel Kultahovi uses ingredients that have been foraged straight from local nature, and they only use local fish and reindeer. This has been noted and praised in Finland and abroad, surely because of the creativity and professionalism of the chef.
Fried reindeer tongue, accompanied with nettles, dried lingonberries and purée made of Lappish potatoes is the ultimate Lappish treat. Nettle and other side dishes are from the pure, Finnish nature, and the reindeer is local, too.
The combination is excellent, very filling, yet light. This dessert is highly recommended. Heikki Nikula has won many awards with his creative and innovative cooking, and the use of natural ingredients from Finnish nature. He is launching a cook book in November, and we cannot wait to hear his tips for chefs at home.

One of the morst interesting treats are bark cakes, which are accompanied with pine bark ice-cream, which gives the combination a sweet finish. It has been tested and approved! Mouth-watering reindeer carpaccio is accompanied with cloudberry vinaigrette and shoots of a spruce tree. Herbs and berries finish the stylish combination. Slightly salted whitefish and trout terrine, which is decorated with whitefish roe, fennel sauce, marinated cucumber and dill and cucumber sauce. The dish is as good as it looks!
Culinari offers fresh -The most important thing for us, is that our products are locally sourced: fresh flavours from Inari, Says Mika Hindström from Inarin Luonnonporo Ltd. The company, called Culinari, produces reindeer, elk and bear meat in Ivalo village. The most popular products are their sausages: for example reindeer, elk or bear salami. They also offer cold smoked products, and a variety of frozen meats, that are sold all over Finland.

The company was originally founded by local reindeer herders, and 10 years ago the company was shifted to Mika and Nina Hindström. But one of the original owners, reindeer herder Oula Angeli, is also still involved in the business. Half of their products are sold to shops around Finland, and the other half to restaurants, as semi-processed products and other food stuffs. Mika Hindström has worked in the restaurant business for 26 years before shifting to Culinari, so he knows what the chefs are looking for. Part of their semi-processed products he has developed himself, and some have been planned with local chefs. -Semi-processed products, such as broths and stocks, really makes the work at the restaurants easier, Hindström says.

flavours from Inari The cost of reindeer meat has been high in the recent years but has come down a little bit this year. However, the competition of the big producers always determines the final price. Like with all natural products, reindeer meat production can be full of surprises. For example, the warm weather of 2018 has caused a delay in the production, since the lakes need to be frozen before the herds can be gathered in one place. It is also difficult to find the herds of reindeer in the ground, even by helicopter, because the terrain is so colourful. The reindeer would be easy to spot from the white snow. -The most difficult part of the business is that we can only get the products during a three-month period, but we need to offer it every day of the year. The restaurants need reindeer meat all year round,
Hindström says. Especially Christmas and early spring are the busiest times, he adds. Inarin Luonnonporo Ltd. sells meat of reindeer, elk and bear, but also organic veil from Sodankylä. Skiing slopes stay open until 13th of May 2019 This year the sled hill is decorated in a light art installation called Aurora Experience. The art installation is opened, when there is enough snow on the ground. Just like last year, this season will also be filled with theme days and other special activities throughout the winter. On Finnish Independence Day in 6th of December Ski Saariselkä has themed activities, on Christmas Day on the 25th is Santa’s Ski Day and on New Year’s Eve the slopes will have fireworks and torch skiing. This year, Ski Saariselkä’s Ski School has been chosen as the best ski school of the year. The merits of the Ski School included its investment in the planning of the Freestyle Park, close cooperation
with the Saariselkä Ski Resort as well as the development and organisation of different events in the area. Saariselkä Ski School has developed new kinsd of teaching methods and Ski School products that are suitable for foreign tourists as well. This has had great importance on the tourism industry in the area, and it has also shown in the annual turnover of the Ski School. The judges who chose the Ski School of the year consisted of the company Visit Finland as well as skiing unions, Finnish National Association of Snow sport Instructors and media representatives. Customers could also take part by voting online. The judges also elected the ski report of the year (Sappee) and the best local centre (Ruskotunturi).
