eaving the coast behind us, the landscape gradually changes. Not far from the beach the fertile hinterland produces lush orange and lemon groves.

Characteristic of this region are the trees: the fig, cork, olive, umbrella pine, locust bean, but above all the almond tree.

After ripening, the almonds are dried and used to make the delicious desserts and liqueurs of the region, but above all it is the beauty of the almond tree that is so enchanting. In early February the arrival of spring is heralded by floods of white

blossom that cover the land like drifts of snow. This phenomenon is linked to a legend from long ago that tells of a homesick bride of a Moorish king who wept with nostalgia for the snowy hills of her distant northern homeland. Wise men and magicians were summoned but, try as they might, none was able to make snow fall in the Algarve. In the end it was the loving husband’s idea that provided the solution; he planted hundreds of almond trees in the grounds surrounding his castle and when blossom covered the ground like huge drifts of immaculate snow the princess quickly dried her tears and

regained her happiness. To this day the Algarvians celebrate the almond blossom season with jovial festivals and fairs.

The inhabitants of this region are lively, industrious and renowned for their unfailing hospitality; these traits are inherited from their Moorish ancestry but they have others that stem from their Latin roots like joviality and astuteness, qualities that feature so prominently in the local folklore.

Beyond the cultivated hinterland lies a wilder countryside where the so-called “serranos” or hill dwellers lead a quieter but harder life. The hills of the Algarve, however, are green, luxurious and their orchards and vineyards provide this region with its own special touch of paradise.

ometimes it seems like certain adjectives were invented especially to describe a place after it has been created, instead of the other way round. This description fits Paixa, the brainchild of João Lourenço, like a glove.

The restaurant is elegant, understated, romantic and very comfortable. Paixa, the older brother of the acclaimed Paixanito, has left the pet name and rustic features behind in the uplands and, all decked out in finery, has moved to Vale do Lobo. It is one of those places that somehow manage to be simultaneously spacious and intimate. And wherever you look, you will only find top-quality details. From the glasses to the crockery and tablecloths, this is a restaurant where the fine food is accompanied by details to match.

The candlelit tables are an open invitation to long conversations in winter and even longer ones in summer, whether you are dining indoors or out. So it should come as no surprise to learn that wedding proposals are a regular occurrence at Paixa.

And if the space exudes charm, an encore is surely due for the food.

From the oxtail croquettes to the Ria Formosa oysters, the extensive tapas menu is irresistible and is constantly being updated. Which is great news.

O restaurante é elegante, sóbrio, romântico e muito confortável.

O Paixa, o irmão mais velho do aclamado Paixanito, deixou o diminutivo e o lado rústico na serra e mudou-se para Vale do Lobo com os galões a brilhar. É um daqueles espaços que consegue ser amplo e íntimo em simultâneo. E, por onde quer que pegue, só irá encontrar detalhes de topo. Desde os copos à loiça e toalhas, esta é uma casa onde a comida de excelência é acompanhada de pormenores à altura.

As mesas ladeadas de velas pedem longas conversas no inverno e ainda mais compridas no verão, seja no interior ou no jardim. Não é de estranhar, portanto, que os pedidos de casamento sejam uma constante no Paixa.

Se o espaço transpira charme, a comida pede um encore. Dos croquetes de rabo de boi às ostras da Ria Formosa, a carta de tapas é longa, irresistível e continua em atualização. E ainda bem. •

The best way to round off your meal is, without doubt, the Casa dos Pinheiros crêpe.
