A Sacrifice for a Princess
PROTEIN

¼–½ cup rice weevils (to taste)
RICE WEEVIL PUDDING Serves 6
4 cups whole milk
¾ cup evaporated milk
2 strips lemon zest (approx 5cm long)
½ cinnamon stick
1 cup pudding rice (fresh batch, i.e., weevil free)
Knob of salted butter (approx 2 tablespoons)
4 tablespoons sugar (raw turbinado or regular white)
Toss weevils in a dry skillet or saucepan over medium heat for 1–2 minutes. Set aside.

Pour whole and evaporated milk into a saucepan.
Add lemon zest and cinnamon stick. Leave to infuse for 5 minutes, then heat to simmer.
Pour half of the infused milk into a separate saucepan. Add rice and cook over low heat for 40 minutes, gradually adding remaining milk, a ladle at a time. Stir frequently.
Remove lemon zest and cinnamon stick. Add sugar and weevils (retaining 1 tablespoon of weevils for garnish), stirring continuously until rice is tender and creamy (approx 5 minutes).
Add butter and stir into mixture.
Transfer equal portions of mixture into bowls, cool at room temperature, then chill in the fridge.
Sprinkle remaining weevils over puddings before serving.

帝女花 Inspired by the most famous cantonese opera, The Sacrifice of a Princess (Princess Changping), which is a tragic love story with the perdition of the Ming Dynasty. This cantonese opera starred two female opera singers, Yam Kim Fei (任劍輝) and Bak Sheut-sin (白雪仙). Yam played a male character.

INGREDIENTS 1. Two chicken wings, both left wings 2. Leaves of the camphor tree (where they fell in love), from Nanjing (first capital of the Ming Dynasty) 3. Sweet soybean paste from Beijing (capital of the Ming and Qing Dynasty) 4. Ficus carica (無花果) from Hong Kong SEASONING 2 tbs cooking oil 1 tsp sugar 1 tsp salt 1 tsp lime juice PREPARATION Pickle the chicken wings with oil, sugar, and salt Roast for 15 minutes Pound the ficus carica for sauce Squeeze the lime juice on the wings Add the sweet soybean paste to the ficus carica and put on the wings