Snowmobile rides anywhere you want
The first ski track of the year will be done with a snow gun, and it will be started as soon as the weather allows. In order to make ski tracks with this method, the temperature needs to stay below -5 degrees celcius for several days. The colder the weather, the better the chances! Usually weather like this occurs in the latter part of October, so the first tracks might be open already at the beginning of November. Making preserved snow is seen as unsustainable in Saariselkä area, since on top of having to make and preserve the snow, it also has to be transported and distributed with machines. This is why they chose to use a snow gun.

-Many visitors want something adventurous experiences in Lapland, although the calm nature and clean air are our main assets. For many visitors, just the fact that they can drink water straight from the stream is an experience in itself, says Jari Tiainen, the owner of Neste Saariselkä. For 16 years he has been running snowmobile ‘safaris’, or excursions, across the Northern parts of Finland, Norway and Sweden, and even in SouthernFinland. The safaris are always tailored to fit the customer’s wishes. Most of Tiainen’s customers are companies who want to offer unique experiences to their own customers. Tiainen plans the routes according to the client’s wishes. The service begins at the airport, where Tiainen picks the customers up – and they can land in Ivalo, Kittilä, Rovaniemi, Kiiruna or Kirkkoniemi. There, the snowmobiles are ready and waiting. At the safaris, lunches are enjoyed at guesthouses and rest stops. Every supper is a three-course meal, and every night is spent tucked between fresh bed sheets. -Service car is running alongside the snowmobiles, and GPS connection between the snowmobiles and the
service car is open all the time, says Tiainen. If a customer gets too tired on the snowmobiles, they can easily hop on to the service car. Safety is very important when snowmobiling – every trip is planned with safety in mind. -I always test drive each route, sleep in every stopover and test the food, too, says Tiainen. As always, the weather calls the shots and very cold weather, or snowstorms can always change the original plan, or postpone the excursion. On the safari, the days can be long: the day can begin at dawn, if customers want to see the sunrise at the top of a fell. After that, the day can span until nine in the evening. If the route is good and clear, the snowmobile excursion can drive more than 300 kilometres a day. If the terrain is more challenging, the excursion travels 150-250 kilometres a day. On a 10-day excursion, the clients can travel up to 2,000 kilometres. But they don’t need to travel every day; some days are reserved for resting, or catching king crabs, for example. Silence and snowmobiles are not often associated with each other. Yet, according to Jari Tiainen, modern day snowmobiles are relatively quiet, and less

Merja Aletta Ranttila launches a new series of postcards
Merja Aletta and her dog are always together. Merja Aletta says, that she could not have managed through the hard times she has had, if it wasn’t for her dog companion. We can thank the dog for the new set of post cards as well!
Merja Aletta has been awarded many times for her artwork, both in Finland and abroad. Merja Aletta is a Sámi woman from Inari, who has had a long career that has been very eventful. A couple decades ago he was even accused of worshipping the devil, and there have been priests who wanted to ban her work from being shown to the public. Art and reason luckily won, and Merja Aletta’s work can be admired in Finland, and in other parts of Europe. Recently, she has faced some personal problems, an eviction notice among other issues – more than enough for one person. Some have feared that the talented artist’s
creativity has come to an end and wondered if we will ever get to see new works from her. But Merja Aletta has not given up. She has drawn a brandnew series of postcards, which combine Sámi folklore, modern art, her connection with nature, as well as Merja Aletta’s inimitable style. Many people have bought the full sets of previous cards, framed them and displayed them on their wall. Now there is even more to collect. Or send them to friends who will appreciate the art. Tail of the Firefox is illuminating Finland’s largest sledge hill

Mid way down the hill you can stop and admire ‘Pohjannaula’ – according to mythology, the nail holds the earth at place.
Firefox’s tail will illuminate the ski sledge of Ski Saariselkä. The light art work is centred around mythological animals, and it even has a storyline. The artwork is designed by Arto Heiskanen and Joonas Saaranen from WhiteNight Lightning Ltd company from Tampere. The whole sledge hill is illuminated by the artwork from top to bottom – all 1800 metres of it. The sledge hill begins at the top of Kaunispää fell, which is illuminated by multicoloured LED-lights. Later on, the fresh snow is illuminated with pictures that draw inspiration from Finnish folklore. Halfway through the sled hill is Pohjannaula – the northern nail which, according to folklore, supports and holds the whole world at place. After that, the route becomes calmer, and lights that mimic the northern lights illuminate the old forest for the rest of the way. WhiteNight Lightning Ltd has taken inspiration not only from the northern lights, but also from the old folktale of the Firefox. The Firefox is a mythical creature who shines light in the darkest nights, and its ember tail glows red. It was believed that capturing the Firefox would give
good luck to whoever captures it. Old folktales say that the northern lights were created by the Firefox, who was constantly running away from hunters. The creators of the Aurora Experience draw a lot of inspiration from old folklore and old, mythical view of the world – and from the experience of looking into the night sky of Finnish Lapland, with northern lights and bright stars. Ski Saariselkä is opening the skiing slopes on 17th of November, and after that the slopes are open every day until Mother’s Day in May. The sled hill will be opened at the same time, so that people can go up Kaunispää fell with the chairlift. Last year, the slopes opened around the Finnish Independence Day, on 6th of December. Ski Saariselkä has got a new snow gun for the sled hill, and it is ready to be used during next season. - A lot of people want to use the hill, so we want to make sure that the route is always in good condition, says Jarmo Katajamaa, who is the CEO of Saariselkä Ski and Sport Resort Ltd. Gift shop Livva sells quality souvenirs and beautiful homeware in Ivalo Gift shop Livva is situated in building known as ’The Olde Hippu’, and over the summer it has been converted into a gift shop that sells interior design objects and souvenirs. Their supply is large and serves both locals and tourists, and they even have accommodation service upstairs, called Livva Apartment. Business owners Mari Vähärautio and Hanne Vänskä prefer to sell products that have been made in Finland and Lapland. The shelves are packed with Lappish jellies, syrups, small batch coffees and spice mixes. The owners sew their own home-use textiles, make their own soaps and even craft their own candles. Both locals and tourists have fallen in love with fridge magnets that have Ivalo logo printed in them, especially the wooden ones have been a hit. Other popular souvenirs are coasters for pots and mugs, as well as different sea-
sonal textiles, which are easy to take with you on a plane and fit into your luggage. In addition to Lappish knives, wooden cups and reindeer leather products, other popular items have been wallets, jewellery and child-friendly plush toys. For customers who are interested in interior design the shop offers pillows, lanterns and a variety of ornaments. In November, the shop will have its little elf section, which will sell Christmas spirited elves, lanterns, lights and other Christmas ornaments. -We choose to sell only items that we love and would buy for ourselves, but quality and prize is also considered, Ms Vähärautio says. For years, locals and tourists all wished for an Asian restaurant to Saariselkä area, and a few years ago this wish was finally fulfilled. Arctic Asia -restaurant is located right by Kuukkeli supermarket, where it moved to some time ago. The restaurant has been loved by both visitors and locals. The menu consists of East-Asian food but offers more familiar flavours for those who are less adventurous.
Especially minute steaks and reindeer have been popular amongst the people who do not enjoy sweet and sour sauce. The head chef is Malaysian Sunny De Costa who has a lot of experience in making Asian food for the Finnish taste. I am not usually a fan of chicken, but Arctic Asian’s crispy chicken with sweet and sour sauce and jasmine rice was excellent. It was crispy, yet tender from the inside,
and the sauce had just enough flavour. It wasn’t too spicy for the Finnish taste either! I highly recommend this dish. Arctic Asia offers a buffet lunch every day, where you can choose between Asian or Finnish flavours. Or take both! Buffet is open between 11:00-18:00, and the restaurant is open until 21:00. Soile Viitanen from Arctic Asia says that they have developed the menu together with experts, in order to get the
best Asian flavours to Saariselkä. Outside the actual restaurant there is a traditional Sámi dwelling that has been transformed into a dining area. There is space for 20 people there, and can host groups of people if booked in advance

Mysterious Northern Lights The arc starts to move, gaining more shape and colour. Lake Muddus.
Nowadays we know thoroughly how northern lights work, which is why we can predict when and where they will arrive. In early night, a couple green-yellow stripes appear in the night sky, moving from East to West. They are approximately 100 kilometres above us. After a couple of hours, the colours will get clearer, and the rays get vertical. This is when you can see the northern lights move and change colour around the edges. This part usually lasts up to 30 minutes. After that, the northern lights start to move very fast, up to 100 kilometres per hour, covering the whole sky. This is when you can see the lights change into blue, red and purple. After this, the movement stops at a corona situated in the southern side of the sky, before calming down and disappearing completely.
After that, the Northern Lights might start the whole round from the beginning. First arc of the Aurora Borealis appears. Kultala in Ivalo river.
Nation of the fire fox In the olden times, people of the North have often connected the northern lights with ghosts, spirits and mythical animals. The Finnish word for the phenomena, Revontulet, comes from an old story of a Firefox, whose flaming tail illuminates the sky. In the Sámi folklore, the northern lights predict war, especially when they were red and resembled blood. In Skolt Sámi folklore, the northern lights were born from the spirits of those who had died at war, where they continued their fight. It was forbidden to make fun of the sky as well; it was feared that the spirits would come down and tear the mockers apart. For years, it was difficult to find out what caused the northern lights, and it wasn’t until the 1950s before scientist found out what caused the phenomena. In the 1910s Finnish scientists thought that the northern lights were caused by some kind of gas that arose from the Arctic Ocean.
Billion specs of particles a second on a square centimetre Nowadays we know, that the specs that cause the northern lights come from the Sun. The flow of particles that is called the solar wind, penetrates the Earth’s magnetosphere with the speed of 400 kilometres per second. The nitrogen and oxygen atoms are charged by the Sun’s electrodes and then generates various colours. It requires at least a billion particles a second per square centimetre until the human eye can distinguish any northern lights. Yet only one percent of the electrodes on the magnetosphere cause the northern lights, so there are even more electrodes than we can even imagine. The biggest amount of northern lights can be seen when there are plenty of sunspots. This is why northern lights often come in cycles – some years are more active than others.
The lights move towards the corona
Usually the aurora can be seen between 18:00-02:00, and it is usually at its best at 20:00-23:00. The northern lights are still there during the summer time, but it is too light and bright for us to see them. In Inari, the earliest lights can be seen at the end of August, when the sky gets dark. And they disappear again at the end of April, when the sun comes back. And of course, the clouds affect the visibility of the northern lights.
The sound of northern lights has been recorded Some people have claimed that the northern lights made a crackling sound, but up until recently, there has been no explanation for this phenomenon. Catching the sound can be difficult, especially since it might take several minutes for the sound of northern lights to reach the ground, because they are so high up in the sky. Finnish scientist Unto K. Laine has claimed that the cracks, pops and hum are caused by inversion layer that is located in the altitude of 70 kilometres. Then, the positive charge of ionosphere and the warm electrical charge of the surface of the Earth meet and cause crackling sounds. Mr Laine has managed to record those sounds. This inversion layer happens rarely, which explains why only a few have reported these sounds. If you want to look at the sky, it is best to get far away from the light pollutions of cities and towns. Best place to see the night sky and the northern lights is at least 30 kilometres away from any towns. Then you can see the stardust and northern lights in their full intensity. Huippu is the top of Kaunispää fell Year after year, salmon soup and crowberry cake keep their place as the most popular dishes at Restaurant Kaunispää Huippu. These meals are enjoyed by both locals and tourists, and they are made using only the best local ingredients, to quarantee the best taste. Salmon from the Arctic Ocean is delivered to the restaurant twice a week, which means that the salmon soup is always fresh. The berries for the crowberry cakes and juice have not travelled far either – all the berries have been picked from the local forests by the restaurant staff. And so are the lingonberries, bilberries and the delicious cloudberries. Last summer was a good year for mushrooms, especially for false morel and porcino or cep mushrooms, which were collected in the town of Nellim. Kaunispää restaurant gets its reindeer meat from a nearby village of Tolonen, and roe from whitefish comes from the chef Jorma Lehtinen’s own fishing area. Only the meat of willow grouse is sourced a bit further away – but from Enontekiö, which is also in Lapland. One local speciality is kurniekka, which is a traditional Skolt Sámi fish dish. And of course, there are the famous, delicious doughnuts of Kaunispää restaurant. As a new speciality, the restaurant has a new list of Glögi, which is a traditional Finnish winter drink. Glögi is perfect for keeping away the cold during winter and it warms you up nicely. Tuike Rosé Glögi is vegan as well as organic, and Talvimustikka bilberry glögi goes well together with a gingerbread biscuit. The list also offers a Rocky Road Glögi, traditional glögi and glühwein, among others. -For Christmas, we will make our own glögi, just in time for Christmas eve and for the declaration of Christmas peace, Lehtinen says. Declaration of Christmas peace is traditionally read at the peak of Kaunispää, in English and in Finnish. It gathers together hundreds of people to sing Christmas carols and enjoy the Christmas spirit. The Ski Bus will take people to the peak on that day, too.

Good quality souvenirs from Kaunispää souvenir shop The souvenir shop, called Tuliaistupa, is located next to the restaurant, and it is well known for its big assortment of goodquality souvenirs. -During the winter, we sell lots of warm clothing, says Susanna Viljaharju, who is the owner of the shop. Amongst the most popular items are local woollen products such as hats, scarves and ponchos. Reindeer leather products are also popular, especially the gloves, wallets and purses. Leather is not the only material used in souvenirs; the shop sells products made of antlers, too. The antlers are used to make butter knives, key chains and candle holders, to name a few. -Traditional Lappish wooden cups are also popular amongst the foreign tourists, Ms Viljaharju says. The souvenir shop sells natural cosmetics, which are made by Anne Lehtinen from Ivalo. For
example, the shampoo bars made with cloudberries, lingonberries and garden angelica smell heavenly. The collection has a variety of other cosmetics items too, such as foot bath salts and a variety of plant-based soaps. The jewellery selection showcases the best local jewellers, such as Paarma Design by Tytti Bräysy, and Hopeia by Eija Konstas. -Many tourists want local and unique products to take home. Most people come to Lapland only once, and they want to bring home something special, Ms Viljaharju says. They have been selling souvenirs in a steady pace over the years. Yet they are always looking for something new for their collection. Restaurant Teerenpesä lies in the heart of Saariselkä, and over the years it has gotten a reputation as a great place to find good food. They are continuously developing their menu and designing new, innovative dishes, with good results. The owner, Juha Rutanen, says that he is lucky to have such great staff to work with, who have a great attitude to their work, and are always ready to learn new things – and teach some new tricks to Mr Rutanen as well. -When we are planning our menu, we brainstorm together and try and find new innovative ways to experience familiar food, Mr Rutanen says. He does admit that sometimes they get a bit out of control, when all the chefs get excited about new recipes. Luckily Mr Rantanen’s wife and business partner, Armi, has a great taste and a lot of experience. She knows what will fit the menu, and makes it work, too.
Those who enjoy fish, Teerenpesä offers delicious fried arctic char. The dish comes with friend root vegetables, and excellent king crab sauce. You should take some time to enjoy this dish, since fishing out the last delicious drops of the sauce takes some time. Unless you want to resort to licking the plate.
The menu has a lot of interesting new dishes. For example, king crab has found its way to the menu in many forms -- but old classics are still amongst the most popular. -We have always wanted to offer something that other restaurants don’t have. So that the customers would have a lot of options. But of course, a lot of people think that reindeer stew and salmon soup belong to the menus in Lappish restaurant. They are one of the most popular dishes, and on the do-to list of many tourists. Nowadays restaurants are not only competing about who has the tastiest food. More and more customers are demanding that the food must look great as well. Mr Rantanen says that they need to be strict with this. -Other restaurant owners have told me about times when the meal has looked different than

The blueberry flavoured panna cotta has a very fresh flavour, and it suits those who don’t have the biggest sweet-tooth.
The dark chocolate cake is every chocolate lover’s dream. The dark chocolate is very heavy, but the white chocolate and lime mousse brings freshness to the dessert. Accompanied with chocolate ‘salami’, this dessert is perfect companion to a coffee or a cognac. on the menu, and the staff has had to convince the customer that the food still tastes the same, he says. Anne’s Garden is a homely restaurant that, they have accommodation space in villas and cottages that are made of pine trees. They also have over a hundred double rooms for guests to stay at. Husky&Co. company organises different activities for guests, and in early spring the Husky Bar is open.
Anne’s Garden Grill and Café has transformed the image of a traditional pizza place into something much more familiar to the Finnish people. Customers can eat their pizzas, kebabs or hamburgers in a milieu that resembles a grandmother’s cottage, rather than a pizza restaurant. -Saariselkä has a lot of good restaurants. We want to stand from the crowd with our style and food selection, says the business owner Anne Lindholm. The atmosphere is already set when you step in from the main door, which leads into the yard of the cot-
tage. The red walls and the windowpanes are decorated with beautiful geraniums, and the walls have birch forest decorations. Real birch trunks are supporting the ceiling, and wicker chairs finish the look. The yard works as a dining room, and it is close to the bar, too. The bar has a nice fireplace, which adds to the feel of a cottage. The bar has space for 150 customers, and it also has the reception desk, where lodgers can drop off their keys. The business works together with Panimo Pub, which is located close to Anne’s garden. On top of
Anne’s Garden is a hamburger restaurant, which serves pizzas and kebabs, too. They also sell food to take away, and you can buy alcohol beverages to go – as long as they are not stronger than 5.5%. Their menu has seven kinds of hamburgers, that include a gluten-free and a vegetarian option. They offer nine kinds of pizzas, and one where you can decide which toppings you want. They also have a vegetarian pizza, which is suitable for vegans. You can choose between five different types of kebab. The pizza bases, buns, burgers and sauces are made in the restaurant. More flights to Ivalo around Christmas time More and more flights are arriving at Ivalo airport every year. This year, already 121 charter flights have been booked to land at the small airport. -The season begins in November, but we will be very busy in December as well, says Jarmo Pyhäjärvi, the head of Ivalo airport. During the busiest days some twenty flights land at Ivalo -- all very close to each other, too. Many of the flights are coming from the United Kingdom, but Brexit is not going to cause any problems at the airport. Even though the UK has been a member of the European Union, it has not been part of the Schengen agreement. Even before, British tourists have walked through passport control. -But it is yet to see, how Brexit will affect the travel of British people, says Mr Pyhäjärvi. Direct flights will con-
tinue from Paris and Amsterdam, as well as weekly Lufthansa flights to Frankfurth. Finnair’s biweekly flights to LondonGatwick will also continue. Norwegian has increased their flights from three a week to five, which is a big change in Ivalo airport. Norwegian’s flights begin in October and continue until after Easter. Airport’s extension work finished in October, and after that the airport can hold eight airplanes. After the season is over, the airport’s arrivals lounge will get a make-over, which begins in May. Finavia has hired 34 new workers to the airport, and their training has already begun. New staff is needed in airport security and maintenance, for example. Finavia employs 50 people at the airport, but there are approximately 100 people in total working at the airport.

They have special-equipped lanes for children, which makes bowling a bit easier. The bar also offers a variety of arcade games, such as table curling, and some board games as well. Saariselkä Bowling Alley really has a lot of activities for the whole family.
